Roasted Butternut Squash Pie

by Starrin Ricupero, executive chef at 51 Main at the Bridge. Middlebury, VT You can use store bought pie crust for this recipe, I suggest Pillsbury Just Unroll Pie Crust. Peel & cut butternut squash in to 1” cubes, roast at 400 degrees until tender, about 30 min., then mash. Pie Crust 1 ¼ cups all purpose flour plus extra for work surface ½ teaspoon salt 1 tablespoon sugar 6 tablespoons (¾ stick) cold, unsalted butter, cut into small cubes ¼ cup chilled solid vegetable shortening, cut into pieces 2 tablespoons cold vodka 2 tablespoons cold water Butternut Squash Filling 2 cups mashed & pureed, roasted butternut squash 1 ¼ cup heavy cream ¼ cup packed light brown sugar ¼ Vt. maple syrup, grade B is best 1 tablespoon cornstarch 1 ½ teaspoon ground cinnamon 1 teaspoon ground ginger
¼ teaspoon ground nutmeg ½ teaspoon salt 2 large eggs 1. Pie Crust: Using fork or fingers, rub flour, butter, shortening, sugar and salt together in a bowl until pea sized crumbles form. Sprinkle vodka and water over mixture. With rubber spatula, use folding motion to mix, pressing down on dough until it is slightly tacky and sticks together. Form into a flat disk; wrap and chill for 1 hour. 2. Heat oven between 350 – 375 degrees. Using a rolling pin, on a well floured work surface, roll out dough to ¼ inch thickness. Transfer to a 9 inch pie pan, and trim excess dough from edges; crimp with a fork or your fingers. 3. Butternut filling: In a large bowl; whisk together all ingredients for pie filling until smooth. Pour filling into prepared pie crust; Bake until the middle jiggles slightly when pie pan is tapped, about 45 min. Let cool to room temperature before serving. Recipes Contributed by 51 Main

Peel large sections of skin from orange and lemon. Over medium heat in a medium sized pot, pour in agave syrup and water, then add the peels and juice of the orange. Add the vanilla bean, cloves, star anise, cinnamon stick, and nutmeg gratings. Bring to a boil, then simmer for about an hour. The liquid will reduce, so after around 30 minutes, add in about a half cup of wine. This allows the flavors to infuse and will create a syrup.

From our kitchen to yours Cranberry And Pistachio Biscotti INGREDIENTS: 1/4 cup light olive oil 3/4 cup white sugar 2 teaspoons vanilla extract 1/2 teaspoon almond extract 2 eggs 1 3/4 cups all-purpose flour 1/4 teaspoon salt 1 teaspoon baking powder 1/2 cup dried cranberries 1 1/2 cups pistachio nuts DIRECTIONS: 1. Preheat the oven to 300 degrees F (150 degrees C). 2. In a large bowl, mix together oil and sugar until well blended. Mix in the vanilla and almond extracts, then beat in the eggs. Combine flour, salt, and baking powder; gradually stir into egg mixture. Mix in cranberries and nuts by hand. 3. Divide dough in half. Form two logs (12x2 inches) on a cookie sheet that has been lined with parchment paper. Dough may be sticky; wet hands with cool water to handle dough more easily. 4. Bake for 35 minutes in the preheated oven, or until logs are light brown. Remove from oven, and set aside to cool for 10 minutes. Reduce oven heat to 275 degrees F (135 degrees C). 5. Cut logs on diagonal into 3/4 inch thick slices. Lay on sides on parchment covered cookie sheet. Bake approximately 8 to 10 minutes, or until dry; cool. Gingerbread 1 cup sugar 1 cup molasses 1 cup butter, melted 3 eggs 3 cups flour 1 1/4 cups boiling water

1 tbsp. ginger 2 tsp. cinnamon 1 tsp. cloves 1 tsp. grated nutmeg 1/2 tsp. salt 1 tbsp. baking soda

Preheat oven to 350 degrees Grease and flour a 9-inch fluted tube pan. In a large bowl beat together the sugar, molasses, butter and eggs. In a seperate bowl combine the dry ingredients. Add the dry ingredients alternately with the boiling water to the egg mixture. Pour the batter into the prepared pan. Bake in a 350 degree oven for 40 minutes or until a toothpick comes out clean. Cool in the pan on a rack for 15 minutes. Loosen the cake from the edges of the pan with a knife. Invert the cake onto the wire rack and sprinkle with powdered sugar. Top it all off with fresh whipped cream.

