• 10 jalapenos split in half and seeds cleaned out • 20 pieces of bacon • 1 package of cream cheese • 8 oz of shredded cheddar cheese

• 10 mushrooms cored • 1 package of cream cheese • 2 italian sausage links • italian seasoning (equal parts dried basil, thyme and parsley)

Start by slicing the jalapeno in half and use a spoon to clear out the seeds and stem. In a small bowl mix the shredded cheddar cheese and cream cheese. Stuff the jalapeno halves with the cream cheese mixture and wrap each one with a piece of bacon. To cook, place them on a sheet pan with a wire rack and the oven on 350 degrees. Cook for 20 min or until bacon is crisp. If you have a grill available, cooking them on there is much better.

Start by cooking the Italian sausage in the oven at 350 for 10 minutes. Once it has cooked and cooled, chop it up very finely. If you have a food processor it will go much quicker. Now add the cream cheese to the sausage and add 2 tsp of Italian seasoning (basil, thyme and parsley). Stuff the mushrooms with the mixture and bake on a sheet pan at 350 for 5 minutes.

• 1 small can of green chili (Hatch is the best) • 1 package of cream cheese • 1 chicken breast In a stock pot, place the chicken breast in boiling water and cook it for 10 minutes or until done. Once done, chop it finely or use a food processor. When chopped, add to the cream cheese, add the can of green chilies and mix. Lay the wontons out flat and brush the edges with egg wash. Do not over fill them or they will burst when cooking. Only use about a quarter size drop when filling. Once they are filled, fold it over to seal and fry in 350 degree oil for about 2 minutes. To make them extra crispy dust them with corn starch before you fry them. An easy sauce for this would be take 1 cup of water and 2 cups of sugar and bring them to a boil. Once boiling, add ¼ cup of soy sauce and allow to reduce for 2 minutes then chill. Finish with lemon juice and green onions.

With standardized testing and finals on the horizon, you might be wondering what you can do to help you or your child do their very best. Nutrition plays a critical role in brain development and everyday function. There are specific nutrients the body needs in order to achieve specific tasks. Without these nutrients, the brain just isn’t ever going to do what it was meant to. Poor nutrition cannot substitute. Here are a few foods to include in the diet every day to help the brain reach its full potential: Iron rich foods. An iron deficiency, anemia, is common, especially in children, and can affect learning ability and behavior. Good sources of iron include red meat (like beef), dark leafy greens (like spinach) and fortified breakfast cereal and bread. Keep in mind that iron from animal sources absorbs better than that from plant sources. To increase the absorption of iron from plant sources, pair it with a vitamin C source such as an orange. It is a good idea to ask your pediatrician to screen your child for iron deficiency.

in shape Fish Oil Supplement. You probably know that fish oil (or Omega 3 fatty acid) is important for heart health, but it is also important for brain function and mood. Eggs, ham and nut butters are examples of protein choices that fit in well with breakfast foods. In addition to these foods, make sure your child eats breakfast, even if it means going to bed earlier and waking up a little earlier. If your child isn’t hungry before school, encourage them to eat something small. When children go all night without eating and skip breakfast, they often have learning and behavior difficulties in the late morning as their blood sugar plummets.

Kacy Clark began her journey in Ada, Oklahoma in March of 19 8 9. S he w a s a s t u d e nt at A d a Public Schools from start to finish. Kacy pl ayed ba sketba l l , ran track and was an honor student. She graduated high school in 2007 and began col lege soon a f ter that. Her college years were a little rocky and she ended up moving to Dallas and then Missouri to work with her dad. Finally, in 2012 Kacy moved back to Ada and decided to get a full time job in the town where she grew up. Kacy’s time in college and working in Missouri caused her to start thinking. The thought that consumed her mind was, “What am I really here for?” It was at this point when things started to change. After being back in Ada for a while some of Kacy’s friends started inviting her to H2O Church. She decided to go and really enjoyed it. “I felt the Lord’s love through the people there and I finally had accountability with the people I was doing life with. It was like what I was searching for my whole life was finally happening,” Kacy shared. Her friends Xeres and Hillary helped her get involved and she joined a Lifegroup. A Lifegroup is simply, a group of people who meet once a week in somebody’s home to study the Bible, pray and do life together. Her first group was at Rick and Stacey Emerson’s house and they really helped her get plugged in. After the group grew too big, Kacy joined a group at Pastor Zac and Callie’s house. She was starting to realize that a true follower of Christ doesn’t just go to church, but that he or she is the Church. Kacy developed a desire to not just show up anymore but to begin serving. She serves by helping in the kids program, apartment outreach at Rolling Meadows and delivering meals to people in need. Kacy says, “Whenever I am needed, I try to be available.” All of this has been leading up to something big. Kacy has always felt led to missions, outreach and just loving on the people around her. In October of 2014 her spiritual mentor, Cindy Ashby, told her about a mission trip that she might be interested in. The organization is called World Race Mission and they do an 11 month trip to 11 different countries. This sparked Kacy and she applied for the trip. She was accepted and her excitement began to grow. Kacy will be spreading the Gospel of Jesus in 11

