hen it came to expanding our international collection of titles, where else could we look but to the White Isle of Ibiza. For the past few decades it has been a mecca for the

world’s most stylish travellers, hailed as not just a clubbing hotspot but now a globally recognised true eco and luxury destination.

We decided that there was no better a place to launch our 2nd international guide to explore and promote this new side of the island, after traveling to

the islands in 2016 and 2017 to research and hunt out the true hidden

gems. Having shot our front cover and fashion editorial, we were finally ready to release our findings in 2018.

Now in our second year and for 2019 we have sought to highlight selected businesses on the island that we feel are offering something truly special and unique; all leaders in luxury and style. We have cherry-picked for you the best in fashion, food, relaxation and wellbeing to provide you with

new experiences and ideas for your holiday or short break to this magical

he 'White Island' has a well-earned reputation for being the ultimate party destination, with hedonistic tourists and serious music lovers flocking there every summer for decades. But amongst the throng of the party people, it's easy to overlook the history and culture soaked into the fabric of the island's buildings and beaches. Ibiza has a well kept secret; it is riddled with idyllic quiet corners, and in reality, as long as you avoid staying in Ibiza Town or San Antonio, you’ll succeed in escaping the madding crowds and finding your own calm and alluring slice of the island, discover the rich tapestry that is the island’s colourful history and find your own personal paradise. Travel back in time a handful of decades and Ibiza was a true escapist paradise. Wild, natural unspoilt and full of special magic. During the swinging sixties, hippies settled on the island that had already enjoyed decades of writers, painters, bohemians and other artists working and enjoying life on Eivissa. Hollywood stars came to escape and search for privacy and this Mediterranean island that shines with creativity eventually became an important music Mecca. The 'flower power' revolution bought with it a whole plethora of rock stars, lured by the friendly, open-minded, easy, laid-back vibe, unspoilt beauty and the sun which shines for 60% of the year. Ibiza was the island the place for those 'in the know'. When the tourism boom in the 1970s reached the white isle, cheaper travel came hand in hand, as well as newly built accommodation. With the influx of finance that tourism brought upon the isle, discos started to make their appearance. These define the history of recent times. Pacha quickly became the mecca of Ibiza nightlife when it opened in 1973. The end of the 70s brought Wham! to shoot 'Club Tropicana' and a whole new generation of young British holiday makers followed. To cater for all types of European taste, the soundtrack was wide and eclectic. The Balearic musical spirit was born. This wasn't missed a years later by visiting UK DJs Danny Rampling, Paul Oakenfold, Johnny Walker and Nicky Holloway who promptly took the attitude back to London. The early 90s saw this osmosis all come together. As European holiday makers came en masse, large clubs such as Amnesia and Ku Club easily filled to cater for this massive tourist industry.

The word and reputation of these 'super clubs' quickly spread attracting the fashionable, rich and famous to experience the magic of Ibiza's amazing nightlife. Change was in the air, however. Change that would see the face of tourism change forever. Increasing prices and government regulations mounting all led to shifts in the dynamic of the island and true party clubbers started venturing to such alternative destinations as Malta and Croatia. The legendary but now closed forever super club Space most definitely represented the old days of freewheeling' clubbing. The open roof, jets flying over to a screaming dancefloor, in parallel to a relaxed yet hedonistic vibe are scribed into history. However, the wild spirit of Ibiza ever continues. It has simply evolved with time. The parties may be smaller than the superclub, but they are every bit as hedonistic as the spirit of the 'wild days'.

Ibiza is a safe and accepting place. Anyone, no matter their age can come and enjoy. Party people - young and old arrive in droves over the summer and are swept up in the party culture. The beaches are plentiful and cater for all. Some are quiet, some a constant daytime party soundtracking the day, even nudists have their open places. Of course, the beaches wouldn't be an experience without the beach restaurant. Today, with climate change being undeniable, tourism in Ibiza is evolving and has become redivide. Luxury travel now isn’t just about opulence and hedonism, it is the ability to explore the world, safe in the knowledge you are doing so in a sustainable and ethical fashion. Sustainable tourism management ensures visitors are able to respect the island’s environment and support local development. Eco-tourism plays a huge role on the island, with environmental concerns shaping and pathing the way into the future. On an island of such excess, everyone from club owners to hoteliers, shopkeepers, DJs and villa owners are looking at ways of adjusting their offering to allow for a more sustainable future. There is almost a state of urgency about it all, with innovative answers being sought to protect Mother Nature, the most important lady of the White Isle. We have already witnessed a push for greener public transport, improvements on waste management, especially one-time-use plastics and an all important battle against oil explorations continues as ever. Many local environmental and tourist groups like Love Ibiza, Ibiza Limpia, and The Nature Project also sponsor beach clean-ups. Businesses, realising that the usual tourism spots are now bursting at the seems, have looked to set up off the beaten track, and so began the rise of Agrotourism. If we travelled back a decade, you would be pushed to find an agroturismos; an Italian word that refers to a working farm that rents out some of its rooms. Today, Ibiza has become world renowned for its huge influx of rustic yet luxurious traditional accommodation,

where guests can stay in field and woodland settings and feast upon local produce, safe in the knowledge their green credentials are sustained. Don’t be fooled into thinking that off the beaten track means remote. Ibiza is a small island at 20km by 50km and so the path less trodden is only ever a hop, skip and perhaps a taxi ride away from the infamous clubs, restaurants and beaches. The ultimate pull is that visitors to the new rustic establishments get the perfect blend of nature, peace, hedonism and wild antics that are synonymous with Ibiza. With the tourist season expanding to welcome visitors much earlier in the year and holding on to them way past the time the sun sets on the average holiday season, Ibiza is now a year round destination. March and October are becoming the new must-visit dates, with tourists lured over by reduced prices, less crowding and yet a perfect average forecast of 24-27C. Ibiza and the island’s visitors are ever-evolving. What hasn’t changed is Ibiza’s magical concoction of magnetic traits that promise her visitors hypnotic sunsets, beach scenes, crystal clear waters, and of course, parties from dusk to dawn.

IBIZA, Naturally I

t is without doubt that Ibiza is one of the most famous cities in the Balearic Islands for its spectacular clubbing scene, foodie credentials and luxury accommodation. However, you

will discover that there is far more to Ibiza when you journey past the white washed walls and disco lights and discover the natural world that lies beyond. Ibiza boasts two world-

class nature reserves, each adorned with flora, fauna, landscapes and wildlife that will take your

breath away. Here you’ll find mysterious caves, ancient monuments, folklore, almond groves and olives trees, crystal clear waters and rugged rock formations and the homes of a cornucopia of birds and beasts.

The es Vedrà und es Vedranell and the rocky islands of Poniente Nature Reserve Set to the south west of the island, in the municipality Sant Josep de sa Talaia, you’ll find the nature reserve of es Vedrà und es Vedranell and the rocky islands of Poniente Nature Reserve. As one of the island’s most spectacular attractions, the reserve is a UNESCO World Heritage Site and is surrounded by unspoiled beaches, cliffs and a horizon of rocky islands that make this place unique. If the sea, nature and their surroundings are your passion, then es Vedrà und es Vedranell and the rocky islands of Poniente Nature Reserve is your go-to place to leave your cares behind, take time out and just be at one with nature on holiday. Es Vedra is a small island that reaches almost 400m high, made of limestone and set like a beacon within the Mediterranean Sea. Surrounded by legends and mystery, it is thought to be the tip of the sunken city of Atlantis and the home of Homer’s wailing sirens who lured sailors to their peril.

y. Es Vedra is also the setting for one of Ibiza’s popular fables. Es Gegant des Vedrà or The Giant of Es Vedra is the story of two brothers who, set about curing their father of an incurable illness. They venture to the Es Vedrà island together to find rock samphire and, once there, come across a huge giant living upon the island, huddled in a rugged cave. The two brothers are cunning and, together with the assistance of sea urchins, manage to debilitate the giant and succeed in collecting the samphire for the cure. Throughout the years, the island’s only habitant was a monk who took residence in the mid 19th century, in order to escape the rest of the world. Aside from reportings of UFOs and other fantastical sightings, you’ll find only animals amongst the slopes and island caves. Wild goats roam, Ibizan wall lizards dart from rock to rock and an endangered species of falcons call it their home. Part of the reserve and the highest point in Ibiza, Sa Talaiassa stands tall at 473 metres high and is rich with lush vegetation and rare animal inhabitants. The peak is reachable by foot, or for the less active enthusiast, by car. Whether by foot or wheels, once you arrive, you will thank your lucky stars you made the journey. The views are simply spectacular and when the weather allows it, you can see right over to mainland Spain and Mallorca. It’s no wonder that the name translates to ‘Watchtower’.

