This was a real challenge to create, a ring with bling from 3 old rings with 32 assorted diamonds, our customer was thrilled! She certainly got some bling.

THE LATEST LUXURY TRENDS

IN recent years, the ‘luxury market’ has been providing consumers with more options than ever before. Covering the latest luxury and premium trends in technology, home décor, homewares and automobiles, there is a growing need for status and sophistication in all areas of lifestyle. When it comes to homes, the latest in luxury is actually open plan living. In recent years, homes being built come with plenty of space, and that space has been specifically designed to ensure that all areas of the home flow into one another with ease. Kitchens are also playing a big part in luxury when it comes to the home. The latest trends in kitchens are seeing a move towards soft close features, galley kitchens that overlook a living space and when it comes to kitchen counter tops, classic white marble such as Carrara Marble remains the top choice for many luxury homeowners. Mixing the solid stone surface on one counter while a breakfast bar might have a wooden top helps to warm up the space and break up a large island. Other popular countertops are quartz and granite. The newest trend in cabinets is simplicity with shaker, mid-century and Asian fusion, right behind the use of sleek European-style cabinets. More and more kitchens are seeing the inclusion of larger, professional grade appliances fit to rival the most upscale restaurants. Wine coolers, warming drawers, walk-in and butler’s pantries are also popular. Flooring options are also taking off, and at the moment, vinyl is in. Luxury vinyl has many benefits. The tile-look products can be grouted, mimicking the appearance of ceramic or stone, and the wood-look slats feature unique textures and rich colours. Outdoor entertaining has always been popular, but the latest in luxury outdoor entertaining is seeing design trends increasingly turning toward a

Insurance is also something that most people desire once they have a home filled with all that they have dreamed of. In both men and women’s fashion, Athleisure is also in. They say that beauty is only skin deep, but there are many who would disagree. When it comes to beauty, the trends are leaning towards face masks to help with revitalising skin, a healthy diet and nourishing hair care products. When it comes to your hair, the style is seeing the part return. Getting from A to B is something we all do every day, whether it’s from home to work, from city to city or from home to a holiday destination, we all want to travel in style. While BMW and Mercedes Benz are considered some of the most luxurious vehicles, there are also other makes and models entering the market that have the essential comforts of luxury.

INGREDIENTS:

APPLE RASPBERRY MINT JELLY 2 tsp powdered gelatine ¼ cup cold pressed apple and raspberry juice 1 ½ tbsp. lemon juice 2 tsp lemon zest 3 tsp sugar 3 sprigs mint, leaves picked

CARAMELISED WHITE CHOCOLATE CRUMB 100g white chocolate chips Pinch salt

CHOCOLATE SPHERES 10g champagne gold coloured luster dust 300g milk chocolate melts

CHOCOLATE SHARDS CRUMBLE 40g milk chocolate melts ¼ cup feuilletine ¼ cup unflavoured popping candy 1 tsp instant espresso coffee granules Pinch salt

TWO CHEESE MOUSSE 125ml thickened cream ¼ cup soft icing sugar mixture 50g cream cheese, room temperature 1 ½ tbsp mascarpone cheese 1 tsp vanilla essence Pinch salt 2 tsp double cream Zest of ½ a lemon

RASPBERRY COULIS ½ punnet raspberries 1 ½ tbsp sugar 3 tsp glucose syrup Pinch salt 1 tbsp cornflour

GARNISH Pink dried rose petals Fresh mint leaves Fresh raspberries

METHOD: Preheat oven to 180ºC For the Apple Raspberry Mint Jelly, first line a small 16cm x 11cm rectangular baking dish with cling film. Place 1 tablespoon of water into a small bowl, sprinkle gelatine powder over the top and set aside for 5 minutes to bloom. Meanwhile, combine apple raspberry juice, lemon juice, zest, sugar and all but two of the mint leaves in a small non-stick saucepan and simmer over low heat for 2 minutes. Remove from heat and add the bloomed gelatine, stirring until dissolved. Strain the mixture into the prelined baking tray. Gently push the reserved two mint leaves into the jelly mixture so that they are submerged. Place tray into the freezer until set, about 8-10 minutes, then transfer to the fridge until needed. For the Caramelised White Chocolate Crumb, line a baking tray with baking paper. Sprinkle white chocolate out evenly onto the lined tray. Bake in the oven until golden brown, but not burnt, about 8-10 minutes. Remove from the oven and use a fork to break up the caramelised chocolate into a crumb. Sprinkle with salt and set aside on the bench until needed. For the Chocolate Spheres, first line a baking tray with baking paper and set aside. Place a silicon sheet of 8 x 7cm hemisphere moulds onto a baking tray. Using a pastry brush, dust the moulds with luster dust so that they are evenly coated and set moulds aside until needed. Half fill a small saucepan with water then place over medium heat and bring to a simmer. Place the milk chocolate melts into a medium sized glass bowl and sit over the saucepan of simmering water. Use a rubber spatula to stir the chocolate occasionally until is has completely melted. Remove chocolate from heat and continue to stir the chocolate until it reaches 39C. Pour chocolate into the prepared dome moulds and use a small spoon to ensure that each dome mould is evenly coated with chocolate. Turn the dome moulds

