1 Ten Pound Pumpkin 1 Large Onion 3 Stalks of Celery 3 Large Carrots 2 Quarts of Chicken Stock 1 Quart of Heavy Whipping Cream 1 Pint of Sour Cream 1/2 Teaspoon of Allspice 3 Tablespoons of Kosher Salt 1 Tablespoon of cracked Black Pepper Splash of Olive Oil First, you are going to want to cut the top and bottom of the pumpkin and discard. Cut the remaining pumpkin into quarters and clean the seeds and “guts” out. Take the seeds and place them in a shallow salty brine for later. Next you want to remove the pumpkin peel and cut what is left of the pumpkin into one inch squares. Now, peel the carrots. Dice the carrots, onion and celery all together and put on a roasting pan in the oven for 10-12 minutes at 400 degrees. You want the veggies to caramelize lightly. In a good sized pot, mix in a little olive oil with your salt and pepper. Once the veggies are done, add them and the chicken stock to the pot and bring to a boil. When you hit the boiling point, reduce to a simmer and let it go for 15 minutes. While it simmers, strain your pumpkin seeds and spread them out on a roasting pan. Your oven is already at 400, so pop the seeds in until lightly brown. Now, in a separate mixing bowl, you want to mix 4 tablespoons of sour cream with 2 tablespoons of heavy whipping cream and the allspice. Season the mixture with a little salt and pepper (to your own personal taste). Add the remainder of the heavy whipping cream to your soup on the stove. Now that your soup has simmered for 15 minutes, your seeds are browned and you have your creme fresh topping, you are ready to serve. Get out the bowls, pour in the soup, top with the creme fresh (sour cream, heavy whipping cream and allspice blend), the roasted pumpkin seeds and get ready for a trip to flavor-town! If you are adventurous, add a little maple syrup to the top and you will not be disappointed. Enjoy!

rumor has it ECU has a diamond in the rough

When the words “Rumor has it” are uttered today, the catchy tune by popular artist Adele may come to mind. But since 1919, many a story has been told around campus that begins, “Rumor has it, an elephant is buried somewhere on campus”. But is it just a rumor? As early as 1915, a traveling circus owned by “Honest” Bill Newton made its way through Ada and the elephants were a big hit with locals. At one point, Honest Bill allowed several ECU students to “rent” some of his elephants to ride in a parade before an upcoming football game. Needless to say, the elephants became rowdy amidst such chaos, but nobody was hurt and the elephants made the parade spectacular. Honest Bill soon began bringing his circus every year and eventually chose Ada to bed down for the winter seasons. During the winter of 1919, one of the elephants named Diamond died. Her death created a dilemma for Honest Bill, but presented a unique opportunity for ECU. Science faculty had a desire to enhance the anatomy course and the ability to display an elephant skeleton was perfect to anchor a proposed museum of natural science on campus. The campus agreed to take Diamond and the well-intentioned decision would quickly become a teachable moment. Time was critical, and the Industrial Arts program hastily constructed an airtight, watertight vault ten foot deep.

Meanwhile, faculty and students used a wagon to move Diamond from a pasture north of town to campus. Once on campus, faculty and students worked feverishly to secure Diamond in the vault for submersion in a lime-water solution to hasten decomposition. A sigh of relief settled in for several days, but was soon interrupted by an embarrassing, morbid stench emanating from the vault. Local residents began to complain, as Diamond’s coffin was not exactly “airtight”. Embarrassed campus administrators held an emergency meeting and determined that Diamond had to go. According to Theda Schwing from Linscheid Library’s Special Collections, the stories about Diamond recorded in the few library holdings are similar. The events following the conclusion of the emergency meeting is where the facts fade into rumor and speculation. Supposedly Diamond’s skull was removed from the vault and preserved somewhere on campus. The vault was then filled with concrete to stop the odors. The concrete vault was buried quickly and deeply in the general location of the east hillside of the campus at some point in time, but the location was not documented. Another account states the vault was filled with concrete and burned, then possibly buried. The details of what happened to Diamond remain a mystery, but questions of her

