Chocolate

Adventurers Welcome to the wonderful world of Choccywoccydoodah; extraordinary chocolate creations inspired by Brighton’s whimsical and flamboyant side. Absolute goes behind the scenes of Brighton’s best known chocolate shop (and gasped over window displays) to chat about gin-inspired-beginnings, show-stopping designs and plans for the future, with owner and self-confessed ‘budget breaker’ Christine Taylor.

Hi Christine! When did you decide to start Choccywoccydoodah? “Choccywoccydoodah was born in Brighton in October 1994. The business was never a plan, it still isn’t. My partner (Christine Garratt, the ‘budget maker’) and I reached the bottom of a bottle of gin, very late one evening and decided we wanted chocolate. A chocolate shop was born out of that drunken moment. We still like gin.” What were your aims? “Our original aims were to find exciting chocolate products and be able to eat them 24/7. Now, we make exciting chocolate products and everyone can eat them 24/7.”

Sounds perfect. What had you done before? “My background is in design and my partner was a tax analyst for American expats. We joined forces and funds to open a tiny cafe in Brighton in 1988, called The Albatross. This is where Choccywoccydoodah was born in 1994. The original Albatross customers are still my customers (and friends) today.” Why did you choose to make Brighton Choccywoccydoodah’s home? “We lived here. Where else? Brighton likes a brave attitude! Brighton is part of our success story. If success can be measured by creating something that people fall in

love with and want to be a part of, then that’s what Brighton did to me, on a long weekend some 30 years ago. I’m still on Sunday with no intention of going home yet. Brighton is a fickle town, full of artists, gays, gangsters, dreamers and achievers. Choccywoccydoodah is the same. It’s a perfect place for us.” Over the years, you’ve created some seriously show-stopping cakes – any favourites? “My favourite is always the one we haven’t yet made. Currently, my favourite is Easter 2017.”

You have done so much – what are your career highlights so far? “My real achievements are not chocolate and cake but the group of people I work with and employ. They make dreams come true; joy makers, cake bakers and chocolate adventurers who never, ever knew they could be so clever. We are a cross between a cult and an asylum, dipped in chocolate. Known as Doodahs.” How does the Choccywoccydoodah creative process work? “It’s very simple. I have an idea, I share it with my team. We argue over it and get inspired. Dave (Captain Creative) makes sure it’s executed beautifully – usually. If

I don’t like the finished version, I throw it away. If I do, it goes in the window. I almost always do. But I can be difficult!”

How does it feel to always have a steady stream of people gasping in wonder at your shop window?! “I wish I had a department store. Then there would be a street of windows to look into. I’ve many more ideas than years left.” Before I go; what does 2017 have (hopefully) in store for the chocolate Mecca that is Choccywoccydoodah?! “We are shopping for shop number three. So, hopefully the Brighton Mothership and the London Flagship may have a Ship Ahoy joining them soon – probably in the north. Shelley Welti

Mike

Panteli Based in his hometown of Brighton, Mike Panteli has been on the DJ circuit for years. At clubs, events and festivals around the world and broadcasting his radio shows, this is a man who loves his music. Mike can be heard throughout the UK every Friday night on Capital Xtra (9pm-1am), as he goes in the mix blending fresh, future and classic beats, and mash ups. Bringing together Hip Hop, R&B, Dancehall, Grime, House and Garage to get you hyped up for the weekend. From playing on two Technics from an early age, he has since embraced the digital era and where possible incorporates visuals in his video sets, often playing his own re-edits, remixes, blends and mash ups.

When did you start DJing? And were your early influences? When I was about five-years old! My Dad bought a record deck which you could adjust the speed on, and I learned to beat match to a little Sanyo tape deck I had. That was where it all started. I’m the youngest of four so my siblings were a great influence on my musical tastes but my mum influenced us all. She still has great taste in music. There was always soul, funk, disco and R&B and anything else funky playing in the house. Even the likes of Led Zeppelin, Queen and Nat King Cole were on heavy rotation. My whole family are big on music. Artist wise, I was listening to all the soulful artists but I guess the ones that made the biggest impression on me were Stevie Wonder and Michael Jackson.

Where did your DJing career start? I always knew what I wanted to do. I had decided at five that I wanted be like Quincy Jones, the man behind the music, be a producer (still do). I was always interested in reading the sleeve notes of an album in detail to find out who wrote, played and produced the songs I was listening to. Then when I would get my new singles and albums I would blast them out of my room on full volume and annoy my neighbours. We actually had complaints on more than one occasion and officials from the council visited us twice about the noise problem. I just wanted everyone else to hear these great songs; I needed a platform for everyone to hear all of my favourite tracks. So I had to become a DJ. I set my sites on radio, bars and clubs. My first ever gig (aside from family and friends’ parties) was at the Hare & Hounds pub when I was 17. I hired two Technics and a mixer for £50, spent £10 on the taxi and got paid £40 and only played to a handful of people. Didn’t care though, I loved it.

What has been the most incisive moment in your artistic career? This is a really hard question to answer because I don’t think there has been just one moment – it’s been a series of events over the years that have propelled me forward. Getting my first-ever radio show on pirate station Girls FM was one which led to the shows on regular one-month radio licenses that Brighton would get, like Festival Radio and Freedom FM. Getting a job in the now defunct Rounder Records in The Lanes gave me the opportunity to network with all of Brighton’s promoters, and blag my way onto their shows and gigs. That was huge for me. I got to support a whole host of live acts and DJs. I could go on but it was moments like these that were all stepping stones.

What are your main challenges as a DJ? What is it about DJing, compared to, say, producing your own music that makes it interesting? Well like I said, I’m still striving to be a producer. I’ve dabbled here and there making original music which I absolutely love doing. I so enjoy the creative process, but I’m still learning. I regularly make my own mashups and blends for my sets though. But with regards to DJing, the landscape has changed so so much from when I first started. Clubs used to be where you would hear new music for the first time, then it would be the specialist radio shows. People would WANT to hear new music in the club, it would excite them and they would come over and ask the DJ what the track was. Certainly in the urban music clubs anyway. Nowadays, with the net and downloads and so many different ways to consume music through YouTube and social media etc, the club DJ is no longer the focal point of that so they expect you to be their jukebox if you like, playing their

current favourites and classics. So from a DJ perspective it’s a bit less enjoyable as you’re not sharing those new moments as much, like when I would annoy my neighbours as a kid. So that is challenging but I still do try and introduce a few they don’t know, you just have to do it in the right way. Aside from that I’ve always tried to keep evolving and for the last few years my sets have included music videos shown on the venues screens and projectors to give them an extra dimension, which definitely keeps it interesting. What would your fans expect when coming to see your set? I’m a crowd pleaser. I don’t self indulge, very rarely anyway. My mantra has always been dancefloor fluidity. Watch the crowd, get a feel for what they want, know where to take the music and how to keep them dancing all night. Try to make it interesting and as exciting as possible.

