Years ago, I
a guy pretty much like me who called himself an “entrepreneur”.
It wasn’t a hugely common word back then, so identifying someone that way sounded exotic and successful and romantic.
His friends introduced him at dinner parties as an “entrepreneur”, rattling off his various business interests, and at first blush it was an impressive list.
At the time, I worked for a big company in a time-clock kind of job, and being identified as an “entrepreneur” sounded better than my gig. I was spending a good amount of time, both during work hours and afterwards, working to release my inner businessman. In fact, another guy and I investigated buying a gas station, several newspapers, even a Dairy Queen.
But nothing ever worked out, primarily because our cash reserves barely filled the bottom of a cookie jar, and I remained an employee rather than a budding entrepreneur.
Finally, and mostly in frustration, I cornered Mr. Entrepreneur at a party and started asking him about his various businesses, looking for some wisdom I could use to build my own.
He talked and he talked and he talked, and I noticed a pattern: There was a lot of discussion about research into this company and investigation into that business, but when it came right down to it, Mr. Entrepreneur wasn’t one. He was just a guy who liked to talk big about the things he was going to do with his life when the opportunity arose. But as it turned out, when opportunity knocked, as it does eventually for everyone, he didn’t answer.
In fact, his biggest financial accomplishment seems to have been convincing his eventual wife that since sooner or later one of his ideas would surely hit it big, she should contribute to their joint success by funding their family on her own.
Being identified as an “entrepreneur” just sounded good, apparently to both of them, and presumably they were content with their parallel lives of sacrifice and dreams.
No matter that the bottom line showed a wife working a time-clock job a nd a husband talking about business success that didn’t exist. All because he was afraid to pull the trigger on
any of his ideas to find out if he had it in him to make at least one idea work.
Our cover story this month on kid entrepreneurs is the antithesis of this story, in that these kids are doing something. They woke up one day with a dream, and with a fair amount of help and guidance from parents and friends, they’re giving something a try. Just from reading the story, you can sense the hap-

piness and pride they and their families have in what they’ve done, even if the results haven’t exactly been Facebook-like in terms of riches and fame. And who knows where what they’re doing today might lead them or their watchful friends someday.
Talk is cheap when it comes to being an entrepreneur. But talking and dreaming about building a business isn’t all that fulfilling; sooner or later, you have to pull the trigger or live with the consequences.

NEIGHBORS VOICE IDEAS, CONCERNS ABOUT NEW PRESTON ROYAL LIBRARY 05.20.11 People love their Preston Royal Library. And after last night’s community meeting about its future home at Forest and Nuestra, neighbors left concerned but optimistic about how one of the system’s most used libraries could one day become even better.
Councilman Ann Margolin hosted a forum to gather residents’ input on the design. The city bought the land with money from the 2006 bond election and demolished the abandoned Korean Young Nak Presbyterian Church. However, there are no funds to actually build the library — not until another bond package passes.
So, don’t expect to see any construction for about two to five years, Margolin says. But here’s what we know so far:

Preteen boys huddle around computers playing video games, taking a break when Mom brings out the Bagel Bites. The Tera Byte video game creation camp may sound like the perfect summer escape for a gaming geek, but there’s much more to it than that. The boys aren’t just playing video games. They’re building them. “I think that kids love video games, and they don’t really get a chance to create their own,” Zach Galant says. He was in eighth grade at the Greenhill School when he launched Tera Byte in 2004. Now, he’s studying computer science at Stanford University, and his little brother, 13-year-old Jake, has taken over as the camp’s on-site director in his Preston Hollow garage-turned-computer lab. Four Greenhill students work as counselors at the camp, which is open to students in third through eighth grades. During each one-week course, campers use Multimedia Fusion, a program that doesn’t require coding. Their first assignment is to create Pong, one of the simplest and earliest arcade games. Next, they move on to fighting games, building levels and setting specific actions for each character via the program’s storyboard. “A good game should be difficult, addictive and involve strategy,” Jake says. While some consider gaming to be an anti-social activity, the close-knit Tera Byte group proves the opposite. The camp includes several scheduled breaks when the boys play basketball outside or go swimming in the backyard pool. The skills the students learn through Tera Byte extend beyond the computer lab. For a class project on Hercules, Jake and his group opted to create a video game presentation in which the hero must slay the Nemean lion. “The teacher recognized the extra effort we put in. We all got a 100,” he says. “That’s what games can do.” —EMILY TOMAN

