Ingredients • • • • • • •

1 stick butter 1½ cups graham cracker crumbs 1 (14oz) sweetened condensed milk 1 cup (approximately 6 ounces) butterscotch chips 1 cup (approximately 6 ounces) semi-sweet chocolate chips 1 1/3 cups sweetened coconut flakes 1 cup chopped pecans

Instructions 1) Preheat oven to 350 degrees (325 f for glass dish). Place the stick of butter in a 13x9 baking dish and put in the oven to melt. 2) Sprinkle crumbs over melted butter, and then pour sweetened condensed milk evenly over top of crumbs. Top with remaining ingredients in order listed. Press down firmly with fork and bake for 25 minutes. Pull them out of the oven then chill, cut and enjoy. Spring Break is this month, so let the kids help you with this easy snack recipe.

Spring Clean Your Health Routine STAR EDWARDS // Registered Dietitian

Do you have plans to spring clean your home or office this season? Why not clean up your health routine at the same time? As you clean, think about getting rid of the excess and focusing on the essentials. EXERCISE ROUTINE • Cut out long periods of cardio (walking, treadmill, elliptical, etc) and replace with 30 minutes of high intensity interval training, which is more effective in building muscle and increasing metabolism. • Integrate upper body and lower body workouts into one day (rather than doing split body workouts), which also increase muscle mass over-all and improve metabolism. NUTRITION • Commit to decreasing or deleting from your diet: unhealthy fats like animal fats, trans fats, and saturated fat (replace with olive oil, canola oil, or high oleic safflower oil), “table” salt and “white” sugar—this is sodium and sugars not naturally found in food, additives in processed food such as artificial colors and preservatives (nitrate and nitrite in meat, for example). This requires you diligently read food labels at the grocery store and eat out less if you frequent fast food and restaurants.

Give yourself a fresh start by going through your pantry and throwing out anything that contains ingredients listed above. Go grocery shopping and replace with “cleaner,” more wholesome foods. I also recommend avoiding canned foods as much as possible, as there is a chance they contain BPA, which can be harmful if enough is consumed and builds up in your body over a period of time. Throw out old food. Check expiration dates on food in your pantry and throw out anything that is expired. Go through foods in your refrigerator and freezer. Unopened foods in your fridge will be safe for 1-2 weeks (considering the expiration date is still good), while opened foods and leftovers are only safe for 3-4 days. Items in the freezer are safe for 1-6 months, depending on what the item is. Over time, harmful bacteria multiply in food to unsafe levels. Consuming food that has expired or been stored for too long puts you at risk for food borne illness. Children under the age of five, pregnant women, elderly women, those with cancer and immune disorders and other health conditions are at an increased risk of contracting food borne illness, although no one is exempt.

OTHER HEALTH ISSUES Spend some time analyzing your overall health and determine if there are any health habits you need to clean up. For example, smoking, stress, not getting enough sleep, not being physically active, consuming too much caffeine and/or alcohol, and tanning or allowing sunburns can all have undesirable conditions like cancer and heart disease down the road.

Have you ever been told you shouldn’t do something? I know I have. Jared Marical was told to stop running. He has had difficulty heeding these instructions and his determination has led him to do some pretty extraordinary things. How about you? Do you have a “never give up” mentality? Jared Marical was born in Kingfisher in 1972. He moved with his family to Ada in 1983. He was married to his wife, Shannon, in September of 1991. Together they have six children; Abigail, Elanor, Jack, Molly, Jed and Daisy. All of their children attend school at Latta. Jared and his brothers own M & J Contractors, a plumbing service. Jared will be the first to tell you that he is just an ordinary man doing ordinary things. One day Jared just got tired of looking at himself in the mirror and decided it was time to lose some weight. “Nothing big happened to spur me on to lose weight, I just felt like I needed to one day”, Jared said unassuming. My mother liked to walk, so I began with that. Jared started walking about 2.25 miles each day and after some time he thought he would try running. At first he decided to run to the first hilltop on his route and pretty soon that led to running the entire 2.25 miles. “I just started with small goals and worked my way up”, he said. He lost 70 pounds and his wife supported him all the way. Shannon makes healthy meals and they sit down and eat together as a family most nights. In late 2008, he began having pain in his hip after each run. He thought it was just a weight issue and continued to push through thinking it would go away if he lost a little more weight. The pain increased and he finally made himself go to the doctor. Jared was diagnosed with arthritis in his hip and was told not to run anymore. “Stop now”, the doctor told him. The doctor recommended that he take up swimming, bike riding or using an elliptical. Jared was determined to keep running, 6 • www.adahub.com

