SEASONAL SKATING You know when Christmas has arrived when the Royal Pavilion Ice Rink opens. Now in its sixth year the ice rink is open from, November 7 to January 17 on the Royal Pavilion’s Eastern lawns in Brighton.
With the stunning backdrop of the former Royal pleasure palace, a side bar and restaurant serving patisserie snacks, festive toffee apples, mulled wine and mouthwatering three course meals, it’s a romantic setting for couples and with a smaller rink also, with penguin skate aids it’s a fun event for families. The i360 will be the tallest observation tower outside London, a vertical cable car offering a new perspective on our fun loving seaside city. FULL CIRCLE It’s amazing to see the growth of The Brighton i360. The slender deign is 162 metres high and right now that part of the tower is complete, with the jacking tower and crane now gone. Left to be finished is the lighting and glass viewing pod (another 450 ft of height to be added), which has been built in France.

NEW FOOD IN TOWN
A spellbinding festive treat will arrive in Lewes this December, with Southover Grange Gardens being transformed into an Enchanted Park, from Wednesday 2nd and Sunday 13th December. Each night, (with the exception of Monday 7th and Tuesday 8th), from 4.30pm onwards, the historic gardens will host ‘A Christmas Wish’, an immersive, magical and mesmerising mix of outdoor projections, illuminations, performance and art installations. Visitors to the Gardens will see projections onto Southover Grange, ancient trees becoming living pieces of art thanks to beautiful lighting and the garden’s existing sculptures brought to life in front of their very eyes. Artists Ross Ashton and Karen Monid who have previously worked on projections onto Buckingham Palace during the Diamond Jubilee and the Houses of Parliament during the Olympics 2012 come with all the right credentials to make this a truly spectacular experience. Enchanted Park Lewes: A Christmas Wish, will take people on a journey around the garden, lasting between 45 minute and one hour of colourful wonderland visuals using the backdrop of nature.
I have always been a huge fan of London restaurant POLPO. So, it is with great excitement to hear the news that Russell Norman and business partner Richard Beatty will open POLPO Brighton on the 1st December 2015. POLPO is described as a Bacaro, (style of restaurant). This is a Venetian word to describe a humble restaurant serving simple food, and good, young northern Italian wines. From my experience of the London POLPO, humble certainly does not mean it isn’t totally delicious and stylish! POLPO London is modelled on the scruffy wine bars of Venice and the Brighton restaurant will feel very much the same…. urban, rustic and stripped back. Guests will enter through a heavy red velvet curtain to find a zinc topped bar and linen-draped lamps. The interior will feature a reclaimed timber floor, rusted tin ceiling and a huge 3-metre skylight that floods the restaurant with light. POLPO’s trademark deep red leather banquettes, old chemistry lab tables, and classic bentwood chairs and antique maps of Venice will all be there and so will I! It doesn’t get more Christmassy than the Burning the Clocks parade. A festive event that everyone can enjoy – irrespective of religion or age. I love it! Taking place from 6.30pm on Monday 21 December, the parade will go from Brighton’s Dome to the seafront. This year’s theme is ‘The Cosmos’, so expect to see a procession of stars, rockets and constellations. The organisers Same Sky started the parade in 1993 and it has always drawn a large community crowd. “Last year, due to challenges in arts funding, ‘Crowdfunding for Burning the Clocks’ was created and was a huge success”. As in previous years, Brighton residents can purchase lantern packs to take part in the parade (costing £22, available from early November), and Same Sky (the organisers), will also offer rewards to ‘crowdfunding’ participants. Depending on the size of the donation, investors will be rewarded with personalised lanterns, the privilege of lighting the event’s bonfire or with VIP passes to watch the event from a prime location on the beach. JOHN LEWIS John Lewis, one of my favourite shops are in talks with Brighton and Hove Council regarding plans for the opening of a store. They acquired 129-133 North Street, Brighton in December 2014. If plans are approved, the new shop would provide in the region of 250 new jobs. Andrew Mills, acquisitions and development manager at John Lewis, said, “We have held a long term ambition to have a presence in Brighton. Although a shop opening is a long way off, over the coming months we intend to work closely with local retail, business and community organisations in the city as we develop more detailed proposals. We hope to submit a planning application in the first half of 2016.” Oh, I personally hopes this goes through. A finely edited selection of John Lewis’ fashion, beauty, home, electrical and consumer electronics goods and services to Brighton, would be perfect, while computer terminals would enable shoppers to browse the wider John Lewis assortment online. Fresh from being crowned with the winners as runners-up of the coveted Next Hot Model Grand Final held in Brighton his summer, Amber, Lois, Stefan and Max have now all been signed to First Model Management London and took part in their very first editorial photo shoot with the Absolute Magazine team. Max Smith I was scouted in Brighton. I thought I might give it a try and entered in the competition Next Hot Model UK 2015. Funny enough I qualified myself for the short list and even better - made it to the final. This all is very exciting for me and I am extremely pleased to be the People’s Choice Award winner of Next Hot Model UK 2015. I was offered a contract with FIRST Model Management which I gladly signed. I am very happy to be part of the team and am looking forward to working with FIRST Model Management. Lois Gantley I was noticed by Hot Model Scouts when I was on the catwalk at a university charity show, where I was showcasing for a designer friend. It was such an honour to make it to the final, and to come second was so unexpected. Being signed by FIRST is really exciting! I love fashion and design in my spare time so the prospect of wearing the clothes from such talented designers is inspiring. I also can’t wait to work with the photographers, MUA’s, stylists and getting to know people in the industry. Amber Smith This was my dream ever since I can remember I always used to walk up and down in my bedroom after watching ‘Americas next top model’ it was just a dream that I never thought could become reality for me. Having applied online and being chosen for the shortlist was so exciting for me and even more of a shock that I got in to the grand final. One of my dreams was to walk the catwalk which i got the opportunity to do at the final. When I got announced 3rd placed I was totally overwhelmed and then to find out I was going to be actually signed by one of the best agency’s in the u.k ‘ first model management’ that was my dream complete. I have met some amazing people along the way which I hope to get to meet again. I wish them all the best of luck in the future because they deserve it as much as I do. I am looking forward to working with first model management and seeing where things take me.

