recipe Spinach and Grilled Asparagus Salad with a Cool Cucumber and Raspberry Vinaigrette Ingredients: 1 Bag of Spinach 1/2 lb Asparagus 1/2 of a red onion 2 cucumbers 8 oz. of fresh raspberries (save a couple to put in your salad) 1 cup olive oil 1/8 cup red wine vinegar salt & pepper 1/8 cup of sugar

Vinaigrette: In a small sauce pan add 2 cucumbers peeled, seeded and chopped, 1 container of raspberries, 1/8 cup of sugar, 1/8 cup red wine vinegar and an 1/8 cup water and bring to a simmer. Let it simmer for 2-3 minutes then chill approximately 30 min. Place the mixture into a blender and blend very well; and slowly, very slowly, begin to add the olive oil. Season with salt and pepper and set aside. Salad: Take one of the asparagus spears and grab it with both hands and bend it until it snaps, this is how you will trim the rest of your asparagus. Now with your asparagus prepped, place them in a bowl with a touch of olive oil, salt and pepper and grill them either outside on the grill or inside with a grill pan, just until done. Let them cool while you gather the rest of the salad ingredients. In a large bowl, toss together the Spinach (washed cleaned and dried of course), asparagus, fresh sliced cucumber, shaved red onion, and a couple of raspberries that you saved from earlier and toss them with your vinaigrette until completely dressed. Place it all in a nice serving bowl and enjoy with a sweet lemon tea! You can also add grilled chicken to make it a nice lunch meal.

Eat to your health Spring is here and the farmers markets will soon be overflowing with fresh, local grown produce. Buying local produce is a great way to save money and support your community, but did you know getting enough fruits and vegetables could help you fight off disease? Fruits and vegetables contain antioxidants that help prevent cancer. They are also high in fiber, which helps control blood cholesterol levels, and prevent colon cancer. Potassium-rich produce like potatoes, spinach, kidney beans, bananas, orange juice and cantaloupe help maintain a healthy blood pressure. In addition, many fruits and vegetables are high in vitamin C and other immune boosting nutrients that help ward off infectious diseases like the cold and flu. Fruits and vegetables are divided

oundation Board member, John Fryrear acknowledged the support of the Chickasaw Nation Foundation with a $10,000.00 check presentation to Prevent Blindness Oklahoma President/CEO Dianna Bonfiglio in Oklahoma City. This funding will support the many Prevent Blindness Oklahoma screeners traveling to the 13 counties in the Chickasaw Nation with screenings of over 35,000 children at 105 locations. Last year, over 3,600 children were referred to an eye doctor. “So far 872 have been for an exam with 737 receiving new glasses or contacts as a result of our screening,” said Mrs. Bonfiglio. She added, “Since 80% of what children learn in school is presented visually, and 85% of children never receive an eye exam, our vision screening is critical for finding and referring those children with a vision problem. ”Sometimes the difference between success and failure in school can be as simple as a pair

Last year, PBO screened over 300,000 children in all 77 counties of Oklahoma while referring almost 47,000. Everyone makes mistakes from time to time. It is part of being human. However, people can also tend to beat themselves up about their mistakes, feeling guilty and sometimes never forgiving themselves. Ken Angel, pastor of Abba’s House Worship Center, along with his congregation, don’t want you to feel that way. They want to you understand that, in the words of Pastor Angel, “God allows do-overs.” If you need a new beginning, if you need a place to start over, them Abba’s House is the place for you. Their church is all about love, acceptance, and forgiveness. Every year they operate on a new theme. This year is “A Year of New Beginnings.” Everything their church does this year revolves around this theme. In addition to that, though, they want to extend the love, acceptance, and forgiveness of Jesus Christ to everyone they meet. That is their vision. Their mission, and plan to accomplish their vision, is fourfold. First they strive to encounter God through worship, prayer, and the word of God. Second they want to connect people with Jesus Christ and one another. Third, they aspire to grow in the Christian virtues of faith, hope, and love. And lastly they want nothing more than to serve others in Christ-like humility. Pastor Angel, though not native to Ada or Oklahoma, has become a great member of the commuity. He has been here for ten years now, being appointed as Pastor after serving 5 and a half years in Iowa as a pastor and as the youth director for Iowa and Nebraska. Originally, he is

