FEDERAL JACK’S & KBC STORE Often referred to as the most picturesque pub on the waterfront, Federal Jack's Restaurant and Brew Pub is well-known for its spectacular views, creative pub fare, and award-winning hand-crafted ales. One of Maine's first brew pubs, this popular restaurant is the birthplace of Shipyard Brewing Company. Not only does Federal Jack’s offer a brew with a view overlooking the Kennebunk River, they also offer free brewery tours. All the beers available at Federal Jack's are handcrafted at KBC, the seven-barrel brewery located below the restaurant. The system gives head brewer, Mike Haley, as much control over the way the beer is poured in the pub as he has over the selection of the ingredients that go into making the beer. Be sure to check out all the Federal Jack's gear and great brews at the KBC Gift Store. This unique gift store, located below the restaurant, offers bottled beer, growlers, and kegs; Maine-made Capt'n Eli's Soda; wearables; pint glasses; gourmet foods; and nautical gifts. www.federaljacks.com

The influence of wood can change the flavor of a beer drastically. Each has its own characteristics that can even alter the fermentation occurring in a barrel. The type of wood, where it came from in the world, what it was used for prior to holding beer, and the barrel’s maintenance history, are all considerations in the process. For example, if the barrel was originally used for a distilled spirit, then initial beer introduction can

If there is char inside the barrel, it can act as an agent to help clarify the beer through a small amount of filtration, as well as mellow a beer’s sharp bite, while impacting a rich, earthier note. Some barrels that housed wines will react differently and can grant fruitier tangs or even spice notes like vanilla and cinnamon. The environment within a barrel can

GEARY BREWING CO. Fads come and go, but fresh, true-to-style beers will always have their place and a home at Geary’s. Visit their 35 year old brew house right in Portland, Maine to learn more about the first craft brewery on the east coast. At this dynamic brewery you can sample traditional English ales brewed in open fermentation, contemporary beers brewed in closed fermentation, take a tour of the historic site, and learn how the brewery helped shape American craft beer!

Since 1988, GRITTY’S has been creating fine, handcrafted ales and traditional pub fare. From humble beginnings as a small brew pub in Portland’s Old Port, they have grown to become a brew pub of choice for many Mainers and folks “from away.” From the start, Gritty’s was at the forefront of the brewing renaissance in the Maine. Founders Ed Stebbins and Richard Pfeffer had two simple goals in mind: to create a true, English-style pub serving fresh ales and great food, and to have fun doing it. With three brew pubs now: the original location in the old port section of Portland, another pub in Freeport and the “new one” on the banks of the Androscoggin River in Auburn, Maine. Sebago Brewing serves up small batch beers and seasonal favorites People know well Sebago Brewing’s classic beers like Frye’s Leap and Runabout Red, or seasonal favorites like Bonfire and Slick Nick. But Sebago is also creating small batch beers that are innovative, unique, and delicious. Since the new Destination Brewery opened in February 2018, Sebago has released more than 16 new small batch beers: Saison Saisoff, Danquito, Blazing Summer, TriCitraHops, and County Brown, to name just a few. The beers have ranged from a barrel-aged sour (Bog So Hard) to a tart wheat ale with a frozen hop twist (On the Grind). Sebago has also teamed up with other brewers, like with Norway Brewing Company on Humlevenner, a 9.1% ABV double rye IPA. A collaboration with Honest Weight Artisan Beer from Massachusetts resulted in Buddy System, a crisp IPA featured at the Maine Brewers’ Guild Summer Session.

From Brewer to Biddeford, York to Gouldsboro, and Freeport to Union, Maine you can traverse our beautifully scenic state sampling some of the finest hand crafted, small batch spirits anywhere in the world. Now, along with Maine lighthouses and lobster shacks, the Maine Distilling Industry is chockablock full of adventure and reward. Like many of our amazing restaurants where you’ll find a bevy of locally raised, grown, sourced – even foraged ingredients on their menus, you’ll find the same attention to both detail and the use of local agricultural products in the craft spirits made by members of Maine’s Distillery Guild. MAINE CRAFT DISTILLING used over 300,000 pounds of Maine-grown malted barley, and uses over 20,000 pounds of Maine blueberries annually in its blueberry Blueshine, and apples from Doles Orchard in Limington to make their Whipple Tree Apple Brandy. LIQUID RIOT BOTTLING uses hundred of pounds of Maine grains in its whiskeys each year, including Mainegrown rye and buckwheat, and even some homegrown sweet Maine corn in their bourbon. COLD RIVER VODKA sourced and distilled over 1.4 million pounds of Maine potatoes for their vodka and gin. SPLIT ROCK DISTILLING in Newcastle make a horseradish vodka using horseradish grown on Snakeroot Organic Farm in Pittsfield.

