BY KATIE MINTZ – SUN NEWSPAPERS Some of Minnesota’s most dedicated hockey players returned to the ice last month, and in growing numbers. Minnesota Special Hockey, a nonprofit, volunteer-run league for Minnesotans with developmental disabilities, recently kicked off its fifth season. Since its start in 2006, the program has grown from a six-week trial with 27 players to a five-month season with nine teams across the state. “The more people hear about it the more they want to do it,” Minnesota Special Hockey President Jane Cashin of Edina said. “We probably are the fastest growing special hockey association in the nation.”

A checkmate, rather than a checkbook, will send an Edina teen to college next year. Matt Dahl, 17, won a full-ride college scholarship to The University of Texas at Dallas at the U.S. Chess Federation’s 2011 National Scholastic K-12 Championship. He beat out all other high school seniors in the 12th Grade Championship during the tournament Nov. 18-20 in Dallas, Texas, nabbing the scholarship awarded by the school to the 12th grade winner. “It was really tense but I’m really excited about Matt Dahl it,” said Matt, who was impressed when he visited the school, one of few colleges with a competitive chess team, earlier this fall. He plans to major in business there. While he has long competed at a national level, this was the first time he decided to enter the grade-level event, where students compete only against others in their same class. The K-12 National Championship drew 1,182 players, including three higher-rated masters in his grade. Matt, who is a national master, played seven 90-minute rounds over the course of the weekend, some quite close. “At the end of one round I had one second and he had five seconds left,” Matt said. “I offered him a draw right before or I would have lost on time. There were a lot of crazy games.” Matt said he began playing chess when he was in the third grade, and traveled to his first national tournament the following year. He said the game is appealing to

both his creative and competitive sides. “It’s a high stress game, but it’s a lot of fun if you do well,” Matt said. “I like the competition.” For the past several years, he has trained once a week with coach Victor Adler, who has reached international master rating – one of the highest in the chess world. He currently competes on the chess team at Saint Thomas Academy in Mendota Heights. In 2010, he was cochampion at the Minnesota School Chess Association’s High School Chess Championship, where St. Thomas won the team title and went on to place 11th in the nation. Two years ago, he also made it into the U.S. Chess Federation’s prestigious U.S. Cadet Championship open to the top eight players in the United States under age 16. He plans to compete this April in the U.S. Chess Federation’s National High School Championship being held in Minneapolis. But for the most part, Matt said he now attends at tournaments without age restrictions where he competes among adults. He said he’s looking forward to being part of a highly competitive team at The University of Texas at Dallas. He said the team atmosphere brings a lot to the game. Being on the 2010 Saint Thomas chess team was one of his favorite experiences. A player he knew through tournaments moved to the area that year from Michigan and joined. Matt shared the state title with Prashantha Amarasinghe, who went on to win the national title. For young chess players, Matt advises participating in the School Chess Association, which has events for students every Saturday. In between chess games, they have time to eat pizza and do other fun activities, he said. “You have to get involved,” Matt said. “Some people get really into taking lessons and studying hard. It’s nice to have fun with it at first and see what happens.”

Edina youth get in the ‘Christmas’ spirit Students to act in Guthrie’s ‘A Christmas Carol’ BY KATIE MINTZ – SUN NEWSPAPERS Christmas came early for two Edina youth. Quinn Jenkins, 9, and Alexis Torrez, 12, were cast in Guthrie Theater’s “A Christmas Carol,” which opened Wednesday, Nov. 23, in Minneapolis. They’ll appear in more than 50 performances before the end of the month. Though a lot of work, the aspiring actor and actress said they wouldn’t wish for anything else this holiday season. “I really like the experience. I love rehearsing. I love performing. I just love it all. It’s such a great experience,” said Alexis. Quinn and Alexis appear in the 13-member children’s ensemble in Charles Dickens’ “A Christmas Carol,” now in its 37th year at the Guthrie. The play, showing on the Wurtele Thrust Stage, is directed by

Joe Dowling and features a script by British playwright Crispin Whittell. Both Quin and Alexis are students at FAIR School Crystal, which has a focus on arts education. For Quinn, a fourth-grader who also studies acting at Harmony Theater Company and School in St. Louis Park, his Guthrie debut began with a visit to the adjacent Mill City Farmers Market this summer. “I just stared up at the Guthrie and I loved it so much,” Quinn said. He told his parents Tom and Alicia Jenkins that his face would grace the side of the building. They took him to a showing of “H.M.S. Pinafore” in August. A couple of days later Quinn saw online that the Guthrie was holding an audition for “A Christmas Carol.” Quinn said he enjoys acting, singing and performing in front of an audience. “I like to see the reactions to my parts and other people’s parts,” he said. “It’s very special to do theater.” PLAY: TO NEXT PAGE