especially after seeing an article about an Urban Athalon in a magazine. He was intrigued by obstacle course racing and knew he had to give it a try. He continued to run and the pain increased significantly. Jared ran his first half marathon in April of 2012. It was the A to A race (Arbuckles to Ardmore), and he finished pretty strong. By the third weekend in May, his hip just wouldn’t stop hurting and he had to go back to the doctor. He had a hip replacement on June 11 and was told again to stop running. He did physical therapy and threw in a 5K here in Ada just for fun. He walked this one though, since he couldn’t really run at the time. As he was recovering, he kept watching Urbanathalons, and believe it or not, only four months after surgery, ran one in Chicago in October of 2012. The course was 10.8 miles and had tire and barricade obstacles throughout. “I didn’t feel that it was difficult enough and I wanted more”, Jared told me. An acquaintance mentioned something about a Spartan Race and Jared began to investigate. He did a little web search and found one in Glenrose, TX in December of 2012. Remember, this is only 8 months post hip replacement surgery. The Spartan Beast Race is described this way on their website: “12+ MILES / 25+ OBSTACLES - An obstacle Race from Hades. If you have done any race anywhere in the world: whether a mud run, fun run, olympic run, bike race, death march or any kind of event claiming to be the “toughest race on the planet” you will be happy to know that this is where it ends.. THIS IS THE SPARTAN BEAST... Step up and get out of your comfort zone on our +16k beast of an obstacle course race; many will arrive, but few will leave!” This doesn’t sound like a good idea for a person who has had hip replacement surgery. However, Jared had a goal to run it, and he reached that goal in just over 4 hours with

no penalties. He is getting ready for another Spartan Super Race that will be held in May. He will be running in this one with his wife as well as a group of people he works out with here in Ada. Most people who have a hip replacement surgery would just take it easy. Jared is doing anything but taking it easy. He is doing things most people wouldn’t attempt with a clean bill of health. I asked him why he kept running when he was told to stop and he simply replied, “I didn’t want to go back to being heavy. I want to live a long healthy life so I can be here for my wife and kids”. Jared does Crossfit at Whiterock Fitness along with his wife, and oldest daughter. He is very close with his family and wants to keep it that way. Even though Jared doesn’t think so, I believe he is doing something great. He has health obstacles, but he doesn’t allow them to stop him, in fact, he crushes obstacles 12.5 miles at a time. If you have obstacles in your life, don’t allow them to keep you down. Be like Jared - keep striving and never give up.

bend it. cut it. weld it. EAGLE CREST WELDING BY: SUNNIE DAWN SMITH When kids are little, they love to make things. They will cut out paper shapes and glue them together. When they are older, maybe they will move on to making things out of wood. But, you don’t see that many kids cutting metal and welding it together. They could hurt themselves and probably get in trouble as well. While many kids are pushed away from such dangerous pursuits, Jason Diehl was not. Jason, owner of Eagle Crest Welding at 30344 County Road 1469, Allen, OK, played around with metal from a young age. Jason was raised on a dairy farm in New York. When things would break, he would play with them and try to put them back together. Because of this love, he went to trade school to become a welder. After trade school, though, Jason decided to serve our country in the military. When he got back, it was time to return to welding and start his own business. He loved fixing things when he was younger; now it was time to do it professionally, for other people. Jason will weld anything you want. He says, “If you bring in two paperclips and want them welded together, we will do it.” There is no job that is too large or small for Jason and his crew of four. He has worked on both a small and a large scale. For instance, he did a sign for the Shawnee Mall that had a radius of 64 ft. and then installed it as well. He’s also working on a 16 ft. gate for someone’s property with a 4 ft. radius deer in the center. Every part of the gate is made right there, in house, including the deer. This is one of the services that Jason and his crew at Eagle Crest Welding offer to their customers. In addition to welding whatever you need, they also make custom metal signs. And, again, there is no sign to small or too large. If you have a design in mind, they can work with that. Or, if you just have a general idea, Jason has over a couple hundred thousand different designs to work with, so chances are he can piece together the sign you are looking for. And then, if you want to sign installed somewhere, welded on nice and tight, they will also help you with that. They are one of the few places that do