Their blueberry vodka is made with wild, lowbush organic blueberries from Elderflower Farm in Lincolnville. SWEETGRASS FARM WINERY & DISTILLERY goes through 70,000 pounds of Maine-grown fruit and grains each year including apples for their cider and apple brandy from Hope Orchards, blueberries for their award-winning Back River Gin from Blueberry Valley Farm in North Union, and over 3,500 pounds of cranberries for their cranberry gin from growers in Washington County. Many of the herbs and botanicals used in TREE SPIRITS award-winning absinthe such as — anise, fennel, wormwood, petite wormwood, hyssop and lemon balm — are locally sourced. BARTLETT SPIRITS of Maine uses local apples, pears, berries and other fruit that make their way through crushing, fermenting and distilling grown in Maine. Nothing but 100% pure Maine maple syrup is used in CHADWICK CRAFT SPIRITS. Some distilleries use Maine-grown, Maine-made white oak barrels to age their spirits to capture the best possible flavor of Maine. All while using some of the cleanest, best tasting water on the planet. Consider visiting some or all of us on your next trip to Maine. We’d love to see you.

BREAKFAST OF CHAMPIONS Muddle 5 mint leaves Shake with: ½ cup pink grapefruit juice 2 oz simple syrup 2 ounces vodka ¼ ounce Tree Spirits' Absinthe Ice Strain Garnish with mint leaves

After TREE SPIRITS owners Bruce Olson and Karen Heck realized they were spending too much on other people's wine, they decided to make their own. After a few years of experimentation with grapes from away, they concluded locally sourced products would be more satisfying to produce. Since they had friends who owned an orchard and friends who owned a sugar shack, that problem was solved. Tree Spirits winery and distillery was born. TREE SPIRITS OF MAINE distills its apple, pear, and maple wines into 80-proof brandies and produces the region's only absinthe and limoncello. They encourage experimentation with their other products and thanks to loyal customers, they have discovered combinations like absinthe and hot chocolate; limoncello with absinthe; absinthe, grapefruit juice, vodka, and mint. And for the fall, applejack in cider hot or cold; a Knotted Maple hot toddy; and Pear Brandy in ginger tea. Their tasting room in Oakland is open most of the year and private group tastings are always available.

Located in Portland’s original brewing neighborhood in the Riverside Industrial Park, NEW ENGLAND DISTILLING is Portland’s first distillery since Prohibition. The distillery was founded by Ned Wight, former Allagash head brewer, and a descendant of several generations of whiskey distillers. Ned brings his brewing background and family distilling heritage together to produce high quality spirits that are unique and delicious. New England Distilling is known for their traditional, low-tech approach to making spirits. Starting with grain or molasses, they make a mash, which is then fermented to produce a beer. The beer is distilled using simple pot stills which are heated with direct fire, resulting in uniquely flavorful spirits. Their award-winning spirits are Ingenium Gin, Eight Bells Rum, Gunpowder Rye Whiskey, and Tidewalker Straight Bourbon Whiskey. Each is intended to be sipped on their own, but are excellent in cocktails as well. Look for their highly anticipated small batch spirit releases, the first of which, Rack IV Saison was distilled from Allagash Saison and matured more than two years in new oak barrels. Interested in seeing their process first hand? They love to show off the distillery and explain their production methods. For tour information, see www.newenglanddistilling.com

maine-made sodas fizz with flavor By Kate Cone

Who remembers those joyful moments as a kid when your dad handed you a frosty glass of bronze-colored soda? You took a big chug because you were thirsty, the cold liquid running along your tongue and the thrill of the resulting fizz went up your nose.

No matter what you call it: soda,

tonic, “Coke or pop, that delightful tickle of carbonation never ceases to spark the senses. And bronze-colored no more, the carbonated beverage craft movement in Maine now offers hues of blue, yellow and green, along with the infused flavors of blueberry, ginger, lemon and green tea among others. In 1996, Fred Forsley began serving a version of the root beer out of kegs at Federal Jack’s Brewpub in Kennebunkport, where Shipyard’s first iteration, Kennebunkport Brewing Company, still brews. great root beer still exists, but it’s not A&W. Maine’s official state drink: The iconic gentian root-infused Moxie comes to mind first and its “roots” are deeply set in Maine’s imagination. Created by Union, Maine native Augustin Thompson, a doctor living in Lowell, Massachusetts interested in naturopathic medicine, Moxie Nerve Food was patented in 1885 and claimed to be the first bottled carbonated beverage in America. It never took off in the U.S. except in the northeast and in 2005, officially became Maine’s official state drink. Subject of its own movie, It’s a Maine Thing, and honored at the annual Lisbon Falls Moxie Festival, the drink will always be dear to the hearts of Mainers and fans everywhere. In 2018, the brand was acquired by the CocaCola Company. Ahoy, Captain! MAINE ROOT BLUEBERRY SODA Mainers never tire of local wild blueberries, vaccinium angustifolium. Native to Maine, they are the official state fruit. They’re in pie, beer, jellies and jams, barbeque sauce and, now—soda. On the palette, Maine Root’s blueberry soda has the tart and sweet pop of blueberries off the bush, and a note of Concord grape. It’s sweet, but not cloying and highly drinkable. It can take the place at the table, or the bar or tasting room with the best alcohol-free drinks available. Perfect for kids if you have them along, or abstaining adults, Maine Root hits the mark for a luscious zero-ABV drink.

