tep across the threshold of Crawford’s Bar & Grill and you will see the original 1960s logo of the clothing store once owned by Andrew Crawford. Keeping the location’s namesake is just one piece of historical preservation in this new upscale restaurant and bar in downtown Sioux Falls. “This was the former Johnson Shoes location,” says owner David Graham. “Last summer, my wife and I were across the street

and thought, ‘that would be a great place for a restaurant.’” Graham says his own vision, along with his wife’s vision, combined to create a unique dining experience. Beneath the sheetrock and carpet, they found century-old quartzite and brick walls and original hardwood floors. To these historic features, they added an eclectic collection of items – from a cowhide paneled bar and Moroccan chandeliers to reclaimed wood tables and hand-jeweled wallpaper.

And, that is easy to do, with oversized chairs and couches and beautiful floor-to-ceiling draperies that create intimate seating areas. Crawford’s offers a full bar, with a lounge area in the front of the restaurant, and a formal dining area in the back available for lunch, dinner or to rent for private parties. Whether you stop in for lunch or dinner, the diverse menu offers something for everyone. Lunch choices range from salads and classic sandwiches like a turkey club to their own special versions of the burger, Cuban sandwich or fish tacos that feature beer-battered walleye and a southwestern aioli sauce. Start your dinner with one of the many delicious appetizers such as apple wood smoked wings, a variety of flatbreads or Crawford’s escargot that features basil and garlic infused butter topped with puff pastry. After that, you may wish to try the 7-Onion soup with melted Gruyere cheese or an entrée salad with steak or salmon. The steak is what Graham hopes will strike a chord with diners. “Our goal is to hear people say we have the best steak in town,” he says with a grin.

There are several cuts to choose from – the New York strip, tenderloin or ribeye – or the specialty cuts such as the 24-ounce cowboy cut, bone-in ribeye or the 24 ounce Presidential Porterhouse. For something a little different, you may want to try the Meatloaf Napoleon, hand-rolled Cannelloni, grilled lamb chops or the Deconstructed Pork Wellington. The latter features pork loin on a mushroom duxelle with mashed potatoes, puff pastry points and a Gouda cream sauce. No meal is complete without dessert, of course. Crawford’s signature dessert is S’mores roasted tableside. They also offer Crawford’s Foster, billed as bananas foster with a “Crawford’s surprise twist.” At Crawford’s Bar & Grill, great care and detail has obviously gone into the décor. The same care and attention to detail is apparent in the menu. They have a good combination going in their establishment, which opened on April 1 – a fun and funky atmosphere with a friendly, attentive staff. Graham has been in the restaurant business before. When asked why they chose downtown for this new venture, his reply was quick. “Downtown is really the heartbeat and pulse of the city, and we knew this is where we wanted to be.”

Student Portfolio Design Show & Fashion Runway Event

he interest in design careers is greater than ever. At the Institute of Design & Technology of SD, they have been preparing traditional and non-traditional students for entrepreneurial design professions. IDTSD provides affordable career development in areas where geographical obstacles once made it impossible for those living in our region. They also provide summer design exploration sessions to creative thinking students, grades 6 through pre-college with their Project: Design Boot Camps. This past year, the Institute was honored with a Governor’s Economic Development Award for their vision of educating and development of careers for creative individuals in our state. IDTSD will be showcasing their graduating interior students’ portfolio design show and fashion student’s runway showcase for graduation at the Museum of Visual Materials on Thursday, May 26. They will also be displaying the work of the recipients of their 2011-2012 Scholarship awards.
The Institute of Design & Technology has Project: Design Scholarships available to high school seniors and non-traditional graduates with a passion for design are encouraged to submit an entry. A total up to $10,000 will be available for scholarships for the 2011-2012 year in their Interior and Fashion Design programs. Scholarship application ends in early May. e wanted to create a space where we could relax and unwind,” Jim Sandborn told me as I toured the Sandborn home. The inviting executive ranch walkout in the Heather Ridge neighborhood is home to Jim, his wife Ashley and young daughter, Lauren.

The lower level has a huge family room, a bar, and two bedrooms. While Ashley was pregnant, Jim worked on framing a fifth. The view through the large windows is breathtaking. Ashley’s office also takes advantage of the light with large windows and French doors. A step ceiling, geometric rugs, and bold red artwork echo the geometric shapes found in wall art, built-in features, rugs and accessories.

