Fried Fish Tacos VINCENT WILLIAM // CHEF Oak Hills Country Club

• 1 Bag of Store Bought Fish Fry Mix • Canola oil for frying • 4 oz. Striper Filet (Catfish also works) • 2 oz. Green Cabbage • 1 oz. Red Onion • 1/8 C. Red Wine Vinegar • 1/8 C. Sugar • Corn Tortillas • 1 Lemon Wedge • ¼ C. Mayo • 3 Tbs. Hot Sauce • 2 Tbs. Pepper • 2 Tbs. Lemon Pepper

Start by cutting the Striper into 5 inch strips about ½ inch thick. Season them with the lemon pepper, salt, and pepper. Place in the fridge for about 30 minutes. Meanwhile prepare your toppings and sauce. For the sauce; mix the mayo, hot sauce, and a squeeze of lemon in a bowl and set aside. For the slaw slice the cabbage very thinly, and slice the red onion very thinly. In a large bowl mix the red wine vinegar and sugar together, then add the cabbage and the red onion and allow to sit in the fridge for 20 minutes. Once the fish has marinated place it into a zip lock bag with your favorite fish fry, shake for 15 seconds then shake off excess mix and fry in 360 degree canola oil for about 4 minutes. To assemble the taco, warm up your tortilla, place the fried fish down first, then the slaw, last add your sauce and finish with a fresh squeeze of lemon and enjoy. (Note: for extra crispy fish first place the fish in an egg wash then into the fry mix).

in shape in the afternoon (usually 3:00-4:00pm) and begin to drag your feet. Most lunch skippers are known for overeating in the evening as their bodies crave food and they eat past the point of fullness.

You have probably heard that breakfast is the most important meal of the day. True, breakfast is important, but I would like to challenge that idea and say that every meal is the most important meal of the day.

Dinner is rarely a skipped meal, but dinner is also important. When dinner is skipped, it is common to snack on processed snack foods all evening. Dinner is a good chance to think about what you have eaten during the day and get in those last few veggies or glass of milk that you still need.

After waking up from a night of resting, your body has been without food for 8-12 hours. Waiting until lunch to eat can impair your ability to perform at work or at school because your body, most importantly your brain, won’t have the energy it needs to function at its best. The effects of low blood sugar can range from mood swings, behavior issues with kids, decreased learning ability and test scores to decreased productivity at work. Because the body gets accustomed to being in a fasting state, it slows metabolism in an effort to store up energy.

Did you know the USDA has determined how much protein, grains, dairy, fruits and vegetables you need each day to get the nutrients you need for your body to function properly? To make each meal live up to its maximum potential, be sure to get a good protein source (most of us skip this during breakfast…please don’t), a correct proportion of grains or carbs, then fill in with dairy, fruits and veggies during meals and snacks. If you concentrate of getting the correct amount of servings each day, every meal will be important because it is another opportunity to get nutrition instead of empty calories.

JUST A SMALL, HOMETOWN, POOR, KANSAS BOY? Some may say...Coming from a family of six growing up without a lot of extras in life John Bisterfeldt hurdled through many obstacles in life. From his family breaking up several times over and living in three homeless shelters, at the age of 13 he was no longer living with either of his parents. Moving in with loving families in his church at the time, he moved from house to house over the formative years of his life. Not many people probably thought he'd amount to much, but with his faith in his God who is on his side, he rose above the darkness of his past and allowed it to become stepping stones into a bright future that Ada, Oklahoma is now being a part of! Liv ing w it h one of those families, the man of the house was a jack of all trades. John began learning how to do many things, one of them being working on houses. At the age of 20 he bought his first home. it being a real fixer upper he began to indulge into the thing he does for a living today . . . remodeling! Though he worked cutting trees, mowing at a golf course and Polo field, pressing clothes at a dry cleaners, tellering among many other things at a bank, selling property, casualty, life, and health insurance, and rebuilding automobiles, John began just doing small odds and ins for realtors and insurance agents that he knew. As they began to feed him work his experience and knowledge grew. "It's been a hard road to travel" he says "but it’s the rocky road my feet have traveled down that makes me appreciate the small things in life I now have." Moving to Oklahoma seven years ago this July, John started over in Pauls Valley totally gutting out