Cran Apple Pie with Almond Topping FILLING: 1/2 C sugar 1/4 C AP flour 3 Tbsp butter, melted 1/2 tsp ground nutmeg 1/8 tsp salt 5 medium tart apples, skins on, cored and sliced 1 C dried cranberries 1 9-inch pie shell

Makes 4 dozen
 1 pound maple bacon 1/2 cup (1 stick) unsalted butter room temperature 3/4 cup brown sugar 3/4 maple sugar, plus additional for sprinkling 1/2 teaspoon baking soda 1/4 cup flaked sea salt, plus additional for sprinkling 1/2 teaspoon maple extract 2 eggs 2-3/4 cups all-purpose flour 11.5 ounce bag milk chocolate chips

TOPPING: 1/2 C packed brown sugar 1/3 C AP flour 1/2 tsp ground cinnamon 3 Tbsp cold unsalted butter 1/3 C sliced almonds, toasted

In a large skillet over medium heat, cook the bacon until well browned and crispy. Transfer the toasted bacon to paper towels to drain and cool. Reserve the bacon grease in the skillet. Once the bacon has cooled, crumble or chop it into small chunks. Set aside.

Preheat oven to 375 F. In a bowl, combine the sugar, flour, nutmeg and salt. Then add the melted butter and toss to distribute. Add the apples and cranberries, toss gently, and pour into the pastry shell. Bake for 20 minutes.

Meanwhile, heat the oven to 375˚ F. Line 2 baking sheets with parchment paper. In a large bowl, use an electric mixer to beat together the butter, ½ cup of the reserved bacon grease, brown sugar, maple sugar, baking soda, salt and maple extract until light and fluffy. Add the eggs one at a time, beating and scraping the bowl in between additions.

Mix In the flour, then the chocolate chips, and crumbled bacon. Scoop the cookies onto the prepared baking sheets in 1 tablespoon mounds. Sprinkle the tops lightly with a bit of sea salt and maple sugar.

Meanwhile, in a small bowl, combine the brown sugar, flour, and cinnamon. Cut in the butter in tiny bits and use your hands or a pastry cutter to incorprate until the butter bits are pea-sized and the mixture resembles coarse sand. Toast the almonds in the oven on a sheet pan or over medium-high heat in a skillet until they are golden brown. Add them to the topping mix.

Bake for 10 to 12 minutes, or until golden around the edges and the tops no longer look glossy.

Allow to cool on the baking sheets for 10 minutes, then transfer to a cooling rack.

When the pie has been baking for 20 minutes, remove it from the oven, add the topping, and return it to the oven for another 40 minutes or until golden brown and bubbly.

Spinach Frittata with Bacon and Cheddar Cheddar Cheese Soup Makes 10 Cups 1/2 cup diced bacon (about 2 ounces) 1 tablespoon butter 1 cup chopped carrot 1 cup chopped onion 1 cup chopped celery 3/4 cup chopped green pepper 3 cups chicken stock 1-1/2 cups beer

3-1/2 cups milk 1 lb. sharp Vermont cheddar cheese, shredded 2/3 cup flour 1/2 cup heavy cream salt and pepper to taste chopped parsley

Saute bacon in butter until crisp and brown. Remove bacon with slotted spoon and drain on paper towel; reserve. Add vegetables to bacon drippings and cook, stirring occasionally, until onion is transparent. Add vegetables to soup pot with stock and beer. Heat to boiling, then simmer until vegetables are tender. Scald milk over medium heat. Combine cheese and flour in plastic bag; toss to combine. When milk is hot, add cheese-flour mixture. Cook and stir until cheese melts and mixture thickens. Add to soup pot with cream, season to taste with salt and pepper and heat to serving temperature. Garnish with reserved bacon and parsley.

Perfect for holiday brunches or special breakfasts, Frittatas are a fun and creative way to serve eggs. An Italian-style flat omelet that’s baked in a skillet, this frittata recipe features spinach, bacon and cheddar cheese. You can cook everything in an old-fashioned cast-iron skillet, heating it on the stovetop, and then finishing up in the oven – couldn’t be easier! Prep Time: 15 minutes • Cook Time: 20 minutes • Total Time: 35 minutes Ingredients: 8 eggs 1/2 cup whole milk 1/2 lb fresh spinach, rinsed, dried and torn into roughly 1-inch pieces

8 slices bacon 1/2 large onion, peeled and diced 1 cup grated cheddar cheese Kosher salt, to taste

Preparation: Preheat oven to 450°F. Cook the bacon in a cast iron skillet over medium-low heat. When bacon is crispy, remove it from the pan, drain on paper towels and set aside. When it’s cool, roughly chop it into ¼ inch pieces — or just crumble it up. Reserve about 2 Tbsp of bacon fat, then add diced onion and sauté for 2 to 3 minutes or until it’s slightly translucent. Turn off the heat under the pan, then add the spinach pieces and stir with a wooden spoon for a minute until the leaves are fully wilted. In a glass mixing bowl, thoroughly beat the eggs until nice and frothy. Add the milk and stir until combined. Season to taste with Kosher salt. Pour the egg mixture into the skillet, and sprinkle the bacon pieces in as well. Give everything a stir to distribute the ingredients evenly. This is the last time you’re going to stir, so get it all out of your system now! Turn the heat under the skillet back on to about medium and cook for about 5 minutes or until the egg begins to set. No stirring! Add the grated cheese, sprinkling it evenly across the top, and then transfer the skillet to the oven. Bake 10 to 15 minutes or until the eggs are fully cooked. Makes 4 wedge-shaped portions of frittata.