Ashley has incorporated special personal touches in her artwork, including graphic art in Lauren’s room. This piece, inspired by a song her mom used to sing for her, reads, “You Are My Sunshine.” “It’s the first thing I bought for the nursery, and I sing it to Lauren every night,” says Ashley. Proud father, Jim, adds of the furnishings, “We checked Consumer Reports for safety. These are the safest baby things around!” Family is clearly important to the Sandborns. “We have photos of family all over,” says Ashley.

No-Guilt Chocolate Cake
Peanut Butter Snack Cake
1 package chocolate cake mix 1 package (2.1 ounce size) sugar free instant chocolate pudding mix 1 3/4 cups water 3 egg whites
1/2 cup creamy peanut butter 1/4 cup of butter, softened 3/4 cup sugar 2 eggs 1 1/2 cups flour 2 tsp baking powder 1/4 tsp salt 3/4 cups milk
Frosting: 1 1/4 cups skim milk 1/4 tsp almond extract 1 package (1.4 ounce size) sugar free instant chocolate pudding mix 8 oz. carton frozen reduced-fat whipped topping, thawed In a large bowl, combine the cake mix, pudding mix, water and egg whites. Beat on low speed for 2 minutes. Pour batter into a 10x15 inch greased baking pan. Bake at 350˚ for 12-18 minutes or until toothpick inserted in the center comes out clean. Cool before frosting. For the frosting, place milk and extract in a large bowl and sprinkle with 1/3 of the pudding mix and let stand for 1 minute. Whisk the pudding into the milk. Repeat this twice with the remaining pudding mix. Whisk pudding 2 minutes longer...and let stand for 15 minutes. Fold in the topping and frost the cake. Store in the refrigerator. Serves 16.
Frosting: 1/3 cup chunky peanut butter 3 Tbsp butter, softened 3 cups powdered sugar 1/4 cup milk 1 1/2 tsp vanilla In a medium size bowl, cream the peanut butter, butter and sugar. Add eggs and mix well. Combine the flour, baking powder and salt and mix well into the creamed mixture. Pour into a greased 9x9 inch baking pan and bake at 350˚ for 30-35 minutes...or until inserted toothpick comes out clean. Cool before frosting. For the frosting, cream the peanut butter and butter and then add sugar, milk and vanilla. Mix until smooth and frost the cake. Serves 9.
Margo Bars 1 cup margarine 3/4 cup sugar 3/4 cup flour 2 Tbsp cocoa 2 eggs Mix all ingredients and bake at 350˚ for 15 minutes in a 9x13 inch pan. Remove from the oven and cover with mini marshmallows and return to oven and bake for 3-4 minutes. Cool for an hour.
Melt: 1 cup milk chocolate chips 1 cup peanut butter And then add 2 cups rice crispies to this mixture and spread over the bars. Cool before cutting.

ccording to the calendar and the television weathermen with freakishly perfect hair, the first day of spring (or the vernal equinox, as they pompously refer to it) happened on March 21. But as I recall, it was a cool and dreary day here in the Sioux Empire. It certainly wasn’t a day that screamed “spring!” As far as I’m concerned, the first signs of spring have little

