COWS Creamery Grilled Cheese and Smoked Bacon Sandwich

unsalted butter (softened)

• 1 cup apple jelly

• 1 ½ lb smoked bacon (cooked in whole - slices, kept warm)

Generously coat each slice of bread in butter. Turn all the slices so the dry side is facing up. Cover this side with a generous layer of apple jelly. Cover every second slice with a layer of grated cheddar. Place 6 slices of bacon on the cheddar and follow with another layer of cheese. Place the remaining jelly-coated slices jelly side down on top of the cheese. There should be 8 complete sandwiches with butter on both the outsides. Heat a Panini grill, place each sandwich on the grill and close the lid. Cook for about 6 minutes until the outside is crisp and golden and the cheese is melted all the way through. If you don’t have a Panini grill, you can use a griddle or skillet, but you’ll have to carefully turn the sandwich over halfway through cooking.

Isle cheddar cheese, grated • Salsa, sour cream and guacamole - optional Heat a sauté pan over medium-high heat; add oil. Cook pepper for 4 to 5 minutes until softened & lightly browned. Add lobster and green onions and cook for 1 minute or until lobster is heated through. Remove pan from heat. Top each tortilla with half of the lobster mixture and cheese; fold in half. One at a time, return quesadillas to sauté pan over medium-low heat and cook for 2-3 minutes on each side or until golden brown, slightly crispy, and the filling is hot. Cut into thirds and serve with salsa, sour cream, and/or guacamole. Makes 2 servings. *About 1 cup of cooked lobster meat
