Brighton Fringe Brighton Fringe is England’s largest arts festival and one of the largest fringe festivals in the world. They set out to stimulate, educate and entertain a diverse range of people through a diverse range of art forms and all this in an iconic city with unique cultural heritage. Brighton Fringe takes place every May (5 May – 4 June 2017) and is a great place to spend the May bank holidays and the summer half-term break. This vast celebration of all things creative has grown out of, and is inspired by, home-grown talent. More than 50% of participants are based in Brighton & Hove. A wide array of critically acclaimed shows and performers also appear at Brighton Fringe each year, drawn by the huge number of appreciative audience members who attend every year. This year’s programme includes a record-breaking 932 shows and events across a dizzying array of art forms, including the first ever Fringe AllNighter (27 May) with shows running until dawn. Brighton Festival 2017l It has been announced that the Guest Director for Brighton Festival 2017 is the acclaimed recording artist, poet, playwright and novelist Kate Tempest. Brighton Festival 2017, which will take place from 6-28 May 2017, will feature exclusives, world and UK premieres from a wide range of international, national and local artists and companies. Guest Director Kate Tempest’s programme celebrates what she calls the ‘Everyday Epic’ - art that helps us connect to ourselves and others, explores our individual stories and differences, and encourages audiences to take a walk in someone else’s shoes. Cathay Pacific Airways announced that it will launch a new four-times-weekly service to London’s Gatwick Airport. Saltdean Lido A restored and renovated Saltdean Lido is set to open May 2017. Saltdean Lido is one of the finest remaining examples of modernist lidos in the UK. It has been saved by local residents who have set up the CIC and successfully secured a 60-year lease from Brighton & Hove City Council (the freeholders) to operate the lido site. The Brighton Marathon is one of the UK's favourite 26.2-milers. With a stunning backdrop of the sea in one of the country's most vibrant cities, the race gets bigger and better every year. After six weeks of public voting, the BRAVO Awards – Brighton Restaurant Awards Vote Online – announced the winners across all sixteen categories. The London Marathon Watch as thousands of runners and test their fitness levels to the max (for a good cause) at the London Marathon. This annual sporting extravaganza sees thousands of runners take to the streets of the capital, passing some of its most famous sites (not that they have time to soak up the view). Of course, running 26 miles (40km) is not everyone’s idea of ‘fun’, but we can assure you that watching other people do it certainly is, and the atmosphere among the crowds lining the route is electric. Head to the Cutty Sark sailing boat in Greenwich at the seven-mile mark, where the runners weave their way onwards against a marvelous maritime backdrop. From here you can hop on the Docklands Light Railway (DLR) across the Thames to Mudchute, where you’ll be in time to catch them again at the 17-mile mark too.

Gresham visited Ridgeview vineyard and decided it would be a great place to shoot our SS17 collection. We thought it was the perfect setting for a murder story so invited Peter James, to write us a short story. This lead to 'Murder at Ridgeview'. A book which has a dark story line about a wine critic getting murdered. This is contrasted by the fresh bright images of the Spring Summer collection.
The Spring Summer collection is inspired by nature, focussing on butterflies, bugs and flowers. The books profit will be going to the charity AVA, which is a domestic abuse charity. We would like to thank all involved in this exciting campaign.

Jessica Courtney “Makeup is a powerful tool and not to be underestimated!”
A
s women, we all know that makeup can give us confidence and adds a spring to our step. But with busy lives and an overwhelming amount of trends (contouring, big brows and full lips to name just a few), it can be hard to get it right and find a easy to perfect look that enhances our natural beauty. One Brighton businesswoman who understands the power that makeup possesses and its confidence-boosting importance is fifty year old Jess Eaton, founder of Jessica Courtney – a professional semi-permanent makeup company, with an artistic difference.
Jess has had an extensive career working in the makeup world, spanning over twenty years. Starting in the late 80’s, Jess became one of the most sought after celebrity makeup artists in the world and worked with iconic stars on music videos and magazine shoots.
Whilst she stopped jet-setting and returned to Brighton in 2007, after her son was born (“bringing him up around love, tolerance and creativity were more important than jetting about with the rich and famous,” Jess explains), the creative work still continued – working with Liz Bishop, founder of Brighton Fashion Week on a ‘Trashion’ Show at the Corn Exchange and setting up the notorious EatonNott on Preston Road. The combined store and tattoo studio welcomed people to bring in naturally deceased animals and

saw Jess unveil her first fashion collection – Roadkill Couture, which was donned by Lady Gaga and Kate Moss.
Last year, after a battle with depression and wanting to return to her happy makeup artistry roots, Jess retrained in cosmetic tattooing and now runs her semipermanent makeup company from the beautiful surroundings of Toni&Guy in East Street. Here, as well as offering cosmetic tattooing, she also offers makeup therapy (helping clients find and define their look) and makeup lessons.
“I specialise in making ordinary people look REALLY good,” the professional makeup artist laughs. “When I was working in the music industry, I’d find that a lot of singers weren’t necessarily beautiful but they have to compete with tough competition. I was really good at my job and I use my talent for ‘normal’ women now instead. I love it and it’s so much more rewarding as it can change people’s lives.” It’s her recent semi-permanent work (which sees Jess tattoo eyebrows, eyeliner and lips onto clients for a natural, yet fuller look), which she says is just as a career highlight as “meeting Tina Turner… seeing Lady Gaga in Roadkill Couture and also Kate Moss been in Roadkill pieces in LOVE magazine.”

treatment or teaching someone how to feel feminine again after she’s had a double mastectomy. That’s big.” Jess says. It is how makeup makes us feel inside – and not only outwardly look – that Jess believes makes it enhance our lives in so many ways. “There’s no doubt that the way we look can dramatically change how we feel about ourselves. Self-esteem can be restored and confidence returned. I see it all the time with my therapy sessions,” the fabulouslooking fifty year old adds. “However, it also changes the ways others see us too which is just as interesting because if we look good, we are sending signals that we value ourselves and others will treat us differently. So taking the time to look good has a snowball effect from feeling good, standing taller, being more confident and assertive, to other people having more respect for us and doors opening that perhaps may have otherwise remained shut! Wild &Sons An Old School Car Repair Company With American-Style
Seeing a gap in the UK motor market for a car repair company specialising in classic American car repairs, restorations and custom builds, Victor Wild seized the opportunity to turn his practised passion into a profession by opening Wild & Sons, last year. The 24 year old (and former Falmer High School student) spoke to Absolute writer Shelley Welti to talk American-inspired customer service, classic cars and why age is just a number…
Hi Victor! How did you become involved in repairing and restoring American cars? I have been in the motor industry for roughly 7 years working on all sorts of cars and then started working for another American car specialist for 4 years. I left last year as I felt it didn't care about its customers and that the quality of work was diminishing, so I decided to start my own company last summer with my friend from college, Chris (Ansell). Our company, Wild & Sons specialise in mechanical and electrical work, bodywork, custom builds and custom bicycle builds, along with giving advice. We supply parts for all North American and Canadian vehicles built from 1901 up to present day.
Clearly customer service is a key ethos behind Wild & Sons. What else is important to you? I wanted to run a proper old school car repairing and car customisation garage as there wasn’t a company like that in the UK – one who have the time of day to speak to and care for its customers, along with giving them the quality of work seen in books, but now they do with me. I believe Wild & Sons offers professional work and, with commission

builds, something which at the end is really special and the customer can be proud to own.
Even though we’re young in age and the company is new; all of our customers love our work and haven't regretted coming to us. Once potential customers speak to me in person they realise I have the know-how and skills with these cars. I also have a company which my kids could come into when they are older.
Which services are your most popular? A full service and the rat rod builds are the most popular with our customers.