to do with dates on the calendar or seeing the first robin of the New Year. To me, the season begins when the first tender stalks of asparagus push through the newly-thawed ground. I will be there in the early morning hours of the farmer’s markets looking for the first harvests. Then and only then will it truly feel like spring. of spring, the Falls Park Farmer’s Market opens May 7. That is another good sign of the season.) I know people who travel the back-roads and byways to carefully-protected and undisclosed locations each spring to pick stalks that grow in ditches and around abandoned farm houses. Armed with a pair of garden shears, a plastic bag and a good sense of direction (or a maybe a GPS) they return each year to clip their prize. Although I really like asparagus, I have never been lucky enough to stumble upon one of these hidden patches of green goodness. And those who know the location of the growths aren’t sharing. Alas, I have to either count on their over-abundance or the farmer’s market. Once you’ve located fresh, tender asparagus, it is versatile, easy to prepare and the humble stems can brighten up anything from salads to pastas to risottos. The most common preparation is steaming gently; the kitchen supply stores will even sell you a special tall, skinny pot made just to steam the spears while keeping the tops out of the water. But since spring also brings the beginning of grilling season, that’s where much of my mine will be cooked. Asparagus, when steamed or lightly stir-fried, has a sweet and grassy taste. But roast or grill those same spears and the flavor becomes much richer and nuttier. Just be careful not to let them get too charred or they get a little bitter. My alltime-favorite is to wrap bundles of asparagus in thinly-sliced prosciutto. If they are pencil-thin, I’ll put 5 or 6 in a bundle, if thicker I’ll wrap 3 stalks at a time. Drizzle with olive oil and sprinkle on some fresh-cracked pepper (the prosciutto brings the salt) then grill for 3 to 4 minutes on each side. If you do it right, the bundles will stand up like proud little soldiers on the edge of the plate. And that, in my humble opinion, is just about as good as a vegetable ever gets. Asparagus isn’t the only thing that appears only in the spring; morel mushrooms and ramps (sometimes called wild leeks) are even more prized springtime treats. A few specialty stores like The Food Co-op and Look’s will occasionally get fresh morels and ramps. Don’t be shocked when your see the price...these little morsels can be expensive. Despite the cost, when they come in, they will likely disappear fast, so you’ll want to signup for email alerts or watch Facebook postings for their arrival. I’ve been known to leave the office early and change dinner plans when the first of the spongy morel mushrooms arrive; simmering them gently in butter, served atop a medium-rare ribeye. The rare little honeycomb-like mushrooms are notoriously hard to cultivate, but they grow wild in wooded areas throughout our area. Consequently, if you’re a brave soul, you can find your own under oak or elm trees in shelterbelts or parks. But don’t bother asking where to find them, morel hunters will take their favorite hunting spots to the grave or pass them down like cherished heirlooms.
“...a flask of perfume.” A flowering perennial, asparagus is a cousin of onions and garlic. And while the onions make you cry and the garlic will give you foul breath, asparagus has its own downfall; it makes your pee smell funny. Some claim it doesn’t affect them, but scientific studies have shown it happens to all of us (some just can’t smell it). My parents thought I was nuts when I mentioned it, but my sister backed me up. So much for the scent and sensitivity being genetic. At first I thought it was just me. And I was more than a little concerned that the odor was sign that something was very wrong inside me. That is until the so-called Naked Chef Jamie Oliver mentioned it on TV. Aha! I thought; I am not alone. Not alone indeed. A little research uncovered an abundance of references in science and literature. French novelist Marcel Proust once wrote that the vegetable “transforms my chamber-pot into a flask of perfume.” I wouldn’t call it perfume, but Proust was known to be a bit flowery. If you think, like I did, that perhaps your kidneys were failing and you might have only hours to live, it’s probably just a sign that you have a good sense of smell and you’re a good person who ate their vegetables. Or you’re a hypochondriac. Not that there’s anything wrong with that, is there?
Ramps have just started showing up in Sioux Falls stores, years after they became the darling of East Coast menus. If you’re lucky enough to find a few of the pungent, garlicky shoots, I recommend sautéing them in a little bacon fat until they just begin to caramelize. That will tame the garlic taste and bring out the natural sweetness. That, my friends, is just this side of heaven. We must enjoy the sweet stalks of spring while we can. The local asparagus will be around for just about six weeks before it fades from the stores and markets, only to be replaced by bundles from far away lands. The ramps—if you can find them— will be gone before that and the morels are the most finicky of them all. If you don’t hunt for them yourself, you may only get one or two chances to pick them up. But once spring gives way to summer, we’ll turn our attention to the tomatoes and sweet corn that thrive in the summer heat, and while those are great, I’m beginning to miss spring already.

consult the wine store, wine representative, or broker from whom you are purchasing the wine. The ratio of sugars, acids, and phenolics to water is a key factor of how well a wine can age. The less water in the grapes prior to harvest, the more likely the resulting wine will have some aging potential. Grape variety, climate, vintage, and viticultural practice are all important. Here’s a good rule of thumb: Grape varieties with thicker skins, from a dry growing season where little irrigation was used, and yields were kept low, will have less water and a higher ratio of sugar, acids, and phenolics. These make fantastic wines to “adopt” into your wine cellar. When it comes to mothering your wines, storage conditions can influence a wine’s aging ability dramatically. Vibrations and heat fluctuations can hasten a wine’s deterioration and cause adverse effect on the wines. In general, a wine has a greater potential to develop complexity and more aromatic bouquet if it is allowed to age slowly in a relatively cool environment. The lower the temperature, the more slowly a wine develops. On average, the rate of chemical reactions in wine doubles with each 18 °F increase in temperature. Wine expert, Karen MacNeil, recommends keeping wine intended for aging in a cool area with a constant temperature around 55°F. Wine can be stored at temperatures as high as

