Bye bye bypass?

FOR over 20 years the Shepparton Bypass project has been persistently pushed by local parliamentary members, as well as council, advocacy and community groups, transport industry members and the wider community. In 2019, the Federal Government announced it would commit to providing $208M in funding towards stage one of the project. Continued Page 5

fair play and professionalism are inherent in umpiring any sport, taking a strength of character and a steely focus that is admirable.

For Yorta Yorta man Glenn James OAM, however, being the first and only Indigenous man to umpire senior VFL/AFL games, the tenacity and talent it took was not only groundbreaking, but seminal. Having umpired 166 matches between 1977 and 1985, including the 1982 and 1984 VFL Grand Finals, James has been named this year’s Sir Doug Nicholls Round honouree across matches 10 and 11 of the AFL premiership season, drawing pride and acclamation from both the Indigenous and football communities.

Scripting her own way to Hollywood

THE call to writing never seems to just appear, but rather is a constant companion throughout one’s life and for Shepparton’s own Melissa Black, this is certainly the case.

Having always enjoyed telling stories and writing in a variety of genres, Melissa’s creativity has recently taken her to exciting heights, working as an attachment script supervisor on popular US TV show, La Brea.

Available in Australia through various streaming services, La Brea is a science fiction drama series set in the early 2020s and centres around a cast of characters who find themselves trapped in a mysterious and dangerous primeval land after falling through a massive sinkhole.

Produced by Universal Televison and Matchbox pictures, the TV show has just finished its second season and although Melissa’s role has focussed more on maintaining continuity during the production process rather than on script writing, Melissa said the experience was invaluable.

“Learning what the expectations are on a large-scale network set was incredible, as well as working with several directors. La Brea is run on a US production model, so it was great

to know what the expectations are there as well.

“Even though script supervising isn’t part of the creative writing process, seeing how the words on the page translate to the set was great to learn,” Melissa said. Achieving highly as a writer and following her time as a journalist at The Adviser, Melissa has had poems and stories published and a play produced by STAG.

In 2022, Melissa’s short film script ‘The Smell of Bones’ was selected as a top 5 finalist for the AACTA: Pitch Focus, short film competition.

With La Brea ‘between’ seasons, Melissa uses her spare time in Shepparton to write and produce other people's shorts and independent productions, stating, “My goal is to show-run my own series in Australia and eventually travel to LA to work in Hollywood.”

Funding sought for key projects

MANY important projects in the Shepparton electorate that require State Government funding and The Liberal Member for Northern Victoria Wendy Lovell has highlighted four in her recent contribution to Parliament.

Ms Lovell utilised the adjournment debate in State Parliament to advocate for Treasurer Tim Pallas to fund key Shepparton infrastructure projects in the 2023-24 State Budget.

One of the biggest issues of the October 2022 flood event was the closure of the Peter Ross-Edwards Causeway, isolating Mooroopna and Shepparton from each other, highlighting the need for a second river crossing to be built above flood level between the two towns.

The Shepparton Bypass Project including the delivery of the second river crossing, is the community’s number one infrastructure priority, and Ms Lovell said in the wake of the floods the Treasurer should see the importance of the project and provide funding in the

State Budget.

Ms Lovell said despite the Health Minister claiming the GV Health redevelopment is complete, there is more work to do to complete our hospital which is evidenced by the $2M funding in 2019 State Budget to develop a business case for the completion of the redevelopment.

The final stage of the GV Health redevelopment will provide additional healthcare infrastructure and capacity that is badly needed in the community and a funding commitment in the upcoming Budget is required to complete the redevelopment.

Safety upgrades at the Kialla West Primary School pedestrian crossing and addressing critical staff shortages by funding the construction of a Clinical Health School on the grounds of GV Health were also on the agenda.

WITH a new name and a refreshed outlook, the Greater Shepparton Business Network is ensuring all businesses in the Greater Shepparton region can thrive as it focuses on a new era of success.

