raspberry Squares If you like lemon squares, then you will like this twist on the recipe. Spring brings fresh berries and these delicious squares will not disappoint. The amount of butter in the shortbread crust has been slashed for these raspberry bars, but the crust stays light and crisp with heart-healthy canola oil and a little cornstarch. Crust • 1 cup white whole-wheat flour or all-purpose flour • 1/3 cup confectioners’ sugar • 3 tablespoons cornstarch • 1/4 teaspoon salt • 3 tablespoons canola oil •2 tablespoons butter, softened Filling • 3 cups raspberries, fresh or frozen (not thawed), plus more for garnish • 1/3 cup water • 2 tablespoons lemon juice or lime juice • 2 large eggs • 1/3 cup granulated sugar • 3 tablespoons cornstarch • 1/8 teaspoon salt *Confectioners’ sugar for garnish Preparation 1. Preheat oven to 350°F. Line an 8-inch-square baking pan with foil and generously coat it with cooking spray. 2. To prepare crust: Combine flour, confectioners’ sugar, cornstarch and 1/4 teaspoon salt in a medium bowl. Add oil and butter; using your fingertips, blend into the flour mixture until evenly combined. The mixture will be a little crumbly. Firmly press the dough into the prepared pan. Bake until just barely beginning to brown around the edges, 15 to 20 minutes. 3. To prepare filling: Meanwhile, combine raspberries and water in a medium saucepan. Cook over high heat, stirring frequently, until the fruit is very soft and mostly broken down, 4 to 6 minutes. Pour through a fine-mesh sieve into a medium bowl (if you do not have a sieve, try cheese cloth, a fine pasta strainer or even a coffee filter), pressing on the solids to extract all the liquid. Pour the strained juice into a glass measuring cup. You need 1 cup strained juice; remove any extra or add a little water if you are short. Stir in lemon (or lime) juice. 4. Whisk granulated sugar, cornstarch and 1/8 teaspoon salt in a medium bowl until well combined. Whisk in eggs. Stir in the juice mixture. Pour the filling over the crust. 5. Bake until just set, 15 to 20 minutes. (The center should still be a little jiggly—it will firm up as it cools.) 6. Let cool to room temperature in the pan on a wire rack, about 1 1/2 hours. Gently lift out of the pan all in one piece using the edges of the foil. Cut into 9 squares. Garnish with fresh raspberries and dust with confectioners’ sugar, if desired, just before serving. Makes 9 squares.

Ada Recycling Coalition by: Sunnie Dawn Smith
Recycling has moved beyond an environmental issue to a human issue; it has become an urgent necessity. Not only does recycling help the environment by reducing the amount of waste that a city produces, it also makes sense from an economic standpoint. Recycling creates jobs while creating a healthier environment. Recycling doesn’t just save money, it makes money. Community initiatives to make recycling available and encourage residents to take part in available programs have been in existence for over two decades. Through the efforts of the Ada Recycling Coalition, Ada has not only implemented a progressive recycling program, but has also become a model for other Oklahoma cities of comparable size. The Ada Recycling Coalition was started in 1991 when a small group of people came together with a common purpose; they wanted to get recycling in Ada. Shortly after the coalition was created, Ada had recycling sites where people could drop off their recyclables in the appropriate bins. This, however, was only the beginning. As the years progressed, they wanted more and more people to take advantage of the recycling program. This could be done by raising awareness, but the most effective way was to make it simpler for people to do. They decided that what Ada needed was curbside recycling, but it would not be an easy road. The Coalition spent several years talking to the city council about the program with little to no results. They would find support among the city council, but little was done. Headway was finally made when the city started talking about contracting out their trash system. This was their chance. They spoke with several people on the city council about the benefits about curbside
programs. When the council members were asking contractors for bids, they asked that each bid also had at least one package that had recycling added. In the end, we took the package with recycling and it was voted on in August 2011. In November and December that the bins were delivered and the program was finally in operation. This was community action at work and at its best. Curbside recycling collects newspapers, jar lids, junk mail, phone books, cardboard, paper board, paper egg cartons, drink cartons, plastic numbers one and two, aluminum, steel, and soft covered books. Though glass is not currently available, due to the danger to workers and contamination issues, they are currently looking into several options for either using the glass or recycling it. They are aware that people want it, and are working toward a solution. Recycling is very important for Ada, especially because the landfill is getting full at an alarming rate. This is why they contracted out for service in the first place. At the current rate, the landfill will be completely full soon. Even though our trash is now going to a different landfill, the trash from the county is still filling it up, and our trash is simply filling a landfill somewhere else. The methane levels in landfills are high; they leak and refuse ends up in the water; it is almost impossible to utilize the land after it has been filled because of high toxicity. So recycling is just something that we just have to do now. It isn’t even an environmental thing. It is something that we absolutely need. In addition to the environmental