When there’s more music than one can possibly take in, it is becoming increasingly hard to know what constitutes an original and a remake. What’s your opinion on the importance of roots, traditions, respecting originals and sources? I don’t think there’s any harm in remakes and using samples if done in the right way. So many tracks over the years have even improved on the original, not always the case of course as there has been some absolute shockers but in the right hands they can be great. Samples were the foundation of hip hop don’t forget – a genre close to my heart – and while we’re talking hip hop, I think it has gone to a dark place in recent years. The mainstream record industry has infiltrated it and dumbed it down, much like most of society to be honest. It needs intelligent, articulate artists to come through

Not some of the utter nonsense I’m hearing a lot of these days. I do see some hope with artists like Chance the Rapper and Anderson Paak coming through – but they need to be the majority not the minority.

What’s your current opinion on today’s music scene? Continuing on from my statement about hip hop, it’s the same with other genres, especially R&B. R&B used to be about soulful, funky music and it used to be in abundance. Again this seems to have also taken a darker turn. Justin Timberlake and Pharrell are still keeping me happy though and I do love what Bruno Mars is doing right now. I think he’s a real shining light. Coming out with feel good, funky fresh music with an acknowledgement to the past. We need more like him doing what he’s doing to allow the smaller artists who are still out there making good music to come through and get recognition.

What’s next? Well, after years of broadcasting my radio shows in Brighton either on Juice or when I was on Southern FM (before it became Heart), I now have a national show on Capital Xtra. I’ve been part of the team for over a year now and my mix show, which only began in July, has already become no.1 in London during its timeslot beating the likes of Radio 1 and Kiss. The national figures are also on the up and my goal is to make it no.1 across the UK. With that, taking on more national and international gigs and to get back in the studio and get that original music made. The Fence Resisting Poverty, Empowering People and Restoring Hope

N

ineteen years ago, local resident Paul Young decided to get ‘Off The Fence’ and create a charity to support the needs of Brighton people. Off The Fence has since raised over £6m and has supported thousands of local people in need – from women in crisis to those facing isolating circumstances, rough sleepers and young people. This year we’re proudly partnering with the charity for their #WarmBrightonAppeal, which will raise vital donations for their homeless outreach and day centre, Antifreeze. Absolute spoke to CEO Paul to uncover all about this amazing Brighton-based charity and hear more about the appeal… Many of us (myself included) may be surprised to hear that Brighton is actually a city with high levels of deprivation – with thousands of children, families and individuals living below the poverty line. This winter, as many of us head to our warm homes, eat hot meals and take to comfortable beds, this is sadly not a reality for all. In fact, Off The Fence’s Antifreeze service (which supports those without anywhere to call home) has helped almost 1,000 people in the last year alone. And with temperatures dropping and the winter months taking hold, more and more of the city’s homeless people will need their care and support. That’s why 2016’s #WarmBrightonAppeal is so important. The #WarmBrightonAppeal aims to ensure as many homeless individuals as possible are given the help and assistance

needed to exit homelessness for good. Money raised will go towards supporting Antifreeze, which works hard to provide basic survival needs – food, sleeping bags, clothing – as well as offering services at their day centre to help with emotional implications of homelessness and practical solutions to get them off the streets. “The work of Antifreeze plays a significant role in the lives of hundreds of individuals around the city,” Paul explains. “The centre (which is open four days a week) provides a daily activity, a safe space to connect with others and the opportunity to receive practical and emotional support for exiting life on the streets.”

“Over the last year, the Antifreeze centre has been accessed 8,068 times, with more than 962 individuals seeking services at the centre – a 7.6% increase on 2014,” the CEO continues. “The time spent assisting clients requires a good listening ear and often involves intensive one-to-one support over a long period of time when dealing with issues such as housing, health, wellbeing and employment. In 2015, 1,187 individuals received one-to-one client care with the team – current numbers at the centre suggest that we’ll exceed this figure again.” The 2015 appeal saw over £8,000 be generously donated and spent helping homeless people to survive and thrive.

A £2 donation will pay for a client at Antifreeze to have their hair cut and to be provided with clean, warm clothing, whilst £5 will buy refreshments and give clients care for a week. £25 will pay for an assessment and support plan to help someone move away from rough sleeping and £50 will provide a nutritious lunch for 60 clients at Antifreeze each day. £75 will pay for everything a rough sleeper will need to get them through the winter long enough for Off The Fence to find them suitable rehabilitation or long term housing. PEACHYBOO From an idea to a growing empire, we meet the family-run team behind Brighton’s newest baby boutique – Peacheyboo.

W

e all know what it’s like when a friend or family member welcomes a little one into the world – we hunt high and low for cute gifts we hope no-one else has already bought. When graphic designer Hannah GoudmanPeachey’s sister became pregnant, she and her artist mum Lesley started the search for baby clothes but were disappointed they couldn’t find anything they loved enough to buy. So they decided to create their very own, with whimsical designs inspired by Hannah’s childhood in Brighton. Not only was baby Scarlett born, but also the idea for Peacheyboo – now an award-winning company designing and making British clothes for babies aged 0-3. The ladies also opened their doors to their first Peacheyboo boutique in Gardner Street in the autumn. We caught up with Hannah to talk inspiration, fabulous festive gifts and exciting plans for 2017: Hi Hannah! How would you describe your wares? “In three words – fun, unique and practical! We are known for our black and white designs, and our signature recipe bibs. Inspiration for our Sweet Toothy Pegs collection comes from fond memories of our

childhoods and walking into old fashioned sweet shops. Our favourite sweets were sugar mice and we just couldn’t resist putting these cute little fellas on our products. The other inspiration for our collection was baking with Nan; Sundays spent around her kitchen table getting covered in flour and jam, the smell of whatever was baking in the oven filling the whole house!” Do you design them? Where are they made? “Yes we do! Everything is designed and made in Britain. We hand illustrate all of the prints and they are printed in Leicester. Our garments are made in Nottingham, close to where my Nan grew up.” Why did you decide to open up your boutique? “We found opening a boutique was the next step in the growth of Peacheyboo, ready for our launch of Peacheyboo Kids next year!”

How has it gone so far? “It has been brilliant, it’s so lovely to see people walking out of the store with our branded bags, and dressing their children in our clothing. It fills us with so much pride!”

Who wants to bar queue when you're having a nice time chatting with friends or a date? Absolute takes a seat and makes a call.

If on the very rare occasion a table gets too boisterous, we just unplug their phone, and when they tell us the phone isn't working, We say "'Oh it is, its just time to go home.'" It's a nice way of saying we've had your money, you've had our drink, now do one!"

Q. The Gin Tub, love the name. Any idea where the inspired name came from? “Ok, Gin Tub was started as a bit of a gamble. We set ourselves a very small budget for the refit. Originally we wanted 'Bath Tub Gin', but that had been taken. So we just played around with the words and ended up with 'Gin Tub', which is short, easy to remember and cheap for the sign at 6 letters. We managed to get 3 of the letters from TKmax, but struggled with the other 3, so on the day we opened we just cut them out of MDF. They were painted red as a temporary measure until TK had the letters we needed. As time has gone on we liked the sign, so its staying £60 well spent."