the famous Rennie Mansion. He came to Ada first working for the mansion owners father in law. As he was there working Tommy Redman was building a deck for the man and his wife, when Tommy asked John if he had a business cards. The answer was no, cause at this time he hadn't had a business name much less thought of going into business full time. So Construction Junction was born and painting that deck was his first job under the business name. Soon he was meeting people left and right and the business began taking off. As relationships started to form there was one man who really believed in him. He wants to openly thank Zane Bowman for the encouragement he gave and for having faith in this small hometown poor Kansas boy! "If it wasn’t for Zane I honestly don’t believe I'd be what I am today! He helped me get on my feet here and not knowing me for probably any more than 3 months, Zane somehow saw who I could be. He once told me "I see you getting big here one day". Holding on to what he was told, John worked hard. Late nights and weekends wasn’t uncommon in trying to build his business. Relationships and good customer service is what he focused on. Getting married just a little over a year ago the reception hall was filled with mostly previous customers that he doesn’t just see as customers but friends! "The success of my business has their names written all over it" John says " Thank you, you'll have made Construction Junction" In the latter end of 2014 John bought out a small granite fabricating business. Starting out renting a little building on Main St, they have recently bought a building and moved over off of where Mississippi and Cradduck roads meet at the big curve. The white cinder block building sitting alone by itself offers lots of potential to a thriving business! Construction Junction currently has 3 employees and with one of them having 18 years of granite fabrication experience they offer quality work to their customers. "We have room to grow and as soon as time and money permits we'll have a beautiful showroom." Though they specialize in bathroom and kitchen remodels, John says not to be afraid to ask what else they can do for you, because they can do it all. There are only certain things they have to sub out to other contractors such as electrical and plumbing but mostly they do it all from the outside to the inside of your home. Dear Mom, I just wanted to take a moment to say “Thank you”. From the moment of conception you became a mommy and at that same point and time, I became your child. I didn’t know you and you didn’t know me, but we had a special connection instantly. As I formed inside of your tummy, you made certain choices that would protect me and give me a good start. You still do what you can to protect me even now. I know the nine months weren’t easy and I am grateful for your sacrifice. I still see you making sacrifices for everyone else all these years later. I guess that’s one of those qualities that just stuck with you. One day, I entered this world and all you could do was smile and think how special I was. You were so happy when I was born and it was like you were born to be my mom. Well, the real work began when we got home from the hospital. I was so excited to be alive that I never wanted to sleep through the night (sorry about that). I also want to apologize for all of those diapers! You just kept on going though, even when you were so tired you could hardly stand up. You fed me, you gave me a nice home to live in, you clothed me (although, some of your outfit choices for me were questionable), you taught me to walk and speak, you got me cool toys with awesome boxes to play with and so much more. You have done so much for me. A few days later, or so it seemed, I was off to school. As I walked up to the doors, you watched nervously from 8 • www.adahub.com

the sidewalk. I was a little scared but you always made me feel like I could do anything. I guess now would be the time to apologize for when I thought I could fly off my bunkbed. Like I said, you made me feel like I could do anything, so that one was on you. School was tough sometimes, but you always helped me out and you packed some pretty amazing lunches throughout the years. Sometimes you even made the sandwiches look like dinosaurs. I know now that it was all a scheme to get me to eat something healthy inside like spinach…you got me good! When I became a teenager I had to put the dino-wiches behind, especially after that one kid saw it in the cafeteria on the first day of 7th grade. You were there for me during everything. You taught me how to dance awkward ly for a ll those school functions. I have to level with you now though, I just stood at the back with a plastic cup full of fruit punch hoping the clock would spin faster. You were there for me when I learned how to drive, my first date and of course high school graduation. The best thing about it all is, I never have felt like you do all these things out of obligation. It just feels like it is in you to care about me with everything you have. You have given much. You have sacrificed much. You have loved much. I don’t know if I can ever say thank you enough for all you are to me. I will try though. As long as I am alive, I will try to make sure you know. A da A ir E xpo On June 5-6, 2015, the Ada Air Expo will host the 12th Annual Ray Stout Memorial Warbird Fly-in and Air Show at the Ada Municipal Airport, The primary focus this year is celebrating the 70th anniversary of the World War II victory. These aircraft are an important part of our American Heritage. In addition to paying tribute to the magnificent flying military monuments, we will also honor past and present service members during the day on Saturday, including grand commander of the event WW II veteran, Larry Drennan. Friday events kick off at 9 a.m. and include aircraft arrivals, static displays as well as helicopter rides plus tandem parachute jumps available to the public. Friday evening, the Ada chapter of the Experimental Aircraft Association will host a hamburger fry and outdoor movie on airport grounds. This year’s featured film is Disney’s Planes 2, the story of Dusty Crophopper. Saturday June 6, a 5K Run will start the day’s festivities at 7 a.m. After the run, aviation fans will be treated to a full slate of aeronautical activities including flying military aircraft, static displays, helicopter rides, an afternoon airshow featuring world-class acrobatics, tandem parachute jumps, aircraft rides available to the public and a variety of children’s activities. Food and concessions from vendors will be available. Gates open 6:30 a.m. Saturday morning. Entry to this year’s Air Expo is provided at no cost, but there will be a $10 parking fee for each vehicle. Spectators attending events both Friday and Saturday may purchase a weekend parking pass for $15. HANIWA BY SUNNIE DAWN SMITH

What is Haniwa? At first glance, the word might seem strange and foreign. It is Japanese in origin. The name refers to terra cotta sculptures that were used for rituals and also buried with people. These small scale sculptures were last used no fewer than 1,500 years ago. They are a part of ancient eastern world history. Haniwa, however, is not just a significant form of Japanese sculpture; it is also the name of an Oklahoma band that has its roots right here in Ada. The band chose the name, Haniwa, by democratic process. Each of the members brought their own band name to a meeting and gave a justification for it. Dylan Walling, one of the founding members, suggested Haniwa. There sculptures were beautiful works of art, yet still had a darker significance. He thought that this was fitting, since their band produces beautiful music, yet also delves into the deeper, darker side of music as well. The band voted, and Haniwa was chosen.

