1/4 cup chopped green pepper 1/4 cup chopped onion 2 tablespoons margarine divided 3 cups cooked diced potatoes 2 cups cooked chopped ham 1/4 cup mayonnaise 1 tablespoon flour 1/4 teaspoon pepper 2/3 cup milk 1 cup shredded cheese
1 can cream of mushroom soup 1 can of cheddar cheese soup 1 cup sour cream 1/2 cup margarine, softened 1/4 cup chopped onion 1/2 teaspoon salt 1 28 ounce package frozen hash browns 3/4 cup crushed potato chips
Sauté green pepper and onion in 1 tablespoon margarine until tender. Combine potatoes, ham, mayo, and onion mixture in a bowl. Pour this mixture into a large baking dish. In a heavy saucepan, melt 1 tablespoon margarine and then stir in flour and pepper until smooth. Gradually stir in milk and bring to a boil and cook until thick. Stir in the cheese and when melted pour over the potatoes. Cover and Bake at 350˚ for 30-35 minutes. Serves 4-6.
Combine the soups, sour cream, softened margarine, onion and salt. Add potatoes and mix well. Pour into a 9x13 inch baking dish. Top with the crushed potato chips. Bake at 350˚ uncovered for 1 hour. Serves 8-10.
Baked Potato Topping 1/2 cup sour cream 1/2 cup chopped cooked ham 3 tablespoons grated Parmesan cheese 2 tablespoons mayo 1 tablespoon chopped green chilis 1 cup shredded cheddar cheese salt and pepper to taste Combine sour cream, ham, Parmesan cheese, mayo, chilies and salt and pepper and mix well. Spoon this over baked potatoes and top with shredded cheddar cheese. Return to the oven for 5 minutes or until cheese begins to melt. Makes enough topping for 4 potatoes.

ainbow colors, printed in several garden catalogs, have arrived at my door by now, and I suspect serious perusing of the same by all of you. Few are without the glitz of luscious hues and flowery forms. A picture might be worth a thousand words, but sometimes a few lines are sufficient. â&#x20AC;&#x153;J. L. Hudson, Seedsman*â&#x20AC;? sends a seed catalog with only brief descriptions and an occasional drawing. Lines of words are like furrows of possibilities. Rows of words grow imaginations, often more compelling than baring it all. Penning an order with only words to guide you is like casting a line into a sea of plants. Will the catch be perennial or annual; from tropics, mountains, or deserts; or an exotic vegetable from another culture? J. L. Hudson Seeds is a self-described â&#x20AC;&#x153;public access seed bank.â&#x20AC;? Reading the catalog is an armchair exploration of the plants of the world. there is a seed exchange. Read essays on seed starting, organic seed, native vs. exotic plants, ideas for science fair projects, and more. Sprinkled throughout are quotes and opinions, and now, with a website, some photos are accessible. On the possibility of words, Iâ&#x20AC;&#x2122;ve unearthed many unusual plants. Iâ&#x20AC;&#x2122;d not know Salvia azurea but for the Hudson company. Ruling with royal six-foot waves over the autumn garden, its azure blue dollops could turn even the non-gardener green. There is the tooabundant sushi plant called Perilla and a tall leafy thing with leaves that has the taste and al dente of spinach. I can never remember its name - red orach or Atriplex. Large Amaranthus with mops of maroon seed was the sustenance of the Aztecs and grows like wildfire once the soil heats up; two desirable forms are princeâ&#x20AC;&#x2122;s plume and elephant head. Angelica archangelica has the loveliest of names, but, in my opinion, purple Angelica gigas is a better ornamental. Granted, from hundreds of seed packets torn open over the years, many of the tiny mysterious embryos have been victims

of experiments. Over the years there have been abundant failures, not always because of my carelessness, neglect or lack of knowledge. Fringe cups and bear grass are only two. What ever happened to the Mexican turnip, St. Maryâ&#x20AC;&#x2122;s milk thistle and dozens of others? Some plants have been too successful, taking over like that well-meaning person in your kitchen. The forget-me-not blue of viperâ&#x20AC;&#x2122;s bugloss, Echium vulgare is hardly vulgar, but the presumptuous self-seeding could be so described. During the years at Perennial Passion we regarded it as â&#x20AC;&#x153;icky echium.â&#x20AC;? Brilliant orange hawkweed is its perfect complement, but this will travel beyond your kitchen and begin rearranging your furniture. But even pushy types have their good sides, and in this case, in addition to exquisite color, both plants produce abundant nectar for flavorful honey. And there have been some downright boondoggles. One year, carefully watched seedlings revealed themselves to be the same old weedy vine I continually pull from the neighborâ&#x20AC;&#x2122;s fence. Those

irresistible words again, they tricked me into adding bittersweet nightshade to the order that year. One year we tried a half dozen different species of tobacco plants to finally know their differences. Each had the characteristic huge tobacco leaves. The best was Nicotiana sylvestris topped with six-inch, very fragrant white tubes that drooped from fivefoot plants. Some seeded around for a few years, and on warm summer evenings, their fragrance could be enjoyed from several feet. I want them back, this time for good. Here are a few more to tempt you: Rocky Mountain bee plant, Cleome serrulata, the old fashioned, not-so-showy spider flower that drives bees wild; sweet little Moroccan toadflax; and golden jewels of Opar, which I always miss if I forget about it for even one year. Large glossy leaves provide the chartreuse color we like so much, and small rosy flowers follow on arching stalks. Lovage or Levisticum grows stalks some say are better in potato salad than celery, and true marshmallow plants are like tall hollyhocks with
smaller flowers. In-demand clusterhead pink was found in Hudsonâ&#x20AC;&#x2122;s, seldomlisted in other retail or wholesale plant catalogs. Aquilegia clematifolia, the clematis-flowered columbine was a discovery in the early â&#x20AC;&#x2DC;90s. There are so many morning glory and sweet pea choices. Would only one be enough? Hyacinth bean vine, Malabar spinach vine, Jobâ&#x20AC;&#x2122;s tears, and Mexican sunflower are plucked from the word rows too. While digging through old records for this monthâ&#x20AC;&#x2122;s column, nostalgia has been my companion. Unearthing these old friends from my database brought back the pleasure of growing them. AMIDON GRAVES MYSTERY About 200 yards southwest of this marker is the location long-supposed by historians to be the burial site of Judge Amidon and his son William, ambushed and killed by Santee Sioux warriors on August 25, 1862. The Sioux war party was under order to clear all settlers from the Big Sioux River valley. For decades the belief was held by many that the Amidons had been interred near where they fell. A linear earthen mound, about thirty feet long, eight feet wide, and four feet high, strewn with rocks and large boulders, was understood to mark their grave sites. In 1991 the Augustana College Archeology Lab was employed to excavate the presumed burial mound. A crew, led by archeologists Dr. L. Adrien Hannus and Peter Winham, methodically extracted nine soil core samples, dug four one-meter square excavations, and cut a twenty-one feet long backhoe trench. No evidence of human interments was found; only debris piled up by farmers for almost a century was uncovered. The location of the Amidon graves remains a mystery.