Roughly 200 neighbors are expected to celebrate Independence Day at the annual parade sponsored by the Hillcrest Forest Neighborhood Association and the Kramer Elementary PTA. The streets surrounding the school will fill with patriotic fire trucks, convertibles, bicycles, strollers and costumed pets. The parade begins at 10 a.m. with a salute to the American flag and the singing of the “Star Spangled Banner”, and then proceeds down Midbury between St. Michaels and St. Jude. Stick around after the show for a carnival, including balloon animals, ice pops and giveaways for children. Organizers also will award the best-dressed pet.

Th E nEiG hbo R hood ha S chan GE d ovER ThE dE cad ES , but “Peggy” has always adorned the building at Hillcrest and Lovers — first as Peggy’s Beef Bar during the 1940s. It closed in the 1980s, and Marc Hall bought the space and reopened it as a barbecue house. The old sign was left on the roof, and “Peggy” was the only part still in perfect condition. So, Hall incorporated it into the new name, Peggy Sue BBQ (his wife’s name is Susan), becoming part of Snider Plaza history with old-fashioned décor and ’50s music on the stereo. “We want it to feel like you’ve stepped back in time,” Hall says. He owns two other restaurants in the shopping center—Cisco Grill and Amore Italian — but Hall knew nothing about barbecue before opening Peggy Sue. So, he and his family spent two weeks in Central Texas, eating nothing but barbecue for breakfast, lunch and dinner at all of the region’s best smokehouses. “We wanted our barbecue to taste like what you would find in the Hill Country,” Hall says. Susan developed the recipes, including side dishes made from scratch such as the black-eyed peas topped with pulled pork. And no meal is complete without the restaurant’s signature fried pie for dessert. Hall says one of the keys to a successful barbecue joint is the veteran staff. His managers and servers have worked there 20 years. “We’re all growing old together.”

Rieslings are among the world’s great wines, sharing many of the qualities that great wines from other regions of the world have: high prices, long aging and sublime taste. So why do rieslings have such a poor reputation with U.S. wine drinkers? Which is pretty poor, considering that Nielsen reports that we drink three times more white zinfandel than we do riesling.
There are two main reasons for riesling’s neglect. Until the past couple of years, most of the riesling for sale in the U.S. was German, and much of that was of indifferent quality. But the quality of riesling that’s available these days has improved dramatically. We’re not only getting better German wines, but U.S. riesling can be stunningly good. In fact, riesling from places like New York, Michigan and Washington is one of the best-kept secrets of the wine world.
The other reason? Many rieslings are sweet, and Americans have long been taught that sweet wine means bad wine. Which is our loss, since sweet is not a bad thing with riesling. The sweetness occurs naturally, and not as a bag of sugar. In this, the sweetness is part of the wine, something that is balanced by the fruitiness and acidity. And not all rieslings are sweet — they come in varying degrees of dryness, and some are as dry as chardonnay. The leading producers, knowing the challenge they face, have started to label riesling by sweetness, so that it’s easy to tell a dry wine from a sweet one.
In this, riesling is summertime wine — low in alcohol, fruity and relaxing. It’s almost always food friendly, and especially with grilled and boiled seafood, spicy cuisine like Tex-Mex and Thai, and even pork. These rieslings will get you started:
This Washington state wine has a hint of sweetness, apricot fruit, some minerality and pleasant acidity, It’s not complicated, but is a good example of what dry riesling can be.
This is what corporate wine should aspire to: It’s varietally correct, and though it’s sweet, it’s supposed to be. The sweetness isn’t there to cover up a flaw.
The Alsatian Hugel is a top riesling producer, and this dry wine shows why. Look for green apples, peaches and a bit of what is always described as petrol.

