Food that Fight for You And Against You If you live with a health condition such as chronic pain, rheumatoid arthritis, asthma, Crohn’s disease, obesity, ADD/ADHD, peripheral neuropathy, diabetes, heart disease, stroke, migraines, thyroid issues, dental issues, or cancer, then you also have chronic inflammation on your hands. Leap O’ Faith Therapeutic Riding Center by: Sunnie Dawn Smith

We are all somewhat familiar with the traditional ways to treat mental and physical disabilities. Physical therapy, talk therapy, medication—these are all commonly used in treating all different sorts of conditions. However, there is another form of treatment that many might not think of—riding horses. Horseback riding can actually help with a whole host of conditions, including autism, cerebral palsy, muscular dystrophy, ADHD, bipolar disorder, and many other things such as shyness. Kathy and Shan Scroggins have seen the impact that horseback riding can have on those with special needs and realized that this is a service that can benefit our community. This realization has culminated in the Leap O’ Faith Therapeutic Riding Center, which opened in March of this year. Kathy has taught horseback riding for twenty-seven years. When she moved to Ada, she realized that she wanted to have, as she puts it, “a more noble purpose.” She wanted to do something to help. Since Kathy is PATH (Professional Association of Therapeutic Horsemanship) international certified, a volunteer organization that creates and maintains standards for the industry, based on safety and best practices, she wanted to use this training in order to help our community. In our community, recent census statistics show that 20 percent have some sort of documented disability. As Shan says, “This is 1 in 5 of our neighbors that we are able to help better their quality of life.” Kathy worked at McCall’s Chapel for two and a half years to gain experience working with their target participants. She also worked at Sunset Therapeutic Riding Center in Yukon for seven months last year in order to gain even more experience with this particular type of therapeutic horseback riding. 6 • www.adahub.com

During her time at Sunset, Kathy witnessed extraordinary things. An severely autistic young man who had trouble expressing what he was feeling in words was able to communicate with them, telling them that he did not like to touch or be touched. Despite this, after some of the therapy, he actually gave Kathy and another instructor a hug. This kind of progress is huge, and touched Kathy’s heart in a tremendous way. It made her will to help grow even stronger. There were children who were as young as four who wouldn’t speak, yet their time with the horses made them feel empowered, and they would start speaking to the horses, gradually opening up and speaking to the people as well. Another young lady was in a wheelchair with a ventilator. She could only communicate by blinking or shifting her eyes from side to side. She would be on the horse with someone riding behind her as two others led the horse and yet another person carried her ventilator. Two others would walk backwards in front of her carrying signs and the girl would direct her eyes to the different signs in order to voice “Whoa” or “Ride On” thus controlling the horse in a world where she had no other control. Once Kathy and Shan decided to bring this service to Ada, the first step was to get their non-profit status, which was acquired in December of last year. Then they had to get the arena covered, because the weather in Oklahoma is unpredictable at best. That was finished in April. They also needed special equipment, and the Chickasaw Foundation provided a grant that helped them purchase more helmets and adaptive equipment for the riders. The next step was to get volunteers and participants. At the first volunteer training, eight people showed up and many more

have also voiced their enthusiasm for being a part of this noble endeavor. Now that they have volunteers, they need more people to take advantage of this service. While they already have many interested in volunteering, they can always use more in order to help with the scheduling and further community involvement. Most importantly, though, they need people who are interested in this type of therapy to contact them and be a part of it. For the month of April, each session will be ten dollars. When a participant first becomes involved, they figure out what is needed, and typically they will have ten sessions before the rider is reevaluated. There is a sliding scale based on need, however, and scholarships and partial scholarships may be available to help defray the cost. People can also make donations for certain individuals if they so wish. On the website you can also find the participant and volunteer packets if you are interested in utilizing these services of volunteering. The third Saturday of every month is volunteer training, with the next one coming up on April 16th from 8:30 in the morning until 2:00 in the afternoon. In Ada we have many different choices for our lunches. Restaurants, diners, and fast food places are on almost every corner. But there is only one option that changes its location every day, making it more easily accessible to everyone at some point in time—our new local food truck, Nacho Biznez. You can see it in parking lots all over town, the black food truck emblazoned with the colorful words “Nacho Biznez” accompanied by its social media information. Owners Will and Carrie Martin originally wanted to open up a taco stand down by the Arts District. However, real estate in that area is hard to come by. They were at a function with some friends and the idea of a food truck was suggested. Will and Carrie loved the idea. They bought the truck, got it set up to fit their needs, and Nacho Biznez was born. They opened on December 3rd of 2015 and have had wonderful business, sometimes seeing the same customers every day.

They are currently open for lunch from 11:00 -2:00 Monday through Saturday, though they are booked up on weekends through June, going to festivals, private events, and weddings. Right now they are also open occasionally for dinner, but they are planning on making this happen more often in the future, perhaps having two to three nights a week where dinner is served. To see when they will be open for dinner, and where the truck will be every day for lunch, your best bet is to check their social media. Social media like Facebook, Instagram, and Twitter have helped make Nacho Biznez’s business possible. On Sundays they post the schedule for the upcoming week and then every morning they post a reminder about where they will be. Since they usually set up in the parking lots of other businesses, they will tag them in the posts and vice versa. This allows the businesses to help each other, really coming together as a supportive community. This extends beyond businesses, though. Their customers will post pictures of

their food on these social media sites as well, both expressing their appreciation for a job well done and helping advertise one of their favorite eateries. Will and Carrie like to keep the menu simple, yet with additions that make their food tasty and unique. They strive to make everything fresh daily. You can get beef, chicken, or shrimp tacos that also come with salsa verde, onion, cilantro, feta, and lime. Beef or chicken burritos come with rice, cilantro, lime, black beans, salsa, queso, and cheese. You can also get beef, chicken, or cheese quesadillas. Beef or chicken nachos come topped with cheese, feta, cilantro, lime, and queso. They also offer a beef or chicken rice bowl complete with black beans, cilantro, lime, cheese, salsa, and guacamole. Then on the side, you can order more salsa, guacamole, queso, sour cream, and chips. To top it all off, you can order a Coke, Diet Coke, Sprite, Dr. Pepper, Diet Dr. Pepper, or a bottle of water to wash it all down. One of the most unique things about this

food truck is that you have a couple different options for ordering food. First, you can take the traditional approach and find the food truck, walk up to the window, and order. Second, you can text your order to them at (580) 665-6582. Once you send them a text, they will respond with your total and when it will be ready for pick up. As Will says, “None of this would be possible without the support of our family—Cailee and Ryan Kinder, Jussely Canada, and Laurel Martin—and the continuous support of Ada and the surrounding communities.” So whenever you see the Nacho Biznez truck around town, be sure to stop by and grab a bite to eat.
