Abundant Montana is Montana’s local food consulting, media and marketing agency, specializing in communications strategies for purpose-driven food and farming businesses across the state, and the food and agriculture resource organizations supporting them. We do this by educating consumers about Montana’s local food, offering tailored marketing services for food and farming businesses, and acting as a hub for all things local food. Foundational to our work is a commitment to honoring and enhancing the integrity of Montana-made food by cultivating authentic and inclusive collaborations to build the demand for place-based food. Our team is made of farmers, ranchers, foodies, and dieticians from across Montana, dedicated to growing a robust, resilient, nutritious, and fair food system.
What you have in your hands is a reimagining of a local food resource that began in 1998. This Abundant Montana Local Food Guide started as the Abundant Montana Directory, a booklet published and updated every few years by the Alternative Energy Resources Organization (AERO). It listed local farms and ranches, farmers markets, and retailers, and included recipes, a seasonality guide, and an informal ride board to help producers move products across the state. That first directory listed 50 producers and 12 farmers markets. Twenty-four years later, this Guide lists almost 400 farms, ranches, and value-added producers, and close to 70 farmers markets, plus a host of restaurants and retailers. Montana has been a national leader in the local food movement for over 30 years, in great part due to the vision and tenacity of the folks listed in that first publication and those who produced it.

While equitable food access and food security have long been significant issues in Montana, particularly in rural and tribal communities, the Covid-19 pandemic revealed these issues to many Montanans for the first time. An estimated 1 in 10 Montanans struggle with hunger, and up to 1 in 4 children live in food insecure homes, meaning they lack consistent access to enough culturally relevant food to live an active, healthy life. Now more than ever, local food sources and community organizations play a critical role in providing resources to Montanans in need as conventional food sources become less accessible due to supply chain issues and increased demand. We are proud to tell the stories of a few of the community organizations bettering food systems, food access, and food security right where they live.

Food Access in the Flathead Land to Hand Montana works to build a strong local food system that fosters socially just ways of accessing food. In addition to connecting food insecure people with healthy food, they also invest in youth and community engagement so the whole community is building a more resilient food system together. Their food access programs include a produce prescription program (“Food Rx”), Double SNAP Dollars, school coins, and senior coupons. These programs allow residents who are on a budget to purchase locally grown fruits and vegetables at farmers markets throughout the Flathead Valley, while giving farmers full market value for their products.

Believing that education is key to a strong and just food system, Land to Hand MT partners with the Columbia Falls school district teaching kids to grow, cook, and eat locally grown fruits and vegetables through in-school curriculum, after-school programming, summer camps, and procurement. Their Free the Seeds program offers free, locally sourced seeds to community growers through the Columbia Falls library. In addition they host an annual community event the first Saturday of March at Flathead Valley Community College where free workshops, seeds, and resources are shared so everyone can access “Real Seeds, Real Food, and Real Skills.” Learn more at landtohandmt.org

Eradicating Hunger in Big Horn County
Covering a vast area, the organization is one of the few food resources in the county, which has felt a dramatic increase in demand for food access throughout the Covid-19 pandemic. Helping Hands served 564 households in March 2022, compared to the 70 households they served in March 2019. Since the pandemic, household visits for all services have increased and the organization is working tirelessly to keep up with the added toll of high food costs and supply chain disruptions. “While our current building is at capacity, we look forward to being able to grow a healthy, not hungry, community,” says Elle Ross, Executive Director. Helping Hands Food Bank is a nonprofit organization working towards eradicating hunger in Big Horn County by increasing food access and improving food quality, education, and sovereignty for all. Customers can receive a standard emergency food box, monthly Senior Commodity Food Program pick up, and holiday dinner baskets at Thanksgiving and Christmas. In order to provide equitable access to fresh and local foods, the organization also incorporates local purchasing in its budget, provides education on traditional foods, accepts donations from food producers in the community, and has on-site gardens so customers can take home fresh produce each visit.

