Pumpkin Spiced Crème Brulee

INGREDIENTS

1 qt. heavy cream 1 vanilla bean, split and scraped 1 cup of sugar, divided 6 large egg yolks 2 quarts hot water

3 tbs cinnamon 3 tbs ground all spice 1 tbs ground clove 2tbs vanilla extract

Preheat the oven to 325˚ F. Place the cream into a medium saucepan set over medium-high heat and bring to a boil. Remove from the heat, cover and allow to sit for 15 minutes. Remove the vanilla bean and reserve for another use. In a medium bowl, whisk together 1/2 cup sugar, cinnamon, all spice, clove, vanilla extract, and the egg yolks until well blended and it just starts to lighten in color. Add the cream a little at a time, stirring continually. Pour the liquid into 6 (7 to 8-ounce) ramekins. Place the ramekins into a large VINCENT WILLIAM // CHEF cake pan or roasting pan. Pour enough hot water into the pan to come halfway up the sides of the ramekins. Oak Hills Country Club Bake just until the creme brulee is set, but still trembling in the center, approximately 40 to 45 minutes. Remove the ramekins from the roasting pan and refrigerate for at least 2 hours and up to 3 days. Remove the creme brulee from the refrigerator for at least 30 minutes prior to browning the sugar on top. Divide the remaining 1/2 cup vanilla sugar equally among the 6 dishes and spread evenly on top. Using a torch, melt the sugar and form a crispy top. Allow the creme brulee to sit for at least 5 minutes before serving.

Propane Gas Torch Safety: Propane gas torches are highly flammable and should be kept away from heat, open flame, and prolonged exposure to sunlight. They should only be used in well-ventilated areas. When lighting a propane gas torch, place the torch on a flat, steady surface, facing away from you. Light the match or lighter and then open the gas valve. Light the gas jet, and blow out the match. Always turn off the burner valve to “finger tight” when finished using the torch. Children should never use a propane gas torch without adult supervision.

The presence of stress causes physiological changes in many body systems. Stress increases cortisol and adrenaline hormones and can signal asthma attacks, heartburn, high blood pressure, elevated heart rate, diarrhea and constipation. Over time, chronic stress can lead to weight gain, decreased immunity, elevated cholesterol, heart disease, heart attack, stroke, high cholesterol, increased risk of diabetes, ulcers, and fertility issues in men and worsening of PMS and menopause symptoms in women. Enjoying a well rounded diet of 6 ounces of whole grains, 5 cups of fruits and vegetables, 6 ounces of protein, and 3 cups of dairy a day (this is approximate and may be different depending on the individual) with minimal processed foods, added sugars and unhealthy fats will help keep you feeling on top of your game. Here are more specific nutrition guidelines:

• DO include carbohydrates in your diet. I’m notorious for defending the honor of carbs. Carbs, in recommended amounts, are important for energy and preserving muscle. In addition, carbs increase serotonin, a brain-calming hormone that helps fight stress. The key is balance. Ingesting too many carbs can be just as bad for you as not getting enough. Also, aim for whole grains, which are generally lower on the glycemic index scale and provide more fiber and other nutrients. • DO get enough fiber in your diet. Fiber can help alleviate constipation and diarrhea, and can help with cholesterol levels, heart disease and appetite regulation. Besides whole grains, fruits, vegetables, and legumes are also high in fiber. • DO include a wide variety of fruits and vegetables in your diet each day. Besides fiber, fruits and vegetables provide antioxidants that balance out free radicals in our body. Free radicals are known for triggering a number of diseases in the human body. One cause of free radicals is inflammation, which is often increased during chronic stress. Different colors of fruits and vegetables contain different nutrients and antioxidants, so the more colors you enjoy, the greater your defense against free radicals. • DO include magnesium rich foods, especially if you have headaches or migraines when stressed. Studies suggest that migraine suffers usually have lower levels of magnesium in their bodies. Increase your levels by including almonds, spinach, cashews, cereal, soymilk, black beans, and avocados. • AVOID processed foods, which are often high in saturated fat and trans fats. These fats promote inflammation and disease. • AVOID high intakes of sugar, which cause unstable blood sugar and lower immunity. • DO exercise! Studies over the past 30 years have continued to show regular exercise improves mood in people with mild to moderate depression and can help with severe depression.

