Upcoming Events in Thailand

Festival of the Tenth Lunar Month

Date: 17-26 September 2014 Venue: Wat Phra Mahathat Woramahaviharn Making merit on the 10th lunar month is grandly celebrated every year in Nakhon Si Thammarat. Held from the first to 15th waning moon in September, the event marks the occasion when children who’ve moved away from home for work returning to their families to make merit and pay respect to their ancestors. This practice derived from the belief that for 15 days in September, the deceased ones would be allowed to come up from other realms to meet their living relatives. During this time, the living would try to appease the spirits by taking food to temples to make merit for them. samarttiw / Shutterstock.com

The festival’s highlights include religious activities to make merit for those who passed away. It is one of the important religious and cultural events that draw not only the locals but also a large number of visitors to join the event every year. A magnificent colourful procession with folk performances will be held on Monday 22 September 2014 from the city hall onto Ratchadamnoen Road through to Wat Phra Mahathat. Through 10 days, there will be competition of best designed food trays for merit-making, light and sound presentation and a local food and goods fair. Phuket Vegetarian Festival

Date: 23 September - 3 October 2014 Venue: Phuket The Phuket Vegetarian Festival is a colourful event held over a nine-day period in September and October, celebrating the Chinese community’s belief that abstinence from meat and various stimulants during the ninth lunar month of the Chinese calendar will help them obtain good health and peace of mind. Though the origins of the festival are unclear, it is commonly thought that the festival was brought to Phuket by a wandering Chinese opera group who fell ill

with malaria while performing on the island. They decided to adhere to a strict vegetarian diet and pray to the Nine Emperor Gods to ensure purification of the mind and body. To everyone’s amazement the opera group made a complete recovery. The people celebrated by holding a festival that was meant to honour the gods as well as express the people’s happiness at surviving what was, in the 19th century, a fatal illness. Subsequently, the festival has grown and developed into a spectacular yearly event that is attended by thousands with participants flying in from China and other Asian destinations.

Important Event dates and program details may be subject to change. Many of the festivals and events listed on Thailand’s official calendar of annual events are traditional Buddhist or folk festivals, the date of which is either determined by the Buddhist lunar calendar and waxing and waning moon. These are not staged events. The festivals reflect the rhythm of life in rural Thai villages and local traditions as observed in times past. To ensure you have the most updated information, please reconfirm details prior to travel.

he term ‘boutique escape’ can be ambiguous, it needs definition. It’s not the number of rooms that makes a resort ‘boutique’ rather it’s the stay experience. The property has to be unique in terms of both architecture and have a location that offers a highly personalized yet unobtrusive service that respects privacy. The Northern Thai cities of Chiang Mai and Chiang Rai have the ability

to meet that special criteria of a wellness retreat, the place to find calm tranquillity and a relaxed state of mind. Rarin Jinda located on Charoenraj Road is built around an old teak house built by a Burmese logging merchant. An East meets West destination spa and 35 room resort with the latest spa technology blended with traditional Thai massage science and herbs, and western massage techniques.

“Wellness spa is aiming to correct the cause of imbalance, not the symptom,” says Dr Sushil Rahul an experienced doctor of Alternative Medicine and Complementary Medicine, Lifestyle and Self Care counselling. “I recommend a consultation to determine each guest’s aura by means of a hand sensor which sends out and decodes data into colours which

represent certain aspects of their personality. Based on this information I can then help to recommend the spa treatment most beneficial to them.” Oasis Baan Saen Doi Spa Resort is located in Baan Nai Fun 2 residential area, at the foot of the sacred Doi Suthep mountain. Ten minutes drive south-west of Chiang Mai International Airport and 20 minutes from Chiang Mai city centre. This luxury resort and spa offers both short and long stay accommodation creatively combining Northern Thai (Lanna) architecture with hill tribe and other Southeast Asian art. It has the feel of a large private villa where guest rooms are prefixed with the word ‘Doi’ which means mountains and hills of Northern Thailand, befitting the location.

Here the accommodation is generously spacious. Starting with the Deluxe Rooms Doi Kham and Doi Tao with 55 sqm, the Corner Suites Doi Luang and Doi Angkam 70 sqm and the Luxury Suites Doi Suthep and Doi Pui offering 75 sqm. For families the Grand Suites Doi Inthanon and Doi Mon Jam have two separate bedrooms. The ultimate for those seeking a little privacy, the Presidential Residence in a private wing offers three bedrooms Doi Tung, Doi Wawee and Doi Chang. Their latest treatment Mango Sticky Rice Body Scrub is full flavoured dessert for the skin. It’s made with mango butter to nourish the skin while the course texture of the coconut and rice beat acts as an exfoliant. At the same time the tropical aroma of fresh mango delights the sense. The body will love the warming sensation and there is a risk that it will come to crave this food for the skin.

Adriana Lima An Angel Among Angels words: Tim Knight

A

driana Francesca Lima was born on June 12, 1981 in Salvador da Bahia, Brazil. She is now best known as one of the faces of Victoria’s Secret. To begin her career she, at the age of thirteen, had finished in first place in a Ford Supermodel of Brazil model search before she finally won second place in the 1996 Ford Supermodel of the World contest. Following her “victory,” Adriana soon moved to New York City, and eventually moved on from Ford, signing with Elite Model Management. Adriana’s modelling career began at a young age. In elementary school, she would enter local pageants and walk away as the winner. The self-esteem boost that came from winning helped ease the insecurities that were the result of her father’s decision to leave her family when she was only 6 years old. In high school, she and a friend agreed to enter the same modelling competition. After one of the organizers saw modelling potential in Adriana, she was encouraged to enter the Supermodel of Brazil contest that was presented by Ford Models. At only 15 years of age, she won the title and moved on to that year’s Supermodel of the World competition.

