The type of wood, where it came from in the world, what it was used for prior to holding beer, and the barrel’s maintenance history, are all considerations in the process. For example, if the barrel was originally used for a distilled spirit, then initial beer introduction can

Sebago Brewing serves up small batch beers and seasonal favorites People know well Sebago Brewing’s classic beers like Frye’s Leap and Runabout Red, or seasonal favorites like Bonfire and Slick Nick. But Sebago is also creating small batch beers that are innovative, unique, and delicious. Since the new Destination Brewery opened in February 2018, Sebago has released more than 16 new small batch beers: Saison Saisoff, Danquito, Blazing Summer, TriCitraHops, and County Brown, to name just a few. The beers have ranged from a barrel-aged sour (Bog So Hard) to a tart wheat ale with a frozen hop twist (On the Grind). Sebago has also teamed up with other brewers, like with Norway Brewing Company on Humlevenner, a 9.1% ABV double rye IPA. A collaboration with Honest Weight Artisan Beer from Massachusetts resulted in Buddy System, a crisp IPA featured at the Maine Brewers’ Guild Summer Session.

After a few years of experimentation with grapes from away, they concluded locally sourced products would be more satisfying to produce. Since they had friends who owned an orchard and friends who owned a sugar shack, that problem was solved. Tree Spirits winery and distillery was born. TREE SPIRITS OF MAINE distills its apple, pear, and maple wines into 80-proof brandies and produces the region's only absinthe and limoncello. They encourage experimentation with their other products and thanks to loyal customers, they have discovered combinations like absinthe and hot chocolate; limoncello with absinthe; absinthe, grapefruit juice, vodka, and mint. And for the fall, applejack in cider hot or cold; a Knotted Maple hot toddy; and Pear Brandy in ginger tea. Located in Portland’s original brewing neighborhood in the Riverside Industrial Park, NEW ENGLAND DISTILLING is Portland’s first distillery since Prohibition. The distillery was founded by Ned Wight, former Allagash head brewer, and a descendant of several generations of whiskey distillers. Ned brings his brewing background and family distilling heritage together to produce high quality spirits that are unique and delicious. New England Distilling is known for their traditional, low-tech approach to making spirits. Starting with grain or molasses, they make a mash, which is then fermented to produce a beer. The beer is distilled using simple pot stills which are heated with direct fire, resulting in uniquely flavorful spirits. Their award-winning spirits are Ingenium Gin, Eight Bells Rum, Gunpowder Rye Whiskey, and Tidewalker Straight Bourbon Whiskey. No matter what you call it: soda,
tonic, “Coke� or pop, that delightful tickle of carbonation never ceases to spark the senses. And bronze-colored no more, the carbonated beverage craft movement in Maine now offers hues of blue, yellow and green, along with the infused flavors of blueberry, ginger, lemon and green tea among others. Never fear though, the bronze of a

Created by Union, Maine native Augustin Thompson, a doctor living in Lowell, Massachusetts interested in naturopathic medicine, Moxie Nerve Food was patented in 1885 and claimed to be the first bottled carbonated beverage in America. It never took off in the U.S. except in the northeast and in 2005, officially became Maine’s official state drink. Subject of its own movie, It’s a Maine Thing, and honored at the annual Lisbon Falls Moxie Festival, the drink will always be dear to the hearts of Mainers and fans everywhere. In 2018, the brand was acquired by the CocaCola Company. Ahoy, Captain! forward ales and lagers without the bitter or citrusy qualities. Yet, even here, hops play an important role in preserving the beers you love best. The trick lies in two parts: understanding the strength and nature of the ingredient and timing. Each varietal of hop has its own unique properties. The cones that we trim from their bines (not vines) contain acids and oils of differing amounts. Most commonly, brewers refer to the Alpha Acid (AA) of a hop, which is the general bittering agent. When we put hops into a beer during the boil phase of brewing, the heat extracts these acids and infuses the liquid with it. However, the longer the hops stay in a rolling boil, the more the boil drives away some of the oils and essential elements that give hops their aroma. We generally consider early additions of hops to be those that give the beer bitterness. Mid-stage additions can be said to grant more flavor to the beer, and late stage (near the end of the boil) almost universally gives the beer the nose and aromatics many of us love in something like an IPA. In the Bangor region, Geaghan Brothers Brewing Company is using Tigpro’s brewing equipment to put out their quality brews. Tigpro's portfolio also crosses over into the Distillery industry as well. Most recently they outfitted Maine Craft Distilling with some their equipment needs at their new location in Portland. Tigpro works closely with customers to design brewing systems that are affordable, have shorter lead times and fit the needs of the individual breweries. Their focus is on the small brewer. Brewhouse System sizes start at 5 BBL and go in increments of 7, 10, 15, 20 and 30 BBL's while HLT, CLT, Unitank Fermenters, Brite Tanks, Lagering Tanks and conditioning/ serving tanks as large as 80 BBL are available. Tigpro also manufactures a manual 4 head keg washer/filler so basically, when it comes to brewing equipment and components, if you need it, they can build it.

The brewery features a three-barrel electric system, a friendly, rustic tap room, and a beer forest along Crawford Stream. The lakes and rivers of Union are a great place for kayaking, and the town also has wealth of local farms, wineries, and a distillery.