Q. The table telephone concept idea for ordering is unique. Where did this idea come from? "Years ago telephone bars were not unusual. In the 70s and 80s Brighton had one. London had three, but as with everything, bars moved on. I actually never went to one of those bars, but the idea always stuck in my head. In a world of information overload, I wanted to bring back the fun of picking up a phone with a wire attached and interacting with someone. It's a bit like the best face time in the world because you can actually see the person your talking to, and you never lose signal. It also makes it much easier to order drinks, and ask questions from the cocktail barmen. You can also call other tables for a chat or offer PPI. We have had some negative feedback for this, but there are plenty of other bars you can stand at for 20mins waiting to order, but the overwhelming response has been amazing."

Q. Let's talk about the Gin then. Over 50 varieties! Are there any rarities on the menu? The mixers look interesting too. "There are over 80 gins on the vast menu with something for everyone. We have chocolate Gin with mint tonic, Rhubarb and ginger Gin and chilli Gin, plus 20 different Tonics. So you

"As far far as craft beer goes, we don't actually sell much at all. In fact, our biggest selling beer is Peroni. I think that the whole industry is becoming specialised into different categories, and Rum is the next one."

Q. I note you have an interesting Rum section too. Can you tell me about any special brands hiding in there? "Our new Rum bar features 60 different Rums ranging from the mainstream, to a £1500 a bottle of Navy rum (Black Tot)! We have a Rum cage with 16 lockers, if you buy one of the cage Rums, you get the locker and Key till the bootle is done." Q. What's the Gin Tub future? "The Gin Tub / Rum Cage is where we see the future of socialising. We have stopped mobile phone signals. Our table phones share with other tables so you always get to meet new people in a natural way. When you visit us, you won't see anybody on their mobiles. We consider this rude in a social situation. Q. I love your name ‘Stoney Point’, what’s it all about?

“I play banjo so our name plays on our love of old time music. Stoney Point originates from an old folk tune from the Appalachian Mountains. Hypnotic and crooked banjo tunes can occasionally be heard in the shop, as well as other types of slightly eccentric music.”

Q. OK, to the coffee. What kind of beans are you using? Do you vary your espresso?

“Our beans are from the Monmouth Coffee Company. I first tasted Monmouth over 15 years ago and have not tired of its consistently delicious taste. We use the organic expresso as our regular blend and have a selection of single origin available as filter. Monmouth began roasting in the 1970s so they have a ton of experience and direct relations with local coffee producers.”

Q. Do you tweak the grind of the beans to get balanced perfection? “Definitely, it’s the first thing we do in the morning and then throughout the day as required.”

Q. I’ve just been served a perfect cappuccino. What’s your secret to the balance?

“Once all the variables have been set, tasted and rechecked for a perfectly balanced cup we add finishing touches to make each cup the

best it can be. For cappuccino in particular the perfect balance is a 20g double shot in a 6oz cup, with a sprinkle of top quality cocoa powder on top of the shot before adding milk with just the right amount of frothiness.”

Q. Tell me about the various drinks on your menu? “We can make any type of coffee our customers ask for, there is no need to stick to the menu, and we are always well stocked with Bonsoy as an alternative to milk. For those who prefer tea in the afternoon, we have a great selection from

Our pastries arrive daily from the amazing Brighton artisan Julien Plumart and my partner bakes all our cakes. She has a vintage baking style focusing on seasonal ingredient and natural flavours that complement our coffee rather than overpowering it. Our banana bread with toasted pecans is a reliable favourite, but watch out for our homemade mince pies with brandy butter for the Christmas season.” Q. INTRODUCTION CRYSTAL BALLS ARE NOT JUST FOR CHRISTMAS! Patrick Kneath

“The signs indicate the property market in Brighton & Hove and surrounding areas will continue to be resilient to a property price drop in both sales and lettings, and as long as lenders make funding available for mortgages then people will still buy and sell.” 2016 has certainly been an interesting year for the property market with the Brexit referendum, money markets being volatile, a new Prime Minister, a new US President (elect), various changes in legislation; stamp duty for second homes and buy-to-let investors, abolition of letting fees for tenants and property portal ‘wars’.

‘As of September 2016, the average house price in the UK is £217,888, and the index stands at 114.28. Property prices have risen by 0.2% compared to the previous month, and risen by 7.7% compared to the previous year.’ (Source; Land Registry www.landregistry.data.gov.uk)

Across East Sussex in the year to September 2016, there has been an increase in property prices of 10.52% across all types, and the average price is £263,434. So it would appear prices are resilient across the region. But, it is the continuing story of buyers not having the choice that they would expect, and sellers being worried that if they put their property on the market they will not find their next home. There is a simple solution to all this; sellers put your property on the market, there are plenty of buyers looking, therefore giving them more choice and as a seller you will achieve the best price. However, because of the fears of listing your property and not finding somewhere to buy, agents are selling ‘off market’ to a buyer who is waiting in the wings for a particular property and this is stifling the number of properties actually being listed to the open market. This practice is not illegal or unethical in any way shape or form – it is just the demands of the sellers in the current market place. So what will 2017 bring? The Prime Minister has indicated that the process of exiting the EU will formally begin by the end of March 2017, which means in practice the UK will leave the EU by the summer of 2019. Will this have any effect of a national, regional, local property market? An impact of Brexit on the

property market would depend on its impact on the economy generally. Since the vote the Bank of England has taken a number of steps to boost the UK economy. It cut interest rates from 0.5% to 0.25% in August – the first reduction in the cost of borrowing since 2009, taking UK rates to a new record low. The Bank also announced a huge extension of its quantitative easing programme by an extra £70bn, and a £100bn scheme to force banks to pass on the low interest rate to households and businesses. Britain has a major housing shortage. The government last year set a target of one million homes to be built by 2020. Industry experts say that is still not enough. A cross-party House of Lords Economic Affairs Committee said in July last year that 300,000 homes per year were required to meet the demand. The Brighton & Hove council’s Housing Strategy 2015 identified the need to build 17,403 new affordable homes by 2017. The council is committed to tackling this shortage and providing decent and affordable homes for people in Brighton and Hove at affordable prices and has undertaken a number of studies that involve, the urban fringe, employment, land availability, retail and leisure, flooding, health and environment and transport. So you can see that it is not an easy task to ensure the right number of properties are built in the right places. (Source; www.brighton-hove.gov.uk)

t has been an exciting year for Brighton and Hove with the opening of i360 and phase one of the marina development. And there is more to come… As a practise, we are delighted to be commencing the construction of our Hannington’s Lane redevelopment, delivering a vibrant new boutique shopping and dining destination in the heart of Brighton’s world famous Lanes, with a new gateway access off North Street.