whereabouts linger even today. Rumors surface of Diamond resting beneath the Education Building, under Linscheid Library, below Knight Hall or Kerr Center and even near Wintersmith Park. ECU Physical Plant Director Robert Castleberry reports that to his knowledge, work crews have never discovered Diamond’s remains during construction projects on campus. Dr. Bruce Weems, currently Dean of the College of Health and Sciences, has never happened across any details or evidence of Diamond in science department records. Dr. Weems came to ECU in 1972 and laughs about the countless stories he’s heard about Diamond over the years. He first remembers hearing about Diamond from His parents, who were ECU students in the early 1920’s. The story of Diamond was no laughing matter for the campus in 1919, but today almost everyone who talks about Diamond finds her legacy comical. A painting currently hanging in the Hallie Brown Ford Fine Arts Center reportedly pays symbolic tribute to Diamond, with an elephant head covertly embedded within the art. It is a fact that ECU really did possess an elephant named Diamond, whose remains were disposed of somewhere on or near the ECU campus in what is probably Ada’s largest unmarked grave. Dean has 30 years of children’s ministry experience and he has served as Executive Director of International Network of Children’s Ministry in Castle Rock, Colorado. Since it’s inception over 30 years ago, “INCM” has become the premier organization in America for training and resourcing leaders who minister to children. It’s not everyday you see a children’s minister that is over 50 years old. It is just who Dean is, and this passion led him to purchase a ranch in 2000. The Stone’s started out in 2003 with horse riding lessons for kids. They also began holding Ranch Camp for kids who have completed the first through sixth grades and have been going strong for nine years. These fun-filled day camps are jam packed with outdoor activities. Kids can enjoy horse riding, BB gun golf, canoeing, recreational games, chapel and even zip lines! Camps are held in June so be sure you visit their website to see how you can get your child involved. Cornerstone is also set up to accommodate retreat groups of up to 50 people and is a great place for a day trip for any group. They also do school and church parties, birthday parties, rent inflatables and are most known for their annual Pumpkin Patch. One year the Stone’s decided to plant some seeds on the property and they ended up producing around 500 pumpkins. They gathered their orange treasures and gave them out to people at their church for fun. Kids and adults

seemed to really enjoy getting the pumpkins which brought the Stone’s great satisfaction. It was then that the idea for a Pumpkin Patch was born. The idea has formed into an incredible reality, as they expect to see around 8,000 visitors this October. If you think you are just going to go roam around a field and pick out a pumpkin, you’ve got another thing coming! First, you enter the ranch and are greeted by a friendly worker who directs you to a short hayride that delivers you to the myriad of activities. Once you step off the back of the trailer you begin to see huge inflatables filled with happy kids, a barrel train making it’s way around the different points of interest and even pony rides. Inside the barn, you will find a giant hay maze, swing, a diamond dig and a tricycle racetrack for those with a need for speed. Don’t forget to visit the pumpkin theatre to learn all about the big orange fruit and satisfy your cravings at the concession stand. After the kids are worn out from the activities, hop on the hayride that leads to a patch of land filled with pumpkins of all shapes and sizes. Each person in your party gets to pick out a pumpkin to take home and Dean usually takes a moment to tell kids how special they are before the ride is over. “Children are the greatest treasure we have and I will take everything I have and use it for the Kingdom of God to influence children in a positive way,” says Stone. They never preach to people that come, rather they show honor, love and kindness to all who visit the ranch. My family and I have visited the pumpkin patch for several years now, and I believe the Stones and their staff do everything possible to make you feel welcome and special. Pumpkin Patch 2012 will be open to the public on Saturday, October 13, 20 & 27th from 11:00am-5:00pm. There are many reasons why 106.5 BOSS F.M. is the greatest classic rock station in Southern Oklahoma. Perhaps the entire state. Real fans of Led Zeppelin, The Rolling Stones, Queen, Pink Floyd, The Beatles, U2, Fleetwood Mac, Lynyrd Skynyrd, Tom Petty and so many more rock legends, love turning on their radios everyday and hearing not the same four tired songs per artist that other classic radio stations play over. And over. And over again. The Boss gives you the songs real fans love that sometimes were never even released as a single. Shocking. The Boss has another jewel in it’s crown with their on air talent Candy Weddle. Weddle is the voice of Ada and hearing her cheerful banter in the morning, at work, running errands or anywhere a radio is playing, leaves Adan’s smiling in spite of themselves. Her love of music and enthusiasm for life are so evident you can’t help but feel like you have a real friend on the radio wherever you go. Her start in radio can’t be described as anything but fate. Weddle, a native of Covina California in the San Gabriel Valley, only moved to Ada in 1990 to be close to her parents, natives of Ada who had moved back to Oklahoma after retiring just a few years before. “In 1992 I was a waitress at the Western Sizzlin and I overheard someone say that the local radio station needed a D.J. I remember thinking ‘Hey I could do that.’” And do it she has. October marks twenty years as an area D.J. starting with New Country KADA 96.7 F.M. (where she was originally asked to change her first name-fortunately that never panned out) to her current gig with BOSS 106.5 F.M. Weddle’s speaking voice was made for broadcasting and her love of music and radio sealed the deal. “I had big love for music and big love for radio stations. When I was a kid I would sit with a tape recorder and wait for a song