Her second place finish in that 1996 competition assured Adriana that a modelling career was in the cards. She took full advantage of the opportunity by signing a deal with Elite Model Management and heading straight into print, ad and runway work. Adriana’s first runway appearance was for Anna Sui in 1997. Within a year, she would already have an ad contract with Anna Molinari and a cover shoot for Marie Claire (Brazil) in the books. Adriana’s substantial industry power and incredible physical appeal have earned her the right to be counted among the very best in her profession. One of today’s top-three earning supermodels, Adriana remains in high demand. Forbes magazine just released in August the list of the top earning models and Adriana came in third place earning $8 million in 2013 (Gisele Bundchen earned a whopping $47 million!). In addition to her financial status, Adriana’s piercing beauty has earned her nods from the respective “Sexiest Women” and “Most Beautiful People” lists of People and FHM, and she has been featured numerous times in “Top 99 Most Desirable Women” categories.

Adriana is also now the “grandma” of the Victoria Secret’s Angels joining Alessandra Ambrosio as the longest-serving Angel, having both walked in a staggering 13 shows but she still isn’t tired of the lingerie extravaganza. “I’m definitely the grandma,” she laughed, at an appearance at her “favourite Victoria’s Secret shop,” the brand’s New Bond Street store. “I first walked in the show in 2000, but I was working with the brand even before that, actually. We would greatly appreciate your respect for our family’s privacy as we begin this delicate next chapter for all members of our family.” Adriana, 32, and Jaric, 35, met at a party in Los Angeles in 2006 and got engaged two years later on Adriana’s 27th birthday. They eloped in 2009, exchanging vows on Valentine’s Day in a private civil ceremony in Jackson Hole, Wyoming.

Watch for Adriana and all of the other Angels at the Victoria’s Secret Fashion Show 2014. The annual star-studded fashion show is relocating, moving from NYC to the capital at Earls Court. The 2014 show, set for Dec. 2, is sure to be just as spectacular across the pond. “We’re very proud to announce that we’re heading to London this year,” Adriana said. “The Victoria’s Secret Show is the biggest fashion show in the world, for sure, so it will be amazing to bring the show to London. I love it here. Especially the shopping!”

Phulay Bay, A Ritz-Carlton Reserve The luxurious Hideaway words: Laurence Civil

L

ocated at the base of craggy hills, a 30 minute drive from Krabi town, privacy is guaranteed by the resort’s small rock strewn beach. The location inspired name from a place where the mountains meet the sea. Phu means mountain and Lay means the sea. Set on the shores of the Andaman Sea Phulay Bay has unspoilt views of the towering limestone krast.

28

Krabi’s prime attraction is the beauty of its 130 Islands with white sandy beaches, crystal clear emerald seas from where islands erupt vertically and secluded beaches that are accessible only by colourfully adorned long tail boats. Ritz Carlton is one of the world’s best known luxury hospitality brands but is often criticised in luxury travel

circles for being “too cookie cutter.” To counter that insinuation they have created ‘Reserve’ as a higher tier extension. Its signature is a boutique resort with a distinctive signature and sense of place. It’s aimed at the traveller who is seeking a singular location and peerless resort that, through unique design and exemplary service, has a distinctive personality that blends together the culture,

Phulay Bay is the first Ritz Carlton to open in Thailand and the first ever Reserve resort to open worldwide.

history and heritage of its setting. What distinguishes Reserve from other award-winning resorts is that offers guests exotic hand selected hideaway destination with an even greater level of individual service. Phulay Bay is the first Ritz Carlton to open in Thailand and the first ever Reserve resort to open worldwide. With Phuket becoming Increasingly overcrowded Krabi has emerged as the relax luxury alternative, the ideal setting for the Reserve brand to plant its roots and grow. On arrival at the resort we are escorted through to the contemporary Thai teak arrivals pavilion which appears to be floating above the soothing reflection pool. The walls of the purple Moorish style courtyard house thousands of candles and mystical melodies played

by Thai musicians complete the breath taking sense of arrival to this magical retreat. After a traditional Thai welcome I was introduced to my personal butler named Som, who for the duration of our stay was available to take care of our every need. He drove me by buggy to my Royal Villa, that felt like my private palace by the sea set behind a 30 foot walled compound. We entered through a pair of heavy wooden doors leading into my private garden. Directly in front the verandah with a spacious lounge sofa. To the right my private sea facing infinity pool with hydro jets. To the left the main floor to ceiling sliding glass door entrance to the which Som opened for me.

He then walked me through the spacious 120 sqm villa. Centre stage a sofa strewn with pillows in front of the massive 13 x 6.5 foot bed, double king size. To the left a room deep writing desk. On the other side of the bed a glass walled corridor leading a glass walled octagonal room that housed the fragiapani shaped terrazzo sunken tub.