Play FROM PREVIOUS PAGE After an audition, call back and meeting with the director, he came home from school to good news. “[My mom] just couldn’t hold in her smile,” he said. “I just started screaming. I called almost everyone I knew and told them I got the part.” Actually five parts – Wimple’s son, Belle’s son, a guest at the Fezziwig party, school boy and Ignorance – in addition to being the understudy for Tiny Tim. In one scene, he’s on stage with Robert O. Berdahl, lead in “H.M.S. Pinafore,” who plays the Ghost of Christmas Present and other characters. “It’s just amazing in how just a few months, this guy he was staring up at from the audience, he’s now working with him,” said dad Tom Jenkins. Patrice Torrez shares a similar story about taking her daughter Alexis to “A Christmas Carol” at the Guthrie a few years ago. “It really touched me Alexis Torrez because she looked up at the play and she turned to me and said ‘Mommy, I’m going to do that. That’s going to be me someday.’ A few years later here she is,” said Patrice Torrez, who was looking forward to attending several of the shows with husband Amador and son Emmanuel Torrez, 6. “It’s wonderful to see your kids discover what it is that they want to do. It’s wonderful to see the excitement,” she said. Alexis, a seventh-grader at FAIR who also recently started training at the Lundstrum Center for the Performing Arts

in Minneapolis, said she auditions for anything she can. This summer she was in a Fringe Festival show and has been in several school productions and done some extra and commercial work. “I like the feeling of being on stage entertaining people. It just feels really great,” she said. “I can be anybody I want, and be Quinn Jenkins anything and do anything. It’s like a whole new world.” In “A Christmas Carol,” she appears as a street urchin, a guest at the Fezziwig party, and in a country scene in Ebenezer Scrooge’s visit to the past. She said her favorite is the Fezziwig party. “It’s really fun. There’s a lot of dancing and cheering,” she said. Alexis and Quinn said rehearsals, which began three weeks before opening night, were a lot of work, but worth it. In the first two weeks, the children’s ensemble came after school until about 9:30 p.m. The final week of rehearsals ran about 10-hour days. Both described the cast like a big family, and said they have enjoyed being on stage and learning from the adult thespians. “I’ve learned so many things I don’t even know if I can list them all,” Quinn said, naming respect for other actors and the director as one. Alexis said she has learned that “no matter where you are, what you’re in, you have to be on your absolute best behavior because directors talk to other directors.” Their advice to show respect to others is a lesson that perhaps would have helped Scrooge avoid visits from the three ghosts of Christmas too.

Jet packs and thought pods and more Gift giving is easy, when money is no object I think for the first time I will try online Christmas shopping this year. It seems easier, and the options seem wider. I have made no purchases yet, but my hunt has begun, and I have found some doozies. Here, I will share some discoveries from a recent online windowshopping session — all things I plan on purchasing as gifts, assuming I find a couple million dollars in my the pocket of my winter jacket when I dust it off for the season. Picking the right gift can be hard, unless it’s a jet pack. And I found an ingenious one, called the Jet-Lev Flyer ($130,000) that shoots the operator 20 feet into the air, powered by water that it sucks up via hose, regurgitating it as a punishing, propelling blast. Whoever is lucky enough to find this one under the tree will have to wait for spring, however — or go on vacation — before they can use it, as the device only works on bodies of water. But it is not your only jet

pack option. A manufacturer called Martin Aircraft makes one that goes for only $86,000, and is said to achieve 30 minutes of flight time. The company calls it the safest jet pack in the world. It’s the Volvo of jet packs. It seems what we’re dealing with here, when picking between these two packs is, do we want to rocket around, funin-the-sun, beer-commercial style with the Jet-Lev water model? Or, do we want something a little more practical, like the Martin Aircraft pack? I think there’s room for both. For quieter times I found something called the Inspirational Archipod. The $40,000, 13-feet-tall, 9-feet-indiameter igloo-shaped cocoon is designed to imbue the occupant with maximum creativity. Because you’re in a dome, you see? And ideas really bounce around in there. The Inspirational Archipod is shin-

