Moms need a break. Nikia Woods is here to help facilitate that with her “Stay Home” cocktail pouches. “Us moms need to unwind sometimes,” she says. Woods owns Nikia Woods Bartending Services, a business that provides event waitstaff and bartenders. When COVID-19 hit, the lack of events led Woods to pivot her business toward to-go cocktails. “People are getting to-go food, online groceries and everything else, so why not alcohol to go?” she says. Woods has an 8-year-old son named Jaxan, who will be a third-grader at Merriman Park Elementary next year.

How she started her business: I’ve worked in various clubs and restaurants. My very first bar job was in Oklahoma City at a New Orleans-style cuisine, small dive bar. When I moved to Dallas, I stayed with restaurants and bars. While working in establishments, my regulars would ask, “Hey, my sister’s getting married, can you come serve drinks?” or “We’re going to have something at the house, can you come serve cocktails?” I saw the demand for it, and I made a business out of it. It was just me initially, and it grew from there. Now I have a team of 12.

Biggest challenge as a business owner: The biggest adversity would be that leap of faith. Working in corporate America, having that stability, you know exactly how much your check is going to be every two weeks. Stepping out of my comfort zone saying, “Hey, let’s do it,” that was my biggest hurdle to climb. I’m glad I did it, and I haven’t worked in corporate America for three years.

Where the pivot idea came from: I was talking to a girlfriend of mine, we were having a conversation about what we were going to do because she’s in event planning. She said, “There has to be some kind of way you can do drink deliveries.” I came up with my pouches. I had done it once before for a festival. People want to drink at the end of the day. They’re stuck at home with their kids. Why not relax at the end of the day and have a cocktail?

Inspiration for her cocktail menu: I, like most women, like fruity cocktails, so that’s kind of how I came up with the menu options. I like fresh juices and fresh fruit, so I incorporated all of that into my cocktails.

The mojitos are probably the most popular, that’s one of my favorite cocktails.

On her “sneaky” tea: We’re in the South, so it’s a sweet tea combination with vodka and fresh juices like peach and lemon. It tastes just like sweet tea until all of a sudden, you’re like, “Whoo, I feel good.”

Support from the community: I’ve been surprised at how well it’s been doing. I knew people would be interested; they’re cute little cocktail pouches, but I am in awe of how much support I’m getting. It’s helping with bills and things for my kid during this time. Being a woman, not only a woman but a Black woman-owned business, it speaks volumes that I’m getting so much interaction from everyone.

Advice to other women wanting to start a business: Go for it, girl. You’re never going to have the right amount of money. It’s never going to be the perfect timing; you just have to do it. You’d be surprised where you can go if you work hard and stay with it. You can go far.

CHEF TROY GARDNER IS BRINGING VEGAN CUISINE TO THE NEIGHBORHOOD WITH A NEW RESTAURANT CONCEPT

How does a Texan describe Frito pie to a room of Europeans? Chef Troy Gardner found himself in this dilemma at the Sabor Vegan Academy in Spain. “I realized for the first time that Frito pie was a Texas thing,” Gardner says. “One of the instructors asked about the most popular items I had on a menu, and I just got crickets and blank stares, and they asked if it was a dessert.” After traveling around Europe, learning new culinary techniques and absorbing foreign culture, chef Gardner came back to the States and founded V-Eats Modern Vegan in 2018. A former Wildcat, Gardner has returned to Lake Highlands with his latest venture, TLC “Tastes Like Chicken” Vegan Kitchen. The ghost kitchen provides delivery and takeout to the Lake Highlands area.

Initial interest in vegan food: I started cooking a lot of vegan items years back when I was in college. I was in a band, and I played for a lot of musicians

around the U.S. In the music world and the arts, you meet a lot of vegan individuals. I started to make items for them that didn’t involve just hummus and French fries. I enjoyed the challenge and making something a little bit different, and that’s how it all kind of launched.