We are trying to explain to people who like these cars but don't own one, that they are easy to run as a daily driver IF set up correctly. They can range from a couple of grand to massive amounts of money but it all depends on what you want - but for as little as a couple of grand, you can stand out from the crowd with a special classic American car! You’ve done many rebuilds – which

have been your favourites? The 1953 Plymouth Cambridge we did has to be my favourite as it was our first rat rod we built. They’re all exciting though. For instance, we have a Chevrolet Chevy II also known as the Nova which was donated to us by the family of the late actor Yashaw Adem (also known as Yashar Adem), as the car has fallen into such a state of disrepair, we are starting on that build next week. We have another car which was donated to us by a customer and friend of ours, which is a 1967 Pontiac GTO convertible that we are currently doing a full rebuild on with sponsorship by UK Company, Power Maxed and American company National Parts Depot. This build will take nearly 2 years and we hope to unveil it at the 2018 Las Vegas SEMA show! With such a passion for classic cars, I have to ask – do you have a favourite? The 1955 Chevrolet Bel Air. Why? Because it’s such an icon from 50s Americana and because it’s in one of my favourite car films, Two Lane Blacktop! It’s also in the George Lucas film American Graffiti - a little fact for you; it’s the exact same car, just made to look different for Two Lane Blacktop!
And finally, before you go – what’s coming up for you over the next few months? We will be doing a few shows this year including the prestigious Buster Lang show in August - where we will be unveiling a specially built rat rod for the show! We will be expanding this year with a bigger workshop as well. We are also doing the British Heart Foundation’s London to Brighton Bike Ride (on 18th June) on some of our custom built bicycles to raise money for some of our customers, supportvehicle. org, who take terminally ill children out in a Gotham City Police Department (GCPD) decal police interceptor!

Javier Encina With over 21 years’ experience in transforming tresses across the world, super-stylist Javier Encina has worked on catwalk shows, had his work published in fashion magazines and even broken a world record. Our feature writer Shelley Welti spoke to one of Simon Webster Hair’s most in demand senior stylists and colourists to talk inspiration, this season’s musthave sleek and chic ‘do and giving his client’s head-turning hair.
S
tyling in Argentina, Spain and since 2014; Brighton, Javier Encina is a hairstylist who has both experience and creativity firmly under his (hairdressing tool) belt. “My many years as a stylist have afforded me with a broad spectrum of experiences, working with a variety of products, tools and techniques and have trained with three of the biggest colour brands in L'Oréal, Wella and Aveda,” Javier explains.
“I worked with L'Oréal throughout my time in Argentina, Wella in Spain and then after my move to the UK, I joined the Aveda Creative Team where I worked on catwalk shows and editorial shoots. I pride myself in understanding my clients’ needs and creating wearable styles that suit their personalities and lifestyle, however natural or dramatic it may be.” It’s these confidence boosting cuts, colours and blow-dries that award-winning stylist Javier is renowned for. “I love to create something individual which suits my clients’ personalities and I get a buzz when I catch them checking out their reflection in the salon window when they leave,” the Regional Finalist in L'Oréal Men’s Image Award (2016) and L'Oréal Colour Trophy Regional Finalist (2015) says. “I love working with colour as it can have such a dramatic effect on a client’s look.”

One technique that the senior stylist and colourist specialises in to revamp hair is balayage. This style has been so popular over the last few years – and looks set to continue – for good reason too; the highlighting technique creates that oh-so-effortlesslyfashionable, graduated and natural look (think relaxed, beach hair!) that so many of us ladies lust after. As well as being the go-to-guy for balayage, Javier enjoys taming unruly curls and creating BIG hair blow-dries.
“I work a lot with curly hair types, which need to be cut in a very particular way to ensure that the individual curls hold their shape and bounce while maintaining a beautiful overall shape to the style,” he explains. “I also specialise in voluminous blow-dries and relaxing treatments.”
Along with the aforementioned awards and transforming his clients’ tresses, Javier has had many other career highlights in the three years that he has been working at the prestigious Simon Webster Hair salon, located in the heart of the North Laine. These include taking part in an Italian hair show, styling backstage at the Sussex-based Love Supreme Jazz Festival, working his magic on photo shoots and even styling The Guardian’s beauty editor’s hair. He’s also won the Fierce Colour Award at Hair Club Live 2016 and holds a

Death's Door Tattoo AND THE DEMON BARBERS Newly situated in North Laine, Death's Door Tattoo offer high class body art, while the Demon Barbers deliver cutting edge haircuts with a traditional twist. Absolute takes a visit and chats to Aaron, finding a shop brimming with energy.
Walking into the new North Laine shop I'm immediately impressed with the interior. Who was behind the theme? Lou and I chose the space. When we first got the shop we had a hot rod Garage theme in mind, we tried out different colour schemes that once on the wall didn’t seem to work as we imagined. We wanted clients to feel comfortable and have a good space to hang out in. We discussed how to bring warmth into the studio and decided reclaimed timber would be a great look. Using the wood store in Brighton, many an eve was spent cladding the walls, staining and sanding old pallet wood and scaffold boards. We obtained our lampshades from there too with these cool and old rust effect shades. A cool rusted wildebeest skull came from a local artist Catherine, it seemed to fit our aesthetic well. The vintage Scythe was in the window of dockerills, and as we are called Death’s Door, we just had to have it. The artwork is a collection of pieces that Lou has mainly collected over the years, and bits from our travels. Lou has always collected artworks with a studio in mind and modified and collected various frames. There is also a vintage barbershop scene, a real old piece that Gary, our barber has had for a while. Q.Lets's talk about the barber shop.

It has the feel of a traditional barber yet has a very hip edge. Do you maintain old values such as precision cutting as well as clipping? Yes, both are done here we accommodate all styles, from alternative and rockabilly, scissor cuts or modern precision cuts. We provide what the customers want, with many years experience in the team you’ll always leave with something hopefully better than you expected.
Q.Are wet shaves on the menu? Yes wet shaves beard trims and tiding up, always leave feeling fresh. Q.How many barbers are currently working here. Who's the main barber? We have two full timers here the Demon Barbers on Vine Street, this side belongs to Gary Smith (https://www.instagram.com/ og_gaz/) who has been a barber in Brighton for some time, he now finally has his own Space, which has been great to see all the locals pop in to say hello. This is positive as we try to have a friendly space where people just pop in for a chat or catch up.

Walk-ins are welcome, but we are busy already. If you call the Barber and book with them you won’t have to wait around too long, do some shopping here in the north Laine, plus plenty of good places to get a coffee.
Q.In the other section of the building you have an equally busy Tattoo parlour. There are some fabulous illustrations on the wall. How many artists are working here? 4 artists on our rota right now. We have the owner Lou Hopper (https://www.instagram. com/official_louhoppertattoo/)(who you may recognise from the first series of tattoo fixers the E4 show, but decided to concentrate on building her own studio and working on art pieces. The artwork is a collection of Lou’s, ranging from travelling artists who are friends of the studio who will often gift us art when they visit, or pieces collected from artists we admire.

Lou loved his work and asked if he would like to transfer this skill to tattooing. He has taken to this extremely well and has cracked out a whole bunch of great pieces (come and get em before he charges more!) As well as a full year booked with guest artists, we get people who specialise in their style and come in, so that our artists can bounce off them and always be learning. Or, just cool artists who we want tattoos from. You don’t always have to wait for the convention to get tattoos from your favourite artists. Q.What kind of clientele do you get? Any celebs? We have various band members pass through our door, plus models and actors either for haircuts or tattoos. Lou has Mark Richardson, booked in soon (Skunk Anansie drummer). We are also going to be involved in the great escape festival, as Spotify host a green room in the air bnb above us. So we will have the overspill here bringing tunes, haircuts and discount flash tattoos.
Q.We see a lot of Tattoo parlours in Brighton these days. Do you consider yourselves one of the best? No at all. We like to think Brighton is a collective of amazing artists, being one of the best places in the UK for art. It’s inspiring really, we have people in our chairs who specialise in what they do. We are also friends with a lot of the other local studios. If we couldn’t cover a specific style, we would recommend artists in other local studios. We are aware there are a lot of studios around, but we feel that it helps us keep on our toes. We have to meet a high standard! Q.Do you sell any merchandise? We do have a good range, we sell band tshirts with artists having their own t-shirts and prints, plus some cool hoodies, patches, studio shirts and totes bags.