IBIZA, Naturally. Natural Park of Ses Salines Take a trip to the south of the island and you’ll find Ibiza’s second natural park of Ses Salines. The Ses Salines d’Eivissa i Formentera Natural Park is located between the two islands of Ibiza and Formentera, comprising the southern area of the Ibiza, the north of Formentera and the sea that separates them. Throughout history this area has seen much salt production activity and over the years this has formed a unique landscape where countless species of birds come to nest, historical and cultural landmarks create spectacular points of interest and marine life thrives. The reserve covers 3000 hectares of land and 13,000 marine hectares and the seabeds are home to 220 different species of marine sea life. If you venture to the extreme coastlines of the park, you’ll find an idyllic setting where marine and coastal ecosystems exist in delicate harmony. Three quarters of the park is made up of marine seascapes, characterised by the existence of the oceanic Posidonia, an area of major marine ecological importance. The existence of this plant creates the supreme clarity of the area’s waters as well as serving as a protected area for a vast range of marine species. The Posidonia also plays a large part in protecting the beaches of Ibiza from wave erosion and in 1999 the site was declared well territory by UNESCO. Back on land the nature park is home to an impressive array of plant species; in fact it includes almost all of the plant species found on the Pityusic Islands. On the island of Formentera you’ll find coastal pine and juniper groves scattered throughout the park area as well as lush vegetation surrounding lagoons, cliffs and both mobile and semi mobile dunes. It is this dramatic terrain and spectacular landscapes that keep tourists flocking to witness the beauty of the park and the nature that lies within. Within the park, you’ll find over two hundred species of birds, with waterfowl and seabirds playing a major role. It’s a paradise for bird watchers, with flamingos, the common stork, the white jar, and the black-legged plover taking residence, along with seabirds such as the Audouin’s gull and the Balearic shearwater. Estany Pudent is home to one of the highest concentrations of black-necked grebes in Europe. Other famous residents include the Pityusic lizard (Podarcis pityusensis), endemic to these islands and with different subspecies on the islets, with characteristics that include the whole possible range of colours from brown to blue. The lizards of Formentera are hardy creatures and live on some of the driest and harshest environments for life. The humble garden dormouse (Eliomys quercinus) can also be found creeping amongst the wild vegetation, as well as various species of snails and beetles, also endemic to the island.

Ibiza's future, past and present. Meet Mr STEVE MILLER and the timeless sound of

AFTERLIFE

If there is one sound that encompasses the true magic spirit of Ibiza, it has to be the creative, mesmerising output of legendary producer Steve Miller. His project Afterlife with ten albums released contains all the mystical beauty of Balearic chillout and much more. Throughout a career of 25 years, his work has featured on various labels, many quality compilations and of course featured on the massively selling Café del Mar and Café Mambo compilation series. His remix work is a vast catalogue in itself. His work defines the blissful sound of the beaches, the sunrise and sunsets of the magic isle. On the eve of his new album Everything Is Now, released via his Subatomic stable, Absolute's Kasia catches up with Mr Steve Miller.

Let’s start at the beginning please, for those new to the Afterlife sound, can you take us back to the early days of project, please? Was it originally Ibiza inspired? Absolutely. Back in 1993 Jose Padilla contacted me and asked me to write a track for Cafe del Mar vol 3. I had just spent a delicious fortnight in Formentera hanging out quite a lot at the Blue Bar so naturally I used that for my inspiration hence the title of the track. The last night I sailed back to ibiza and stayed in the port listening to the first two cafe del mar albums in Base Bar and freaked because I realised that the music I had been quietly making at home in between commercial work had the same vibe. This was really encouraging because I was so bored by the work that paid the bills but had no idea that a market for this kind of music even existed but thanks Jose Padilla it does. On the release of Afterlife’s Simplicity Two Thousand in 2000, the classic chilled Ibiza sound is clearly defined. Can you take us through some of the inspiring moments that created classic tracks such as Dub In Ya Mind and Breather? A year after I wrote Blue Bar Jose invited me to Ibiza to meet up and work at Lenny Ibizarre’s studio in Salinas which was a revelation and so much fun. Computer monitor and keyboard and monitor speakers dangling from ropes from the ceiling. Chris Mancini popping in to share a spliff and listen. No tension, no stress, no agonising over the mix, everything was so easy. Studios can be stressful but Lenny’s was the most stress free studio I ever worked in, an absolute joy and so creative. The best holiday I can imagine. Dub In Ya Mind: During the blissful week working with Jose and Lenny we spent quite a few evenings at Cap des Falco. In those days we could DJ there with cassettes and vinyl, swimming, chilling to sunset, eating salt baked Dorado and dropping beautiful tunes. So the day I got back to the UK I wrote Dub In Ya Mind which just fell out of me the day after I landed. Breather: originally started out as a trip hop tune based on the feeling I got when snorkelling off Cap Des Falco but my great friend Eric Wolkoff from NRK in Norway wanted to remix it using the finest guitar player in Norway at the time, Marius Hansen. His ingenious musical arrangement transformed the song into a bossa nova classic which I had never imagined.

Over the following decade albums such as Speck Of Gold, The Afterlife Lounge led up to the Electrosensitive album. By now you are collaborating with names such as Pete Gooding, James Bright and Chris Coco on projects such as Lux and The Normalites. Do you find this helps energise your creativity? How do you find collaborations in general? I think collaborations are very healthy. It keeps you fresh, bouncing ideas off people. I particularly enjoyed working with K Klass on remixes because we would become so immersed in the work that we didn’t notice the passage of time at all except to eat and drink occasionally, working 18 hours a day and loving it. This gave me a real discipline in staying in a creative state for as long as the track would take, sometimes for 2 weeks or more at a time, really living it to the exclusion of everything else. I think that has stayed with me to this day. Sometimes remixes are even more inspiring than collaborations! You have worked with some very talented vocalists such as Cathy Battistessa, Dannii Minogue and Rachel Lloyd. Do you have a vocalist in mind when you develop a tune, or do you approach them when the vibe is set? Working with the three people you mention were all very different scenarios. With Cathy I sent her pieces exactly with her style in mind then she came to the studio to cut the vocal. Dannii came to my house to write from scratch with her vocal producer, cut the track and then leave me to produce. Rachel came to the studio and let fly with a stream of consciousness over anything I put before her and I edited the results. All of these methods worked well because it was the way each individual vocalist liked to work, they felt comfortable and that’s very important.

The 2000s featured albums such as The White Island, Shikasta and 2018’s String Theory. Were these inspired by moments, or do you immerse yourself in the studio and let it all flow? The White Island concept is a reflection of all the times I have spent in IBZ and the music I heard there so it features Lovely Laura, a super talented sax player and vocalist who lives there and works worldwide with her husband Ben Santiago. Alexandra Hamnede, the vocalist from Bliss, and of course Rachel Lloyd who performed with me at the Cafe del mar 20th anniversary gig. Shikasta was inspired by Doris Lessing’s book of the same name. It features Ella May (Nightmares on Wax) who also made some great tracks with Gelka. It explores the concept of how to treat your home planet with care and love and the problems that can occur when it is treated with disrespect. String Theory: In the last few years I’ve been really pleased to see a new trend in alcohol/drug free parties and raves around the world including the addition of vegan bars and juice bars, and a whole new consciousness about well being in the dance community. Having been to a few it was exhilarating, the vibe was amazing, a free hug at the door, even yoga classes and head massages just going to show that you can have a blast without drugs or alcohol, and of course the music was better because it had to be top notch to get sober happy people dancing. Alcohol and drugs pollute our emotional and physical well being, it’s so much better when we discover our own body’s happy endorphins and the buzz can last for days. This is happening in Ibiza too and this album celebrates that revolution in partying. ABSOLUTE

I love hanging out in the Dalt Vila, having dinner at El Olivo Mio then wandering around the streets soaking up the vibe.” When did you first visit Ibiza? What were your first impressions? 1993. It immediately felt like home from the moment I stepped off the aircraft. A sense of freedom. A lack of prejudice to colour, religion and race. Just like it has been for the last 2000 years. It lets people in and in return asks for them to behave kindly to each other. The architecture is funkier than in the rest of the balearic islands, Spanish, African and Arabic influences mixed with hippy psychedelia. Perfect.

