Ingredients 1lb Rice 1 green bell pepper (large chop) 1 small yellow onion (large chop) 3 cloves of garlic (minced) 1 jalapeno (diced) 4 chicken thighs bone-in with skin on 4 cups of low sodium chicken stock 1 can of cooked and peeled tomatoes

Start by searing off the chicken thighs in a cold large saute pan on low. Allow them to cook skin side down so the fat will crisp and render out. Allow to cook like this for 10 minutes on low heat. Flip them and turn the heat up to medium for 5 minutes, then remove from pan. With the fat that is left in the pan, sauté the onions, jalapeño, garlic and bell pepper for 5 minutes on medium heat. Once sautéed, add

the can of tomatoes and break them up with a spoon. Place the chicken thighs in the pan and add 3 cups of the chicken stock. Bring everything up to a boil, then lower the heat to low and cover the pan. Allow to cook for 1 hour making sure the pan does not go dry. Once the chicken has cooked for one hour, turn the pan off and allow to rest. Serve this over steamed rice or any of your favorite flavored rice dishes.

Portion Management Mindless eating is an issue in today’s culture and is characterized by: 1-eating without thinking about how much you are eating, and 2- eating without listening to your body’s hunger and satiety cues. Portion “Control” is a popular term for controlling the amounts of foods you eat at a meal to avoid eating too many calories. When Portion Controlling, food intake is pre-determined and can be very rigid. What should your portions look like? In theory, you should eat the amount of food that takes you to get comfortably full, and you should include a variety of foods from every food group. In reality, this can be difficult to do. I like to use the term, “Portion Management” rather than Portion Control. Portion Management means being mindful of what and how much you are eating, while still being flexible. If you have a good idea of

what you need for the day, you can break that into meals and snacks and have a mental picture of what your plate should look like. But, Portion Management also means leaving some of the food on your plate if you fill up before your plate is empty. It also means dishing out seconds if you are still hungry after you have eaten everything on your plate. To give you an idea, here is what the USDA recommends for someone needing 2,000 calories per day: 6 ounces of grains. One ounce is the size of a slice of bread, ½ cup cooked rice, ½ cup cooked oatmeal, or 1-cup ready-to-eat cereal. 3 cups of dairy. One and one-half ounces of cheese counts as one cup. 5 cups of fruits and vegetables. One piece of medium size fruit, such as an apple, counts as 1 cup. 5-1/2 ounces of meat and beans. One ounce is equal

to 1 egg, 1 TBS of PB, ¼ cup cooked beans. If you divide these totals up throughout the day into 3 meals and 1 snack, your plate might look something like this: Breakfast – 2 ounces grains, 1-cup dairy, 1-cup fruit, 2 ounces of meat and beans Lunch – 2 ounces grain, 1-cup vegetable, 2 ounces of meat and beans Snack – 1-cup fruit, 1-cup vegetable, 1-cup dairy Dinner – 2 ounces grains, 1-cup dairy, 1-cup vegetable, 2 ounces of meat and beans Here are a few more tips to help you be mindful of what you are eating: Eat at the dinner table. Avoid distractions like television, phones and other electronics. Keep sweets and snacks out of sight.

Welcome Back Karen Hudson by: Sunnie Dawn Smith

It isn’t often that someone has the opportunity to do what they love for a living. Karen Hudson, returning President of the Ada Chamber of Commerce is one of the few. On August 3rd, she had the fortune of returning to the position after a six year hiatus. Her roots run deep in Ada and there is nowhere else she would rather be. There is also no other place she would want to work. Her passion for the community is tangible, resonating with every word she speaks. Not only is she lucky to do what she loves, but our community is also lucky to have her. Karen’s whole career has been in member association management and public relations. As a fifth generation Adan, she received her Bachelor’s degree from ECU in Business Marketing and Management and then continued to receive her Master’s from ECU in Human Resources Administration. After graduation, she did public relations for PEC and then went on to be Director of Alumni Relations for ECU. From 2007-2009, she was President and CEO of the Ada Chamber of Commerce. When she was offered a job in Oklahoma City, doing member relations for a statewide leadership organization, it seemed like a wonderful opportunity. Alas, as she would make the daily commute, she realized that she should have done things differently. She missed her position, helping make our community grow stronger. She decided to start her own consulting firm, Hudson Advancement Strategies, where she spent the next six years. In this job, she was able to do what she loved again. She worked with small businesses, helping them develop in positive ways and showing them how to market themselves to the public more successfully. She was trying to help businesses and organizations advance in whichever direction they wanted to go. Interestingly, this is the same type of work that she had done when she worked for the Chamber. When Sarah Jane Johnson decided to step down as President of the Chamber of Commerce, Karen thought that this might just be her chance to return to the job she missed so much. She would have a chance to really utilize her educational and professional background, 6 • www.adahub.com