benefits, there are economic ones as well. Recycling provides more jobs. It is good for the economy. Instead of paying to dispose of waste, you get paid for recycling it. While our rates of recycling, both in Ada and Oklahoma, have a long way to go in order to meet the potential recycling rate of 95%, we are doing much better than we were without these programs. Ada’s recycling rate is higher than most cities of comparable size, and other cities have been looking at Ada’s model to see if this is something that they might want to implement. From the response they’ve gotten from people in Ada, Lisa Sharp, member of the board of directors since 2009, expects for the recycling program to grow. The main thing they are looking for is community involvement and dialogue. Not only does it help to be a member, but it also helps to open a line of communication. If you are not recycling, why not? Is there some problem or issue that you have with the program? How can they improve? Bringing information like this to the board of the Coalition might be the most important thing that a citizen can do, other than, of course, actually recycling. The Ada Recycling Coalition usually meets the second Wednesday of each month at noon, upstairs at the Ada Public Library. These meetings are open to the public and they strongly encourage newcomers to attend. Their annual meeting will be held this April. 30 years of skating star Skate by: Roy Deering
It’s been 30 years since Paul and Linda Hale opened the doors on a venture that has brought laughter, recreation and great memories to thousands of area kids and families. Star Skate of Ada, 1000 East 32nd Street, celebrates its 30th anniversary this year, and Linda Hale said the Star Skate family is continuing to grow and prosper. “We started with a skating rink over in Davis, and then built this one in Ada in 1983,” she said. “We’ve loved it and our kids have grown up in it and now they’re managing different parts of the Star Skate family. We just recently purchased the rink in Midwest City, and that makes four rinks we have across Oklahoma.” Offering the traditional skating rink activities and combining those with intense music sound systems, vibrant light displays and modern touches like black-light carpet and video games has made Star Skate a popular hangout for teenagers across Oklahoma. Along with the rinks in Ada and the newest in Midwest City, Star Skate also has facilities in Shawnee and Norman. “Our son, Chris, who grew up at the rink here in Ada, now runs the Norman and Midwest City rinks,” Linda Hale said. “He has managers there on a daily basis -Brandon Gorman in Norman and Jamee Valcik in Midwest City. Chris has been in this business all his life, even though he’s a relatively young man. He’s brought some great ideas of his own.” The Hale’s daughter, Laura Hise, runs the operations of the Shawnee rink, while her husband, Tim Hise, oversees the Ada rink along with Bethany Cypert. While the Star Skate family has added the rinks in Norman and Midwest
City most recently, the Ada rink just completed a major renovation. Hale said keeping each rink “fresh and exciting” isn’t always easy, but said that each generation of young people deserve their own special place and their own special memories. She said a lot of adults have told her through the years that when they hear an older song on the radio, it brings back memories of the times they skated while listening to that song at Star Skate, many years ago. “We added new lights and paint and all new black light carpet, and we also replaced all our skates for the first time in a very long time,” she laughed. “I guess it’s not really a new rink, but to the kids I think it seems like a new rink and the response has been really positive.” And it’s that one particular word -positive -- that has helped keep the Hale family focused on their business these past three decades. “What we started out to do, and
what I think we still try really hard to do, is to create a place -- to keep a rink --- where the kids can come and have good, clean recreation, to make friends and to make memories that will last a lifetime,” Linda said. “I have a lot of customers who came to our rinks when they were kids, and who now bring their own kids,” she said. “They tell us they feel safe bringing their families because they always felt safe and had fun here when they were kids.” Each of the four Star Skate rinks keeps the same general operating hours for “open skating.” Hours are from 7-10:30 p.m. on Friday and Saturday, with afternoon skating on Saturday from 1-5 p.m. and on Sunday from 2-4 p.m. Star Skate also hosts numerous birthday parties and special group skate nights for various church and school groups. ver 300 people in Oklahoma alone are on a list for a kidney transplant. Jim York, born in Indianapolis in 1952 was one man that made that list for three years. Jim grew up with 14 brothers and sisters so he was no stranger to fighting for something, yet nothing could prepare him for this fight. Jim grew up playing basketball and was always very athletic. He played high school basketball at a Catholic School and earned a scholarship to play at St. Gregory’s in Shawnee, Oklahoma. He graduated in 1972 and headed back to Indiana for a year. While he was in Indiana, he just had a strong desire to move back to Oklahoma. Jim moved back and got his teaching degree at UCO. From there he taught health, physical education and history while coaching basketball. Jim married Donna in 1977. In 1981 he got into the financial services business. This prompted a move to Ada where he joined Dolph Brown and eventually took over the business. Skip a few scenes to the year 2000. Jim, who sells life insurance, decided to apply himself. He was surprised when he was denied and it was then that he discovered his kidneys were failing. It was difficult for him to accept since he was active and working out 3-4 times per week. His only sign of physical impairment was his high blood pressure. Jim said, “I guess that’s why they call it the silent killer”. Even with medication, he was unable to get his blood pressure under control so he decided it was time to get a serious evaluation. He and Donna took a trip to Tree of Life in Arizona and the doctor there diagnosed him with metabolic syndrome. Jim went on a strict vegan diet where he lost weight and his functions improved. It was not long until his health went on the decline again. He was referred to a Nephrologist and it was then that he was told he needed a kidney transplant. The first step was to find a live donor. Several people offered, but
