opefully many of you took French in high school or else you may not be able to translate my title: No Sleep for the Wine Steward. And although it’s a French word, sommelier is actually in our American dictionaries; go ahead, look it up: “A waiter in a restaurant who has charge of wines and their service: a wine steward.” In fact, many top restaurants around the country employ Sommeliers as their Chief Wine Officer. In February, I had the opportunity to take the Introductory Sommelier Exam that was taught by the Court of Master Sommeliers. As a wine writer for this magazine for the last five years and as a restaurateur for nine years, I am proud to say that I passed!

There are four stages to attain the top qualification of Master Sommelier: Introductory Sommelier Course and Exam Certified Sommelier Exam Advanced Sommelier Course Master Sommelier Diploma Exam There are 96 professionals who hold the title Master Sommelier in North America. Of those, 81 are men and 15 are women. There are 167 professionals worldwide who have earned the title Master Sommelier since the first Master Sommelier Diploma Exam in 1969. I can’t tell you how thrilling it was to experience the two-day intensive course that was led by four Master Sommeliers from all over the country. They took me, and 39 other professionals from all over the world, through


a wine “boot camp,” teaching us everything from viticulture to winegrowing regions to spirits and beer. Here is what our two-day syllabus looked like: Quality of Wine and Perception of Taste Wine Production French Wines Champagne and Sparkling Wines German Wines Italian Wines Portuguese Wines Spanish Wines Sherry and Sherry Production Eastern European Wines

On top of all of the “academic” topics relating to wine, we blindtasted over 20 wines! Wines were poured for us whenever we had a break and left the room. When we’d come back, there would be two white wines and two red wines for us to decipher. Learning how to taste the Master Sommelier way was by far the most memorable and educational thing I have experienced with wine. I used to think that all you had to do was keep good tasting notes as you taste wine, but the methods they taught us were

very detailed; it was like analyzing wine using all of your senses. Starting with the visual presentation of the wine, to the aroma analysis, and then the palate examination to confirm what we smelled, the deductive tasting methods I learned are ingrained in my brain for a lifetime. It was truly a life changing experience. I would encourage anyone who is serious about honing their wine tasting skills to attend this class. Go to www.mastersommeliers. org for more details. So now that I’ve passed Level I, what does this mean? Does it mean that all of a sudden I have become a wine expert? No. This is yet another milestone in the development and evolution of my palate. he time is here to clear the dust bunnies and disinfect the grime left by winter. If our goal is to create a clean, safe environment for our families, why do we introduce chemicals and toxins into our homes in the name of cleanliness? We can simplify our cleaning routine for the love and safety of our families, our drinking water and the planet. By using environmentally-safer cleaning products or creating your own, you can make your home a true sanctuary that follows cleaning commandments that are gentle, green and simple. The new wave of “green” cleaning supplies offers an effective cleaning solution. Luckily, times have changed. Randy Reinartz, owner of Wayne & Mary’s Nutritional Center, admits, “In the past these cleaners didn’t always actually clean well, but now you don’t have to compromise.” Because consumers have demanded safer cleaning alternatives that work, the market has grown. The East Dakotah Natural Foods Co-Op has expanded their cleaning aisle to include new brands. They also offer dishwashing and laundry liquid in bulk, so you can fill up your own container to reduce the packaging waste associated with cleaning products. Whether you are filling a jug with dish soap or grabbing a cleaner off the shelf, your local health food stores offer many cleaning options I was very happy to discover. I decided to very non-scientifically test a couple of these “green” products. Mrs. Meyers Clean Day All Purpose Cleaner allowed me to use one product to wash my kitchen sink, countertops, bathroom and flooring. I noticed that unlike when I cleaned with my usual scrubs and sprays; my eyes didn’t water, my nose didn’t run and my fingers didn’t sting. Maybe my body was trying to tell me something. The scent in the air was not chemically harsh, but instead, light and lemony. I also gave Ecover Ecological Toilet Bowl Cleaner a whirl. It seemed to clean with a fresh piney scent. These are just a couple of the brands and products available. Even if you are just shopping at your local supercenter, you will find brand names offering products claiming to be “greener.” Don’t forget to look at the labels, however, just like we do on the breakfast cereal box to read the fine print. Cleaning products will be in the air your family breathes and on the surfaces they touch. An alternative to

