Welcome to spring and to the sixth edition of the Guide, our biggest and best ever! We have lots of good news to share with you: The Big Picture: The Addison County Local Food Index grew a healthy 6.7% in 2014 to $5,135,204. The index tracks the wholesale value of local foods (Vermont-plus 30 miles) purchased last year by the Middlebury Natural Foods Co-op, Greg’s Meat Market, Middlebury College, Porter Medical Center and Addison Northeast Co-operative Food Service. The Town of Middlebury’s Office of Business Development is working hard to close a deal to move Vermont Livestock from Ferrisburgh into a new meat processing plant in the shire town’s industrial park. Full Sun is building out their new oilseed processing facility in Middlebury to produce a line of locally-grown cooking oils. Every elementary school in Addison County’s three school districts now has a school garden. Every school is also now enrolled in Harvest of the Month, a statewide food education and marketing campaign for locally-grown foods. ACORN is partnering with pre-schools, schools, and food retailers to expand Harvest of the Month into their menus and signage. The Middlebury College student organization EatReal is working with Dining Services and the Environmental Council to increase the amount of real food purchased in the 7,000 meals it serves every day to 30% using the standards established by the Real Food Challenge. ACORN is collaborating with HOPE, the Hannaford Career Center, the Middlebury Natural Foods Co-op, the Charterhouse Coalition, Salvation Farms and the Vermont Department of Health on the Addison County Community Food Project. The goal of the project is to explore the feasibility of expanding the harvest of gleaned crops from local farms for processing into food for the county’s foodshelves and community meal programs. Coalition promotes water-wise farming By MATTHEW WITTEN It is heartening to know that there are farmers who want to do right by rivers and streams. I have recently attended meetings involving the Champlain Valley Farmer Coalition, and am impressed with the farmers’ committment to reducing erosion and nutrient run-off into our waterways. At their annual meeting in January, the Farmer Coalition featured the work of several farmers, including Ben Gleason and Sam Burr of Addison County, who have made efforts to reduce water pollution. Burr described working with the Natural Resources Conservation Service to place fabric and large stones that will slow stormwater flow while still letting rainwater seep into the ground in a more controlled way. He also worked with engineer Roy Schiff to create less expensive log- and brush-based gully stabilization that will be less durable but easier to replace in the future. This spring runoff will be the first test of these different methods. Another encouraging project I saw the Farmer Coalition undertake was a cover crop workshop in November on the Clifford Farm in Starksboro — it was attended by vegetable growers as well as dairy farmers. The Clifford farm hosted 200 different cover crop plots with different mixtures, timing and manure applications, planted by UVM Extension. rows of corn stubble. These were rye, clover, radish, vetch and other low-growing plants that serve one or more functions: fixing nutrients, holding soil in place, and reducing rain’s impact. Farmer Eric Clifford said, “I have already seen the benefits from cover cropping, and I know we will see even more down the line as we get more experience and knowledge.” Matthew Witten is the director of Addison County River Watch Collaborative and wrote this article with help from Kirsten Workman and Nate Severy of UVM Extension’s Champlain Valley Crop, Soil, and Pasture Team (who also staff the Champlain Valley Farmer Coalition).
Farm to school: Where core standards and apple cores meet By EMILY HOYLER CORNWALL — Have you ever grown popcorn? I hadn’t until last spring when I planted it with my soon-to-be third grade class at the Bingham School in Cornwall. It almost seemed as if my students themselves had transformed into popping kernels as they joyously danced around the muddy garden that June day. When we returned to school in August we marveled at our popcorn’s silky purple tassels. Our
popcorn dreams came to fruition in October when our meager crop had finally dried enough to pop, and all 16 of us enjoyed a small handful of patience. Even if you haven’t spent any time in a public school lately, you’ve probably heard a lot about the Common Core State Standards, and the Next Generation Science Standards — the new learning standards that outline what students should (See Cores, Page 35)

What is the food system, why does it matter? By RACHEL CARTER VERMONT — Local food movements are trending across the country. For some, it’s the next “in” thing to do, but for many Vermonters, supporting local agriculture has been a way of life long before it was trendy. A food system includes all components of how food is produced and distributed — everything from farm viability and labor costs to consumer demand and food access to education and energy. Our current food system is out of balance. We are far too reliant on food grown and distributed outside of our region and decisions made outside of our control. Even in locally conscious Vermont, only an estimated 5% of the food consumed by Vermonters is actually produced here. There are seven core areas that comprise the food system and all of them need to be working in harmony together to successfully “relocalize” Vermont’s food system. Nutrient management is the effective use of nutrients — primarily nitrogen, phosphorus and potassium — from food waste, livestock manure, cover crops, and synthetic fertilizer to other amendments that minimize negative impacts of nutrient losses on the environment while providing sufficient nutrients for crop and animal growth throughout their life cycles. Farm inputs are resources such as land, soil, fertilizer, animal feed, seed, labor, equipment, and energy that are essential for food production. Inputs are the expenses of a farm, and so changes in input costs have a significant effect on the viability of a farm. Production is the actual activity of growing and raising food that includes different scales of production (e.g., small, medium, large) for different markets (direct-to-consumer, retail, wholesale). Major categories include dairy production, livestock grown for meat, maple syrup, fruits and vegetables, grains, honey, beer, hard cider, spirits, wine, and fish.
