Eat the Right Fats for a Healthy Heart, Mind and Body Like many doctors, Cate Shanahan used to think that saturated and animal-derived fats were bad for you. A personal health crisis, however, caused this Olympic Trials-qualifying runner to delve much deeper into nutrition and its roll in human health. What this family physician ultimately discovered shocked her—saturated fats are not only good for us, but are essential to human health. Dr. Shanahan recently revised her book, Deep Nutrition: Why Your Genes Need Traditional Food and recommends that in an optimal diet 60-85% of daily calories will come from fat—much of it saturated. Compare that to the American Heart Association’s recommendation that only 20% to 35% of calories come from fat, with no more than 6% being saturated. According to Dr. Joseph Mercola, DO, who largely agrees with Dr. Shanahan’s target range of 60-85% of calories from “good” fats, Americans typically consume between 30% and 50% of their calories from fat. Unfortunately, adds DR. Mercola, these fats are mostly highly refined vegetable oils—derived from corn, soy and canola—and contribute to a variety of health problems. Dr. Shanahan argues that these seed-derived, polyunsaturated oils “are unstable and break down when exposed to chemical (and heat) stress,” becoming toxic because of oxidization. “So how much polyunsaturated vegetable oil is too much?” clients will ask Dr. Shanahan. “That’s a little like asking how many cigarettes should a 4-year-old smoke. More than none is too much,’ she replies. Drs. Shanahan and Mercola are part of a growing number of physicians who question what has been seen as nutritional dogma since the 1950’s— that saturated fat and dietary cholesterol are bad. How this notion came to be is the subject of many books. One notable example is Dr. Stephan Sinatra’s The Great Cholesterol Myth. Cardiologist Sinatra is quite clear when he asserts, “cholesterol is not a serious risk factor for heart disease.” He also claims that, not only is saturated fat “not the enemy” but that saturated fats actually raise the level of HDL (aka “good” cholesterol.) So if refined vegetable oils like corn, soy and canola are out, what kinds of fats can we replace them with? Alyssa Regan, who holds a Master of Science Degree in Nutrition and who is on the Wellness Team at Harvest Market in Hockessin, DE also recommends a higher fat way of eating. “I love wild caught sardines and salmon, avocados, ghee and butter from grass-raised cows, coconut oil, coconut butter and coconut milk, walnuts, pumpkin seeds and olive oil,” says Regan. “These high quality fats bring satiety, provide an abundant supply of fat-soluble vitamins, are essential for the creation of all hormones and rev up your metabolism which helps with weight management,” she adds. Take it from all four of these nutritional experts—more of these high quality fats are good for your heart, mind and body.

Churrascaria Saudades In days of old, in the southernmost state of Brazil, Rio Grande do Sul, cattle grazed the pampas (treeless plains), providing the Gaucho (Southern Brazilian Cowboy) with endless supplies of meat for the now famous tradition of “Churrasco” barbecues. The Gaucho would skewer large pieces of meat and slowly grill them over open-flamed pits. In keeping with this tradition, we bring you Churrascaria Saudades. At Churrascaria Saudades, we proudly keep this churrasco tradition alive with Gaucho chefs roasting the finest cuts of meat over open fire, serving these skewered cuts tableside. A fantastic gourmet salad bar with fresh cut vegetables, a variety of traditional side dishes to compliment the meats, signature cocktails/imported soft drinks, and a dessert menu replete with cakes, fruits, and sweets will round off the unique experience. The poet Goethe once said, “There is no past that we can bring back by longing for it, only the present that builds and creates itself as the past withdraws.” A unique word exists, only in the Brasilian language, that best describes those longings and that word is Saudades. The word Saudade (pronounced: saw’ DA dee, or plural: saw’ DA deez) is the Brasilian word that has no direct translation into English but is most accurately described as a deep emotional state of nostalgic longing for an absent something or someone. After a unique steak experience, as can only be experienced at Churrascaria Saudades, a guest will go away with a deep emotional state of nostalgic longing to return to the experience, hence the name Saudades. The 21st century is a time of advanced technologies, harnessing energy, recycling our resources, futuristic structures, robotic probes, lunar outposts and human missions to Mars. The future holds undreamed of scientific and technological opportunities. The Delaware Aerospace Academy hopes to prepare students for those challenges. In operation since 1990, the objective of the Delaware Aerospace Academy is to provide hands-on training and experiences through our Destination academies in related activities and fields. Throughout the week, girls and boys in grades 1 - 10 are continually challenged to think, create, solve, build, and work cooperatively. All academies are designed to integrate the study of Science, Technology, Engineering, and Mathematics (STEM) using Earth, Science and Space Education as the unifying framework. The academies are financed through tuition fees, grants and scholarship sponsorships, with emphasis on in-kind support from industry and other agencies. A working board and advisory council, consisting of representatives from industry, educational and supporting agencies, share their expertise and advise the group. Full Day Academies: University of Delaware Cost for all Full Day Academies 6/25-6/29, 2018: $300 Before & after care available. Full-day academies: Mornings, 9 a.m. - 4 p.m. Hands-on activities and many opportunities for problem solving in small teams are included. Plan on constructing and launching a bottle rocket. Destination Flight (entering 5th or 6th grade) focuses on an in-depth study of the principles of flight and cutting edge studies of the FAA and NASA Aeronautics programs. Cadets will apply the knowledge as they operate our advanced flight simulator and hovercraft. Destination Orbit (entering 6th, 7th & 8th) includes Space Architecture, Living in Space, Physics, Rocketry, Planetary Studies & a fieldtrip to the Dover AFB. The four cadet wings’ learn about science and technology as they relate to AeroSpace Science.

