GRILL MEAL

• Roasted citrus asparagus w/ marinated flank steak and grilled potatoes • Asparagus bundle 1 (cleaned) • Garlic 1 head • Lemon 1ea • Lime 1ea • Butter 1 stick • Flank steak 2# • Yukon gold potatoes 1# FLANK STEAK MARINADE • 2 Tbs beef paste (minors brand is the best) • 3 Tbs olive oil • 4 Garlic cloves crushed • 4 Tbs salt • 4 Tbs pepper • 2 Tbs soy sauce • 1 Tbs liquid smoke • 2 Tbs of fresh herbs (parsley, rosemary, thyme)

Start by marinating the flank steak (a couple hours is necessary a full 24 hours is better) and place in the refrigerator to marinate. Once the steak has been marinating pull out of the fridge and allow it to rest at room temperature for about 15 minutes. While that’s resting start your preparation of the asparagus and potatoes. Drop the potatoes in a pot of cold water and bring to a boil, once boiling allow to boil for 5 min or until the potates are partially soft but still a little bit hard. Once they are ready strain them off and place in a pan in the freezer to cool for 10-15 min. For the asparagus just grab one from each end and bend, once it snaps trim the rest of the asparagus into the same size. Place the asparagus on to a sheet of foil and season with salt, pepper, crushed garlic, and the juice of one lemon and one lime. Wrap tightly so it will steam when cooking. Now that everything is ready make sure you have a nice hot grill (if using a gas grill turn to high if using charcoal make sure the coals are right next to the grill grate. Start by grilling the flank steak the oils from the steak will cause flare ups but do not get worried it will only be a little bit. Grill on each side for 4 minutes, once the steak is done or internal temperature hits 120 degrees take it off the grill and allow to rest. Now spray the grill with a type of non stick cooking spray. Slice the potatoes into rings and grill them on each side for 2 minutes, as they are cooking place your package of aspargus on. Once the potatoes are done season with salt, pepper, chopped garlic, lemon juice, and 2 tbs of olive oil.

HYRDATION TIPS There is not a blanket fluid recommendation that is adequate for everyone and thirst is not a good indicator of dehydration. The best way to gauge hydration status is by urine output and color. Dark urine and decreased urine output points to dehydration. Here are a few tips to follow when spending time in the heat this summer: • Stay hydrated at all times, even when not outside. This will give you a head start when you are out in the sun. • Always have fluid with you to sip on. • Electrolytes like sodium, potassium, chloride and magnesium are necessary for proper hydration. When spending time in the sun, sip on a sports drink that contains electrolytes. Healthy, active individuals do not need to restrict salt intake when sweating heavily. • Try to stay in the shade as much as possible and wear light breathable clothing. • Give your body time to adjust to warmer temperatures. Acclimation to heat can occur by increasing activity in the heat gradually over a 7 to 10 day period.

Dehydration can quickly lead to heat illness and can be potentially fatal. It is important to take precautions in the hot Oklahoma weather. Children and older adults are most vulnerable and can quickly become dehydrated or suffer from heat illness. If symptoms of heat cramps occur (cramps in stomach, arm and legs), stop exercising and drink cool water or sports drink. If weakness, fatigue, fainting, increased skin and body temperature, headache, vomiting, or dizziness occur, move the person to a cool area, remove tight clothing, give fluids, use a fan or ice towels to cool the person and refer to a physician (especially if nausea and/or vomiting are present). In the case of heat stroke (core body temperature greater than 104 degrees, nausea, seizures, confusion, disorientation and/or unconsciousness) call 911.

There are many things in life that we take for granted; our hearing ranks high on this list. The sad thing, though, is that for many people, hearing loss is so gradual that they don’t even realize what has happened. Year by year, sounds just seem to phase out until you wake one day and realize that you can’t hear the cicadas or the rustling of the leaves, and the television volume is cranked up to max. Fortunately, great strides have been made in hearing aid technology, allowing people to regain this once lost sense. Paul Penwright, at EarMaster, considers it his privilege and his duty to help make this happen. Paul began his career as a hearing instrument specialist in 1988. While working for Miracle Ear he traveled around Southern and Central Oklahoma doing in home appointments, checking people’s hearing and fitting them with hearing aids. Then, in 1989, Paul moved from Yukon to Ada to open an office for Miracle Ear. He continued in that business for three years until he decided to branch out and open his own business, EarMaster, in 1992. He has been at his current location, 703 N. Broadway, Ste. 2, for almost 21 years now.