Formerly known as the Shepparton Chamber of Commerce and Industry, the new name not only more accurately describes the geographical area that the Greater Shepparton Business Network (GSBN) is now focussed on but reflects a more modern era of businesses that operate across all Greater Shepparton,

including Mooroopna and Tatura. And in a unique move, GSBN has joined forces with the Victorian Chamber of Commerce and Industry to provide the best support and resources to local businesses that they normally would not have easy access to.

The Victorian Chamber is the largest and most influential not-for-profit business organisation in Victoria, informing and supporting 65,000 members and clients from every sector and every region.

Much-loved local business closes

FIX Movement Performance has regrettably been forced to close due to the financial impacts of the recent floods and following many sustained COVID-19 pressures. The business has gone into liquidation and will close permanently.

Owner Cher Hetherington thanked staff, clients and the community for their loyalty and commitment over 28 years in operation.

“My passion has always been to encourage people to take care of their health – it was my dream to serve my clients and create a unique environment to help them in their healing and movement journey so that they could lead a great life,” said Cher.

“It is incomprehensible to me that I will no longer be able to do this with my wonderful team at Fix. I couldn’t be prouder of what my team and I created – my heart breaks that the success we knew before COVID-19

President, John Anderson said now is the perfect time to re-invent the organisation as it works to build a stronger business community that can thrive and prosper together.

“Everyone has had a tough couple of years living through the pandemic and our business community is no exception. It has given us time to reflect on the importance our organisation has in keeping businesses connected and assisting in supporting each other in what has been difficult circumstances,” Mr Anderson said.

“We now have this fantastic opportunity to enter into this partnership with the Victorian Chamber of Commerce and Industry where our members can draw on the great services, programs, events and training that Victorian Chamber has to offer,” Mr Anderson said.

Victorian Chamber of Commerce and Industry Chief Executive, Paul Guerra said he is looking forward to working with not only GSBN, but all the businesses in Greater Shepparton.

Bye bye bypass?

THE project has now been placed on hold, with the Victorian budget and the Federal Government’s comments indicating the existing funding is at risk.

Nationals Member for Shepparton, Kim O'Keeffe, and Member for Northern Victoria, Wendy Lovell MP, have slammed the move.

In pointing out that the regional development budget has again been cut, halved from $211.5M to $106.6M in this year’s State Budget, Ms O’Keeffe added, “Since 2020, the regional development budget has been slashed by 80 per cent as a result of the Andrews Labor Government.

We need to see the Federal and State Government work together in collaboration to deliver critical infrastructure projects in regional Victoria such as the Shepparton Bypass.”

Concurring with Ms O’Keeffe, Ms Lovell said, “The failure of the treasurer to commit funding in the budget towards stage one of the Shepparton Bypass Project, particularly in the wake of the recent floods that showed the urgent need for a second river crossing between Shepparton and Mooroopna, is inexcusable.”

Shepparton Bypass Action Group chair Peter Johnson expressed frustration at the setback.

“We’re very disappointed, we have

Sorry Day 2023

Gulpa gaka Yorta Yorta woka

AN event of monumental importance, National Sorry Day is an annual reminder of the tragedies that befell an entire generation of Indigenous Australians. The day is part of the ongoing efforts towards reconciliation between Indigenous and non-Indigenous peoples.

Every year on May 26, we remember and acknowledge the mistreatment of Aboriginal and Torres Strait Islander people who were forcibly removed from their homes and families, now known as the Stolen Generations.

Sorry Day asks us to acknowledge the Stolen Generations, and in doing so, reminds us that historical injustice is still an ongoing source of intergenerational trauma for Aboriginal and Torres Islander families, communities, and peoples.

Taking place at Monash Park, hundreds of community members gathered on Friday, May 26 to take part in

Shepparton’s Sorry Day event.

“Today is a sad day, it’s a happy day, it means for us to come together and walk together as one, to make a better future for our kids,” said proud Yorta Yorta man Michael

been seriously let down by the Victorian Government,” said Mr Johnson.

“The lack of funding puts the whole project in jeopardy. We’re going to need either a change of heart from the government or a change of government for this muchneeded project to come to fruition.