This year Morgan Carn has been working with various strategic landowners in West Street and Middle Street to masterplan the redevelopment of a run-down block in the Old Town Conservation Area. Two major planning approvals have been obtained and the construction of two eye-catching new hotels providing over 230 bedrooms, restaurants and public realm improvements to the main pedestrian thoroughfare from the station will commence in the New Year. We are also designing Brighton’s first rooftop pool and bar for one of the prominent seafront hotels.

In recent years we have enjoyed opportunities to design a number of bespoke houses in the city in the most prestigious locations. Our second new house in Tongdean Avenue, and the unique remodelling and refurbishment of a listed Victorian mansion in Hove, are currently under construction, both to be completed by end of 2017.

This year Morgan Carn has

nspired by the brasseries of Paris, Côte stands proudly on Brighton’s Church Street, welcoming a constant stream of Brightonians, tourists, lovers and parties through the grand doorway. No matter what the occasion, diners are lured by the award-winning high-end chain’s relaxed all-day dining and menu offering authentic French classics made from fresh ingredients. ‘Date Night’ was the occasion for my visit and I arrived with high expectations, a healthy appetite and a hubby who prides himself on being a steak connoisseur.

The building itself used to be the home of Brighton’s beloved Music Library and has kept that lofty and expansive library feel. High ceilings and black and white decorative tiling create a breathtaking first impression, with ornate cornicing and gold detail. The interior is styled like the Grand Café’s you see in Belgium, with Art Deco touches and warm and inviting lighting to set the mood.

Côte has a unique atmosphere; you can feel the excitement as soon as you pass through the curtain draped doorway, with a buzz that is perfect for groups. A mixture of larger tables and booth-style seating makes it ideal for couples on a romantic evening out and the sheer size of the venue ensures the large amount of diners feel spread out and able to relax in their own space. The service here is simply impeccable, with high levels of customer service 60

training evident across the all staff members. Each member of the team is attentive and has bags of personality giving your evening that personal and intimate touch. There is a fine line between ensuring you are there to meet your customers’ every need and becoming rather intrusive. Côte has this delicate balance mastered with a member of the waiting staff never being too far away to answer your questions or bring you what you desire! Speaking of desire – that evening I had a particular desire for Chablis and was thrilled to learn that Côte offer this fine ambrosia by the glass, an incredibly rare offering funnily enough. The hubby went for a glass of Merlot to partner with his impending steak and table water was served as standard. The wine list displays an in-depth knowledge and features reasonably priced wines from a variety of producers across France.

On the menu itself, guests can choose from brasserie favourites such as Steak Frites, Tuna Niçoise and Moules Marinières and dessert classics such as Côte’s infamous crème caramel and crème brûlée, the house specialities. I went for the Prawn Gratinée (king prawns in a white wine, garlic, chilli and tomato sauce with toasted garlic and parsley croutons) and Matt went for the Crab Mayonnaise (crab mayonnaise with avocado, cucumber, capers, and tarragon with toasted

sourdough bread). I have to say that my prawn starter was simply delicious. I think chains often get a hard time from critics. However these dishes were the perfect antidote to naysayers. They were both packed full of flavour, comforting on a winter’s night and very generous portion-wise.

Opting to go with the brasserie’s speciality dish, we chose the 7oz fillet steak for mains; 30-day aged grain fed cattle and served chargrilled with frites for £18.95. For an additional £1.95 you can add a sumptuous béarnaise sauce (tarragon, egg, shallot and butter sauce) and we thought we would crown the dish with one of the many sides available; the glazed carrots with parsley. Cooked as requested and melt in the mouth, these steaks were faultless. The accompanying fries were perfectly thin and crisp and the side dish was plentiful. Every time I have had the good fortune to dine at a Côte Brasserie, both the service and the food itself have been consistently exceptional – a very settling thought when you are booking for a group or special occasion – you know what you are going to get; exquisite food in a breath-taking setting, all served by staff who care about their guests, their offering and their craft. The dessert menu is brimming with French and family favourites and so

I settled on the chocolate fondant, the hubby went for his all-time favourite the crème brulee and both lived up to our seasoned expectations. Any Masterchef fan will know that if you tackle a classic, you have to ensure it is done to perfection as there is nowhere to hide. Not only have Côte done that, they have ensured you would have to travel far and wide to be able to top it.

One of Côte’s most popular menus has to be the weekday lunch and early evening menu providing outstanding value at £10.95 for two courses and £12.95 for three courses. With dishes such as ‘breadcrumbed calamari sautéed in garlic, lemon and parsley with tartare sauce,’ followed by ‘coq au vin’ and rounded off with ‘crumble aux pommes’, it is perfect for a quick lunch or pre-theatre dining

As one of Brighton’s best-loved restaurants for Christmas parties, this year’s Christmas menu comes in at a very respectable £29.95. Diners are offered complimentary baguette and olives on arrivalvand can choose from starters such as ‘baked crottin traditional goats cheese from the Loire Valley served warm with walnuts, golden raisins, croutons and seasonal salad’ or the ‘charcuterie board with cured savoie ham, saucisson, rillettes and smoked duck breast.’ Main courses range from ‘duck confit à l’orange’ (crispy duck leg confit with sautéed potatoes, baby spinach, garlic, parsley and an orange and veal jus) to ‘pan roasted haddock fillet, crushed new potatoes, baby leeks, carrots and creamy leek sauce’ or the ‘10oz sirloin steak chargrilled and served with frites, watercress and béarnaise sauce’. A welcome step away from the usual Christmas pudding, dessert features all of the usual classics from the main menu including the ‘warm chocolate fondant with vanilla ice cream’. #TrashIsForTossers Brighton is the proud home of world-class chefs and award-winning restaurants a plenty, consistently pushing the boundaries of culinary fashion. In equal proportions, Brighton and its residents are proud of its ‘green’ credentials. This is a modern city with a carbon conscience and so it’s fitting Brighton is to host the UK’s first ever zero-waste restaurant; Silo.

ocated in Upper Gardner Street, just a short walk down from Brighton station, Silo is a restaurant conceived from a desire to innovate the food industry whilst demonstrating respect: respect for the environment, respect for the way food is generated and respect for the nourishment given to our bodies.

This means the Silo team creates everything from its whole form cutting out food miles and over-processing whilst preserving nutrients and the integrity of the ingredients in the process.