Review

I was impressed with the resorts water pressure as it filled quickly. Behind the bed is a dressing table and a pair of floor to ceiling doors painted with Lanna-style murals as found in temples in Northern Thailand. They just housed the mini bar and tea and coffee making facilities. Walking down wide steps between then lead to his and hers walk-in wardrobes one on either side. Finally the toilet room on the left and on the right the wet room with a pair of hand basin and a pair of rainfall showers. From this room a door leading to the back garden with a terrace for a private barbecue and an outdoor rainfall shower. The outdoor spaces covers 458 square metres. Everything is oversized

30

yet in proportion which is the magic of this truly private and secluded tropical sanctuary. My quarters were light, airy temples of indulgence, I have everything I needed within the confines of the compound. This is a complete escape to the unexpected, a ‘casual barefoot’ ambiance with a no rules dress code. Private pool villas enclosed in a walled garden allow the ultimate luxury of being able to swim naked without causing offence to other. However, guests are requested to wear a shirt or cover up when entering bars, restaurants, the spa and public places. Renowned Architect Lek Bunnag was responsible for the design of the resort. His solution was for modern styling and architecture that

reflected Thai culture and design. He was inspired by the four elements; fire to create a romantic intimate ambiance; water to create a bathing sanctuary; air to created space for contemplation and relaxation and; earth with the discreet treatment of technology. Landscaping was by Wannaporn Pornprapa whose goal was to create unique tranquility with the garden of your dreams, water features, wooden bridges, exotic flowers and the scent of jasmine. Ever attentive, the Butler calls at 5pm to ask where he should make a dinner reservation. I decide to go to Sri Trang for Thai and we agree he will collect me by buggy at 7pm. He thoughtfully asked if I was aware that the resort had just introduced

the world’s first ‘Spice Concierge’ who is using spices such as lemongrass, kafir limes and galangal to create one-of-a-kind cocktails and spa treatments. He then went onto mention that Chomtavan Bar has locally infused spirits inspired by local flavors and ingredients, such as Thai red chillies, basil, lime, and coriander, and would I like to tray a Thai taste infused sunset cocktail. He was spot on with my passion for taste, we revised the schedule and he collected me in time for a sundowner before dinner. I enjoyed a chilli margarita and ginger and lemongrass martini while watching the sun set behind a limestone karst. I then went across to Sri Trang to taste their traditional Thai cooking which is seafood centric serving Southern Thai delicacies prepared with the very best ingredients. The food is excellent, I dined in the resort throughout my stay as leaving the resort isn’t that practical.

When dinner was over, the restaurant called Som who collected me in the golf buggy and drove me back to my villa.

more information

After a blissful nights sleep, I had a morning swim before breakfast in the infinity pool from where I could see a few small fishing boats in the distance. I then called Som to pick me up and take me to breakfast at Jampoon, the Mediterranean restaurant next to serene lotus ponds overlooking the Andaman Sea. Their Eggs Benedict where simply superb. During the day, activities range from yoga sessions in unique meditative settings, to walking tours led by landscape experts who share fascinating details about Phulay Bay’s natural beauty. The magic of this stay, extravagant over-sized and indulgent luxury that’s comfortably balanced, creating individual private sea view palaces enveloped in their own walled compound. Privacy, luxury

and discreet personal butler service underscore the values of this special escape. Some may find the idea having a private butler intimidating, not here where their service is excellent but discreet, a key element to luxuriating in this majestic retreat.

Overlooking two dramatically beautiful volcanic craters, the views are absolutely breathtaking. And as with most things this beautiful, there is a legend. This one involves a couple of star-crossed lovers; a beautiful princess who fell in love with a shepherd, but who was forbidden by her father from marrying. luxury on wheels the eastern & oriental express words: Laurence Civil

oarding the Eastern & Oriental Express is unlike catching any other train; it’s embarking on the most exotic train journey in Southeast Asia.

had been required in Butterworth. The journey has since changed slightly and now departs from the newly opened Woodlands checkpoint, where I boarded the train.

The luxury train made railway history on 19th September 1993 departing from the iconic Art Deco Kepple Station, a Singaporean national monument, becoming the first train ever to carry passengers directly from Singapore and Kuala Lumpur to Bangkok, previously a change of train

As Singapore is the historic start of the journey, passengers check in to Raffles Hotel, where the Long Bar becomes the temporary departure lounge. It’s said that you haven’t visited Singapore without tasting their signature Singapore Sling created before 1915 by Ngiam Tong Boon, a Hainanese

bartender. A blend of gin, cherry brandy, pineapple and lime juice, shaken then topped up with soda. From Raffles guests were driven to Woodlands to complete departure formalities from Singapore and entry into Malaysia before boarding the Eastern & Oriental for an exotic journey to Bangkok. Guests are accommodated in a Pullman cabin, air conditioned with a large window and en-suite shower and lavatory with a wooden seat.

As the train crossed over into peninsular Malaysia via the Straits of Johor causeway, afternoon tea was served in the cabin. The carriages were originally built in Japan in 1972 and started life as the Silver Star train in New Zealand. All 31 carriages were later sold to OrientExpress Hotels, with 24 re-gauged from New Zealand’s 1,067 mm (3 ft 6 in) gauge to 1,000 mm gauge for Thai and Malaysian railway lines. They were remodelled and designed by GÊrard Gallet, the man behind much of the design and refurbishment of both the British Pullman and the Venice Simplon-Orient-Express luxury trains. The windows in the dining cars were extended to ensure every guest had a table with a view.