South Park Gardeners’ Market
Making the Gardeners’ Market an attractive social meeting place to celebrate health and nutrition is a key component of the Market’s success. “We provide an opportunity for customers to engage with community partners, listen to live music, and enjoy scheduled events such as Senior Day, National Farmers’ Market Week, and Active Transportation Day to make the market feel more welcoming,” says Eden Sowards, a member of the Healthy By Design Coalition. “It’s a destination, not only for fresh produce, but to connect with neighbors, vendors, and other valuable aspects of our community.”

Now in its 12th season, Healthy By Design Gardeners’ Market brings fresh, local, and affordable fruits and vegetables to the residents of Billing’s south side triangle, which is classified as a food desert (an urban area in which it is difficult to buy affordable or good-quality fresh food). The Market, located in South Park, is a partnership between Healthy by Design and Billings Parks, Recreation, and Public Lands. Vendors include both farmers and backyard growers, and products on average travel less than 20 miles to get to the market. In 2021, 4 out of 10 of the Market’s customers were from the South Side, and a third were over 55 years of age.

Community Harvest
This initiative grew from the “Community Carrot” project, spearheaded by Gallatin Valley Botanical (GVB) during the pandemic in 2020. In collaboration with Happel Family Farm, Gallatin Valley Food Bank, Gallatin Valley Land Trust, and others, GVB arranged to grow carrots for vulnerable members of the community. Over 200 volunteers donated 1,130 hours to grow, harvest, clean, and distribute the carrots. Ultimately, more than 11,000 pounds of carrots were donated to Gallatin Valley Food Bank—roughly 725 pounds of carrots per week from November 2020-February 2021. In 2022, the Community Harvest program will offer a range of opportunities: from weekly volunteer shifts to scheduled work parties, and “when the time is ripe,” gleaning opportunities.

Countrywide, around 85 percent of beef is processed by just four companies. Despite beef being Montana’s #1 commodity, meat processors are few and far between in the Big Sky State, even as demand continues to grow.

Seeking to grow local processing capacity in Montana, the Montana Farmers Union has taken two routes to improve local access. First, the Montana Farmers Union has committed to building the necessary infrastructure for local meat processing along the Hi-Line. Supporting the Montana Premium Processing Co-op, they purchased a mobile harvesting unit and are building out a meat processing plant in Havre. This new facility is a way to help connect producers to consumers and is initially slated to focus on beef, though it also has the ability to process hogs, sheep, and bison. The member-controlled processing plant is tailored to the needs of Montana producers. By putting producers in control and cutting out the middleman of far away facilities, ranchers keep a larger share of the value of their livestock and are able to distribute the meat within their own communities.
The second project is a partnership between the Montana Farmers Union and Montana State University-Northern. Together, these two groups are developing a curriculum that teaches meat processing from harvest to retail while utilizing the new facilities. “[It’s] going to train the butchers we’re going to need if we open more butcher shops. It’s going to train the inspectors that we’re going to need if we expand our processing in the state. [And] It’s going to train entrepreneurs that might open up a butcher shop in your community,” said Walter Schweitzer, president of the Montana Farmers Union, during an interview with Montana Ag Network. MSU-Northern students who enroll in the program can earn anywhere from a one-year certificate to a bachelor’s degree with a focus on business management and marketing. Courses will provide an expedited way for students to join the meat processing industry. Both of these steps, spearheaded by the Montana Farmers Union, are contributing a vital asset to the state: building a stronger and more connected local economy while making sure Montana raised meat is available in our communities.

Farmer-owned coalition of growers in Western Montana supply a full plate of locally grown products.
While Montana’s agriculture is lauded nationally for its production and export of beef and wheat, you might be surprised to learn that, increasingly, farmers are growing (and growing a market for) a wide variety of vegetables, fruits, and grains for local sale and consumption. In western Montana’s lush and fertile Flathead, Jocko, Mission, and Bitterroot Valleys, a farmerowned cooperative of around 100 producers is providing an abundance of locally-grown fresh and frozen fruits and vegetables, milk, cheese, eggs, lentils, honey, and meat to regional markets. Western Montana Growers Co-op (WMGC), which began operations in early 2003, helps member-farmers do what they do best–produce great local food–while the co-op takes care of marketing and distribution. “WMGC’s sales and distribution network has allowed us to grow and reach customers far beyond what we could do on our own,” said Ian Barry of Moiese’s Lowdown Farm. “We are able to spend more time on the farm growing produce while our products are packed and delivered all over the state.” By improving the distribution of local food around Montana, with over 500 local CSA shares each week, as well as deliveries to nearly 200 grocery store departments and 150 restaurants, WMGC is reducing the need for food to be shipped in from far off places. This shortened path from farm to fork helps local farmers be paid fair prices, which allows them to pay their employees fair wages, among other benefits.

