B

orn-and-bred Michigander, Sissy Yellen, is a professional chef who spends her time in the kitchen at Tam O’Shanter Country Club or cooking for private parties — and despite the pressure of hot ovens and mouths to feed, she’s all about simple beauty and chic style.

“Aesthetics are such a huge part of my life. It runs through every single hobby I have: food, home styling, fashion, travel,” Yellen says. “It’s in my blood.” She’s devoted to creating gorgeously presented, delicious dishes to “delight” her diners while she’s in the kitchen, but even when Yellen is off the clock, she can’t stop trying to make the world around her more beautiful. JP: What drew you to become a chef? SY: I started in the kitchen when I was 16. I began by following recipes, and I quickly became comfortable enough to begin experimenting. I loved it and knew I wanted to go to culinary school someday. My overall cooking philosophy is: I want to make people happy and content. It’s so rewarding. My favorite dishes to cook change constantly, but generally I like to serve people meals the average person doesn’t have the patience or skill to master at home. That might be fresh pasta — which is really simple, but for some reason people don’t take the time to learn — or dishes like chocolate soufflé, which might intimidate some. JP: Presentation of the food is important to you, too. SY: The most important. I can’t remember the last time I made even a quick meal for myself or my husband without presenting it in some special way. I love clean, simple presentations, like a white backdrop that lets the food be the star. I’m also drawn to rustic details, which make people feel cozy. I really enjoy filling a space with personality and style. Whether it’s my husband’s office or the kitchen at work, I just can’t resist the urge to make things look a little better. has. With food, I can’t pass a food cart or a restaurant without checking it out. But I really love going to grocery stores while traveling, because they have items I’ve never heard of. I traveled to Israel a few years ago and I’m still enamored with their pita bread — so fluffy and delicious and fresh. Unbelievable. I ate at least one chicken shawarma every day I was there. When I visited Montauk last year, everyone said I had to try an East Coast lobster roll. I loved it but thought it could be better, so I put my own spin on it (see recipe on next page). I like copying things but injecting them with my own style. JP: How do you describe that personal style when it comes to fashion? SY: My style usually has one common denominator that’s exaggerated. Sometimes it’s funky, because I’m drawn to things that are interesting, beautiful and maybe even bizarre. Sometimes I go simple and keep everything super sleek. With jewelry, I’ve always been drawn to everyday functional pieces like beautiful watches. And I’ve always loved costume jewelry, but as I get older I’m becoming more interested in fine jewelry and the quality of those pieces. JP: You were married in 2016. Since you’re enamored with style and fashion, was the planning easy?

JP: What’s your greatest source of inspiration? SY: Travel — for both food and style. At the country club we work like wild from April to October, and then it’s kind of quiet for the rest of the year, so I’m very lucky to spend a lot of time traveling. Being in a professional kitchen is labor-intensive and emotional, so taking breaks is important. I love to buy things for my wardrobe or home when I’m traveling, because I love having stuff that no one else

SY: Actually, I was always questioning my choices during the planning process, which I’ve never really done before. That pressure hit me hard. I’d like to say it wasn’t overly simple, but I did go for a classic look with some slightly different elements. JP: Looking ahead, what are your career goals? SY: I hope this year brings more opportunity to use my skills to help people. I want to get more involved in teaching people my age — maybe who never had time to learn — how to slow down and cook a delicious meal.

Lobster Rolls by Sissy Yellen

INGREDIENTS

DIRECTIONS

4 8 oz. lobster tails

Begin by filling a large stock pot with water. Add 1 cup of white wine and a generous pinch of kosher salt. Bring to a simmer. While waiting for poaching liquid to simmer, prepare lobsters. To remove the meat, hold lobster firmly from beneath. Using kitchen shears, cut along the center of the shell until you reach the fanned part of the tail. Using your thumbs, gently pry outer shell to the side. You should hear the shell crack.