gled by the very creative and handsome Western Red Cedar, which covers the double insulated walls. A gull-winged door opens up to the dome-y interior, which features walls with no visible joints that might trap inspiration, creativity or enlightenment. Portholes, and a clear top that hinges open, allow whiffs of brilliance to float in. I foresee a bright future where Inspirational Archipods dot bucolic corporate campuses across America, ushering in some sort of Age of Aquarius and the 20-hour work week. For now, I bet some people in California have them, at least. If you like motorcycles or science fiction, I might get you the Tron-cycle ($55,000). Based on the movie “Tron: Legacy,” the Tron-cycle — actually called the Light Cycle on the website that sells it — is street legal and accented with strips of electro-luminescent lighting that is turned to a blur by a fuel injected Suzuki 996cc, 4stroke engine. Taking the hunt back to domestic territory, I have also considered my friends and family who prefer that their home décor be made of

firearms. For them I will purchase the elegant AK-47 table lamp. The lamp’s 24-inch porcelain neck is, of course, a pretend AK-47 resting upright on its butt. It costs $445, which I imagine is the price you might pay on the black market for the real thing. I am not in favor of guns — I have never even fired one — so I don’t want to belabor the point, but I must mention, the company that makes the AK-47 lamp, Loaded Objects Ceramics, also makes one modeled after a Tri9mm handgun. The classy ensemble is completed with a set of chess pawns shaped like grenades. The above is just a quick sampling. Dig, and you’ll find some gems yourself. Check out the perfectly named thisiswhyimbroke.com, or uncrate.com or hammacher.com for more outrageous gift ideas. But remember your neighbors, too. Maybe some these zany, highend items can only be obtained online, but your local retailers also could use your business. Maybe buy the jet pack online, but your shops can help you with the more pedestrian items. That is what responsible consumerism is all about.

CITY NOTES Edina forming neighborhood group steering committee The city of Edina is seeking volunteers to serve on a neighborhood identification steering committee. The committee will design and facilitate a public engagement process to identify and name Edina’s neighborhoods. The committee is expected to work over the course of the coming year with geographically organized resident teams. Residents who have an interest or background in civic engagement as well as strong knowledge of the community are encouraged to apply. The Edina City Council approved creation of the steering committee its meeting Tuesday, Nov. 1. The process to identify and name Edina neighborhoods is the first step of a greater city initiative to promote neighborhood associations. “Neighborhood associations build a

sense of community among residents and help to create a communication channel between residents and their civic institutions,” Assistant City Manager Karen Kurt said. When the initiative is completed, all Edina residents will have the opportunity to form and join a neighborhood association recognized by the city. A similar neighborhood program has existed successfully in St. Louis Park for several years. Volunteers interested in joining the neighborhood identification steering committee should apply by Friday, Dec. 9, with their name, address, contact information and a short summary of how their background complements the committee’s mission. Applications can be sent to edinamail@ci.edina.mn.us or mailed to Kurt at Edina City Hall, 4801 W. 50th St., Edina, MN 55424. With so many needs, all of the items donated filled a van to the brim. As one of the three volunteers, we had tears many times to see and hear about the Homeward Bound alumni dogs. Please know how thankful we are, as you may have been one who donated the blankets, collars, leashes, dog beds, pillows, toys, sweaters, crates, cash gifts and many more items too numerous to mention. Pool issue about priority, not confrontation To the editor: Since my family joined the Edina Swim Club in 2001, the club has roughly doubled in size. The Aquajets was started in 2002 and grew astronomically into one of the largest clubs in Minnesota. At the recent Edina Park Board meeting, the use of pool time between these two clubs was inaccurately painted by some as an us-versus-them confrontation. The truth is the Edina Swim Club is simply trying to get a ruling on the priority scheduling of a limited resource within Edina: pool time. The Edina Swim Club has always dealt with priority scheduling of pool resources. We are allocated pool time after girls and boys high school, synchronized swimming, water aerobics and water safety. Our club pays to use every pool lane available in Edina: South View and Valley View middle schools and Edinborough. We also regularly rent lanes at Blake and other pools. We frequently lose the use of

some or all of these pools as we lose our priority. It’s something our club has to deal with. The Aquajets are fortunate to have their own 13-lane pool (roughly equivalent to South View and Valley View combined) in Eden Prairie over which they have complete control of scheduling. They can use their pool whenever they choose, without dealing with priority. Please put inaccurate rumors and emotional responses aside. There’s nothing confrontational about priority scheduling. It’s simply the implementation of Edina policy to allocate limited Edina public resources to serve the majority of Edina residents. Ralph Lindell Edina

