STRIPED BASS EN PAPIALLOTE VINCENT WILLIAM // CHEF Oak Hills Country Club

INGREDIENTS • • • • • • • • • • • • •

Striped Bass–6 oz fillet (caught at Texoma Lake) 1 Lemon 1 Lime 1 Orange 1 Tomato 1 Jalapeno 1/8 Cup White Wine 4 Tbsp Butter 2 sprigs Fresh Thyme 3 tsp Salt 3 tsp Pepper ½ small Red Onion 1 Sheet Parchment Paper

CONSTRUCTION JUNCTION

INSTRUCTIONS Finely dice the tomato, jalapeño and red onion. Slice the lemon, lime, and orange into thin rounds. Season the fish with salt and pepper. Place the fish on the parchment paper slightly off set so that later you can roll the paper up forming a bag. Top the fish with the thyme, onion, tomato, and jalapeño. Then, layer the fish with the lemon, lime, and orange slices. Place butter on top of everything and pour the white wine on top of that. Fold the parchment bag over the fish and begin rolling the corners to form a pouch. (This will allow the fish to steam as it cooks, make sure it is air tight) place the pouch on a sheet pan and bake in the oven for 7-10 min in a 425 degree oven. When finished bag should be brown. When serving use a fork and knife to open the bag but do so away from your face so the steam does not burn you. Serve with some rice and veggies for a delicious meal.

THE POWER OF FISH IN YOUR DIET Star Edwards Registered Dietitian

Through my experiences talking to people about what they eat and don’t eat, it has become clear that Oklahomans don’t eat much fish. In a land where red meat rules, it is evident why we don’t eat much fish, it just isn’t very available. Because of it’s high protein and Omega-3 Fatty Acid content, it is well worth the search for a good filet. This world is made up of healthy fats and not-so healthy fats. Omega-3 Fatty Acids have super-star status on the healthy fat list for so many reasons. Research studies show that Omega-3 Fatty Acids helps: Brain function–this includes helping to guard against depression, bipolar disorder, schizophrenia and borderline personality disorder. When brain cells are made from Omega-3 Fatty Acids, it allows for more fluidity than when the cells are made from unhealthy fats. And trust me, having a “fluid” brain rather than a “stiff” brain is a good thing.

Reduces Stress–which helps students learn better, have better reading skills, show less aggression, and even helps with symptoms of autism, and reduce the chances of Alzheimer’s disease. Heart Health–fights inflammation, helping blood to flow smoothly and help the heart maintain a steady and slower beat. Fight Inflammation–there isn’t an organ in the body that isn’t effected by inflammation. Omega-3 Fatty Acid’s role in fighting inflammation can help prevent many conditions throughout the body. Turning Genes On & Off-just because we have certain genetics doesn’t mean we are doomed by our bad genes. Nutrition actually plays a big role in which genes are expressed. Omega-3 Fatty Acids help in turning certain genes on and off. Vision-decreases the risk of age-related macular degeneration and cataract development. In Addition–a diet full of fish helps increase calcium absorption and prevent destruction of cartilage, aids in the prevention of cancer while improving the survival rate of those who have cancer. Plus, fish-eating women have fewer premenstrual syndrome symptoms. Wild-caught Alaskan salmon is a good choice for low mercury content and high Omega-3 content. Sardines and herring are also a good source of Omega-3 Fatty Acids and have relatively low mercury content. Pregnant and breastfeeding women, and young children need to limit their consumption of fish and should consult with their doctor to determine their weekly limit.

June 15th Life Community Church of Ada will host a ribbon cutting ceremony for their new church and a memorial chapel to honor the lives of children who sleep in death. The project is in cooperation with Shirley and the late Harland Stonecipher, the Kerr family and the Chickasaw Nation. The campus location, at 3700 Prepaid Way, is hewn out of a hill on ten acres near a historic landmark. The church is just a few hundred yards from the burial site and original cabin belonging to Robert S. Kerr (1896-1963). Kerr’s father leased the land from the Chickasaw Nation and homesteaded the place where he would begin a legacy as an oil tycoon, politician, and philanthropist. LCC realized in 2011 they had outgrown their current location. The most they had hoped was to remodel a larger building, until church members Harland and Shirley Stonecipher asked if they could help. “The Stoneciphers have funded the church and chapel, a wonder-

ful and benevolent gift that is just miraculous,” said Senior Pastor, Mickey Keith. In August 2005, the Stoneciphers suffered the loss of their son, Brent, daughter-in-law Tina, and 11-year-old granddaughter, Nicki in a plane crash. They wanted to memorialize children who are lost in death. “Harland said, ‘Mickey, you never get over the loss of a child. Each day that goes by you lose memory of what their voice sounded like, what they looked like. We have found the best healing and the only healing is doing what benefits others. This is one of the reasons we’re donating to make this possible.” The late Harland Stonecipher, who passed away in November 2014, was the founder and former president of Prepaid Legal Services, Inc. The company donated 3 acres, the Kerr Foundation, Inc. donated 7, and the Chickasaw Nation partnered with the > www.adahub.com • 9