The interior panelling is decorated in elm, cherry, teak and rosewood, the diamond shaped marquetry is hand cut by local craftsmen. The compartments are panelled in cherry wood and elm burr and the Bar Car in pale ash wood. The Observation Car is floored in Burmese teak. The three restaurant cars Adisorn, Rosaline and Malaya have skillfully engraved marquetry, distinctive table lamps and exquisite table seating in a two or four configuration. The Salon has a traditional Chinese feel, decorated in dark rosewood with richly coloured upholstery. The window pelmets are hand embroidered in Malaysia and the carpets are hand tufted in Thailand.

The rocking movement of the train can make taking a shower challenging. Gentlemen are requested to wear a jacket and tie for dinner. Over cocktails in the Bar Car, Ulf Buchert, Train Manager described his job as being a very special experience, meeting people from every walk of life, including royalty, diplomats and top businessmen. He regarded it as his duty to identify the needs of each and every passenger and for he and his team to fulfil them. His team is 70% Thai (all the cabin and restaurant stewards) and 30% Malay and Singapore (the kitchen and bar staff). There is no staff turnover as they all are extremely satisfied with their job.

When the train is fully occupied there are two seatings for lunch and dinner, the restaurant manager advises guests a which of the three dinning cars they will be seated in, and the time at which lunch or dinner will be served. He rotates seating allocations so the couples or guest travelling alone have the opportunity, if they wish to meet other travellers. A starched wine linen cloth covers each tables and is laid with polished silverware, crystal glassware and specially designed chinaware by Patra. cannot move freely and must remain static during the meal. Executive Chef Yannis Martineau plans his menus to mirror the journey creating a synergy between Eastern and Western flavours. “All my dishes are uniquely created to reflect the exquisite and exotic flavours of South East Asia, says Martineau. His dinner menu started with hoisinglazed roasted Saba mackerel with white turnip salad, crispy wonton and cucumber coulis. For the main course there was a choice between medallion of beef complimented with foie gras croquette, Asian vegetables, vindaloo sauce and mustard foam or Ayam Rendang Biriyani with Achar, tender spiced chicken leg accompanied by fragrant long-grain rice and Asian pickles. After the main courses the

breads, butter and cruet are cleared, the cloth scraped for crumbs before dessert is served, as expected in a fine dining restaurant. Then a medley of Asian citrus fruit with yuzu sorbet and coconut cream. Finishing with petit fours and the choice of Doi Chang coffee from Northern Thailand or tea from the Boh plantation in the Cameroon Highlands, Malaysia. Waiters ask each guest if they have special dietary needs before service. Meals are included in the fare, alcoholic drinks are billed separately on a running tab to be settled after lunch on the last day. Guests returning to their cabins after dinner find their bed made up with E&O monogrammed sheets. Most passengers have difficulty sleeping on their first night due to the motion of

the train but make up for it on the second night. Just before midnight the train made the first of five stops to take on water at Kuala Lumpur. With showers in every compartment and all those dishes to wash, the train is a big user of water. Each sleeper car has a capacity of 1,200 liters of water and each service car has a storage capacity of 1,700 liters of water. The train arrives into Butterworth Station after breakfast where guests have the option of a coach tour of George Town, capital of Penang State with it’s multicultural heritage and the harmonious Malay, Chinese and Indian communities. On arrival at Padang Besar the Malaysia/Thailand boarder, the train’s

service crew complete immigration and customs formalities for their passengers, who are required to remain on board. The KTM Berhad locomotive has completed it’s duty and it’s here State Railway of Thailand takes over the responsibility of pulling the 21 carriages up to Bangkok. Timings on the journey are subject to change due to the movement of scheduled train services, but when journeying in such luxury who is in a hurry to reach their destination. As the train was running four hours behind schedule lunch was served prior to arriving in Kanchanaburi to cross the “Bridge Over the River Kwai”. We re-boarded the train for the final time, sadly my baggage was back in my cabin to repack. The steward stored the bags then served the last

afternoon tea before finally arriving in Bangkok’s Hualampong Station. Having departed from the classic colonial style of Raffles Hotel, Singapore the most exotic train journey in Asia concludes in another piece of classic architecture, built the 1920’s in the Italian Neo-Renaissance style, by Turin-born architect Mario Tamagno.

Off the beaten track

the mighty mekong

The Heart and Soul of Southeast Asia words: Paul Eastland

T

he Mekong River is the heart and soul of mainland Southeast Asia. Over 60 million people depend on the river and its tributaries for food, water, transport and many other aspects of their daily lives. The river supports one of the world’s most diverse fisheries, second only to Brazil’s Amazon Riverit is the 12th longest in the world and surprisingly, despite travelling for 2,703 miles through 6 countries, it is only the 7th longest in Asia The mighty Mekong River is not just a river as in most western people’s eyes, but as thriving, bustling lifeblood of

50

the communities in its vicinity, from the waters that are needed to irrigate the thriving agricultural crops, the abundant fishing, and the water based highway it has become, everybody depends on this great river. Arriving in Thailand in the province of Loei, the first town that this mighty river flows past is Chaing Khan. Chiang Khan has a beautiful, scenic setting – its main street, Chai Khong Road, is one long row of teak wood structured guesthouses, cafés and gift shops, but this culture-kissed, teak-coated town’s popularity has already spread from its pioneer

hi-so Bangkonian visitors to outwardlooking urban Thais and beyond. The riverside town has seen a small hike in visiting Western and Asian tourists over the past few years, and one must hope the sun never casts a dark shadow over the local postman ferrying a highly polished teak wood go-go pole through its main street – be quick, and the biggest pimple you’ll see in the town today are the ‘I Love Chiang Khan’ t-shirts and coffee mugs – wait too long, and you won’t see the wood through the Japanese, Russian and Cantonese tourists.