Fireplace change feel-good symbolism To the editor: I commend you on your wonderful sense of ironic humor in placing the bonfire photo and ban fire article in juxtaposition on the front page of your Sept. 29 issue. Since the Edina City Council has passed this, it is another example of the triumph of feel-good symbolism over practicality. But the real objective, of course, is to garner votes from the gang green. Commissions are instituted to lend legitimacy to things that legislative bodies have already decided they want to do. They start with some seemingly insignificant act in order to establish the principle and then expand it ad infinitum. It’s called getting the camel’s nose in the tent. Recently lightning started a forest fire in northern Minnesota. It sent smoke into the air from 150 square miles of woods. I figure that eliminating two fireplaces in Edina will compensate for that in, oh, about 750,000 years. What the city council ought to do is take a note from King Canute and ban lightning. Winter coat drive kicks off in metro cities Last year, a winter coat drive started with two drop-off boxes and one simple idea to pay back a community that supported a business owner recovering from illness. This year, that simple idea has evolved into a new charity called Coats of Kindness with more than a dozen drop-off boxes across the Twin Cities. Now through Jan. 15, 2012, Coats of Kindness is collecting new or gently used clean coats and jackets. Coats of all sizes are welcome, as well as accessories such as snow pants, hats and gloves. Boxes will be located in retail outlets in Apple Valley, Edina, Maple Grove, Cottage Grove, Woodbury, South St. Paul and Lake Elmo. Donating is simple. Bring coats to designated Coats of Kindness drop box locations. Drop off boxes are located inside

most Warners’ Stellian locations as well as Fury Motors in South Saint Paul and Lake Elmo. Drop boxes will be emptied regularly and items delivered to local charitable organizations. Last winter, the organization’s founders donated 450 coats and collected $500 for Stone Soup in St. Paul Park, which distributed the coats for free to those in need. At the time, Miller was pursuing a master’s degree in recreation administration, and as part of her coursework, created a six-week special hockey program through Edina’s adaptive recreation office. In spring 2006, 27 participants came from across the state to play. Miller said she saw a definite need. That fall, with help from numerous other volunteers, Minnesota Special Hockey was launched with two teams – the Edina Stingers and Blaine Polars. “This year we have nine and we’re hoping for more than 100 players,” said Miller, who continues to serve on the organization’s board. She said the organization needs at least one dedicated volunteer to get a team up and running in a community. “I get a little overwhelmed but I enjoy it. Her son Sam Cashin, 18, a senior at Edina High School, participated in the first six-week program and continues to play on the Edina Stingers. She said he had been attending his sister’s hockey games as her team’s stick boy for years before that, but never had the opportunity to be on a team himself. It’s been a great experience, she said. Participants of every age and ability are accepted to play. The Edina team has players ranging from age 4 to into their 40s. Coaches form lines based on ability so that during games, teams are evenly matched. Each team meets for an hour every Sunday November through March

and plays six games a season. “It’s really a chance for kids who can’t play in normal leagues to get out on the ice,” said Greg Williamson of Eden Prairie, who has coached the Edina Stingers for three years. Williamson said “it’s a less about age, size and ability,” and more about giving everyone access to the ice. His son Brett Williamson, 22, joined the team to keep active after finishing his high school career in adaptive floor hockey. He said he enjoys seeing people he knows from work and school. “I have a lot of friends here,” said Brett Williamson.

PUBLIC SAFETY Police report The following is a summary of selected incidents listed on the Edina Police Department weekly crime report Nov. 14-20: Nov. 14 – A wallet and contents valued at $156 were reported stolen on 6800 block of York Avenue South. An acquaintance of the victim took the wallet, ran off and then boarded a bus. Six pairs of sunglasses valued at $954 were reported stolen from Target, 7000 York Ave. S. An animal bite was reported on the 4200 block of France Avenue South. The victim was delivering a newspaper when the neighbor’s dog charged him and bit him. A cell phone valued at $550 was reported stolen from AT&T at Southdale Center. Nov. 15 – A 68-year-old Richfield woman was arrested for theft at Cub Foods, 6775 York Ave. S., after an employee observed her leave the store without paying for groceries valued at $58. A 19-year-old Shakopee woman was arrested for selling liquor to a minor at the Westin, 3201 Galleria, where she was employed. Nov. 16 – A 48-year-old St. Louis Park woman was arrest for theft at Cub Foods, 6775 York Ave. S., after employers observed her leave the store without paying for $75 merchandise. Nov. 17 – Golf clubs valued at $1,500 were reported stolen from a storage locker on the 5200 block of Lincoln Drive. A backpack and contents valued at $75 were reported stolen from a vehicle on the 7300 block of York Avenue South. Five pairs of shoes valued at $500 were reported stolen from Macy’s in Southdale Center. Three males grabbed the shoes and ran from the store. Nov. 18 – CDs valued at $180 were reported stolen from an unlocked vehicle on the 4500 block of 70th Street West. A briefcase valued at $50 was reported stolen from a vehicle on the 4100