RoadKill Couture Brighton resident Jess Eaton has been creating waves and causing a storm in the fashion industry with her incredible garments, all created with items of beauty or strange origin ranging from skulls to animal pelts and feathers from animals that have died of natural causes, been consumed as food or donated by pest control. treatments using LED, a colour light therapy UV free light facial. Firstly I was hooked up to a machine, (a spot of gel on the wrist, rather like an ultrasound and then wired up!). With a tool that looked rather like a tiny sized wallpaper scraper, ultrasonic and galvanic waves were scraped across my skin, removing dead skin cells and eliminating any blackheads and whiteheads. Evidence of its effectiveness came in the form of the cotton wool pads that passed over my face afterwards! Cotton pads and goggles were then placed over my eyes (you must not look straight at the LED lights), and the LED light contraption lowered down on to my face. This was not unpleasant. In fact the warm sensation was like the sun on my face and I felt myself dozing off. The LED lights vary in colour and functions. Red is to promote circulation and reduce inflammation, blue is said to destroy acnecausing bacteria, amber to build elastin and

collagen and infrared is to accelerate skin recovery. After the LED came a rejuvenating Aloe Vera Mask. This looks reminiscent of Jason’s mask in the film Halloween, but hey, nobody is looking! I left the salon with skin that felt firmer, hydrated and glowing, which for £39 is a complete and utter bargain. This treatment should be undertaken once a month to really see results but just in the one go, I could see the possibilities.

How to minimise the holiday bulge!!! t’s that time of year again when extra calories lurk around every corner mince pies at the office, meeting colleagues and friends after work for festive drinks, or chocolates in your stocking. All these extras add up and if you’re like most you will put on a pound or two by New Year’s Day. So what is the harm in a little holiday weight gain, especially if it’s just a few pounds? According to research most never lose the weight they gained during the winter holidays. The pounds add up year after year making holiday weight gain an important factor in adult obesity. Your body’s chemical switch has flipped to storing more fat. Your body produces chemicals that promote fat storage during the winter months, it is the body’s way of defending itself against the cold. Combine this with the over indulgences of the holiday season and you have a recipe for disaster. You don’t have to fall into this trap! It is possible to enjoy holiday goodies without putting on a single pound. Of course this is not going to be easy when the temptations are endless which is why I have compiled some tips to help you avoid overindulging.
1.
Plan your day.
The biggest thing to do on any sort of weight loss or weight management goal is to plan. Know where you will be throughout your day and at times when you shall be eating. If you know you are meeting friends for dinner be sure not to stuff your face at work in the afternoon that day. Planning ahead is extremely important in minimising calorie intake.