For cleaning recipes I turned to a wonderful book I was given with tips for “green” cleaning everything from kitchens to cars to furniture. The simple combo of 1/2 water, 1/2 vinegar didn’t leave streaks on my bathroom mirror or windows – and that sharp scent vanished soon after cleaning. To create my own all purpose cleaning solution, I combined the following in a spray bottle: 1 c water, 1/2 c vinegar, 1/3 c hydrogen peroxide, 1 tsp peppermint castile soap, 10 drops tea tree oil, and 15 drops lavender essential oil. This solution seemed to do the trick on my countertops and cooktop. Find what works for you. Even my sweetheart created a paste of vinegar and baking soda to scrub his toilet bowl to sparkling perfection when he was out of cleaner. Now I know he can clean. Just be sure to label any homemade cleaning solution and keep out of reach of children and animals. By simplifying the cleaning products we keep under the sink, we can create a safe haven filled with fewer harsh toxins and chemicals. With a few products from your local supermarket and natural foods store, you’ll have what you need to make this a clean start. As you’re scrubbing away, avoid paper towel waste by using rags, old T-shirts or even the biodegradable bamboo towel I found at Meadowsweet Natural Health Market. While I still may have an allergic reaction to cleaning; it won’t be to the bleach, ammonia or other chemicals I can’t even pronounce in my old arsenal of cleaning weapons. As we celebrate Earth Day April 22, let the clean up start at home. think pies have a way of conjuring up a homey image and feeling. I don’t know about you, but I’m impressed by the effort that goes into serving a mouth watering piece of homemade pie. All these recipes are very quick and simple to make — thus allowing you more family time. I wish you all a very Blessed Easter. My husband and I have been blessed with our first grandchild, baby Nicholas. Nana and Papa McClure love you sweet baby.

Cheese Cake Lime Pie 8 oz. softened cream cheese 14 oz. sweetened condensed milk 1/3 cup lime juice 1 tsp vanilla 9 inch graham cracker crust 8 oz. carton frozen whipped topping, thawed lime slices for garnish Beat cream cheese until smoooth and then add milk, lime juice and vanilla and continue to beat until smooth. Pour this mixture into the graham cracker crust and refrigerate for 2-3 hours before serving. Garnish with the lime slices.

Easy Creamy Chocolate Pie 8 oz. package softened cream cheese 1/4 cup margarine, softened 1/3 cup sugar 1 tsp vanilla 1 1/2 cups milk chocolate chips — melted and cooled 8 oz. carton frozen whipped topping, thawed 9 inch graham cracker crust cherry, raspberry or strawberry pie filling for garnish Beat the cream cheese, margarine, sugar and vanilla until smooth. Now beat in the cooled and melted chocolate. Fold in the topping and spoon into the crust. Chill for 2-3 hours before serving. Garnish with topping of your choice.

Individual Cherry Pies 6 ounces cream cheese softened 1/2 cup powdered sugar 1/2 tsp almond extract 4 individual graham cracker tart shells 1/2 cup cherry pie filling Beat the cream cheese, sugar and extract until smooth. ompared to a prairie it was foreign territory. I once hiked there, dodging colonies of red trillium along a babbling brook that tumbled from an Appalachian mountain. If a few days earlier, it would have been bare above and bare below, but spring had arrived in Virginia, and while the higherup hardwoods were still naked, two native understory trees, redbud and flowering dogwood, were surprisingly heavy with flower. Their brilliant fuchsia buds and glowing white scallops sprinkled the gray hillsides over hundreds of square miles. Soon after that colorful spring near the eastern coast three decades ago, the same fuchsia glow of eastern redbud (Cercis Canadensis), albeit scant, surprised me in Sioux Falls, and, as Willa Cather wrote about rare trees in My Antonia, “…we visited them like they were people.” (Others rare trees Sioux Falls tree aficionados seek out include ginkgo, sassafras, beech, hickory, tulip tree, and red oak).

