After playing sets full of emerging classics and old favourites at the Reading and Leeds Festivals, Liam Gallagher has announced the first arena tour of his solo career, which includes a visit to The Brighton Centre on 15th December 2017.
Goldie has announced The Journey Man Tour: a nationwide live tour, taking place this November. The tour will see Goldie bring together members of the Heritage Orchestra as well as special guests, to perform tracks live from his iconic repertoire as well as material from his highly-rated album The Journey Man, out now.
Representing his first tour following the October 6th release of his debut solo album ‘As You Were’, the announcement comes as Liam is back at the height of his powers. MUSIC The legend that is
Goldie Goldie, one of the most defining artists of the electronic music era will be appearing at Brighton Dome on Wednesday 22 November. Goldie and The Heritage Orchestra Ensemble Live is a unique musical experience of the live orchestra and his iconic repertoire, staging The Journey Man Tour. Goldie spoke to Absolute’s Kasia from Thailand about his accomplished life, work and thoughts.
G
oldie had a rocky childhood. Of mixed race, suffering dyslexia and with an inner city background, a significant part of his youth was getting together with like-minded friends and playing music on weekends. “It was a fascinating time... being influenced by lots of different music which I always found very attractive ... Punk was very big for us ... this subconsciously must have resonated in a lot of ways, because it was original British music. This was the reason why Drum & Bass was something I wanted to champion.” In the light of the substantial political change in the UK at that time, it was an amazing time for music, as the emerging genres were being defined. “We were on the cusp of something fantastic, and I’m grateful for that change ... I knew when we were making Drum & Bass music it was going to be something special. Drum & Bass was a very defining moment in knowing that it wasn’t going to be understood ... was very much like New York Graffiti ... I found an excellent connection with the sub-culture of graffiti.” "The subcultural movement was bringing people from various boroughs together. With the graffiti being “the hum of the country ... a massive colourful explosion of colour that people could read. Not defined by a conventional style, so was Drum & Bass. For the inner city youth culture, it speaks the same language of disenfranchised dystopia freely... The middle class will always resonate towards what’s coming from the streets ... because it speaks the language of the truth. Drum & Bass influences a lot of other music.

It can be gentrified and watered down but it’s misunderstood by the general populace, which is the same as what graffiti art does.” As a sound pioneer Goldie has paved the way for music evolution. “If you stick around long enough you see the art change, people’s views change. Forward thinkers are never cited for what they do ... that’s what innovation does.” Not averse to the current technology in music commerce, his fundamental principle is “about applying the soul to the music ... I make music for the adults. I’m a 52-year-old man. Its important to me. When people hear me play Inner City Life with the orchestra they can hear how far I’ve come. If I go back to making simple records as I did 20 years ago for the sake of commerce then it wouldn’t be fair to me as an artist, it’s not innovation. That’s regression. Let the kids make the music for the kids, that’s not for me. I find a lot of adults in electronic music get it wrong; they cop out of their innovation. How can they make music just to fleece young people for the sake of it, I couldn’t do this. Older people have a duty to their music, we have to be dutiful with it, be artistic and expressive. The last time I checked my records and the timeline of say, Charles Mingus, Miles Davis or Radiohead, for example, I didn’t see their music regress. But I’ve seen it in my field and I disagree with this. I see producers that don’t love their music yet they make it just for the sake of sales. My music takes me where I need to go. It may take you on your particular journey. My journey is going forward. What I do today creates art, I create tomorrow now. My music goes through a progressive process. You might

understand it now; you may in 5 years time. I can’t tell you where I’m taking you; it’s just important to me that my music will endure for the next 10-20 years. For me, it all goes back to Detroit techno, the Godfather of our music. A city full of economic strife, full of young black people playing electronic music way before European people got into techno. I listen to music all the time ... Stan Getz, Steely Dan, Pat Metheny and today an early Richie Hawton mixtape, some Electric Light Orchestra, the Stranglers. I listen to jazz and some crazy music. I have a healthy musical diet. I don’t switch off.” With the new album, he amalgamates musical and lyrical reference points. Goldie talks about the response and feedback to his music. “They may pick up on details such as the Kate Bush classic ‘Running Up That Hill’, cleverly encoded and other such references. People listen to my albums and they ‘hear ‘ it later. They pick up the reference points and connections. “It’s all about the patchwork quilts of my mind within the design of this project; It’s intrinsic. The unravelling of it all. I’m complex. There’s eleven adults in my head and one child; the difference is they’ve always been screaming. Now they are all sitting with the child and they have to listen. This is the understanding of what The Journeyman means. A young person was making an impossible journey. Life is a single sequence of consecutive miracles set within infinite moments over billions of years. That’s what I’m striving for now. I don’t care if a kid buys this album for 50p in ten years time, as long he gets and understands it.

I’m here to do a job. I have to leave a legacy and I haven’t achieved all my goals, but I will do my utmost to make sure I achieve them. By doing what I do in the arts, I know there’s more to do. After all we here for a short time. In a world where the illusion is about the selfie, the selfabsorbed and which is why I chose yoga to connect with myself. For me the importance is if we take away the gadgets, what do we have, what does a young person have? Anyone in the arts, anyone picking up and learning an instrument, or painting amazing graffiti ... well, that’s real. I know the genre that inspired me in the 80s is still predominately very strong. Going back to graffiti in my art led to all my layers musically. It’s a powerful force. It’s the alchemy. I’m insatiable in the arts.” “Having an instrument as a vocal is one of the greatest gifts you can have. I never had that voice. I’m dyslexic and not being capable of playing instruments has been the biggest curse in my life! But being able to manipulate jazz players, real seasoned players is the highest order of alchemy; it’s the most significant gift I could also have. The gift and the curse have always been hand in hand. Being able to manipulate these musicians and being able to direct them is the highest form