“However, the Bypass Action Group remains positive about the project’s ultimate future, and together with Greater Shepparton City Council and the Committee For Greater Shepparton, we will continue to campaign and fight for this project.”

Attendees were invited to participate in the Smoking Ceremony, walking through the smoke to cleanse themselves of bad energy and replacing it with good, giving safe guidance and passage on this country.

Guest speaker Daryl Sloan- a member of the stolen generation- gave a moving speech about his personal experience with unjust displacement as a child, and his journey to help others experiencing the same thing.

Foster father, counsellor, outreach worker, and so much more, Daryl acknowledged the past wrongs against Indigenous peoples, and highlighted the on-going issues that are prevalent at present.

“We need to look at what’s going on, we need to take active steps, we need to make strong decisions.”

“Sorry means it shouldn’t happen again. But it is.”

Duly honoured

Glenn James OAM, celebrated during the Sir Doug Nicholls Round

A TEACHER , and a Vietnam veteran, James’ grew up in Shepparton attending Gowrie Street Primary School and later worked at the Ardmona Cannery.

Colouring his earliest memories, football was from the start a life-long passion for James, spending Sunday afternoons playing the sport in a vacant lot before attending The Church of Christ in Mooroopna, where his hero Pastor Sir Doug Nicholls sermonised.

Returning from the draft in 1968, James played for Wunghnu in the Picola & District Football League before a broken jaw thrust him into umpiring where he was soon scouted by the VFL and sent to Melbourne.

Remembering his first senior VFL game, James said, "It was just fantastic. It was Fitzroy and Footscray out at VFL Park in 1977. After the bounce a player handballed it out to Bernie Quinlan and he banged it through from about 70 metres out. I knew straight away that this was a different type of footy, this was a different game."

Despite fostering a famed rapport with players and reaching the pinnacle of his craft

not once but twice, James nevertheless faced racial abuse throughout his career.

Outraged at a young age, by the bigoted vitriol hurled at his uncle during a game, Greater Shepparton City councillor, Cr Greg James said his uncle simply shut it out, telling him,

“I don’t have to handle that, I just put the earmuffs on and block it out because I have a job to do making decisions on the ground,... if I worry about what’s being said it detracts away from what I’m being paid to do.”

Reportedly over the moon about being this year's Sir Doug Nicholls Round honouree, Greg James said of his uncle,

“It is such a great honour for Glenn being the first and only Indigenous umpire in the AFL/VFL to be honoured...What he has achieved needs to be immortalised.

“I don’t think he realises what it has actually meant to our people in regard to building that relationship of reconciliation. We’ve always been acknowledged for our sporting skills on the field but never before for our umpiring.”

Deserving Volunteers Given a Boost

Recently, volunteers across our electorate were celebrated for their valuable work during National Volunteer Week. I want to commend each and every single person who donates their time to help others and support organisations. Volunteer Week was also a chance for me to call members from 21 local organisations and inform them that their club will share in $66,000 in local federal funding from the Volunteer Grants program.

During the last few years sporting clubs and community organisations have suffered a lot of disruption and this funding will help to rebuild, reconnect and provide support to volunteers.

$20,000 to Help Support and Remember Our Veterans

Goulburn Valley Veterans Services will receive $12,000 in federal funding to assist in their work helping Veterans and their families access vital services.

I recently met with members of Goulburn Valley Veterans Services and the team do an incredible job helping Veterans and their families navigate sometimes challenging services. Many Veterans can be unaware of the assistance they are entitled to, and for some individuals, dealing with the various agencies is confusing and can increase stress.

This money will support the team’s tireless work to help get local veterans the support they need and deserve.

Another $8500 will be shared between Marungi Memorial Park Reserve Committee of Management, Puckapunyal Primary School and Shepparton Search and Rescue Squad.

The money will be used to complete projects that remember Veterans and will also educate residents about their service for generations.

This money was awarded through the Saluting their Service Commemorative Grants Program and another round of this funding program is now open.