During this time Paul has seem hearing aid technology change tremendously. Not only have the size of hearing aids shrunk, but many of their previous problems have been reduced as well. For instance, the main complaints that people used to have about hearing aids were that there would be background noise and feedback. Also, the power supply was often inadequate. Now, however, the new technology has eliminated many of these problems and made hearing aids smaller and more powerful. Also, customers would have to wait for at least two weeks in order to have their hearing aids crafted specially for them. Now, in most cases, you can walk in, have your hearing checked, and leave the same day with a small hearing aid behind the ear; you can regain your hearing within an afternoon. If you notice that everyone seems to mumble, if you often have to ask people to repeat themselves, or if people are always asking you to turn down the television, then you should get your hearing checked. he United States of America was founded on some pretty solid principles. One such principle states, “A free people will not survive unless they are strong”. George Washington said, “To be prepared for war is one of the most effectual means of preserving peace.” We are fortunate to have men and women serve in our military to protect the freedoms we enjoy, and so often take for granted. Courage and bravery run through the blood of those willing to risk their life for this country. One such man is Chris Davidson. Chris, or Harley, as his friends would call him was born in Longview, Texas in 1975. As a kid he enjoyed playing football, baseball and running track. He also loves to fish and workout. Harley graduated high school in 1994 and went straight to the military. He served in the United States Air Force and was stationed at Beale Air Force Base in Beale, California. was 1T151 Life Support Apprentice and was also a U2 Launch and Recovery Specialist. “When I was overseas in Saudi Arabia there were many moments of not knowing what was next, but being scared was never a problem. There wasn’t time to be scared”, Harley shared. Serving in the military has many risks, but fortunately for Harley, he came home after four years of service without a scratch. This was good, because Harley had plans to walk on the field during the Dallas Cowboys spring training in hopes of making the team. Harley had always dreamed of playing for the Cowboys and was working hard to make sure he was prepared. One cool night in December of 1998 while he was driving in his truck, something tragic happened. A traffic sign was knocked down and never put back up. That sign being put back where it belonged could have made a huge difference for Harley that day. He was never warned about the upcoming “T” in the road and his car crashed, threw him out and then landed on top of his body. Harley was trapped under his truck for ten hours before he was found. The doctors stabilized him and began to try to save his legs. A week went by and his leg was becoming so infected that it was spreading to the rest of his body. “At that point, it was my leg or my life”, Harley said. He chose his life that day. They amputated his leg at the hip and told him his other let would never work again. The doctors said he would be in a wheelchair the rest of his life. Harley went home after recovery

and started to live his life in a new way. Harley was stubborn, and got tired of needing others to help him all the time so he began his own home based rehab to work on his remaining leg. “In the military I learned how to keep pushing, to adapt and overcome any and all situations. It taught me to be a leader and stand up for what I believe”, Harley shared proudly. All the training had prepared him for such an obstacle. Harley uses his leg everyday now. He works out at 580 Barbell and even has done two Crossfit competitions. Harley is a real inspiration and he doesn’t want anyone to feel sorry for him. He loves his 4 kids and girlfriend Crystal. He enjoys hanging out with his family and taking the boat out on the lake. He even rides a Harley, hence the nickname. “I would tell anyone who wanted to serve our country to do it with your whole heart because it teaches you a great deal of respect, honor and responsibility. It makes you grow up to be prideful, and to stand for something bigger then yourself ”, Harley shared with a smile. Harley never got to play for the Cowboys but he has served his Country well, and has learned to overcome any obstacle in his path. With the right attitude, you can too.