Directly south of their two-story walkout, it had matured to well over sixteen feet and stretched above the upper eave. A few others bloomed on the east side of the University of Sioux Falls (then Sioux Falls College) between 22nd and 26th streets. A spectacular gnarly specimen grew near a vintage ranch style in the northeast corner of the city. One presumed that it had grown there since the house was built, probably in the sixties. After my Northern Carolina exposure back in the eighties, I planted a redbud trio in our backyard, sited on a shady slope under large old black locust trees (Robinia). From these three trees and thirty years, I have shared abundant seedling trees with friends and neighbors. The redbud is an adaptive small tree that grows quickly when young, slows after ten years, and matures at twenty to thirty feet. It is well suited to growing in groups or as a single specimen in a flowerbed. They grow in full sun to partial shade in well-drained soil but adapt to many soil types except those that are continuously wet. They flourish in cooler soil, under the

canopy of taller trees. Where soil is cool, moisture lingers and blossoms last longer. In late April or early May, while tiny leaves are still tucked away, redbud branches debut day-glow pink buds, then flowers, shaped like sweet peas. The plant is in the pea or legume family, and flowers have different shaped petals named for their resemblance to parts of birds and boats. There is a central banner or sail, two wings, and two protruding lower keels. It is all quite technical: when a nectar seeking-insect lands on the keels, they are weighted downward to expose hidden treasure stamens tipped with golden pollen. Crabapple blossoms often erupt the same week that redbuds flower. Unfortunately, spring winds have their way with crabs and pink petals might carpet the driveway within two or three days, while the brilliance of redbuds rewards us with another two weeks, a total, sometimes, of three plus weeks from first color. A couple of weeks after buds begin to radiate their brilliance, tiny heart-shaped leaves finally expand, and flowers begin to fade. At full size, leaves are large hearts that dangle from stems like paper cutouts. Thin pea pods sometimes develop by late summer.

Redbud tree, Cercis Canadensis

There are a couple of caveats to my enthusiasm for redbud trees. In our climate, winter temperature fluctuations occasionally kill flower buds and sometimes, entire branches suffer dieback. One of my earlier planted trees, while still very young, was lifeless one spring – no brilliant buds, no heart-shaped leaves, and no green layers beneath the bark.

But in zone 4, lifeless doesn’t always mean graveyard dead; I practiced the wait-and-see approach. By mid-summer a single gangly branch grew from the root, which I secured upright to the lifeless trunk. Within two years, I was challenged to determine which tree had started over. This type of tree resurrection is possible because redbuds are not grafted, rather grown from seed and have their own true roots. Not everyone has this problem, but my redbud leaves are often infested by annoying aphids by mid-summer, resulting in a white mottling along the veins. I’ve never treated them, for I care too much about the health of the birds – and humans - and the plants seem to prosper in spite of the insects. Others have noted the redbuds susceptibility to herbicide drift. While most sources suggest Eastern redbud hardy north only as far as zone 5, my now-old redbuds were purchased from an Iowa mail order nursery, because local nurseries then rarely offered them. Redbuds are now available from northern sources, developed from the seed of redbud plants that have shown greater hardiness. When choosing one for your own yard, ask for those specified as Northern, Minnesota, Wisconsin, or Columbus Strains.

he largest city in the state of Maryland, Baltimore is the perfect destination for shopping, entertainment and relaxation. In fact, following New York City, it was the second city in the United States to reach a population of 100,000, followed by New Orleans, Philadelphia and Boston. As a major U.S. seaport, the city is situated closer to major Midwestern markets than any other major seaport on the East Coast. Frequently called a “city of neighborhoods,” there are over 300 identified districts in Baltimore occupied by a variety of ethnic groups. Some neighborhoods are more popular than others to visit, with attractions such as the National Aquarium, Oriole Park at Camden Yards, and the American Visionary Art Museum. Little Italy is one of the city’s busiest restaurant districts. A large number of Italian immigrant families moved to this area during the 20th century, and still to this day is home to a large Italian community. Little Italy is only a few blocks from the Shot Tower, which was the tallest structure in the United States when it was completed in 1828. It was originally known as the Phoenix Shot Tower, then the Merchants’ Shot Tower, and now is called the Old Baltimore Shot Tower. Each summer, free outdoor movies are projected onto a wall at the intersection of High and Stiles streets at a film festival hosted by the Little Italy community. Mount Vernon is a neighborhood full of culture and art, and