Who doesn’t love Puccini. Returning to Wilmington’s Grand Opera House for its Spring 2018 Festival, OperaDelaware will celebrate the 100th anniversary of the premiere of Giacomo Puccini’s Il Trittico (The Triptych). These three one-act operas, along with the Puccini-inspired continuation of the Schicchi story, will be performed over two weekends, April 28 to May 6. The tragedies Il Tabarro (The Cloak) and Suor Angelica (Sister Angelica), which make up the first two acts of Trittico, will be presented together. The final opera in the trilogy, the uproarious comedy Gianni Schicchi, will be paired with Buoso’s Ghost, Michael Ching’s contemporary “sequel”. All four operas will be set in 1918 as homage to the anniversary of the premiere and will be fully-staged at Wilmington’s lovely Grand Opera House, 818 N. Market St., Wilmington, DE. Soprano Eleni Calenos will star as both Giorgetta in Tabarro and the title role of Suor Angelica. Wilmington’s own Grant Youngblood will sing the role of Michele in Tabarro. Tenor Matthew Vickers (Amleto, 2016) returns to perform Luigi, and mezzo-soprano

Alissa Anderson will sing Frugola/La Zia Principessa. Il Tabarro and Suor Angelica will be directed by Crystal Manich and conducted by OperaDelaware’s new music director, Anthony Barrese. Gianni Schicchi and Buoso’s Ghost will star OperaDelaware favorites Sean Anderson as Gianni Schicchi and Kirk Dougherty as Rinuccio. Sara Duchovnay makes her OD debut as Lauretta. A. Scott Parry (La Cenerentola, 2017) returns to direct these hilarious one-act operas and Michael Ching will conduct. All productions will be designed by Stephen Dobay with lighting by Driscoll Otto and costume design by Howard Tsvi Kaplan, supplied by Malabar Limited. In addition, OperaDelaware will offer A Flight of Puccini at its Riverfront Studio, 4 S. Poplar St., Wilmington, DE on May 3 and May 4. The final installment of this season’s popular “Opera Uncorked” concert series, A Flight of Puccini will feature members of both Festival casts performing Act I of La Bohème, Act II of Tosca, and Act III of Madama Butterfly -- each paired with a special wine tasting selected by Swigg Fine Wine and Craft Spirits.

Raymonde suspects her husband, Victor, of infidelity and turns to her best friend to help her gain proof. Concocting a plan based on a perfumed letter and a titillating invitation, they plan to entrap him at a seedy hotel. And that’s where the fun begins. This bawdy bedroom farce swirls with confused identities, revolving beds, a great many doors, and the unfortunate fact that the tipsy hotel porter is the exact double of Victor. Widely regarded as one of the funniest farces ever written, you won’t want to miss the non-stop hilarity!