Q.How long do we have to wait for an appointment? Do we have a consultation first? Sometimes we can accommodate walk-ins. Lou and Dan are generally booked up for a couple of months, so it’s a good idea to email us. We ask for all tattoo details so we can best price up, and book in with the right person. Or just pop in and ask, we’re pretty friendly. We also promote discount tattoos to keep folks coming in, Halloween, Friday 13th Valentines, St paddys, May 4th (for you star wars fans) etc. So keep posted on those as tattoos are around half price on these days, and are walk-in only. If you’ve ever thought about trying Sri Lankan food, then Moonstone should be your first choice. It is the only Sri Lankan restaurant on the south coast, but why travel anywhere else when you have something so wonderful on your doorstep? All the chefs are Sri Lankan natives; you won’t find food healthier than this. Most Sri Lankan food is already gluten free anyway, but they also come with other amazing health benefits from the allnatural ingredients in almost every meal.
Memories of India
Coggins and Co is famous across the city for serving some of Brighton’s best burgers, what a lot of people don’t know about them is that almost all the burgers on the menu are gluten free. Expect a no fuss, welcoming environment when you arrive and enjoy dining at one of Brighton’s most famous spots.

Did we also mention they do some of the best fish and chips in Brighton along with many other British classics and a great selection of draught and craft beers.
The Fountain Inn, Ashurst
Beautiful olde worlde inn in the sleepy village of Ashurst. A free house and ‘Cask Marque’ accredited, the Fountain has plenty
of local ales on offer as well as the more recognised international beers and lagers. Complete with wonky floorboards, inglenook fireplaces and the heart warming smell of homemade cooking wafting in from the kitchen, you will not want to go home.
Eatalio
Eatalio is a recently new addition to Brighton’s food scene, and is located on Queens Road, about a 5 min walk from the station near Brighton’s clock tower. Inspired by the simple, yet healthy food served from the street carts in Italy, Eatalio provides affordable, grab and go food for breakfast, lunch and dinner. A great venue to pop into and dogs are most wecome. No services for dogs, they just allow them in the venue.
Coach House Brighton
A lively and unique Brighton venue, the Coach House is known for its informal and friendly atmosphere as well as it’s outstanding food. Situated in the heart of the lanes, but still only a stone’s throw from the seafront, it’s an ideal place for a quality relaxed lunch. The menu features classic dishes with a twist and all made with local and seasonal produce where possible. Inviting roaring fire for the colder months. Dogs welcome.
Rainbow Inn, Cooksbridge, nr Lewes
The Rainbow Inn in Cooksbridge near Lewes is a beautiful, historic pub with bags of character. The gardens are glorious in the summer months but when the weather

Curry Leaf Cafe
Although in general the food of India is a fairly healthy diet, the food of the south is renowned for being much lighter and lower in fat than the food of the North. Many of the Curry Leaf dishes are made using chickpea flour instead of wheat, in the afternoon and unexpected treats are served during their afternoon tea, which are also gluten and dairy free.
The Victory
Established in 1766 making it one of Brighton’s oldest pubs, The Victory on Duke Street has kept most of it’s original features giving it a really authentic and traditional feel. Think beer kegs for high tops and book cases embedded into brick walls. The food is simple but quality featuring simple bar snacks such as Scotch eggs, casual baguettes, burgers and salads and more substantial dishes such as the Jack and Coke Pork Ribs.
Señor Buddha
Señor Buddha, located on Preston Road in the Preston Circus area of Brighton, offers an ever changing menu of tapas style dishes, crafted in the restaurant’s open kitchen with a heavy East Asian influence. East Asian cuisine has 4 main elements; hot, salty, sweet &; sour – the food is fresh, aromatic, colourful and bursting in flavour, yet very delicate.

BARS & BEATS Bohemia BYOC
Bring Your Own Cocktail is the newest bar to join the ever expanding plethora of drinking establishments popping up. This type of bar is the first of its kind in Brighton as alcohol is not available to buy on the premises and there is no drinks menu. You and your friends are invited to bring your favourite spirits and hire one of the expert bartenders to mix whatever drink you desire. The cocktails are prepared and served in front of you from a trolley with a selection of cocktail acompliments. You pay a flat fee for a set amount of time with the mixologist. This is great idea if you love cocktails and are on a budget and its lots of fun getting the staff to create your favourite tipple.
If you are looking for a premier cocktail bar with lots of atmosphere then this the place for you. Bohemia is a great place to spend your evening. Spread over 3 floors it has a large central bar on the ground floor with highly trained bar staff on hand to mix cocktails that won’t disappoint. They are a bit pricey but definitely worth it. The first floor has a late lounge, specialising in champagne and even has a cigar menu. The lounge opens Friday and Saturdays till late and has Djs every evening if you fancy a dance. The top floor even has a beautiful glass walled Veuve Clicquot Champagne roof garden complete with AstroTurf.

My Hotel
If you’re after a Sex and the City venue then look no further. My Hotel is a beautifully crafted bar with curved walls, gilding pewter surfaces and low lighting, reflecting a warm and spacious cocoon. As part of the My Hotel franchise, the bar is open to non-guests to enjoy some beautifully made cocktails, a sophisticated atmosphere and an altogether glamorous night out. The bar staff are knowledgeable and helpful. This is a good place for special occasions. Everyone gets super dressed up so if you are looking to get your glad rags on and feel special this could be the place for you.

A lovely start to your evening in a classy venue. The bar is part of the Hotel Du Vin chain and is open to non-guests to come in and enjoy the relaxing atmosphere. It is a little on the pricey side but if it is sophistication you are after then look no further. The bar has an extensive list of wines and a wide selection of whiskies, rums and countless spirits. As well as relaxing in the main bar you can also enjoy a game of billiards located on the balcony above.
Legends
ABSOLUTE
Legends is a gay bar and hotel located on Marine Parade just a minute away from Brighton pier. It has a fantastic selection of rooms with stunning sea views. The venue itself is very spacious and has a large bar upstairs with outside terrace and huge dancefloor downstairs. There is always plenty going on with drag acts during the week and great music played by a diverse range of Djs at the weekends.
Lion & Lobster
If you are looking for a good, old fashioned, comfy pub with a great atmosphere then this is the place for you. The Lion and Lobster is very popular with the locals and has become a bit of a Brighton institution. It is a good venue to start your night before going out on the town. The pub is spread over three floors with a main bar downstairs complete with cosy real fires in winter. The second floor has a small bar within a beautiful dining room and the third floor is the outside smoker’s area complete with mini bar and outside heaters. The Sunday roasts are very popular but make sure you get there early.

This is an ideal venue for pre-drinks if you are out on a hen or stag night or with a big groups of friends. The drinks are cheap with lots of offers on shots. Thanks. Yes, although in the evening you can come in for coffee/wine/beer whatever. There's a lot of food going on at night.
Q. The Red Roaster. Same name, new look, major make-over. what's it all about? We felt that the café wasn’t doing justice to the coffee. So much effort is made by the guys to travel and source the worlds best coffee and then import it and roast it here in Kemptown. So we set about challenging ourselves to make the best café we could imagine, and where the coffee would take centre stage.
Q. Let's talk coffee. Red Roaster made a fine reputation for it's quality coffee. What kind of beans are you using? Do you vary your espresso? We are direct sourcing from Africa, Central and South America. At present we are roasting three blends and eight single estates and that changes throughout the year as the new harvests come in. In particular, we are focused on Rwanda, where we have a special relationship with the farmers. We've spent a lot of time out there. Last year we built a school and we are actively involved in the community. Q. Your Flat White is wonderful. What's your secret to the balance? At the roastery Rob and Diana are pretty obsessed and they are in the cafe training everyday making sure we don't mess it up. Plus, we have had perhaps one of the World's best coffee machines hand-made for us in Holland, by legendary espresso machinist Kees Van Der Westen !