Turning east, the Mekong meanders to the far point of Thailand where it borders Laos, this region known as Issan, the first main town along this stretch is Nong Khai, the northern most border crossing is situated here. The Thai-Lao friendship bridge opened in 1995, it has given the town a much higher profile, with the Lao capital only 25km away, Nong Khai has become an important market for the exchange of Lao and Thai goods.

occurs here too, at the end of October, people from all around Thailand visit the river near Phon Phisai to witness a true phenomenon – the Naga Fireballs. Totally unexplained, great balls of fire rise up through the water and shoot into the air time and time again. A very eerie spectacle, there has been some debate amongst cynics that the whole thing is staged by the Tourism Authority of Thailand! Hardly– witness the spectacle for yourself.

One of Nong Khais most popular attractions is Sala Kaew Ku, the grounds of this unusual temple are filled with strange statues depicting scenes from Buddhist and Hindu lore. Following the Mekong east from Nong Khai you will arrive at Phu Thok a huge outcropping of rock rising abruptly from the plain at Bang Kan, a winding network of staircases and pathways, leads to the top, where there is a magnificent view of the surrounding area. Near the top there is a meditation temple that can only be reached by a small pathway that clings to the sheer cliff. One of the world’s most amazing phenomenons

Flowing south with stunning views of the Lao countryside on the other side of the river the river next arrives at Mukkdahan. Mukdahan is home to several minority groups from Laos. Once every year, in January, The Thai Mukdahan Cultural Heritage festival takes place. This event promotes the cultural heritage of the 8 ethnic groups in Mukdahan; the Thai Issan, Phu Thai, Thai Kha, Thai Kaso, Thai Ka Loeng, Thai Yo, Thai Saek and Thai Kula, and also promotes local handicrafts from this community. The Indochina Market, located in the centre of the town, is a famous trading center for local produced

goods like hand-woven matmee silk, the pha khao ma cloth and the Khit triangular pillow, and attracts customers from all over Issan. The Indochina Market is also the place to go to get products produced in countries like Laos, Vietnam, Cambodia and China. Prices are very low and bargaining a must. Ho Kaeo Mukdahan is a 65 meter high observation tower built in 1996 to honor the 50th anniversary celebration of the throne to his Majesty the King. Within the tower you can get a glimpse of the cultural heritage of Mukdahan. 1st floor has an arts and culture museum, and the 2nd floor shows the history and culture of the

52

8 ethnic tribes of Mukdahan. You can see ancient artifacts, old photographs and ethnic costumes. The 6th floor has a panorama observation deck with excellent views of Laos and the Mekong River, and the 7th floor has a silver Buddha image designated for each day of the week. The Mekong Catfish The Giant Mekong Catfish is restricted in its range to the Mekong River and its tributaries in Thailand, Laos, Vietnam and Cambodia. This highly endangered monster freshwater species is a strong contender for the largest freshwater

fish in the world. Commercial fishing for the Mekong Catfish in the Mekong River has now been banned in Thailand due to the highly endangered status that this fish holds. It is an extremely muscular freshwater monster fish with a sleek shark-like appearance and coloration ranging between silver and grey. This monster catfish species reaches lengths of over 4 meters and is found in some of the wildest and remote waters in Thailand. The Mekong drifts out of Thailand and travels through the Kingdom of Cambodia, through Vietnam and the famous Mekong Delta to finally disperse into the South China Sea, a true great among the great rivers of the world.

tower club at lebua breeze Fine Dining lebua Style words: Paul Eastland

I

t was with great anticipation that my wife and I got the invitation to visit and sample the gastronomical splendors at Breeze the world famous restaurant at Tower Club at Lebua, Bangkok. Breeze is homage to Asian cuisine, and its rising stature among connoisseurs. Located high above the Bangkok skyline on the 51st and 52nd floors of the Tower Club at Lebua. The restaurant is known as the “new face of Asian dining”, a stunning venue where design, cuisine and service for an evening unlike no other. With a sumptuous menu that remains true to its authentic Asian roots, while raising the bar for progressive presentation, Breeze breathes new life into ancient traditions, whisking the past into the present, and indeed

56

the future. The result is a testament to the chef’s respect for history and passion for freshness, flavor, and the aesthetics of Haute cuisine. After sipping a couple of well needed Mai Tai cocktails in the luxurious Executive lounge, we made our way over the elegant sky bridge, where it’s a must to have a camera on hand, as the photo opportunities here are a must, which can never be beaten. Seated at our table, with commanding views and an unforgettable sunset, we were presented with the 5 course “Chef’s tasting menu” by the very attentive staff, and well, what a menu it turned out to be. For a starter, we were presented with freshwater river prawns, which arrived accompanied by Ossetra caviar, shallot pancakes, bacon and coconut