WITH YOUR WINE Chicken with riesling
This is as about as easy as chicken and wine gets, and it’s equally as tasty as much fancier dishes that require more work. All you need is a cut-up chicken, lots of onions, and garlic. And, of course, riesling. Serve the wine you cook with for dinner.
Serves four, takes about 90 minutes (adapted from Mark Bittman)
GROCERY LIST
1 whole chicken, cut into serving pieces with skin removed
1 1/2 lb onions, sliced
1 1/2 to 2 c riesling (not sweet)
1 Tbsp chopped garlic
2 Tbsp olive oil
salt and pepper to taste
1. Salt and pepper the chicken and brown it in the olive oil over medium heat, about 3 minutes a side.
2. Remove the chicken from the pan, add more olive oil if necessary and add the onions, salt and pepper. Cook for 15 or 20 minutes, stirring occasionally, until the onions soften. Add the garlic, stir and then add the wine, and bring to a boil.
3. Put the chicken back in the pan and bury it in the onions. Turn heat to low and cover. Cook until chicken is tender, 20 to 30 minutes. You can turn the chicken pieces over midway through cooking and add more wine if the dish seems dry. Serve over rice or noodles.

Halfway through dinner one evening,AshleyAustinjumpedup from the table and said, “I have an idea for a necklace!” She grabbed her supplies and locked herself in the hall bathroom to create her new jewelry design.
“I don’t like people to watch me work,” she says. “It creeps me out. I like it to be a surprise.”
The 13-year-old Preston Hollow resident has her own jewelry line, AZA Designs, but it’s not plastic beads on a string. Ashley’s handmadeworkissoldatRandom, theformerInwoodVillageboutiquethathassincemovedto Lakewood,wheresheattends school at St. Thomas Aquinas.
“Myfriendscallit‘Ashley’s store’,” she says with a smile. “It makes me feel special.”
Random ownerMarkHearne rememberswhenAshleycame into the shop two years ago, her mother shooing her over to the counter.
“Shehad a littlebagofstuff in her hand,” Hearne says. “She crept up to the cash register and said, ‘I sell jewelry. Would you like to see some of it?’ ”

“For a girl her age, the designs were well-thought out with great color coordination. I was immediately impressed by it,” Hearne says.“Itookallshehadwith her, and it started selling immediately.”
Self-taught, Ashley became serious about her craft in fifth grade. She sellsherpiecesfor about $15-$30, and it took a while to actually make money. So far, she has earned about $120 in profits, most of which go back into the business to buy beads and other materials.

“We never knew it would turn into a business,” she says.

To boost productivity and payback, McAllister employs his 5-year-old brother, Brodie, penning the name M&B Mail Service. The boys split the profits.
McAllister had been collecting mail for the family’s next-door neighbor, who suggested he start his own business.
“Once you paid him, the light bulbs went off,” says his mother, Rachel Hobbs. She and her husband Brian, a financial planner, say they try to teach their children to work for the things they want. They also have a 2-year-old daughter, Kennedy.
And it’s not just about working. It’s about saving money — not blowing it on candy. So Rachel and Brian came up with an incentive, agreeing to match every $20 that McAllister earns.
“I feel like kids are given a lot of stuff now,” Rachel says. “I
don’t want them to think that just because they ask for something, they get it.”
When he’s not making the rounds in Hillcrest Forest, McAllister attends St. Rita Catholic School and plays lacrosse. Sometimes he buys his own lunch or treats himself to a piece of candy at school.
“[The business] allows me to have my own money to spend,” he says.
McAllister says he thinks it will take one or two years to save up enough money for his iPhone.