On attending the Sabor Vegan Academy:

That was absolutely amazing to be able to be immersed in food all day long throughout the week and then jump around Europe on the weekends. I would have loved to do that full time. The nice thing about Spain is that the south of Spain is really like being in a combination of France and Spain. There’s so many incredible food influences. It was just an awakening experience for me being able to work with mainly organic products because there’s so many farms and vineyards up and down the mountains. It’s funny because these farmers have been using the same techniques for hundreds of years.

What is a ghost kitchen?

A ghost kitchen is a brick-and-mortar restaurant that doesn’t have a dining room. It’s just a restaurant where you serve all of your food out the door without customers coming in.

How has COVID-19 impacted business?

We launched right in the middle of it. It was a little bit easier for us to get the word out because people have already become accustomed to delivery and curbside takeout. You’re not teaching people how to wait outside for it to be brought to them. They’ve already started dealing with that at their regular restaurants.

His own diet?

I live primarily a vegan lifestyle. I buy ethically sourced products. I buy cruelty-free products and vegan everything, but I don’t only eat vegan. As a vegan chef, it’s my responsibility to recreate items to make them appeal to people that are new vegans, nonvegans and vegans. In order to do so, I maintain my palate so that if I tell you that this tastes like cheese, I want to guarantee it tastes like cheese. If I make a meat substitute, I want to make sure that someone who’s never had a vegan dish in their life doesn’t think, “Ew, this doesn’t taste like bacon.”

Why Lake Highlands:

There’s not a huge vegan community in Lake Highlands, but it’s incredibly popular in the area. There are a lot of folks that partake in vegan food that aren’t necessarily vegan, which is

kind of the route I was going for when I first launched V-Eats. I was trying to create a vegan restaurant that appealed to nonvegans because vegans are going to come to a vegan restaurant regardless because there’s a limited number of them. They broaden your client base while exposing more people to an entirely different type of food and lifestyle that they ordinarily wouldn’t eat.

Favorite item on the menu:

Our sausage and mushroom pizza.

Favorite vegan restaurant: Crossroads Diner in L.A.

Must-have item in the kitchen: I do a whole lot of zesting, not going to lie. I really love my peeler because you’d be amazed at all the cool things you can do with a standard potato peeler.

Message to people who are nervous about trying vegan food: I would say that good food is good food. Don’t be fearful because there’s the word “vegan” in front of it. Most people say, “I could never eat a vegan dish,” and I tell them, “Well, you’ve had a peanut butter and jelly sandwich.” Just because we add the word vegan doesn’t mean that it’s not food. It’s not like we’re introducing some extreme foreign substance. It’s just reorganizing a recipe, and it just happens to not involve animal products.

BRI CKHOUSE BURGERS & SHAKES

The mega shakes are the indulgence of a lifetime at Brickhouse Burgers & Shakes. Co-owners James Richardson and Dudley Dort are cousins from Brooklyn, but they’ve quickly acclimated to “everything’s bigger in Texas.”

The mega shakes are presented in sizable, retro glassware. The Cookie’n’creme shake features Oreo cookies on the rim and a whipped cream topping. The RPO is a peanut butter shake topped with Reese’s crumbled peanut butter cups and pieces. The restaurant added a shake bar, so any milkshake layman can be inspired to create malted artistry.

If you prefer savory over sweet, the Brunch Burger includes applewood smoked bacon, cheddar cheese and homemade hash topped with a fried egg.

Richardson and Dudley work closely with the Lake Highlands Public Improvement District to help cater neighborhood events. Richardson says he enjoys the conversations customers are always willing to be part of when stopping by.

SNOOZE AN A.M. EATERY

Snooze may not have invented brunch, but it definitely does it best. From icingtopped pancakes to lavender-infused mimosas and extravagant Benedicts, it’s a favorite for brunch-loving millennials.

The signature item is the Pineapple Upside Down Pancake with buttermilk batter, brown sugar and chunks of pineapple. The flapjack is then flipped and topped with whipped cinnamon, brown sugar and vanilla cream.