M&T Bank Stadium and the Oriole Park at Camden Yards are within walking distance of the harbor, and a water taxi connects to Fells Point, Canton and Fort McHenry. Oriole Park at Camden Yards is a ballpark completed in 1992 to replace Memorial Stadium. It is home to the Baltimore Orioles and is the first of the “retro” major league ballparks constructed during the ‘90s and early 2000s. It is one of the most highly praised and is typically known in short as “Camden Yards.” The scoreboard in center field advertises The Baltimore Sun. In order to show a scoring decision of a hit, the “H” in “The Sun” will flash, and the “E” will flash to show an error. Also located in the Inner Harbor is the National Aquarium in Baltimore. With an annual attendance of nearly 1.6 million, this public aquarium has a collection of 16,500 specimens of 660 different species. Named the number one aquarium in the U.S. in Coastal Living Magazine in 2006, it is widely considered to be one of the best in the United States, if not the entire world. A rooftop rainforest, a multiple-story shark tank, and a beautiful dolphin display are only a few of the breathtaking scenes you will find while visiting the National Aquarium in Baltimore. Fells Point is a waterfront neighborhood in Baltimore that was once featured in the movie Sleepless in Seattle. Home to the greatest concentration of restaurants, coffee shops, music stores, and pubs in the city, which line cobble stoned streets, this neighborhood is famous for its maritime past. It is one of several areas in and around the city of Baltimore that is listed on the National Register of Historic Places. In order to be listed on this register, an area must be acknowledged by the government as a historic district, site, building or property. Hampden is considered the hip neighborhood in Baltimore and is often overlooked by tourists because of its location off of the waterfront. With a main shopping street stretching about a half a mile and packed with locally owned and independent shops, restaurants and boutiques, Hampden gives out a funky vibe. It is also home to the annual June celebration called HonFest. A local tradition, Hon is named after the term of endearment, “honey”, and the celebration honors the warmth and affection given to neighbors and visitors alike by historic workingwomen in Baltimore. Since 1994, HonFest has grown into a nationally recognized festival and covers four city blocks on Hampden’s main shopping area, 36th Street. The women participating in the festival are a vision of the sixties-era, with beehive hairdos, blue eye shadow, and leopard print spandex pants. With so many neighborhoods and attractions, a visit to the city of Baltimore will be unforgettable. No wonder it is also known as “Charm City”.

In actuality, while not as painful as a burn, tanning damages the DNA in skin cells. Tanning is evidence of skin damage, not skin protection. Tanning beds are no safer than tanning in the sun. “There is no safe way to tan,� Dr. Johnson said. If you feel you must have a tan, consider a sunless self-tanning product.

While tanning can result in premature aging of the skin and injuries including sunburns, infections and eye damage, the greatest risk is skin cancer. Skin cancer is the most common malignancy in the United States. One in five people will have skin cancer sometime during their lifetime, with about 1.3 million new cases diagnosed each year. The “Big Three� skin cancers are basal cell carcinoma, squamous cell carcinoma and melanoma. Basal cell cancers, the least serious type, account for 80 percent of skin cancers. Another 15 percent are squamous cell carcinomas, which are also not typically dangerous, but can spread. While only 5 percent of skin cancers are melanoma, this type is the most serious and can be life threatening. More intense ultraviolet rays due to the earth’s depleted ozone layer can be blamed for the upswing in skin cancer, but also Americans’ obsession with tanning. “We’re a very beauty-driven society and we equate tan with beauty,� Dr. Johnson said. Women often believe tanning hides their imperfections. “But the truth is, it’s causing a lot more damage than it’s covering up.� Cancerous spots on the skin can be removed surgically. But when melanoma spreads to lymph nodes or other organs, chemotherapy and radiation are not effective against it, Dr. Johnson said. Although skin cancer typically strikes in people age 40 and older, Dr. Johnson said she’s seeing more and more cases in