of alchemy because these players wouldn’t usually play the way they do with me, I lead them to that. If you ask me if I’m content with the manipulation of the arts right now? Yes, because if I put an idea down, it comes out 99% of what I’m imagining it to be. That’s what any artist wants man, that’s the reward. Not the MBE, not the Dr Goldies ... It’s about me waking up and going ... that sounds great, that feels amazing. I don’t listen to my music out of ego; I do to it out of ... oh my God, that inner soul can do it to you. Because it’s not me making it. I’m not playing the actual music. I’m just the conduit to it all; I’m serving it. And to serve it is to allow the energy come in. What is your ultimate happiness? Just being here, having my family and daughter around me and seeing them happy. And to have this freedom I’ve paid a very heavy honourable price, and this was through dirty, heavy breakbeat culture that everybody said would never go anywhere. I get in the sea at 5.30am every day and today I visited my friend’s studio, I drove over and God it was hot! It was a hot baking studio. I went in tired, worked 90 minutes in that studio on a song and I came out feeling like a million dollars. I know this is the kind of thing that’ll keep me and my mind healthy. I came straight home and jumped back into the sea.” On to the show in Brighton. “The Heritage Ensemble is the driving block of

The orchestral shows we did last year were compelling, and the reason we are doing the Heritage shows is that we are showing the aspects of jazz and how this album can be manipulated within that. It’s a bit like the Range Rover Sport, you can have the Vogue or the Sport, we are doing this tour with the sport because of its ease to manage and we can move a lot more regarding freedom. It’s a great show. We played Ronnie Scotts and they told me I was the only musician/ not-musician that’s ever played here! That makes me smile in my heart hearing this. That’s the power of the alchemy. I’ve been able to take this music so far, and that’s the kind of control I have over it. After all, my life’s hurdles and then to be on stage hearing people playing your music that was in my head is the buzz. This show is special, and the album was designed to be played live. Fence For two decades, Off The Fence’s vision has been to see an end to social and spiritual poverty in Brighton and Hove. Off The Fence work in 3 areas: Night outreach to those living on the streets and a homeless centre, Antifreeze which provides emotional and practical assistance for exiting homelessness; support for vulnerable women facing times of crisis at Gateway women’s centre, and a Schools & Youth programme for students.

ff The Fence, having been running for twenty years this year, offers people hope, a way forward and the opportunity to live a transformed and better life. Inspired by the invaluable work the charity do around our city, Absolute Magazine spoke to Co-founder Paul Young to learn how it all started, the current projects and how we can all get involved.. What inspired the creation of Off The Fence?
My wife and I founded Off The Fence over 20 years ago, after working on a Christian foreign aid ship. Seeing what impact is possible to a community, we were desperate to see if it was possible to make a long term response to the greatest needs in our home town of Brighton and Hove.
Your Antifreeze project is unique in that your outreach teams go direct into the streets of Brighton with the aim to meet the basic needs of the homeless. Is there a way in which an individual can approach Antifreeze themselves? Off the Fence provides short and long-term solutions by delivering a range of services every week to support people into housing, better health, welfare and assistance in moving on from addiction. Antifreeze supports those who have struggled with life-destroying addictions, mental health issues, job loss, family breakdown, violence and bereavement which have led to homelessness. The team and volunteers

work to restore client self-worth, confidence and independence, and help to address welfare and financial issues. Open 4 days a week, the Antifreeze centre provides a safe space and welcoming place to connect with others in the community, and offers practical and emotional support for exiting life on the streets. In 2016, Antifreeze was accessed nearly 8500 times, with in excess of 1000 individuals seeking services at the centre- over a 10% increase on 2016. Tell us about Gateway. What additional support do you offer vulnerable women in Brighton?
Gateway is significantly changing the lives of women from many different backgrounds who find themselves overwhelmed by their circumstances and struggling with issues such as anxiety, depression, suicidal tendencies, domestic violence and abusive relationships. At the end of 2016, there were 1697 clients visits compared to 1492 at the end of 2015- the highest number of visitors Gateway has ever seen. By offering an impartial, caring and safe environment for women to meet with trained members of staff, Gateway provides a place where women can build trusted relationships; receive confidential support and signposting to other agencies when appropriate. With the loss of government funded services and previously existing societal structures that would have supported women in a time of crisis, Gateway offers a vital service. Tell us about your schools and youth

programme. What additional support you offer young people in Brighton? Supporting young people aged 5-18, the 30+ activities run by our Schools & Youth team aim to equip young people for dealing with difficulties later in life, help students to grow in confidence and prevent them from entering a life of addiction. Our Schools & Youth Team made 14,239 student contacts last year through a programme of mentoring, workshops, clubs and lessons – an increase on the 13,542 young people met with in 2016. The Schools & Youth Team deliver a programme of 23 different, vibrant, fun and creative activities every week, covering different topical themes. During 2016 the team ran activities such as specifically requested Coping with Anxiety courses and Self Esteem workshops, along with the Building Healthy Relationships course, Drug & Alcohol awareness lessons,
With winter weather creeping in, What additional support do you have to support the street community at this time of year in Brighton? We have the day centre drop in, the emergency homeless night outreach, the mobile hygiene vans, the clothing store, I could go on for the whole page describing what we do, what we need is for Brighton and Hove to give us the tools to prevent people dying on the street, everything from Toothbrushes to socks, hats, gloves sleeping bags to sponsorship for our homeless street sheets. We are so thankful, for the many companies, schools, clubs and associations
that help out together we can make a world of difference.
As with all charities you must rely heavily on volunteers. How can our readers get involved in volunteering? We do rely heavily on our volunteers and we have a waiting list of eager volunteers but we would love anyone who is interested in supporting Off The Fence to come in to our centre and to see what we do. We would also love to encourage folks to participate in one of our fundraising events, (please see our website for details) or organise their own fundraiser for us for which we can supply guidelines, literature and support. How do homelessness rates in Brighton compare with other cities in the UK? Outside of London Brighton and Hove has the largest homeless problem in the country. What do you believe to be the best course of action for the government to combat homelessness? I sit on the all-party parliamentary strategy for homelessness. Unfortunately
there are no quick answers, it’s complex and will take long term funding. For families, rising homelessness is tragic. For councils housing homeless people, it is unsustainable. Councils need to be able to adapt the implementation of some welfare reforms to ensure there are housing options for people on low incomes. There is no substitute for a renaissance in council house building if we’re to truly address the rising homelessness we face as a nation. For that to happen, Government needs to allow councils to borrow to invest in genuinely affordable housing and to keep all of their receipts from Right to Buy sales so that money can be reinvested into delivering genuinely affordable homes. What does the future hold for Off The Fence?
OTF have a robust business plan that covers the next five years, we launch in November the mobile hygiene units for the homeless, these include the laundry van, outreach van and in 2018 the homeless shower van. We are looking for long term client housing and larger premises in Hove for our projects; we are carefully growing with each year that passes, and long to make a greater impact with each passing year. 10| Established in 1766 making it one of Brighton’s oldest pubs, The Victory on Duke Street has kept most of it’s original features giving it a really authentic and traditional feel. Think beer kegs for high tops and book cases embedded into brick walls. The food is simple but quality featuring simple bar snacks such as Scotch eggs, casual baguettes, burgers and salads and more substantial dishes such as the Jack and Coke Pork Ribs.