I had requested to come on. Once I waited for the better part of two days to hear Vicki Lawrence’s ‘The Night the Lights Went Out in Georgia.’ It finally came on and the D. J. talked over most of it and I was screaming at him to shut up,” she recalls laughing. “I used to have stacks of cassette tapes where I had recorded Casey Kasem’s top 40 every week. I was raised on country music (which I still love) but I discovered Led Zeppelin when I was 11 and my parents were upset. It was like ‘NOOO! We’ve done everything we could to prevent this!’” Her love of all genres of music eventually led her to performing. A few attentive listeners may have picked up that Weddle was once a singer with the variety show Terry Moretti and Company. The group worked for Caesar’s Palace and although the show was put together in Las Vegas, they actually performed in the Catskills. She performed year round for three years and lived in a cabin on the golf course. “It was beautiful there just like what you see in ‘Dirty Dancing.’” Some colorful events from her time in Pennsylvania are truly unique, like performing for the “Goodfellas” crowd. “Once my manager told me that the performance that night had to be very respectful because the front tables had been reserved for a known “Family.” Everyone was nervous and a little on edge. When a member of the “Family” wanted to emulate Bruce Springsteens’s video by coming on stage while Weddle was singing ‘Dancing in the Dark’ she didn’t protest. “He jumped on the stage and started dancing and singing with me and I was like ‘Here take a microphone, take whatever you want,’” she explains still laughing. “Working for Caesars was awesome.” Going from a live audience with all the

energy and feedback to talking to a wall in a studio was a little daunting at first. “I had to think ‘Okay I am talking to my best friend’ and that worked for me.” That kind of enthusiasm for promotions around town comes across in many ways, especially in regard to her “babies” as she refers to them: The Salvation Army and the American Legion. The Salvation Army holds a special place in Weddle’s heart for very personal reasons. “My mother used to say that if it hadn’t been for the Salvation Army she and her siblings wouldn’t have had Christmas when they were little.” As Weddle puts it, the station “begs” listeners to pick a needy child’s name off the Salvation Army’s Angel Tree every year at Christmas. “Any names that are left are brought to us and our listeners always come through,” she says proudly. Weddle does regret that the American Legion’s Poker Run which supplies back to school shoes for local children has been shelved for the past two summers. “It was just too hot for the bikers, I really hope we bring it back next summer.” Weddle considers one of the blessings in her life a direct result of moving to Ada, because here is where she met her husband whom she refers to as “Sweetie.” Her other blessings include five children: Trae 22, Selina 20, Rhiannon 18 (after the Fleetwood Mac song), Cera 16 and Anakin 13 (after Star Wars) and her older sister Phyllis. While her sister keeps her grounded, reading the good book every morning keeps her sane. She credits her positive attitude and enthusiasm for life with her faith. “I start every morning with God. I read a couple of chapters from the Bible everymorning. You don’t want to be around me if I haven’t!” ■ www.adahub.com • 17