Q. There have been some major refinements in the Café. Who was behind the design of the interior? It was a collaboration between Stella Collective in Melbourne, Australia, and Studio C102 in Dalston, London. Q. What's going on with the business outside of the building you can share with us? Just that we will be headlining at this years London Coffee Festival so we’d love to see people up there. Q. Can we still come in the morning and sit with just a coffee and pastry? Yep, everyones welcome. We upgraded the wifi and you can use it as you want.
Q. The drinks menu has been given a massive makeover, do you consider yourselves now as more of a bar/bistro? No, we are a café. 90% of the drinks are espresso based. No surprise that changes in the evening when there's more booze. Q. The daytime food menu looks delicious. Do you become a full-on restaurant in the evening?

You're THE go-to people for cool and on trend - how did the look for BLOCK come about? BLOCK has an industrial feel, featuring lots of steel and concrete. We are certain there won't be many places in Brighton with this look and selling the range we have on offer, available at the bar.
How and when did you decide to create BLOCK? BLOCK is a bar with a heavy leaning towards wine, meat and fresh fish. The wine is all from new young wineries and we wanted to present wine in a new edgier environment than the normal traditional wine bars, together with a solid craft beer range. The food will be restaurant standard but in a more relaxed bar environment. The Brighton food and bar scene is really hotting up now and we wanted to be part of this new exciting scene. We have Brighton's first Bertha oven which is a British made charcoal and wood burning oven, inspired by northern Spanish cooking. All our dishes boast the best local ingredients cooked simply over fire and our wine list, although varied, leans towards northern Spain too.
How did you decide on your menus both for food and for the bar? We conducted lots and lots of research...... well eating and drinking lots of quality beef and dam fine wine in Spain and London. How does the BLOCK process work? Can you tell me a little about how the team work together to create the amazing dishes and menus we see and gasp over in the restaurant and bar? Practically all the menu goes through the bertha. We use charcoal and wood in order to achive a lovely smokiness to the food but the ingriediants are cooked simply over fire so you really achieve the best tasting food you can.
Why did you choose to make Brighton BLOCK's home? The Brighton food and bar scene is probably the best it's ever been at the moment and we think it is just at the beginning of it's cycle. We truly believe that outside of London, Brighton could be the foodie capital of the UK.
How does it feel to always have a steady stream of people gasping in wonder at the frontage to your venue? Great! Hopefully they see enough of what they like to come in and generally get a big surprise when they see the garden out back not something you expect to find in St James Street.
Over the years, Brighton has had some amazing new food and drinks venues. What makes BLOCK stand out from the crowd? When you visit BLOCK, you notice that the interior's look and feel will be very original and of course we do have one off the only south facing beer garden's in the city.

usann Eschenfelder launched her Hamburg based interior design company in 2002,
followed by her London based design company, SE Design London Ltd, in 2006.
Susann’s move into the world of interiors came after 17 years’ experience as senior fashion designer for Jil Sander, Wolfgang Joop and
other international fashion houses. Her strong
fashion background and eye for detail is always at the heart of her designs.

Q. Before you launched the SE Design company, you had experience working as a designer with name designers Jil Sander, and Wolgang Joop. Could you tell us what kind of work you were doing there. I was working for Jil Sander as fashion designer in the womenswear team. It was during the time when the Jil Sander Collection was one of the top international collections. I was very happy for the opportunity to work there during that period. This then led to the offer of joining the Wolfgang Joop, Joop! team as design director for the women’s line. This was a very new experience for me. At Joop! the complete line was given away to licence partners. It was not always easy to find a common agreement between the ideas of Wolfgang Joop / the team and the licence partners. It was a challenging job but not uninteresting in the least. Q. The SE Design company covers some interesting and luxurious aspects of home furnishing design. Could you tell us a little background into some of the products you offer such as the amazing cushions. When I initially started my company, I had the creation of interior Haute Couture in mind. This was off course based on my knowledge and experience in textiles. Being originally located in Germany, I found it wasn’t really the right place to find my ideal clientele. Introducing my work there as an interior designer, I felt I hit a lack of understanding - so I had no other real choice other than finding clients abroad. London was the ideal position to set up company. It was easier finding the ideal international customers with the right feeling for design, quality, understanding and with an open mind for bespoke projects.

BAOBAB Aria is a stunning new development in Brighton and a few months back, the Absolute team were invited to visit the site during the construction phase. Now a fully completed project, we caught up with developer Paul Templeton from BAOBAB Developers to tell us more about the project.
What inspired the development of Aria. We knew from the outset that this was an outstanding site and deserved outstanding architecture. We were determined to move the design conversation on from the ubiquitous white render and grey aluminium windows you see plastered over Brighton and Hove. We wanted something that would sit quietly in its context, eschewing the ostentation that also seems to be prevalent in the area. The site was initially consented for four houses, but we felt three was more appropriate and we spent a year in planning getting the scheme reduced in size - it's normally the other way around! We understand that this building is up for an award. What makes this development stand out? The house has been shortlisted for the 2017 RIBA awards, the highest accolade for British architecture. We always knew we were producing something special here and it is fantastic to be nationally recognised and it is testament to the excellent work from all involved. The reason it has stood out is its unerring adherence to the four tenets that underpin all Baobab properties: design, detail, light and space. Also, the interplay with the landscape is very important to us at Baobab and works beautifully here, whether it is

the beautiful borrowed landscape that make up the far reaching views, or the integration with the garden space, expertly designed by Nick Dexter, who has won medals at the Chelsea Flower Show. What unique features does Aria have as a design and as a building? Aria is conceived as a timber box that floats over a masonry base. The most important component and design decision was the brick we used. It is a Dutch brick, Roman in its dimensions, which means it is wider and more squat than normal. This low slung rectilinearity informs the rest of the design through out the house. The first floor is the real 'wow' space, and the winter garden at the end, with it's framed view of the Sussex Downs is really something special. Who would this type of building be aimed at as a home owner? Good design is adaptable, relevant and amenable: the house will work for whoever wants to live there. We see it is a perfect family house, but it would work perfectly well as a weekend retreat, or a house for a couple once the kids have flown the nest. In terms of styling, where did the inspiration for such a design and build finish come from and why? The architect, John Pardey, is a disciple of Scandinavian Modernism and it

is this design focus that permeates throughout the house. It has the hard lines and design discipline we associate with modernism, but the use of warm, natural materials softens it and sees this house really sing. So where we might have white render, we have timber, or brick. Instead of stone, or concrete floors, we have oak. The house exudes warmth, which is quite an achievement in a house with such vast open plan spaces and metres and metres of glass! As a developer, what enthuses you about your role in the process? My job as the developer on this site was to deliver three top quality houses of high design and do so commercially. As developers, we at Baobab make our decisions driven by design, rather than the bottom line. Fish & chips has enjoyed the glorious title as one of Britain's great double acts for as long as we can remember.