I encourage community individuals, organisations, councils and schools to apply for the next round of grants under this program to support similar projects.

Budget 2023

Millions of hard-working Australians have been left behind in the Budget recently handed down by the Labor Government. Regional Australians are still looking for real solutions to the cost of living, fixing our roads, workforce shortages, access to childcare and funding for key infrastructure and services.

Our electorate is responsible for a lot of government revenue, including agricultural exports, and while this Labor Government happily pockets that revenue, it fails to reinvest in the regions.

Truckies and farmers will have no choice but to pass on new taxes imposed by the Albanese Government onto consumers.

Regional spending has been pushed out to 2024 with grants programs announced in October 2022 not even opening for Expressions of Interest until July 2023. Every day I speak to locals about projects that would advance our region and funds must become available sooner rather than later.

$250 million in new funding for roads across the country is a fraction of what is needed. After two wet years and major flooding, our road network is a mess. Under this Budget our roads will get worse before they get better.

Transforming talent into tattoos

MASTERING THE ART... Tattoo apprentices have a lot to learn before they master the skill of inking skin, but once they do, they become part of a very rewarding career. Pictured is one of Sheppartons leading tattoo apprentices, Kerryanne Grembecki. Photo: Brittany Drysdale

IF you love drawing, design, and artful permanent body modification then a career in tattooing might be the right job for you!

The history of tattooing dates back thousands of years, with the earliest evidence of tattoo art coming from 5000 BCE when Japanese clay figurines were discovered to have their faces painted or engraved to represent tattoo marks.

Since then, the art of tattooing has developed into a widespread contemporary phenomenon with highly developed means of execution as well as multitudes of different styles and techniques.

To start out as a tattoo artist, one must begin an apprenticeship with a qualified artist. Beginning with hands-off learning, an apprentice will train on safety, proper sanitisation, building a tattoo machine, shop maintenance, and station setup.

Lasting anywhere from one to three years, an apprenticeship involves long hours learning the ropes and building up

a portfolio until finally being able to put needle to skin.

Talented tattooist Kerryanne Grembecki has been an apprentice with Black Crown Tattoo since February 2022, where she is able to challenge her creative side and satisfy her love of drawing.

“Tattooing was something I had wanted to do for a long time,” said Kerryanne. “It’s really rewarding being able to grow and see your work on happy clients.”

As an experienced apprentice, Kerryanne has some great advice to pass on to aspiring tattoo artists, emphasising that there is a lot more to learn and do than you might think.

“One piece of advice I would offer is to build a portfolio and have it ready when you start looking for an apprenticeship. “When you start, it will be challenging but very stimulating.”

Learning to handle large animals

THE University's Dookie campus, located near Shepparton, has successfully implemented an enhanced teaching program for Doctor of Veterinary Medicine (DVM) students, with a focus on handling large animals.

The DVM course spans four years and provides a graduate degree that takes an integrated, interdisciplinary approach to veterinary studies. The program is designed to allow students to apply their understanding to real-life cases, develop evidence-based decision-making skills, acquire clinical competencies, and solve clinical problems.

Associate Professor Jennifer Carter, the Director of Veterinary Education, explained that the recent facility upgrades at Dookie have enabled the DVM Coordinators and the animal handling team to offer students more practical experience with sheep, cattle, and horses in a commercial farm environment.

In March, first-year DVM students spent a week at Dookie, engaging in intensive hands-on learning.

Animal handling skills are an essential part of the curriculum and accreditation requirements for the students. Many of the students had limited prior experience with large animals, particularly those who had always lived in urban settings.

Student testimonials showcased the positive impact of the program.

“It’s been awesome coming here. The instructors’ guidance was really helpful, and I feel a lot better about going in and catching horses. I was a little more familiar with sheep and cattle, but being able to reinforce that knowledge has been cool,” said DVM student Cassidy

Associate Professor Carter emphasized that the DVM program prepares students for various veterinary career paths, allowing them to choose between working as small or large animal veterinarians, in animal welfare, government positions monitoring wildlife health, or even as zoo veterinarians.