There are few areas of Montana WMGC doesn’t touch. With its own small fleet of refrigerated trucks and strong partnerships with distributors in the region, produce grown in western Montana is delivered to the people who live in the pine scented hills of Darby, the golden fields of Great Falls, and the rolling prairie of Billings, as well as the hungry markets of the Northwest, including northern Idaho, eastern Washington, and coastal Oregon. “Montanans have a high degree of pride in our state. The market here is extremely supportive of locally grown or made food, and buyers consistently demand that the stores and restaurants where they spend their money are in turn spending that money with local producers,” said Dave Prather, WMGC’s general manager. So although Montana agriculture may best be known for its beef and grain, the reality is the treasure state is a trove of local diversity. And with WMGC’s bounty spread far and wide, the next time you buy groceries or sit down at a local restaurant, you could be eating local food without even knowing it.

Locally-made marinara sauce featuring Montana-grown produce will be available to all K-12 districts this upcoming school year thanks to an innovative collaboration between Mission West Community Development Partners, the Montana Office of Public Instruction (OPI), and the Northwest Food Hub Network. Montana Marinara is the pilot product in this partnership. Over the last year, Mission West structured an in-state processing agreement with the USDA to divert USDA food products to the Mission Mountain Food Enterprise Center, a USDA and FDA-inspected food processing facility. To create a veggie-packed marinara sauce for schools, OPI will divert canned tomatoes from USDA Foods to the processing facility where they will be combined with Montana-grown carrots, onions, squash, and safflower oil, all sourced through the NW Food Hub Network. The final product will be delivered to schools statewide through OPI’s existing food distribution network. This collaboration will make local food more accessible and affordable for Montana schools.
Producing a food product with a high acceptance rate from children and teenagers is no easy feat. In December 2021, Mission West processed a test run of the product and samples were sent to all school districts in Montana for feedback. The product received overwhelmingly positive reviews from food service directors, staff, and students. In a survey conducted with high school taste testers, 89% of students said they would eat it again. In addition to giving the taste their seal of approval, students also appreciated that Montana Marinara was locally produced. “I love that we have the option for in-state food that connects us to our communities,” one high schooler commented. Schools across the state have already ordered over 1,500 cases (about 30,000 lbs) of Montana Marinara for the 2022-23 school year. “Utilizing this product is a sustainable way for us to offer more local foods while providing an educational experience in the cafeteria about what foods are grown right here in Montana,” stated Brittany Moats, Food Service Director for Belgrade School District. REIMAGINING FARM LAND CONSERVATION From t-shirt slogan to nonprofit organization, Save Farmland is introducing a new form of land conservation that’s focused on strengthening the local food system. Scot Chisholm spends a lot of time thinking about farmland these days. After transitioning his CEO duties at Classy, the software company he founded in 2011 that helps nonprofits raise money, Chisholm turned his attention towards the nation’s farmland crisis. His new nonprofit, Save Farmland, is hoping to balance population growth with agricultural land, starting in Whitefish, Montana. Recently, Abundant Montana sat down with Scot to get a better sense of what he’s up to, and to see how Save Farmland might succeed where others have struggled in the past. What ‘s the inspiration behind Save Farmland? Well, to be honest, Save Farmland started as a slogan on a t-shirt to start a conversation about the farming crisis here in Montana and beyond. When we first moved to Flathead Valley, I’d ask people what the area’s biggest challenges were; in part, because we were looking to support a worthy cause through our new business, Haskill Creek Farms, a modern mercantile and herbal dispensary. The answer I got back almost every time was population growth and rapid development. When I dug a little deeper, people were upset seeing our farm and ranchland disappear to housing developments. Not only was it changing the landscape and natural beauty, but it was eroding our local food system. So, are developers the ones in your crosshairs? Well, growth is going to happen. And we have a housing shortage in Whitefish, so it’s certainly not all bad. We realized quickly that fighting developers for every plot of land would never work as a model. But, finding and protecting strategic pieces of land that can act as a platform for the community’s food system certainly could. You still have to compete with developers, but you don’t spread yourself too thin. You find that perfect parcel that’s within close proximity to a population center, and you give everything you’ve got to acquire it and keep it agricultural. In many places around the country this type of land is completely gone, or out of reach financially. In Montana, we still have a shot. How is this different from what other conservation nonprofits are already doing? Over the last several years I’ve been fortunate to work with the Nature Conservancy as part of their leadership council, and it helped me understand their model better, which has now been replicated in one form or another by others across the country. But this model has some gaps, particularly at a local level. Most local conservation nonprofits acquire land through donations from generous families who want to see it protected, usually for environmental reasons. But this approach is largely reactive, and you end up with protected land that’s scattered all over the place. So we thought, what if you could be a lot more intentional with your land strategy; weave your purchases together within a community so that each one built on the next and had real intent behind it? And rather than looking at things solely through an environmental lens, what if our priority was a thriving local food system? What would that organization look like?