There is only one relief to the blazing heat of an Oklahoma summer—thoughts of snow and Christmas lights. This is why it is the perfect time to think about the upcoming collaborative project at Wintersmith Park. Many individuals and organizations in the city want to expand on the current Christmas lighting project at Wintersmith Park, making it something that would rival other destinations within Oklahoma. Stacey Golightly, Lisa Bratcher, Janice Stout, Lisa John, and Valorie Walters have all worked very hard to make this dream come true. And Sarah Jane Johnson, former President and CEO of the Ada Chamber of Commerce originally initiated the idea. While there is a long road ahead, this project, brought to fruition, would positively impact Ada in many ways. It all began when the city of Ada had a community visioning called Take Part: Planning Ada Right Together. They asked the citizens what they wanted Ada to look like and be like. Over the course of five meetings, each attended by 50-100 people, the overwhelming consensus was that they wanted Ada to be even more beautiful and hospitable. The community wanted to focus on the high points of Ada and make them instrumental in the city’s development. Wintersmith Park fit perfectly into this plan since it is the gem of Ada with its beautiful landscape, Fourth of July celebrations, and the attractions run by the Kiwanis. They wanted to enhance the life at Wintersmith further and make it something even more essential to our community. Lisa John, one of the board members for the Chamber of Commerce, says, “The current Christmas light displays at Wintersmith Park are a great attraction for the City of Ada to showcase our beautiful park. We appreciate the effort that has gone into providing these lights for the community, and our goal is to enhance the current progress in Wintersmith Park for local residents and surrounding communities to enjoy.” This new lighting project fits perfectly within this community visioning process.

The Chamber of Commerce wanted to focus on improving the already excellent Christmas lights at Wintersmith Park and getting more people to come to Ada. This project brought these two efforts together in one largescale project. When Tom Crabtree of Coca-Cola and Tom Runnels began the Wintersmith Christmas lights, it brought people in from other areas, and also brought a certain joy to the community. Now, however, the committee want to build on this previous success in order to truly make our park a Winter Wonderland. This project will not just make out town more beautiful, it will also be good for Ada economically. Sarah Jane Johnson initiated this project because, “It is great for the people living in the community but also for people from other parts of the region. These visitors eat here, shop here, and promote Ada outside of Ada.” The influx of money provided by extra tourism won’t just make money for business owners, it will also make these companies grow, providing more jobs and services to the community. Jody Murray, the Director of Operations for Applebee’s, highlights the stark differences that extra tourism can make for businesses. “When Ada lost the Rodeo Bull Fights, restaurants in general lost an average of 15% over the weekend. When they lose the opportunity to bring people into the community, they lose business. And now we have the chance to bring people into the town over the course of a month.” The Shop Ada committee is organizing different events for December 3rd to 5th to highlight activities in Ada and encourage people to come to Ada and shop, eat, and experience all that Ada has to offer. December 3 will be the annual Main Street Christmas Parade and over the weekend The Shop Ada Committee is planning on having events at the park, downtown, Arlington Center and North Hills Shopping Center. They are planning on having carriage rides, walk through the park with Santa, photos in the park, carolers, shows at the McSwain, and activities for all ages. Plans are

in progress to have a large Christmas tree at Wintersmith Lodge as well. Everyone is working hard to make this Christmas the best that Ada has seen and to build a legacy that will go throughout the years. The first project meeting and fundraiser for this initiative was on June 11th. Through the course of this meeting, they garnered support, but also a head start to their funding. The Chamber of Commerce committed $20,000 to the project, and the Chickasaw Nation committed another $20,000. Governor of the Chickasaw Nation, Bill Anoatubby, states, “The beautiful Christmas light display at Wintersmith Park is one of the traditions that makes Ada such a special place to live, work and visit. We are happy to work with our friends and neighbors in Ada to support this Christmas light display because it brings so much joy to so many families during the Christmas season.” The project also received contributions from businesses and individuals in the amount of $10,000. So, in total, they have raised $50,000. However, that is only a start to their overall goal of $250,000 to make this project a reality. There are many possibilities to help fund this project. Any amount of donation would be both appreciated and helpful. You can donate by visiting the website, www.trailoflightsada.com or can write a check made out to “City of Ada Lighting Project.” On July 11th from 8:00-10:00 in the morning, Applebee’s will be having a pancake fundraiser. Tickets are seven dollars and can be purchased at Applebee’s prior to the event. This project is not just done by the City of Ada or the Chamber of Commerce or the Chickasaw Nation; it is a project brought to fruition by all of these organizations and more. This project belongs to the people of Ada, the people who remember going to the park as a child or who still go there for picnics or jogs or music or theater or just some basic rest and relaxation. So let’s help our project for our community become realized. Even a dollar per person will add up. Let’s make this the best Christmas ever. www.adahub.com • 13


