How to pair beer with food
T
he craft beer boom has inspired millions of people to look at beer through a new lens. Once relegated to backyard barbecues and ballgames, beer is now served alongside gourmet meals. Much like the right wine can make a meal taste even better, beer can bring out the flavors of food, making it an ideal complement to anything from steak to seafood to salad. The Brewers Association is an American trade group whose membership consists Courtesy of Metro Creative Graphics of more than 5,400 brewers, suppliers and retailers. The group recommends beer lovers follow a threepronged approach to matching beer and food. It’s worth noting the BA does not view this approach as a 1-2-3 process, meaning beer lovers need not follow the steps in order to perfect their pairing skills. 1. Match strength with strength. The BA recommends pairing strongly flavored foods with assertive beers and delicate foods with delicate beers. For example, a relatively low alcohol witbier should pair well with light seafood like steamed mussels. Beer lovers who enjoy strong barley wines, which are typically 10 percent alcohol by volume (ABV) or higher, should find that a strong cheese or dessert matches up well with this overpowering style. 2. Find harmonies. The BA notes that beer-food combinations typically resonate most effectively when they share some common flavor or aroma element. The BA points to how the deep, roasted flavors of an imperial stout often pair nicely with chocolate truffles. 3. Consider sweetness, bitterness, carbonation, heat (spice), and richness. The BA recommends that beer lovers look to take advantage of the specific and predictable ways that certain qualities of food and beer interact with each other. For example, malty sweetness can cool the heat, making a hoppy beer with plenty of malt a good choice to pair with spicy food. Pairing the right beer with food can make any night out on the town that much better.

Simple pairing pointers for wine novices
P
airing a delicious meal with the perfect wine can be a match made in heaven. Wine novices may be intimidated by the challenge of making the perfect pairing, but they need not put themselves under such pressure. Just because a certain wine might make for a perfect pairing, that doesn’t mean others cannot step in and serve an equally flavorful function. People who appreciate a great meal accompanied by an equally great wine need not have an encyclopedic knowledge of food or wine to successfully pair the two together. According to Backbar, a platform designed to help bars and restaurants manage their inventory more effectively, white wines pair well with fish because the acidity in these wines enhances the taste of the fish. That means a wine that pairs well with a certain chicken dish may not necessarily pair as well with a different one. Representatives at local liquor stores or wineries can help people choose which wine to pair with chicken dishes. • Reds and reds: Red meats tend to match up best with red wines. Though they can be found in white wines, tannins are predominantly found in red wines. According to Backbar, the tannins in red wines soften the proteins in the meat, thereby helping enhance the flavors of the fat. That makes for a more flavorful meal. • No need to spice things up: Spicy foods are beloved across the globe. Such foods can be among the more intimidating to pair with wine, as spicy foods have bold flavors that no one wants to detract from. In a 2016 interview with Eater.com, professional chef Sean Pharr advised against pairing high alcohol wines with spicy foods, noting that the alcohol can intensify the heat and spice of the food. That can prove disastrous for anyone trying to impress a date or show off their skills with spice. Many people prefer a Riesling with spicy food, as the sweetness of this white wine can help offset the spice, making for a satisfying, flavorful meal. Pairing wines may seem intimidating. Restaurant Etiquette Planning
Reserve a table before you leave for the restaurant. This enables you to give special seating preferences such as a table in the garden or one in a quiet corner. You can ask about the dress code. You may want to reconfirm the reservation one or two days before the dinner has been planned. Ask your guests if they like or dislike certain ethnic foods (simply ask when extending the invitation). You could also give the guest a choice of two or three restaurants. If you're hosting a group, pick a restaurant with a wide range of foods so that everyone present will find something to his taste. Choose a restaurant you know.
Arriving
Saying "thank you" to the attendant as they take your car. Tip when your car is returned.
Valet
The person(s) standing behind the podium in the entryway: the maitre d', host, or hostess. • Don't block traffic as you patiently await your turn; and • Once you're face-to-face with the maitre d', smile and say hello.
Maitre d'
A man always checks his topcoat. A woman has the choice of taking hers to the table. Packages, briefcases, umbrellas, and other items are usually checked. Women take purses to the table, where they're kept in the lap or at the feet.
Coat Check

The Bill
If you are the host, tell the maitre d' or waiter in advance that you should receive the check. Discretely review the check. Signal the waiter when you would like to pay by putting the check holder to the edge of the table, with the bills or the credit card sticking out. Tell the waiter if you would like them to keep the change.
Leftover Food
When you have food left over that you don't want to go to waste, it's usually acceptable to ask for a doggy bag – today, often a lidded container slipped into a small paper bag. When not to request one? First, at most business meals. (If you're dining with a business associate who's a close friend, it's fine to request a bag if you're going Dutch – but if she's the host, leave leftover food behind.) Ordering Etiquette
Experienced restaurant-goers know that more than a little thought goes into ordering, from choosing pre-dinner cocktails to picking the meal courses to selecting the wines served during the meal. They also know how important it is to have made up their minds by the time they let the server know he can take their orders. If you aren't ready, simply tell your server that you need more time. Holding him there as you keep changing your mind has repercussions: New arrivals at his other tables become impatient, some patrons have to wait longer to order, and the food your server is responsible for delivering to someone else must wait in the kitchen or under a heat lamp.