The aim of the program is to equip DVM students with the knowledge, experience, networks, and flexibility to succeed in their chosen veterinary careers.

THE Greater Shepparton community is one of many areas in Victoria benefiting from the Victorian Government's investment in 55 projects that aim to provide practical support and recognition to veterans and their families.

The government has invested over $1.4M in these projects, which are being distributed through three grant programs that focus on supporting and commemorating veterans.

The Veterans Capital Works Grant Program is one of the three grant programs, providing funding of up to $50K for 31 facility upgrades.

The Restoring Community War Memorials and Avenues of Honour Grant Program is the second program and is providing over $324K to 13 organizations for projects that restore or improve war memorials, honour rolls, and avenues of honour across the state.

The third grant program is the Victoria Remembers Grant Program, which provides

up to $30K to 11 organizations for projects that commemorate veterans' service or educate Victorians about their contributions.

The Calder Woodburn Memorial Avenue Nameplates Project, which has been awarded over $10K through the Restoring Community War Memorials and Avenues of Honour Grant Program, is one of two projects in the Greater Shepparton community to receive funding.

The project involves replicating 71 significant nameplates of fallen soldiers that have been damaged, stolen, or are in poor condition.

The Nathalia War Memorial Restoration stage two project, which has been awarded over $11K through the Veterans Capital Works Grant Program, involves repairing cracked stone walls, discoloured granite slabs, and damaged or missing lettering on plaques.

JEWELLERY is often associated with special moments and events. However, at a certain point like many things, the jewellery we have may lose its appeal and migrates from being special to be stuffed in a drawer or a box somewhere.

Fortunately, there’s a very practical solution that allows people to get some value out of old jewellery pieces again. Assuming there’s no longer a viable emotional attachment, all types of jewellery made of gold, silver and palladium can be sold.

High Quality Jewellery Gold Buyers Melbourne buy gold, antique and cotemporary jewellery made of all precious metals (even broken pieces), precious stones, and even watches.

Prospective sellers show their items to the team’s expert buyers. After they have calculated the price based on its resale value, you can then decide to sell them or just walk away with a free assessment of your jewellery. With over 10,000 satisfied clients, and the best prices in Victoria, they have a 100 percent satisfaction guarantee.

Bringing the biggest inspiration to the littlest hands at SAM

LITTLE big, Big little is the delightful and aptly named new children’s exhibition at the Shepparton Art Museum (SAM).

A vibrant and winsome show, Little big, Big little is designed to engage young audiences in creative play while introducing them to elements and principles of art, such as colour, scale, rhythm, and texture, while sharing the experience with parents and carers.

The works on display demonstrate a range of artistic movements, forms, and concepts and are presented in a colourful, dynamic space that encourages exploration and curiosity.

Artists whose works are featured in the show include, Renee So, Naomi Hobson and Barrie Goddard.

SAM curator-community, Caroline Esbenshade said of the exhibition, “With this exhibition we’ve created a space that is full of colour and have selected artworks from a range of eras with engaging textures and shapes to create a fun and inviting space for kids.

“We hope a trip to SAM, particularly the

Children’s Gallery, will inspire kids to engage in the arts and get creative themselves - we have a drawing activity in the gallery should inspiration strike!

“We haven't yet had a SAM Collection show in the Children’s Gallery; hopefully, visitors both big and small enjoy the show and come away with a better understanding of how different artists use different approaches in artworks they see inside and outside of SAM.”

ENGAGING AND DELIGHTING LITTLE HANDS... The new children’s exhibition at the Shepparton Art Museum is called Little big, Big little and is set to inspire creativity, exploration and curiosity.

Each artwork has a wall label designed to prompt inspiration and creativity as well as information to encourage further conversation between children and parents.

Young creatives are also invited to leave their artworks if they wish to be displayed each week.

Little big, Big little is now showing at SAM until September 3, 2023, with free entry.

BENALLA V ROCHESTER

This is a real opportunity for both these teams to chalk up win number 2 for the season. Both are sitting at 1-6 and in the bottom two. They will be desperate to improve their records in a bid to climb out of the bottom two.