block of 62nd Street West. Property damage to Christmas lights was reported on the 5200 block of Green Farms Road. Interference with privacy was reported on the 6000 block of Ewing Avenue South. An unidentified person was peering through a window at the residence. Officers responded to AMC Theatres at Southdale Center on a report of several females causing a disruption. A 17year-old girl was arrested for obstruction of the legal process and disorderly conduct. A 15-year-old girl was arrested for obstruction of the legal process. Nov. 19 – A 22-year-old Eden Prairie man was arrested for DWI on Highway 62 at Tracy Avenue after he was stopped for a traffic violation. Did you know that water causes more damage to masonry chimneys than fire? Your chimney, unlike other parts of your house, is constantly exposed to the elements. They are generally constructed of brick, mortar, tile, steel, and iron. All of these materials suffer deterioration as a result of prolonged contact with water. Freeze and thaw cycles so familiar here in the Twin Cities cause stress on the chimney. Water that has penetrated expands and contracts. Left unchecked it will cause interior and exterior damage to your home and masonry chimney. There are three main ways to prevent water damage. 1) Install a chimney cap. This is the most inexpensive measure to prevent water penetration to the flue and inside chimney elements. We sell and install locally manufactured caps for as little as $99. 2) Repair or replace a damaged chimney crown. The crown sits atop your chimney and covers and seals it from the flue liners to the chimney edge. Many chimneys are built with an inadequate crown constructed from common mortar mix. Mortar is not designed for and will not withstand years of prolonged moisture exposure without cracking and chipping which allows water to penetrate the chimney. A proper crown is constructed of a Portland

cement mixture and formed to provide an overhang drip edge. This assures the water will shed helping to prevent erosion in the mortar and brick of the chimneys surfaces. Keeping the crown “watertight” and shedding away from the sponge like masonry elements that the chimney is built of is the most important element to preventing deterioration. At AirBroom Minnesota we use the industry leading line of Saver products to build and repair chimneys. Use of these products allows us to pass on manufacturers material warranties of up to 15 years to our clients. 3) Waterproof your masonry chimney and crown. Most masonry is porous and will absorb large amounts of water. Brick acts like a sponge absorbing water and wicking it to the chimney interior. Products we use are specifically developed for use as waterproofing agents on masonry chimneys. These are vapor permeable – which means they allow the masonry to breath out but not in. This allows water that has penetrated the chimney to escape while preventing additional water from entering from the outside. Non vapor permeable sealers commonly available should never be used because they trap moisture inside actually accelerating deterioration. We use a special permeable sealer with a 10 year consumer warranty to protect your chimney. Doing this before deterioration occurs can save you hundreds or even thousands of dollars in future repairs. Water damage to chimneys is usually a slow subtle process. The problem is generally not obvious until it has become quite serious. Although these prevention measures may cost you a few dollars they can save you a lot more by preventing large future masonry repairs. Fire report The Edina Fire Department responded to the following incidents Nov. 14-20: Nov. 14 – Firefighters investigated a report of a natural gas odor outside Braemar Arena, 7501 block of Ikola Way. No odor was found. Monitors were used and no natural gas levels were detected. Paramedic firefighters responded to six incidents for emergency medical service. Nov. 15 – Firefighters responded to the intersection of Vernon Avenue and Tracy Avenue on a report of sparking power lines but were unable to locate any problems. There were nine EMS incidents and one false fire alarm investigated. Nov. 16 – Firefighters extinguished a small leaf pile burning along the road on Vernon Avenue at the Tracy Avenue intersection. Firefighters investigated a reported hissing sound from a stove on the 7100 block of Cahill Road. Firefighters did not find natural gas leaking and advised the occupant to have building maintenance follow up. There were 11 EMS calls and one false fire alarm investigated.

Nov. 17 – A neighbor reported a bush fire close to a house on the 5000 block of Halifax Avenue. The resident extinguished the fire prior to the arrival of the fire department. Heat from landscape lights flush with the ground was believed to have started leaves and the bush on fire. A driver parked at the Galleria reported hitting something in the roadway and smelling gasoline. Firefighters found a puncture in the gas tank of the vehicle, plugged the leak and applied absorbent to gasoline that had leaked in the parking lot. The driver arranged for a tow truck. Residents returning to their home on

