Vegan Meal Hot Pot VINCENT WILLIAM // CHEF Oak Hills Country Club

• 1 cup cooked rice noodles • 1 cup mushroom broth (see recipe) • 2 mushrooms • 1/2 green pepper sliced • 1 green onion • 1/2 carrot sliced thin • 1/2 squash thinly sliced

• 4 mushrooms (whole) • 1/2 white onion chopped • 2 garlic cloves smashed • 2 tbsp Fresh black pepper • 2 tbsp Mae Ploy sweet chili sauce (optional) • 1 green onion (medium size)

INSTRUCTIONS Place all prepared ingredients in a small stock pot and add 3 cups of water. Bring pot to a boil than cover and simmer for 45 min. Once it has simmered, strain and cool. For the hot pot place all veggies in a bowl and in a sauce pan. Heat 2 cups of mushroom broth. Once boiling, add to broth to the bowl and finish with spicy sweet chili sauce. *Chef’s note: all veggies to be thinly sliced

The foods eaten during pregnancy provide valuable nutrients for baby’s growth and development. Nutrients literally provide the building blocks for which baby is built. Having the correct balance of nutrition is essential for a healthy pregnancy and healthy baby. The following are three important nutrition tips for expecting mothers. Take supplements and medications prescribed by your doctor, and take them consistently. Prenatal vitamins contain folic acid (among other important nutrients). Having a deficiency of folic acid can lead to birth defects and miscarriage. Discuss any side effects and concerns with your doctor. Some women do not take prenatal vitamins because the high dose of iron found in prenatal supplements in the first trimester can cause nausea. However, supplemental iron usually isn’t needed until the final trimester of pregnancy. If your supple-

in shape ment is making you sick, your doctor can help you find alternatives, but it is important that you don’t just stop your supplements or medications without first consulting your doctor. Avoid certain foods during pregnancy, including those that increase your risk of foodborne illness. The immune system is suppressed during pregnancy. Bacteria and viruses that your body could easily fight pre-pregnancy may be able to multiply to dangerous levels during pregnancy. Purchase a food thermometer and heat meats, leftovers and other perishables to the recommended temperature to exterminate bacteria. Consume only pasteurized milk, juices and cheeses. Avoid raw eggs and broccoli sprouts (mature broccoli is okay). Be sure to wash produce. There isn’t much research on the safety of herbal teas and herbal supplements during pregnancy and it is important to discuss use of these with your doctor before consuming. Steer clear of fish exposed to industrial pollutants and those that might contain high levels of mercury. Limit your intake of caffeine (ask your doctor how much is okay for you) and never drink alcohol while pregnant. To learn more about nutrition, what to eat, which foods to avoid and infant feeding, schedule an appointment with a Registered Dietitian. The WIC (Women, Infants & Children) Program offers free nutrition counseling with a RD for those who qualify. Nutrition counseling can also be scheduled with a Registered Dietitian in private practice.