people in their 20s and 30s, and even into the teen years. The best ways to guard against skin cancer is the use of sunscreen, sun-protective clothing, and avoiding prolonged exposure to the sun during the most intense hours of the day, 10 a.m.-2 p.m. Sunscreen should be at least 30 SPF. Sunscreen takes about 20 minutes to become effective, so put it on before leaving home rather than waiting until you’re out in the sun and feeling the intensity of the rays. The newest products are broad-spectrum sunscreens, protecting against UVA and UVB rays, whereas typical sunscreens only protect against UVB rays. “The biggest mistakes people make in using sunscreen is not putting on enough, and not reapplying often enough,� Dr. Johnson said. Because people typically get 80 percent of their lifetime exposure to UV rays by age 20, it’s important to protect children and teens – by being diligent about sunscreen use and not allowing tanning bed use. Being smart about tanning and sun exposure now can help guard against skin cancer and premature aging in later years. “What you do during your teens, 20s and 30s will matter in your 40s, 50s, 60s and 70s,� Dr. Johnson said. Fertile Hope is dedicated to providing reproductive information, support and hope to cancer patients and survivors. “Cancer fighting treatments continue to advance, but many patients are still faced with infertility or even sterility after their treatments are complete,” says Maria Bell, MD, a gynecologic oncologist with Sanford Clinic Women’s Health. “While several fertility preservation options are available before or after treatments, they are often underutilized due to lack of awareness or financial resources.” According to Fertile Hope, there are more than 130,000 newly diagnosed cancer patients each year who are in their reproductive years. Through the Fertile Hope affiliation, physicians offer discounted fertility services for cancer patients along with detailed information about their fertility preservation options. “We have a growing range of options available for men, women and even children undergoing chemotherapy, radiation or surgery,” says Keith Hansen, MD, a reproductive endocrinologist with Sanford Clinic Women’s Health. “People faced with cancer treatments need to know there is hope of

having a family after they survive cancer.” In addition to robust programs in areas of awareness, education and support, Fertile Hope operates the only fertility preservation financial assistance program for cancer patients, including a program for men to help reduce the cost of sperm banking. Fertile Hope was founded in 2001 and is a national, nonprofit organization dedicated to providing reproductive information, support and hope to cancer patients and survivors whose medical treatments present the risk of infertility. The organization was created by cancer survivor Lindsay Beck as a result of her efforts to preserve fertility in the face of her cancer treatments. Physicians across the state are actively involved in fertility preservation for South Dakota’s cancer patients. Through the use of telemedicine, local specialists are able to consult with cancer patients to immediately engage in fertility-saving procedures. Through telemedicine and same-day consultations, fertility can be considered without delaying vital cancer treatments. pring is just around the corner, and flowers are one of the most popular symbols of the season. People associate flowers with weddings because they have been a longtime tradition and symbolize love and romance. However, there are some reasons why a bride would want to consider an alternative to having fresh flowers in her wedding. If the bride or others in the wedding suffer from allergies, it would be difficult to have irritated eyes and sneezing during the big day. The bride should be the center of attention, not the allergies. Of course, there are alternatives to using fresh flowers, with artificial flowers being the first to come to anyone’s mind. These are no longer plastic and tacky, and are now available in some very realistic looking varieties. Ready-made bouquets are available to purchase, or money can be saved by picking out arrangements from craft stores and making them yourself. Silk flowers are a great way to avoid any unwanted allergies, as well as save money when there is a tight budget in the way. Silk

flowers also last long after the wedding day. They also eliminate the stress of worrying about the flowers being ruined, and silk wedding flowers can be ordered ahead of time in order to make sure the right ones arrive on time. To fool the guests, silk wedding bouquets and decorations can be sprayed with a floral fragrance; many people won’t even notice the difference! If you still want the effect that flowers give, but don’t want to do the traditional look, there other alternatives to try. Several retailers are now offering stunning porcelain or crystal flower arrangements that will last a lifetime. These are classy and different, but aren’t the best way to save money if you are on a budget. If you do choose to go porcelain or crystal, matching corsages and other accessories would make wonderful keepsakes from your wedding day for those who were involved. Paper, fabric, or ribbon bouquets are all the rage with crafty people who have the time and concentration to be able to create fun arrangements from colored paper, fabric and ribbons. Inexpensive