2| Douglas McMaster, owner and head chef has spent many years working in some of the UK’s and Europe’s top restaurants. You can expect to see a fair sized menu created with seasonal foraged ingredients that come together to give you a unique dinning experience. Some of the dishes so far have been Sea Buckthorn and Elderberry fool for dessert and potato steak, elephant garlic, alliums and herbs.
Curry Leaf Cafe
3| The original Curry Leaf Cafe is located in the heart of Brighton's bustling Lanes, just a couple of minutes' walk from the beach. This colourful, laid-back 75-seat dining space – decked out with exposed brick walls, wooden tables and vintage Indian design touches – operates as a cafe-cum-lunch spot during the day, offering a range of coffees, teas, snacks and traditional South Indian street food, as well as more substantial meals such as thali platters, dosas and Masala-battered fish 'n chips. 4| Eatalio is a recently new addition to Brighton’s food scene, and is located on Queens Road, abouta 5 min walk from the station near Brighton’s clock tower. Inspired by the simple, yet healthy food served from the street carts in Italy, Eatalio provides affordable, grab and go food for breakfast, lunch and dinner. A great venue to pop into and dogs are most welcome. No servicesfor dogs, they just allow them in the venue.

Reservations are not Necessary unexpectedly, however it is recommended on the weekends as it can be very busy. BARS & BEATS Bohemia 1| If you are looking for a premier cocktail bar with lots of atmosphere then this the place for you. Bohemia is a great place to spend your evening. Spread over three floors it has a large central bar on the ground floor with bar staff on hand to mix cocktails. They are a bit pricey but definitely worth it. The first floor has a late lounge, specialising in champagne and even has a cigar menu. The lounge opens Friday and Saturdays till late and has DJs every e vening if y ouf ancy a dance. BYOC
2| Bring Your Own Cocktail is the newest bar to join the ever expanding plethora of drinking establishments popping up. This type of bar is the first of its kind in Brighton as alcohol is not available to buy on the premises and there is no drinks menu. You and your friends are invited to bring your favourite spirits and hire one of the expert bartenders to mix whatever drink you desire. The cocktails are prepared and served in front of you from a trolley with a selection of cocktail acompliments. You pay a flat fee for a set amount of time with the mixologist. This is great idea if you love cocktails and are on a budget and its lots of fun getting the staff to create your favourite tipple.

3| Those with a party penchant wont be hard pushed to get your late night fix at this naughty, Brighton number. While a cracking destination for eating out in the day, get stuck into the confines of the quirky Brighton bar as the lights go down and the sound-system goes up for a fun loving, seaside crowd.

4| If you’re after a Sex and the City venue then look no further. My Hotel is a beautifully crafted bar with curved walls, gilding pewter surfaces and low lighting, reflecting a warm and spacious cocoon. As part of the My Hotel franchise, the bar is open to non-guests to enjoy some beautifully made cocktails, a sophisticated atmosphere

and an altogether glamorous night out. The bar staff are knowledgeable and helpful. This is a good place for special occasions. Everyone gets super dressed up so if you are looking to get your glad rags on and feel special this could be the place for you.
Legends
5| Legends is a gay bar and hotel located on Marine Parade just a minute away from Palace Pier. It has a fantastic selection of rooms with stunning sea views. The venue itself is very spacious and has a large bar upstairs with outside terrace and huge dance floor downstairs. There is always plenty going on with drag acts during the week and great music played by a diverse r ange of DJs at the weekends.
Lion & Lobster
6| If you are looking for a good, old fashioned, comfy pub with a great atmosphere then this is the place for you. The Lion and Lobster is very popular with the locals and has become a bit of a Brighton institution. It is a good venue to start your night before going out on the town. The pub is spread over three floors with a main bar downstairs complete with cosy real fires in winter. The second floor has a small bar within a beautiful dining room and the third floor is the outside smoker’s area complete with mini bar and outside heaters. The Sunday roasts are very popular but make sure you get there early.

7| This is an ideal venue for pre-drinks if you are out on a hen or stag night or with a big groups of friends. The drinks are cheap with lots of offers on shots. The bar staff are very friendly and service is speedy. There is always a DJ downstairs playing popular tunes to get your night started. The atmosphere is fun but cheesy.

9| This lovely pub has been open since 1882, making it the oldest pub on the seafront. It is a good meeting place if you are going clubbing on the seafront. There are DJs playing at the weekends and it always has a friendly atmosphere and is never too crowded. The décor has a maritime theme and the pub provides beautiful views over the seafront. It has an outside seating area and a buzzy atmosphere during the summer months.

et up by Heather and Paul Smith, Black Mocha was born from a love of quality coffee and chocolate. With a focus on single origin we wanted to capture the true flavour of both beverages by using ethically sourced, quality coffee beans and chocolate. How did we create the Black Mocha? It all began with THE hot chocolate. We created a rich water based recipe with 70% Madagascan chocolate to really explore the true flavour of this single origin chocolate. It was a ‘no brainer’ to add a double shot of espresso to it to create a mocha, but as it’s not a traditional mocha with milk or cream, we needed a new name for it so the ‘Black Mocha’ story began. A unique drink that represents our ethos of respecting simple ingredients, enhancing their natural flavour and sharing a passion for quality food and drink.

