Homemade Vanilla Ice Cream Ingredients • 3 cups of half and half • 9 ounces of sugar • 1 cup of heavy cream • 2 teaspoons of really good vanilla extract or • 8 large egg yolks 1 whole vanilla bean split and scraped Place the half-and-half and the heavy cream into a medium saucepan, over medium heat. Bring the mixture just to a simmer, stirring occasionally, and remove from the heat. In a medium mixing bowl whisk the egg yolks until they lighten in color. Gradually add the sugar and whisk to combine. Temper the cream mixture into the eggs and sugar by gradually adding small amounts, until about a third of the cream mixture has been added. Pour in the remainder and return the entire mixture to the saucepan and place over low heat. Continue to cook, stirring frequently, until the mixture thickens slightly and coats the back of a spoon and reaches 170 to 175 degrees F. Pour the mixture into a container and allow to sit at room temperature for 30 minutes. Stir in the vanilla extract. Place the mixture into the refrigerator and once it is cool enough not to form condensation on the lid, cover and store for 4 to 8 hours or until the temperature reaches 40° F or below. Pour into an ice cream maker and process according to the manufacturer’s directions. Or if you do not have an ice cream maker follow the instructions below. You will need: a very large mixing bowl or stockpot, small 1-quart bowl, chopped ice, 3/4 cup rock salt or kosher salt, electric hand mixer OR whisk, and a towel. *notes: If you want to flavor your ice cream just add any flavor you like such as strawberries, chocolate chips, pecans, caramel. Just add them after you have made the original base. 1) Fill the large bowl about halfway with ice. Stir in 3/4 cup rock salt. 2) Nestle the smaller bowl in the ice. Try to get almost completely buried in the ice. Fill the smaller bowl halfway with ice cream mix (use at most 1 pint of mix). 3) Use the hand mixer to beat the mix for 10 minutes. You may find it helpful to half cover the bowl with a towel, to help prevent spattering. The mix should get very cold to the touch, although it will probably not start transforming into actual ice cream. (Note: If you don’t have a hand mixer, then you can use a whisk, but you will need to whisk for at least 15 minutes.) After you have aerated and chilled the mix for about 10 minutes, cover with a towel and place the entire set of nested bowls — large and small — in the freezer. Freeze for 45 minutes. 4) Remove the bowls from the freezer. Draw a spoon across the top of the ice cream mix. It’s probably the consistency of loose pudding, especially on top. 5) Mix again with the hand mixer for 5 minutes. At this point the mixture should be the texture of soft-serve ice cream. 6) Remove the small bowl from the large bowl, and cover the top with plastic wrap touching the surface of the ice cream. HYDRATION TIPS FOR SUMMER ACTIVITY Star Edwards Registered Dietitian Serious complications of dehydration and heat illness, like hospitalization, loss of consciousness and death, are well known. But did you know, that mild dehydration, as little as 1% of body weight, can affect your athletic performance and increase your risk of injury? In fact, being dehydrated by 5% of body weight can decrease work output by 30%. Studies show that physically active people living in warm environments will not meet fluid and electrolyte needs when drinking fluids throughout the day as they wish, or by thirst. These individuals only met fluid needs when they planned fluid intake. There is no one method that can accurately and reliably determine adequate hydration status. The most practical way to assess hydration is by observing urine color and volume. Dark colored urine with little volume indicates dehydration. Keep in mind that supplemental riboflavin can cause brightly colored urine even when an individual is well hydrated. The following are some general tips for staying well hydrated: 1. Maintain a hydrated status throughout the day by consuming fluids regularly and monitoring urine color. 2. Start exercise well hydrated. Drink 2-3 cups of fluid 4 hours before exercise and again 2 hours before exercise. If sweating lightly, water is the preferred beverage. For heavier sweating, sport drinks are recommended. 3. Remember that weight loss during exercise is from fluid (not fat) and must be replaced, but don’t over-do it. Over-hydration is also danger ous. You should not weigh more after exercise than when you started. For every 1 kg (2 pounds) of weight loss during exercise, drink 1.5 L (or 6 cups) fluid. 4. During exercise, drink every 10 to 20 minutes (those who sweat heavily will need to drink more often). For heavy sweating or exercise lasting longer than 45 minutes, sports drinks provide needed sodium (1 gram per hour). 5. Healthy, active individuals should not restrict salt intake. While calcium, magnesium, and potassium are lost in sweat, sodium and chloride are lost at a greater concentration. Many muscle cramps blamed on a potassium deficit are most likely actually due to sodium and chloride deficit. www.adahub.com • 5