The Danish is made with cream cheese, blueberry coulis, cream cheese icing, almond crumble and powdered sugar. Recently, the restaurant served a Pride pancake with vanilla cream, strawberry glaze icing, sweet cream icing, blueberry marzipan and shredded coconut.

“We have a pancake flight where you can enjoy three different types of pancakes. It’s definitely the way to go if you are new to Snooze,” senior brand manager Becky Fairchild says. “We love to bring high energy to the morning and have been known to say that our Snoozers have a dancing problem.”

Snooze started out in Denver, Colorado. Brothers Jon and Adam Schlegel opened the first location in 2006 and swiftly expanded to Texas, California, Arizona, Kansas and North Carolina.

Focused on ethical practices, the restaurant composts and recycles nearly 90% of waste, cooks farm-raised eggs and provides paper straws upon request.

“We love making a difference and leaving our planet better than we found it,” Fairchild says.

During the pandemic, Snooze fed over 2,500 meals to frontline workers and brought breakfast to families with immunocompromised children.

SHADY’S BURGERS & BREWHAHA

The quintessential Lake Highlands burger joint caused quite the “brewhaha” in the neighborhood. Shady’s opened in 2016 and became a natural favorite for spirit nights and family outings.

“We bring the community together,” general manager Natalie Garrett says. “We’re just a good place for everybody to come in, relax and get a burger and a beer.”

The New Pig On The Block burger is a brisket patty topped with a barbecue pork and cheddar stuffed onion ring, bacon, lettuce and pickles.

“It is one out of many popular burgers, but it’s definitely the messiest one we have and the biggest,” Garrett says. “We hand batter the onion ring ourselves.”

The shakes are made from ingredients created in the scratch kitchen, all the way down to the caramel sauce that tops off the beverage. Baskets of fried pickles and loaded French fries complement the vast selection of local beers.

“Whenever COVID-19 first hit, I was absolutely terrified of what was going to happen,” Garrett says. “The community came together, and it was so amazing to see.”

ZATO THAI CUISINE & SUSHI BAR

Traditional Japanese sushi is very simple; no frills, just gills. Sushi rolls made at Zato Thai Cuisine & Sushi Bar are covered in generous amounts of toppings and sauces.

“For Japanese culture, these are decadent,” owner Hugo A. Mejia says.

The Red Dragon Roll, a customer favorite, is covered in layers of spicy tuna, wonton crunch and spicy mayo. Shrimp tempura and cucumber fill the roll.

The Zato Tower is stacked high with layers of rice, crab meat, avocado, spicy tuna, three kinds of fish eggs and the chef’s special sauce. Customers use chopsticks to disassemble the tower and mix the ingredients thoroughly.

Zato opened 10 years ago in the Royal Highlands Plaza Mall shopping center.

“There’s not too many sushi places in the area,” Mejia says. “We wanted to be a part of Lake Highlands.”

Fill your tank and your belly at La Paisanita Deli. Located inside a gas station off Greenville Avenue, the tiny shop serves tacos for $1.59 each, offering 14 types of meat. You can’t go wrong with a classic fajita or barbacoa taco.

In a bright yellow-and-blue house off Northwest Highway sits Mario Bros, a taco joint cooking recipes from the city of Monterrey. For a meat lover, enjoy the campechano taco with both trompo (al pastor) and bistec (steak). Mario Bros also sells a vegetarian taco with beans and grilled veggies.

TYPES OF MEAT

Al pastor

If you’ve ever seen a giant funnel-shaped piece of meat spinning in the restaurant, that’s al pastor. It’s roasted on a trompo to create slow-cooked pork. The bright red color comes from being heavily marinated and seasoned in onions, garlic, achiote paste, cumin, cinnamon, allspice and cloves. Some restaurants serve al pastor with pineapple for a sweet and savory taco.

Barbacoa

Barbacoa is typically made with beef and seasoned with dried chilies, spices and fresh lime juice. It’s slowly cooked until flawlessly tender.

Carnitas

Carnitas means “little pieces of meat,” and it’s usually pulled pork shoulder cooked in lard. Originating from the state of Michoacán, it’s a classic for tacos.