ried fish was introduced to England in the seventeenth century when the Spanish Jews landed. As the fish trawling industry thrived and national rail routes expanded, it was not long before the nation was enjoying moist white fish in crisp golden batter.
The history of the 'chip' is varied, but what we do know is this dynamic duo soon became the staple diet among working class in England, some saying that the Industrial Revolution was fueled partly by fish and chips! Winston Churchill referred to this famous combination as the 'Good companions' and Michael Jackson had a weakness for mushy peas! Fish and chips is an English national institution. In fact, you would be hard pushed to find a town in the UK without its local 'chippy', particularly in a thriving city like Brighton & Hove where you are inundated with choice. I decided to check out the city's most popular and most respected fish and chop shop, having served local residents for over 25 years...
Wolfies of Hove has earned a solid reputation in this seaside city as a traditional fish & chip shop with old school pie, mash & liquor. Situated a few blocks from the sea and a stones throw from Hove Station, Wolfies is a devoted family-run business. Pride and passion is evident and this love for tradition radiates from the team to each and every customer. Prime ingredients are locally sourced,

from the finest sustainable fish to Sussex potatoes which, in my opinion, make the hand cut chips so much tastier than anywhere else in the country. Quality is of paramount importance to the Wolfies team and these hearty local ingredients along with a modern approach to an age old tradition result in a crowd pleaser that have people happily queuing down the road.
After a busy week I thought I would treat myself to a Friday Feast and made my way over to Goldstone Villas at 6:30pm. Now this is definitely a get-there-early joint as the queue was already out the door. Foodies were flocking like seagulls to indulge themselves in this award-winning take away. The white tiled walls were gleaming with the Wolfies of Hove logo and the stainless steal counter, home to large jars of pickled eggs and onions, made me feel rather nostalgic. As a traditional British comfort food it is so refreshing to see a venue that is authentic and genuine. From the moment you walk though the door, you are struck by how happy everyone is; the girls behind the counter dancing along to the tunes playing on the radio and having banter with their regulars and the gents (including the owner Dave's son Danny) busily preparing the fish fillets as the fryer crackles and the extraordinary smells waft down the road.
The special of the day was smoked Haddock & Hand cut chips and to not disappoint (myself of course!) I decided to also order the Lamb & Rosemary Pie. I sat outside on

the wooden picnic bench and people watched as the crowd continued to grow. As I did, I savored every mouthful of the crisp white fish without even a moment of guilt as this faultless and effortless take-away satisfied my end-of-week craving. The battered fish was light and fluffy and the pie rich with a scrumptious flakey, home-made pastry. This was a seriously good combination and an affordable treat which, after a dry January and carb-free February, I was certainly in need of. Other items on the menu include Scampi, battered sausage and of course mushy peas. The menu is extensive, yet traditional. There are gluten and dairy free options available (which is a welcome concept for the humble takeaway) and I was very excited to discover you can order online too. Wolfies of Hove certainly ticks all the boxes for us Brits' and my visit made me realise how wonderful tradition and history can be, how we should be cherish and promote our heritage from sausage and mash to tea and crumpets!
The quintessentially British chippy continues to be a Friday night favourite. Wolfies of Hove have done us proud and I hope this summer, as friends and family descend on us Brighton residents, we all take a moment to introduce them to the Best of the Best for a seaside treat! Restaurant Jeremy’s Restaurant, set within the idyllic grounds of Borde Hill on the edge of Haywards Heath, may be hidden away from the bustling crowds but this is a celebrated establishment whose fame and exceptional reputation puts it in the spotlight.

oasting a cabinet teaming with national awards and accolades including ‘The Good Food Guide Regional Readers’ Restaurant of the Year 2013’ and The Sussex Food and Drink Awards 2013/14 ‘Best Eating Experience’, this 2 AA Rosette restaurant offers the perfect recipe of creative, modern menus, teamed with traditional, smart, friendly service and all within a breathtaking countryside setting. The interior of the restaurant itself is light, airy, welcoming and sits beside an elegant outside terrace overlooking the restaurants Victorian walled garden.
So who is Jeremy and what makes the food at his restaurant so very exceptional? Jeremy Ashpool has been a chef for nearby 40 years, inspired originally by his mothers excellent cooking. Starting out as a self professed and trained ‘beach-bum, DJ and bar manager’, he found a creative outlet through cooking and has never looked back since. Now a seasoned restauranteur and chef, Jeremy prides himself on using ingredients of the highest quality, with produce sourced as locally possible - herbs, edible flowers, lavender and wild garlic are grown and picked in the garden. Regular forays to the gastronomic regions of Spain and France result in exciting ideas and flavours being added to menus and the independent wineries being included in the wine list. Jeremy, his wife Vera who runs the adjacent Café Elvira, and their team have a genuine affection for their customers, many of whom have followed their culinary journey in Sussex during the last thirty years and have come to love the couple's warm and welcoming atmosphere.

The success of this restaurant lies not only in the passion Jeremy and Vera put in to their creation, but in the way they embrace young talent, pioneering practises and have one foot in the traditional past and the other firmly planted in the future of gastronomy. Menus change regularly and include not only a seasonal á la carte menu, but also a daily menu and a special six-course tasting menu, available on the first Tuesday in every month. It costs £45 per person for the menu alone and £75 per person for the menu with wine flight. Regular events include monthly Friday night jazz, wine dinners and BBQs in the garden. I have always been intrigued about ‘Jeremy’s Restaurant’ and so I was only too happy to accept the invitation to review this Sussex institution with 30 years of fame under it’s belt. Arriving with such high expectations is often a little risky, but Jeremy’s successfully exceeded them all. Firstly, I have to applaud the service. Traditional, attentive service is far too rare these days and I was thrilled to be at the receiving end of it as soon as I stepped through the entrance. Jeremy's is clearly a place to go on a special occasion and so sticking to the brief, I had dressed up with excitement. All too often that effort is unrewarded by supposedly ‘modern’ nonplussed service. On this occasion the team couldn't have done more to ensure my every need was met.
I'm currently expecting my second child so the wine list is often just an excruciating temptress. My husband ordered a glass of organic 2015 Graciano, Montañar, La Mancha and to my delight, the waiter offered to put

together a ‘strawberry and mint based virgin cocktail,’ ensuring I didn't feel left out. The wine list is extensive and varied in terms of range and price and offers a rare host of options for wine by the glass and carafe.
My husband and I opted for the á la carte menu on this occasion, selecting the ‘Salmon tikka, dahl, mango and fritter’ and the ‘Portland crab, langoustine, fennel and basil’ for starters. My salmon dish was a triumph, with the fish soft , comforting and delicately infused with Asian spices. The Portland crab was as meaty as you would hope for, naturally sweet, balanced well with the fennel and lifted with the basil. The portion sizes were ideal as to satisfy the diner (as these dishes are incredibly more-ish), but to ensure there is adequate room for the course to follow. For mains, my husband opted for the ‘Longhorn Beef, braised brisket, smoked pomme Anna, Pied de Mouton, squash, tenderstem and horseradish’. This dish is as hearty as it promises to be, yet elegantly constructed and presented with finesse. Served rare to medium, the beef fell apart at the mere tap of a knife and the pomme Anna sung with smoked earthiness. The tenderstem added unobtrusive freshness and the horseradish proudly crowned this dish with a kick.
I chose the ‘Wild Seabass, squid, black radish, creamed potato, burnt apple and beetroot’, an interesting medley but one that I now know belongs together. The seabass held all the flavours of the sea, the squid added texture, the creamed potato was the smoothest mash I have ever tasted and the apple and beetroot worked in tandem to
enhance and exaggerate the flavours of the seafood.
The dessert list, although incredibly tempting and offering dishes that epitomise that target blend of classic meets contemporary (e.g. Grapefruit mousse, labna, pomegranate, granola), we were nicely full and opted for a coffee instead. Fortunately, to satisfy my sweet tooth, these came complete with an exquisite selection of petite fours which also served to keep me quiet on the not-so-long journey back to Brighton. With such picturesque settings and attentive service, it occurred to me how very ideal Jeremy's Restaurant is for weddings, parties and even corporate events. The restaurant is operated by a team you know you can trust with your big day and the combination of the facilities, menu choices and vast experience makes this a very special venue option. The restaurant can seat 55 for a sit-down event, up to 70 for a reception. For larger events of over 100 people, we have the option of a marquee which is in use during the autumn and winter months. A Taste of Sahara combines flavours from Lebanese, North African, Middle Eastern and Moroccan cuisine, to fine effect. A taste of Sahara has fast become the one leading light in the up and coming foodies scene in the city, with a top 10 ranking maintained on Trip Advisor, as well as rave reviews on social media to boot.
The menu is full of excellent meze options, whether you go for the smooth and stylishly presented hummus or a delicious halloumi, all served with warm, flat breads. The real highlights of the place are their beautifully marinated shish kebabs with scented rice, tagines and the arabic coffee or Moroccan mint tea. We decided to opt for the mezze banquet to start, which is a option for 2-3 people sharing dishes offering a broad spectrum of taste that really sets the mood for the rest of the evenings dishes. Vegetarian options of this dish are available on request and ours featured the likes of beautiful Greek halloumi, Lebanese hummus, Tunisian salad drizzled with a Moroccan olive oil, For our mains we opted for the gorgeous Moroccan lamb tagine which is a stunning marinated lamb served with mixed plum

