herb omelette The idea of cooking beaten eggs with butter in a pan dates back to ancient times, yet today omelettes are still one of the simplest, most nutritious meals you can whip up in the kitchen. Getting it right though requires you to follow a few basic steps.

Eggs A large number of eggs on the supermarket shelf today are labelled free range. However, many of these are actually cage or barn-laid eggs. To ensure you are buying true free-range eggs, look for a certification logo from a free-range association.

Chives The smallest member of the onion family, chives are a source of beneficial antioxidants. But their real value to the home cook is the wonderful savoury flavour and vibrant colour they can add to the most basic dish.

parsley Fresh parsley is quite fragile so it should always be washed right before using. The flat-leaf variety has a stronger flavour than curly parsley, so it holds up better to cooking. For this reason, it is best to use flat-leaf parsley for hot dishes such as this omelette.

The right pan If you don’t want your omelette to resemble a dish of scrambled eggs, equip your kitchen with a cast-iron omelette pan. This makes it easy to neatly fold the omelette in half and slide it out of the frying pan without breaking it.

Water Unlike scrambled eggs, omelettes require water, not milk to give them their lightness.The water turns to steam in the pan, producing a light, airy omelette. 1

Use a clean steel or glass bowl. Crack eggs into the bowl and beat lightly with a balloon whisk or fork, taking care not to overbeat. Stir in seasoning, if using, water and any flavouring, such as herbs. We used a combination of fresh flat-leaf parsley, chervil, chives and tarragon for this omelette.

In a small omelette pan, over medium-high heat, add enough butter and oil to cover the base of the pan. As all stove tops vary, adjust temperature if necessary. Cook butter mixture until it starts to foam.

When the butter mixture foams, add a quarter of the egg mixture, gently tilting the pan to cover the base. This ensures even cooking of eggs. Continue cooking over medium heat.

Once set, carefully flip the side of the omelette towards the centre, using a spatula, to form a neat crescent shape. Remove pan from heat.

Gently slide the cooked omelette onto a warmed serving plate. Repeat steps 1 to 6 (wiping out the pan after each omelette), until you have made four omelettes. Serve omelettes while still hot.

This tart is best made a day ahead and stored in the fridge.

Scrub it after every use with hot, soapy water, rinse, dry and stand it in a dish rack to air completely. Alternatively, use a paste of bicarbonate of soda and water to clean and deodorise your board.

Using a palette, small spatula or fork, draw sides of eggs towards the centre of the pan, allowing the uncooked mixture to run underneath. Continue pulling the eggs from the sides until eggs are set underneath but still slightly runny on top. This also gives the omelette a plump, “crinkled” effect.

• Using a mixture of butter and oil to cook the omelette stops the butter from burning.

Use a rolling pin to carefully lift the pastry into a loose-based flan tin. Press the pastry into the base and side of the tin and trim the edge to fit. Cover and place in the refrigerator to chill.

lemon filling 3 teaspoons finely grated lemon rind ¹⁄³ cup (80ml) lemon juice 3 eggs ½ cup (110g) caster sugar ²⁄³ cup (160ml) pouring cream

1 Blend or process flour, icing sugar, ground almonds and butter until crumbly. Add egg yolk and the water; process until combined. Knead dough on floured surface until smooth. Wrap in plastic wrap, refrigerate 30 minutes. 2 Roll pastry between sheets of baking paper until large enough to line shallow (2cm-deep) 24cm-round loose-based flan tin. Lift pastry into tin; press into side, trim edge. Cover; refrigerate 30 minutes. 3 Meanwhile, preheat oven to 200°C/180°C fan-forced. 4 Place flan tin on oven tray. Line pastry case with baking paper, fill with dried beans or rice. Bake, uncovered, 15 minutes. Remove paper and beans; bake about 10 minutes or until browned lightly. 5 Meanwhile, whisk ingredients for lemon filling in medium bowl; stand 5 minutes. 6 Reduce oven to 180°C/160°C fan-forced. 7 Pour lemon filling into pastry case; bake about 30 minutes or until filling has set slightly, cool. Refrigerate until cold. nutritional count per serving 25.3g total fat (14.3g saturated fat); 1714kJ (410 cal); 38.5g carbohydrate; 6.7g protein; 1.3g fibre serving idea whipped cream; dust tart with sifted icing sugar just before serving.

Line the pastry with baking paper and fill with dried beans. Bake for 15 minutes, remove the paper and beans, then bake for a further 10 minutes or until lightly browned. Remove from the oven and cool slightly. This process of blind baking creates a firm, dry and even crust.

Pour lemon fillng into cooled pastry case. Place in a preheated oven and bake for about 30 minutes or until the filling has just set. Allow lemon tart to cool before placing in the refrigerator to chill.