Processing converts raw produce and animal products into value-added food that can be transported longer distances, keep longer on store shelves, and meet consumer demands. Wholesale distribution is the aggregation and resale of food to institutional, commercial, and retail (e.g. restaurants and supermarkets) markets. Retail distribution is the selling of food direct to either consumers through CSAs, farmers’ markets, and farm stands or direct to retail locations including grocery stores, country stores, food co-ops, schools, hospitals, and restaurants. Consumer demand drives the marketplace. Where our food comes from and where people buy food are key variables for understanding how to boost consumer demand for local food products. The entire state of Vermont has pulled together to develop the most comprehensive food system plan in the country to strengthen the working landscape, improve the profitability of farms and food enterprises, maintain environmental resilience, and increase local food access for all Vermonters. Known as Vermont’s Farm to Plate Initiative, the state is now in its fourth year out of 10 where businesses, government, and non-profits are working together to develop Vermont’s farm and food economy that builds upon the Vermont brand and our working landscape. That said, with an increase in demand there’s also been an increase in competition. When the Stevenses first began farming in Addison County there weren’t many other farms doing the same thing. Vt.’s ‘Harvest of The Month’ program Vermont Harvest of the Month is a statewide initiative that aims to promote the use of local, seasonal foods. The program provides ready-to-go educational materials for the classroom, cafeteria, and community. Harvest of the Month (HOM) provides the opportunity for collaboration among educators, food service staff, school administrators, students, parents, and retail outlets — all of whom are striving to promote healthy local food choices. Available materials include posters for display in the classroom, cafeteria, or retail location; educational flyers, marketing tools and Harvest Lessons including interdisciplinary lesson plans for classroom implementation. We also provide a monthly e-newsletter that includes crop
facts, recipes, and stories about how HOM is being used across the state. HOM is a collaboration of Green Mountain Farm to School, Food Connects, and Vital Communities. As a result of this project, we’ve seen increased local food purchasing in Vermont schools, increased student participation in experiential nutrition education, and strengthening statewide farm to school programming. During the 2013-2014 school year, over half of Vermont schools signed the Harvest of the Month pledge. As this program continues to develop and connect with more regional outreach partners, we hope to see 100% participation in Vermont schools. These new expectations are pulling educators in many directions, and can often leave us feeling like our already scarce time is now at a premium. In this environment, incorporating Farm-to-School curriculum often seems like just one more thing to be added to an already overflowing plate. However, having personally experienced the power of soil and seed as learning tools, I have chosen not to sacrifice using food as a context for learning in my classroom. I have decided to make room and find new ways to connect and overlap while aligning with the Common Core requirements. Green Mountain Farm-to-School’s Harvest of the Month program provides free resources to classrooms, cafeterias, and community partners, focusing on a different crop each month. Cornwall School has been participating in this program for two years. Susan Pratt, our school cook, incorporates each month’s “harvest” into our school menu that feeds the majority of students and staff on a daily basis. Building upon what Susan is doing at lunchtime, I decided to integrate Harvest of the Month lessons into my classroom engaging the students in new and exciting ways. In September we followed two apples on their journeys from tree to mouth, and we practiced our addition skills as we added up the miles. In October we learned about our bodies’ digestion system as we explored why broccoli is so nutritious. In December we worked on visual presentations and graphic arts through team building centered around designing new Harvest of the Month posters. This spring we will explore the concept of climate by comparing Vermont’s Harvest of the Month crops to those in California and Florida. Later we will continue our learning in the garden as we study pollinators and their impact on food systems. We will be improving the garden habitat for birds, bees and other insects with new plantings enhancing student understanding of the ecological system and its connection to food. It’s not always easy to bring together the new standardsbased curriculum with garden and food-based learning, but it’s always worthwhile. As a teacher, juggling the curriculum requirements can be challenging. But by incorporating Farm-