Nov. 18 – Bloomington Fire Department requested mutual aid assistance at a house fire on the 7600 block of West 85th Street. A request for mutual aid from St. Louis Park was cancelled en route. Firefighters responded to a home on the 6600 block of Limerick Drive regarding a natural gas leak. Investigation found an electrical igniter malfunction-

ing on the gas range. The homeowner was advised to call a repairperson and refrain from using the range. There were 15 EMS incidents. Nov. 19 – An ambulance and a fire engine responded to a vehicle crash with injuries on Highway 62 at Xerxes Avenue. Minneapolis Police requested assistance with the extrication of a person trapped under a vehicle on the Minneapolis side of the 5300 block of France Avenue. Recipes for the meal are featured in Hobbins’ newest cookbook “Celebrations with Carmela’s Cucina.” Released in November by Nodin Press, it offers full menus for 14 special events throughout the year. “We always celebrate everything in a big way, whether it’s a birthday, a wedding shower, an anniversary – there’s recipes that include all of those celebrations in the book,” she said. Hobbins began teaching cooking classes and hosting culinary tours to Italy after retiring as an elementary schoolteacher several years ago. She wrote her first cookbook “Carmela’s Cucina,” now in its fifth printing, in 2005. It features about 150 of her “favorite Italian recipes from antipasti to dolce,” she said. She decided to release a menu cookbook after hearing from students in her cooking classes – she teaches private lessons in homes and at stores such as Cooks of Crocus Hill and through organizations like Edina Community Education – that the most difficult thing is knowing what recipes to put together. Due to the economy, people are also entertaining at home more than they used to, she said. Hobbins, who grew up in Des Moines, Iowa, where her family owns Tursi’s Latin King restaurant, said she has always enjoyed cooking for people. “I learned to cook from my grandmothers and mother,” said Hobbins, who moved to Edina in 1983 with her husband of nearly 37 years, Bob Hobbins. “Cooking was a really, really important thing for them. It was a way to show love and I feel the same way about it.” She’s been hosting parties all of her life. In the introduction to the latest cookbook, she tells about the “coketail parties” she began throwing in her parents’ recreation room at age 16, the lavish meals she planned with her post-college roommates, and the silver, China and crystal on her wedding registry put to use at dinner parties over the years. For each occasion, “Celebrations with Carmela’s Cucina” offers recipes for about six courses – an antipasti, salad, soup or pasta, main dish, vegetable and dessert – as well as wine pairing tips from her husband and other hosting ideas, like decorations. Most everything is Italian, or has an Italian twist.

The skewers are made with tortellini, grape tomatoes, basil, artichoke hearts, mozzarella balls, olives and sliced salami. Many of the items in the book can be prepared in advance. She said she feels bad for people who entertain but spend most of their time alone in the kitchen. “If it’s the kind of meal that requires a lot of last minute stuff, I just have everyone come into the kitchen, give them a glass of wine and some antipasti and they either cook with me or they’re with me when I’m cooking,” she said. “I have to be part of the party otherwise there’s not point inviting people over.” One of her favorite celebrations is New Year’s Eve, usually a fancy event hosted in her Edina home with the best linens, champagne, hors d’oeuvres and a sit down dinner. In the book she suggests mussels with remoulade sauce and spinach-stuffed mushrooms to start, an avocado and grapefruit salad, crown roast of pork with fruited dressing and buttered carrots, followed by a spumoni ice cream bombe. “We like to get all dressed up and really have a good time. Cake Ingredients: 1 large frozen pound cake, defrosted 1 pound fresh ricotta cheese 2 tablespoons heavy cream 1/4 cup sugar 3 tablespoons red and green candied cherries, chopped 2 ounces semi-sweet chocolate, chopped 1/4 cup pistachios, chopped 3 tablespoons Grand Marnier Frosting Ingredients: 12 ounces semi-sweet chocolate, chopped 3/4 cup brewed coffee 1/2 pound unsalted butter, cut into pieces Red and green candied cherries Put the ricotta into a large mixing bowl and beat it with the cream and sugar until

it is smooth. With a rubber spatula, fold in by hand the chopped cherries, chocolate and pistachios. Using a sharp serrated knife, slice the pound cake horizontally into three layers. With a pastry brush, spread the liqueur evenly over the cut slices. Place the bottom layer of the cake on a decorative plate and carefully spread the ricotta mixture over the top. Place the center layer of cake on top and repeat, keeping the sides even. Cover with top layer of the cake. Gently press the loaf to make it as compact as possible, without allowing the filling to ooze from the sides. Cover the cake in plastic wrap and chill for about 12 hours.