onions and mixed vegetables served with saffron and ginger, plus a sultans mixed kabab. Our choice was based on having been told these are the two most popular dishes and what Sahara is famous for in the city! The sultan kebab featured lovely slow cooked tender lamb in a tawouk and kofta kabab with rice and salad. All the dishes were exceptional and the service and atmosphere of the restaurant was 10/10! This is a mustvisit for all those seeking to get a broad taste of the middle east and Africa.
As well as the dishes we had, the menu is very board offering tempting meat and vegetarian dishes plus vegan and glutenfree options. Perch, on Lancing Beach, is a casual restaurant/cafe serving everything from fabulous fish and chips, quality breakfasts and day food, through to excellent coffee, chip toppings and cake in the café area. It has direct sea views and housing inside one the largest low carbon buildings on the South Coast. Situated metres from the sea, Perch has been a massive success since opening. Special steak nights feature twice monthly, and it's become the area's must-visit.

erch opened less than two years ago, from day one people have visited and fallen in love with this beautifully located dog-friendly restaurant. Polished concrete floor, distressed wood walls, cool lighting and an array of funky furniture, this place is vibrant to the max. Take a morning visit before the crowds arrive and enjoy a perfectly made flat white, whilst enjoying the south coast just metres away. Lancing, on the Brighton to Worthing road, is enjoying a welcome rejuvenation. The Albion training ground is here and Ikea is coming. With a modestly priced car park on the green, Perch is convenient and within easy reach for the visiting family.
What about the food I hear you cry! Well, breakfast starts at 9 am and runs till 11.30. Included is the Perch Fry Up, consisting of cumberland sausages, free range egg, toms, portobello mushroom, grilled streaky bacon, beans, sourdough toast. A veggie option is on the menu too. Perch serve up expertly made pancakes, blueberry & buttermilk, or bacon and maple syrup options. Simply delicious. There is a breakfast baguette, cafe continental, eggs on toast, granola and natural yoghurt and my personal favourite - the Cumberland sausage, and fried egg in a brioche roll. The secret weapon is the Tiptree brown and tomato sauces. On to the lunch menu. Fish & chips. My mother claims they're the best she has ever eaten, I would agree. Crunchy batter,

fresh white fish and fat chips. They have the crispiness and fluffy soft centre of the perfect chip. Perch offer grilled Piri-piri chicken burger, steak frites, the beach burger, the spiced sweet potato burger and a range of sourdough based Pizzas. Moules frites served in a cider, bacon and shallot sauce finished with a glug of cream, skinny fries and crusty bread. Also on the lunch menu are the 'One Pots'. Slow cooked till tender beef chilli. Topped with lime crème Fraiche, a Perch special. Sweet potato, chickpea, spinach - a rendang curry finished with fresh mango, coriander salsa cooked with spinach & chickpeas with creamy coconut. Chicken & lemon tagine - Slow cooked chunks of chicken, apricots & almonds, slow cooked in delicious North African spices, a delicious mix of sweet and spicy. Salads are offered off course - Chicken & Prosciutto, Roast squash & goats cheese, Salmon Nicoise.
The wines include a white Pinot Grigio, a red Australian Shiraz and a Rose Zinfandel from the U.S.A. Beers - Draft Estrella, DNA IPA and Mortimer's Cider.

Perch is buzzing from breakfast till close. Take note that weekends are extremely busy and there is a short table waiting time. The efficient staff handle the pressure well. Restaurant The Popup Series by Aaron Dalton Aaron Dalton, the man behind the 'FOUR Restaurant' concept, began his culinary journey locally, training at Brighton Tech whilst working in pubs and restaurants in Brighton and Hove. Inspired to learn more, Aaron moved to London where he worked in a number of Michelin starred restaurants, including Chez Bruce and Fera - days off were spent gaining further experience with legendary chefs including Marcus warming and Oliver Dabbous.

ost recently Aaron was Head Chef of the Smoking Goat Soho, where he garnered impressive reviews and led the team to achieve the accolade of 55th best restaurant in England. Aaron's desire to return to Brighton marked an opportunity to finally put his own food on the plate and in late 2016 Aaron moved back to Brighton and FOUR began it's journey.
Today, Aaron cooks modern, seasonal British food using techniques from around the world with an emphasis on quality fresh ingredients that are locally and UK sourced wherever possible.The FOUR popup series is Aaron's opportunity to share his talent with real foodies. Intrigued by this new concept, I gratefully accepted the invitation to see this creation with my own eyes. I had no idea what to expect from this series of pop-up restaurants, but what I got was an unforgettable culinary experience in a cosy and sociable setting that I could not recommend more.
Once we located this particular pop-up, which was located on a residential street close to Seven-Dials, we were still unsure we were in the right place until we were warmly greeted on arrival by Sally, Aaron’s wife.

We were ushered through the kitchen where Aaron and the rest of the team were hard at work putting the finishing touches to the appetisers, which immediately generated anticipation for what was to come.
The dining area at the back of the unit was compact and beautifully presented with around 40 seats, twinkling fairy lights and crisp white drapes created a warm tranquil atmosphere. As other diners made their way to their seats you could not help but get talking to your neighbours who were all buzzing with excitement over the five course set menu laid out before us, with each course simply described with no more than four words per course… Carrot. Chicken / Parsnip. Celera. Barley / Dashi. Pine. Skate Wing / Duck. Chard. Bee Pollen / Chocolate. Malt. Hazelnut. The appetisers of 'Mussels, shallot and homemade leek puree on a salty crisp' were delicious, beautifully presented on long curved plates and created much talk of what was to come as they were passed round the table. “I wanted to break down boundaries” Aaron told me later in the evening during one if his many trips to converse with guests in between courses. He certainly managed to

achieve this mission with the setting. Now, on to the rest of the food! The first course surprised us with a 'Shard of crisp chicken skin on a foamy carrot soup and carrot juice', with the foam melting in your mouth as the crisp skin released it's flavour; a treat which left us pining for more.
Course two was a 'Roast parsnip, puree parsnip a celeriac sorbet, topped with pearl barley', a subtle mix of flavours and textures complimented with the refreshingly cool sorbet, which left the taste buds tingling. Third came the 'Skate wing', lovingly prepared atop of dashi seaweed and a flavoursome stock with pine nuts peppered to create flavours that stay with you. The main event was a plate consisting of beautifully cooked duck coated with bee pollen which was nothing short of spectacular. The sweetness of the bee pollen was a beautiful contrast to the richness of the duck fillet, served alongside creamy fluffy potatoes and crisp Chard and, in case that wasn’t enough, pieces of duck served on chunky wooden chopping boards were passed around the table to top up our plates. Enough to satisfy the biggest of appetites. Superb.