Who designed your interior? We designed the interior ourselves. With a modest budget, we wanted functionality with a minimal 60’s feel. Inspired by midcentury danish furniture from Frem Rojle and Eames, this is a classic style people return to and are comfortable with. As with our inclusive food and drink offer, we wanted to ensure the style appealed to a wide audience and we have had great feedback from our customers in doing so. Ok to the coffee. What kind of beans are you using? We work very closely with ‘Cast Iron Coffee Roasters’ based in West Sussex in carefully selecting single origin beans for espresso and pour over. For our V60 brew, we usually select fruitier beans and rotate these every two weeks. We rotate our single origin espresso every 3 months whilst maintaining a taste profile of dark fruits, chocolate and caramel notes from the beans we choose. This compliments the 70% hot chocolate to create a consistent, balanced taste profile for the signature ‘Black Mocha’. Do you offer an app service? We do not offer an app service currently, however our staff are very efficient and provide exceptional customer service so you will never be waiting too long for your coffee.
Do you tweak the grind of the beans to get balanced perfection? To create the perfect cup of coffee, we work to a carefully calculated recipe of weight, coffee grind and water ratio to enhance and highlight the flavour profile of the beans. The difference in room temperature and humidity can expand or contract the bean size so our baristas are trained to adjust the grind settings to ensure we deliver a consistent espresso. Tell me about the various drinks on your menu? We offer an espresso based coffee menu and V60 filter coffee. On our hot chocolate menu there are a choice of 70% dark, 40% milk and 34% white single origin hot chocolates and we also have a large range of carefully selected speciality loose leaf teas. oving to the countryside is an aspiration for many; a change in the pace of life, working from home, wanting somewhere healthier for the children, being part of the community... or like me; so you can turn the sound system up to 100% and not worry about someone asking you to turn it down! I lived in Hove for many years, at that time living outside Brighton & Hove seemed ludicrous and boring, people living outside our bubble “just didn’t understand cos they weren’t there man”. I moved back to the countryside "temporarily" however after a week I found myself appreciating the peace and quiet, the familiarity of knowing everyone you pass & decided to stay put.
If you work silly hours and end up doing dinner about 9pm it can be annoying missing a fundamental ingredient, realising there's no Tesco Express round the corner. Some perish the thought of having to drive to a shop or not being able to walk to a bar... In reality it just doesn’t bother you. Whilst I like being remote, I will say however, being able to walk to a local pub is crucial. There's something liberating about sitting here typing this in my boxers, nobody is going to knock at my front door as no one can find it. Opening the back door in the morning to let the dogs run round the field without having to set foot outside is bliss. When you have time nothing beats taking them for a walk through fields, woodland and lakes.

Bang & Olufsen are internationally-renowned for not only their state-of-the-art audio ingenuity, but also their cutting-edge design and future proof products. Now, true to form, the nearly 100 year old company have launched their latest wall-mountable wireless speaker system BeoSound Shape that is catching the eye of both the design and audio world.

he company’s story started back in 1925, when two engineers, Peter Bang and Svend Olufsen, began a modest production of radios in the attic of the Olufsen family home, 'Quistrup'. The company of 'Bang & Olufsen' was founded on 17 November that same year by the two young engineers who shared a passion for radio transmissions. Their first product was developed in the attic of the Olufsen's manor house in Denmark where the family still lives today. The first commercially viable product to bear the Bang & Olufsen name was the B&O Eliminator in 1927. The Eliminator enabled a radio to be connected directly to the mains rather than being battery-operated which had been previously the norm. That same year, production moved to a new, purpose-built factory just outside the town of Struer. It was the sturdy '5 lamper' (5 tubes) radio from 1929 that firmly established Bang & Olufsen as a reputable radio manufacturer. In 1930 Bang & Olufsen introduced its first radiogramophone. The following year the company manufactured a tonefilm public address system for use in cinemas. This rapidly came in such a demand that a subsidiary was formed to handle this one product. In 1938 Bang & Olufsen introduced the first mains radio with push-button operation: the 'Master 38CH'. The 'Master de Luxe 39' introduced the following year had no less then 16 permanent stations. This was the first time that strict attention was deliberately paid to user convenience. From the outset Peter Bang and Svend Olufsen concentrated on quality materials and the application of new technology. Following the move to the new factory a new idea developed, a pre-set tuning button, which was one of the many innovations that earned the company the Danish Hallmark of Quality.

BeFries Just over a year ago Absolute writer (and self-confessed chip fiend) Shelley Welti met brothers Dashal and Chan Beevers who were on a mission to bring delicious Belgian fries to Brighton. 13 months later, she caught up with Chan, from the now award-winning BeFries to talk being in business, mastering the art of perfecting Belgian fries and saucy plans for the future…
Hi Chan! How has BeFries’ first year been? It truly has been an incredible first year of BeFries. We feel overwhelmed by the continued support we get from our customers. We always believed in the quality of our product and giving first class customer service, but something we didn’t think about was how providing this experience would be so rewarding and fulfilling for us. Starting your own business is very difficult and a lot of hard work. So, for us to see the enjoyment on people’s faces keeps us smiling. What have you enjoyed most about the last twelve months? We have been welcomed into the Brighton food scene with open arms from bloggers, restaurateurs and other industry influencers. We are really grateful for the support they

have given us and feel like we are part of that community. We’ve enjoyed watching the business grow, welcoming regular customers, forming a great working team and have had fun developing new and interesting sauces, often surprising our customers with different combinations of flavours. We have been overwhelmed by the positive feedback from the public. We are currently rated number three on TripAdvisor for restaurants in Brighton and Hove which is amazing! You’ve also been listed for so many food awards in such a short space of time – how does that make you feel? In March we won our first award, Best Bites on a Budget, in the city-wide Bravo Awards, voted for by the public. We have been shortlisted in three categories of the Brighton and Hove Food and Drink Awards. We have made it into the top three for: Newcomer, Cheap Eat and Takeaway. The winners will be announced on 6th November. We are especially thrilled to be nominated in the Newcomer category. We really believe we are bringing something new and exciting to Brighton’s food scene and it’s great that we have been recognised for this. Why do you think BeFries has proved so popular? Culturally, food is something that brings people together, and helps to create memorable experiences. When you get the recipe right between genuine customer service, delicious food and a relaxed and

