1 lb angel hair pasta 1 32 oz jar of your favorite marinara 4 cloves of garlic 1/4 lb baby spinach 3 oz capers 15 pitted kalamata olives, 15 pitted green olives with pimento 5 roma tomatoes 3 tbsp extra virgin olive oil 1 tsp cracked black pepper 1/2 bottle of your favorite cabernet 1/2 cup grated or shaved parmesan Pre-heat oven to 400. Cut the roma tomatoes into fourths, crush the garlic and place on a small cookie tray. Drizzle with olive oil, a little black pepper and a pinch of salt (not much salt, you have enough in pasta water and other ingredients). Roast in oven till light browned around edges. Once done, place in sauce pot with all other ingredients except the pasta and bring to a quick boil. Once it reaches a boil, then set your temperature to a low simmer. In a large sauce pot, boil 1.5 Gal of water and add 1/4 cup salt. When at a rolling boil add the angel hair and start stirring pasta so not to stick together. Boil for approximately 2 to 3 minutes depending on how done you like your pasta. Angel hair cooks very quickly so keep an eye on it. When cooked to your liking, drain almost all of the water but about a quarter cup. Place back on stove with no heat and add all of your sauce to your pot. Mix well and you are ready to get out the serving platter. Top with the parmesan and enjoy. This has been one of my favorite pasta dishes since forever and just remember, if you don’t like something don’t use it, dont eat it, don’t drink it, and don’t mention it. Use the last half of the cabernet to serve with dinner. Keep on cookin’ Ada!

Have you ever noticed a dog strolling down the sidewalk and wondered “What is he up to?” Ada native Holly Brady has transformed such a thought into her first published book Scooburt Steals a Meatball. Brady has embarked upon creating a series of children’s books to take readers, both old and young alike, on The Adventures of Scooburt Humperdink. Like most dogs, Scooburt’s curiosity often leads him into unfortunate mischief. Brady created the character Scooburt after experiencing the antics of her own dog Ozzy, a 6 year old golden retriever-mix she adopted 5 years ago from the Free to Live shelter in Edmond, Oklahoma. After graduating from Ada High School in 2006, Brady attended Western State College of Colorado and earned a degree in Communications with emphasis in film, video and media. Upon graduating college, Brady moved to Santa Cruz, California, but has recently relocated back to Oklahoma City with her sidekick Ozzy. The first book of the series, Scooburt Steals a Meatball is scheduled for release September 11 by Tate Publishing of Mustang, Oklahoma. The story provides insight into one of many life lessons we all need to be reminded of from time to time; the burden of a guilty conscience. For many people, a guilty conscience will keep them up at night, it will keep them from pursuing happiness and it may even make them return to their point of wrongdoing to make things right. According to Brady’s storytelling, the same is apparently true for dogs. The plot of this story takes readers on

one of Scooburt’s adventures, during which he becomes hungry. Happening upon a Meatball store, his temptation finally overwhelms him and Scooburt steals a Meatball. However, as time passes Scooburt’s conscience creeps up on him to let him know his actions were wrong and he returns to the store to confess. The theme for Brady’s story is a parallel with human conscience and how our feelings can help us realize right and wrong decisions. Brady hopes to develop The Adventures of Scoorburt Humperdink into a complete reading series for use in Pre-K through 3rd grade classrooms. A unique feature of Brady’s book is the illustration done by Zac Shaeffer, an ECU graduate who produced amazing hand-drawn water color illustrations. She credits Shaeffer’s contribution to her book as phenomenal, noting that readers appear to become captivated by the detailed illustrations of Scooburt’s expressions used to convey meaning within the story. Brady and Shaeffer are already underway with development of the second book in the series for release in 2013, which will target self-esteem and true friendship. The author’s goal for the book is to create a fun read for kids, parents and teachers in order to relate simple life lessons. The book contains learning activities in which readers can explore vocabulary, character development, and other critical thinking skills appropriately targeted for the integration of the new core curriculum standards in education. The format and content should be welcomed materi-

als for teachers and parents and the captivating story of a lovable dog is sure to become a hit with children. To support the September 11 release date of her book, Brady will be in Ada on September 16 for a public book signing beginning at noon at the First United Methodist Church. The Ada Public Library will also be hosting “Meet Scooburt Days” during the ‘paws n claws’ segment of their fall story time on Oct. 9th & 12th and classroom readings by the author and star of the book will be conducted at various elementary schools throughout the area this fall. A large portion of our daily lives is driven by convenience and it’s no secret that our meals are governed by this 11 letter word. Let’s face it, the fast food joints we grab most of our meals from do not contain the good nutrition our bodies need. It’s time for a new way to provide quick, healthy meals for our families. Ladies and gentlemen...it’s Table Thyme! Edwina Lowry and her son, Michael, own Table Thyme. Their passion to start Table Thyme was to provide busy people with healthier more convenient meals. The Table Thyme plan is using their entrees with the sides you have at home. For this reason it is very economical for you to let Table Thyme cook your main dish and you can take advantage of how inexpensive it is to add your own sides. Economy and a well balanced meal equals a good plan. It is also their hope to get families back around their own dinner tables to foster lots of great conversations. Table Thyme renovated 734 Arlington Street and opened their doors February 2011. Adult Table Thyme is not a restaurant or a fastfood establishment. It is in a category all it’s