There have been many changes on the island over recent years. Do you miss anything from Ibiza’s past? Fun without selfies. The only constant in life is change so selfies will end one day too. There are too many venues where people are more interested in their own image than relating to the music these days and I find that quite sad but it will change once the narcissists get over themselves on social media. Things have also got a lot more expensive than the rate of inflation. I miss the private raves in the north of the island, free parties shut down by the police on behalf of the club owners. Do you have a favourite spot there, a hang out destination? I love hanging out in the Dalt Vila, having dinner at El Olivo Mio then wandering around the streets soaking up the vibe. Las Dalias is a big favourite too but then anywhere on the island is great when the music is good. 2019 brings the release of your new album Everything Is Now on the Subatomic imprint. On preview, the album contains a high dosage of sunshine, chill, electronica and is an essential musical landscape of ideas. What was your vision when you started the production process? I wanted to move forward and a little bit sideways. I wanted to use only analogue electronic and acoustic instruments. I wanted to use the occasional dose of AI to see where it went and sometimes it went somewhere good and sometimes it didn’t. I wanted to make some tracks that you can dance to or chill if you feel like it. I wanted to focus on the space between sounds and try and make it bigger. I love the sounds I get with my moogs and prophets which are impossible to emulate well with virtual instruments.

Just like it has been for the last 2000 years.” Will you be refreshing anything from your back catalogue in the near future? I am re releasing Electrosensitive, the album I signed to Defected Records 10 years ago (the rights just reverted to me) but this time with remixes by Goloka of “Let It Go” ft: Cathy Battistessa and a Chris Coco remix of “National Dobro”. It has also been remastered for better dynamic range and optimised for streaming and MFiT, sounds wicked. What’s your favourite Ibiza tune, the one where you close your eyes and get the back shiver to? Miro – Emotions of Paradise – gets me every time. Goloka – Thinking About You. First time I heard it I got shivers. What’s your favourite own remix of other artists work? My remix of Guitarra G’s “Banda Sonora” without doubt. If you want a flavour of the White Island, Sid Shanti, an acclaimed private chef, celebrity caterer and a charismatic food entrepreneur is the man who has the recipe at his fingertips. Absolute Ibiza speaks to Sid again about authentic Ibiza, his Sid Shanti & Co. ventures and The Ibiza Chili Co gastronomic creations that are now firmly established on the island. Bursting with Balearic flavours, he certainly turns on the Mediterranean heat.

S

ome might say - you are an Ibiza legend. The original Goa DJ, the King of Manumission, Ibiza’s celebrated private chef... what was the breakthrough point for each of your career ‘big moments’? Well, Ibiza legend I would say is a bit much even though flattering! I’d say I have a great passion for what I do, what I create and I love the challenges that Ibiza presents on a daily basis, even though you can end up tearing your hair out. Luckily I have very little hair! The big moments that stick in my mind are building the Shanti town and kitchen on the roof of the Manumission Motel back in 1999, where we cooked for hundreds of clubbers and socialites every Monday before the big party at Privilege. The open-air Mulletover parties we threw with Rob Star in, if I remember correctly 2007. The completion and publishing of my book Glorious Ibiza Food (&Music) in 2013 and more recently last year the release of my new range of hot sauce from Ibiza Chili Co.

You were a professional DJ from the early 90s to 2001. What are you most memorable memories from behind the decks? Being invited to play as the first western DJ to the Cherry Blossom festival in Yoyogi park in central Tokyo back in oh around 1994 probably. Oh and the after party of total solar Eclipse of the sun in Venezuela in 1998 was pretty surreal. Manumission was a blast and closing the Space terrace back to back with DJ Alfredo was another highlight, there have been many over the years.

You once said that ‘the heartbeat of the Island remains the same’ - and that the Island wasn’t segregated. What did you like about Ibiza back before the digital, VIP age and now? Before clubs had roofs ;)… Life has changed a lot in the last two decades not just on Ibiza but all over the world, and sadly i can’t see these golden years ever returning. Only 20 years ago people had time for actual real-time experiences, instead of living vicariously through a mobile phone which of course most now do in this modern technological age. Now let’s talk FOOD! With 15 years of experience cooking for various food connoisseurs, what is a typical Balearic cuisine? My most enjoyable plate would be grilled Ibizan squid straight from the sea, triple fried Red Ibiza potatoes and a simple green, tomato and onion salad. But I would say a typical dish from the Balearic islands is the classic fish stew. Bullit de Peix.


You pride yourself on creating a bespoke culinary experience? How do you go about such tailored process? Through consultations with a varied clientele and drawing on experiences, I have had the pleasure of enjoying over the years helps in this process. Having an understanding of the local ways to do things and a phone book with varied contacts also helps immensely. Overall, even though a cliché, doing things with conviction, love and integrity are the basic principles. What has been the most extravagant, ‘outrageous’ project to date? Organising food and event production for Puff Daddy and his entourage. That was wild. As they say though, what goes on in Puff Daddy’s house stays in Puff daddy’s house.

You share some of your food secrets in your acclaimed bookGlorious Ibiza Food (& Music!). It’s a great mix of recipes and tips. How did you decide on what to write about? Shall we expect a follow-up? I wanted to share my experiences and knowledge gained on and about the island to other people who may be thinking of moving to and working or living on Ibiza. The idea just came to me one day while I was cooking and thankfully I managed to succeed with the project with some great professionals around me. I have a follow up in the pipeline but my time at the moment is taken with the Ibiza Chili Co, and so there is no release date for this project yet.

We wanted to create a range of sauces that could benefit from Ingredients grown on Ibiza. We set about developing the range and at the same time planted around 600 hundred of the hottest chilli plants in the world across two farms in the North of the island.

I’m sure that especially in your early career you’ve had many sleepless late nights. What’s the best hangover food? Bloody Mary with plenty of Ibiza Chili Co. hot sauce and a stick of celery. Add a shelled prawn if you’re feeling adventurous!

Do you create unique events? What does a VIP service entail? Anything and everything a client may want, it is down to the personal taste of an individual. Although these days we are concentrating more on product development and trying to increase the awareness of our all natural hot sauces from Ibiza Chili Co. than producing the special events that we have done in the past. We are working very hard to support the local economy and agricultural side of the island through this development. Tell us more about your Ibiza Chili Co hot sauce range. We wanted to create a range of sauces that could benefit from Ingredients grown on Ibiza. We set about developing the range and at the same time planted around 600 hundred of the hottest chilli plants in the world across two farms in the North of the island. We’ve been fortunate in the fact that the response and reception to our sauces has been fantastic and also winning two great taste awards from the Guild of Fine Foods in the UK. We’ve heard that many notable chefs and other individuals are fans? Haha! We’ve had a few! Nobu have kindly put them on their tables for the clientele in the Ibiza restaurant. Ferran Adria of El Bulli fame loved them so much he requested stock to sell in his Ibiza outpost – “Heart.” We’ve also had David Reartes singing praises for the flavour profile of our signature sauce “Magnificent 7,” and more recently David Beckham instagram’d them as he enjoyed them so much!