Carb up in the afternoon
Munch on healthy carbs in the afternoon before the sun goes down to stave off a splurge. Winter can trigger cravings for comforting sweet carbs because diminished sunlight during the season make serotonin in the brain less active. Too little of this mood lifting chemical leaves you feeling tired and hungry. Put yourself in a good mood during winter by eating low-fat healthy carbs such a sweet potatoes oatmeal with a sprinkle of cinnamon.

Opt for layers that leave a little bit of

Walking will not only benefit you physically but also puts you in a mindset to be more careful about what you eat.

Having worked in the Beauty industry for over 10 years, whilst using the experience gained to work within the educational sector. It was a privilege to be asked to interview of the most popular independent Hair salon in Eastbourne, in which has recently been recognised for its commencement in being a training academy too. Hashtag Hair is situated in Eastbourne. Coowners sisters Kim and Orianne Tyrelle have created the perfect hairdressing salon to make you feel relaxed whilst getting your precious locks chopped! The sister’s philosophy is: by creating an environment in which helps clients relax ensures that they obtain the full experience of our services offered. Hashtag Hair’s main goal is to continuously be educated in the science of hair and to continually educate the employee’s knowledge of this. This would include from the basics of cutting to performing their well-recognised and popular Brazillian keratin blow dry treatment. An impressive sized salon with a grand window, enabling us to see the entire interior of the building. Spacious yet chic, with added colours of white, teal and pink. As I enter the salon, the stylists are pristine from hair to toe. Each staff member has his or her own individual style. Current but still glamorous, the reception area has clients laughing and talking whilst there is a photo shoot being done on Hair-up styles. The owners, Sisters Orianne and Kim Tyrelle, greeted me at the reception area, as they were models having their hair done for a photo-shoot. Soon after meeting, we began the interview in their theory training room. Q. Use the words “Hashtag Hair” to describe how your business fits in this category? Orianne – With Hashtag’s being the only used divider in social media; it just made sense to

call our salon Hashtag Hair. We are constantly using social media to showcase our hairstyles whilst communicating with our clients. We feel this is great way for our students to build their portfolio too. We use Facebook, Twitter and Instagram. Q. How did your hairdressing career start? Kim- I started hairdressing when I was 14 and Orianne began when she was 15. To be honest I just wanted to earn money and the only other option was to continue with school. I was offered a trainee apprentice position full time in a small hairdressing salon in Frimey, Surrey. One of these days being the theory aspect taught upstairs within the salon. The Owner was an older Italian Man. He was strict, precise and would not tolerate any haircut unless it met his high standard. He crosschecked my haircuts even after I had qualified as a hairdresser. Orianne – Do you remember when he used to shout at us in Italian Kim? I wish I knew what he was saying. (Laughing with kim as she says this) Q. As the owners of Hashtag Hair, what hairstyles & hair shades are you seeing for the AW2015 look? Orianne- Industry-wide, I see hairstyles gravitating toward a more natural look yet adding a slight edge to the style. Hair-up styles are popular too especially leading up towards the winter. The professionals working at Hashtag hair are all health-conscious too and we promote this. Which treatment is popular within Hashtag Hair salon? Orianne – Definitely the Keratin Blow dry. We work with many different hairdressers and have done over the years. I have managed to build a great relationship with hair care specialists in the UK and Brazil. Whom, I regularly
correspond with for upcoming products. Having researched the ingredients used within their specific Keratin blow dry treatment and after testing this out- we now only use their treatment, which is specially flown in from Brazil to ensure the best only is used on our clients. Kim -. Using the latest formula this treatment is very popular and clients love the low maintenance your style requires after the treatment. With Keratin being the main ingredient in this product, this adds shine and makes straightening your hair a lot easier whilst using less time. Our clients feel really special when they know the product we use for the Keratin blow dry is flown over from Brazil. One of our closest friends has a well-recognised salon in Brazil and he uses the same Product on his clients. These include many celebrity clients.