Before dessert we decided to take a short break to try out some amazing signature cocktails. Madam chose the Ice series, this comprises freezing flavors in water at minus 19 Celsius to capture the true essence of ice, the more the ice melts the more flavorsome the cocktail becomes. This is done by an array of instruments and dry ice, which madam took great delight in making her own concoction. Truly amazing! Dessert comprised of lychee and yuza crumble, with meringue and sherbet foam. An exceptional dish to finish off this culinary masterpiece. Executive Chef Sam Pang, after enquiring about our experience, explained his philosophy on fine dining. After 25 years in the restaurant business, working in some of the world’s top hotels, he has found what he calls his perfection at Breeze. Here he oversees all aspects of the daily process and personally inspects and chooses only the finest ingredients available. His style is to cook in the traditional way, but using modern techniques,

which is shown in his own designed menu. Sheraton Grande, Sukhumvit, Bangkok

basil restaurant A Celebration Of The Senses words: Paul Eastland

F

or a special treat, the wife and I decided after hearing great reviews on Basil, the renowned authentic Thai restaurant at Sheraton Grande, Sukhumvit. Located right in the middle of one of the busiest tourist areas of Bangkok, directly across from the very popular Terminal 21 Shopping mall and adjacent to Asok BTS station. Basil is a Thai restaurant that serves the finest local cuisine in a captivating setting. Celebrating the bold flavors

58

of organic ingredients, Basil offers the essence of traditional dishes, infused with a fresh modern flair. On arrival at this sophisticated establishment, we were amazed at the sheer luxury that has been provided to make our dining experience one that will live in our memories for years to come. The décor throughout gives an ambience of exotic, flair. Surrounded by a myriad collection of antique Thai artifacts it could also pass as a fine arts museum.

Back to the modern era though as we were presented with our personal iPads to browse through the enormous menu on offer. For the starter we opted for “Miang Khum”, which is a traditional Thai starter comprising of chilies, limes, ginger, coconut and a peanut and palm sugar sauce, which is served wrapped in leaves. This was an extraordinary dish, with all the different tastes literally exploding in our mouths.

Eagerly anticipating our main course we chose a number of dishes as all our favorites were available so it was not so hard to choose, starting with the world renowned Green Curry this came with a twist, actual Angus Beef was used, needless to say the beef was so succulent it just melted in our mouths, next was the chef’s signature dish, Snow Fish Tom Yum, what an amazing variation of the much loved Tom Yum Gung this was, the Snowfish just married into the Tom Yum with perfection. The next two dishes are the wife and my favorites, Soft shell crabs, where an enormous plateful was delivered, which had me totally immersed and spoilt for choice, as was the wife with her baked Salmon fillet, which was by her own words remarkable. One more dish we had to try was a very strange sight on the menu, stir fried ostrich served with an assortment of mushrooms, the wife

looked a bit unsure, but after tasting, she’s an ostrich convert now. For dessert we chose Crème Brule, which arrived at our table presented perfectly with the correct texture and the taste only added to our already fond thoughts on this culinary extravaganza, to finish off we opted for homemade ice cream and sorbet to neutralize the palette. Head Chef Kesinee, who has been with hotel for 8 years arrived to seek our opinion, needless to say she wasn’t disappointed. She explained that she makes every effort to make the dining experience special for everybody, whilst she personally oversees every part of the many processes, including, choosing only the best ingredients, down to making sure every dish is served at the right temperature, her philosophy is that everybody has different tastes,

so she goes beyond the call of duty to make sure everything is perfect for everyone, no exceptions! Basil is one of a handful of restaurants that I have tried that can feel totally at home with the praise delivered on it. thong dee restaurant & bar words: Jason MacLean

T

hong Dee Restaurant & Bar is located on a quiet lane in the Kathu district of Phuket, just ten minutes away from Patong Beach and Central Festival Shopping Mall. This unique dining experience, tagged “The Hidden Pearl of Kathu,” cannot be missed during your next stay at any Phuket-based Resorts & Hotels.

60

Thong Dee Restaurant & Bar offers a variety of French, Italian, Scandinavian, Mediterranean and Thai cuisine. All dishes are served in both fine dining and old home cooking styles. Thong Dee Restaurant & Bar’s philosophy is like the old saying Carpe Diem, seize the day, we are all here on this paradise island and we should enjoy life to its

fullest, and food is one of life’s best fruits. The restaurant’s international dishes are made from genuine home cooking recipes with that extra care that only a loving mother can give. Our authentic Thai food is inspired from both north and south, and some dishes have that real spicy flavor, you can of course get a milder version if so desired.

Thong Dee Restaurant & Bar is homegrown; the restaurant is family-owned and operated. The Thai Head Chef, who specializes in both Northern & Southern Thai cuisine, trained under Michelin Star Chef André Nordström. The restaurant’s creator and Head Taster, with over 15 years of experience in the European restaurant community, is Swedish with South American roots. The restaurant is decorated with warm tones and stylish modern details. Jazzy Latin-inspired tunes and old classics are played throughout the restaurant, setting the perfect soundtrack to a delightful dining experience. There is a 2nd floor with a fully equipped bar, pool area, dartboard, and a private terrace. Guests are invited to bring their mobile devices if they want to play their own music, as this area’s sound system is ready for hookup. In that sense, Thong Dee Restaurant

& Bar is the perfect venue for an intimate night with friends. History The owners of Thong Dee Restaurant & Bar have always had a great passion for food, and have travelled together to France, Italy and Spain to experience the rich flavors each region can offer. When they decided to open their restaurant in the Kathu district, their main goal was to create an inviting place where guests could come for any occasion, and always feel relaxed, pampered, and like a member of their own family. The vision of Thong Dee Restaurant & Bar is that guests will be coming with families, for an old friends’ night, a first date, birthday party, or just those who crave for some good food with that extra special and caring touch. Thong Dee truly is a restaurant without pretensions, but with ambitions.

