Ingredients 1 (16-lb) turkey at room temperature 1 hour, 1 tablespoon salt 1 3/4 teaspoons black pepper 2 cups water 7 to 8 cups turkey stock 1 stick (1/2 cup) unsalted butter 3/4 cup all-purpose flour 1 1/2 to 2 tablespoons cider vinegar Stuffing of your choice
Make turkey: Put oven rack in lowest position and preheat oven to 450°F. Rinse turkey inside and out, and then pat dry. Sprinkle turkey cavities and skin with salt and pepper. Fold neck skin under body and secure with metal skewers, then tie drumsticks together with kitchen string and tuck wings under body. Put turkey on rack in roasting pan. Add 1 cup water to pan and roast without basting, rotating pan halfway through roasting, until thermometer inserted into fleshy part of thighs (test both thighs; do not touch bones) registers 170°F, 2 1/4 to 2 3/4 hours.(If turkey is stuffed stuffing should

be 165°F minimum) Carefully tilt turkey so any juices from inside large cavity run into roasting pan, then transfer turkey to a platter, reserving juices in roasting pan. Let turkey stand, uncovered, 30 minutes. Make gravy while turkey stands: Pour pan juices through a fine-mesh sieve into measuring cup (do not clean roasting pan), then skim off and discard fat. (If using a fat separator, pour pan juices through sieve into separator and let stand until fat rises to top, 1 to 2 minutes. Carefully pour pan juices from separator into measure, discarding fat.) Straddle roasting pan across 2 burners,
then add remaining cup water and deglaze roasting pan by boiling over high heat, stirring and scraping up brown bits, 1 minute. Pour through sieve into measuring cup containing pan juices. Add enough turkey stock to pan juices to bring total to 8 cups (if stock is congealed, heat to liquefy). Melt butter in a 4-quart heavy pot and stir in flour. Cook roux over moderate heat, whisking, 5 minutes. Add stock mixture in a stream, whisking constantly to prevent lumps, then bring to a boil, whisking occasionally. Stir in any turkey juices accumulated on platter and simmer 5 minutes. Season gravy with salt and pepper, and then stir in cider vinegar (to taste).

McCourtney Family In-Home Care by: Sunnie Dawn Smith
One of the most troubling aspects of aging is wondering who will take care of you once you can no longer take care of yourself. Grown children can be busy taking care of their own jobs and children. Nursing homes require you to move out of your own home. Thankfully, one local business has an answer to a difficult question. McCortney Family In-Home Care allows their clients to stay at home in their comfortable, familiar, environment while receiving the care that they desire and require. With offices in both Ada and Ardmore, there are many people that they can help. McCortney Family In-Home Care was started in 2008 by Greg and Ashley McCortney. The agency director is Brandon Bolin. Many of our aging seniors are more comfortable staying at home and maintaining their independence; they don’t want to go to nursing homes. This service is also different from a hospice or home health company. Home health nurses will monitor your health and medication, but they won’t usually do your laundry. Hospice services help make the last months of your life more comfortable, but they won’t necessarily clean your kitchen. The In-Home Care service provides many things that others won’t. your life easier by providing the means to live at home alone even after you aren’t capable of doing so. When a client first contacts the InHome Care service, an RN assesses their condition and matches a caregiver based upon the client’s needs. They have two different types of caregivers available: Certified Nurses Aids (CNAs) and companions. Their services include medication monitoring, meal preparation, light housekeeping, laundry, helping the client run errands, or even just going on walks with them. While assessing the client’s needs, they will also match them with any service that could help them. McCortney Family In-Home Care works closely with home health care, hospice, and even Meals on Wheels. Whatever your situation, they can help. Unlike other services, they are strictly private pay, meaning that a doctor’s order is not necessary. This can be beneficial to many of their clients. Some people aren’t sick enough to get a physician’s referral but still can’t function like they once did. They will help you whether it is long term or short term. Most clients use their service 20 hours per week or more, but they can also help on weekends or holidays on a case by case basis. Maybe a relative has
just been diagnosed with Alzheimer’s and needs a friendly face in the house to help them through their days. Whatever the situation, McCortney Family In-Home Care can help. Oklahoma requires in-home care services to be licensed. This helps ensure that your family members are getting the quality care that they deserve. With fall here, and winter coming soon, it is time for new fashion and new style. Whether it is for yourself or as a gift for others, Farm Girl Boutique at 110 E. Main Street has a beautiful collection of clothes, shoes, accessories, gifts, décor, as well as many other products. One of the remarkable things about this store is that the style is so unique that you could only find it here in Ada. Every single piece is chosen carefully by owner Kenzie Ashcraft in order to present a distinct vision. Kenzie is an Ada girl. She graduated from Byng High School, then moved to Oklahoma State University in Stillwater, and then came back home when she got married. Last year she had the opportunity to open her own business. As she says, “I never thought I would be blessed to have my own shop.” But she does and she enjoys every moment of it. When she was presented with this opportunity, she had to think long and hard about what she would call it. What was the perfect name for her shop? During this time she was reading a devotional about the book of Ruth. It struck her that the qualities that Ruth possessed were the same qualities that she strived to embody—loyal, hardworking, and humble. It also struck her that Ruth worked in the fields, harvesting with Boaz. Ruth was the original Farm Girl. So, after much thought and consideration, Kenzie decid-
ed that her store would be Farm Girl Boutique as both a nod to her own upbringing on a farm and, even more importantly, as a tribute to her Biblical heroine. Faith is very important to Kenzie. One of the main things she wants to do with her business is to glorify God in everything that they do. It is as much about Him as anything else. As she says, “It is His store. We are just the shopkeepers.” The style of the store is distinctly Kenzie. She loves the farmhouse style. There is a certain quaint and homey feel to the items that she carries. It is a modern simplicity, taking something that is old and making it new. It is such a distinct style that there is no other store quite like it. You might find some items that remind you of Farm Girl Boutique, but the uniqueness of the store stands alone as its own wholesome creation. Kenzie carries a wide variety of products, including apparel for women, girls, and babies. They have shoes in many different styles, including cowboy boots and Minnetonka Moccasin Co. David Hayes was born in an ambulance at mile marker 9.6 on the side of a Colorado mountain. He joined the world at his own pace, diving, headfirst, into the fray. While none of us really had any choice as to where or when we were born, this seems to work as a metaphor for his life. David has followed his heart, had some adventures, and never been afraid to just jump in, even on the side of a mountain. A hometown boy from Ada, David has had the chance to be a musician, an entrepreneur, and an inspiration to many. David Hayes was raised as the son of a pastor. His father has been assis-