Mallory and Abby Pratt have more business references than most college graduates. That’s because about two years ago, these savvy sisters took their routine babysitting to a whole new level, creating endless clientele.
“We had been babysitting for a long time,” says Mallory, 18. “It was sporadic, so we thought, ‘Why don’t we make this the real deal?’ ”
They sent email blasts to hundreds of their parents’ contacts, advertised in HOA newsletters near their Chapel Downs neighborhood and promoted the business at their church nursery. Soon, they had successfully launched Mallabbys, a baby, pet and house sitting service complete with its own website.
The girls admit that, initially, they weren’t thrilled about running their own business.
“We were terrified,” Abby says.
Abby has been babysitting her three boys who are 8, 7 and 4.
“From the minute she walks in, she gets a ball and goes outside to play,” Schumacher says. “She’s just fun. My boys ask for her all the time. I never for a second worry that my kids aren’t taken care of.”
Abby, 17, is a junior at the Cambridge School of Dallas. She plays volleyball and does costume, hair and makeup for the theater department. Mallory just finished her first year at Harding university, majoring in English and history. The girls are heavily involved in their church, The Branch at Vista Ridge in Carrollton, where they carry out their true passion — mission work.

They received an overwhelming response but, after some practice, they learned to balance the workload, which now averages to about two gigs a week. The girls’ success stems from their genuine interest in the children.
“A lot of babysitters think, ‘I’m just here in case something bad happens,’ ” Mallory says. “We are friends and mentors to the children, engaging with them. We want to brighten their day.”

“We love to travel, and this is our favorite way to do it interacting with so many different people, not for luxury but to do something good,” Mallory says.
Besides managing clientele, the girls have learned all about the financial side of business, too, realizing that it’s not so boring after all.
“We see that amount rise, and we get excited,” Mallory says.
While some high school-aged kids care mostly about parties and friends, Abby and Mallory see the bigger picture.
“This opens us up to other aspects of the world — to reality,” Abby says.

IT’S NOT REALLY ALL ABOUT ME
Graduation season has come and gone, and most all the commencement addresses have been delivered. They are an interesting genre of literature.
I’ve heard many of them, and even given a few. Often they include such well-worn epigrams as “graduation is not the end, but the beginning” or “treasure the good times.”
One of the more creative lines was delivered by Bill Cosby at an SMU commencement a few years ago. He said that there are three ways of graduating with honors: cum laude, magna cum laude and summa cum laude. Then he added, “When I graduated, it was ‘Thank you, Laude!’ ”
I can identify with that.
In a May 30 column in the New York Times , David Brooks reflected on such addresses. The title of his piece was, “It’s Not About You”. He began by naming some of the challenges new graduates face these days: lack of jobs, a “ruinous federal debt,” and lack of clarity about the future.
“Most will spend a decade wandering from job to job and clique to clique, searching for a role,” he added.
Brooks went on to say that one of the heaviest burdens carried by new graduates is, in his words, “baby-boomer theology.” Ouch. I’m one of those Boomers. Worse yet, I know already what he is referring to. Baby-boomer theology comes through in those all-too-familiar graduation addresses that say, “Follow your passion, chart your own course, march to the beat of your own drummer, follow your dreams and find yourself.”
Such individualism is “the dominant note in American culture.”
Brooks’ message — not only directed to new graduates, but all of us — is a call to think beyond ourselves, and to recognize that life isn’t primarily about us. As I think about this, it occurs to me that often the message of the culture is, “Find yourself, identify your passion, then go serve others.” The problem with that theory is that, most often, we do not find ourselves or d iscover our passions until we have
given ourselves away in service.
I have seen that time and time again. I’ve observed new college grads who were “at loose ends,” not knowing what they would do with their lives, volunteer for a year of mission in some needy part of the world. They usually come back fired up with a sense of high purpose and deep calling. They “found them-
selves,” not in philosophical navel-gazing, but in helping others. They got outside themselves and learned the important lesson that the world doesn’t exist to serve them — rather, it’s the other way around.
When my own daughter graduated, her university invited a remarkable commencement speaker, Desmond Tutu. His address was uncommonly brief. At the end, he said all that really needed to be said.
“You are probably wondering,” he said, “why, with all the suffering and trouble in the world today, why God isn’t doing something about it.” Then, after a grand pause, he added, “God is doing something. He’s sending you.”