When we thought we could not possibly eat any more we were presented with a dessert which could not be resisted; an elegant combination of crumbly chocolate almond soya flourless cake, coffee and malt ice cream made with Greek yoghurt, topped with hazelnut and compressed celery. This was mouth-wateringly delicious with diverse flavours and textures providing a new experience with every mouthful. The evening was an absolute treat. Each course was an absolute marvel of imaginative plates with creative uses of ingredients, with every dish making you more excited about the next. This is a must-visit. When a lot of us think of going out in Brighton, we think of the stag and hen do’s flocking down to the bright lights of West Street; straight down from the station and on till morning. You’d be right in thinking that’s an unparalleled aspect of the truth about the city, but you’d be wrong in thinking it’s all the city has to offer in terms of going out.

here’s so many different types of nights out you can go on in Brighton; dinner, drinks, dinner and drinks, or a full blown night out on the town. Within each of these types, there’s a sub-type, because Brighton offers everything from the glitz and glam of the upmarket cocktail bar and restaurant, to the local gastropub.
Brighton has changed a lot over the years in terms of ‘a good old night out’; in some ways for the good, and in lots of others, for the worst. A lot of the Brighton classics have shut down, been bought into a chain or just changed; unfortunately, times change and so do cities.
Although we may have lost some of our gems along the way, there’s still a whole load of great places to go if you want an evening out with friends, family or your partner. If you are wanting cocktails, but you don’t want a cocktail bar as such, Twisted Lemon is the one for you. Very small, but very good. Amazing cocktails and a good mix of people. It’s tucked away so that only the locals know about it, which is something us Brightonian’s love. Be At One, right in the centre of Brighton, is an ideal spot when you want to get glammed up on a Saturday night for a ‘Pornstar Martini’ with friends. It can get very busy, so get there early or book a table. It’s not your indie little cocktail joint, it’s the kind of place you’ll find in 3 seconds if you google ‘Brighton cocktail bars’ – but that doesn’t mean it’s not worthy of a try. If you want a quiet, dark bar where

you can nurse a ‘Hot Toddy’, then it’s not for you, however if you want something fun and lively, with equally good cocktails, give it a whirl.
Bohemia is a Brightonian favourite; if you’re mid-twenties and upwards (over 25’s only I’m afraid, unless you pre-warn) and want to mingle with likeminded Brighton professionals, this is the place for you. They also do a great lunch - perhaps to cure your hangover the next day? The décor is second to none, and it has the perfect ambience no matter which social setting you’re attending in. It’s not cheap, so perhaps not your best bet if you’re on a budget. If you’re wanting to treat yourself or your loved one, then it’s worth giving a go.
If we are talking pubs, there’s a lot of oldies but goodies in Brighton; Preston Park Tavern is out of the centre, but does great food, good wine and is the type of place you can go at 6pm and stay there all night. It’s a setting where you can go there at 4pm for a drink and end up leaving at 11pm after ordering half the ‘Bits and Bobs’ menu, a burger for dinner, and a couple of bottles of wine. You don’t feel forced out, and it’s full of people doing the exactly same thing you are.
The Connaught in Hove is another personal favourite; the food is next level, and on Friday’s they do half price bottles of Prosecco. If that’s not reeled you in, what will? The location is slap bang in the middle of Hove just down from Church Road, so if you’re wanting to head further afield into the bright

lights of the city centre later on, then it’s a nice little venue to start off in – or just spend your whole night there. Again, if you’re Brighton born and bred, you will have a special place in your heart for The Lion & Lobster. It is always absolutely rammed on a Friday and Saturday night and for good reason too. I’ve had many a great night in this place, and I have the photos to prove it. It has a great atmosphere, and is rumoured to do great food, especially the pizzas! Let’s talk about restaurants, because you don’t have to stand in a crowded, sticky bar to have fun; you can equally enjoy a couple of bottles over some nice food and have the same level of satisfaction.
Market Restaurant & Bar was the best meal I’ve ever had in Brighton, and I’ve eaten in a hell of a lot of places. My friend and I dined there on a Saturday night recently, completely spontaneous, and had one of the best evenings. Brilliant staff, heavenly food, amazing wine, and a great atmosphere. Absolutely faultless, but make sure you book in advance, as we were very lucky to be squeezed in! Make sure you order the chicken, the braised beef cheek, and the mac and cheese as a minimum – they are worth every penny, and every incredible mouthful. SIX in Hove – not only do they do one of the best steaks I’ve had, but it’s a lovely venue for a meal out. Cool, contemporary and chic décor alongside a central location and a

fantastic bar make this the ultimate Saturday date night. Like a few of my other choices, it’s your number one choice location-wise if you’re thinking of heading out later on.
Curry Leaf Café holds a place dear in my heart; one of the best curries I’ve ever had and it’s slap bang in the centre of Brighton, meaning you feel like you’re going on a proper ‘night out’ as such, rather than just going to your local, quiet restaurant at the end of your cul-de-sac. The atmosphere is always good, and the staff are brilliant. I love this place, and have done for years. And of course…we can’t miss out nightclubs. Albeit you may be more interested in a blade of grass than hitting the tiles in Brighton, but if we’ve done cocktail bars, pubs and restaurants, we’ve got to discuss the clubs.
The clubbing scene in Brighton has dwindled with time; we had Audio and Digital which always ensured a brilliant, and interesting, night out, but they’ve since closed and been replaced with many a different venue. I’m sure many of you reading this remember the Pink Coconut, Sherry’s, Top Rank Suite, and the rest of the Clubs of Brighton Past. If you’re still wanting a night out on the town but don’t want the typical cheese, there’s a few places that are always good to end up.

The Haunt puts on some really fun nights; 80’s or band themed, and even Beyonce nights. You get a different kind of crowd in there and it’s a perfect place to hit with your friends. Komedia, although obviously renowned for it’s comedy nights and rightly so, puts on special club events like Power Ballad Night, and it can make for some very interesting stories and unforgettable nights.
And of course, Revenge; somewhere that every Brightonian has visited at least once, and wondered why they waited so long to do it. I won’t talk too much about it, however I will just say; Go. You won’t regret it. Or you might, but only because of the sore head you’ll have the next day.
As previously mentioned, Komedia is always a good choice if you want to actually do something for an evening out, rather than just eat and drink.
Brighton Dome and The Brighton Centre are also absolute musts for checking out what’s on. You may just find your favourite comedian or band performing, and they are both lovely venues for your viewing pleasure. If you’re planning a fun night out with friends, a hen do, or just want to end up somewhere a little bit different, make sure to check out the karaoke bars Brighton has on offer, like Lucky Voice for example. You can also get a deal with pizzas and drinks included in the karaoke booth, ideal if you want to spend your evening in one place.

As Summer is now is slowly approaching us, The Big Screen will soon be on Brighton Beach, meaning a whole host of free evenings out for all of us, with the only necessary additions being a picnic blanket and a bottle or two.
The British Airways i360 was something I didn’t think I’d like, but I loved. Being able to look out onto the bright lights of Brighton with a glass of champagne in your hand makes you see the city in a whole new light. It’s a perfect treat for a friend, or a romantic date night addition with your loved one. Whilst on the subject of Summer Time, there’s a type of evening out that is consistently my favourite each year as the temperatures rise, and that’s one that involves sitting on the lawns or the beach with fish and chips; it’s still an evening out, as such, but it doesn’t break the bank and sometimes it can be a lot more fun than sitting in a restaurant. Wolfies of Hove is a firm fish and chip favourite, and can be your first port of call as the hotter months roll in and the nights are drawn out, for sitting on the beach with your dinner – who said little wooden forks and mushy peas didn’t count as a night out?! Located right by Hove Station, it’s unbeatable for a classic Brighton dish. Another unwavering fave is Bankers – if you live in Brighton, you’ve undoubtedly eaten here or heard amazing things and simply haven’t sampled it yourself yet. Again, it’s unbeatable on taste, and the staff are great too.