Dylan Walling and Tyco Tristan Holloway were the beginnings of the band. In 2010, they started a band called La Folle. This gave them a taste of what they wanted. They played with several different people and tried lots of different lineups. Walling wrote all the songs. While it was fun, it wasn’t as collaborative as they really wanted. After leaving Ada, Walling discovered that a coworker of his, Allan Pellegrin, wanted to join in with him and play some music. But after several months of playing bass with the band, Pellegrin and his wife ended up moving. However, before moving, Pellegrin did introduce a friend of his, Shirley Sanders, to the group. Holloway then added another friend to the band that he had played with casually in the past, Shawn Stafford. A few jam sessions and lengthy discussions later, Haniwa was born. The democratic process is one reason why these musicians work so well together. This process can be painstakingly slow, but it ends up working out. They agree with the system and vote on it collectively. No single person is the principle figure; they all share the spotlight. Hey write the songs together in collaboration. They usually have two guitars, one bass, keyboards, and two to three vocalists. However, these roles are malleable, changing with the song. This philosophy to music has made it possible for vastly different styles to co-mingle, bringing the best out of each.

In the beginning, it was questionable if they were going to be able to make these different tastes work together, but they pulled it together in a spectacular way. Generally speaking, their style is alternative rock with electronic elements; more specifically it sounds a bit like Radiohead with some elements of Portishead. Each member brought something different to the sound, though. Shawn Stafford is really influenced by jazz and jazz theory. He loves to listen to jazz guitarists like Djengo Reinhardt. Shirley Sanders is much more into atmospheric electronic music. She prefers more obscure electronic and indie bands. Tyco Tristan Holloway brings a grungy flavor to the music. He generally plays distorted or heavy electric guitar. Dylan Walling has more of a classical background, bringing the form, structure, and experimentalism of classical music to the rock and roll sensibilities of his fellow bandmates. It took a while for the band to start performing in public. In fact, their first real performance was a disaster. They use a laptop for the rhythms and couldn’t hear it through the monitor. Everything fell apart quickly. It was so exhausting that they took a small break from performing in public. It was a great learning experience, though, and brought them all closer together. They recorded their first album, Haniwa, and are currently working on songs for a second album. Things are definitely looking up for Haniwa. Derek Brown of The Flaming Lips tweeted about how there was, “Something cool happening,” after he heard their album. And this year they are playing in a prime spot at Norman Music Festival. Even though three of the band members, Walling, Holloway, and Stafford, are originally from Ada, the majority of their shows are in and around OKC. This is something that will be changing soon, though. To keep up with future performances, including ones closer to home, you can like them on Facebook, Twitter, and Instagram. They have a Tumblr and a pages on Reverbnation. You can also find them on haniwaband.bandcamp.com. Several of their songs stream on Sound Cloud. You can also listen to them on Spotify or purchase their album on iTunes. Soon their music will be coming to Pandora as well. What do you think of when you hear the word “chiropractor”? Do you think of aching backs? Probably so. But what about headaches? Maybe so. But what about stomach pain? Probably not. The human body is an amazing thing. The nervous system that controls all of our bodily functions runs through our spinal cord, and those nerves connect to every organ in the body. A chiropractic treatment is about much more than the back; it is about the general welfare of your entire body. Dr. Patrick Qualls, at Starns and Qualls Chiropractic, appreciates this fact about the human body. Qualls is originally from Stratford where he played football. However, after playing football he had a headache that lasted for two years. Sometimes it was mild, sometimes severe. He didn’t know what to do other than take Tylenol. However, some injuries are too severe to be cured with over-the-counter medication. He went to Dr. Starns, had three chiropractic adjustments, and then the pain was gone. The headache was due to a misalignment at the base of the skull caused by a football injury. This experience made Qualls decide to go into the same field that finally eased his pain. His main goal is to help his patients however he can. In some cases, the problem is because of an underlying issue like gall bladder disease or pancreatitis. In these cases, he directs his patients to the appropriate help. In most cases, however,

he can provide the remedy and there are some things that only a chiropractor can fix. There are a wide variety of ailments that Dr. Qualls can help you with: back pain, neck pain, shoulder pain, arms, sports injuries, ankles, foot problems, etc. If you have numbness or tingling or headaches, he can help you. He also uses kinesio tape, which is an amazing type of tape that binds your injuries while also letting it breathe. It can help you deal better with cracked ribs, stress fractures, hamstrings, torn muscles, and much more, letting you exist comfortably while also mending the wound. Often you can fix a problem in a single visit; other times it might take multiple visits because we are continually causing trauma to ourselves. But they do take new patients and you can usually get an appointment the same day you call. They are taking new patients and try to schedule same day appointments when possible.