the larder Koh Samui

words: John Brinkley

O

ne of the delights of coming to Thailand is to dig out those restaurants that have something special about them. It may be the food, the service, the ambience; in fact any manner of things but the problem is what to do when you do find them. Our first instinct is to tell everyone how great the restaurant is

62

but then the doubts step in especially if it is a small restaurant …… what happens if there is no room for me next time I want to go? In many instances these restaurants become iconic secrets and can only be discovered when chatting with the locals, be they Thai or foreigner. So it was that I discovered one of Samui’s

best kept secrets whilst attending the Samui Regatta and was looking for some where special to dine with friends. So good was the food that I had to go back and share it with you. The Larder is a small restaurant located at the north end of Chaweng as you head off towards the airport. Easy to find it has both al fresco and air-conditioned and is one of those rarities where the chairs are so comfortable you will want to stay for a while. Light Jazz music welcomes you as you enter and are shown to your table by very efficient staff. The menu is eclectic with a selection of daily specials to further entice you. Described as “gastro pub but higher class” by the owners who joined me for dinner the choice is which dishes not to have rather than which one do I like which is so often the case in some restaurants.

I cheated and asked the owners to make recommendations as I just could not make up my mind. A good choice as it turned out and chatted about how the restaurant came in to being whilst sipping on a Signature Mojo from a jam jar, one of their little quirks that added to the dining experience. First up was Tuna Tarter tacos served on a slate plate with teriyaki Sauce and an avocado salsa. Flown in from Japan the Tuna was both fresh and firm with that beautiful taste that can only come from quality fish and blended well with the crisp tacos and slightly spicy avocado. There are 2 signature starters at The Larder with the other being their homemade Scotch Egg. The owners, Martin and Damian could also not choose which to recommend so

served me both and I was so glad that they did. Their pork sausage meat was of the highest quality, as are all their products, and sourced from a friend’s farm in Chang Mai, the location of which is a closely guarded secret. A crispy outside shell hid a succulent sausage meat that in turn was wrapped around a perfectly cooked egg with the yolk still runny…perfection. Served with asparagus and a slightly sweet pickled relish this dish is certainly for those that enjoy quality meat and seeing if they can identify the hints of spices that are added to the meat. Main course was to be the Loins Den, a lamb tenderloin seared to hold in the juices and served with the Larder’s unique black pudding croquettes. A slight caramelising of the meat lifted the flavours and allowed you to appreciate again the quality of the raw ingredients. No fancy sauces here, just good quality foods cooked well. The black pudding for the croquettes came from the same farm as the sausage meat and surprisingly did not overpower the lamb but instead added another layer of flavour to be enjoyed. All the courses were served with an Argentinian Malbec from Signos which provided and earthy component to the dishes without swamping them. This is a much underrated wine that compliments strong flavours and is very well priced as are all of the wines in the cellar.

Although feeling slightly full I can always find room for a dessert, especially when they are as appetizing as those at The Larder. The problem really is which to choose. After a degree of contemplation I decided on the Apple and Rhubarb crumble although looked wistfully at a the chocolate brownie that was served to the table adjacent. Served in its own ceramic dish the crumble was a delightful blend of slight tartness from the rhubarb accompanying the sweetness of the apple and a divine crumble topping all of which was served with an artisan ice cream produced on the island Over 80 per cent of the guests at The Larder are holiday makers, many of whom are returning guests returning time after time, with the others loyal locals who appreciate quality food at sensible prices. As their website says – no fuss, no fancy terms, no pretension… it’s just all quality.

by the air presents #bumblebeephuket words: Amy Bensema

o

n a recent humid day, I received an invitation from the By The Air group to join them at the Phuket Airpark. Located in the eastern part of Phuket Island, the Phuket Airpark is a private estate that hosts a lush, tropical airfield. Curious, I grabbed my camera and notebook and excitedly made my way to the destination. Upon arrival to the Phuket Airpark, I was met by the three founding members of the By The Air group and a young, charismatic pilot from Sweden complete with aviator sunglasses. With rising anticipation, I sat down for an animated chat with the By The Air group and discovered why I had been invited to the Phuket

Airpark. As storm clouds cleared from above, and the sunshine began to reappear from behind the clouds, I was introduced to the By The Air group’s new baby, affectionately nicknamed #bumblebeephuket. #bumblebeephuket is an AutoGyro Cavalon. The AutoGyro Cavalon is a German AutoGyro and is supplied as a complete ready-to-fly aircraft. The AutoGyro Cavalon was a RedDot Design Award Winner in 2012, and winner of the German Design Award in 2014. Without a doubt, it is a sleek, sexy little machine. #bumblebeephuket is yellow and black, hence the nickname, and can reach a maximum cruising speed of 160 kilometers per hour.