The new location features Italian fare. “Everything is made fresh here, from the sauces to the crepes,” says co-general manager Chris Clark. “People love our homemade desserts — chocolate cake, tiramisu, strawberry cake, even our cheesecake is made in-house with an Oreo crust.” Menu highlights include Chicken Aboca, a pan-seared chicken breast stuffed with prosciutto, basil and provolone in a spinach cream sauce. Aboca’s is BYOB with a $1 glass fee.
The northwest corner of Preston and Forest recently welcomed the sixth location of the running store Run On! 1 (11811 Preston, 214.416.9978, runontexas.com). The new store will carry the same brands of running shoes and accessories as the other locations and will begin offering all levels of running classes in August.

Every Wednesday night, Chef Roger Mann creates a special menu within the theme. The restaurant has been poised to move in for more than a year now. After much ado, the wood-burning oven was finally delivered from Italy, and now the focus is on finishing out and staffing. fresh basil, extra virgin olive oil, Italian plum tomatoes and mozzarella cheese.
The North Texas Tollway Authority has officially closed the TollTagStore at 12300 Inwood, and much farther down the street, Le Creuset (5300 W Lovers, lecreuset.com) has opened a retail location at Inwood Village. The famous French cookware manufacturer will offer silicone tools, wine accessories and, of course, its much-adored bakeware and cookware.

Both MatthewTrent and OcchialiModernOptics will temporarily relocate within the center to make way for the construction of a parking garage and a five-story building that will house the new University Park Public Library on the second floor. “In order to get ready for changes that will expand our family of tenants and provide extra parking for our visitors, some of the stores will be relocating to new spots,” says Mike Geisler, partner

Eleanor Toomey cares for her elderly husband. He is 83 and is not in good health, she says. On the afternoon of May 6, she decided to take a quick trip to the pharmacy. While she was out, two men pried open her backdoor.
“My husband was home. He was asleep,” she says. “I didn’t want to wake him up, so

While he slept, the two men crept into the home.
“We have a sliding rear glass door, and they came through it into the kitchen,” Toomey says. “They just took a screwdriver and pried it open. They made a beeline straight back to the bedroom. They opened up a drawer and took all my jewelry.”
While the criminals rifled through drawers, Lawrence Toomey woke up, not realizing his wife has stepped out. He used a walker to make his way to the kitchen and sat down to drink a glass of water. Soon after, he witnessed the two men race out of a bedroom door off the patio.

“I’m just thankful he was asleep and really didn’t know they were here,” she says. “The police said since they targeted the jewelry, they were really professionals.”
Unfortunately, Toomey had been collecting jewelry for 60 years, worth thousands of dollars, and it is now gone.
Dallas Police Lt. Richard Dwyer of the North Central Patrol Division says his unit recently arrested a couple of men in connection with a string of residential burglaries in the area. One of the suspects admitted to the Toomey robbery, but had gotten rid of the jewelry, so it wasn’t recoverable.
Dwyer says there a number of ways to secure sliding glass doors.
“For extra security, homeowners can go to any home improvement store and look at the various locks and devices that will help secure a sliding glass door,” he says. “These items can range from key locks to screw-in blocks for the rail to poles or rods that will prevent the door from sliding.”
He also offered some tips on helping to identify expensive jewelry.
“It is a personal choice if [people] wish to place marks on their jewelry. Of course, many people have a name or words inscribed when given as a gift that helps with the identification,” he says. “Whether marked or unmarked, quality jewelry should be photographed and then kept with their home files. This may also help with issues from the insurance companies. Some burglars do know the difference between quality jewelry and department store jewelry, but the majority of the suspects grab it all since it is lightweight and easy to conceal.” —SEAN CHAFFIN