We learned that you donated 40 acres to Save Farmland to get things started. Tell us about that and what the next steps are for the organization. Yes, we acquired 40 acres of farmland less than five minutes from downtown Whitefish, and more recently donated it to Save Farmland when the 501(c)3 was up and running. In our mind, this 40 acres kicks off the entire model. For the last six months we’ve been working with the community and local nonprofits to shape the vision for the land, which we’ll officially roll out this summer. But for now, I can tell you that at its core, this 40 acres will become a “hub” of sorts for the farming community, where we incubate new farmers and support existing ones in various ways. We were also inspired by the YMCA model, where their facilities go beyond their core beneficiary and serve the entire community. That’s kind of our goal here too; the land will support the farming community and strengthen our food system, but it can also be a place where the broader community comes for things like gardening and cooking classes, a community garden, or a farmers market and CSA pick up. We think that bridging the gap between growers and the community is an important piece of the overall equation in keeping a food system healthy over time. Food Sovereignty Recovering cultural knowledge to heal land, relationships, and community
La Via Campesina, an international peasant’s movement that first coined the term at the 1996 World Food Summit, defines food sovereignty as “the right of peoples to healthy and culturally appropriate food produced through sustainable methods and their right to define their own food and agriculture systems.” Here are examples of food sovereignty efforts in action. ANCESTRAL SEED BUNDLES AND CULTURAL KNOWLEDGE RECOVERY:

On campus and on nearby land, BNSFI is developing ancestral seed propagation gardens, stewarded by Fellows from different Tribal Nations, to build an ancestral seed bank, promote cultural knowledge recovery, and ultimately develop a shared seed cooperative. GROWING HEALTH TEA: FAST BLACKFEET
In 2021 ten Blackfeet community members planted tea gardens to grow herbs important to Blackfeet traditional herbal tea medicine. Danielle Antelope, Executive Director of the non-profit FAST Blackfeet (Food Access and Sustainability Team) which runs the Growing Health Program, says the project has yielded far more than traditional teas. Growing, harvesting, and blending the teas helped community members regain connection to their plant relatives. The gardens also sparked conversations and connection between elders and children. This year more community members are asking for gardens and adding vegetables to the mix. In 2022, Growing Health is starting ten new tea gardens with new growers, and the seasoned tea growers will learn how to sustainably forage herbs in the wild, rebuilding traditional wildcrafting skills. Currently, tea gardeners sell their tea blends to the FAST Blackfeet O’yo’p’ Food Pantry, which includes the teas in community food boxes. In the planning is a Food Resource Center, where Native foods, including teas, will be sold and distributed so everyone can access them for their health and wellness. Vilicus is Latin and translates to “stewards of the land”. We chose this name because stewardship is at the heart of everything we do. We believe farming and nature can co-exist. Vilicus Farms Community Supported Stewardship Agriculture (CSSA) The Vilicus Farms CSSA program adds a twist to the successful history of Community Supported Agriculture (CSA). In a traditional CSA model, people buy a share of a farmer’s crop harvest in advance which supports a farmer prior to the growing season. The Vilicus Farms CSSA offers shares in our land stewardship work and supports our farm’s on-going investment in building soil health, fertility and biodiversity on a large scale.