Browns Brighton Celebrate Christmas in the country and away from the busy shoppers of central Brighton, by visiting The Glass House restaurant, at Wickwoods Country Club, in Albourne. Party Nights are held in their Garden Suite (£35.50 per person to include a three course menu, with locally sourced ingredients, party poppers, crackers and a DJ), which holds up to 140 guests and has its own bar. After all that dancing, guests can also stay over in one of the hotel’s deluxe rooms. Just remember to book early!

One night and a variety of cocktails to try...... I am amazed I was able to continue writing this review throughout the evening. Professionalism won through….Here goes! No.1 (ready and prepared)

First stop of the night is the bar at Hotel Pelirocco. It is rock-and-roll and intimate, with lots of deep red, hot pink and dark grey furnishings, skull printed wallpaper, cool pictures of bands and comfy seats dotted around glass topped-tables. My drinking pal and I decided to sit at the small bar, so that we could get properly involved. Marko was behind the bar that night and two words to describe him, would be ‘fun’ and ‘accommodating’. He even let us play a couple of tunes from our iPhones when we discovered the ladies sat next to us were off to karaoke later and fancied a try at their 80’s signature tune by Taylor Dane.
Having recently got to the finals of the National Black Moth Truffle Vodka Competition and coming 5th creating a cocktail, which had to include Truffle Vodka, you can rest assured that Alis’ drinks are flavoursome with the right amount of potency. She makes a cocktail each month to reflect the seasons and her current tastes; this month it is a ‘Spiced Pumpkin Martini’. I’m not one for creamy cocktails but if you fancy a try, here is what you would need:

We tried the ‘Dirty Fuckin Rotter’, (apologies but that is what the drink is called!), named after their punk-themed room, made with, ‘Makers Mark, Chambord, real lemon juice and ginger ale. It came with just the right amount of sharp and sour that you would expect from a punk-themed drink. Next up, a ‘Reggae Sunsplash’ named after the’ Lee Scratch Perry’ wallpapered, dub and reggae room. This sweet and coconut flavoured tipple is the drink to transport you to the Caribbean. Relax, imagine a sandy shore and get quite drunk!

We took our places at the bar, where Max and Barbara made the cocktails. I love an ‘Espresso Martini’, so that was first on my list. Made with Lavazza coffee, dark, suitably bitter and strong with a frothy head, topped off with Cocoa beans. This was the Red Bull of cocktails of the evening. Suddenly I was in sixth gear! My partner-in-crime went for another classic, a sweet and very alcoholic ‘Long Island Ice Tea’, so I then chose another classic, the tequila-based ‘Margarita’. This had just the right amount of salt covering the rim of the glass and the drink was sharp and yummy. Breeze is a chilled out bar, with friendly staff and equally friendly cocktails! My next choice was Bar Manager Alis’ selfnamed cocktail. ‘Alis’ Elderflower Frost’ came in a martini-style sugar frosted glass, containing gin, elderflower, apple and lemon juice, garnished with mint leaves. This was like a ‘Haribo Tangtastic’ sweet in a glass … delicious.

Second Stop was Breeze Brasserie on Trafalgar Street. Breeze is a mix of industrial lighting, old wooden tables and an Asian influence. Yes, you can eat here, but they welcome people to pop in for drinks alone, either at the front of the brasserie, or at the bar.