For the frosting, melt the chocolate and the brewed coffee in a small heavy saucepan over low heat, stirring constantly. Take the pan from the heat. Beat in the butter one piece at a time until all the butter is incorporated and the mixture is smooth and blended. Chill the frosting until it thickens to spreading consistency – about 30 minutes. With an offset spatula, spread the frosting over the sides and top of the loaf in a swirling motion. Decorate the top with the cherries. Loosely cover and chill for another 12 hours. Serves eight. Hornets split in Cake-Eater play Edina races past Blake 8-2 to earn third place BY JOHN SHERMAN – SUN NEWSPAPERS After falling to Breck 3-0 the first night of the Cake-Eater Classic Nov. 25 at Braemar Arena, the Edina High girls hockey team made a nice recovery to defeat Blake 8-2 Nov. 26. Hornets head coach Laura Slominski saw good signs from her team both nights, but closing out a team such as Breck this early in the season was too great a challenge. “It was good for us to bounce back against Blake,” said Slominski. “In terms of scoring, the line of Sarah Nielsen, Liz Trautz and Taylor Williamson is leading us early in the season. We’re trying to find the right combinations for our other lines.” Trautz led the attack against Blake with two goals while the other standout

for Edina was goaltender Maddie Dahl. The split in the Cake-Eater Classic left Edina with a 3-1-1 record. “It was a good tournament,” said Slominski. “We can always count on getting two quality games. The championship game went into overtime with Breck winning 4-3 over Benilde-St. Margaret’s.” Breck goalie Taylor Neisen, who might have been the most outstanding player in the tournament, made 37 saves in the championship game. Next for Edina is a trip to northwest Minnesota for games with Roseau and Warroad. The Hornets will play at 7:30 p.m. Friday, Dec. 2, in Roseau and at 2 p.m. Saturday, Dec. 3, in Warroad. “Our girls will be stepping outside their comfort zone,” said Slominski. “It will be a long bus ride Friday, and we’ll face adversity due to bus legs. We will have to show some mental toughness.”

Francisco Hardacker, a senior running back and cornerback, was one of three Hornet offensive selections along with senior lineman Kevin Carroll and senior tight end Tom Balke. Senior linebacker Tory Dalbec also made all-conference for the Hornets. Edina head coach Reed Boltmann, whose team finished 5-5, said he is proud of all of his All-Lake picks. “Francisco did a fantastic job and had two big games against Hopkins [both Edina victories],” said Boltmann. “He stepped up when other key players like Nick Rallis went down with injuries.” Carroll, a Division I prospect at 6 feet, 3 inches and 285 pounds, pounded opponents all season. He has offers from Northern Iowa and South Dakota. “Hopefully, Kevin will be named AllState,” said Boltmann. “Tom Balke had a tremendous season as a blocker and a receiver,” the coach said. “He was our punter after Rallis was injured.” Dalbec’s statistics tell the story of his season. “Tory led us in tackles with 88,” said Boltmann. “He also had two interceptions and three sacks. All of the [Minnesota Intercollegiate Athletic Conference] schools and Concordia-St. Paul are recruiting him.” Prep Bowl finalists Wayzata and Eden Prairie combined to land 14 berths on the All-Lake team, which was released earlier this week by Hopkins athletic director Dan Johnson. Eden Prairie had six selections and third-place Minnetonka had five. Wayzata’s all-conference list includes three defensive players and five offensive players. The defenders are senior inside line-

Lake Conference champion Wayzata placed four players on the All-Lake Conference boys soccer team, while Eden Prairie, Edina, Hopkins and Minnetonka each earned three berths. The Trojans’ top selection is twotime All-State forward Ellis Andrews, who has scored a total of 28 goals the last two seasons. “We’ve played in the section title game four years in a row,” said Wayzata head coach Dominic Duenas. “Ellis has been our offensive leader.” Other Trojans selected All-Lake by the league’s coaches are senior midfielder Mark Hoof, senior midfielder Karl Schmidtke and sophomore defender Nick Riley. Eden Prairie placed juniors David Bernabo, Naralio Blanche and Chris Hurst on the All-Lake squad. Edina’s selections are seniors Evan Panken and Jens Undlin and junior Arin Arpinar. Edina head coach Dave Jenson said he believes Panken is the best player in the state. “Evan challenged himself every game,” said Jenson. “He matured as a player, and even though he was injured the last part of the season, he found ways to help the team.” Seniors Rolando Barclay, Elliot Langaard and Austin Salargo represent Hopkins on the All-Lake team. Minnetonka’s All-Lake selections are seniors Jimmy Pickering, Marcus Speca and Andrew Sutton. Rampage wrestlers seek big things in upcoming season BY GREG KLEVEN – SUN NEWSPAPERS This is the second season for the Richfield/Edina cooperative wrestling program. And the Rampage squad should be improved with 13 returning letter-winners. The Rampage has 46 wrestlers out for the team – 23 from Richfield and 23 from Edina. Richfield/Edina squad has three state tournament wrestlers back. They are senior James Lettow (Edina), Chandler Arredondo (Richfield) and Mike Dyer (Richfield). Each of those wrestlers finished last season with 23 victories. “Those three look to improve their individual records to at least 25 wins this season,” said Rampage co-head coach Eric Herrmann. “Our team’s goal is to improve on last season’s 7-10 record and win at least 10 matches. “We are required to split our co-op team for section and state competition this season. Richfield will compete in Section 5AA and Edina will be in Section 2AAA.”