INGREDIENTS

½ cup cornmeal 1 ½ cups all purpose flour ¼ cup sugar 2 tsp baking powder ¼ tsp baking soda 1 tsp salt 2 cups shredded zucchini, drained 1 cup buttermilk 2 eggs, at room temperature ¼ cup butter, unsalted 1 cup cheddar cheese, finely shredded 3 Tbsp fresh herbs, (we used chives & parsley)
INSTRUCTIONS
Preheat the oven to 350°F. Melt ¼ cup butter over medium heat in a 10-inch cast iron skillet and set aside. In a large bowl add cornmeal, flour, sugar, baking powder, baking soda, and salt. Mix well. To the dry ingredients, add the shredded zucchini, buttermilk, eggs, and the butter from the skillet. Stir until just combined. Gently fold the cheddar cheese and herbs into the mixture. Grease the sides of the skillet using any butter remaining in the pan. Pour the batter into your skillet and spread evenly. Bake for 30-35 minutes until golden and a toothpick inserted into the center comes out clean.

INSTRUCTIONS
Heat about half a tablespoon of olive oil in a skillet over medium heat. Add the corn and green onions and toss, coating them in the olive oil. Season the mixture with a pinch of salt and pepper. Cook, stirring occasionally, for about 5 minutes or until the corn is cooked but still crisp and juicy. While the corn is cooking add all the salad dressing ingredients to a small bowl and whisk until well combined. Taste and adjust salt and pepper to your preference. In a large bowl, mix together the snap peas and corn. Drizzle half of the dressing over the salad and toss to coat evenly. Taste and add more dressing if desired. Top with fresh feta cheese and enjoy!

Chai Spiced Apple Galette Servings: 6 Vegetarian
GALETTE INGREDIENTS
INSTRUCTIONS
1 cup unbleached all-purpose flour
To prepare the dough, mix the flour, ½ tsp sugar, and 1/8 tsp salt in a large bowl. Add 2 Tbsp of the just-softened butter and blend with a mixer until the dough looks like coarse cornmeal. Add the remaining 4 Tbsp of butter and continue mixing until the largest pieces are pea-sized.
6 Tbsp just softened butter cut into ½-inch pieces ½ tsp sugar plus 2 Tbsp, divided 1/8 tsp salt 3 ½ Tbsp chilled water 5-6 firm apples such as granny smith (about 2 lbs) 2 Tbsp melted butter CHAI GLAZE
3 chai tea bags 1 ½ cups water 1 cup granulated sugar
Slowly add in water 1 Tbsp at a time and mix. Keep adding more water until the dough just holds together. Knead with your hands a few times to make sure there are no large dry patches. Keep working the dough until it can be rolled into a ball. Flatten it into a 4-inch thick disk and refrigerate for at least an hour or overnight. Preheat oven to 400°F. Let prepared pie dough soften until it becomes malleable but is still chilled. Dust a

surface lightly with flour and roll out your dough into a 14-inch circle. You want it about 1/8-inch thick. Place your rolled-out dough onto a lightly-greased baking pan and put it back into the fridge to keep it chilled while you prepare your apples. Peel, core, and slice your apples into ¼-inch slices. Put your apple scraps aside to use for the glaze. Starting about 2 inches from the edge of the dough, lay your apple slices in a ring. Overlap them slightly. Continue working your way inward, using smaller apple slices at the center. Fold the dough edges over the apple slices and crimp to seal. Brush melted butter over the apples and the dough edges. Sprinkle the whole tart with 2 Tbsp of sugar.
Bake in the oven for approximately 35-40 minutes, or until the edges are a true golden brown, rotating every 15 minutes. GLAZE INSTRUCTIONS
Bring 1 ½ cups of water to a boil in a medium pot. Remove from heat and add the chai tea bags. Cover and steep for 10 minutes. Remove the tea bags and stir in the sugar and some of your reserved apple peels. Bring mixture to a boil over medium-high heat. Reduce heat to low and simmer, stirring occasionally, for 5 minutes, or until sugar has completely dissolved. Brush or drizzle over the top of your warm galette. Serve as is or top with vanilla ice cream and enjoy!