Oklahoma is a state with its own unique flavors and products. But, unless you frequent fairs and farmer’s markets, you really can’t find this wide array without some help. This is one of the reasons why Krystal Russell started her own business, Okie Goodies Box. Her business allows people to sample the tastes of Oklahoma through a subscription service. Whether you have moved across country or live just down the street, every month you can have a little taste of Oklahoma sent to your door, a treat every month. Russell realized that there was a need for a service like hers. She started it this past November and has met with great success. In fact, her first box represented Oklahoma’s flavors to celebrities such as William Shatner and Norman Reedus when she received a goodie box commission for Wizard World Comic Con in Tulsa. zels, and pecans. The box was such a success that Russell will be providing boxes again for Wizard World Comic Con this year. December was a different box for a different month. “Homemade for the Holidays” focused on entertaining guests, providing peanut brittle, mulling spices, holiday flavored coffees, dark chocolate cinnamon fudge, pumpkin pie dip, and gold shimmer sugar sprinkles. Plus, every box received an Oklahoma shaped cookie cutter. January, with all of its resolutions to eat better, inspired a different type of box, “Natural Indulgence.” This focused on natural, organic, paleo, and gluten-free treats such as high protein beef bars, snickedoodle chia cookies, cinnamon cream honey, cocoa crunch honey brittle with maca, and creamy toasted pecan butter from Ziegelmeier’s in Ada. February’s box continued in this tradition, focused on sweet indulgences for Valentine’s Day. This month they are adding something new to their subscriptions, a fudge only service called O! Fudge. With O! Fudge, you would receive a half-pound of fudge every month, ranging in single flavors to mix and match. If you choose a long term subscription, you can mix it up whenever you want. While they do offer the classic flavors like chocolate, peanut butter, and walnut, they also feature more quirky flavors like root beer and bubble gum. The original Okie Goodie Box costs $30 per month, with options to choose three-months for $81, six-months for $150, or a year for $276. Shipping runs at $4.96 per month. O! Fudge is slightly less expensive since it is focusing on just a single product. It is $13 per month, with options to choose three-months for $36, six-months for $66, or a year for $120. Shipping and handling is free for this sweettooth satisfying program. In the future, Russell is also interested in offering other single-item subscriptions, possibly focusing on just jerky or salsa or jellies. They also offer gift subscriptions that don’t automatically renew. Ok ie Goodies Box is the perfect gift for anyone you know who likes food or sweets. Art is about experimentation, but some artists like to experiment more than others. Salvador B. Jasso is one of these. He started drawing at a young age and then moved to painting. While he loves to paint, he also likes to work in other forms as well, like silk screen and woodblock. One of his most innovative achievements, however, comes in the form of his sculpture. Jasso creates both large and small scale origami animals. They appear to be light, with each fold carefully crafted. At the point where the material folds, a slight bulkiness emerges. The bright colors of origami paper envelop the swans, turtles, cats, and bunnies. These sculptures fool the eye at first glance though. They are not made of paper, but steel. They are not folded, but cut and welded. They juxtapose the lightness or form with the heaviness of material. Even when one knows that they are made of steel, the weightiness is still surprising. It is as if Superman has decided to make origami out of steel sheets. His origami steel sculptures can be seen at different locations around town. What he would really like to do, though, is make even larger animals for public spaces. Imagine a large steel origami elephant at a public park that kids could hang on. Or what about any other type of animal that would brighten our public spaces and engage the imagination? He’s made flowers out of steel, but another interest would be a bonsai garden made of steel and glass, contrasting the hardness of the material with the delicate nature of the subject. Going to a much smaller scale, Jasso plans on making jewelry out of tiny steel origami animals.

Jasso is interested in ambiguity. This is one of the things that drew him to his sculptural animals. He likes the idea of making something seem like something they are not. This theme is continued in his paintings. One of his paintings, Prince Alarming, arms emerging from a bright blue frog. His inspiration behind this is the idea that many times people try to get other people to change for them instead of accepting them for who they are. He found the classic motif of the frog prince to be an illustration of this phenomena. In this painting, the frog is being transformed into a human, showing the pain of change. However, you could just as easily see it as a human being transformed into a frog. His other paintings have a wide variety of subjects, but all embody this idea of uncertainty. Brightly colored robots grasp at hearts in their chests, but it is impossible to tell if they are pulling them out or shoving them in. It is up to the viewer to decide how the robot feels about the heart. It could be a longing, an intrusion, or even a curiosity. Other paintings contain nude bodies, but you can’t tell whereone ends or another begins. It is difficult to even tell how many bodies are there or which limbs belong to whom. They are modeled in great detail, though, seeming to push their way out of the canvas, calling to the viewer.

