Seizing Opportunities can Create Successful Careers
Prepare! Prepare!! Prepare!!! Let us prepare for Thanksgiving, Black Friday, Final Exams and the Holidays. Thanksgiving is a time when families get together and enjoy a scrumptious turkey dinner with all the trimmings and fellowship with family and friends. However, before joining your family and friends, there are community opportunities to serve those who are not as fortunate to enjoy such fun gatherings. Now is the time for you to be a doer. Pursue an opportunity to serve a meal to someone in a homeless shelter or at a local church mission. Consider donating some time to a mission that is designed to support the less fortunate who live in our community before helping ourselves to an annual family dinner.

Soon after a delicious thanksgiving dinner, you will prepare to go shopping by checking the newspaper for great bargains to jump-start the store crowd. Then there are some that enjoy the hustle and bustle at the malls and stores on Black Friday. While also preparing to go shopping think about doing for an unknown as well and what we can do to put a smile on our loved ones’ face during the festive holiday season. On Monday, after a four day weekend, you will return to begin preparing for your final exams, reflect on your semester performance and turn in your final project or assignment. Some of you will be preparing for commencement and thinking about full-time employment or graduate school. I hope that as you prepare for these respective days that you will always think of how you can esteem others along the way. Enjoy the ACSS semester-end newsletter and take advantage of the various ways that you can get connected with campus and community life as we move into the holiday season. VETERAN SPOTLIGHT Getting to Know our Vets
ACSS: What war and branch did you serve in?
I was in the Army and I served in the Vietnam war con lict . I was a Specialist 4 in an infantry a unit that was in the frontline; foot soldier
ACSS: Why did you join?
I was drafted into the military.
ACSS: Tell me about your most memorable experiences.
My most memorable experience was when I was in the central highlands mountains . We mostly sought out VC's Vietcong , and fought against the north Vietnam Army. I was over there for nine months and was blown up by a grenade ; wounded and had a concussion. My ear-drums were burst and I had to be lown to Japan for operations. I stayed there for 2 months and lew back to the U.S.
ACSS: Were you awarded any medals or citations?

I was nominated for bronze and received the Purple Heart. I have also received some campaign medals.
ACSS: What is your role as an associate dean of multicultural affairs?
To promote and enhance student success, especially for students of color, through activities and services that we provide the students. Multicultural Affairs makes sure that each ethnicity is respected and hopefully we can move towards an inclusive community.
ACSS: How has your experience been working at the University of Memphis?
I have been here for 28 years and it has been a very favorable experience. I enjoy working with students and am excited to assist and work with students along with any administrative duties. It's the ideal job because I love the interaction with students. I’ve seen the university grow and be as diverse as it is, and I feel that I am a part of that growth.
ACSS: What are you most proud of as a Veteran?
I am proud that I was able and willing to go and serve my country. Hopefully it made the world a better place.
ACSS: Do you have any advice to give Veterans who are students?
Take advantage of the opportunities that the Veterans Administration and government have given you. Utilize the services to better yourselves and your families. People are here to assist Veterans; don't think that everyone is against you.

VETERANS FACTS Veterans are people who served in the military (U.S. Army, Navy, Marine Corps, Air Force, and Coast Guard) in times of war or peace. There are currently 1.8 million female veterans in the United States. The unemployment rate of veterans is 3 percent higher than the rest of the population One third of the adult homeless population is veterans, and 70 percent of these suffer from substance abuse. ACSS: How has the Army benefited you? Cadet McEntire: The Army has benefited me tremendously. I have learned so much. You really have to grow and mature quickly when you’re in the Army and you are more disciplined.

Ingredients: 1 teaspoon cream of tartar 1 1/2 cups confectioners' sugar 1 cup butter, softened 1 teaspoon vanilla extract 1/2 teaspoon almond extract 2 1/2 cups all-purpose flour 1 teaspoon baking soda Directions Mix confectioners' sugar, butter or margarine, egg, vanilla, and almond extract. Stir in flour, baking soda, and cream of tartar. Cover and refrigerate for 2 hours. Heat oven to 375 degrees F (190 degrees C). Divide dough into halves. On lightly floured clothcovered board, roll each half out to 3/16 inch thick. on lightly floured cloth-covered board. Cut into Christmas shapes. Bake on parchment lined baking sheets for 7 to 8 minutes. Let cool on wire racks and decorate as desired.

CORNBREAD STUFFING Ingredients 4 tablespoons butter 2 cups chopped yellow onions 1 cup chopped celery 2 cups fresh corn kernels 2 tablespoons minced garlic 1 cup diced red pepper 1/2-pound diced smoked ham 2 eggs 3 cups chicken stock 1/2 cup heavy cream 2 tablespoons freshly chopped cilantro leaves 2 tablespoons freshly chopped flat-leaf parsley Salt and freshly ground black pepper 8 cups cubed and toasted cornbread Preheat oven to 375 degrees F. Directions Melt butter and sweet vegetables until tender. Add ham and cook over low heat for 2 more minutes. Set aside to slightly cool. Whisk together eggs, stock, cream and herbs and season with salt and pepper, to taste. Combine all items, including cornbread, in a 4-quart lasagna pan and cook covered for 30 minutes. Uncover and cook for additional 20 minutes or until crusty