Krystal Chaney has been in the boutique business for the past fourteen years. She is married to Roy, and together they have five boys. With so many boys in the house, Krystal needed a way to express her feminine side. She opened her first shop, Filling Spaces, in 2001. She began this venture because she has always had a passion for decorating. After being in the business for three and a half years, she purchased her own building right between Black’s and Brown’s Shoe Fit on Main Street. Krystal invited people to run their own booths within her space and she was able to offer a variety of different products to all her customers. In 2011 she sold the business so she could be available to take care of her mother. Krystal couldn’t help herself from still wanting to have a boutique, so she began renting space as a booth runner. In 2014 she opened the doors to Chaney Lane Designs in the North Hills Shopping Center. Her goal is to always be affordable and different. Her desire is for her product lines to have a purpose. Many of her lines are made right here in the USA and will soon be offering exciting reclaimed and refurbished products from Kalalou. One of these unique products will be a Christmas tree made from refurbished wood. You will have to visit her shop to believe it and you will be glad you did. Chaney Lane Designs is one of the only boutiques here in Ada to carry a floral line. They also have a variety of lighting, artwork and accent furniture. Each piece is unique and stylish. When asked why she does it, Krystal responded like this, “I just love socializing with people. It is what I like to do and sometimes the conversations I have with my customers can get pretty deep. In fact, I have felt on several occasions that God had sent someone into my store to give me encouragement at just the right moment”. A m e r i c a n Ninja Warrior danny manuel by adam flanagan

Danny Manuel was born in Ada, Oklahoma on February 12, 1974. When asked where he had been since, he replied, “If you put the point of a compass down at Valley View Regional Hospital and drew a circle with an eight mile radius; that would be enough to tell my story”. Danny has lived, gone to school, attended church and worked in this area all his life. I guess you could say he was “born and raised” right here in Ada. He was married to Janel in 1993 and they are now the proud parents of Grace and Blaise. Danny is a family man who also has a heart for adoption. He desires to get the word out to people about orphans and is passionate to help them find a loving family. He needed a platform to use to help this cause and he has chosen American Ninja Warrior. Wait a second. You mean the TV show? Yes, indeed. As a kid, Danny was enamored with American Gladiators. He always dreamed of one day taking hold of that joust and sending Nitro to the icy waters beneath the pedestal. Unfortunately, the show fizzled out, along with his dreams of defeating the mighty gladiators. In 2013 a new dream was born, and it was to compete on American Ninja Warrior. Danny was watching TV at the Ada Fire Department, where he has been employed since 1997, and the show was on. He watched for a little bit with the guys and then said, “I want to do that”. One of the guys thought he was kidding. He wasn’t. He sent in his application along with a video in the spring of 2013. He waited. The longer the wait, the more he felt like he was not going to be picked to compete in the qualifying round. Months went by and he did not receive notification that he would get to be a part of the competition. Danny didn’t give up though. He began training harder and when the new season came around, he put in another application. He was training mostly at home and at the fire station using only his body weight for resistance. He did lots of rock climbing, grip work, 8 • www.adahub.com

pull ups on anything he could get a hold of, walking on barrels (kind of like the rodeo clowns do, minus the oversized pants and face paint), push ups, planks and even triathlon training. Amidst all the training, the phone call finally came. They told him to be at the Cotton Bowl in Dallas, Texas in three weeks to compete in the qualifying round. Danny explained the moment like this, “I wanted to shout from the rooftops!” His kids really believed in him and their encouragement made him stick through all the training to get to this point. Danny showed up at the Cotton Bowl the night before to do interviews and back story information for the show. His group of competitors began to run the course on Monday night at 11:00pm. He grabbed a sleeping bag and some headphones to zone out for awhile to avoid getting stressed out. Danny got to walk up to the platform at 5:30am for his chance to make it through the challenging obstacle course. He felt pretty good since he is a morning person and is used to starting his day at that time. As he stood on the platform before the buzzer went off for him to start, he just took in the moment. “It was a wow moment just being there. It wasn’t like being at a baseball tournament at Matthews Park! There were lights and camera crews everywhere”, Danny described. The buzzer sounded and off he went. He made it past the tilting table and the rings. The next part was the dreaded warped wall. One, two, three tries later, he just fell inches short of the top. Danny said, “It was a sick feeling not making it to the top of that wall, but I was still grateful for the opportunity to compete”. When his kids watched the show on TV and saw their dad not make it up the wall, they cried. They were devastated. Little did they know, Danny would have another chance. Although he did not make it up the warped wall, Danny still had a good time and was selected to move on to one of the city finals to compete again. This portion has not aired yet and Danny is not able to disclose anymore information at this time. When asked if he would do it again, he quickly replied, “Absolutley”! He is in training now and is more diligent than ever. “I compete with a purpose. I want to raise awareness for orphans and if I can do it by participating in something like American Ninja Warrior, then that’s what I am going to do. Jesus suffered and died on a cross, so I am going to do this for something greater than myself. I will tough it out”. You may have seen Danny on the television lately and you may see him again soon. American Ninja Warrior is a show that you can watch with the whole family and it makes it even better to see someone on it that you know. Keep watching this season to support Danny and all the hard work that he has put into this. From an eight mile radius, to being on a nationally televised show, you never know where life may lead you.