IN THE EIGHTH GRADE SHE ASKED TO BE ON THE FOOTBALL TEAM AND WAS TOLD NO. Football runs through the blood of many Oklahomans. People plan around the high school games on Friday and the college games on Saturday. The game pulls together communities and brings dreams of huddles and touchdowns to teenagers. This dream is not just for boys, though. Many girls also dream of being on the football field, though they don’t usually have the chance. Occasionally a young woman might have the chance to play on a high school or college team, but it is the exception to the rule. All other sports have their female counterpoints. Basketball, soccer, tennis, and golf—they are all the same for both men and women. Softball is the companion to baseball. Football has no such counterpoint At least it didn’t until now. The Women’s Xtreme Football League has grown out of this need. Many women around the country have decided that they want to have the chance to play one of the few sports that has been denied them. We currently have two teams in Oklahoma—one in Moore and one in

Ponca City. Within the past couple months, two women from Ada have joined this semi-pro team in Moore, the Oklahoma Lady Force. Rainee Easley joined at the end of August and Jenni Bolin joined just last month. This isn’t flag football or a powder-puff league. It is the same game as men’s football, complete with tackles and padding. The only difference is that women play with eight people on the field and men play with eleven. Right now they are currently in training though they are doing scrimmages as well. Their season, unlike other football, lasts from March to June. So this gives you a chance to enjoy football for even more of the year. Rainee Easley has always wanted to play football. She was raised with four brothers by her father. She would get out there with and help them practice football. In the eighth grade she asked to be on the football team and was told no. Instead she played about every other sport out there. In school she played basketball and softball and since then she has added volleyball, cross fit, and mixed martial arts. Finally her dream came true and she gets to play football for a cheering crowd. Rainee had a friend who told her that they were starting a team for women. She had to try out and now she plays tight end or wide receiver on offense and cornerback on defense. Rainee had played high school softball with Jenni Bolin and they were playing together again at a softball tournament. It was there that Rainee told Jenni about the Football league. The next day the two of them went to practice together and now Jenni is the quarterback. Jenni’s older brother, Cody Bolin, is her inspiration for playing football. Jenni remembers the day that her brother found out he was going to play for Ada High School. He was so excited that he came home and had Jenni put on his gear. They proceeded to play in the backyard while Cody tackled his sister. This was a moment that stood out in Jenni’s mind and made her jump at the chance to play football just like her brother had. This isn’t just an opportunity for these two young women, though. The Oklahoma Lady Force is still accepting players and the Women’s Xtreme Football League is accepting applications for more teams within the league. WINTERIZE YOUR HOME

Cooler weather is on the way and it is important to make sure your biggest investment is safe. Winterizing your home can be one of the most important things you do this season, and it can also save you quite a bit of money. Some projects may require a professional but most preparations for winter weather can be done by any homeowner. We have compiled a list of some of the top ways you can protect your home this winter; so read on, make a list for yourself and get out there and get your DIY on!

turn down your water heater While many conventional water heaters are set to 140 degrees F by installers, most households don’t need that much steam, and end up paying for it -- in dollars and the occasional scalding burn. Lowering the temperature to 120 degrees F (or lower) would reduce your water heating costs by 6% to 10%.

put up some plastic For just a few dollars, pick up a window insulation kit at your local hardware or discount store. Don’t worry—properly installed, window plastic is essentially invisible. Adding a buffer against drafts and extra still air space can give a nice boost to your home’s ability to hold heat. Don’t try to use aluminum foil instead, it doesn’t look as good.

change furnace filters Yes it’s easy to forget, but it’s important to replace or clean furnace filters once a month during the heating season. Dirty filters restrict airflow and increase energy demand. Here’s a worry-saving tip: mark a monthly check on your calendar. Better, consider switching to a permanent filter, which will reduce waste and hassle. Did you know that disposable fiberglass filters trap a measly 10% to 40% of debris? Electrostatic filters trap around 88%, and are much better at controlling the bacteria, mold, viruses and pollen that cause illness and irritation. They cost $50 to $1,000 or more. Another good choice is a genuine HEPA filter, which can remove at least 99.97% of airborne particles. HEPA filters are based on Department of Energy standards. But avoid “HEPA-like” filters, which can be vastly less effective

watch out for those drafts According to the U.S. Department of Energy, drafts can waste 5% to 30% of your energy use. Start simple and adopt that old Great Depression fixture—the draft snake, which you can easily make yourself. Just place a rolled bath towel under a drafty door, or make a more attractive DIY draft snake with googly eyes, felt tongues and the like. You can use any scraps of fabric—even neckties—and fill with sand or kitty litter for heft. Make sure drafts aren’t giving your thermostat a false reading too.

mind that thermostat It’s easy to forget to turn down the heat when you leave the building, but doing so is one of the surest ways to save money. Most households shell out 50% to 70% of their energy budgets on heating and cooling, so why pay for what no one uses? For every degree you lower the thermostat during heating season, you’ll save between 1% and 3% of your heating bill. Make it easier with a programmable thermostat; they are widely available for as little as $50, and the average family will save $180 a year with one

We hope you take this advice on winterizing your home this season. Set a day before it gets too cold and commit to preparing your home for winter. Remember, it will make your family more comfortable and will also save you some money.