da is full of historical treasures, yet many of them remain overlooked. For instance, driving down 14th street and breaking at the stop sign on Rennie, one might see a beautiful Colonial Williamsburg style building and wonder what it is. However, as soon as that wonder fills your mind, it’s time to hit the gas and move on to your destination. Many would not guess at the fascinating history and remarkable present that lies within that building—the Ada Arts and Heritage Center. The Ada Arts and Heritage Center began its life as the first public library in Ada. In 1934, local reporter Ferdie Deering was curious why our town did not have a library. The Ada Jaycees were already looking into the matter but not getting very far at all, so the young reporter had to investigate on his own. One can almost picture him in a dimly lit room, intently examining dusty documents, until he has the moment of revelation—a line in the 1912 town charter stating that a library board should be established. Even with this evidence in hand, though, the commissioner had no interest in making the charter’s promise a reality. However, an upcoming election can do wonders to change opinions, especially when the press takes sides. Priorities changed and by January of 1936 a small library appeared in City Hall. The library was a huge success. A year and a half later, they had 2,200 cards, 1,800 books, and a circulation of 34,000. They also badly needed another building. The City Hall solution had simply been a place to get started and now it was time to expand. A bond issue election was called and plans were made. On April 23, 1939, the new library opened at the corner of 14th and Rennie. Designed by Albert Ross, the building cost approximately $69,000 for the land, building, landscaping, and furniture. It was funded by the city and the Public Works Administration. On the first day, about 1,500 people visited the new library and by November, they had 4,500 books. However, the library continued to grow so much that by the late 70’s, there was no more room and the weight of the books was causing structural damage to the building. The tenacious members of the League of

Women Voters decided that something needed to be done and worked ferociously to accomplish their goals. They worked hard to get the library placed on the National Register of Historic Places. They were initially denied, however, because officials stated that a building must be at least 50 years old to be placed on the register. The women would not be satisfied by this, though, and lobbied the state legislature. They won, and the building was, indeed, placed on the National Register. The same year, they began holding fundraising drives to restore the old Montgomery Ward building so it could be transformed into the new library. It took three years and a bond election, but finally, on March 8, 1981, the new library was dedicated and the city had to decide what to do with their new historic building. In 1982, the mayor appointed a committee of six local residents to decide the eventual fate of the building. They decided that it should become the Ada Arts and Heritage Center and, after extensive renovation and restoration, the formal opening of took place in 1986. Since then, the center has functioned as a place for the arts, history, and community and, with its fully furnished kitchen, music room, parlor, and rotunda, is suitable for most any event. The Daughters of the American Revolution meet regularly there, as does the Ada Arts Council and the Wednesday morning Music Club. It is host to art exhibits and music performances, many by ECU faculty and guest artists. The Scissortail Creative Writing Festival also holds its Page One Literary Art Gallery and reception at the center as well. In addition to supporting the arts and history of the area, they also provide a place for community functions. Onehundred dollars purchases you a perfect place for family functions, bridal showers, or baby showers. If you want use of the entire facility for a wedding, including the bridal suite and groom’s room, tables and chairs, and baby grand piano, the cost is only $250, with an optional charge of $75 for the day before to accommodate rehearsals and decoration. The Arts and Heritage Center is completely non-profit, though. It exists solely on a city grant and

its rental income, and they can always use volunteers for various events. What comes to mind when you think of a pageant? Perhaps it’s the bright lights, shining on young girls as they model evening wear on the runway. Or maybe it’s a radiant smile as they come onstage to perform their talent. It could be the quiet nervousness and crossed fingers of anticipation, waiting for their results. Yes, on the surface a pageant is all of these things. Deep down, though, a pageant is much more. It’s about developing confidence in young women, poise under pressure, and the opportunity to follow their dreams of a college education. The Miss Ada Pageant is more than a pageant; it’s a scholarship program. On September 29, 2012, contestants and community alike will gather at the Ada High Cougar Activity center for the Miss Ada and Miss Ada’s Outstanding Teen competition. Tickets can be purchased at the door for $12 or in advance for $10 at Artisan Salon, Belle E. Salon, and JaCheJa’s. While the audience waits patiently for the show to begin, backstage the girls will be full of nervousness and excitement, waiting for their opportunity to shine. However, this is just one part of this competition. The winner goes on to compete at Miss Oklahoma and possibly Miss America. However, it is by no means the beginning of their journey either. For these young women, it begins with dedication to school and their talent of choice; in the beginning, they might not have any idea that they want to be in a pageant when they get older. However, in order to do well in this program, they must submit their transcripts, resume, and be able to think on their feet during interviews and onstage questions. The talent competition is worth 35% of the total score; those who have spent their lives working diligently at artistic expression will most likely achieve greater results than those who have not.