portable welding, bringing their equipment to you if at all possible. Eagle Crest Welding is a fully set up fabrication shop and, with Jason’s years of experience, they can handle whatever you throw at them. They particularly like to work with the “exotic” metals. These metals, like aluminum and stainless steel, might not sound particularly exotic, but to welders they are because they are so much different than steel. You have to have the certain expertise in order to weld them correctly, but Jason embraces and welcomes these challenges. Most people around here won’t weld aluminum, but Jason will. The difficult thing about it is that aluminum won’t change color when it gets to the right temperature like other metals do. So, the only way you can know how to work with it is through experience and a little bit of intuition. A lot of specialized knowledge goes into welding. In order to join to pieces of metal, first you melt your base metals and then you add a filler metal to join the two together. The hard part, though, is that for different metals you need a different filler. And each type of metal has different grades which each needs a different filler. On top of all this, you also have to make sure that the base metals are heated to exactly the correct temperature, otherwise all of this work will be for nothing. The variety of products produced by Jason and his crew is astounding. For one, they make Greyhound bus parts, which Jason says are the most challenging. But they also do high pressure release valves, which Jason is certified in. They have done horse trailers before and the morning of my interview they even did a bed. Community involvement can make extraordinary things happen. The new gymnasium at Latta is a great example of this. After two years of construction, and a year and a half of planning before that, the gym finally opened on January 21, 2014 in a basketball game against Byng. Though the gym seats 1700, there were well over 2000 on opening night. The place was packed. This state of the art gymnasium could not have happened without the community, though. It was financed by a bond issue that went through on the very first try. Terry Painter, Athletic Director and Middle School Principal at Latta, is more than appreciative to the members of the community. “The people in our district are really supportive of the school and help them pass bond issues.” And the community certainly got what they deserved! When it was time to start designing the gym and making the choices about what would and wouldn’t be included, Painter, the high school principal, the superintendent, school board members, and the architect, Don Childers, visited about a dozen different gyms around the state. They went to Arapaho, in Western Oklahoma, to check out a video screen they had heard about, and ended up finding another aspect they really liked as well—a way of seating some people on the upper level. you walk into the lobby, you can see the gym, on the lower level, through the window. But right in front of the window is a long black granite bar with bar stools. It’s the best seat in the house, but it’s also first come first serve. When they approached the design of the gym, they wanted it to be the best, so they took the best parts of other gyms and put them all together into their own. In the center of the ceiling, a large scoreboard hangs down. You can see a scoreboard on all four sides. There are also two other scoreboards at either end of the gym. These are for the players so they won’t have to stop and look up to see the score or the time. Above the scoreboard, on the sides facing the seats, large video screens can be used for many purposes. They run the starting lineup, they can run advertisements (a lot easier than the banners in the previous gym), and they also show a sportsmanship video that the high school kids made before every game. It is the Latta version of the “We Are OU” video that runs before OU games to pump up the audience. They tried to think of everything when designing the gym and tried to make it as nice as possible. For instance, there are men’s and women’s bathrooms on both sides of the lobby. You usually have just one on each side. Each bathroom is spacious, everything tiled, with black granite countertops. In fact, all the countertops are black granite, even the locker rooms. While they tried to think of everything for the spectator, they also kept their players in mind, of course. Because of this, the gym’s lower levels are split between a girl’s side and a boy’s side. Each side has their own

laundry room, home locker room, and guest locker room. The boy’s side also has a conference room and IT equipment, and the girl’s side has a locker room just for the cheerleaders, the official’s dressing room, and storage. There are also many other things that they tried to improve upon as well. Now they have an actual weight room, instead of just having weights in the locker room. It comes complete with training tables and an ice machines—everything they might need. And the Coach’s office has two windows, one looking out on the gym floor and one on the weight room. This way if he has to take a call, he can still keep an eye on the students. Also, the lights don’t have switches. You have to have a key in order to turn on the lights. This helps with the electric bill, but it also stops students from turning off the lights as they go by, pranking everyone into darkness. Another small, but helpful, feature is the game clocks located in the locker rooms. Each locker room, both home and away, has a game clock in it, and so does the official’s dressing room. This way people know exactly how much time they have left before a game starts and before it resumes. Also, the seats in the stands are 40 inches away from the ones in front of them, so you have room to stretch out your legs and people can get by easily. They tried to think of everything when they designed this gym. They wanted to make the community, who is always so eager to help them, proud. And I believe they succeeded. From the Canadian maple floors to the panther that seems to jump out of the wall, they have created something truly impressive. From the roomy seats for the spectators to the student section bleachers, they tried to create something to accommodate everyone. By supporting their school, the community received something that they can truly feel proud of.