from northern Ohio, though. Though he has been here for ten years, he has spent a total of 25 years in ministry. Ada has been a great community for him and his family. And family is very important to Angel as well as his church. He is not the only ordained minister in his family; his wife is as well. All three of his children are involved in the ministry as well. His oldest son, off to Bible College in Tulsa now, was actively involved in the congregation and his second son is the children’s director. His daughter, who recently graduated highschool, is the worship leader for the youth band. Family involvement is very important to the church as a whole. The core of the church are families—people in their 30s or 40s with children. All families are welcome, whatever the shape or size. But this also doesn’t mean that you have to be in a family. They have a very active program for Senior Citizens, and also have ministries specific for men and women. They are interested in being a part of the community. The kids do an annual Christmas program that everyone is welcome to come see or participate in. They are locally involved with the Ministerial Alliance, National Day of Prayer, the Good Friday service, and the community Thanksgiving Dinner. Recently they have been active in the tornado relief, raising over 500 dollars to go to Operation Compassion, which

is the relief organization for the Church of God. This organization is providing 25 semi-tractor loads of relief to the Moore and Shawnee disaster areas. Abba’s House Worship Center is a congregation with the Church of God Cleveland Tennessee and is a Pentecostal Denomination. They have been a part of the community for a long time. This November they will be celebrating their 79th anniversary in Ada. If you want to come join them, their Sunday worship services are at 10:30 am and 6:00 pm. For the young ones, they offer Abba’s Kids Junior and Abba’s Kids Church, both starting at 10:30. They have a midweek service on Wednesday night for all ages as well. Adult bible study begins at 7:00 in the main sanctuary and Unashamed, their student ministry is in the Loft (which is the family life center) with their own youth band and lessons. A

watch or clock my eventually draw its last tick, but time continues to move forward. Some things, like the Grand Canyon change over years, and other things change in an instant. For many fellow Oklahomans, change happened in an instant. Some changed from having a home sitting on a solid foundation, to just a concrete slab. Some changed from having a vehicle in the driveway, to just an empty driveway with no sign of transportation. And there were others, who experienced a more dramatic change when they lost a loved one to the devastating tornados that struck Shawnee on May 19, 2013 and Moore on May 20, 2013. It only took an instant for the people of Ada to jump into action and lend a helping hand to those affected by the violent storms. Local churches and businesses took the initiative to organize drop off points for donations. Many people responded by bringing the needed items and volunteers put them in tubs, loaded down trailers

and multiple trips have been made to deliver the simple but necessary things to those in need. Not only have the people of Ada been sending donations, some have actually gone to physically help in the clean up and repair. A group of volunteers from Union Valley Baptist Church ventured to Shawnee from Saturday-Monday following the tornado. “We picked up branches, sorted through piles of rubble, cut wood with chainsaws and there were people on tractors everywhere,” said Tim Guzman. We all know that it’s no fun to do yard work so it is quite impressive to see a young group of people go out and volunteer to do yard work for someone else. For most of us, that would just include cranking up the old riding lawnmower and then a little weed eating. It was a whole different scene when the group laid their eyes on the yards in Shawnee. “I felt sorry for them and I was in an eager mood to do whatever I could for them,” Guzman stated. He also went on to say, “I helped because the Bible tells me to be a good witness to all people and helping them was a great