Building on the idea of the unconventional, Jasso also uses a form so conventional that it might even seem antiquated: portraiture. Before the advent of the camera, portraiture was the only way to create an image of the individual. Now, people almost always turn to cameras because of their ability to recreate life. However, Jasso feels that it is time to reinvent portraiture, creating a painting of a person that captures not just their face, but their personality as well. While this is something that he acknowledges could be done with photography and photoshop, it is different when you sit for a portrait and let their imagination capture your essence within line and brushstrokes. Salvador B. Jasso pushes his own limits of imagination, wanting to constantly change and reinvent his form and materials. Ambiguity and juxtaposition of unlike elements are his tools, even more so than steel, paint, and canvas. Scissortail Creative Writing Festival: THE 10TH ANNIVERSARY OF A CREATIVE INSTITUTION BY SUNNIE DAWN SMITH

For the tenth year in a row, writers, and appreciators of writing, will descend upon Ada, Oklahoma the first weekend of April. What started as a small gathering of writers has turned into something so much larger, drawing attention from across more than Oklahoma; this festival is known all across America. The first year, they had 15-20 writers read their work. This year it is 56 authors that we have the chance of meeting and hearing. Thursday, April 2 through Saturday, April 4, you can hear some of these great writers share their work at East Central University. What is it these makes this festival so special? Not only do the writers present high quality work, but they have a camaraderie that is unparalleled. Many writers remark about how coming to Scissortail feels like coming home. Most of the authors come back to read again and again or to listen to others read. Whether you have been going since the beginning or are a newcomer, all the writers and organizers try to make you feel like you are coming home as well—like you are a part of something. People come to this festival from all over the country, to read or just enjoy what is presented. Over the course of the ten years, 28 different states are represented and six current or former state poetry laureates will be reading: Walter Bargen from Missouri, Darrel Bouque from Louisiana, Karla K. Morton and Larry D. Thomas from Texas, Carol Hamilton and Benjamin Myers from Oklahoma. Two of the readers, Rilla Askew and LeAnne Howe have been recipients of the American Book Award for their books, Fire in Beulah and Shell Shaker, respectively. Numerous other writers in attendance have won state book awards as well. The festival is designed as a come-and-go extravaganza of the written word. It all begins on Thursday, April 2, at 9:30 in the morning. The first session goes from 9:30-10:45 in Estep Auditorium. The next session 10 • www.adahub.com

is from 11:00-12:15, also in Estep. After lunch, though, the sessions get broken up into two locations: Estep Auditorium and the North Lounge. Sessions run from 2:00-3:30 and 3:45-5:00. That evening, a classical guitar prelude by Jonathan Isaacs begins at 6:30, followed by one of the featured writers, Mary Kay Zuravleff. All of this means that in a single day, you have had a chance to hear 21 different authors from around the country share their work with you. Feel free to come to a single session or stay for the whole day. The festival is set up so that you can have as much or little involvement as your schedule allows. Friday morning’s schedule is similar to Thursday’s, but some sessions are shortened and split between the two venues. You can hear readers in either location from 9:00-9:50 and 10:00-10:50. From 11:00-11:50, Steven Schroeder is featured in Estep. After lunch, dual sessions return from 2:00-3:15 and 3:30-4:45. The evening culminates in a performance by Rowdy Folk at 6:30 and the work of Darrel Bourque, followed some jazz by the Moonlighter’s Combo and an Open Mic at the Ada Arts and Heritage Center. Everyone is encouraged to read at the open mic. It isn’t just for the writers presenting at Scissortail; it is for all writers. Saturday morning, the first session begins at 9:00 in Estep Auditorium and lasts until 10:30. The second session goes from 10:45-12:00. After this is the Grand Finale featuring Heid E. Erdrich. It is really just about the joy or reading and listening to readings. Last year they sold over $5,000 worth of books by writers represented at the festival. These people go all over the world and read at very prestigious institutions, but they love coming here because it is a wonderful experience and a great experience. They spend three days and nights spending time and money in our town, eating at our restaurants, soaking in our culture. Dr. Ken Hada, director of the Scissortail Creative Writing Festival, says that the friendships he has made have been the best thing. Again, there is a camaraderie that exists at Scissortail that is unique to this experience. Hada remarks that it makes him feel great when people rave about the festival and the audiences.