upside down onto the pre-lined baking tray and gently tap tray on the bench to release excess chocolate. Turn mould back upright and use an offset spatula to scrape away excess chocolate from the edges of the moulds. Line a new baking tray with clean baking paper and turn moulds back upside down onto the clean tray. Set aside in the fridge to set for 8-10 minutes. Pour all excess chocolate back into a bowl and reserve for the Chocolate Shards Crumble. For the Chocolate Shards Crumble, line a baking tray with baking paper. Take the bowl of reserved melted chocolate. Add all remaining ingredients to the bowl and mix well to combine. Pour mixture out onto the lined baking tray and cover with a second sheet of baking paper. Use a rolling pin to roll out the mixture to 3mm thickness, then place into the fridge to set until needed. For the Two Cheese Mousse, place cream and half of the icing sugar into the bowl of an electric mixer fitted with a whisk attachment and whip to stiff peaks. Transfer to a clean bowl and reserve for later use. Place cream cheese and remaining icing sugar into the same electric mixer bowl and whisk on high until light and fluffy, about 2 minutes. Add mascarpone, vanilla essence and salt and continue to whisk on high for a further 1 minute. Add double cream, reserved whipped cream mixture and zest and gently fold until fully combined. Transfer to a piping bag fitted with a medium star nozzle and set aside in the fridge until needed. For the Raspberry Coulis, place raspberries into a small saucepan and use a stick blender to purée the raspberries. Add sugar, glucose and salt and place saucepan over medium heat and bring to a simmer. Meanwhile, place cornflour and 2 tablespoons of

water in a small bowl and whisk to combine. Once purée has come to a simmer, gradually add the cornflour mixture, stirring continuously until thickened, about 1 minute. Remove from heat, strain and transfer to a small jug, and set aside in the fridge until needed. To assemble, spoon some of the Caramelised White Chocolate Crumb into the centre of the plate. Pipe a dot of the Two Cheese Mousse into the centre of the crumb. Drizzle some of the Raspberry Coulis around the crumb. Gently push one of the Chocolate Sphere domes out from the silicone mould and place onto the piped mound of mousse in the middle of the crumb. Pipe 3 small dots of Two Cheese Mousse into the dome. Add some Apple Raspberry Mint Jelly cubes and some torn fresh raspberries. Break up the Chocolate Shards Crumble into small shards and a few pieces. Finish with some picked mint leaves. Add some of the Caramelised White Chocolate Crumb. Remove a second dome from the silicone mould and place onto the filled dome to encase the ball. Finish with some tiny mint leaves, rose petals and Chocolate Shards.

LEMON, GARLIC AND PARMESAN SQUID INK PASTA INGREDIENTS: 200g squid ink spaghetti 1 clove garlic 1/2 tsp salt 3 tbsp Maggie Beer Extra Virgin Olive Oil 2 tbsp Maggie Beer Verjuice Zest of 2 lemons 50g Parmesan, grated 1/3 cup flat leaf parsley, freshly chopped Pepper, to season METHOD: Cook squid ink spaghetti according to directions on pack. Cream clove of fresh garlic with salt and add to cooked spaghetti with Extra Virgin Olive Oil, Verjuice, lemon zest and grated parmesan. ONE of the easiest, lightest and most traditional puddings is Queen of Puddings. It really is hard to beat. This version is from the queen of British cooks, the late Constance Spry. METHOD: INGREDIENTS: The crumb custard can be made ahead. Firstly, infuse the pared rind of one CRUMB CUSTARD lemon in two cups of milk in a covered pan over gentle heat. 1 lemon Take the pan off the heat. The longer the rind is left to infuse, the more 2 cups of milk lemony the flavour. 1 tbsp butter Remove the rind and stir in one tablespoon of butter and two tablespoons of 2 tablespoons caster sugar caster sugar. When this is dissolved stir in fresh white breadcrumbs made from 4 slices of white bread four thin slices of white bread with the crusts removed. Mix and leave to cool. PUDDING Separate 4 eggs, putting the whites into a clean bowl. Stir the yolks well into 4 egg yolks the crumb custard. Turn the custard into a buttered deepish pie dish. Stand for 5 tsp raspberry jam 30 minutes, then bake in a moderate (180ºC) oven for 25-30 minutes until set. MERINGUE Remove and cool slightly before spreading 4-5 tablespoons of raspberry jam 4 egg whites over the top. If the jam is thick, add a tablespoon or two of water and warm it 6 tbsp caster sugar gently in a pan first. For the meringue top, whip the whites to a firm snow. Beat in 6 level tablespoons of caster sugar gradually, beating well after each addition. Pile this on top of the pudding and dust with a little more caster sugar. Leave 5 minutes, then put into a slow oven (150ºC) until the meringue is set and straw coloured.

KMA marketing manager, Alana Lee told Life’s Little Luxuries that a special invitation will be issued to the general public to inspect the new facilities at their official grand opening on Saturday 8th July with a superb vintage car display. “Cost efficiency was at the forefront for the heating plan when the building was being designed. The use of waste oil being recycled to generate the heating throughout the building was very important,” Alana said. Alana added that next year was a huge year as KMA celebrated its 40th Anniversary.