As well as all of this, we are introducing a special beer menu with local and Belgian beers to complement our fries. This is important to us, we enjoy engaging with our customers and building relationships with our regulars, and I think the passion we have for what we do is a key reason why we have proved so popular. What have you implemented new since opening? Learning to cook authentic Belgian fries has been the longest lesson we have ever undertaken. It truly is an art - many people can cook fries/chips but to cook the perfect chip takes time to learn. We compare it to making coffee; nearly everyone can make a coffee but very few can make a great coffee. There are no timers when cooking Belgian fries and because we are using fresh potatoes, the cooking process can change from delivery to delivery. Whilst developing the business itself and fine tuning our process over the last year, the part we enjoy the most is creating new sauces to go with our fries. Since opening we have created roughly twenty new sauces which we have trialled, and at least half now feature on our menu. Speaking of sauces, which have been your bestsellers? Currently we have about twenty-five sauces on our menu. Our most popular sauces are our garlic mayo and satay sauce. The garlic mayo is homemade and has a great fresh garlic flavour, while the satay sauce is very different from what people are used to - it has a rich sweet flavour, reminiscent of peanut butter. Some of our newer sauces are
quickly becoming just as popular too, such as our jerk mayo, vegan basil mayo, dill and gherkin and lime and coriander mayo with a jalapeño salsa. We incorporate all of our favourite ingredients, creating a wide range of fullflavoured sauces which keep our customers coming back for more. Your snack nights have gone down really well. What is the idea behind them? There is a large community of Belgian and Dutch people living in Brighton and they all miss having their snacks they love from back home, so we decided to create snack nights so they (and other Brighton residents) can enjoy them. Our snacks consist of beef croquette, frikandel (sausage) and kaassoufflé (deep fried breaded cheese). Currently we are running our famous snack night once a month. We plan to have a different event every week which we have lots of ideas for and are in talks with a few other restaurants/food venders to do collaborations with. Sounds exciting! What else is in the pipeline for BeFries? We are very excited about the future of BeFries and we have big dreams. Due to the growing demand from our customers, we are in the process of jarring some of our most popular homemade sauces. These will be available to purchase in store, so people can enjoy our tasty selection of sauces at home. We are also building a mobile unit so that we can take BeFries on the road! We have

The ma rkets glowing with deep orange marigold flowers and the hues of red tikka powder brighten every corner, but the thing I loved the most was sampling the vibrant, flavoursome street food. The warming spices and medicinal herbs certainly make this the perfect cuisine to indulge in as the cooler weather sets in. In Brighton there is a dynamite culinary scene with a plethora of curry restaurants. However, if you’re not in the mood for mirrored walls, gilded columns and huge vases of flowers then The Curry Leaf Café is the breath of fresh air that you’ve been waiting for. This casual and cheerful eatery offers exceptional Indian inspired street food in a fuss-free and fun environment. The original café opened four years ago in the heart of the Brighton lanes and with rave reviews, numerous awards and being hailed the ‘Local Gem’ by the Waitrose Good Food Guide. This kitchen is taking foodies by storm, regarded as the place to fuel up and feel good in a super chilled venue. The second café, Kemptown Kitchen has a similar concept to the first. Opening its doors in Brighton’s bohemian quarter, the

The stylish, yet informal concept of a café follows through to this eatery, however The Curry Leaf Café in Kemptown is cosier and features a theatrical open kitchen complete with stunning Indian themed ornate tiles. The décor is bold with bright orange and green walls in keeping with the recognisable logo. Floor to ceiling windows work in harmony with the rustic wooden bar tops, perfect for solo diners and light bites on your way into town. The main room is warm and inviting with simple furnishings that compliment the vibrant colours and the overall super chilled vibe. This is most definitely the kind of place you can pop in for a coffee in the day or relax with no time restraints and a cocktail or two in the evening. I arrived late on a Thursday evening and the place was buzzing with Brighton’s savvy eaters - a true testament to their ongoing success and loyal following. I was honoured to be joined by Euan Sey, the man behind the Curry Leaf Café and the perfect person to sample this subcontinental cuisine. Euan is quite evidently passionate about what he does and this enthusiasm and understanding for Indian cuisine is