Do you have plans for expansion, can we find your sauces at home in the UK? We’re growing very fast with the demand for our sauces being high. The market shift in most sectors from corporate brands and corporate ethics to more sustainable and low impact producers has obviously helped this growth and we try very hard to be proud of our products. The flavour profiles of each are also unique and so we expect and hope growth to continue. We ship to a few European countries already, Germany, Austria and UK, where we will be concentrating our efforts to promote our hot sauces! Any plans for other products under the Ibiza Chili Co branding? All being well we’d like to try and expand the range yes. So stay tuned to our social channels for up to date info! Can you share any quick summer recipe with our readers? Crush two avocados, add one chopped shallot, one diced tomato, one crushed clove of garlic, a pinch of sal de Ibiza, dessert spoon of extra virgin olive oil and two tablespoons of Ibiza Chili Co Lave Verde hot sauce. am Totolee is one of the most sought after private events DJ, having forged his talent on the decks at the cutting edge of the Ibiza scene, where he plays at some of the islands coolest clubs and private parties. His client list is a who's who of the world's top venues and brands and celebrities including Prince Albert of Monaco, James Corden, Rod Stewart & Penny Lancaster, P Diddy and Uma Thurman. ​ When it comes to choosing the perfect playlist for any event and working a crowd, Sam is simply without rival. He's a genuine all-rounder, equally at home playing pop, motown and disco, as well as house and techno, with a playlist numbering the tens of thousands. In awe of his DJ skills, fascinated by the celeb anecdotes he must have under his belt and slightly fazed by the incredible reputation that precedes him, Absolute Ibiza met with Sam Totolee to hear, in his own words, the story behind his success. “I started out playing US house and UK garage at underground warehouse clubs in the early 90s, and had a lucky break one night after someone heard me play a set and asked if I could play at a film premiere after party which she was organizing, of which I jumped at the chance! The company she worked for took me on board thereafter and made me their resident DJ, introducing me to a new world of super high end luxury parties. The rest is history and 21 years later and over 1000 private parties for high end clients in over 27 countries, I’m still here (and top of my game). It’s allowed me to travel the world and see some beautiful locations and venues (Castles, private islands, stately homes, yachts, clubs, chateaus , villas, you name it) and every year it just gets better and better. Highlights have included: Monaco Grand prix after parties, weddings of UK royalty, Hollywood actress Uma Thurman, James Corden and Elon Musk. I’ve even DJed at the world premiere after parties of James Bond, Harry Potter, private parties for Quentin Tarantino, plus weddings and parties at super exclusive retreats like Cuixmala in Mexico, Sandy Lane in Barbados and Skibo castle in Scotland.

In 2004 me and a group of friends (Steven Dobson, Gary Diamond, John Moser and Christofa) decided to create a crazy party like they used to have at Pikes in the early hazy daze of the island, dancing under the sun and the moon totally immersed in the energy of Ibiza. We totally produced the party to be a one off spectacular themed event for 500 personally invited guests (mainly creative and colourful characters who lived on the island) to a beautiful villa on the top of Can Furnet with stunning views of the island. The party went on for 2 days and 2 nights and set the standard for every villa party that has graced the island since! Over the next few years we put on the party at different stunning locations around the island and It soon became the highlight of the summer with people flying in especially for the party as it just kept growing, every time filling up with the coolest people from the international world of film fashion and music all partying with alongside the islanders who came to every party. The production just got bigger and better with the finest prototype Funktion One sound system at the helm and the best lighting and artistic visuals transforming an already super villa into something out of a film set we decided to finish with a spectacular swan song in 2006 (alongside new partner Aldrick Wout). With 3000 guests the party was a celebration of the very best of Ibiza! Naked body painted fashion models walking around with trays of artificial diamonds which you redeemed for drinks cocktails at the bar, hippies hanging out with the rich kids, famous rock musicians on the dance floor (with their hands in the air totally absorbed in the house music provided by 4 resident DJs from the island (DJ Samir, Angelique B, Gianluca De Tiberiis and Bruno from Cafe Del Mar/ Ibiza) on rotation throughout the entire event playing the very best music you’ve ever heard back then. The party was called Dirty Diamonds and Pacha magazine described it as the best parties the island has ever seen!

I have been coming to Ibiza for 25 years and decided to live here around 15 years ago and now live between my house in Sa Carocca on the top of the mountain and my apartment on the beach in Playa den Bossa. This allows me to fly to any destination quite easily, including London which is where I grew up, and is my 2nd home. Living in Ibiza allows me to be inspired by the music that is constantly around me 24/7 all year round and also have the constant mediterranean sunshine. Ibiza also has its incredible spiritual side as well as the party side, and this allows me to develop my self awareness and yogic practice. I feel blessed. As my mother said to me when she visited for the first time “Son, this is the closest you will get to home” (my family are from Gujarat, India and I was born in Kenya, Africa). There are very few places that I feel a tingling in my body when I land (India is the only other place). Ibiza is a magical playground for everyone; it's small enough to get around in one day and large enough to get lost in (as I’ve done many times!). It’s gone from a budget tourist haven to an international playground, mainly due to its attraction to its huge club and electronic scene and also as it’s evolving in all other aspects. I live in Ibiza mainly in the winter these days as I am touring quite a bit in the summer. I love this time of the year as it’s when the real Ibiza comes to life and the freak comes out! Very few tourists, gorgeous weather, a time to hit the markets for fresh fish and vegetables come and live like a local. The old town is buzzing 7 days a week, 24 hours a day and when the weekends arrive it’s time to shut down your laptops and hit the small beach bar restaurants in Talamanca Marina Botafoc. Saturday nights are no different to the summer; great parties, interesting people, and amazing music. Sunday’s time to chill and feast on incredible Bullit De Peix and Rioja wine with friends and head up north for some inspiration and spiritual connection and watch the sunset in San Juan or Es Cubells. It’s a time to appreciate the majestically positioned Es Vedra (one of the most magnetic points on earth) before an early night to start another week of work, exercise, music and mindfulness. As often as I can I will hike with friends around Santa Agnes watching the incredible nature blend into the magnificent Mediterranean ocean, go swimming at the unspoilt Punta Galera or just walk and talk along Salinas beach and appreciate the Islands Unesco World Heritage zone. I’m now working on (or have created Kaleidisico) my immersive DJ show synchronising light and HD motion graphics and video to the sound of my music all being manipulated live through the DJ mixer. NATASHA DAHLBERG From her formative years growing up in Ibiza, Natasha Dahlberg’s designs epitomise the essence of Bohemian luxury. Absolute’s Kasia discovers more about this talented jewellery designer and her sublime hand-made pieces.

Y

Your beautiful creations genuinely epitomise the bohemian Ibiza essence. Tell us about growing up on the White Island? I was lucky enough to grow up in Ibiza in the late 70’s, and 80’s when it was at its wildest, most unspoilt and enchanting. It was full of colourful trailblazers from all over the world who chanced upon the island and tapped into its magic. It felt to me like my parents, and their friends were like the original cast and crew of Ibiza. They set the template for the wild full moon parties, the glamorous discos, the bohemian hippie markets. All of this against the backdrop of the intense physical beauty of the place has made me feel extremely privileged to have grown up there. How do you compare the current lifestyle on the island with your childhood days? The incredible thing about Ibiza is its resilience. One would imagine with the huge amount of traffic coming through that it would lose some of its magic but you only have to turn up on one of the beaches early in the morning or stand in a field full of almond blossom and nothing’s changed. Sadly the days of not needing much money to live on the island are over, and that makes it tough as a permanent home for many people. It’s a rich man’s game now.

How did you start and develop your jewellery business? I was working as an actress and needed another string to my bow to support myself. Luckily my parents were collectors of beautiful gems and beads, so it seemed natural to me to use these in my designs. Initially, I sold jewellery to my friends, and it sort of grew from there. I began selling in small boutiques like The Cross, then Harvey Nichols and Liberty. I did a small collection for Matthew Williamson and was lucky enough to get a loyal client base in New York, London and Ibiza

What materials do you like to use? The natural world produces such a beautiful array of precious and semi-precious material that it’s almost impossible to choose. For me it depends on the mood of a collection; for example, I designed one recently called ‘Sunken Treasures’ where I used natural Tahitian and South sea pearls combined with antique gold charms to create a story. I enjoy taking materials like diamonds and emeralds which are often handled in a traditional way in jewellery design and making them more approachable and mixing them in unexpected ways.

Who is your typical client? I’m thrilled to say I don’t have a typical client; my jewellery seems to attract people of all ages and walks of life, and I feel very proud that it appeals to such a cross-section of people. To me, that feels like I’m getting something right. I will say a trait all my customers share is an eye for something a little bit different.

Your collections evoke both a bohemian and glamorous style. How do you define luxury? I like the idea of making luxury something accessible; wearing black diamonds with a bikini on the beach, combing serious pearls with funky charms and flip-flops. Luxury to me has to be something that awakens your senses but at the same time makes you feel comfortable. Gold is a great example of luxury; it always enhances and warms its wearer.