Every exquisite dish and drink served at Silo has a story. The Silo brewery, ‘Old Tree’ creates fermented drinks using foraged and intercepted plants, herbs, vegetables and fruit. They have their own flour mill which turns ancient varieties of wheat into flour the original way, opposing over-processed industrialised bread-making techniques. They churn their own butter, make their own almond milk, roll their own oats and support a nose-to-tail ideology, meaning if an animal dies for food the Silo chefs will maximise the whole beast, respectfully. Intrigued and inspired by the Silo ethos, my dining partner and I made our way through the North Laine and arrived to a warm greeting and a unique setting. Silo is vast,

yet inviting and has an industrial feel to its interior. Not industrial in that contrived ‘trendy’ manner so many restaurants opt for nowadays. This interior is authentic and created from a desire to re-use. Continuing the zero-waste ethos, all the furniture is made from materials that would otherwise been wasted, crafted with innovation to serve function. The plates are formed from plastic bags, tables made from industrial floor tiles, work benches crafted from filing cabinet frames. Everything is on show at Silo. The kitchen is open so diners can witness the mesmerising processes the chefs go through to create each dish served. Standing dominantly by the restaurant entrance is the main focal point – The Combuster. Everything not consumed by their customers is fed into this incredible aerobic digester which can generate up to 60kg of compost in just 24 hours. Due to the sheer amount of compost produced, and the relatively minimal amount required by Silo themselves, the restaurant offers its services to the good people of Brighton, both residential and commercial, and that way they are confident they are sharing the benefits of waste reduction across the local community. The restaurant is adorned throughout with large chalkboards that tell the thought-

provoking and inspiring story of Silo’s mission. Also on display is a very beautiful piece of kit; the wooden milling machine. Here is where the flour is made ready for Silo’s infamous sourdough bread to start its journey of creation.

Upon being taken to our table, right next to floor-to-ceiling windows, we were given a briefing on the menu. We were lucky enough to be dining on the launch night of Silo’s four-course Christmas tasting menu, for which there is either a Herbivore or Omnivore option. We opted for one of each and waited in anticipation. What followed was not just ethically sound food, but creative works of art. Each of the four courses challenged our tastebuds and captured our imagination. Savoury highlights included ‘Fermented potato skins and king oyster mushroom’ which comforted and sung with an earthy tone, capturing the very taste of winter and ‘Turkey, Jerusalem artichokes and sourdough sauce’, a resourceful and welcome twist on Christmas dinner. The turkey was organic, we were made aware of its origin and the sourdough sauce came straight from the produce of the in-house mill and the artichokes were roasted to perfection. ‘Broccoli, Worksop Blue and King Edwards’ featured vegetables cooked, manipulated and crafted in truly innovative style. This

restaurant cannot fail to be inspirational, leaving us questioning our usual Christmas dinner veg cooking, challenging ourselves to explore new and exciting flavours and processes.

The piece de resistance was reserved for dessert, ‘Pine, apple and brown butter’. Going by the title, I had little idea what I was going to be presented with, but this was an ingenious dish, which included a ‘pine jelly’, that literally tasted like a Christmas tree. Excited by a flavour I have never had the good fortune to come across until that moment, I enquired as to what the secret was. The answer to the flavour was actually very simple; they just blended pine needles and apple juice – not a tricky recipe but the skill is (like most dishes on the menu) actually masterminding these ideas in the first place, pushing the boundaries and broadening your culinary mind. With inglenook fireplaces, oak floors and delicious gastro pub grub – all in a beautiful building dating back to the 16th century – The Fountain is the perfect country pub to head to this Christmas.

ocated in the picture-perfect village of Ashurst (near Steyning), the Cask Marque accredited pub is a wonderful place to while away a festive afternoon, whilst indulging in some fine food and drink. To find out more about this stunning country pub – just a short drive from the hustle and bustle of the city – we spoke to new owner Alex Tipping. Hi Alex! When did you become owner of The Fountain? “I finally became the owner on Friday 11th November. I had initially gone for The Fountain back in January 2013 before being informed my old boss had beaten me to it! After nearly four years of running it as if it were my own, I made him an offer and he accepted.”

How did you get into the industry? “I have been in the trade for over 20 years after getting into it by mistake, as I’m guessing a lot of people do. But my love of people, food and wine kept me in it! I’ve travelled the world, lived in Australia for some years before finally settling back in my hometown of Brighton. I spent most of my twenties DJing around the country, residing at the famous Zap club every Saturday. At the same time as this, I was trying to hold down a manager’s job in a busy Brighton bar. Great times were had, but once I reached 30, I packed up all the late nights for the general manager job at a very busy country pub, just

north of the city. I spent four years there before taking on a franchise of another pub (The Chequers in Slaugham, near Haywards Heath). After transforming the pub, the A23 junction on Handcross Hill closed, effectively closing off the village from the outside world. It was then I handed the keys back to the brewery and a couple of months later, in January 2013, I found The Fountain.” How would you describe your pub? “The most beautiful pub you’ve ever seen, obviously! It dates back to the 16th century and is a quintessential English country pub, complete with low ceilings (great for someone who’s 6ft 4 like myself!), inglenook fireplaces, flagstone flooring and wonky floorboards.”

Can you tell me about your delicious dishes? Do you have a signature dish? “Being the pub it is, people will always want the classic pub dishes but we tweak them – such as the very popular Corned Beef Hash. We pan-fry it in panko breadcrumbs and serve with spinach and a poached egg. Simple but very popular. We have additional dishes on our special boards.”

Which menu options have been popular so far for the festive period? “Although turkey is the most obvious choice, you’d be surprised at how many people move completely away from it and go for seafood!”

Speaking of Christmas; what’s going on at The Fountain? “We’ve been fully booked for Christmas Day since August and now have all weekends booked during December! We’re hosting Christmas carols on the 24th and will be having lots of late nights throughout the festive period, I imagine!”

And finally; what does 2017 have (hopefully!) in store for The Fountain? “First of all; to carry on working hard and having fun as a team. I think this is key to a successful business. Happy staff equal happy customers! “We’re also planning more events and festivals than we’ve ever had in the past. There are big plans for the skittle alley, a boules court in the springtime, BBQs and a big summer garden party with my fellow Brighton DJ buddies. Beach House Situated in Shoreham-by-Sea, The Beach House is a popular restaurant that supports small local producers and suppliers. It specializes in both seafood and meats. Absolute took a visit and was suitably impressed.

ituated on the pedestrianized East Street in Shoreham-by-Sea, The Beach House restaurant is ever popular after opening doors some nine years ago. Owner/chef Andrew Freeman seems to have inspired others to follow his restaurant models - The Shore Bar, was cloned in Seaford, Eastbourne and Worthing but didn't quite meet the standards they deemed to copy. The Beach House itself has inspired a copy too - in nearby Worthing. Andrew opened Vanilla in Hove some years ago and is successfully well acquainted with the restaurant business.

We also offer a daily specials board. This consists of fish specials such as Cod, Seabass, Red Mullet. You can then choose your sides to match the flavors.

We took our places and enjoyed a meal of 10oz Rib-eye Steak 28-day hung beef, and the 'Catch of the Day' Posh Fish & Chips. It's fair to say the meal was excellent. The service was friendly, fast and efficient.