captivating. The two Curry Leaf Cafes have passionate Head Chefs from different regions of India, so whilst the lanes venue focuses on South Indian food, the Kemptown kitchen has more rustic, provincial dishes on the menu. This allows for creative freedom and the benefit of not having identical menus. There is also a Curry Leaf Kiosk at Brighton Station which opened in 2016 and has been highly successful for food lovers on the go. Local ingredients are key and the team endeavour to create healthy feel good food for today’s increasingly health conscious population. The menu is compelling and whilst I wanted to try everything, I decided to leave the ordering to Euan as he was keen for me to try the newest additions and the firm favourites that locals come back for time and time again. Whilst you can order larger portions, The Curry Leaf Café offers an adventurous spin on Indian tapas. Beautiful, reasonably sized small plates to share make for a more exciting dining experience as you can try an array of flavours and levels of spice. The winter vegetable pakoras in spiced chickpea batter were morish and the Afghan saffron tikka boneless chicken thighs with fenugreek leaves and yoghurt was sensational. Explosions of flavour with bangs
of garlic and coriander were a delicious way to start our meal. The dish that was simply delicious (and I honestly did not want to share) was the chili fish; a sweet and sour Indo-Chinese concept with pieces of locally caught white fish lightly coated and flavoured with ginger, garlic, spices, lime then deep fried and tossed in a chilli & garlic sauce. I was surprised to discover that in India the locals also enjoy Chinese food and this is a popular street food creation. Euan has travelled across South Asia engaging in the colourful, chaotic traditions and food that each region has to offer. The energy of authentic Asian food is electric and very different to the large portions and sweet creamy sauces that we know as curry here in the UK. The Curry Leaf Café certainly offers traditional dishes in a modern environment and style. The Curry Leaf Café is well known for its Hyderabadi lamb chops. The British lamb is marinated for 24 hours in a rich, savoury paste made from onion, ginger, garlic and garam masala. The flavours capture the very essence of Indian cuisine and the cooking technique results in chops that are so incredibly tender and succulent. I love the small playful, yet sophisticated plates that pack a punch and whilst we did
order lemon rice and a sweet peshwari naan to accompany our dishes, we hardly touched these sides which meant I did not feel the usual bloat that I have always associated with Indian food. The small dishes are served for sharing and designed to be ordered together to create balance. I must confess Euan and the Head Chef Sabu were incredibly generous and so I will pick out a couple of corkers from the curries and stews that I tried and would highly recommend: The Alleppey prawn curry originates from Kerala where Chef Sabu grew up and is a mouth watering combination of coconut sauce flavoured with fresh ginger, garlic and Turmeric with a dash of sour Kokum extract a rich antioxidant fruit. The Navaratan Kuruma was earthy and tasted like sunshine. It is an opulent dish created for the Mughal Emperors of 16th century India including nine vegetables, fruits, nuts, aromatic spices and well if its good enough for an emperor than its something I was not prepared to miss out on. Other dishes included the Paneer Makhani with a cheese and tomato sauce and the Keralan chicken stew bursting with rich flavours and truly thrilling. The chic playlist is as carefully selected as the wines and craft beers and with such a cool

and relaxed vibe, it’s a wonder that anyone ever leaves. The Curry Leaf Café caters for everyone from vegans to gluten intolerant diners and the thing that I particularly like is that the Kemptown Kitchen operates a first come, first served walk-in-only policy as well as a take away service every night of the week! It’s been over 200 years since Britain’s first curry house opened. Now with our increased awareness on diet and the environmental impact from keeping produce local, I am excited to see establishments like The Curry Leaf Café that genuinely care. The Curry Leaf Café’s Kemptown Kitchen is the perfect place to enjoy delectable new dishes, cooked from scratch and with the finest ingredients. Euan and the team are dedicated to ensuring the Brighton venues are excelling and with the hands on approach and passion from the Chefs, this is now one of my favourite places to eat in Brighton. Touro I’m sorry to say, vegans and vegetarians of Brighton, but this is not the review for you. Touro, situated towards the bottom of London-by-the-sea’s party strip West Street, is the venue for meat lovers and meat lovers only.
A
restaurant with more metres squared than most, it’s a vast space in itself. Touro is a Brazilian venue, basing it’s offerings on Rodizio style all you can eat cuisine. With most people opting for the unlimited buffet with meat, the idea is that you go up to the buffet, get your sides and then sit down with a wooden block on your table, that you can turn to red or green; red signalling you don’t want any meat to come round right now and green to keep it coming. Every different kind of meat you can think of is brought round and carved off, with most meats coming in multiple different styles and varieties. The buffet has your normal sides; chips, vegetables in sauce, falafel, salad, couscous, plus more substantial options like lasagne, chicken croquettes, pasta, breads, a big dish of beans and fried cassava (a South American speciality, a woody, starchy shrub, quite similar to potato). For unlimited access to the buffet and the full Rodizio grill, you’ll be parting with £21.95, or for just the traditional dishes, £16.95. There was a plethora of choice for every eating habit (if you wanted to stick to the buffet alone and were a vegan or vegetarian, that would be fine, but the meat part may not be your cup of tea) and even the fussiest of eaters could have found something that they liked. Drinks wise, I opted for trying out their cocktail menu and went for a personal

favourite; a Cosmopolitan. It was sweet, strong and as good as most of the Cosmo’s I’ve had in my life (a lot!), and set at an average Brighton cocktail cost of £7.95 which is pretty standard for the city. With regards to the meat (I also noticed shelled king prawns going around, however these were quickly all taken – they looked very good so I can understand why), there was quite literally something for everyone; steak, beef, chicken, lamb, gammon.
The lamb was incredible; a beautiful flavour and incredibly tender. The gammon was also amazing and honestly some of the best gammon I’ve ever had.

I wished I had asked them to carve off a lot more. The chicken was really well seasoned. There were a couple of different chicken options and we went for the thighs which were juicy and succulent and packed with tonnes of flavour. The selection of meats was really good with something for every meat lover’s taste,
plus a big selection of side dishes to go with them. I especially loved the broccoli and cauliflower in cheese sauce; this with the lamb was seriously special. Alongside the great focus on food, there is also a huge choice of drinks, especially cocktails, as I find some restaurants concentrate on one or the other sometimes, however Touro has got the balance exactly right. All in all, how was my experience at Touro? It’s a vibrant, busy place to spend a Saturday night, which I liked. The whole Rodizio style is fun and different, with something always going on. The staff are very friendly and jovial, and if you want to eat a lot of food, then this is the place for you. I think that this would actually make a pretty good venue for a first date. As it’s not the usual style of ‘order meal, have it brought over, eat meal’ it means that there’s always something to talk about, always something going on, and it actually gives you a lot to converse about. I don’t think my boyfriend and I actually talked about much else other than what was going on around us, the meat and all the different sides we were opting for. I love the whole concept of the block on the table, turning it to green to signal to keep the meat coming and red to tell them you’re full up and to hold off. It just makes the whole dining experience a little bit more unique. The fact that it’s all you can eat means
it’s fantastic value for money, especially if you like to eat a lot and you usually end up ordering starters and multiple sides to go alongside your main dish in a restaurant, as that can really add up. That’s why Touro is a really great place to have in Brighton. It keeps the cost down and it means you can ensure you’ll be full up when you leave. In terms of quality of food, there were meats that were an explosion of immense flavour and brilliant texture in my mouth, and there were others that were more subtle but lifted with the sides available. Would I go back? Yes – I think it’s a fun venue that’s great for a group of friends, a large family get together and stag and hen do’s, due to being able to eat as much or as little as you want, and the location is ideal for going out afterwards. Brighton doesn’t have a huge choice of Brazilian restaurants, especially Rodizio, so this is a welcome addition that I very much recommend.