Carne asada

A favorite at cookouts, carne asada is sliced beef made of skirt, sirloin, tenderloin or rib steak. Marinades vary but typically include oil, salt, pepper, garlic and lime juice.

Chorizo

A great choice for breakfast tacos, chorizo is a pork sausage. It’s red from dried chilies and paprika, the best combination is with eggs and potato.

WHY LAKE HIGHLANDS LOVES WHITE ROCK COFFEE

WHITE ROCK COFFEE takes coffee seriously. After opening in 2005, it has expanded to own a commercial bakery, roaster, warehouse and a handful of locations. Owners even bought out the Jack in the Box next door to create a lab for employee training and public coffee classes. But it seems like neighbors take it even more seriously. When a Starbucks opened next door, neighbors were fuming. They frequently go online to defend White Rock Coffee, so why are neighbors fiercely loyal?

THE FOOD IS ACTUALLY GOOD

Sometimes coffee shop food purchases are a last-minute grab for someone who forgot to pack a lunch. That’s not the case with WRC. “They have good food choices in a pinch. I can zip through the drive-thru and pick up a breakfast, snack or lunch,” customer Jennifer Cluney says. All pastries are cooked from scratch in the WRC bakery. “We have monthly meetings with our bake shop manager, and we come together with recipes,” owner Nancy Baker says. The hometown cooking even comes down to the chicken salad recipe, which came from Baker’s mother. “We always wanted to be very coffee centric, so our food is very intentional on how it pairs,” she says.

FRIENDLY STAFF

Walking into WRC can feel like a sitcom episode, where the barista personally knows your name and order. “Not only the best coffee, but a very special place! Great personnel, super customer service,” customer Jutta Preston says. Employees are screened for their ability to form relationships. “I’m pretty sure my family has gotten WRC at least five times a week since the COVID-19 shelter-in-place in March,” customer Michelle Ball says. “Above all, it’s the customer service that keeps me loyal. At every location, the people serving me have always been kind, cheerful and helpful.”

Back to school

Is in-person learning worth the risk?

In this time of highly contagious coronavirus, should schools reopen on time, after a short delay, online only or a combination of in-person and online learning?

Maybe you are a two-parent household without immunocompromised members. Maybe you have high-speed internet access and more than one computer that allows you —and maybe your spouse — to work from home while your children attend Zoom school. But you may be a family more vulnerable to the virus, and surviving another semester or year without school or daycare seems unimaginable.

Local public schools are being required to delay in-person learning until after Labor Day with added safety protocols and online options for families who opt out of in-person schooling. At the time of writing this, sustained spikes in infections have pushed hospitals near capacity. Fall sports and other extracurricular activities are in jeopardy. How regional colleges will handle classes is a mixed bag.

The Early Childhood Learning Center at my church serves about 300 children in a typical semester. About 25 percent come from families who need us to reopen because of work responsibilities. That is not to minimize the impact on other families who also rely on us to help preschoolers learn cognitively and socially and to provide breaks from nonstop parenting.

Teachers, administrators and other workers in schools are at risk in more than one way. If we have no students, we have no revenue to pay them, and the downward cycle in the economy continues because everything is related.

What to do? Spiritual values are part of the discernment process and should be stated. Among them are these:

1. We care about all human life as our highest value. Before we consider other

factors, we should affirm this one. Being matters most.

2. We are our neighbor’s keeper. These issues can’t be decided solely on what we want or what we are willing to risk. They must also include what is good for others. If you knew someone was making a choice that would endanger your life or the health of your child, how would you feel? Religion operates with a bias toward the marginalized, weak and vulnerable who are disproportionately impacted by any crisis.

3. Economic and mental health matters too. If we consider only the first two, we might not open schools until the risk level is near zero after an effective vaccine has been broadly applied. But again, everything is connected, and there are costs we will all have to pay for not opening sooner rather than later.

Faith doesn’t make life easier, but it points us in the direction of what is good. When there are competing goods, it tips us toward our highest values for the sake of the common good.