Andrew, you opened nine years ago. The Beach House enjoys a fine reputation. What's the ethos to maintaining quality? “First and foremost we support our local producers. And by local I mean up to ten to fifteen miles. This means produce doesn't have to travel far and this is very important. We then take this sustainable produce and make simple, yet well executed food. If you take a look at our menu at the 'Taste Of Sussex Sharing Boards', you will see what we mean by the local quality. The Sussex Artisan Meat Board consists of Three air-dried meats, two great local cheeses, olives, fig cake, our

I see you do special monthly evenings, can you tell me a little more? We have a gourmet night on the last Thursday of the month. Some people refer to it as 'the magic night'. We come up with a four course meal with a four flight of wine at £55. The delight is a chef's table menu presented on the evening.

Other special seafood celebrations include the Scallop Festival in November, and then in March its time for Mussels.

Friends are for... Food for Friends has been a mainstay on the Brighton dining scene since 1981. This award-winning restaurant is a vegetarian haven with dishes that mesmerise your tastebuds…

W

ith the rising demand for meat-free alternatives, this already established and recognised restaurant is inspiring a new wave of ‘flexitarians’ – or semivegetarians. There are numerous health benefits from eating a plant-based diet including a lower risk of heart disease, cancer prevention and weight control.

Then there are the environmental benefits including a reduction in global warming from livestock emitting greenhouse gases, to avoiding toxic food contaminants. Of course, there is simply having compassion for the mass exploitation of animals. Studies indicate that as a nation we are getting healthier and more aware of how our diet can have a long-term effect on our health. With the festive season upon us, I decided to kick-start my January health campaign and introduce my husband to the exciting and innovative cuisine right on our doorstep. Over the past two decades Brighton’s hotspots have come and gone, but the city’s love of vegetarian cooking has never wavered and Food for Friends has become a firm favourite. Conveniently located in the heart of The Lanes, guests travel from all over the country and soon become loyal customers, coming back time and time again, regularly taking pride in introducing non vegetarians to this exquisite cuisine.

I must confess that my other half, whilst open to trying new things, was convinced that lentils and tofu would not fill nor satisfy his tremendous appetite. Little did he know… The venue is chic and stylish, surrounded by large windows, simplistic décor and cosy furnishings. As the name suggests, Food for Friends is about coming together and sharing the experience, so we decided to share a selection of starters. The menu changes regularly and takes advantage of local, seasonal produce.

As newbies to this establishment, I asked our wonderful host and waiter Ovidiu to assist with our selection. However, before ‘Ovi’ even opened his mouth the guests on the table next to us enthusiastically and passionately insisted we try the sweet tofu pockets. Stuffed with stir fried shitake, spring onions and brown rice and served with a marinated pak choi, pickled ginger, wakame and hot gochujang pepper sauce – an explosion of delicious flavour. I opted for the satay tempeh skewers with a chilli mango and beansprout herb salad, which was light and punchy. The drinks menu is extensive and the expertly crafted cocktails are truly sensational. I highly recommend the Brighton Castaway and the Fire Cracker!! The wine selection is also superb with an emphasis on

local suppliers. Sussex is renowned for its sparkling wines and gives the mere 90-mile away Champagne a run for its money!

I am already a huge fan of Ridgeview’s sparkling offering and was very pleased to see this on the menu. My entree consisted of Jerusalem artichoke fritters with caramelised turnip gyoza, braised leeks and plum sauce. The dish was picture perfect, vibrant and fresh. My husband opted on recommendation for the haloumi and Portobello burger with fresh tomatoes, baby gem, gherkins and red onion marmalade. I tentatively awaited the verdict from my loving carnivore and to my surprise he was 100% won over and unable to finish the filling and sumptuous burger. I asked him if he missed having meat and he said he had not even noticed. The food is so beautifully prepared and the ingredients are of the highest quality. It is easy to see why Food for Friends has a cult following, and not just from vegetarians, but from lovers of good, flavoursome and invigorating food.

It is thrilling to try new flavours, textures and combinations and knowing that everything you eat is healthy and better for our environment is just an added bonus. Lindsay Katherine Hills

Exploring the very best produce that Sussex has to offer. Michael Yeoman founder of English Wine Box tells his story to ABSOLUTE on exploring the very best produce that Sussex has to offer.

L

ast year I embarked on a road trip through traditional European wine countries, from Chablis in France, down to Barolo in Northern Italy and back up to Champagne in North East France. This gave him a wonderful insight into the wide variety of tastes and qualities of wines, from local producers both individually and as a collective with distinct characteristics between different areas and years within the same region. On our return from Europe my partner and I decided to get on the road again on a more local basis, primarily in Sussex but also into Kent and Surrey. You maybe surprised to hear that we now have nearly 200 vineyards in the UK, spread around predominately the South of England but also Wales. Vineyards can be found as far North as Yorkshire and to the West in Snowdonia, Wales. In Sussex we have just under 50 vineyards producing sparkling, still, rose and red wines, which offer you many options in terms of taste, quality and price. Many of these vineyards provide tastings or tours so that people can understand the efforts and passion that goes into many of these small scale producers.

Smaller vineyards such as Breaky Bottom near Lewes, ran by the ‘godfather of English Sparkling Wine’ the charismatic Peter Hall

from both French and English heritage have been recognised for the high quality sparkling wines the vineyard produces. Peter Hall’s last two vintages have won Gold medal awards at the prestigious International Wine Challenge (IWC) with his sparkling brut 2010 vintage using the Seyval Blanc called “Cuvée Koizumi Yakumo”. This was released in September 2014 using the classic Breaky Bottom Seyval Blanc grape. This achieved a Gold medal at the IWC in 2014. Judges comments include “Nice brioche notes balanced by soft red fruits. Excellent depth of flavour with a flavoursome pithy finish”. Peter’s most recent offering is his sparkling brut 2009 vintage using the traditional champagne variety of Chardonnay and Pinot grapes. His “Cuvée Gerard Hoffnung” which was released in July 2015 again achieved a Gold medal in International Wine Challenge 2015. Judges comments “Ripe malty fresh bready nose leading to a juicy mouth watering palate of fresh strawberries, lemon rind and grapefruit. Long rich crafted finish”. These wines are beating all comers including champagnes and prosecco showing how far English sparkling wine has come in recent years. In the last couple of weeks Sussex Wine has been applying for geographical recognition for its wines as a way of creating a similar

brand to that of Champagne. The UK’s Ministry for Agriculture has applied for Sussex wine to receive PDO status within the European Union’s Geographic Indication (GI) scheme. At present whilst this application is considered, Sussex enjoys temporary protection within the UK, according to producers.

Mark Driver, founder of Rathfinny Wine Estate stated the following ‘We believe that Sussex will become synonymous with high quality sparkling and still wine,’ he also said ‘So when you go into a bar in London or Tokyo you will be asked – would you like a glass of Champagne or a delicious glass of Sussex?’

Poland You would be forgiven for not considering a trip to central Poland. Stag and hen crowds gravitate to Krakow whilst business trips trend to the business hub of Warsaw. Poland’s best kept secret, Torun, is a charming medieval city on the Vistula River. The UNESCO World Heritage Site is located about halfway between Warsaw and Gdansk

struck by the charm of the people and places. Poland is developing rapidly and should be on every self respecting traveller’s destination wish list.