Kerr Foundation to build a family pavilion and provide landscaping. In a strange twist of fate, Keith later learned from Kay Adair, the daughter of Robert S. Kerr, that the Kerr family had also experienced their own loss of children. Robert S. Kerr lost twins to childbirth, and later lost another child and his wife also during childbirth. “Robert S. Kerr is the one buried on that hill. He lost three children and we’re building a memorial chapel for lost children. I told Ms. Adair that I believed if he was alive today, he would love what we are doing,” said Keith. The chapel design demonstrates the way sound, light, and space affect atmosphere. The color from a large stained glass window dances with cascading sunlight, warming the room’s reverent silence. The chapel displays the names, photographs or video of children on video monitors who are memorialized. The church design is a contemporary gothic style, blending modern and classic sensibilities. The high ceiling atrium is surrounded by towering glass. A stair case leads to an awe inspiring view where the sky meets green summer hills. A split level auditorium seats 350 with ample space for classroom and church socials. The grounds include a memorial garden and the family pavilion which is open to the public Monday through Friday. LCC has long been committed to the community. Keith’s father, the late John Keith was a pastor in Ada for 43 years. LCC supports several local cri-

sis agencies which include: Family Crisis Center, Ada Homeless Service, House of Hope Pregnancy Crisis Center, Salvation Army, and LCC Benevolence. Mickey Keith is also president of the Independent Assemblies Fellowship, a 140 member association of non-denominational pastors who devote themselves to domestic and foreign missions. Keith expressed his gratitude to all who have contributed to the project. “I never dreamed in my whole life that anything like this would ever develop. It’s really a dream come true, a blessing from God. It’s very surreal.” The ribbon cutting ceremony will be held at LCC, located at 3700 Prepaid Way at 2PM followed by light refreshments. LOCAL FISHING SPOTS by sunnie dawn smith Summertime is approaching and people will be hitting the lakes, trying to get some rest and relaxation. Lake-time fun is about much more than grilling, swimming, and hanging out with friends. It can also be a time for restful contemplation and a test of skill: fishing. We asked a local fisherman, Mike Zachary, to give our readers some tips about local fishing spots. He was full of helpful information about bass fishing in particular and several various spots within an hour drive of Ada. Mike Zachary is not just a fisherman, though. He is a local firefighter for the Ada Fire Department. When he isn’t helping the community, he runs his own window tinting business in town, Zachary’s Tint Shop. As a very busy man, Zachary has a lot of need for some quiet and restful time. This is why he is so grateful that he was given the gift of fishing at the age of four. When he’s out there, it is just him, the fish, and his boat. Since then he has continued to fish, both for pleasure and competition. Last year he won two bass fishing competition at Lake Texoma and this year he won another one. Zachary and his team also qualified to go to a national fishing competition in Mississippi at the beginning of June. Zachary is very knowledgeable about all the local fishing spots. He doesn’t have a favorite, because they all have their own purposes. Lake Konawa, for instance, has a large number of fish. In the late summer and early fall you can catch around 40-50 bass per day. Since it is a power plant lake, the water level doesn’t fluctuate much unlike other lakes. Lake Texoma, though the water level does fluctuate, can give you some of the biggest bass around. One fish that Zachary caught weighed in at 25.38 pounds on a five-fish limit. The best time to fish there is in the late 12 • www.adahub.com

winter and early spring because the females are heavy with eggs and eating a lot. Another perk to Texoma is that the zebra mussels have cleared up the water and you can see ten to fifteen feet down in the water. Not only is this beautiful, but it can also help with your fishing. While many might think of Lake Texoma as the largest lake around, they would be wrong. Lake Eufaula is the biggest lake in the state, measuring over 100,000 acres. This lake is great if you want to try out different fishing techniques. In fact, Zachary says that you can try about any technique and catch a fish because the conditions are perfect for this. Three other lakes that are great to check out are Lake Okemah, Lake Wetumka, and Sportsman’s Lake in Seminole. All three of these are small city lakes. They have a lot of shoreline grass that holds fish. This is yet another way to approach fishing. While all of these lakes are great fishing locations, you can’t forget about the rivers. The Blue River, not far from Ada at all, is full of small mouth bass in the summer and trout in the winter. It is also beautiful and secluded. You aren’t as likely to run into crowds of people at Blue River and can really find your solitude. If you are just starting to fish or have been fishing for a long time, there is a local resource that can help you. Ada Bass Masters is a local bass club that meets monthly and can offer much expertise when it comes to fishing, both locally and nationally. The meetings vary from month to month, but are usually held at Locke Supply. You can contact Johnny Babb for more information at (405) 380-3505. The best advice that Mike Zachary has, though, is to get your kids involved in fishing. It is good clean fun that they will take with them the rest of their lives.