Tell us about your most exclusive jewellery piece to date? I made a necklace called “The Galaxy” in which I used hundreds of champagne coloured diamonds and gold beads to create a piece which reminded me of a milky way of stars and planets. How do you occupy yourself during the winter months? My winter months are spent in Ovingdean, just outside Brighton. I’m lucky enough to live in a beautiful Arts and Crafts era house with a gorgeous view of both the South Downs and the sea. Designing jewellery collections, writing screenplays and bringing up three children takes up all my time and my life is very busy. What is your favourite Ibiza place everyone should visit and why? DC Models Nearly 30 years ago, Dyon Hagenaars founded the company DC Models in Holland. From day one, he has been the creative driving force behind the company and today, the company not only has a branch in Ibiza, boasting an elite portfolio of top internationally-acclaimed models, but is also the industry’s first stop for the whole fashion show package.

er Valkenburg, partner to Dyon, joined the DC Models team having previously been in the spotlights as a working model. Bringing with him his immense knowledge in fashion and sales in the international market, he supports all his customers with his years of experience and vision, with his mission to ensure every project is unique and customised by him. Known for his meticulous planning, his no nonsense ‘Don’t Whine. Just Do’ attitude and his vast experience in the fashion industry, the Absolute Ibiza team met up with Ger to hear all about his story and how DC came to conquer the catwalks of Ibiza and beyond.

How did it all begin? Tell us about the start of the brand. It was 29 years ago when Dyon Hagenaars founded the company DC Models in Holland. The core-business of the company in Holland is fashion and shows and we offer the complete picture. We provide everything that is needed to do a fashion show; models, backstage coordination, presenters, technique, stage, decors etc. Everything that is needed have a great show can be sourced and provided by DC Models. We try to offer our customers the total concept, allowing them customer the time to do their job and whilst we do ours. This way everybody can do the things they do best. Three years ago, DC Models @ Ibiza was added to the company. In Ibiza we work with models from Holland, Belgium and Germany who are all professionals and very serious in what they do. In our team we are proud to have ‘Hollands Next Top Model,’ ‘BeNeLux Next Top Model,’ ‘Mister Universe,’

and the ‘Dutch Catwalk Model of the Year.’ This is how we try to make a difference and set a high standard on the island. When there is a booking, we fly in our team of to professionals and after the show is done the team flys back home. Aside from complete fashion show production, we do a great deal of photography, both in Holland and Ibiza. We try to have our Dutch customers shoot in Ibiza and our Spanish customers in Holland. Either way, we have a lot of contacts in both countries who can be of use for that. How has the business grown to be where it is now? What has contributed to your success? Part of our success is in believing in ourselves and in the people we work with. We never make promises we can’t keep because we know exactly what our strengths are. We don’t sell air. We also work with a very experienced team. All of our office team has worked as either models on stage or in front of the camera, so each and every one of our team knows exactly what they are talking about. We also only work with people we know personally. We know their plusses and minuses, so we know exactly who to send to the right job. This way we never have unpleasant surprises. We coach and train our people every few months and are sure to attend the job ourselves in order to react directly should there be any issues. Aside from that, we have specifically chosen to grow step by step. No big peaks! Taking it step by step. This way we have built a good base for our company, both in the Netherlands and Ibiza.

At what point did you recognise the success of your business and the love the international industry have for the DC name? A few years back, having established a huge market share on the Dutch market, we started getting requests from abroad asking for our models. Our name as a serious, respectable and trustworthy company had passed over the borders. This wasn’t something that happened at once; photographers and fashion brands found our models and company step by step over the years.

Being a recognised brand in the industry, have you worked with any top fashion brands you can share with us? We work with a wide range of customers, with the most well known being Ronald Kolk Couture. Ronald is a classic Dutch couture designer who is very well known in Holland and the surrounding countries. Besides that, we have worked with Dutch designer Addy van de Krommenacker for many years. He’s more Italian in style. Addy also dresses a lot of Dutch, Belgium and Italian Royals. We are also extremely proud of the fact that we work on the Claes Iversen shows. Claes is the designer that dresses our Dutch queen Maxima. His work is very high level couture, so you can only imagine how very very excited and mega proud we are to be working with him. Last year we did a shoot for World Family Ibiza. This was great opportunity for our company to expand over the borders, as this brand is huge all over Europe. Last but not least we are very proud to have worked on the big Pam Hogg fashion Show on AtzarÓ Ibiza. Pam is very well known, with her most famous client being Lady GaGa. With this opportunity, we had the chance to show ourselves in a totally different league. In Holland, DC Models is the biggest partner in Bridal shows. We do the shows for TLC’s ‘Say Yes to the Dress’ and we were the first agency to show the Randy Fenoli collection in Europe! How has the advent of social media impacted on you, I can see from your online presence you seem to embrace this. Launching our Ibiza company has certainly boosted our online presence tremendously. Before we started our Ibiza office, we did quit a lot on social media, however we found that after doing a few shows in Ibiza, our amount of followers started growing enormously. For instance, after we did a Nikki Beach show, our total Instagram followers grew by 20,000 in a month with followers from all over the world.

After that, we started to work on our social media even more. We have even extended our team with someone to do this for us and write a monthly blog on our company and its events. The team must be pretty large these days. How many people are now part of the DC machine? We work with six full time people in our offices and two part timers. Each one of the team have their own tasks; one doing social media, one doing administration, two doing bookings and I run sales in Holland DC Models and Ibiza. My partner Dyon (our founder) runs the Netherlands department as well as the planning and creative work and we have one full timer working in Ibiza for us who is Spanish and used to work as a stylist for Spanish magazines Vogue and Elle. We also have people working in our warehouse, technical department and on transport. Last but not least, we have a huge amount of models on our database. On a yearly basis, we place about 300 people on modelling jobs.

Our team is honest, straight to the point, respectful and punctual. Part of our strength is our communication, both to our clients and to our models.

How do you stay relevant and current and where do you get your inspiration from? We are constantly inspired by what we see around us, both in the Netherlands and in Ibiza. Social media is also now a big part of our inspiration; Colours, emotions, etc. We work with a lot of youngsters on our team that give us a fresh view on matters and we truly learn a lot from the young! Finally, we cannot forget our customers. All of these people are creative minds. Each and every one of them has a different view and style. For us as a team, these people are so very important and inspiring. Which projects are you really excited about for 2019? Are there any future plans you can share with us? This year we worked on the Ibiza Bridal Week shows and last February we were at Paris Fashion Week as well as a tremendous amount of foreign shoots. Last but not least DC Models @ Ibiza were chosen to do the big Adlib shows in May in Ibiza. Last year a

complete team of our models were also flown in to Denia to do a fashion show there for Adlib. We also do shows at Ocean Beach and are part of the upcoming 15th edition of the AtzarÓ Fashion Festival. In Holland we are working with a new designer for us; David Laport. David’s designs are extravagant and colourful and we are so very exited to work with him. Why are you different to other businesses within the model and fashion industry? Explain what DC clients get? Our team is honest, straight to the point, respectful and punctual. Part of our strength is our communication, both to our clients and to our models. We listen very carefully to what our clients want and try to step in to their shoes. Aside from that, we work with a very strict planning process. We do what we promise and we can be reached 24/7.

How has the new office in Ibiza helped your business? Do you feel the country’s high creativity levels have contributed to your further your success? Yes, definitely! Ibiza is a small island with a lot of creative people, designers and brands visiting every year. In the past few years we have found that so many great contacts can be made there behind the scenes. This networking has resulted in our models walking at London and Paris Fashion Week, as well as working on many international shoots for brands we have met on the Island. Working in Ibiza has even gained us lot of exposure in Holland for our Dutch company. The ‘Ibiza’ name has a high level of magic all over Europe. Dalt Vila Introducing Ibiza Old Town Reviewed by Judith Heede