Eat Healthy with Your Holiday Favorites Along with cooler weather, one of my favorite things about fall has to be the flavors I associate with the holidays. The aroma of fresh bread baking, cinnamon and nutmeg combined with fresh apples or pumpkin, or a turkey roasting in the oven always remind me of being surrounded by family. Although “holiday food” has a bad reputation for helping us pack on the pounds, the flavors of fall are actually full of nutrition. Prepared appropriately and eaten mindfully, these foods can help your health and maintain your waistline. Following are three of my favorite fall foods, along with tips for using them in healthier, non-traditional dishes. Do an Internet search for recipes using these foods and you will be surprised at what you find! Pumpkin is a good source of vitamin C, fiber and a great source of vitamin A. Vitamin C and vitamin A are two antioxidants that help fight disease. Vitamin C is also important for healing and vitamin A for eye health, among other things. The benefits of fiber include prevention of certain cancers and high blood cholesterol. Pumpkin is often associated with baked dishes like pies, tarts, cookies and cakes. However, pumpkin can add nutrition to your everyday food when you stir it in oatmeal, use it in soup or stew, make a baked stuffed pumpkin (with pineapple, spices and nuts), add it to your homemade granola, make a pumpkin butter for spreading, or use in waffles, pancakes, muffins and bread. Another fall favorite of mine are cranberries. They are also a good source of fiber and vitamin C. Studies show that cranberries also help fight some infections. Most people automatically think of cranberry sauce, but the cranberry is a versatile fruit. Besides adding to cheesecakes and cake-like 18 • www.adahub.com

breads, cranberries can be added to baked apples or trail mix; made into a relish, chutney or salsa alongside other fruit like oranges; added to oatmeal or cereal; used in pot roasts and stuffing and made into a glaze for hams. Apples can be enjoyed year round, but are most abundant in the fall. Like Pumpkins and cranberries, apples are high in fiber and vitamin C. Think beyond apple pie, dumplings and caramel apples; apples are a great addition to cheese platters and salads, can be used as a spread when made into apple butter, or used in stuffing for chicken or turkey. Make your own fresh applesauce for snacking or replacing some of the fat in your recipes, try a grilled cheese and apple sandwich or maybe even apple fritters. Make healthier versions of the foods you love ­- The holidays are full of comfort foods, which tend to be high in calories, fat, sodium and sugar. To make it through the holidays healthier this year, enjoy versions of your favorite dishes, but make them lower in those nutrients. There are many substitutions you can make without anyone ever knowing; the trick is doing it right, and not making drastic changes. For example, substitute one half of the all purpose flour with white whole wheat or whole wheat pastry flour when baking. You can use applesauce to replace some of the fat and sugar in your recipes. Use lower fat ingredients (like cheeses) when cooking, and grab the lower sodium versions of your favorite stocks and add ins. Once again, an Internet search will provide many ideas. Don’t be afraid of experimenting and carrying the new tips you learn over into the New Year. Eat mindfully - It is easy for your eating to get out of hand during the holidays when you are distracted by socializing and stress. Be aware of what you are eating and how much.

Try not to snack directly from trays; you will have no idea of how much you have actually ingested. Instead, mindfully choose small portions of the foods you want to have and place on your plate. If you get distracted with socializing or other activities, at least you will stop eating when the food on your plate is gone. If you are still hungry, you can always go back for more. If you eat when you are stressed, make a list of activities you can do to distract yourself (exercising is a great alternative), and follow through with the items on this list. The goal of eating is to eat when you are hungry, to be aware of when you are full (before you are “stuffed”) and to be able to stop eating at that point. This may take a little practice, but you can do it. Make holiday foods less special by having them throughout the year - I believe another reason we overeat during the holidays is because we know it is the only time we will be able to eat “holiday foods” like green bean casserole, dressing, and pumpkin pie for another year. Why not have these foods at other times during the year? If you make healthy versions, there isn’t anything wrong with it, and you won’t be as likely to gorge on them during the holidays knowing you can have them at any time you want. Don’t skip the physical activity – It is easy to put off exercise during the holidays because you are so busy. You might be likely to tell yourself once the new year comes around you will return to, or join the gym. Don’t make that mistake. It is easier to maintain your health than to try to undo the damage that can be done over the two months of holidays. Plus, exercise is a great stress reducer, and you will be more likely to eat healthy if you are in the gym consistently. ■