bringing her unique skill sets to help coordinate and collaborate with local businesses, becoming a facilitator, bringing people together to make our businesses and community stronger. She took the chance and was rewarded for her passion. She got the job and drives to work feeling very grateful that this is what she gets to do every day. It isn’t just Karen, though. The work that the Chamber does is a truly collaborative effort. She works closely with the City of Ada, the Pontotoc County government, East Central University, the Chickasaw Nation, and many other businesses and institutions. It is crucial to our community that all of these organizations work together to do great things. With all of this participation, there is nothing that Ada can’t accomplish. While there are many things that the Chamber of Commerce does, there are four main areas that work to improve our businesses and their relationship with our community. In order to make our businesses stronger, the Chamber provides advocacy, trying to make sure that our local and state policies work for our businesses and not against them. They try to give the businesses a collective voice with our politicians and governments. They want to strengthen our local businesses because the stronger they are, the better our community will be. The Shop Ada campaign is another way that the Chamber strives to make our businesses better. They want all of us to shop here in Ada instead of driving to another city, and spending our tax dollars to support someone else’s community. The more we shop local, the better products we will have and the more jobs will be created. The Chamber also provides a leadership program to Chamber members. The members themselves or their employees can go through professional development training to help them become better at what they do. They also have a program called Leadership Ada that focuses on new members of the community. These new members have a chance to learn about all Ada has to offer—from other businesses to our education system to the non-profits and charities that abound within our community. Many people might not know that the

Chamber of Commerce has also become the tourism arm of our community. When people need information or assistance, the first place they tend to contact is the Chamber of Commerce. It is the primary source for visitors, festivals, conferences, trade shows, etc. Bringing these events to our city only helps the local businesses, bringing more money into the community. The most exciting thing that the Chamber is involved with, however, is the upcoming Ada Trail of Lights. The Christmas lights at Wintersmith Park are getting an overhaul, with a new entrance and twenty brand new light displays. Both individuals and businesses have sponsored these and it will be spectacular. Almost all of the new exhibits are 20-30 feet tall, and they are anywhere from 25-120 feet long. December third through the fifth, there will be a holiday extravaganza downtown as well. There will be holiday events, carriage rides in the park, hot chocolate, and many more wonderful things to get us in the holiday spirit. Our Chamber of Commerce doesn’t just work for the businesses; it works to strengthen our community as a whole. Main St. You can see how you can be a larger part of the community while also improving your own business. And let’s welcome Karen Hudson to her new position. Ada's 3 Bears Cabin by Sunnie Dawn Smith

We all know the story of Goldilocks and the Three Bears. A young girl wanders into an isolated cabin and proceeds to sit in their chairs, eat their porridge and sleep in their beds. The end might differ depending on which story you were told as a child. But did you know that the cabin of the three bears is real and right here in our community? Now, of course, it isn’t actually inhabited by three bears. And there is no little girl who intrudes upon the solace of an isolated cabin. However, it can still be their cabin, if only in our imaginations. Lonnie Bartmess, a local man with a background in construction, started building his Three Bears Cabin twelve years ago. He loved camping on the back acre of his land, going up

there often with nothing more than a campfire. While he liked the primitive nature of his camp site, he decided he would expand on it, making it a little more cozy. Lonnie wasn’t in a rush; he would work on it little by little whenever he had the time. He began by chopping down his own oak trees, forming them into giant logs that made the walls of his cabin. Next, he cut down cedar trees to use as the roof. Now that he had a little shelter, Lonnie took a break from his cabin construction; he had what he needed in order to spend quiet nights in the woods. However, within the past year, he has found a new passion for his cabin, perhaps born of his grandchildren’s interest. He completed the loft and finished the floor and other furnish-

ings using rock from his property. And he told his grandkids that this cabin is the one that the three classic fairy tale bears live in. A nearby pond has become Three Bears Pond. The road

leading to the cabin is Three Bears Road. And his grandkids, ages three through seven, have let this become a part of their childhood and imagination. Three beds occupy the loft and a large bed

sits downstairs. These beds are not for bears, but for the family that spends quality time there. For the summertime, Lonnie did install an air conditioner run by generator. Except for that, though, there are no modern amenities. Light is provided by lantern or candles. Heat is provided by a wood stove that he installed, laying rock around it. This lack of amenities is completely by choice and allows Lonnie and his grandkids to have the kind of experience that is rare in this day and age. They have a technological silence, allowing them to focus on the sounds of nature and the beauty around them. The wintertime is Lonnie’s favorite part. There is nothing quite like camping in an Oklahoma winter, but it isn’t something you can do with the children. Now, Lonnie can take the kids up to the cabin, light a fire, and enjoy the cold winter nights. Or he can go up there alone and just enjoy the peace and silence of an evening in solitude, assuming, of course, that the three bears don’t come back for their warm beds, their porridge, and their cabin.

1901 Fest Officials with Chickasaw Country today announced the country music group Gloriana will make their first trip to Ada, Oklahoma, for an outdoor concert September 26, 2015.The Academy of Country Music Award winning band will be the headliner during Chickasaw Country’s inaugural 1901 Fest, named after the year Ada incorporated as a city. Comprised of brothers Tom and Mike Gossin and singer Rachel Reinert, Gloriana’s self-titled debut album reached No. 2 on the Billboard Country Albums chart. Gloriana is known for their top-charting singles such as “(Kissed you) Good Night” and “Can’t Shake You” and has opened for country music stars Taylor Swift and Alan

Jackson. They recently released their new album Three. Paige Williams, director of tourism for the Chickasaw Nation said hosting an award-winning musical act such as Gloriana supports tourism efforts in Ada, Pontotoc County and Chickasaw Country. “Working with Ada and Pontotoc County to introduce 1901 Fest expands our tourism efforts in the 13 counties in south-central Oklahoma known as Chickasaw Country,” said Williams. “Featuring a large, awardwinning musical act in Ada will encourage attendance to 1901 Fest’s activities, and increase tourism efforts to Ada and Pontotoc County.