Poland has an area land size of 312,679km2 and a population of aprox 38.02 million. Historically, Poland ceased to exist in 1795 as the Polish lands were partitioned among the Kingdom of Prussia, the Russian Empire, and Old Austria. Poland regained its independence as the Second Polish Republic in 1918. During World War II six million Polish citizens died and lion share of the country was destroyed. Poland changed in 1989 from planned economy to free-market and after that encouraged investment from western businesses. Polish economy is currently one of the fastest growing within European Union. Poland boasts no less than 6 Nobel prize winners. In this article I visit the amazing city of Toruń and lakeland Szczecinek.

Toruń

Toruń is one of the most beautiful cities in Poland. A gorgeous, underthe-radar European destination situated on the banks of the Vistula river on an intersection of ancient trade routes. As one of the few towns in Poland that miraculously survived the devastation of World War II, Toruń still retains its medieval look and the vast majority of the buildings are original. Wander along the cobblestone streets, follow the medieval walls and sample (Toruń’s famous icon) freshly baked gingerbread ‘Piernik’. The gothic buildings of Toruń’s old town were added to the world heratige list by Unesco in 1997, presenting proof of Toruń’s centuries old economic, cultural and intellectual ties with leading cities of Europe associated in the Hanseatic league. Toruń is also well known as the birthplace of Nicolaus Copernicus (1473–1543) who made the crucial discovery that the Earth is not the center of universe. Gothic architecture in Toruń constitutes the richest complex of medieval burgher buildings all over Poland. Any time can be the best time to visit Toruń. Toruń The centre is constructed around a large square in common with many Polish cities. Next to spectacular buildings and churches you will find a plethora of outdoor cafés, restaraunts, bars, ice cream parlours and many leisure places. Typically family orientated, you can while away the hours enjoying good food, drinks and quality ice-cream in the outdoor covered spaces. The old town of Torun is all accesable by foot (the paving stones seem clean and polished) - a historian’s dream destination. The Old Town Hall dates from the 14th century and hasn’t changed much since, though some Renaissance additions lend an ornamental touch to the sober Gothic structure. Today, it houses the main branch of the Toruń Regional Museum boasting displays of Gothic art. Climb the tower for a fine panoramic view of Toruń’s townscape.

There is an incredible variety of cultrual events all through the year, one of which is the amazing week-long Bella Skyway festival in August. A festival that is fresh, unique and reality-changing, breathing new life into the gothic town walls of Toruń. The programme of this event is based on three pillars: Science, Art and People. Thousands of people make their way through the darkened streets of the city, experiencing clever and inovative light and image displays.

Street food

If you feel hungry on the street and need a quick bite then indulge in Poland's equivelent of our fish and chips - a Zapiekanka - an openface sandwich made of half of a baguette or other long roll of bread, topped with sautéed white mushrooms, cheese and sometimes other ingredients, and toasted until the cheese melts. Coffee

There are plenty of good coffee shops to choose from. Located near the Gingerbread museum is the awesome Coffee & Whisky. A café built into an old 100 year shop and serving the best coffee I have ever tasted. A wonderful ambience with bare brick walls and a very special brass chimney in the room centre. You can’t spend a hot summer’s afternoon in Torun without going to Cafe Lenkiewicz. Long queues form along the street for their superb, quickly served ice cream. The Café garden is a wonderful place to sit and enjoy cake, gateau, quality coffee and people watch. There are many ice cream outlets around the city but this place is quite special. Poland A two and half hour drive west of Torun takes you to Szczecinek in the very heart of the Pomerania district. A uniquely beautiful area with varied topography affected by the last glaciers 10,000 years ago. The town is centred around the 5.6 km long Trzesiecko lake. Szczecinek Cable Park has one of the longest cables in Europe for wakeboarding, wakeskating and waterskiing. It is 1100m in length. The water ski lift in Szczecinek is placed on five masts, thus ensuring more than one kilometre of unforgettable experience. There is a 300 metre long straight slide, a slalom course and a ski jump, while the obstacles (kickers and a slider) are challenges for wakeboarders.

For interested historians, there is a WW2 Nazi bunker still intact in Szczecinek which saw action in 1945. The casemate is one of the best conserved fortification in this former defence line. It's well worth a visit.

Meringue Me! Anyone who’s ever tried their hand at making meringues (or even just watched attempts on the Great British Bake Off) will know the delicious sweet treat is much harder to make than it seems…

O

ne Brighton woman who has been able to crack the classic recipe and turn her love of baking into a business is Malwina Arslan. And, as she explains to Absolute, she’s got some BIG plans for 2017…

Every Christmas (in my household, anyway) it’s the same; overflowing tubs of chocolates and boxes of biscuits – and whilst I love them – surely it’s time to awaken the senses with a new festive delight? Enter Malwina and her delicate meringue treats. Born into a family of bakers (her father was the fourth generation to own the family bakery), Malwina grew up with a keen interest to help her grandmother and her father create breads, pastry, cakes and desserts. Her love of baking was evident from an early age and one day she knew she too would turn her passion into a vocation. “I know I’ve always had this creative mind and loved making colourful cakes, interesting desserts and had mind-blowing crazy inspirational ideas when it comes to baking,” she says.

Earlier this year, Malwina had her ‘meringue moment’ – teaming her love and knowledge

of sweet things with a gap in the market for innovative, colourful meringues to create Meringue Me. The business has gone from strength to strength already, which has lead our Star Baker to be in talks with some of Brighton’s best-loved cafes to stock her tempting treats. She also delivers her colourful bakes to customers across the city. The meringues are baked fresh each day and are made with free-range eggs and natural flavourings and colours. Of course, with Malwina’s focus being on creative, eye-catching creations – they’re not your usual run-of-the-mill meringues!

“I love making meringues with lots of delicious flavourings such as coconut, cacao, strawberry, blueberry, lemon and even lavender,” she explains. “My signature meringue and bestseller is multi-coloured meringue kisses – also called unicorn poo or rainbow kisses! I also make swirls in different sizes and colours, along with mini Pavlovas with fresh cream fruits or chocolate.” This Christmas, the Meringue Me range has been made extra extravagant with gorgeous designs such as festive Christmas tree shapes, with added sparkles and icing

sugar. There’s also glamourous meringue kisses with edible gold dust and a cute meringue snowman with jelly scarf (which kids especially seem to love!) – ideal one-of-a-kind gifts. A box of Christmassy meringues (with mini trees and snowmen) can be purchased for £5.99 (for six) and £11.00 (for 14) via their Facebook page. Malwina and Meringue Me have had a fantastic 2016, but like the everinventive bakes, she hopes 2017 will be even bigger and better! “I hope it will be a well-established business with lots of happy customers,” she laughs. “And I hope at the end of the year, I will open my dream Meringue Me cafe and make and serve my delicious funky unique meringues to everyone.” We hope so too! Emporium We’ve all heard the phrase one man’s trash is another’s treasure. Recently opened store; Emporium Treasure and Trash is the perfect example of this saying bought to life – mixing together antiques, collectables and one-of-a-kind finds, as our feature writer Shelley Welti uncovered.