Once they have made the decision to be in a pageant, they must take the time to fill out an extensive application and start planning. Those between ages 13-17 can compete in Miss Ada’s Outstanding Teen those 17-24 are eligible for Miss Ada. The applications and requirements for both are similar with a few exceptions. For instance, the interview for Miss Ada’s Outstanding teen lasts 6 minutes and Miss Ada lasts 10. Miss Ada models swimwear while the teens model active wear—clothes that reflect their favorite way to stay in shape. When filling out their application, they have to do much more than answer a few questions and attach their transcripts. They must write the introduction that will be read before their talent performance. They must submit a resume (something that most young people have never done before). Most difficult and most important, though, is the platform issue statement that they also must submit. The contestant must find an issue they feel strongly about. It also must be something where, as Miss America, they could help their cause, promote awareness, and accomplish something good. This is no easy task. The contestant must consider things such as how they might be able to change the attitudes or behaviors of others, create awareness, use the media and marketing strategies, and fund their plans. The judges will also want to know if the contestant has worked with this issue before and made any previous accomplishments. Finally the big day will arrive, and the contestants will gather backstage. They must do their own hair and make-up; parents, make-up artists, hair stylists, etc. will not be allowed backstage. They will have already done their interview, worth 35%, and now ready themselves for the lights, the stage, and the audience. They hope they can retain their poise during the on-stage question, worth 5% and that their

talent goes as well as planned and practiced (especially since it’s worth 35%). Their evening wear, worth 15%, and swimwear, worth 10%, should make them feel beautiful and special while also demonstrating their grace and confidence in front of a crowd under stressful circumstances. Excitement bubbles over when the winners are announced. Not only have they achieved their goal, but they will also receive wonderful prizes donated from many local businesses and institutions. While the crowns, jewelry, salon visits, and gift certificates may be exciting. Perhaps the most important prizes are all of the scholarships. Thousands of dollars in scholarship money is presented to these talented young ladies, including full year tuition at ECU for the winner of Miss Ada and one semester’s tuition for the runner-up. “Without the generosity of the Chickasaw Nation, we would be unable to offer such prizes and scholarships”, says Evelyn Martin. So come to the Cougar Activity Center on September 29 at 7:00 to join in their excitement and cheer on some extraordinary and talented young ladies. Taylor Treat, former Miss Ada and former Miss Oklahoma, will be the emcee this year, and Alicia Clifton, current Miss Oklahoma, will be performing. It should be an enjoyable and entertaining evening. The foods we eat certainly contribute to our state of health and can be factors in diseases and health issues we have. I like to say our bodies are built from the “materials” (food) we put in our mouths. When our mothers are pregnant with us, we most definitely are built from the foods she eats. While it is quite obvious that eating too much of some nutrients, or not enough of others, will lead to disease, some food choices we make may have more subtle, but permanent changes in our body. A new area of research called nutrigenomics is the study of how nutrition effects gene expression. Some studies suggest that what a mother eats during pregnancy determines if some genes are turned on, and this can effect generations to follow. Today, your body is maintained by the food you eat. It is no secret that the rate of obesity has risen over the years. With increased obesity comes an increased risk of many health conditions including high blood pressure, high cholesterol, increased risk of cardiovascular disease, type 2 Diabetes, and some types of cancer, among other health conditions. Twenty-five percent of the population is plagued with 18 • www.adahub.com

“metabolic syndrome,” characterized by diabetes, increased abdominal obesity, high cholesterol and high blood pressure. Having metabolic syndrome increases the risk of heart attack and stroke. Genetics, physical inactivity, age, inflammation, and hormones all play a role in metabolic syndrome, as does central obesity. There is no one cause of obesity, and while inactivity and genes play a role, nutrition (eating too much of the wrong foods) usually has some part in packing on the pounds. Extra calories leads to extra pounds, but eating too many of the “wrong” foods can lead to other health conditions. Over the years, Americans have increased the amount of processed foods they consume. Processed foods are high in trans fat, saturated fat, sugar, cholesterol, sodium, preservatives, and omega-6 fatty acids. Having too much of any of these can boost the risk of unfortunate health conditions. Another issue with eating an excess of processed food is that some of the better nutrients are often left out of the

diet. These nutrients play important roles in the body in preventing and fighting disease. For example, a nutrient that has received a lot of press the last few years, Vitamin D, may play a role in the prevention of some cancers, cardiovascular disease, stroke, hypertension, diabetes, multiple sclerosis, Rheumatoid arthritis, inflammatory bowel disease, osteoporosis, influenza, autism, asthma, and others. Most people in Oklahoma do not get enough Vitamin D and this could be negatively impacting their health. Once again, it is about having a well-rounded diet that includes foods from all food groups and avoids an excess of the “wrong things.” To learn specifically what you should and should not eat and what (if any supplements) you need and what amount you need (remember too much of a vitamin or mineral can be just as bad as not getting enough), talk to a Registered Dietician or Medical Doctor. ■