way to do just that”. Adam Hall describes the scene as “numbing”. “The community was so flattened, without seeing it beforehand, it was hard to really make a connection to what had been lost”. Hall led the group of nine as they took heaps of debris from neck high, down to bare ground. They helped clean up 7 properties over the three days of hard work. They also searched for any salvageable possessions or valuables that could be returned to their owners. “We were working with Samaritan’s Purse and they would present each homeowner with a Bible when their property had been cleaned”, Hall said. Hall also added, “We wanted to go and help because it seems like that’s where Jesus would have been - helping the hurt”. When most states in our country are hit with devastating weather, they have to wait for Government assistance to get back on their feet. Things are little different here in the great state of Oklahoma. We are proud of our community for reaching out and I don’t believe that will change anytime soon. n the months of May through September, you can glimpse a beautiful sight on Wednesday and Saturday mornings; cars and trucks line up in their assigned spots in the parking lot across from Citizens Bank, and people park along 12th street, ready to greet the farmers and see what they have to offer that day. The sidewalk is lined with tables, and baskets of fresh produce are filled to overflowing, reserves stacked behind the table ready to replace what is sold. The farmers arrive around 7:00 in the morning and stay until the early afternoon, or whenever they run out of goods. You can find a wide variety of produce, depending on the time of year. On a late May morning you could find plenty of onions, radishes, and greens. Also, scattered among the tables are asparagus, sweet potatoes, red potatoes, snow peas, cabbage, peanuts, and pecans. The goods, of course, are seasonal. Soon watermelons, cantaloupe, and peppers will join them. Golden Grain Farms Bakery

sets up a table selling produce, baked goods, and delicious jams and jellies. The Farmer’s Market is about more than just produce, though; it is also about people. Vernon Brown, one of the vendors, has been coming to this market for fourteen years, ever since he retired from the Pauls Valley State School. He is 73 years old and doesn’t remember a time when he wasn’t involved in a garden. It is a part of who he is. On this particular day, he has pecans, onions, peas, peanuts, and potatoes. For Brown, the freshness is the most important reason to buy produce at the local market opposed to the supermarket. You know where it comes from, and you know it was probably gathered just yesterday. The best thing about the market, though, is the socializing. He loves talking to the people. Someone might not buy a lot but stick around talking for half an hour. Vernon gets to meet new people every week in addition to the faces he’s seen for fourteen years.

Not everyone has been coming for that long, though. This is Sharon Rippee’s first year. Her husband had been doing it for about eleven years, though. However, he recently had a stroke and so she took over coming to the market because he couldn’t anymore. Sharon has been growing stuff all of her life. She was born in Oklahoma, but her family moved to California when she was young. She grew up in the produce markets there; it is how her family survived. Oklahoma wasn’t out of her blood though; she had to come back. Just like Vernon, she values the freshness of the produce. “You want something that was picked yesterday, to eat it today.” Nothing tastes quite as good as fresh from the garden produce. Sharon was selling asparagus, onions, radishes, polk salad, and bok choy, but will be bringing watermelon and cantaloupe as soon as it’s ready. Sara Blackwood is yet another face at the Farmer’s Market. She has three


boys and her first girl is due in September. Farming is not only something that is in her blood; it also allows her to stay at home with her children. She farms on the same land that her Granny and Grandfather farmed on. It’s been in her family for over 100 years. She has transformed it, though, and made it fit her own family. She has built playgrounds in between the different crops so she can watch her children play while she farms. She also farms using no chemical pesticides. She prefers to use an organic pesticide made of chrysanthemums and biological pesticides like ladybugs and praying mantises. When she had used chemical pesticides in the past she noticed that the good bugs were dying too. This allows her to keep the good bugs while also producing something she can eat right from the ground and feel good about giving to her children as well. Today she has red and gold potatoes, snow peas, onions, radishes, and swiss chard. In the future, though, she will be bringing all sorts of exotic melons, squashes, and even some ghost peppers. There are many reasons to visit our local farmer’s market. You can, of course, get the freshest produce possible without picking your own. You can also get a wide variety of goods and see something different every time. There are fruits, vegetables, houseplants, nuts, breads, jams, jellies, fresh herbs, etc. It is good for the community but also good for the producers. But you can also go there for the people. Meet the people who grow your food and be a part of the larger community. â–