You’ve spotted a tin of Heroes near the checkout in Sainsburys, you’ve had a conversation about whose family you’re spending the Big Day with this year, or you’ve reluctantly started going through your finances, trying to budget for what is the most expensive month of the year for most people (and God forbid you have birthdays falling during the month of December too!). The festive season is upon us everyone; boxes of shortbread and tins of Celebrations are sneaking their way on to our supermarket shelves, and as soon as October 31st has been and gone and the last of the discounted pumpkins and witches hats have been bought and sold, in will come the influx of tinsel. Mariah Carey will start blasting from shop speakers and as the month slowly climbs to a head on Christmas Eve, out come the hoards of panicked shoppers buying last minute presents. Let’s try and avoid you being part of the last part by buying your Christmas present, or presents, in plenty of time; if you’re reading this in a state of fear and thinking ‘What on EARTH do I buy for my mum/dad/ brother/sister/partner/mother-in-law/ cat?’ then fear not, for I have you absolutely covered in this article by telling you exactly where to shop and what to buy in Brighton. The most memorable destinations to visit Father Christmas A visit to Father Christmas is top of every child’s list. Don’t be fobbed off with some overpriced cheaply dressed Santa masquerading in a local shopping centre in a grotty Santa’s grotto, that’s been hastily teamed up with one unenthusiastic elf assistant. Meeting Father Christmas with your children is something that must be done properly or simply not at all. Father Christmas should at least look like the real deal, surrounded by a bevy of elves or Mrs Father Christmas, and at the very least with a sleigh accompanied by a reindeer or two. The best places to meet the big man are of course in London at salubrious venues where tickets are needed. So be ahead of the rest this season and make sure you have tickets for the little people in your life to visit one of the most magical people in the world. When it comes to visiting Father Christmas this season, you really do get what you pay for.
Harrods’ very own Father Christmas will be visiting from Friday 17 to Sunday 24 December and ticket pre-booking is open to Harrods Rewards members. The Harrods lights and Christmas window displays are not to missed.

IFC Shopping Mall Hailed as Hong Kong’s most visually appealing shopping destinations, the IFC Mall is a must-visit for visitors to the city. Ocean Park Ocean Park is located on the southern side of Hong Kong Island, covering more than 91.5 hectares of land. There are two attraction areas – the Waterfront and the Summit, both of which are connected by cable cars as well as the Ocean Express tunnel funicular system. Officially opened in January 1977, Ocean Park started as an oceanarium and has gone from strength to strength to become Hong Kong’s acclaimed educational animal and sea life theme park, playing host to more than 130 million guests.
The mall is part of a complex that includes the prestigious Four Seasons Hotel, where you can enjoy both Chinese and Western Michelin-starred fare. There are a variety of other eateries available too, and the roof garden with views across the harbour to Kowloon is a public space. Times Square People come from far and wide to Times Square, the retail jewel in the Causeway Bay crown. With over 230 stores to choose from, this is the area’s largest shopping mall. Ladies Market If you are a keen haggler then get over to the Ladies’ Market on Tung Choi Street, which offers over 100 stalls of bargain clothing, accessories and souvenirs to bargain hungry shoppers over a one-kilometre stretch. Although the name derives from its reputation for offering huge amounts of clothing and accessories for women of all ages, don’t let this fool you. You will be sure to find watches, cosmetics, bags, home furnishings, CDs and trinkets all up for grabs.
Jade Market The Chinese have long associated Jade with long life and good health, making it a prized material for good-luck charms. In Hong Kong, the jade business is most active at the Jade Market in Kowloon. A threetonne jade stone marks the strip of Canton Road known as Jade Street, where Jade of the finest quality is sold by more than one hundred stalls The jade comes in all sorts of forms, including jade accessories, including rings, bangles, pendants and earrings, as well as some more unusual finds as well.

A Symphony of Lights ‘A Symphony of Lights’ is a nightly light and sound show in Hong Kong and the world’s largest permanent light and sound show, according to the Guinness Book of World Records.

DHABI Just over seven hours away from London Heathrow, is Abu Dhabi; the capital of the magnificent United Arab Emirates. An area mixing contemporary skyscrapers and tax-free shopping mega-centres with culture and beautiful white marble-domed mosques, Abu Dhabi is a dream destination for all.

ith archaeological evidence found dating back to the 3rd millennium BC, Abu Dhabi has a rich history and settlements can be traced back over 5,000 years. While today, we know the region mostly for its oil reserves, the first settlers led herding and fishing lifestyles, In 1892 Abu Dhabi became linked with Britain, through the trading of pearls – its convenient location (being able to connect with India and the East), cemented its importance. By the 1930’s, Abu Dhabi’s wealth had taken a turn for the worse, with the introduction of Japan’s pearl industry, the recession and the death of their ruler Sheikh Zayed bin Khalifa. However, just nine years later Sheikh Shakhbut bin Sultan Al Nahyan gave permission for the Trucial Coast Development Oil Company, (renamed the Abu