Arredondo is ranked fourth at 195 in Class 2A. Dyer is ranked ninth at 285. Other varsity returnees are sophomore 106-pounder Justin Swetala (Richfield), sophomore 113-pounder Obsa Ali (Richfield), ninth-grade 120-pounder Christian Wellens (Richfield) and ninthgrade 132-pounder Alex Abramson (Richfield). Richfield’s other varsity wrestlers are Lettow, sophomore Joseph Smith (Edina, 152), senior Dennis Chavarria (Richfield, 160), junior Shane Walfoort (Edina, 170), Arredondo and Dyer. The Rampage’s coaching staff consists of Herrmann, Josh Burhans (co-head coach) and Kitt Guerrier (junior varsity/ninth grade). The Rampage’s first meet is 9 a.m. Saturday, Dec. 3, at Fridley High School. Richfield will travel to North St. Paul for a 5 p.m. conference meet Thursday, Dec. 8. The Richfield/Edina team’s first home meet is 5 p.m. Friday, Dec. 16, against Farmington and Minnetonka. Richfield will host an eight-team tournament at 10 a.m. Saturday, Dec. 17.

Hornet boys open with win over Buffalo Bison squad, lose to Maple Grove, 3-0 Hockey team adjusts to new lineup in tourney Many of the faces familiar to Edina High boys hockey fans are gone now, gone from a team that finished 19-9-2 last season. And that meant fans were referring to their programs frequently during the Turkey Trot Tournament Nov. 25-26 at Plymouth Ice Center. Both of the Hornets’ games ended in shutouts with Edina winning the opener 4-0 over Buffalo and losing in the finals 3-0 to Maple Grove. “We have a lot of new faces,” said Edina head coach Curt Giles. “It will take a while for the team to establish an identity.” High-scoring forwards Steven Fogarty and Michael Sit graduated from last year’s roster along with star defenseman Max Everson. The Hornets took another hit when forward Ben Walker decided to forgo his senior season in favor of Junior hockey. “In the Buffalo game, I thought we took it to them pretty well,” said Giles. The shots on goal bear that out. Edina had 36 to 10 for the Bison. Miguel Fidler, Andy Jordahl, Connor Hurley and Tim Spicola scored for the Hornets. Fidler, Bo Brauer, Derek Malmquist, Alec Oesterreich, Parker Reno, Henry Rose and Jack Walker had assists while Connor Beaupre was the winner in goal. Goalie Tim Harkess was the No. 1 star for Buffalo with 32 saves. In the championship game with Maple Grove, the Hornets couldn’t get a single shot past goalie Kyle Koop, who

made 23 saves. “Maple Grove has nine seniors and could be among the top four or five teams in the state,” said Giles. While the Hornet team is largely new this year, Giles has several proven players. Edina’s captains, Nick Leer, Louie Nanne and Parker Reno, all have state tournament experience. Giles had good things to say about his captains. “Nick is a wonderful leader and a tireless worker,” said Giles. “I expect a lot from Louie – scoring and skating on our power-play and penalty-killing units. “Parker is a strong defenseman who skates well and shoots the puck well. He is a very mature junior.” Another mature junior is Anthony Walsh, one of the most physical players in the Lake Conference. Matt Nelson also lends experience to the Hornets’ young lineup. For at least the first part of the season, Giles said he would use both varsity goalies, Beaupre and Willy Benjamin. “The next few weeks, we will start to find out what this team is all about and what it can be,” said Giles. Next for the Hornets is a non-conference game against Lakeville South at 3 p.m. Saturday, Dec. 3, at Lakeville’s Hasse Arena.

Stearns earns conference award Hopkins High graduate Rachel Stearns was recently chosen Mid-American Conference Swimmer of the Week for two strong performances with the Ohio University women’s team. The sophomore led the Bobcats to conference victories over Bowling Green and Eastern Michigan. Against Bowling Green, Stearns won

the 200-yard individual medley in 2 minutes, 8.97 seconds and the 100-yard backstroke in 58.42 seconds. She also swam on Ohio’s winning 200 medley relay. In the victory over Eastern Michigan, she won the 100 backstroke in 57.80 and the 200 backstroke in 2:05.54. Once again, she helped the Bobcats win the 200 medley relay.