I

biza is known globally for its hedonistic nightclubs, the summer parties that stir all the senses and the world-class DJs that descend on the island every season. There is no place quite like it on earth. It is a clubbers paradise, with every night guaranteed to be an adventure you write down in your personal memoirs. There is no place on earth where going out is such an adventure like it is on Ibiza. However, if you take a look beyond the dance floors and disco lights, you’ll find what gives Ibiza its true charm and character: the relaxed beach bars where you can spend hours lying in a hammock sipping Sangria while watching the pretty beach boys and girls coming and going. Or the laid back bohemian vegan and organic restaurants that inspire places all around the world with their healthy and super-stylish concepts. Or the charming Spanish Tapas bars where the locals sit to meet and eat, drink, and simply enjoy life. There are fantastic restaurants on every corner of the island, but what visitors and even locals tend to neglect - is Ibiza’s Old Town. The difficult parking situation that most historical cities face doesn’t help, especially in high season when all the cruise ship passengers are shoving their way through the tiny cobbled streets, fighting for the best tables. However, visiting Dalt Vila - the ancient “Upper town” - is an absolute must when you visit Ibiza. Let travel writer Judith Heede tell you why . . . “My adventure started quite harmlessly in the famous Croissant Show. The French bakery does what it says on the tin – it’s breakfast with a bit of a ‘show’. Andres, the owner with his Dali-esque moustache, seems to know everybody who passes by on this sunny April afternoon. It’s not crowded yet at this time of the year and most of the guests sitting at the little bistro tables outside are locals. Here it seems like there is no hard-and-fast rule what constitutes breakfast time, and while I am enjoying my café con leche the tables around me are filled with deliciously looking butter croissants and pain au chocolats. But it’s not only the proper French food that impresses me, it is the unique view of the Portal de Ses Taules. The dramatic main entrance to the old castle is up a slope, crossing a drawbridge through the arch, flanked by mighty statues in Roman stone. I have climbed my way up to the ancient castle before, but the panoramic views from this UNESCO World Heritage site are so magnificent that I decide to leave the bistro to explore the area behind these old walls once again. The colourful gift shops and art galleries on

the walk up to the cathedral are treasure troves of unusual and unique works by talented local crafts people. Many residents live in these tiny houses, and the balconies are filled with geraniums and colourfully draped clothes lines. But since my mission is to eat and drink my way through town today, I can’t stop to shop and am heading straight to the next spot right at the top of the stairs: S’Escalinata. Mellow Reggae beats are coming out of the opened wooden doors. The message written on them with big white letters matches the music: ‘Don’t worry be happy’, or ‘Eat, Drink & Love’. Sounds inviting, and there is one seat free on the terrace at the top of the wide steps. People sit on neon pink or green sandbag cushions and colourful canvas benches enjoying a stunning view over the city. The pretty young waitress can’t speak English, but the jugs of Sangria she carries from the kitchen, speak for themselves. Very tempting, but I have a long night ahead of me, and opt for a green detox smoothie and home made guacamole. As the sun goes down, it quickly becomes cold and windy, so I leave this green Hipster home behind me to slowly make my way back down. Plaza del Sol is just around the corner and all set for summer: colourful filled fruit baskets are lined up to the entrance and the potted yukka palms give the “Plaza” a Mexican touch. The smell of the lemons and oranges and the promising handprinted Cocktail and Tapas signs make me want to sit down in the cosy corner with the handmade quirky furniture. But I want something less hippiesc now so I just make a note to myself about this little gem, enthroned here on the hills of Dalt Vila overlooking the entire port and city.

Dalt Vila I am heading towards La Oliva for the second round of tapas before meeting a friend for dinner. Usually, a plan like that ends with me not remembering much the next day. But I am a writer, that’s what I get paid for. Not that it would need that much work experience in that field, but I have learned that a solid foundation can work miracles when things are getting serious. La Oliva is considered a classic on the island, and although its been here for almost 30 years, I’ve never managed to visit. But now I understand why locals and tourists keep coming back to this Mediterranean food temple: this is one of the most romantic set-ups I have ever seen. Situated in the main square, surrounded by the legendary walls of Dalt Vila, guests sit on white chairs at simple but nicely decorated tables right on the pavement terrace. Red roses grow all over the old bright white building with its pink arched doors and windows. While I’m enjoying a glass of white wine and a bowl of light zucchini noodles with Parmesan cheese and roasted almonds, Razvan tells me he’s been a waiter here here for five seasons; the spaghetti Lobster flambéed in whiskey definitely sounds like a winner, but I need to keep my appetite high and the expenses low, so I stick to the starter while listening to Razvan’s story. He moved here from Romania after university to meet people and gain some experience, but like so many others, the island became his summer home. “Now, it is

still an easy job” he says but when the season is in full swing from May onwards he wouldn’t have time to sit with me at the table and talk. I know how busy the streets become later in the year, and I have no doubt that the tips he’ll make then will be higher than his hourly rate. He worked his first season in one of the big beach clubs, but prefers the quieter atmosphere here, where the clients are older and also more generous, especially the Americans. Being half American I feel obliged now, and leave him a good tip on my way out. My friend is waiting for me now at the Rebel Ibiza clothes shop, which is not far away. He designed the logo for the shop and has been invited for an aperitif to celebrate the opening. The two German owners, René and René, welcome us into their old townhouse boutique designed to look like a funky living room with its little bar corner behind the counter, glimmering disco dresses on the hanging rails, and a huge metallic globe on the accessories table. I want to try a black see-through dress with leather details just to get a glimpse of that shady night creature feeling. But I fear that tiny tight thing won’t fit anyways and René no.1 is already pouring round two. People are popping in from the Michelin Restaurant next door to wish them good luck for the new season, and René no. 2 is telling some anecdotes about the parties in the store last season after hours (which I should not repeat here). Since we don’t want to spoil their first after hours celebration of this year, and feel like it’s overly due to line our stomachs, we make our way to La Bodega.

The Ibicencan tapas restaurant is well known in town, and obdurate smokers sit on the terrace despite the still chilly spring temperatures at night. But the view from the outside tables towards the castle is outstanding. So is the inside of the former storehouse: the ancient walls are beautifully decorated with paintings from local artists, and objets from all five continents are placed in many corners. A colourful painting of an old Ibicenco playing the sitar while riding a tiger into the moonlight covers one of the walls. A mirror gallery hangs on the other side, reflecting the colourful table set ups like kaleidoscopes, and the atmosphere on this Friday night is buzzing. The tables are full and trays are flying in and out of the kitchen - one crashing on the floor leaving a lake of alcohol behind. It doesn’t matter, the Spanish waitress has it cleaned up before the applause has stopped. Then she sees us, and thanks to my friend’s Spanish skills we get the tiny table next to a bachelorette party. The night is still young, and the women are just warming up - no pink plastic penises or veils around, just some decent Tapas plates on the table and carafes of wine. The dishes look mouth-watering and with all that rosé rushing through my blood I feel like eating them all. Remembering my Granny’s words not to let my eyes grow bigger than the stomach, we choose to share sweet potato and aubergine hummus with vegetable sticks, the obligatory Spanish olives and burrata - a delicious creamy kind of Mozzarella. With this perfect foundation laid, and some nightspots to cross off my list, we decide that it’s time to move on. With many bars like the popular Zoo Bar or Paradise Lost still being closed until May, we just drift through the narrow streets close to the sea, trusting the magical energy on this island to lead us to the right place. And guess what? We

found a bright diamond among all the other gems: Boodiou. This very stylish rural place run by two French guys, only opened a week ago, and they hadn’t even had time yet to put a sign up, or do any kind of advertising. Looking at it, they won’t need to. They did an impressive job renovating, and doing everything themselves. And when I say everything, I mean from the hanging lamps made of old keyrings to the wooden swinging bench to fermenting the alcohol itself! The French family has their own distillery named Bowls, close to Montpellier, where they produce rum, gin, whiskey and vodka. Tony and Hadrien both worked in gastronomy all their lives Hadrien as a chef in the south of France, Tony as a bartender all over the world - previously in Hong Kong. With Boodiou - which means the multi-purpose f-word in old French - they made their dream of a shared place on Ibiza come true. It is a dream, indeed. All ingredients come from local farmers, and the menu varies daily. I try the organic pea soup with goat’s cheese, while my friend has clams in a lemongrass-curry vinaigrette with coconut foam, a sauce just blows us away! The cocktails are made with organic products, and we can’t help ourselves but try a few different ones. Hard to say (or remember) my favourite, but the ‘Twisted Sister’ certainly is a palate conqueror. Made from aged gin, two different kind of chantreuse, fresh pomegranate juice and some honey from a local beekeeper - or should I say beedoctor? Tony tells me that he will try the doctor’s beespike-acupuncture himself after the season, when he’ll need a treatment to recover from hard work. Some might find this slightly dubious, but this is Ibiza, and dubious cases are on the daily agenda. If it got dubious in our case later on that night I will keep you guessing: what happens on Ibiza, stays on Ibiza…”