Tom Bennett, Jayden Guppy, David Mennen, Jordan Wolff and Christopher Welsh will be the ones trying to lead the way to ensure supply for Jarrod Waite and Josh Mellington.

Hamish Hooppell, Joseph Atley, Mitch Cricelli, Bailey Wileman and Mitchell Bright will be trying to lead the way for the Tigers. This is going to a battle between which team kick hit the scoreboard, especially when you look at the season average for the teams in front of goal. Benalla’s average is 48.28 and Rochester’s is 52.14, so on the season not much separates these two, so it will come down to which forward line can get on top. I am leaning towards Benalla if Waite and Mellington can have a day out. Tip: Benalla.

SHEPPARTON UNITED V KYABRAM

Kyabram is the real deal, anyone who thought otherwise needs to think again. The 2016-17-19 premier has claimed some big scalps this season, including ending Seymour’s undefeated start to 2023 in a one-point thriller last weekend and defeating Euroa on the road. Their only defeat came to the reigning premier, but they were far from disgraced in that bout.

Will Golds, Lachlan Smith, Jason Morgan (kicked winning point in the win over the Lions), Riley Ironside and Kaine Herbert were outstanding in the win over the Lions. This presents as a massive opportunity for the Demons.

Coach Duane Hueston is doing a good job in trying to create a game plan which centres around building where he wants to go in the future. Despite a big loss last weekend, he will look to Adam Pigatto, Marcus Wattie, Kaedyn Napier, Mitchell Roche and Fergus Pinnuck to lead the way against the visiting Bombers. Tip: Kyabram.

SEYMOUR V SHEPPARTON

Seymour will be looking to bounce back after its one-point loss to Kyabram to prove that was only a little speed hump in its 2023 journey. The Lions lost no friends in their loss to Kyabram. Their opponent come into the contest at Kings Park off the back of a good win over cross-town rival the Shepparton Swans. Bears ruckman Bryce Stephenson is in sensational form this season, continuing his good form from last weekend’s interleague contest and a best on ground performance over the Swans. Stephenson will look to get support from Connor Fleming, co-coach Xavier Stevenson, 2018 premiership forward Anthony Andronaco, co-coach Edward Lindon and key forward Lewis McShane who has kicked 9 goals in the past two matches. Ben Rigoni, Michael Hartley, Jack O’Sullivan, Tom O'Sullivan, Bradley Lynch and skipper Lachie Waite will be ones trying to lead the Lions back to the winners’ den. Tip: Seymour.

EUROA V ECHUCA

What a game this promises to be?

The battle between last year’s grand finalists in what will no doubt give both coaching groups plenty to go away with regardless of who claims the points. Echuca is flying and appears to be as hungry as ever despite climbing to the top mountain in 2022. Euroa is just going and coach Scott Rowan would be the first to admit that his team has plenty of room for improvement despite only losing two games in the opening seven weeks of the season.

Nate Trotter, Will Hayes, Jett Trotter, Jacob Gleeson, Harrison Jarvie and Andrew Smith will be important if the Pies are to extract some sort of revenge for last year’s heartbreaking loss to the Murray Bombers.

Samuel Reid, Sam Willoughby, Will Monahan, Matthew Lias, Lachie Watson and Cam Valentine will be the Murray Bombers trying to lead the way and inflict a third defeat for 2023 on the Pies. Tip: Echuca.

MOOROOPNA V MANSFIELD

This will be a really good test for both of these teams. They sit fifth and sixth respectively so far and I think both coaches would acknowledge they are a work in progress if they are to match the top three teams on the ladder. I had a bird’s eye view of the Cats last weekend, having worked with the ONE FM broadcast team as the boundary rider and was impressed by their run and carry coupled with their leg speed around the ground. While I haven’t watched the Eagles, I do know they do like the contest as they have some big bodied midfielders. And with both teams well coached, it will be a case of who gets the game on their terms. Ben Hicks, Christopher Nield (seven goals), Jack Hunt, Ethan Hunt, Daniel Johnston and ruckman Liam Beston will be important to try and get the game on their terms.