69°F without long term negative effects. However, most experts believe that extreme temperature fluctuations (such as repeated transferring of a wine from a warm room to a cool refrigerator) would be detrimental to the wine. The ultra-violet rays of direct sunlight should also be avoided because of the free radicals that can develop in the wine and result in oxidation. Wines packaged in large format bottles, such as magnums and 3 liter Jeroboams, seem to age more slowly than wines packaged in regular 750 ml bottles or half bottles. This may be because of the greater proportion of oxygen exposed to the wine during the bottling process. The advent of alternative wine closures to cork, such as Stelvin closures (screw caps) and synthetic corks has opened up recent discussions on the aging potential of wines sealed with these alternative closures. Currently there are no conclusive results, and the topic is the subject of ongoing research. And since we’re on the topic of mothers, there are probably some mothers-to-be out there who are taking a 9-month sabbatical from drinking wine. Their palate no longer enjoys a glass of Pinot Noir with dinner, instead it has been replaced with morning sickness and heart burn. Wine goes through this stage too! Known as bottle sickness or “bottle-shock,” one of the short-term aging needs of wine is a period where the
wine is considered “sick” due to the trauma and volatility of the bottling experience. During bottling, some oxygen is exposed to the wine, causing a domino effect of chemical reaction with various components of the wine. The time it takes for the wine to settle down and have the oxygen fully dissolve and integrate with the wine is considered its period of “bottle shock”. If you haven’t seen the movie Bottle Shock, you’re missing out on a great movie all about Chateau Montelena making history for Napa Valley wines. It’s never too late to start a wine collection… all it takes is one good bottle. Here’s a quick tip on how to get started: 2007 Napa Valley Cabernets that are coming out right now are being heralded as being a part of one of the best vintages in a long time. Get one. Get two! ardeners are fond of the little creatures that share their neighborhoods; the birds, bees, butterflies and squirrels. But how do we react when those cute bunnies boldly gnaw the buds from a rose bush, munch the tiny primrose that was a gift from a friend, and shear the leaves from a hosta rarity that was shipped across the country? â&#x20AC;&#x153;But theyâ&#x20AC;&#x2122;re so cute when their mouths are wiggling,â&#x20AC;? my granddaughter tells me. In winter, eastern cottontail rabbits are especially hard on shrubs and small trees, stripping the bark and eating the branches. In spring, tulips and other tender new growth have the roughest time. They barely push succulent green points into daylight before they are mowed off. It is the same with many garden vegetables. Plants donâ&#x20AC;&#x2122;t have a prayer of getting established with such abuse. Rabbits are famed for reproductive capacity. Females mature when only a few months old and depending on the region, may be pregnant continuously for six or more months. Here they might birth four plus litters a year, 30-40 total offspring. After five years these exponentially explode into hundreds of thousands.

EXCLUSION The wire baskets intended for use as hanging planters are indispensable in our yard. Flip them over and you have an instant, portable cage, only in this case, to cage rabbits out. (Itâ&#x20AC;&#x2122;s the free-range solution). Baskets come in a variety of diameters. The wider they are, the greater their height. I also use these to
protect plants like blueberries through winter. In winter, protect young trees and plants with a cylinder of quarter-inch hardware cloth secured several inches away from the trunk, extending it above maximum snow depth. I protect our hydrangea and peach trees with plastic spiral tree wrap that hides the trunk. REMOVAL Live traps work are best for catching adult rabbits during winter, but not so efficient in spring and summer when other food is readily available. Secure the traps on level areas so they wonâ&#x20AC;&#x2122;t rock when a critter enters, face them downhill on slopes and be sure all parts function smoothly. Fresh carrots are typical bait. Chop into four-inch lengths, then quarter. Other baits are sunflower seeds, shelled corn, sliced apples and parsnips. In addition to baiting the obvious far interior of the trap, create a trail of bait inside and outside the trap entrance and a few inches away. Once you trap that rabbit, you face another dilemma - how to dispose of it. Donâ&#x20AC;&#x2122;t release your problem out in the country. The Humane Society will take them. Vegetable gardens have a chance when surrounded by threefeet wide, rabbit proof fence made of one-inch steel mesh, hardware cloth or chicken wire. Bend the bottom six inches outward at a right angle, pin down and bury slightly so rabbits canâ&#x20AC;&#x2122;t burrow beneath. REPELLENTS Strong odors are deterrents because they interfere with animalsâ&#x20AC;&#x2122; sense of smell â&#x20AC;&#x201D; their primary defense system. Hold a potent bar of soap up to your dogâ&#x20AC;&#x2122;s nose and youâ&#x20AC;&#x2122;ll see what I mean.