As part of the restaurant’s connection to local environmental organisations and events, Chiringuito Blue collaborates closely with Ibiza Preservation Foundation which works to preserve Ibiza and Formentera’s unique environment and cultural heritage. They address several issues impacting the islands wellbeing including tourism, land use, water, energy, waste, biodiversity and transport. Chiringuito Blue is working towards being totally plastic-free, currently using 100% recyclable plastic and bio-degradable straws. The restaurant also organises regular beach clean-ups to raise awareness of the importance of reducing waste. Spotlight on Haim Cohen, Menu Curator at Chiringuito Blue Chiringuito Blue is proud to call the award winning chef Haim Cohen (1960, Tel Aviv), an integral part of their dynamic team and the curator of their innovative menu. As one of Israel’s top chefs and TV personalities, Cohen has been the leading judge on Israeli MasterChef for the past eight years and is one of the most respected chefs on Tel Aviv’s culinary scene. He opened his first restaurant, Keren, in 1985 serving nouvelle cuisine and currently has two leading restaurants in Tel Aviv: Dixie Grill Bar, a steakhouse opened in 1994, and Yaffo-Tel Aviv, opened in 2011, where his experience and personal taste come together. The chef is also culinary advisor to a number of high-end restaurants worldwide, including The Duchess in Amsterdam (awarded a Michelin star in 2017). ive years ago Charlie Veale, a long time residents, started the company by buying an old boat which he restored and rented out afterwards. The foundation was laid. Today Smart Charter Ibiza still consists of these two parts: maintenance and charter. Both are linked and one wouldn’t work without the other and it wouldn’t work without the team behind both parts either; from Veale who grew up on the island and developed a passion for boats from a very young age to Alessandra Grisoni who was drawn into this dream of building a charter company when they’ve met. Four years ago they merged with another company that already owned a few boats even though they didn’t offer refitting or painting but they now had a proper little fleet that constantly grew. Today they have 52 boats available for charter, 48 of them owned exclusively by the company. Most of them are based in the city’s port but since there is not enough space for such a big fleet they are some also based around the island with more than a hundred staff looking after them in summer season. From Christina, who works in the Sales department and moved from Miami to the island to Ugne who left from her home country Lithuania to seek a new life on Ibiza to Fidi, Abraham and Dazzla who all put their hearts into the company and make it what is is today: a great success.

IBIZA POLO CLUB The real Ibiza is full of hidden gems, so it is perhaps no surprise that Ibiza Polo Club has been quietly thriving in the north of the Island.

L

ocated close to San Lorenzo, the Morna valley hills create a stunning backdrop to the action on the polo field. Post polo the players and supporters enjoy drinks at the club house, often listening to live music as the sun goes down before heading off to dinner at one of the local restaurants or one of Ibiza´s magical parties. Visiting players enjoy the Ibiza lifestyle of beach clubs, boat trips to Formentera, shopping at the bohemian markets. “Back in 2009, Ibiza was famous around the world for many things, but none of them related to polo. The idea of creating a polo field from scratch and bringing more than 70 horses to the island would have been considered “loco” by anyone´s standards, but while it has been a crazy ride, I have made it happen thanks to amazing team around me.” says the charismatic Gabriel Iglesias, founder and owner of the club. Gabriel was a successful 6 goal polo player with an international career spanning the US, Dubai and Sottogrande in Spain. He and his wife Eva first bought the Beach polo concept to Ibiza in 2009. It was a huge success and in 2012 the club at its base in San Lorenzo was started. It has steadily grown to become a popular and vibrant club and a key destination for low goal, high fun polo in Europe. Maintaining a small, family run feel with a core group of members who are either residents or frequent visitors to the club, the club has also attracted the worlds best polo players thanks to Gabriel´s contacts and support from the polo world. Adolfito Cambiaso and Hazel Jackson, arguably the best male and female players in the world today have both played (and won) the Ibiza Beach Polo tournament. The unique tournament schedule, running from April through to October appeals to club members as well as visiting players.

The highlights for the 2019 summer season include the 6th Mixed tournament, where each team consists of 2 women and 2 men, the 4th Father and Son tournament, in which each team includes a father and son or mother and daughter 19th to 21st July and the 10th Beach polo tournament, now played at the club site on 1st to 4th August. Club chukkas is played every Wednesday and weekends without tournaments and visiting players are welcome to join. The club prides itself on introducing new players to the game, offering lessons and instructional chukkas to complete beginners. Many of the members were completely new to polo and have found themselves able to play in tournaments after just a few weeks of lessons and practices.

IBIZA POLO CLUB While based on a small island, the club has a wide international footprint. An Ibiza Polo Club team travelled to Cancun in March and successfully won a tournament. Last summer, the Ibiza Ladies Team were victorious at the British Ladies 12 goal tournament at Cowdray Park. Oxford University polo team have visited in April for a training camp for the past two years. They enjoy the opportunity to train on grass pre-season which has helped them to victory in the Varsity and Atlantic cups. The club continues to grow. As well as the main field, which is improving each year, the club now boasts a new stick and ball field and an arena. There are 40 horses at the club, many owned by members, although there is also a string available suitable for a wide range of experience levels from complete beginner to visiting professional. It’s not only the world renown polo schools that are excited to travel to Ibiza to play polo. Ibiza Polo Club School welcomes beginners, including children from 7 years old and up. The club also offers businesses a fascinating experience to develop strategy and collective team consciousness. It unites colleagues while they learn to play polo as a team, and is more accessible than many people believe. It is exhilarating and provides many individual challenges that develops confidence in ability. Each team has 4 players playing on the grass field or 3 players playing in the sand arena. It’s crucial that each player works together with his colleagues to win. This develops communication and enhances

Gigglewater Catherine Monahan is the CEO and Founder of Gigglewater Productions Ltd, the new alcoholic beverage and lifestyle brand on the scene, taking Ibiza and now the world by storm, one bubble at a time. From the wines, to the bubblies, events and retreats, Catherine promises quality-driven, interesting, useful, upbeat products that reflects Gigglewater's mission of making balanced living a little bit easier and a load more fun. Intrigued to jump on the bandwagon (and off the wagon!), we caught up with Catherine to find out her story and what this Gigglewater is all about.

How did it all begin and how did the name Gigglewater come about? I've been in the wine business for many years - from 2002 and worked for big retailers like Sainsburys and Tesco, leading world distributors like Hardys/Constellation Brands and my own business creating private label brands for big UK supermarkets and pub groups and globally - creating bespoke blends, labels and so on. I also launched and ran a company like Dragon's Den but for wine - Winestars World - where we put winemakers/wineries in direct sales contact through bespoke events in China, Europe, UK. Gigglewater came about one and a half years ago, when I was designing a brand concept for a client about the Prohibition Speakeasy era in the USA in the 1920's and I came across a photo of 3 girls in black and white bathing suits on a diving board which said "Gigglewater - An Intoxicating Beverage". I thought what a great name for a global sparkling wine brand - that the word Gigglewater could be synonymous to Sparkling wine as Dyson is for vacuum cleaners and Sellotape is for tape, Perrier is for sparkling water etc. The other thing that came to me was that there is not enough BALANCE in the wine industry or in life when it comes to consuming alcohol etc. With mental health such an important topic and eating right, drinking in moderation, the girls balancing on the diving board made me think about Living Life in Balance. And so our key ethos is about that - Health & Happiness, Live! Love! Sparkle! Life is about celebrating, not escaping...

I wanted to create a brand that brought young people into wine as well - that wasn't about wine - that was about lifestyle, giving back, having fun, bringing all ages of people together - at the end of the day when you're 70 you still feel young - life is about what you make of it, it's EXPERIENTIAL... it's about innovation, change, it's about living it to the full and meeting people, travel, experiencing magical things and that's what we are about. We are also all about giving back to community - that's what inspires me personally - think Global, act Local... so we give a % of our profits to an orphanage in Bali where we are expanding on the school and creating a meditation room for the kids - there are a 137 who all lost their mums and dads in a volcanic eruption and also working on a Nepal Water project in future. In Ibiza we support the Ibiza Preservation Fund, Ibiza Quills, and we are about to support Love Ibiza Now cleaning up plastic off the beaches.

How has your company grown to be where it is now? What has contributed to your business’ success? It's a strange one - I have worked for big retailers and distributors and done normal private labels in the past but I think because there is soul in this, because we have thought about the consumer before the product, that there is an essence of feeling in the brand, that people feel without knowing why. It's also about people just feeling happy knowing that health and happiness are key to life. Within 3 months of us launching we had the Oscars in the USA asking us to

I know all the big boys want the family look, but from working a lot and meeting a lot of people across China I realised that we can't be corporate with our branding - we have to be flexible and listen to our distributors and the consumer. We have won best sparkling wine in the world 3 times in Canada in the past 6 months - beating leading names like Bottega and Dr Loosen so we're super grateful. We have also won Peoples' Choice at a lot of festivals so obviously the style works for consumers. We believe in being beautiful inside and outside of pack.

