Filipino skewered pork barbeque

A beloved and iconic dish in Filipino cuisine
HAILING from Manila, Philippines, Marieta Martin has lived and worked locally for over two decades and although she has been passionately engaged in the community through both her work and her involvement in the Filipino Australian & Friends Association, it is the memories associated with the aromas of Filipino street food that evoke the joyful reminiscence of childhood.

Filipino skewered pork barbeque is one such childhood favourite and is a delicious recipe of cultural significance that Marieta hopes very much will be enjoyed by you, with the recommendation that it is best served with boiled rice.
Ingredients and marinade mixture
1 kg pork shoulder/ butt/belly
1/3 cup brown sugar
1/4 cup soy sauce
1/4 cup calamansi (cumquat) or lemon
2 tbsp banana ketchup or any ketchup
Basting Mixture
1/2 cup used marinade
1/2 cup banana ketchup
1/3 cup brown sugar
1/4 cup soy sauce
Dipping sauce
1/4 cup soy sauce
2 tbsp brown or white vinegar
1/2 cup sprite
2 tbsp water
2 tbsp calamansi juice or 1 tbsp lemon juice
1-2 tsp sugar (adjust to desired sweetness)
Method:
1. Slice the pork into barbecue-sized pieces.
2. In a bowl, combine the marinade ingredients and mix thoroughly to dissolve the sugar.
3. Add the marinade to the sliced pork and mix well. Marinate for at least 4 hours, or overnight for better flavour.
4. Skewer the marinated pork, starting with the fat and using a twisting motion.

2 tbsp garlic
1 tsp black pepper
1 cup sprite
1 pack bamboo skewers
1/4 cup cooking oil
1/4 cup calamansi (cumquat) or lemon
2-3 bird’s eye chiles
1 medium tomato diced
1 medium red onion diced
1/4 tsp Iodized salt
1/4 tsp ground black pepper
5. Set aside 1/2 cup of the marinade and add the basting mixture ingredients to it.
6. Preheat the grill and brush it with cooking oil to prevent sticking.
7. Grill the skewered meat, basting it with the prepared basting sauce after every turn to keep it moist and juicy.