Dhabi Petroleum Company in 1962) to search for large oil reserves. In 1958, impressive offshore oil reserves were discovered, along with onshore reserves in 1959. From 1962, the exporting began and Abu Dhabi has been renowned for its unbelievable wealth ever since! The last 50 years have seen Abu Dhabi change and reconstruct itself into a flawless city, with an abundance of sleek skyscrapers, shopping malls, out-of-this-world hotels and pretty gardens, yet it still holds its history close to its heart, which undoubtedly has been a prominent factory in the area’s success. Expect to find well-known brands such as Lipsy, Love Moschino, Apple, Pandora, Jo Malone, L’Occitane, MAC, Calvin Klein and Armani Jeans (along with so many more!), all in this mammoth sized shopping centre, which surprisingly was very easy to navigate! Looking for the home of luxurious fashion brands? You’ll find them all and more at The Galleria, on Al Maryah Island. The Galleria is a stunning, state of the art shopping centre, favoured by fashionistas – thanks to designers such as Alexander McQueen, Dior, Christian Louboutin, Dolce and Gabbana, Louis Vuitton, Miu Miu, Prada and Ralph Lauren all having boutiques here. If you fancy having a designer splurge; this is your perfect shopping paradise. Just don’t forget your credit card! It’s worth noting that most shops in Abu Dhabi open 10am -10pm (although many mall stores stay open ‘till midnight!), but some independents do close between 1-4pm for lunch. Hours also change during Ramadan, with many shops closing for the afternoon and reopening from 7pm – 10pm (and even later!).

One of their sushi restaurants is Relax@12 where on its alfresco terrace, cocktails are sipped and the finest sushi is consumed, as the sun sets over the city. Guests then dance the night away in their cool and luxurious interior. Situated on the twelfth floor, the chic restaurant and bar is a perfect place to relax and send out the day in style. The lounge also hosts a popular Ladies Night every Tuesday and Friday, where ladies can enjoy free drinks between 10pm and 2am! Cocktail, anyone? If you fancy enjoying drinks and Asian tapas (who wouldn’t?!) overlooking Abu Dhabi – Ray’s Bar at Level 62 of Jumeirah at Etihad Towers, is a must! With top tunes and one of the most extensive cocktail menus we’ve ever seen, along with a truly amazing view; this bar is hard to beat. Staying on the drinks theme, Iris on Yas Island (a thirty minute drive from the UAE capital) is a fabulous bar to visit for a chilled atmosphere, ambience and beautiful setting, overlooking the water. Iris has a relaxed vibe and we can vouch; it is an easy place to enjoy a delicious drink, get lost in conversation and indulge in smooth music. But, for something a little more low key; there’s a cool pop-up style “beer garden” behind the seaside oasis of the Le Meridian on the Corniche, where a few bars and restaurants open up. With a cool, casual atmosphere and live music; this is one place to visit for a change to the swanky and sophisticated bars, mentioned above. After all of that sightseeing, cocktail supping and tapas tasting, surely, like us you want to treat yourself to a meal at an awardwinning restaurant?! We can’t recommend Vasco’s at the Hilton Abu Dhabi (in the beach area of The Corniche), enough. The menu is inspired by intrepid explorer Vasco Da Gama’s route, recreating flavours from all over the world and diners can enjoy their meal inside or outside. We would always recommend dining outdoors, as long as the weather allows, as the deck enjoys secondto-none views of the Arabian Gulf – one of our favourite highlights of the entire trip. Vasco’s was recently awarded “Highly Recommended” in the Best International category by Time Out Abu Dhabi and with a mouth-watering, varied menu and service, we simply couldn’t fault; we can completely understand why.

Chocolate
Adventurers Welcome to the wonderful world of Choccywoccydoodah; extraordinary chocolate creations inspired by Brighton’s whimsical and flamboyant side. Absolute goes behind the scenes of Brighton’s best known chocolate shop (and gasped over window displays) to chat about gin-inspired-beginnings, show-stopping designs and plans for the future, with owner and self-confessed ‘budget breaker’ Christine Taylor.
Hi Christine! When did you decide to start Choccywoccydoodah? “Choccywoccydoodah was born in Brighton in October 1994. The business was never a plan, it still isn’t. My partner (Christine Garratt, the ‘budget maker’) and I reached the bottom of a bottle of gin, very late one evening and decided we wanted chocolate. A chocolate shop was born out of that drunken moment. We still like gin.” What were your aims? “Our original aims were to find exciting chocolate products and be able to eat them 24/7. Now, we make exciting chocolate products and everyone can eat them 24/7.” Sounds perfect. What had you done before? “My background is in design and my partner was a tax analyst for American expats. We joined forces and funds to open a tiny cafe in Brighton in 1988, called The Albatross. This is where Choccywoccydoodah was born in 1994. The original Albatross customers are still my customers (and friends) today.” Why did you choose to make Brighton Choccywoccydoodah’s home? “We lived here. Where else? Brighton likes a brave attitude! Brighton is part of our

success story. If success can be measured by creating something that people fall in love with and want to be a part of, then that’s what Brighton did to me, on a long weekend some 30 years ago. I’m still on Sunday with no intention of going home yet. Brighton is a fickle town, full of artists, gays, gangsters, dreamers and achievers. Choccywoccydoodah is the same. It’s a perfect place for us.” Over the years, you’ve created some seriously show-stopping cakes – any favourites? “My favourite is always the one we haven’t yet made. Currently, my favourite is Easter 2017.” You have done so much – what are your career highlights so far? “My real achievements are not chocolate and cake but the group of people I work with and employ. They make dreams come true; joy makers, cake bakers and chocolate adventurers who never, ever knew they could be so clever. We are a cross between a cult and an asylum, dipped in chocolate. Known as Doodahs.” How does the Choccywoccydoodah creative process work? “It’s very simple. I have an idea, I share

it with my team. We argue over it and get inspired. Dave (Captain Creative) makes sure it’s executed beautifully – usually. If I don’t like the finished version, I throw it away. If I do, it goes in the window. I almost always do. But I can be difficult!” How does it feel to always have a steady stream of people gasping in wonder at your shop window?! “I wish I had a department store. Then there would be a street of windows to look into. I’ve many more ideas than years left.” Before I go; what does 2017 have (hopefully) in store for the chocolate Mecca that is Choccywoccydoodah?! “We are shopping for shop number three. So, hopefully the Brighton Mothership and the London Flagship may have a Ship Ahoy joining them soon – probably in the north.