What's been amazing is that the consumer has come to us, has loved our social media because we try to be real, we try not to look contrived or created and a lot of our new customers/global and UK retailers have found us via social media, which was a surprise for me. Having Waitrose - as the UK's leading premium food and drinks retailer take us on board from the beginning was such a treat. The buyer Victoria Mason has believed in the brand from the start and her support has been amazing. We have grown from 60 stores to near 250 within 9 months with our Gigglewater cans and are truly grateful to have Waitrose as a key partner. That aside, it's understanding the client or the consumer - understanding their market and the support they need/want. Delivering on time and if anything goes wrong, making sure to always communicate and update the situation. Also to understand different cultures - for example, what consumers in China want from packaging is very different

At what point did you recognise the success of your business and the brand / product? I don't think I/the business realises that yet. It's always a moveable feat of trying to better ourselves, new products, innovation that adds value and truly listening to consumers and thinking of new things that they might love. I think it's less about success but more about creating relevant, engaging products that people love and want to come back and buy more of and then giving back to the world. Being a recognised brand now, what partnerships with other UK and international brands helped raise your exposure in those early days of the Gigglewater journey ? Yes the partnerships we have made and partnered with have helped - we choose carefully as we want to be associated with things that are about living a life of creativity - whether that be through wine, art, music, dance, poetry, protecting the environment etc. So everything we sponsor is about nurturing creativity in the human soul and about making the world a better place through supporting funds/charities/events that feel the same. We are here for such a short time on this planet that need to feel a sense of purpose - all of us... We work with the British Film Festival, Benevolent Drinks Charity UK which has a magical campaign on mental health launching; supporting/ building the meditation room for the Bali Orphanage mentioned above, the Ibiza foundations mentioned above, charities in the UK that feed the hungry and more to come.

And how has the advent of social media impacted on you? Social media is something that we can love or hate but it's there. We all want connection and whilst the best forms of connection are human one to one, social media has given us all a route to connect globally, which has many positive aspects. Our social media platforms have brought buyers and retailers and consumers direct to us, which we are very grateful for and is one of the main reasons we are launching a direct to consumer wine business in the UK. Social media is not about talking about yourself. It's about being relevant, being meaningful and creating content and engaging with people in a way that adds value to their moment, their day, their business, their thoughts and more. Be real, be authentic. The team must be pretty large these days. How many people are now part of the Gigglewater machine? We have tried to keep it tight at the beginning because we wanted to invest in the brand and we want to have the right people on board. Our goal is to have the best people on board in Ibiza (brand home) and London and then to have the

How do you stay relevant and current and continuously meet your consumer needs? We are always reading, researching, watching consumer behaviour across different age groups. We don't believe in buying databases or research reports created by people who have a subjective or motive for the answer to their report. We do our own research globally by country and we work with leading people within the regions/countries to help us on current trends. We also use gut instinct to understand what people want, we look at what works outside of wine (from colour to textures etc) and we watch what is going on in leading travel destinations from food to wine, to needs and more... Which project/s are you really excited about for 2018? 2018 - Traveling around the world, learning a lot more about new places to sell our products, what people want by location, what the new trends are globally by speaking to real people not people in focus groups. By looking at what is going on in younger age groups as well as older age groups who are doing a lot more traveling and living life in the now... how we can tap into that etc. Looking at non-alcoholic wines which we keep getting asked for, new ranges of global sparkling wines, a JV partnership with a dear friend and artist Victor Spinnelli called SPiN Ibiza craft beer;


a huge expansion of our Direct to Consumer Online Gigglewater Members Club in the UK and Ibiza, our second "Live Life in Balance" Giggling Buddha Retreats in Ibiza in Sept 2018 and more. We are also working on some exciting new product development projects to be launched second half of this year, including our own canning plant in the UK and some amazing new products.

What makes you so different to other brands within your industry? Explain to our readers what sets Gigglewater so far apart in the market? I think it's about putting the consumer first. We have a product that is relevant in peoples' lives - our cans are perfect for festivals, at home, mixers to make cocktails, on the train home, concerts, beach and more. Our Gigglewater Prosecco DOC in bottle has won best sparkling wine in the world 3 times in a tough market like Canada and also Consumers' Choice awards and more. We pride ourselves on making sure what we choose to be in the bottle is as good as outside the bottle. We also believe in making new products that are innovative and relevant and you will see more from us in that sector. Most importantly we want to be creating fun products that people love and want and need and that they know are giving back to the earth and making a difference. family business, this cross-generational tradition in perfume making goes back to 1965 when the jewellers Antonio and Pele Torres –two of the original participants of ‘The Adlib Fashion’– created the Eau de Toilette and Aftershave Torres as a complement to their exclusive jewellery collection. At that time, the fragrance’s packaging was developed by the designer André Ricard. Three decades later, overwhelmed by the success of such products, the next generation of Torres Sagrera siblings, undertook a thorough study of all facets of production to perfect and re-interpret this pioneering initiative and create new products. The result was the creation of ‘Agua de Colonia Fresca Hierbas de Ibiza’ as it is known today. Since then the company has increased its portfolio and has ‘sailed the seven seas’ following in the footsteps of our grandfather Antonio Torres Molines, an Ibizan sailor who in his youth from 1915, captained the brig ‘Matilde’ during various commercial voyages to Havana, New York and other main ports.

Delivering Dreams (Or at least having a damn good go!) Jason Ham, Head of Sales and Co-Founder for Aelite Street Ibiza, a full-service, client-driven boutique real estate agency, tells us in his own words what sets Ibiza apart in the property market. “For all of its billion dollar yacht owners, Crystalspraying celebrities, and multi million euro luxury villas, Ibiza is really just a pretty little village on a tiny island of locals. As a result, it takes a very long time in Ibiza to create a good and honest reputation, and only a matter of minutes and whispers to destroy it, especially in the property game.

I moved to Ibiza with my Swedish wife, Camilla, and our two extremely handsome young sons in 2012, after spending 17 long years as a commercial property lawyer in London, and losing most of my hair back then in the process due to the stress!

As I tried to apply my London legal skills and London ‘ways’ to the Ibiza property market I slowly realised that Ibiza is an opaque and challenging market like no other. And I am not alone. Many have come here and tried to persuade villa owners and buyers, agents and lawyers alike to adapt to their bright new modernising ideas that would probably work anywhere else in the world, only to see these ideas crash and burn on the volcanic rocks of Ibiza.

But herein lies the island’s unique almost impenetrable charm. It’s the same story whatever business or market you are lucky enough to be in here. It is all about respect, and patience. Respect to the island itself that drew us all inexorably here from that first holiday that we all remember so well. Respect to the locals who have kindly allowed us over generations to ‘invade’ and make wholesale changes to their home (and who in turn of course for some, have become rather wealthy in the process). Respect to the laws of the land, which when it comes to planning and housing laws can be mind-boggling, infuriating, and sometimes actually soul destroying, even to a well trodden lawyer like myself. And of course, patience. Lots and lots of patience. This is especially needed for those fortunate enough to be looking to buy in Ibiza. A sales transaction can sometimes take a very long time, but trust me (please) it is ALWAYS worth the wait, and I have never ever had one unhappy successful buying client! For me the Ibiza property market is like a microcosm of the London market. To an extent, and over a certain

period of time, it really does not matter what is going on in the rest of world, financially, socially or politically. Where demand always outstrips supply, especially on such a beautiful island in the Mediterranean, with its long illustrious history, property here will always be a good long term investment. Especially now that planning restrictions are so incredibly tight here (and quite rightly so in my opinion). Properties that are 100% legal (rarer than you think) and that have a holiday rental tourist license (also rarer than you think and now incredibly difficult to get) are now in an elite category. There will always be people from around the world wanting to either buy a second (or third or fourth) home in Ibiza, to temporarily escape the rat-race elsewhere, or to move here to do the same thing permanently, and bring up their families in a super safe, yet open minded and culturally diverse place. Which just also happens to have over 100 incredible beaches, and be only a few hours hop away from virtually every major city in Europe.

This is why both I and my business partner Izabela, really do put so much effort into developing trust, long standing relationships, and more often than not, friendships as well, not only with our buying clients, our villa owners, and our happy holidaying villa rental clients, but also with a select number of fellow trusted agents, lawyers, bank managers and other professionals that we feel also understand how to treat people correctly. We look after the client’s interests as if they were our own.

We love this island, we want to live here forever, and we want to see you enjoy it to the full.