different countries when she boards the plane in late June of this year. She will be with a squad of 53 other people and t hey will break up into smaller groups when they arrive in each country. The d if ferent g roups will spread out to different areas of the country to reach d i f ferent people i n u n ique ways. They will partner with existing ministries within the countries they visit. Each country will have a unique way of delivering the same message. Kacy will be helping sex trafficking victims, performing construction, street evangelizing, working with orphans and even being involved in a coffee house ministry in Thailand. Her closet for the year will be a backpack and her home, a tent. Kacy says, “I am okay with getting my hands dirty and I have always been a tom boy, but I will miss my wardrobe and my bed!” Going to 11 countries in 11 months doesn’t come without a cost. Each missionary is required to raise $16,277.00 plus an additional $1,500-$2,000 for their personal gear. The money will cover air fare, travel, medical insurance, food and everything necessary to live for the 11 months. Kacy has set a goal to raise it all before she goes in the end of June (the deadline is not until January 2016). She has written a support letter explaining what she is doing and people have responded in an amazing way. Her church, H2O, has helped her take care of expenses along the way as well. “People I know and people I don’t know have given money to help me reach my goal,” Kacy explained. Kacy has much to do to prepare. She will do cross cultural training, hiking, eating different foods and lots of exercise to be as healthy as possible for the trip. April 26th is National Kids and Pets Day. Kids and pets go together like summertime and sprinklers. Many adults have fond memories of playing with animals as a child and there is nothing quite like watching a child form a bond with a pet. Many children want pets for birthday or Christmas presents and their eyes light up when they see something soft and furry. It doesn’t have to be soft and furry though. A pet can have fur, but it can also have feathers or gills or scales. The important thing is not the type of pet, but the love between a child and an animal. Julia Martin is a three-year-old little girl who loves her dogs more than anything. For Julia, an only child, they are her brother and sister and that’s what she calls them from time to time. Her brother dog, Gus, is a nine-year-old Chiweenie and her sister dog, Roxie, is a a Morkie (half Maltese and half Yorkie) who turned one on March 18th. Julia loves petting her dogs and loves them like family. Gus puts up with lots of ear and hair pulling, but doesn’t seem to mind. Julia always begs her mom to let Roxie sleep in bed with her and always wants to hold the lease when they go on walks, even though the feisty Roxie will pull her to the ground. Julia just gets up, brushes herself off, and takes another turn walking her dog. Not long ago, Roxie was lost in the countryside for two days. They were devastated, worrying that she had become food for coyotes. However, once they found her, they washed her up, fed her, and continued doting on her. Roxie’s early morning snuggles are the best. >

Jaime Worden and her two kids, Bradley, 11, and Karlee, 9, have a cat named Kiefer Sutherland. Kiefer was originally named “Bear” when they found him at the shelter, but they renamed him based on an inside joke between the three of them. The kids had begged for a cat and finally won their mom over when they told her it was a way for them to prove their responsibility. When they first saw Kiefer, they noticed his overall calm and decided he was the pet for them. They have had him for a year now, and he’s a happy cat, even though the kids constantly poke, prod, and tease him. He’s always happy to see them and meows his appreciation when they come home. And no matter how much the kids mess with him, Jaime still finds him curled up in one of their beds in the morning. Denise Moore has a wide array of animals, and she never had to feed many of them until her two girls went off to college. She has two 3-legged labs, a corn snake, eleven chickens, a couple horses, a bearded dragon, and a lesson siren, which is a form of salamander. She also fosters other dogs whenever she is able. Dexter, her son’s dog, was hit by a car and left on the side of the road for 24 hours in the freezing rain. He was originally a foster, but the bond between Dexter and her son was so strong that he found his forever home. Dexter will even play while they go swimming. He’ll throw a toy into the pool and bark until they dive down and retrieve it. And then they will begin again. The bearded dragon, Ecko-I’m-Not-A-Gecko, was purchased as a baby and has a very strong personality. Her daughter saved up her money when she was four-years-old to purchase a tarantula, Rosie, who lived with them for fifteen years. They play with all of their animals, even the snake. For those not interested in snakes, tarantulas, or lizards, fish are another great option. Matt Harp started his aquarium because he wanted to grow live coral, and he has special lights in the aquarium that allows him to grow almost anything. Kids love to come over and see his work. While they are interested in the coral, the fish are the main attraction. He has a clownfish, two anemones, a lawnmower blennie, a six line wrasse, and a yellow tang. He also has lots of coral, twenty or thirty crabs of different species, and thirty or forty snails. All of this resides in a 125-gallon tank. The anemone has become friends with the clownfish. Matt says that kids really like the fact that the different creatures have bonded. Kids especially enjoy searching for things they haven’t seen before, like crabs. There are few, if any, things that kids find more fascinating than animals. Whether you are getting your child a dog or cat, or a more non-traditional pet like a snake, lizard, or tarantula, you are certain to see their eyes light up and a smile creep across their face. Just remember, when you get your child a pet, it is a forever responsibility. These pets have become family members and something that is cared for very much. Cats, dogs, lizard, tarantulas, snakes, chickens, horses, or fish— they can all find a place in the heart of the right child. 12 • www.adahub.com

Ada? APRIL’S E VENT CALENDAR by Deanna Piercy

Have you noticed how much is happening in the Ada area lately? Live music, art events, plays, sporting events, classes, children's activities, festivals, and so much more! There is now a public Facebook group that serves as a clearinghouse for all these local happenings. "What's Happening, Ada?" is the place for residents to share information about local events. Each Monday a summary of known events is posted for easy reference. In addition to fun events, important City of Ada information regarding road closings, temporary water shut-offs, trash pickup schedule changes, and City office holiday closings are shared in the group. During recent winter storms, “What’s Happening, Ada?” also became the go-to site for local school and business closings due to snow. “What’s Happening, Ada?” is a service provided by Happyland Music Alliance and is administered by Deanna Piercy. The group is open to all and members are encouraged to share according to the guidelines stated in the “about” section of the group page.