there was not a match that would meet the requirements Jim needed. His doctor recommended a young donor since Jim was so healthy. With no live donors available, it was time for Jim to get on the transplant list. As time went by, Jim’s kidney function decreased to a staggering 15-16% and in January of 2012 he had to go on disability leave. His doctor wanted him to stay away from the public so he had less chance of getting sick in case he got the phone call for the transplant. Jim and Donna were also advised not to leave the state in case a donor came available. The doctors wanted them to be within a 2-3 hour drive from the hospital at all times. Jim and Donna were walking at the park on July 2, 2012 and Donna noticed him struggling more than usual. “I don’t think I can do this anymore”, Jim said with a short breath. Donna had never heard him say something like this during the entire time of his illness. Donna returned to her office at work and just cried and prayed. The phone rang and her husbands voice on the other end said, “Come home”. Donna was really worried until the next words were said, “I got the call”. Within fifteen minutes they were on the road to Baptist Integris Hospital in Oklahoma City. Jim arrived and immediately started blood work and other preparations for the transplant surgery. Donna waited in the lobby but she was not alone. She was joined by family and a multitude of friends from their church. As they were praying, the doctor came out and Donna was told that the surgery went brilliantly. Jim did suffer a toxic reaction a few days later and had to go back to spend some more time in the hospital. When he was released, the doctors told him to isolate himself for three months since it is the time period when there is greater risk for rejection. Donna said, “Friends would pull into our driveway and visit with us from the car as we sat on the porch”. Jim and Donna both had a strong desire to meet the family of their
donor. Eighty percent of people who receive a transplant never meet the family of their donor. The determination to share their gratitude led them to an organization called Life Share, who set up the meeting in November of 2012. With a mix of excitement and sadness the two families met and learned about each other. Donna said, “It was a very, very emotional meeting”. Jim learned that his donor’s name was Jarod Martindale, a young man from Cheyenne, Oklahoma. Jarod had unfortunately taken his own life. Jarod’s mother brought in photo albums of Jarod and talked about his life and things he enjoyed doing. They have since then developed a relationship of support and love. Jim and Donna have been a great support for the family in the untimely death of their son and they have joined together to put on a 5K Run/Walk to help raise money for the Jarod Martindale Memorial Scholarship Fund for Oklahoma high school graduating students applying to SWOSU. Champion Tag Team
Champion Athletics has been in Ada since the fall of 2006. They have always had a goal of providing quality gymnastics, tumbling, karate and cheerleading instruction for kids and teens. Another of their main goals is to reach out to the community in a positive way. One way they have done that is by hosting an I Am 3rd Meet for area gyms with competitive gymnastics teams. On April 13, 2013 Champion will welcome teams from Ardmore, Atoka, Midwest City, Shawnee, Choctaw and Lawton for this special meet. In gymnastics, or any competition for that matter, third is not usually the goal. Most individuals or teams set out to take first. The idea of the I Am 3rd Meet is to put God first, others second and take third for oneself. When gymnasts register for the meet, a snack is purchased at the concession stand or when admission is

paid to enter, 50% of all proceeds will go to help the Ada Area Youth Shelter. The first I Am 3rd Meet went to help the family of Lauryn Watkins as she battled childhood cancer. Lauryn is now competing this year to help someone else. The second I Am 3rd Meet went to help the Deason family with their adoption process. Champion is excited to honor God with their business and being able to help a person or individual in the community is one way they can accomplish that. There will be at least 130 gymnasts competing at the meet. Gymnasts range from 5 years old to 17 years old and all levels in between. Athletes have been working on routines all season long and they will each compete in 4 events against kids in their age range and level. The meet will be divided into

three sessions to make room for gymnasts and their fan sections. Volunteers from Champion’s Competitive Team will help in setting up, organizing, running the concession stand, admissions, scoring and clean up. It is a collective effort and parent volunteers have been outstanding each year. The OU Marketing Department has even made a donation for the meet. It is strange to strive for 3rd in competition as well as in life. In most cases, we are all looking out for number one. There is a scripture from Philippians 2:4 that says, “Let each of you look not only to his own interests, but also to the interests of others.” I Am 3rd is not a new concept, just an attempt at a very old one.