We’ve gone through the options for a great evening out in the city, whether you’re on a smaller or larger budget, out with friends, your mum or your boyfriend, love wine or hate it, prefer curry sauce and chips on the beach or steak and a glass of red in a restaurant; whatever it is you like on a night out, we have it covered.
Brighton is an amazing place for an evening out, hence why we get so many hen and stag do’s – I don’t blame them, however it’s always best to get advice on where to go from a Brightonian, rather than a TripAdvisor review. We know where to go and where to avoid, where does an amazing curry, and the best bars to pre drink in.
I love Brighton, and I always will – I feel so grateful to have been born, and brought up, in a city with so much to offer to each and every single person. It continues to flourish and come up with new and exciting venues for everyone to enjoy. Don’t get me wrong, gone are the days where the clubbing scene was what it used to be – but maybe all in good time, we will get some of that back. Buy good quality shoes and look after them with regular visits to the shoes repairers. It’s completely pointless to invest in an outfit, only for the shoes to let you down. Good quality English and Italian made shoes are a splendid investment. Buy cheap, you buy twice! Dirty trainers look ghastly. The only time it’s acceptable to have dirty shoes is after a walk in the countryside or other outdoor pursuit -not at work, out shopping or socialising.

Don’t hang on to old clothes because they were expensive or for sentiment. If you don’t wear them, it’s simply a waste of space. Keep your big-ticket items such as expensive designer handbags, luggage, jewellery and accessories or pieces that you genuinely feel were an investment. Get rid of those outfits that remind you of times gone by. Don’t keep clothes for when you lose that extra half a stone. As we get older, we lose or put on weight throughout our lives, our body shapes change and clothes from years ago won’t look and feel the same as when you first brought them. If you lose weight and tone up, then it’s a great opportunity to treat yourself to new good quality pieces to celebrate this point in your life and your new slim figure.
Well-worn clothes get tired looking, so items at the back of your wardrobe from 10 years ago certainly won’t make you look or feel the same. This is a good chance to pass on or sell these items to a new home.
Quick tips to de-clutter your wardrobe: Get rid of tatty worn out items and clothes with holes or that are beyond repair.

Invest in a capsule wardrobe. Buy good quality basics in muted tones, such a black, white, grey, navy, cream and denim. Invest in key pieces that you can layer up and that will see you through each season.
Storage is key to de-cluttering your home and keeping your closet space tidy and organised. Ikea and large department stores such as John Lewis have some great reasonably priced storage solutions. Buy good quality shoes and bags. These are items that wear quickly with daily use and age. The better the quality, the longer they will last. Cheap bags and shoes will bring down your entire outfit.
Never ever go to a job interview or important date with shoes that need to be re-soled or need a good clean. Its quality not quantity. Buying good quality items that you would wear again and again through each season will reduce the mass of cheap clothes going into our land fill sites.
Avoid impulse shopping or buying items just because they are in the sale or cheap. Think carefully each season about new pieces that will work for you in years to come. Take suits, coats and blazers to the dry cleaners regularly to get the very best wear out of them.

Creating a
Buzz Over the last forty years, Brighton’s Buzz Electrics have been busy providing not only professional electrical services to local residents and businesses, but also providing top quality sound systems for some of the most renowned bands in the world and Brighton events such as Paddle Round The Pier.
F
rom The Killers to Gorillaz, Echo & the Bunnymen to U2, you name them; it’s likely Buzz Electrics has worked with them. In fact, during the 1980s owner Alan Williams believes that they were working with at least five of the eight or nine acts on each episode of Top of the Pops – a dream for a lover of music, like Alan. Buzz Electrics began trading forty years’ ago, after Alan had completed his electrical apprenticeship and became a fully qualified electrician. During his spare time, he played bass for local band No Exit. It was this mix of electrical know-how and passion for live music that saw Alan’s business quickly grow.
“At that time, the band needed a sound system as there were not many around, like there are today,” Alan explains. “A good friend of mine put up his house as guarantor against a loan to enable us to buy one. The word soon got around and soon we had a few hires, which helped us to pay back the loan.” Alan fondly remembers one Brighton gig where their PA system was needed for a relatively unheard of band, now known worldwide as U2.

“I remember doing a gig in the Basement Club in Brighton, when a band turned up with a three ton truck - which was unheard of in those days as everyone had a Ford Transit,” he laughs. “The tour manager said that he was giving the crew the day off as they didn’t want to lug their PA downstairs, so they used ours. The band was promoting their first album the band being U2! The gig was amazing! We were paid £12 and the band got £100, happy days!”
Alan may have hung up his bass guitar many years ago, but his love for helping other bands showcase their sounds continued with Buzz Electrics’ PA system services. Brighton Palace Pier The Future is looking bright for our beloved Brighton Palace Pier.

ince the sale of the Pier back in April 2016, the new owners headed by Luke Johnson have made some positive changes and developments in recent months. First came the welcomed news that the famous ‘Brighton Pier’ sign would revert back to include the original ‘Palace’ name in it. This was warmly received by locals and residents of Brighton and Hove and immediately put the new owners in the good books! In September 2016 a competition ran which asked anyone and everyone to come up with a new design to include the words Brighton Palace Pier and in January this year the winner was announced. Lucy Williams, a local artist and designer of the Open market sign beat many entries to the winning prize of £1,000 and the chance to make history.
The most anticipated and popular new attraction will undoubtedly be the ‘Palace Play’, a fantastic indoor, 4 storey, multipurpose soft play area. This will be will be a great reminder to all those locals that remember the ‘pirates deep’ play area which was hugely popular in Brighton in the 1990’s. The new addition will be fantastic for parents and families who will now have an all-weather purpose place to take the kids. Highlights include , Whirlpool infinity decks, a soft play treasure chest, a Walk of Fear clear bridge, a beach hut roof top challenge, a separate toddlers area, soft play boats and a four lane, four metre slide.

The Palace play will be located inside the Fun dome at the top of the Pier and will cost £4.50 per child, however parents will be able to buy unlimited rides wristbands which can include the Palace play as well as the other 10 fun rides on the Pier. Children will need to be between 0.9 -1.8 metres to enjoy the facilities and it will even have a separate toddlers area with sensory play den. On the food and drinks front, the newly refurbished Horatio’s Bar has now been given a family fun vibe to it, with additional seating and new menu including some tasty sharing platters. There will be live music and entertainment over the holidays and summer plus a host of activities and free fun days.

The Recruiters Balmont Associates is a Recruitment-to-Recruitment (Rec2Rec) agency based in the Eagle Labs Brighton. Servicing clients and candidates that work within the Technology and Financial Services markets primarily in Brighton and London, we speak with Ben Hickey about his journey and what they bring to the jobs market.
What’s your background within the job market? I started in the recruitment industry in 2013 and since then have worked for 2 search firms specialising in recruiting actuaries across the Lloyd’s of London market. When I moved from Brighton to London in 2014 it was quite a culture shock for me being a local boy from Brighton, I was attracted to the pace the of the London recruitment industry. I was lucky enough to work with one of the top billers in my industry William Gallimore who mentored me for a number of years and opened my eyes to how much of a lucrative career this could be and for me, was. What were the catalysts that drove you to begin a Rec2Rec company? Working as a specialist head hunter in a specialist market I myself would be headhunted, either directly by competing firms or through a ‘Rec2Rec’. After numerous marketing emails and phones calls by Rec2Rec's or internal recruiters, I felt there was a lack of intermediaries that understand the insurance recruitment market. I’m a huge believer of empowering your network and if possible always monetising it, having worked in insurance recruitment successfully for a number of years I wanted to set up a platform

where I could educate more recruiters either in the insurance market or people looking to join it. A number of people advised me to stay clear of the ‘Rec2Rec’ market however I knew my passion was recruitment and the people who as a whole. ‘Rec2Rec’ is what I imagine financial services recruitment to have been like 10/15 years ago – it's built purely on relationships, there's not such an emphasis on recruitment regulations or roles released through portals online with no direct communication with the decision makers on the other end.

We want to be liked, trusted and relied on – it's someone's career after all. Like any other recruiter, I’m in this to make money, but money isn’t everything. I’m lucky enough to set up shop back in Brighton at 25 years old something I never thought I could do. Leaving the rat race behind me, I’m now doing something that I love and getting paid for it.