western maine Maine's western lakes and mountains are home to four seasons of recreation — skiing and snowmobiling in the winter, boating and fishing in the summer, and hiking, biking, and hunting in the shoulder seasons. It's little surprise that breweries have sprung up among the lakes and mountains, catering to thirsty locals and visitors alike. In fact, it's hard to think of a sporting destination in the area that doesn't have an accompanying craft brewery to visit at the end of the day. Visiting this vast area, it is comforting to know that great Maine beer is never far away. By Josh Christie

Mark your calendars for Saturday, Aug. 31, 2019, when historic downtown Skowhegan will host the fourth annual SKOWHEGAN CRAFT BREW FESTIVAL—one of the only festivals in the state to feature all Maine beer, wine, cider, spirits, and food. In 2018 the festival drew more than 1,200 attendees—up from approximately 1,100 in 2017 and 800 in 2016—from across the country and Canada. With 30 brewers anticipated, the event will kick off with a VIP hour featuring specialty brews and local food samples not available during the general session. The general session will include an array of Maine-crafted libations, and merchants will offer farm-totable fare such as organic tacos, barbecue, and poutine. Live music and guided tours of Maine Grains will round out this Labor Day weekend event, making for an unforgettable close to summer. Tickets will be available at SkowheganCraftBrewFest.com in April. VIP tickets have sold out every year, so get yours early!

Hops (humulus lupus) those papery, puffy cones of green, go into almost every conceivable beer in some way, shape, or form and if you are a homebrewer or simply a lover of good ales and lagers, you know how sensational the appetite for hop-forward beers has been in recent years. aspects of brewing with hops is that the geographic area in which they’re grown. Location can impact the aromas, bittering capacity, and other elements of their use in beer. For instance, the hop named Fuggles (commonly found in British brewing that seeks earthy, spicier notes) when grown in Alna, evokes a kiwi fruit nose uncommon to the strain. Maine’s soil and environment didn’t get the memo that this wasn’t right, so the hops they use locally sometimes take some recalibration of brewing recipes. According to Barker, the biggest strain on brewing with hops is capacity and supply-chain logistics. Some major IPAs brewed locally and year-round take serious hop doses to complete. For instance, the late-stage hop additions in some of Freeport’s Maine Beer Company’s hop-forward offerings can & BEV

forward ales and lagers without the bitter or citrusy qualities. Yet, even here, hops play an important role in preserving the beers you love best. The trick lies in two parts: understanding the strength and nature of the ingredient and timing. Each varietal of hop has its own unique properties. The cones that we trim from their bines (not vines) contain acids and oils of differing amounts. Most commonly, brewers refer to the Alpha Acid (AA) of a hop, which is the general bittering agent. When we put hops into a beer during the boil phase of brewing, the heat extracts these acids and infuses the liquid with it. However, the longer the hops stay in a rolling boil, the more the boil drives away some of the oils and essential elements that give hops their aroma. We generally consider early additions of hops to be those that give the beer bitterness. Mid-stage additions can be said to grant more flavor to the beer, and late stage (near the end of the boil) almost universally gives the beer the nose and aromatics many of us love in something like an IPA. In recent years, no part of the Maine brewery landscape has been more exciting than the Highland region. While the Queen City of Bangor and surrounding towns have long played second fiddle to the brewing scene in Southern Maine, an influx of talented brewers has seriously upped the area’s reputation. Now, while relaxing at a local beer bar like NOCTURNEM DRAFT HAUS, you can enjoy beer brewed by GEAGHAN BROTHERS, ORONO BREWING COMPANY, MASON’S BREWING, or a number of other Bangor-area brewers. Hardly also-rans, these beers handily compete for the title of Maine’s best brews.

Some of Tigpro’s recent accounts include Bissell Brothers, who are continuing to expand at their new location in Milo, which will feature barrel aging and sour beer production. Also, Tigpro recently completed a new 15 barrel brewing system for Goodfire Brewing who just opened last Fall in Portland. Gordon Jones Goodfire's head brewer says: “Tigpro was very attentive to our needs during the build out process as well after, if we need some something done or tweaked, they take care of us right away. In the Bangor region, Geaghan Brothers Brewing Company is using Tigpro’s brewing equipment to put out their quality brews. Tigpro's portfolio also crosses over into the Distillery industry as well. Most recently they outfitted Maine Craft Distilling with some their equipment needs at their new location in Portland. Tigpro works closely with customers to design brewing systems that are affordable, have shorter lead times and fit the needs of the individual breweries. Their focus is on the small brewer. Brewhouse System sizes start at 5 BBL and go in increments of 7, 10, 15, 20 and 30 BBL's while HLT, CLT, Unitank Fermenters, Brite Tanks, Lagering Tanks and conditioning/ serving tanks as large as 80 BBL are available. Tigpro also manufactures a manual 4 head keg washer/filler so basically, when it comes to brewing equipment and components, if you need it, they can build it.