Blood meal, bone meal, fish meal, human hair, fox urine, human urine, strong smelling soap, snuff, used kitty litter and repellents that include Bitrex® will deter rabbits, but you need to reapply most after rains or overhead irrigation. Some chemical repellents contain the fungicide Thiram, but can be used only on ornamental plants, not edibles. There are some popular retail animal repellents. Liquid Fence has a rotten egg odor, not noticeable to humans once dried. Rabbit Scram is an organic granule with a spicy smell. Plant Pro-Tec Garlic Units contain a combination of garlic oil and chili pepper. The odor is most effective on sunny warm days, so I wonder, what about the cool, dark nights? Here are some recipes for homemade animal repellents. The oil ingredient aids in adherence to leaves. If concoctions don’t stick, rain will necessitate reapplication. Reapplication might be necessary as new growth emerges.
Murphy’s Oil Soap Recipe 1 tablespoon dish washing liquid (Stronger concentrations of soap can cause leaves to yellow and die.) 1/4 cup Murphy’s Oil Soap 1 gallon water 1 tablespoon cayenne pepper or Tabasco sauce Shake well and spray.

arbara Angerhofer loves to travel. Getting in the car and just hitting the road, whether for a weekend or a major road trip, is one of the things this 64-year-old medical clerical worker loves to do. On one of those vacations, she learned about the family condition that would later plague her own journeys and limit her lifestyle. About 17 years ago, the Dell Rapids woman was riding in the car with her husband and parents. About every hour her mother would ask the family if

they could make a stop for ice cream. “My husband loves ice cream, so, at first, he thought this was great,” Angerhofer said, with a laugh. “But by the end of the day he didn’t want to eat any more. It took me a while to figure out that was how my mother would get us to stop so she could use the bathroom.”
A Familiar Problem Angerhofer, a woman who smiles easily underneath sparkling eyes, never thought she’d be asking her own family to make emergency stops on the road. However, over the years, she found herself needing to bring a small bag for quick roadside clothing changes when she couldn’t make it to a restroom in time. Soon the road trips came to an end. “You just didn’t want to even try it because it was embarrassing,” she said. Her work day in a busy medical clinic was made more hectic by rushed trips to the bathroom. Even something as simple as a day of shopping couldn’t happen unless she could stay within minutes of a restroom. “I had to quit going to movies because I knew I couldn’t sit there for the two and half hours you needed,” said Angerhofer, a long-time movie fan. “You don’t notice it happening, but gradually you can’t go anywhere without finding the bathroom first.” One in eight women will suffer urinary incontinence sometime in their lifetime, often to due to childbirth, genetics and combination of other factors. Kevin Benson, MD says, “Pelvic floor prolapse and urinary incontinence are problems that have been kept in the dark for years. Up to half of all women will suffer with these treatable conditions. Often patients are not aware of how easily, and successfully, these problems can be treated. There is no need to assume this is a normal part of aging, and women do not have to live in silence any longer.” Angerhofer’s problem was caused by a uterine prolapse, a highly common condition among women where muscles and ligaments in the pelvic floor stretch, causing the uterus to drop into the vaginal canal and put pressure on the bladder.
Searching for Better Options In her case, she was the third generation of women in her family to suffer problems with incontinence. She had seen

New Location! what would be coming next. For years her mother had a pad on her favorite chair, then used a plastic sheet on her bed and later progressed to wearing adult diapers. Angerhofer said she was not willing to follow her mother’s path without checking out other options. “There was no way I was ready to give up doing all the things I loved,” said Angerhofer. “I just didn’t want to be embarrassed or panicked anymore about making it to the bathroom in time.” Angerhofer underwent surgery to fix her prolapsed uterus first in 2007, but within a year she had serious pain in her lower pelvis which told her that the stitches had failed to keep her uterus in place. She soon met with urogynecologist Dr. Kevin Benson who offered her another option.