W

hen Martin Webb made the decision to sadly call time on The Dyke Pub, he knew that the Edwardian building would be the ideal home to pursue his other passion; antiques. After sourcing interesting items from all over the country and France, Emporium Treasure and Trash opened its doors in September and is quickly becoming the city’s go-to destination for beautiful antiques and unusual buys.

“My background has been in the media, clubs, restaurants and pubs but I’ve always had a real passion for antiques,” the emporium owner explains. “I love the history they hold and the stories they could tell. I’ve always bought and sold items for my businesses and furnished my own home with the most interesting items I’ve come across. When the chance arose to turn this into a real hands-on business, I jumped at the chance and so far it’s been great fun!”

Whilst the bazaar is an Aladdin’s cave of classic antiques and collectables, for Martin it was important that there was something for everyone and that there was variation for customers: “We’ve called the shop ‘Emporium Treasure and Trash’ because we love the idea that cheap but interesting articles can be displayed next to top quality antiques.”

Since opening, just four months ago, the boutique has been busy – buying stock almost at the same time as they’re selling it, with items such as vintage paperweights, antique boxes, Victorian bedroom chairs and chests of drawers and most recently antique bureaus and deer antlers, being amongst the most sought-after. “We tend to find that people come in with a specific purchase in mind, but when they see all the choice on offer they often buy something completely different,” Martin laughs. “We’ve had a recent run on antique bureaus – they’re make great sense in a modern home as they don’t taken up much space and can hide all your home office mess in a stylish wooden cabinet.” “One of the quickest selling items we’ve had are deer antlers from one of our trips

to France. We sold 100 in less than a week! Items like these are great for home styling and help create a fantastic ‘shabby chic’ look.” With such a diverse and ever-changing assortment, Emporium Treasure and Trash is the ideal place to head to if you’re looking to buy special Christmas gifts that you just can’t get elsewhere.

“We think we’ve got something for everyone, from vintage movie posters, through to Wedgewood and other stunning ceramics, lovely mirrors, prints, curios and collectables,” Martin tells me. “We might not be right in the city centre, but we’re easy to get to and there’s always a warm welcome on offer. There’s new stock arriving every day, so we’d urge people to come and see us to see what treasures we have in store!” During December, the emporium is open 7 days a week and will be offering late night shopping on Thursdays until 8pm made even more festive with mince pies, mulled wine and a roaring log fire! Burntaxe

Based at Eagle Labs in Preston Circus, Burntaxe customise guitars. Absolute popped in to speak to founders Tom Lamont and Michelle Mealor about their incredible creations…

Talk us through what you do? Tom: “I’m the Luthier, it’s the name for a craftsman who builds and repairs stringed instruments. The idea of Burntaxe is more than the aesthetic, the design, it’s taking an axe that’s seen some action on stage and is sounding tired and worn, and transforming it so it sings again – that’s what I’m about. Sometimes the changes are small; it might be the weight of the strings is wrong, or the set up. Or it might be much, much more. Michelle: “I’m the executioner. I’m more behind the scenes, I like to lurk in the shadows, making sure the company operates well. I bounce ideas around, make sure we have a roof over our heads and cakes in the kitchen.” How did you join forces? “We’ve been working together for the past few years and last year we launched This is Pod, our UX and design company,” said Tom. “We work with a lot of start-ups, mostly in London, but also in the US and China. It’s an incredibly stimulating environment. Our clients are entrepreneurs striving to create new ways of working and communicating in the digital world. We decided to set up Burntaxe as our own start-up, within a startup.”

Michelle: “I have a background working for the Foreign Office. I spent many years working in various places around the world, in the Far East, Europe, Middle East and Central America. I’ve had to get used to rapidly changing situations, to being agile and

open to new thoughts and ways of thinking. It’s been a good grounding for the start-up scene.” Tom: “I’ve played guitar in bands for 15 years, as well as building, fixing, and improving my guitars, I also specialise in user experience and design for mobile apps, websites and all things technical. When we moved into our co-working space we saw the laser etcher and Burntaxe was born.”

Where did the idea for Burntaxe come from? “Tom had a Fender Telecaster lying around,” explains Michelle. “He wasn’t playing it and he decided to take it apart and put it into a Laser Etcher as an experiment. People’s reaction was overwhelming, we posted pictures on Facebook and had thousands of views and likes and comments within hours. We took that excitement and energy, turned it into a business and became our own start-up client. It’s slightly mad at times.” Does anyone else offer this service? “There are two parts to Burntaxe: we laser etch artwork onto guitars and also take them apart, reassemble them, professionally set them up and improve the sound and playability. There are etching companies out there and guys who repair guitars but nothing that combines these two huge skill sets into one.” We saw the guitar you built from scratch. “Tom loved building that guitar,” recalls Michelle. “This is definitely a long-term vision to not only offer the laser etching artwork

service but also build totally one-off, quality guitars designed for the player.” What else can you work on? “We’ve also worked with bass guitars, acoustic guitars, ukuleles and skateboards. We are so excited about what we have planned for the future!”

Are there particular materials it works better on? “We can etch wood, plastic and metal; materials the guitars are made from. We’re always experimenting.”

Tell us about your feedback. “It’s been tremendous, we’re thrilled. Everyone who’s held our guitars instantly loves them. We’ve had nothing but positive energy and excitement. It’s a very powerful and inspirational environment here at Burntaxe. We encourage everyone to come in to see, touch and play the etched guitars, only then you’ll truly see the precision detail and beauty. Our favourite response so far was to a Gibson Les Paul we did for local band City of Ashes, James MacDonald said; “It’s like playing an entirely different instrument, It’s witchcraft what you’ve done!”

Where did the name come from? “Laser etching wood does come with a certain element of fire and burning, says Tom. “I always refer to guitars as axes. Michelle suggested Burntaxe on day one, It’s a fun, playful name and we think it totally sums up who we are and what we do.”

Who comes up with the designs? Michelle explains: “We currently have three designers doing the etch artworks: Tom, Burntaxe’s Luthier, deprivedanxiety’s Carl Sutton (a designer and illustrator living in Cardiff) and his incredibly detailed work translates well into this medium. Plus, we have the extremely talented freehand illustrator Jess Ash from BEACHXPIZZA. We have more amazing artists coming onboard soon.”

Does what you do impact the sound of the guitar in any way? “The laser etching itself doesn’t affect the sound of electric guitars at all but what does change the sound is when Tom reassembles and sets up the guitar,” says Michelle. “The goal here is to not only improve the look of a guitar, but to also improve the feel and how it plays. We custom set-up each guitar for each player. If someone wants to achieve a certain sound we can change pickups and fully customise the features of the guitar. Everything we do is designed to significantly improve the sound a guitarist can achieve.