By The Air’s AutoGyro Cavalon is also quite compact measuring a length, width and height of 4.7m x 1.8m x 2.8m. Once I was briefed on the specifications of #bumblebeephuket, I walked over to the Phuket Airpark hangar with the members of the By The Air group and the pilot, who I found out was called Tim, to have a site inspection. By The Air’s AutoGyro Cavalon is cute; there is no doubt about that. Standing next to #bumblebeephuket in the hangar, admiring its sleekness, and noticing that there were no doors on the AutoGyro Cavalon I started to panic. Knowing that I was going up in a test flight, the only thing that kept crossing my mind was that I was going

to fall out! The pilot Tim, sensed my fear and started speaking to me about the safety standards of the aircraft and how I didn’t need to worry or be scared, and how once I was up in the air, I was going to be completely amazed. I smiled politely, crawled in and allowed myself to be buckled into the passenger seat. I listened intently as Tim explained to me how not to lose my camera, took a deep breath and closed my eyes as the engine was fired up, and the propeller started to rotate. And then, just as quick as a real life bumblebee, we were off. I didn’t open my eyes for at least two minutes,

and when I did, I was completely awe struck. I was soaring over Phuket’s eastern coast, and the only thing I could see was gorgeous turquoise water, islands, boats and a splattering of fishing shacks. The scenery was stunning; it was absolutely breathtaking to see Phuket from above. I giggled, and the pilot smiled and said, “I told you that you wouldn’t be scared.” Throughout the flight, Tim, the pilot, made me feel completely at ease. He answered all of my questions about each location we were soaring over, and engaged in normal conversation, too. It was refreshing to experience just

how knowledgeable he is about the AutoGyro Cavalon, and truth be told, I was a bit sad when we headed back to the landing field at the Phuket Airpark as I knew this unbelievable, perhaps once in a lifetime, experience was coming to an end. The AutoGyro Cavalon is housed at the Phuket Airpark, a public facility, so you are welcome to visit anytime. If you would like a personal tour of the airpark or of the AutoGyro Cavalon, please feel free to contact the By The Air group at +66 93 592 7558.

We are happy to sign-up any students who wish to become pilots with the Cavalon now. To get further details, please call 093-592-7558.

postcards from nan Thailand’s little capital of culture words: Ian Stewart

N

an’s geographical location, midway between Chiang Mai and Luang Prabang, means that the town absorbed the cultures of both regions over several hundred years. Last year, Nan became the town that many Thais wanted to visit thanks to a romantic novel by one of Thailand’s leading bankers, Banthoon Lamsam. His first novel

Sinehamonta Haeng Lanna was inspired by Nan’s ancient legend of the Lanna kingdom – indeed the title translates as The Seductive Spell of Lanna. The banker fell in love with Nan and even took over one of the town’s old wooden guesthouses, transforming it into the now-trendy Pukha Nanfa boutique hotel.

The atmosphere that inspired Banthoon to write his novel has

their “must-see” lists and tourist

to Nan. A local TAT official told me that, “In recent years, travel writers have come here to write about the town, and many artists have set up movements here, too. Banthoon’s book of course has been a catalyst. Since his novel came out, many people have put Nan on numbers have risen accordingly.”

Cultural attractions Many visitors arrive in Nan by plane and start their tours of the town in the city centre. But if you would like to follow in the royal footsteps of Their Majesties the King and Queen when they first visited Nan province back in 1958, then travel by road from Phrae as they did. We did too. From Phrae province, it took us about a one and a half hour drive to Wiang Sa, a small but peaceful district. The local people here are proud that they were the ones to welcome Their Majesties the King and Queen to the area almost 60 years ago. The old Wiang Sa District Office, where the royal couple stayed, has now been turned into a museum

Not far from the Wiang Sa Museum is another private museum Huern Chakkayan (House of Bicycles) where a large collections of historic bicycles are exhibited. Opened in 2007, the collection belongs to Mr. Supot Tengtrairat whose passion for the two-wheeled transportation inspired him to collect more than 150 historic examples, including one of the oldest bikes on offer that dates back to 1880 and came all the way from Germany. The museum is open from 09:00 – 11:00 and 12:00-14:00 hrs. Admission is free, but you do need to notify the owners in advance if you want to look round. (Tel: +66 (0) 5478 1359). Nan’s Old Quarter With a history that goes back to the 14th century, when the northern kingdom of Lanna was at its peak, you can expect that there is a lot to see in Nan. Many of the town’s historic attractions have been preserved or restored. A walk around the town can feel like a trip back in time.

The tram trip takes a 10-minute break at Wat Suan Tan where local guides give tours of the picturesque temple in both English and Thai. Another tram stop takes in the local Ban Phra Kert community museum, which exhibits valuable ancient artefacts; such as, Lanna-style wooden Buddha images and some of the everyday household items used in this historic district.

Tours take place twice daily at 10:30 and 15:30 hrs. at weekends and on public holidays and once a day at 15:30 on weekdays. If you are taking a group to Nan, it is possible to hire a whole tram for 28 people for 500 Baht.

I took time to visit other temples in Nan’s old town and went to enjoy the exquisitely sculptured golden Nagas at Wat Si Phan Ton. If you visit, do look out for the lovely sculptures that decorate the entrance of Ubosot building. I then stopped by the City Pillar which is revered by the local people of the town. This can be found in the compound of Wat Ming Mueang where the religious buildings and temples, are all rendered in white, which is unique in Thailand.

Nan is a heaven for history buffs and there is something to see around every corner. Culture vultures are coming from around the world. In fact, one guide we met on our tram tour is a young German girl, here on a two-month volunteer scheme. She told me how she loved chatting to tourists, Thai and international alike, about the town. She is just one of the people who have fallen under the enchanting spell of Nan, which has captured the hearts of everyone from bankers to artists, and writers to students. I for one have certainly fallen in love with the place and I know that I will be back soon.