Shakespeare’s classic comedy of mistaken identity and unrequited love. Viola dresses as a man after being shipwrecked in the strange, new land of Illyria. But things get confusing when she falls for her new boss and her boss’s crush falls in love with her. Shakespeare’s masterpiece reminds us that that love makes fools of us all. This co-production with The Acting Company production will premiere at the REP and then transfer to New York City’s Polonsky Shakespeare Center.

Bass-Baritone Kevin Deas to headline ‘Triumph over Adversity’ Chamber Series Concert commemorates 50th anniversary of the death of Martin Luther King Jr. The Delaware Symphony Orchestra will commemorate the 50th anniversary of the death of Martin Luther King Jr. with its next concert, “Triumph over Adversity,” Tuesday, Feb. 20, 2018, at 8 p.m. in the Gold Ballroom of the Hotel du Pont. Principal DSO Players Lura Johnson, piano; David Southorn, violin; and Philo Lee, cello, will present Mendelssohn’s Piano Trio No. 2 in C minor and guest artist Kevin Deas, bass-baritone, and Ms. Johnson will present a powerful program of American Spirituals, lieder, and solo piano works, all celebrating the enduring human spirit. Kevin Deas has gained international renown as one of America’s leading bass-baritones, perhaps most acclaimed for his signature portrayal of the title role in Gershwin’s Porgy and Bess. In addition to spirituals, he will perform music of Schumann, Schubert, and Czech composer Pavel Haas, a student of Janáček, who wrote “I Heard the Cry of Wild Geese” while interred at Theresienstadt. In 1944, he was one of 18,000 prisoners sent to Auschwitz to be murdered. DSO Executive Director Alan Jordan commented, “this will make for a truly remarkable and emotional evening.” Hotel Du Pont, at 11th and Market Streets in downtown Wilmington, is the Official Hotel of the Delaware Symphony Orchestra and a co-sponsor of the DSO’s Chamber Series, which has been held in Gold Ballroom for many seasons. Relaxation, adventure, and learning at the Centreville Layton School’s summer program We often think of summer as a time for relaxation and a little adventure. However, for most children summer is also time when learning loss can occur. This loss is referred to as the “summer slide.” Over the course of a child’s educational career these “slides” can add up to large achievement gaps. Centreville Layton School feels there is time for relaxation, adventure, and most of all, learning in the summer. Our summer program offers options to meet every student’s academic and recreational needs. For elementary and middle school age students, Centreville Layton School Summer Program offers students academic support and instruction in preparation for the upcoming school year. Focusing on targeted support to strengthen reading and math skills through a challenging, dynamic, and supportive program. Every summer, students are welcomed from local independent, parochial, and public schools. Families are often drawn to the well-rounded program. In addition to the educational portion, students have the option of staying for a dynamic afternoon recreational program. Afternoon campers enjoy trips to the pool, local field trips, and a full program of activities on the Centreville Layton School 20-acre campus. Delaware's best-kept secret for a night of entertainment and dining The Candlelight Theatre, located in historic Ardentown, Del., a short drive from Chester County, and 10 minutes from downtown Wilmington provides an all-inclusive evening of “Dining and Entertainment, Beyond Your Expectations.” The Candlelight Theatre’s colorful history began in 1931, when a barn in Arden was converted to a theatre and called The Robin Hood Theatre. That was when then summer stock theatre came to Delaware, where it remained through the 1950s. In 1969, it became Delaware’s first dinner theatre, nurturing the talents of many, including Tony Award-winner Susan Stroman, film star Bruce Willis, and Broadway musical star Diane Fratantoni. In 2006, TCT became a non-profit and continues the tradition of nurturing young performers and producing six shows annually. Operating as a theater venue for over 75 years, the stage of this quaint barn comes alive every weekend year-round. In addition to musicals, TCT presents events such as a monthly Comedy Club, Just Drag, the annual blues festival, and a variety of cabaret acts. Summer camps are offered in partnership with DelArts Conservatory of Bear, Del., providing education and performance opportunities for ages 6 to 18. Tickets for mainstage musicals are $63 for adults, $33 for children, and include fullcourse buffet and show. Cash bar is available, as well as free parking. Group discounts are available.