tant pastor at the Evangelistic Temple where Crosspointe now stands and also preached at the Refuge. When David was growing up, despite his strong faith, he didn’t think that the ministry would be right for him. However, this is where he got his passion and he realized that he did want to be like his dad. His faith and ministry is a large part of the work he does now, trying to help others to become stronger and more steadfast in their beliefs. After graduating from Ada High School, David decided to join the Airforce Academy. While he loved his stud-

ies, he received a medical discharge because of a kidney disease. He returned to Ada and graduated from ECU with a degree in Business Entrepreneurship. While in college, David played guitar with praise and worship bands. He loved making music with other people, but when he graduated college he ended up moving towards a solo career. The life of a musician is grueling. He moved to Florida and worked in a family landscaping business. He played a lot of shows, sometimes sleeping out of his car. But his music was worth it. Whether it was Christian or secular, David always tried to lift people up, providing inspiration and hope through his music. Through this part of his life, he had the chance to play at colleges, the Orion Festival which is sponsored by the Sundance Film Festival, and, his favorite venue, Mammoth Mountain. In 2009, David moved back to Ada. He decided that he wanted to use his talents for inspiration to minister to other people, mind, body, and soul. He used the knowledge he had learned at ECU to start his own business, the Nutrition Mission. He brought his family in, and
now he gets to spend every day working with his mom, dad, brother, and sister. His business tries to focus on improving people’s whole lives—not just one single aspect. He provides targeted nutritional supplements based upon individual need. But the Mission is about more than just supplements. They also offer Zumba and a Sunrise Fit Camp, bright and early at six in the morning. Here, David tries to integrate exercise into his customers’ lives, helping them feel better and achieve their potential. His mission goes beyond nutrition and exercise, though. He has turned the back of the business into Fitness Mission and offers a devotional group on Sunday nights called “Wholeness.” Through the course of this program, they do Bible studies that focus on particular inspirational topics such as leadership, joy, and hope. Through the course of David’s journey, he discovered that the same things he loved about music were the same things he loved about his business. Instead of sharing a song, he was sharing a way of life, “All the love, hope, and peace you can get right there on the corner.” He might not sing you a song, expanding on
the virtues of love. But he will give you a hug, shake your hand, or say a prayer with you. Throughout his life, David’s positive attitude has given him the courage and ability to dive headfirst into wherever life leads him, much like he did on the side of that mountain 32 years ago. It can be difficult to be positive, but as David says, “Negative is natural but positive has to be on purpose. So be on purpose.”

Be Thankful In our life, we sometimes spend too much time complaining about the things we do not like or have. Today, and every day, we need to take time to be thankful for the blessings we do have. Here are some things we should be thankful for. Be thankful for family. We are all where we are today because our parents or guardians raised us. Hopefully, we have taken all the positive lessons from them and are applying them to our lives. If you are married and have children, be thankful for the blessing of your family. If you are single, be thankful for your parents, aunts, uncles, grandparents, and cousins. Be thankful for friends. True friends encourage us, motivate us, and push us to do better. Take time to call them and thank them for all the great things they have done. Show your gratitude by also being a great friend to others. Be thankful for a home and for nourishment. If you have a home, be thankful you have a place to rest and relax. Hopefully your home is also a place of safety and encouragement. Truly show you are thankful for your home by supporting organizations who help those who have no homes. In addition, we should be thankful we have the opportunity to eat on a daily basis. If you have plenty, please show your thanks by helping to support agencies that care for the hungry.

Be thankful for laughter. Laughter is a gift from God which can bring great joy. Be thankful for the laughter of children, a spouse, or friends.
Be thankful for a job. A job is a great blessing, whether we are happy in the job we are in or not. Take the time to list out reasons you are thankful for your job. If you find this hard, don’t look at your job just as a means to make money, but look at it as a way to help people. Be thankful for the freedoms you have. We have so many freedoms other countries do not have. It has cost some men and women time away from family, life-altering injuries, or the ultimate price – their life. Take time today to say “thank you” to someone who helped, or is helping, protect those freedoms. Be thankful for those who have made a positive impact in your life. All of us have had people in our lives that have made a positive impact. It may have been a teacher, coach, pastor, youth worker, Sunday school teacher, or a family member. Be thankful that these people were placed in your life and give to others as they have given to you. Be thankful for your health. If you are reading this, you are probably a person in good health. Be thankful for that. However, there may be people in your family and community that are not as fortunate. Take time to help someone this week.