Divide the coriander seeds, black peppercorns, and mustard seeds evenly among your jars or glass containers. Add in the garlic, dill, and sliced serrano peppers if using. Pack your sliced vegetables into the jars. In a medium saucepan, add vinegar, water, salt, and sugar. Bring the mixture to a simmer over medium heat and stir until sugar and salt are fully dissolved. Carefully pour the hot brine over the vegetables, making sure all vegetables are submerged, adding a bit more water or vinegar if needed. Seal well and shake to combine. Allow the jars to cool on the counter for an hour or two before putting them in the fridge. Pickles will be ready to eat after about 8-10 hours, but will taste best in a few days. They will keep in the fridge for 2-3 weeks.
Roasted Carrot and Lentil Salad Servings: 4 Gluten Free, Vegetarian

Alternatively, add ingredients to a jar, close the lid tightly, and shake vigorously until well mixed. When your carrots are done cooking, allow them to cool for about 10 minutes. In a large bowl, add the cooked lentils, fresh greens, and half of the dressing and stir to coat. Taste and season with salt and pepper as needed. Layer the roasted carrots on top and add the feta or goat cheese. Serve warm or cold, with the remaining dressing on the side.

Servings: 6 Gluten Free INGREDIENTS
INSTRUCTIONS
1 lb ground bison
Preheat the oven to 400°F.
15 oz can tomato sauce, low sodium
Heat skillet over medium-high heat. Add the ground bison to the pan and break up the meat. Cook until browned, about 6 minutes.
1 small onion or wild onion, minced 1 tsp garlic powder 1 tsp dried basil 1 tsp dried oregano 1 tsp salt ½ tsp ground black pepper 1 tsp olive oil 1 large butternut squash, peeled and cut into ½-inch slices ¾ cup mozzarella cheese, shredded (optional)
Stir in the tomato sauce, onion, garlic, basil, oregano, salt, and pepper. Cover with a lid and turn the heat down to low. Let the sauce simmer for about 10 minutes. Assemble the lasagna in a 7x11 inch baking dish. Coat the bottom of the dish with oil. Add the butternut squash slices and meat sauce in alternating layers. Assemble layers until all the ingredients are used, finishing with meat sauce on top. Optional: top with mozzarella. Bake for about 50 minutes with foil on top, or until the squash is soft. Remove foil and cook for another 5-10 minutes until the cheese is bubbly and golden.

2 lbs small yellow or red potatoes 3 Tbsp olive oil ½ tsp garlic powder ½ tsp onion powder 1 Tbsp salt + more to season R E D P E P P E R TA H I N I
1 cup roasted red peppers, drained Servings: 4 Gluten Free, Dairy Free, Vegetarian, Vegan INGREDIENTS
1 medium butternut squash (about 2 ½ - 3 lbs) 1 Tbsp olive oil 3 medium shallots, diced 3 cloves garlic, minced 2 ½ cups low-sodium broth 2 tsp curry powder Pinch of nutmeg Pinch of red pepper flakes (optional) 14 oz can of light coconut milk 2 Tbsp lime juice 1 Tbsp maple syrup Salt and pepper to taste Pepitas and cilantro for topping
INSTRUCTIONS
Peel and dice your butternut squash into about 1-inch chunks. Heat a large stock pot or dutch oven over medium heat. Add in oil, shallots, and garlic and cook for 1-2 minutes. Add diced butternut squash and curry powder, and a pinch of nutmeg, red pepper flakes, salt, and pepper. Stir well and cover. Allow to cook for 3 minutes, stirring occasionally. Add in the broth and scrape up any browned bits on the bottom. Cover and simmer on mediumlow heat for 25 minutes or until the squash is easily smashed with a fork. Turn off the heat and stir in the coconut milk and lime juice. Use an immersion blender or transfer the soup to a blender and puree until smooth and creamy.