Another crafty idea: a beaded bouquet can also be a way to create the same colorful effect with some sparkle. A simple wrist corsage instead of an elaborate bouquet of silk or fresh flowers could also be a great way of saving money. To create a fuller look, tie ribbon or greenery around it and let it hang down. Skipping fresh flowers doesn’t necessarily mean you have to skip fresh plants. Beautiful greenery may be an interesting touch to your wedding, with textured leaves and bright green colors that take up plenty of space where dÊcor is needed. Depending on the season, you could choose fall leaves, ivy, pussy willows, and more to use alone or in order to enhance your silk bouquets. Besides carrying traditional looking bouquets, there are many alternatives. Bridesmaids are beginning to carry a variety of things, depending on the season and time of the ceremony. These alternatives could save you a lot of money, which could be put towards other parts of the wedding or the honeymoon. If you do not have a budget to worry about, alternatives to bouquets are still a unique way to express yourself, and you could still spend the money on some fancier alternatives.

Feathers also make a great decoration for fans, including peacock or ostrich. Parasols have also become increasingly popular for wedding parties. They look great in pictures and also shield from the sun on a hot summer’s day. After the wedding day is done, those who were part of it will always have the parasol to remember what a unique time it was. Of course, these won’t work for every kind of wedding and it all depends on the time and place of the ceremony. Balloons could also be a nice touch to a wedding. If balloons for the bride and bridesmaids seem odd, then consider them for the children involved. Flower girls and ring bearers with balloons in the wedding colors tied to their wrists will make them cuter than before, as if they even needed more cuteness to begin with! Balloons also make for fantastic photos. Faux fur muffs are another great alternative for the bride and bridesmaids to carry while coming down the aisle. These are super cheap if you buy the fabric at a craft store, yet look very fancy for a winter wedding. Another accessory to consider is a decorated clutch or handbag, which could also double as a gift. If you are getting married in a tropical location, seashells can make great bouquets, especially on a beach. Seashells also accent flowers very well when outside surrounded by sand and water. Whatever the bride carries down the aisle with her should be special and dear to her heart. She may consider carrying a Bible or a book with a fancy bookmark with ribbon or tassels. Candles can also be carried by the bride and the bridesmaids. As long as everyone is careful, the glowing effect of candles can add a very nice touch to an evening wedding. Lanterns are another option for creating a warm glow and replacing bouquets during the ceremony and the reception. As you can see, you have plenty of things to consider when it comes time to think about your wedding “bouquets�. Just remember that fresh flowers are not the only way to represent love and romance at your wedding.

A

traditional roll commonly called “buns with the hats” was given to Janelle Moe through her twenties by her mother as she’d bake. Moe entered her thirties with a family and wanted to learn how to make Zwieback on her own. The history’s found in cookbooks covering a century of ethnic foods, with Moe’s spanning 1874 to 1974. Some Mennonites learned to make Zweiback when residing in Russia, making them in bulk for immigrating to America. They were dried, toasted and packed in wicker trunks to eat on the ship as they traveled. Moe herself will bake six dozen Zwieback for Schmeckfest on March 27th & 28th and April 3rd and 4th in Freeman, where she was raised. She is keeping the baking tradition alive for the celebration which presents many of these unique foods. WHAT DO YOU REMEMBER ABOUT LEARNING TO MAKE ZWIEBACK? I remember watching my mom make it when I grew up. But when I learned, it was a challenge to keep the tops from falling off. I remember baking them for a potluck and seeing a young girl, about twelve years old, go to eat hers. She picked it up, and it was as big as her face. Even though they tasted great, I thought to myself, “That’s not how they’re supposed to be.” It was horrifying at the time, but it takes practice to get the method down. CAN YOU DESCRIBE THE PROCESS FOR MAKING THESE ROLLS? The secret is to let the dough rise and not dry out. You can’t rush it – Zwieback takes a little patience. Another hint is to use shortening; not margarine or butter. Then, you make about thirty-four balls of dough the size of a small egg, and roll the second round for the tops about the size of a walnut. I take the dough like a “c” in my hand and roll it around to make the ball. Then you let them sit separately for thirty minutes until you put the top on and seal it together. This step has been described as putting “the belly button on.” This is where my daughters have been involved – it’s basically poking the bread down with your index finger, and they think it’s fun. WHAT HAVE YOU DISCOVERED AS YOU’VE MADE THESE TRADITIONAL FOODS? First I’ve found that people like foods that are homemade. For some, there’s comfort in knowing they are eating something