No.4 (a little wobbly!) and hey, surely this can be considered healthy, what with pomegranate being a super food. I’d like to make this one of my five a day, every day! Next up, we went for another go at an ‘Espresso Martini’, (always good to compare and contrast). The mix of Absolut vodka, Kahlua and Espresso was spot on and the drink on the whole had a great sweetness to the stronger coffee flavour. Lastly, we tried ‘The Red Orchid’, consisting of Absolut vodka, apple juice and rosemary and house-made raspberry vinegar, which is made on site over a period of two weeks of macerating and boiling. I sampled a thimble full of the vinegar alone and it was gorgeous.
Third Stop was The Plotting Parlour. The bar has been going for just over a year and I had heard good things. They recently won ‘Best Bar’ at the Brighton Bartender Awards and are nominated for ‘Best Bar’ at the Brighton Food Festival Awards that takes place in November. Our last stop, (Lord knows how I made it there standing straight) was My Hotel’s bar, ‘Merkaba’. This is a bustling bar with a nightclub feeling to it, neon lights, scattered tables, a long bar, music and chatter. I like it and it is definitely THE place to finish the night. Rafal, the bar manager here, chose our cocktails for us, so that we could be sure we were getting something new and special to Merkaba. First up were two cocktails new for November. We started with ‘Study in Pink’; a different take on the classic Cosmopolitan. Pink, (it’s in the name!) and delicately sweet. The second was a dark drink containing Vermouth called, ‘The Fortune Teller’. Looking a lot like a clearer, non-frothy Espresso Martini, it came complete with a tiny fortune teller’s card. My card had something to do with marriage, so I can’t say that the fortune teller was right but the drink was good! The last two drinks we had here were very imaginative indeed and came in recycled tins. ‘Samson’s Brew’ was served in an old fashioned Golden Syrup tin, which brought back many childhood memories. This drink was frothy, a mix of bitter and sweet, (Espresso Martini style), and came with crystallized sugar on the top. The second came in a Fanta style can and this very refreshing cocktail was appropriately called ‘Tingaling’.
Not only do the bartenders have a plethora of experience, they are all quite kooky and cute. They genuinely look like they are having fun. We tried ‘Drinking Up Thyme’, made with Carpano Bianco Vermouth, Lemon, Crème De Violet and their very own house-made thyme syrup and all served in a metal tankard style cup. A ‘taste explosion’ is the only way I can describe it.

Making Progress When Brighton filmmakers Matt Hopkins and Ben Lankester founded The Progress Film Company, back in 2010 (taking name inspiration from a turn-of-the-century Shoreham-by-Seabased silent film co.), they had no idea how truly apt their chosen namesake would be… Many of us may not know much (if anything) about the original Progress Film Company, who created pioneering silent films, almost one hundred years ago. However, after witnessing their inspiring story on the BBC’s Coast programme, creatives Matt and Ben felt that the name must live on, to carry the torch for a new generation of south coast talent. And what better way to do it than by creating a film company, by filmmakers for filmmakers? The first Progress Film Company ran from the Shoreham Beach Studio, between 1919 and 1922. Its studios, along with darkrooms, a preview theatre and accommodation for actors and crew, mirrored Hollywood’s dazzling studios, albeit it on a smaller scale, and really helped to firmly put British filmmaking on the map. While they may have only produced films for three years, seventeen titles were created, with many – including the adaptation of Dickens’ Little Dorrit receiving critical acclaim, in the UK and America. Bringing the Progress name into the 21st Century, Matt and Ben have seen their Seven Dials studio go from strength to strength, within the last five years.

Starting, back in 2010, with a clear aim; to create cinematic content in an environment that also gives young talent the opportunity to thrive, Progress began creating independently produced music videos and short films, with an emphasis on evocative and thought provoking visual storytelling. It now employs a talented team of twelve full time filmmakers, directors, producers and animators and takes on commissioned and independent projects, all over the world. Over the years, Progress has evolved rapidly, and through working with major automotive brands, publishing giants and music clients, as well as shooting travel films and world-wide events, the local film company have spread their signature style and have quickly become known as the goto-guys, who can make anything beautiful – an impressive feat, indeed. But, it’s their hardworking and highly skilled Brightonian team, that the dynamic duo remain most proud of, even with their independent films, such as the online documentary series England Your England, winning industry awards and exciting on-location shoots in the Arctic and Palm Springs, firmly ticked off the bucket lists and under their belts. Each creative professional works on a job-by-job basis for a varied range of companies, brands and agencies, across a wide spectrum and brings with them their own unique skill set, and the refreshing ability that means all productions can be created completely in-house; from conception right through to completion.

As with many creative vocations, the film industry, usually sees only short term or freelance contracts in place – something both Matt and Ben didn’t want for Progress. Instead, the filmmakers have made a conscious effort to stay true to their fundamental vision of nurturing new and exciting talent. Just one way that they’ve made this a reality, is by teaming up with Brighton University to create and champion the David Thomas Award, which offers graduates a hands-on six month internship, allowing them to not only produce their own film, but also gain vital experience within the industry, at the same time too! So, what’s next for this unique Brighton-based film company? As well as expanding their team with fresh filmmaking talent, starting new projects and working on their next online series, Progress are also celebrating the recent release of their feature Divorce Before Marriage and are busy submitting short film The Nature of Daylight to prestigious film festivals.