Jayden Howes, Brett Mahoney, Sam Thomson, Ben Christopher, Dirk Koenen, Frazer Dale and Lachlan Murphy-Dale will important to try and assist the visitors get the game played on their terms. Tip: Mooroopna.

SHEPPARTON SWANS V TATURA

This contest shapes as a 9 v 8 game. Some reading that are wondering what I mean. Neither of these two teams are high scoring and they don’t possess a monster target in their forward line. The Swans average 54.42 points per game. Skipper Nathan Rachele kicked 5 goals as a midfielder/forward on the day the Swans registered their only win and highest score of the season – 12.13.85 against Shepparton United. The Bulldogs average 52 points per game, with 9.14 their highest score on the day they defeated Shepparton United.

The Swans will look to Nathan Hrovat, Bowen Calogero, Andrew Riordan, Max Clohesy, Ben Gilberto and Samuel Wright (debut for the Swans last weekend) to lead the way while the Dogs will look to Mitchell Elliott, Michael Archer, Ethan Penrith, Harley McCarthy, Brodie Meyers and Andrew Ciavarella to guide them to a third win of the season. Tip: Tatura.

PORK SPARERIBS

Pork spareribs are a flavorful and tender cut of meat, perfect for grilling or slow cooking. These bone-in ribs are marbled with fat, adding richness and juiciness to every bite. Whether glazed with barbecue sauce or seasoned with spices, pork spareribs are a delicious and satisfying choice for meat lovers.

COOKING TIPS

PREPARING THE RIBS: Remove the membrane from the bone side of the spareribs for better flavor penetration. Rub the ribs with a dry spice rub or marinade at least a few hours before cooking to enhance their flavor.

SLOW COOKING OR GRILLING: For tender and juicy spareribs, it's best to use low and slow cooking methods. If grilling, start with indirect heat and gradually increase the temperature. If using an oven, set it to a low temperature (around 275°F or 135°C) and cook the ribs for several hours until they are tender.

BASTING AND GLAZING: To add extra flavor and moisture, baste the ribs with a sauce or marinade throughout the cooking process. If using a glaze or barbecue sauce, apply it during the last 30 minutes of cooking to avoid burning or charring.

RESTING AND SERVING: Allow the cooked spareribs to rest for a few minutes before serving. This helps retain their juices and makes them easier to handle. Serve them as is or with additional sauce on the side for dipping.

Skeeta adventure in the wild

WHAT could be more enthralling, or indeed more daring, than a spree across the state’s high-country on nothing other than Skeeta postie bikes, and all while in the company of thirty or so of your best mates?

Hitting the rugged beauty of the untamed Wonnangatta Valley, the Goulburn Valley Motorcycle Club (GVMC) did just that during the first week of May, as it celebrated its 40th iteration of the annual event.

A two-day escapade encompassing around ten support vehicles in one of Victoria’s

premiere four-wheel driving destinations, the club covered around 80 km in terrain, pushing the tenacious 110cc postie bikes to the limit.

Long time GVMC member, Paul Murphy, who has participated in the Wonnangatta Valley Skeeta postie bike ride for 30 years said, “The valley maybe beautiful but the ride is gruelling, especially on these little postie bikes where the terrain is comparable to that of low range four-wheel driving.

“We had 35 riders this year, including four ‘virgin’ riders who had no problems

completing the whole ride with only two bikes not making the distance.”

Another stalwart on the annual Skeeta postie ride is Steve Trelfell, who said of the event, “It’s always fun, the guys that go on it are just crackers, you’ve got young blokes right through to the old guys with around ten support vehicles. It’s a whole lot of fun!”

OPTIONAL FINISHING TOUCHES: For a caramelized and slightly crispy exterior, you can place the cooked spareribs under a broiler for a few minutes, watching closely to avoid burning. Additionally, garnishing with fresh herbs or a squeeze of citrus can add a burst of freshness to the rich flavors of the ribs.