The

Holidays BY ADAM FLANAGAN There are countless stories, books and movies about the holidays. Some are sad. Some are happy. Some are downright menacing. Somehow, they strike a chord with each of us in a unique way. Perhaps they remind us of our wild family get togethers where uncle So and So does that one thing. Maybe they make us feel all warm and fuzzy inside. For some of us, it might bring the sting of loneliness, wishing we were sharing that special time with someone who meant the world to us. Good or bad, the holiday season is just full of emotions that we can all relate to. First we are hit with Thanksgiving. Many of us enjoy this one because it means we get out of work and can head into the woods for some hunting. Whether we see an animal or not, it’s peaceful out there. It gives us the chance to stop, take a breath and enjoy a little silence. For others, it means getting out those old family recipes and cooking a meal that is sure to challenge any belt. There is nothing like getting into the kitchen and preparing food for family and friends that always puts a smile on every face. Some people like to skip the meal preparations and go out to a restaurant to eat. Power to you...I am not a fan of cleaning up the mess after a big Thanksgiving meal either. It doesn’t really matter how your family does it, it is just the fact that you do it together. Holidays are about being together. After the food settles a bit, some of us run out the door to stand in lines to get deals on presents. All of you who do this thing called Black Friday have my respect. I have been out there and it is terrifying. I also have the pleasure of celebrating my wedding anniversary in the middle of the holidays. On December 1, 2001 I married my best friend, Karrie. I always told her the one thing I wanted to change about her was her last name...and on that day almost 13 years ago, I did. I got my Christmas present early that year. Our marriage is the greatest gift I have ever received on the planet. Speaking of gifts, the holiday that trumps all others, occurs every December on the 25. In case you were wondering, it is called Christmas. >

Food is better when shared. A smile is better when shared. Love is better when shared. I don’t know a person who doesn’t like Christmas. Well, there is Scrooge, but I don’t know him personally and I think he changed his mind towards the end anyway. Christmas is fun, especially for kids. I see so many kids just lit up during the Christmas season. They might still be hopped up on candy from that one holiday in October, but I think it might be the presents. What kid doesn’t like a present. Presents are fun, but I enjoy the lights, the trees and all the coffee you drink since it is finally cold outside. Putting up lights can be a hassle, somewhat dangerous at times but it is worth it. You know what I mean. You get the last one hung, the blow up Santa is waving his giant hand and you have your “Clark Griswold” moment. It is glorious. Some rejoice because it looks glorious and others just because they are finished. We seem to feel just a little happier during this time of year. Is that happy feeling because of all the food, hype, time off of work or gifts? Those things are great, but I believe it is because of the togetherness. It just feels good to share life with people. Food is better when it is shared. A smile is better when it is shared. Love is better when it is shared. How do you get together for the holidays? The Ada Hub hopes you have a great holiday season. McCortney Family In-Home Care by Sunnie Dawn Smith

One of the most troubling aspects of aging is wondering who will take care of you once you can no longer take care of yourself. Grown children can be busy taking care of their own jobs and children. Nursing homes require you to move out of your own home. Thankfully, one local business has an answer to a difficult question. McCortney Family In-Home Care allows their clients to stay at home in their comfortable, familiar, environment while receiving the care that they desire and require. McCortney Family In-Home Care was started in 2008 by Greg McCortney. The agency director is Brandon Bolin. Many of our aging seniors are more comfortable staying at home and maintaining their independence; they don’t want to go to nursing homes. This service is also different from a hospice or home health company. Home health nurses will monitor your health and medication, but they won’t usually do your laundry. Hospice services help make

the last months of your life more comfortable, but they won’t necessarily clean your kitchen. The In-Home Care service provides many things that others won’t. They can make your life easier by providing the means to live at home alone even after you aren’t capable of doing so. When a client first contacts the In-Home Care service, an RN assesses their condition and matches a caregiver based upon the client’s needs. They have two different types of caregivers available: Certified Nurses Aids (CNAs) and companions. Their services include medication monitoring, meal preparation, light housekeeping, laundry, helping the client run errands, or even just going on walks with them. While assessing the client’s needs, they will also match them with any service that could help them. McCortney Family In-Home Care works closely with home health care, hospice, and even Meals on Wheels. Whatever your situation, they can help. Unlike other services, they are strictly private pay, meaning that a doctor’s order is not necessary. This can be beneficial to many of their clients. Some people aren’t sick enough to get a physician’s referral but still can’t function like they once did. They will help you whether it is long term or short term. Most clients use their service 20 hours per week or more, but they can also help on weekends or holidays on a case by case basis. Maybe a relative has just been diagnosed with Alzheimer’s and needs a friendly face in the house to help them through their days. Whatever the situation, McCortney Family In-Home Care can help. Oklahoma requires in-home care services to be licensed. This helps ensure that your family members are getting the quality care that they deserve. Another bonus to using McCortney Family In-Home Care is that they are licensed, bonded, and insured. All of the staff is drug tested, background checked, and covered by worker’s compensation. You don’t get this kind of security when hiring private individuals. If you or someone you know could benefit from this kind of service, please contact the caring staff at McCortney Family In-Home Care. They will assess the situation and get you what you need. If you are a veteran, they also work with the Department of Veteran’s Affairs to identify veterans who need assistance. This program is then paid for by the VA. You can stop by their office at 117 S.