Rinse and clean your potatoes. Place them in a large pot and add enough cold water to cover all the potatoes by about 1 inch. Add 1 Tbsp of salt to the pot. Bring the pot to a boil,

then reduce to a simmer for about 20 minutes or until your potatoes are very easily pierced by a fork. While the potatoes are boiling, preheat your oven to 425°F. Once your potatoes are easily pierced, drain and transfer them to a large greased baking sheet. Let cool for a few minutes. Once cool enough to handle, use a potato masher or mug to gently smash each potato until they are about a ½- inch thick. Drizzle the potatoes with the olive oil, garlic powder, onion powder, and season with salt and pepper. Lightly toss with your hands to evenly distribute (it’s okay if some of the potatoes break when doing this). Arrange the potatoes in a single layer and transfer the baking sheet to the oven. Bake for 25-35 minutes, or until the potatoes are crisp and golden. While the potatoes are baking, prepare the sauce. Add all the sauce ingredients to a food processor or blender and blend until smooth and creamy.
Add the soup back to the pot, stir in the maple syrup, and warm over medium-low. Taste and adjust seasonings to your liking. Serve with an extra drizzle of coconut milk or yogurt, and top with pepitas and cilantro. 67

1 ½ oz or 3 Tbsp vodka (omit the vodka for a mocktail) 1 ½ Tbsp rhubarb simple syrup 2 Tbsp lemon juice
Asparagus Carbonara Servings: 3 Vegetarian INGREDIENTS
2 Tbsp olive oil 1 bunch asparagus (about ¾ lbs), sliced into ½-inch pieces 2 shallots, minced 12 oz spaghetti or fettuccine 4 large eggs, yolks only 1 cup fresh parmesan, shredded ¾ cup reserved pasta water ½ Tbsp salt 1-2 Tbsp lemon juice 1 tsp lemon zest (optional) INSTRUCTIONS
Heat a large skillet over medium-high heat and add 2 Tbsp olive oil. Add shallots to the hot pan and cook for about 2 minutes. Add in sliced asparagus and toss with the oil and shallots. Continue cooking for another 3 minutes or until the asparagus is a bright green. It should be slightly tender but still crisp. Remove from heat and set pan aside.

To a shaker or mason jar, add ice and all cocktail ingredients except for the soda water. Put on the lid and shake vigorously.
Bring a large pot of water to a boil. Stir in 1 Tbsp salt and add 12 oz of pasta. Cook according to the package instructions for al dente noodles. Make sure to reserve about a cup of the pasta water before draining. You will need the starchy water to make your sauce! While your pasta is cooking, add 4 egg yolks to a medium bowl. Mix yolks and add in 1 cup of fresh shredded parmesan cheese. Sprinkle in some fresh cracked pepper. This mixture will appear thick. Immediately after the noodles are done cooking, add them to the pan with the asparagus and shallots. Working quickly, add in ¼ cup of the reserved pasta water, the egg mixture, 1 Tbsp lemon juice, and 1 tsp lemon zest. Mix vigorously until the noodles are coated and the sauce is smooth and glossy. Add more reserved pasta water 1 Tbsp at a time to loosen your sauce as needed to achieve your desired consistency. Top your pasta with extra parmesan and a sprinkle of red pepper flakes. Serve immediately and enjoy!

RHUBARB SIMPLE SYRUP
1 lb fresh rhubarb 2 ½ cups water ¾ cup sugar INSTRUCTIONS
Remove leaves from rhubarb and trim the ends. Chop rhubarb into ½-inch pieces. Add rhubarb slices to a saucepan and cover with 2 ½ cups of water. Bring to a boil then reduce to a simmer. Let the rhubarb simmer for 15 minutes or until it is broken down into a pulp. Remove the pot from heat. Use a fine mesh strainer to separate the rhubarb pulp from the liquid. Transfer the liquid into a clean pot and compost the rhubarb pulp. Add a ¾ cup of sugar to the liquid and simmer for 3-5 minutes, or until the sugar has dissolved. Taste your syrup and adjust sugar to your preference. Let the simple syrup cool to at least room temperature before using. Once cooled, store it in an airtight container in the fridge for up to two weeks.