Today’s society is fast paced and as a result many children tend to be rushed, hurried, over stimulated, and are just worn out. Gone are the days of kids playing outside during summer break from morning until evening, catching fireflies until bedtime. Their time is scheduled and booked up with activities, every day—all day! So what’s wrong with that? I understand that working parents need activities for their children and they don’t want them to be bored, but children still need some quiet, free time to rest, explore, or just let their minds wander. Imagination allows them to create vivid images within their minds, build on prior experiences, lets them pretend, play, and just permit their little minds to rest. Relaxation is also something everyone needs—even during the school day. Try this simple exercise (DEAR) Drop Everything and Relax! Even for just a few minutes. Breathe deeply, put your head back, lie on the floor, or just allow your mind to zone out for a few minutes. This exercise is beneficial for kids of all ages.

When the new school year begins let your kids have a little down time and a quick snack before afterschool activities and remember that after all they have done they are tired and need a full night’s rest. Remember all of their basic needs must be met before the brain can focus on complex tasks and learning can take place.

Ada Homeless Services Imagine it is 104 degrees outside, showing no signs of cooling down, and you have nowhere to get cool. Or what about one of our Oklahoma ice storms, that crack and break the tallest trees? Can you even begin to think of being trapped outside, no home or shelter to huddle in, while tornados threaten and hail rains from the sky? It is a dire circumstance that leaves one homeless with even more dire consequences of being exposed to the elements. Thankfully here in Ada we don’t have the same problem that a larger city, or one on an interstate, must face. Nonetheless, it is still present. How do we help people who are literally homeless? Ada Homeless Services helps fill that gap. Ada Homeless Services is a 501c3 nonprofit agency who first opened their doors in 2004, but at that time, were called AACES (Ada Area Community Emergency Services). At that time they had a small office at St. Luke’s Episcopal Church with a minimal budget; 100% of their money came from community contributions. Now they have a much larger office at Irving Community Center, they have state and federal grants, and are an Ada Regional United Way agency. An increased budget allows them to do much more to help those facing homelessness in the community. In 2011, AACES changed their name to Ada Homeless Services in order to better explain their mission and alleviate any miscommunication about their services to the public. What this agency does is simple, but difficult. Jessica Eastwood, Director of Ada Homeless Services, has been in the social services field for 10 years and with Ada Homeless Services for the past four. Eastwood, along with her staff, attempt to help each person as best as they can, but as with any services there are limitations based on the resources available. Right now they can provide emergency transportation assistance to assist clients with getting to stable shelter, temporary food while being lodged, and emergency lodging for those families in the Pontotoc County area that are experiencing homelessness. However, since Ada, Oklahoma does not currently have an overnight shelter, there is a limit to how much they can help. Currently they house people at a local motel that gives them a reduced rate. This measure, however, is not a permanent solution. They usually stay at the motel no more than three nights, while a more permanent solution or other resources are secured. Ada Homeless Services staff also works to be preventative in their assistance. They attempt to help their clients before they become homeless. They have general program 12 • www.adahub.com