they watched their grandparents bake. There are changes I’ve made to suit preferences in my own family. My husband loves blueberries in his kucken, so even though I didn’t see that variety growing up, now I’ve made it. We even vary on the temperature we like it – anything from partially frozen to hot. It’s interesting how much baking and cooking are forms of art. STEPS TO MAKING ZWIEBACK AT HOME: Scald 2 c. milk and cool to lukewarm. Add 1 pkg. dry yeast and 1/4 c. sugar; dissolve. Add 1/2 c. shortening, 1 t. salt and 3 c. flour, to make a cake-like batter. Beat well, add a cup of flour at a time until you have kneaded a smooth dough (2 1/2 to 3 more cups). Place dough in a bowl and cover with a dishcloth, allow to rise until doubled in size, about 1 hour. Punch down and form dough balls. Pinch off small balls the size of a small egg (approximately 34). Make another 34 the size of a walnut. Let the dough rise again for 30 minutes covered. Place small balls on top of the larger buns and press down using your index finger. Bake at 375 degrees for 20 minutes.

pril showers bring muddy paws at my house. As the weather gets warm, not only do we get spring fever, but so do our pets. There are a few simple things that we need to keep in mind to keep them safe. These are the times that our pets may decide to go on a trip without us. Make sure that your fences are in good repair and that the gate latches are working. It is also important to keep their leashes on whenever you are out of the house. Too often the best trained pets cannot resist the temptation to chase a rabbit or the neighborhood cat. We also need to make sure that our pets are in shape. It is not uncommon that pets will get muscle strains, blisters on their pads or overheat on the first few walks or play dates. Start slow and keep them on soft surfaces. Also pay close attention to how hard they are breathing. Are they tiring and do they need shade?

Do not let them drink out of puddles or ponds. They can consume water contaminated with bacteria or giardia that will cause diarrhea. Always take clean water along and give them regular breaks to cool down. Those heavy winter coats can be a burden too, so look for shade if needed. As soon as the temperature is above 50 degrees, the ticks and fleas will become active. In our part of the country, Frontline or Promeris are the best products to keep them and us safe. It is much easier to prevent fleas than to rid your house of those pesky little insects. We also need to keep the ticks away to help prevent Lymes disease. It is also important that we check your canine friend for heartworm. Heartworms are transmitted by mosquitoes from dog to dog. A single dog can transmit heartworm to 500-1000 dogs in a single summer. Even if your pet only spends a small

amount of time outdoors, the mosquitoes are still able to pass it to them. It only takes one bite. The new medications that protect against heartworms are safe, easy and very effective. When our pets live so closely with us, we need to be aware that some internal parasites can be transmitted to us or our children. If you are working in the yard, keep the pets away from any power equipment. We also need to put them in the house if you are fertilizing or spraying chemicals in the yard. They can be harmful and irritating to them. We also do not want them to eat or chew on seeds or bulbs that can be poisonous. HISTORICAL MARKER

Representative Royal C. Johnson was born in Iowa in 1882. His family moved to Dakota Territory one year later. He graduated from the law department of the University of South Dakota in Vermillion in 1906 and practiced law in Highmore and Aberdeen. He was the Attorney General for South Dakota from 1910 to 1914. Johnson was elected as a South Dakota Representative to Congress eight successive times from March 4, 1915, to March 3, 1933. After leaving Congress, he practiced law in Washington, D.C. until his death there on August 2, 1939. He was buried in Arlington National Cemetery.