to-School curriculum into my classroom, my students have benefited from hands-on learning centered around food, wellness, and agriculture while creating memorable, life-long learning opportunities. (Continued from Page 11) What that means for Golden Russet is, except for the people who are buying their produce through grocery stores, their clientele is “hyper local.” “When we first started our CSA program 20 years ago many of our members came from Middlebury, Vergennes and farther towns, but now they’re pretty much all from Shoreham, Bridport, Cornwall, Orwell and Addison, with a much smaller number coming from Middlebury and Vergennes.” To help fit the changing demand, the Stevenses also grow two full greenhouses’ worth of starter plants that they sell directly to home gardeners who grow their own vegetables and flowers. Starting in early March, the crew begins to germinate seeds and nourish them for potential transfer to either their own eight acres of vegetable garden or for sale directly to individual gardeners. The farm is not typically open to the public as a classic farm stand would be, but starting at the end of April they are open every day for a couple of months selling vegetable starts, hanging baskets and other plants to eager gardeners. “There are so many wonderful gardeners around the area, and I really love the part of my job where I get to talk to them about their plans and help them design a successful garden,” Judy Stevens said. So at ages 55 and 60, with three grown kids and after 35 years of gardening (and a successful eight-year legislative career for Will in the Statehouse), one might wonder, what’s next? “Right now we’re sticking with it,” said Judy. “We just want to keep growing stuff — vegetables and our business — and we think we have a few ideas on how to do that.”

Julie Danyew & Nicole Foster The beginning: “Nicky and I were getting set up on our own as cheesemakers when our chiropractor connected us. We pooled our resources, then started looking for a site in 2010. We ran into roadblocks, but we just figured them out and kept going.” We opened the door Sept. 1, 2012, and started selling fresh goat cheese and cheese curds at the end of that month. Our products: Feta, fresh cheese curds, jack cheese (“swisserella” with herbs and spices). “We are in the process of expanding our aging facility, but we’re hoping to be back on with raw milk aged cheeses by late summer with a cow milk and goat/cow blend.” Our cheesemaking philosophy: “We want to make cheeses that are approachable and that would appeal to a lot of people to start with. Hannah Sessions and Greg Bernhardt The beginning: “In 2000 we purchased a small, overgrown cow dairy farm which had been out of use for 5 years. We named it Blue Ledge Farm because of the ribbon of blue ledge that connects the pastures and the house, and which the goats love to romp on. We started making cheese in August of 2002, one month before our daughter was born.” Our products: Fresh chevre in plain, maple, herbal and pepper; Crottina; Lake’s Edge; Camembrie; La Luna; Riley’s 2x4; Middlebury Blue Our cheesemaking philosophy: “We run our business on the cornerstone of respect: for land, animals, and people. We have designed a fairly efficient mode of production but we don’t short on the things that matter. All of our goats have names, for instance, and all of our cheeses are hand-poured, flipped, and wrapped with an eye on quality and consistency.” Our favorite cheese in Addison County: We love all Addison County cheeses! When to visit: “We welcome visitors to the farm on Friday mornings from 8 to 12 May through October with no appointment necessary.”

Carleton Yoder and Moira Cook The beginning: “We have been a certified organic producer of handmade cow’s milk cheeses since 2003. My [Carleton’s] background is in winemaking, and I founded a cheese company because I wanted to do something on my own, and I wanted to make something that was a bit more indigenous than wine. I knew I could figure out cheesemaking because I had a background in food science, but I didn’t know if I could figure out farming, so we buy our milk.” Our products: Old-fashioned organic cream cheese, Champlain Triple, Queso Fresco, Pyramid Scheme, Queso Añejo Our cheesemaking philosophy: “We’ve tried to create things that aren’t really being done in Vermont on any scale. There are so many cheeses that are not being made, so many styles that aren’t even being mimicked. We’re also creating our own things that are based on Old World recipes and variations to that theme.” Our favorite cheese in Addison County: “I love all the stuff from Blue Ledge and Twig Farm. I’m partial to our cream cheese because it’s nostalgic for me, but it changes.” When to visit: “Call ahead, and visit by appointment.”