(fresh or frozen) 1 cup white wine 1/2 cup mayonnaise 1/2 cup sour cream 1 lemon, cut in wedges 2 tbsp lemon zest 1 tbsp rice wine vinegar 1/2 tsp kosher salt 1/8 tsp fresh cracked pepper 1 bunch fresh chives, chopped

Slide the meat out and set on top of shell. The meat should still be connected at the end of the tail. Rinse gently under cold water if needed, to remove any grit or discoloration. **Keep shell on while poaching; this adds extra flavor to poaching liquid** Place lobster tails in poaching liquid once it comes to a simmer. Start checking the meat after 3-4 minutes. Remove from liquid when meat is firm to touch, and shells are bright red. Set aside and allow to cool in refrigeration for at least 30 minutes. Prepare dressing by adding mayonnaise, sour cream, and rice wine vinegar in a bowl. Whisk until smooth. Fold in lemon zest, 1/2 tsp kosher salt, and 1/8 tsp fresh cracked pepper. Once cooled, remove lobster from shell and dice into large pieces. Fold into dressing.

**Lobster salad can be kept up to 24 hours, covered and refrigerated.**

4 servings – 1 hour

Trim edges of challah and cut into 4-6 large “rolls” (about 3 inches wide). Slice halfway down the middle of each roll, and fill with lobster salad. Garnish with chives, and serve with lemon wedges. 13

CUBA GETTING THERE JUST GOT A WHOLE LOT EASIER.

Due to decades of economic embargo and tense political relations, it’s natural for Americans to feel daunted by the thought of traveling to Cuba. But the reality is that the paperwork required for entry is minimal, the Cuban people are extremely welcoming of all tourists, and, with proper planning, it’s quite easy to enjoy Havana and beyond with the same sort of make-your-own-schedule freedom you enjoy elsewhere. Here’s how: 36

and there’s been a culinary revolution exploding ever since. The leader of the pack is La Guarida (laguarida.com), whose rooftop bars and historic dining rooms were made famous in the film Strawberry and Chocolate. There’s also creative farm-to-table cuisine at Ivan Chef Justo; the Swedish-meetsLatin American style of Casa Miglis (casamiglis.com), which has a sweet bar; and 304 O’Reilly. Make reservations before you leave for Cuba, since a working internet or phone connection is hard to come by for tourists.

Many US airlines fly straight to Cuba now. The hour-long American Airlines flight from Miami to Havana is just $120, and AA also flies straight from Los Angeles for about $500. There are plenty of flights into other Cuban cities as well. Getting a visa is surprisingly easy. Just buy one for $85 from Cuba Visa Services (cubavisaservices.com), and don’t forget to get it stamped before hopping on your leg to Cuba. Much ado is made about the official reasons that Americans are allowed to visit Cuba, which range from religious and family reasons to business research and “support of the Cuban people,” also known as the people-to-people visa. No one seems to care which one you pick, though people-topeople is the most broad and therefore popular category.

EASY ESCAPES Once you’ve seen a show at the Cabaret Tropicana, sipped on daiquiris with Ernest Hemingway’s statue at El Floridita, and ridden around town in a convertible 1950s Chevy, escape Havana to explore the countryside. An easy half-day is to Cojimar, the fishing village east of Havana where Hemingway used to dock his boat, Pilar. There’s a quaint fort there, numerous shops with cheaper prices than Havana, and the famous author’s favorite table at La Terraza, where a trio will sing your favorite songs as you sip on mojitos and eat fish escabeche. If you’re hungry, try Café Ajiaco (ajiacocafe.com), one of the country’s best restaurants, home to an amazing taro soup.

WHERE TO STAY Located along the Prado that separates the old town (Habana Vieja) from downtown (Centro) are the Hotel Plaza Havana (hotelplazacuba.com) the Hotel Inglaterra (hotelinglaterracuba.com), and the Hotel Saratoga, which was rebuilt in 2005 with a rooftop pool overlooking the Congress building. Located a bit further away but closer to the waves-splattered Malecon are the famous Hotel Nacional (hotelnacionaldecuba.com)— worth a visit for drinks and music whether you stay there or not— and the Melia Cohiba (melia.com), a full resort experience.

For a full-day experience, hire a car and guide from taxivinalescuba.com and head west to the UNESCO-protected tobacco-growing region of Vinales, a quaint town of pastelcolored stucco where amazing limestone mogotes rise steeply from the dark red soil. Explore caves, dine on farm-fresh food at Ecologica, get a cigar rolled for you, and grab a Cristal Cerveza while taking in the view from Hotel Los Jazmines.

For travelers who are more adventurous, search out casa particulares, which are rooms or entire homes that owners rent out to guests.