A London Theater Experience in Ada If someone were to ask you to go see some London theater with them next month, what would you say? You probably wouldn’t think it feasible. It’s too far. It costs too much money. Maybe you don’t even have a passport. However, what if you knew that you could have this experience right here in Ada, on the ECU campus? And for much less money than tickets to theater in London or a plane ticket or a hotel. This opportunity is alive and well for all members of the community because of a project called ECU SCREENS. ECU SCREENS began in the Fall of 2014. It is sponsored by multiple department on campus, as well as both faculty and students. The Department of English and Languages, The School of Fine Arts, and the Linscheid Library all came together to bring a unique cultural experience to our community. The spirit of collaboration encouraged multiple co-directors instead of a single director. Chelsea Baker, Jaime Worden, Sarah Peters, Samantha Dillehay, Steve Benton, Rebecca Nicholson-Weir, and Katherine Seals came together to make their dream a reality . As co-director Steve Benton states, “Its mission is to bring memorable cinematic experiences to ECU, Ada, and the surrounding communities.” It was originally inspired by other cultural events on campus. The wonderful response to ECU’s French Film Festival proved that Ada was ready for this kind of experience. There had also been other events on campus, such as a documentary The Reconstruction of Asa

Carter which was standing room only. The ECU SCREENS acts in cooperation with NT Live, which streams live productions of The Royal National Theater of London to movie theaters and universities. This is one of the best theater companies in the world, boasting many of the greatest actors of our era. Many movie theaters, including our own Cinemark, will show occasional NT Live productions, and some theaters, though none near us, will show the whole season. However, we have the rare treat of having the whole season at our local university. In fact, we are one of about a dozen universities in the nation to have this program, and the only one in Oklahoma or any surrounding states. Other participating universities include: Monmouth University in New Jersey, University of Utah, University of Maine, Carleton University in Minnesota, University of Notre Dame, Dartmouth, Mercyhurst College in Pennsylvania, Northwestern University, and Indiana University. So far they have shown a whole host of award-winning shows including Frankenstein with Benedict Cumberbatch and Jonny Lee Miller, A View from the Bridge with Mark Strong, The Curious Incident of the Dog in the Night Time with Luke Treadway, A Streetcar Named Desire with Gillian Anderson, which also featured a New Orleans Night with Dixieland Jazz and New Orleans themed deserts, Medea with Helen McCrory, and Of Mice and Men featuring James Franco. Some other great plays will be coming up soon as well, including The Audience on July 26th starring Helen Mirren. That day is also Mirren’s 70th birthday so there will be birthday cake and anyone sharing her birthday will get in for free. Following that on October 2nd, they will present Everyman starring Academy Award nominee, Chiwetel Ejiofor from 12 Years a Slave. November 7th, Benedict

Cumberbatch will star in a production of Hamlet, performed at the massive Barbican Theater in London. And these are not all. The reception has been so wonderful that they will continue doing this as long as people still want to come. The audiences have been large and enthusiastic. Several hundred people have turned out for some of the more popular shows, such as Benedict Cumberbatch in Frankenstein. They even offered a special performance of Treasure Island for the Ada Public School System. ECU SCREENS is bringing a love of theater to a community that might not otherwise have the chance. As one appreciative audience member wrote in an email, “Thank you, and your team, for all your work bringing such quality art to campus. We enjoyed last night’s production immensely, and the grandtwins couldn’t stop talking about it ALL NIGHT!