funds to assist with partial utility and rent payments to help stop eviction for clients who are at-risk. While they are not a public food pantry, they do have food and toiletries to assist people who meet homeless criteria and are receiving emergency lodging. One thing that has been a tremendous help to their agency is the Emergency Solutions Grant given by the Department of Commerce. The client must have stable income and meet a certain income level to qualify, but if they do Ada Homeless Services can possibly assist them with an increased amount of rent, deposit, and/or utility deposits. They can’t assist as many people as they do with partial utility or lodging assistance; on average they help just 3-4 people a month with that particular grant. But even then, that’s 3-4 people that are on their way to a better life, being productive members of our community that are now off the street. Our homelessness in Ada is largely invisible, though it still exists. Ada Homeless Services gets referrals from DHS, Mental Health Services, the Chickasaw Nation, local police stations, emergency rooms, and hospitals. Ada Homeless Services staff upon intake will attempt to ensure that clients benefit from all services available to them and will make appropriate referrals to these service agencies when needed. For instance, there is a great program that helps veterans with housing called SSVF (Supportive Services for Veteran’s Families). So, if you come to Ada Homeless Services and are a veteran, Eastwood and staff can direct you to you a place that could help you more. The same thing goes for many other social service agencies. Ada Homeless Services collaborates with local churches, the Chickasaw Nation, Family Crisis Center, DHS, and more in efforts to get their homeless clients stable shelter and make sure they receive the best services available to them. Even though Ada Homeless Services staff can direct some clients to more appropriate channels, there is still much work for their office to do. In the month of May they lodged 43 individuals, assisted 21 individuals with food, and helped 21 individuals with transportation. Utility and rental assistance was given to 65 people. And that’s a pretty normal month. While children only make up 20% of the total they help, many individuals leave their children with another family member so the child won’t be homeless as well. The toll of homelessness is more than lack of shelter; it tears families apart. One thing that could alleviate the homelessness problem in Ada would be an actual shelter where the homeless could get more personalized assistance. Ada Homeless Services aspires one day to erect a day center for the homeless as a phase one project and then transition in the future to an overnight shelter. This would serve many purposes. Not only would it get our homeless population out of the elements, it would also help reduce relapses of homelessness. Once a homeless person is in a shelter, they could see them every day. They could move them through a stricter housing plan and more intense case management services to eventually give them the essentials of daily living skills they need to get and keep a job, manage their own finances, and acquire a place of their own. A shelter would be more than just housing; it would be rehabilitation. There are many ways you can help. Ada Homeless Services are always taking donations for the food pantry or the toiletries closet. Food needs to be non-perishable, easy open products. Cans of soup need a pull tab. Single serving vegetables in plastic are better than cans that need can openers. Some people are in need of things like shampoo, conditioner, soap, deodorant, toothbrushes, and toothpaste. These are essentials, especially if you are planning on keeping a job. They even have some coloring books to give to the homeless children who need help. They will also be having a fundraiser in late October—dinner and an auction with some live music (event details to be announced soon). They are currently taking donations for the auction, so that is yet another way you can help. Also, looking to the future, Ada’s Got Talent will return in July 2015 as another fundraising opportunity. And, if you really want to help, there is nothing wrong with just writing them a tax-deductible check that goes directly to the cause, helping the people who need it most. We could all treat our bodies a little better, whether it is what we eat, how we exercise, or the products we use on a daily basis. Some people are intolerant to gluten, while others choose not to eat meat or products that come from animals. Others prefer food and products that are natural and free of chemicals. Many people, while they would choose to engage in one of these lifestyles or choices, just think it is too hard to find the foods and products that they need. It isn’t as hard as one might think, though. Right here in Ada, at 1413 Arlington St., you can find all you need at DK Nutrition Center. Just look for the red-roofed purple building with the giraffe peeking out from the top story. Debbie K. Fleet has been in the nutrition business for 17 years now. Her business used to be in Arlington Center. She worked there for two years before purchasing it and then opened at her current location on April 1, 2013. She wanted to have more room to be able to add more services for her customers. The new project took three years though because she wanted it to be done right. She took her design choices to a new level when she painted her own house purple and added a red roof. She wanted to make sure that the color scheme worked before she did the same for her business. She had the giraffe, Guinevere, carved by a sculptor from Africa. Guinevere slept by Debbie’s bed for two and a half years before she was installed. She wanted the giraffe as a symbol of her dedication to her customers and her vision. As Debbie says, “I’m sticking my neck out.”

And this is just a sampling of the food that she has to offer. She also has all the vitamins, supplements, herbs, and protein powders that you could need. They carry cleaning products, hair care products, moisturizers, laundry detergent, and soaps, all of which are better for you than the typical brands you would usually find.