Getting Her Life Back Before considering surgery again, Angerhofer went through a series of uro-dynamic testing procedures. Those non-invasive tests were able to use computers to simulate the surgery and its effect on her urinary tract system and give Angerhofer and her doctor a good idea of which procedures would work. “It allows us to know whether it will be successful for a patient,” Benson said. “We don’t want to do any surgery unless we know it will be helpful.” In 2008, Angerhofer tried a new type of repair surgery using a device called transvaginal mesh. The method, which places a layer of mesh material between the bladder and vagina, gives further strength to the uterine wall than can be provided with simple stitches. Angerhofer was pleasantly surprised at how easily the second surgery went with less pain and almost no post operative care required. “I felt better right away,” Angerhofer said. “When I went back for my checkup, they said I could be back to work the next day if I wanted.” More than four years after the successful surgery, Angerhofer said she is thankful every day for her lifestyle. She can sleep through the night without waking up, happily go to the movies and she never has to stop her family car trips for ice cream, unless she feels like a treat. “I tell people they should never be afraid of doing this,” Angerhofer said. “You can get your life back.”

It preserves the beauty of flowers, and is a great way to make gifts for your loved ones. Your children will be delighted to see what they can create with flowers, and the lucky mothers will be so proud to receive the crafts not just on Mother’s Day, but any time of year.

Pressed Flower Card
Pressed Flower Glass
What you need: Heavy paper, tweezers, pressed flowers, glue, and felt tips or a small soft brush. Go on a hunt with your child for some flowers to use on your card. Flowers that are small and delicate work best because they easily press flat. Once the flowers are collected, press them between wax paper in a heavy book, such as a phone book, and give them a few days to press and dry out. Pay attention to the position you lay the flower as it will effect the final result. Prepare your card by personalizing it with a poem or personal message inside, and anything else you want to include. Your child may want to list the reasons they are thankful for their mother, or something that will mean a lot to the recipient. When you are ready to glue the flowers to the front of the card, use a tweezers to take one flower at a time and place on the card on top of a small amount of glue. Gently press the flower down and continue adding flowers until finished.
What you need: Glass jars or bottles, pressed flowers, paintbrushes, glue, and a water-resistant acrylic varnish. Take your jars and bottles and remove any labels using hot water or Goo Gone. Press your flowers, herbs, or leaves inside wax paper in a heavy book such as a phone book and let dry for a few days. Let the children use their imagination to decide what kind of arrangement they want to make on the glass. Once the flowers are ready, dip your paintbrush in the glue and gently dab it on the flowers, then position them onto the glass. Let the arrangement dry, then coat the entire design with the acrylic varnish. A water-resistant varnish will allow you to wash the glass in the future. If you donâ&#x20AC;&#x2122;t plan on washing it, and just using it for display, the water-resistance shouldnâ&#x20AC;&#x2122;t be as important. Let it dry overnight and then do a second coat of varnish. Have your child sign the piece on the bottom with a marker or make a crafty gift tag to drape around the top of the bottle or jar.

Pressed Flower Serving Tray
Pressed Flower Bookmark
What you need: Pressed flowers, scissors, decorative paper or fabric, small tray, glass to fit in tray. Once your flowers are pressed and dry, line the bottom of the tray with your choice of decorative paper or fabric. Place the pressed flowers on the tray in the arrangement you see fit and cover them with the glass. Serve a nice breakfast in bed using this tray as a Motherâ&#x20AC;&#x2122;s Day surprise!
What you need: Pressed flowers, thick transparent paper, scissors, hole puncher, ribbon or yarn, and an iron. Cut two rectangle pieces out of the transparent paper to the size of bookmark you would like to make. Have your child get creative and create shapes such as hearts or diamonds. Take one piece of the transparent paper and place it on top of a regular piece of paper. Without using any glue, start arranging the flowers on one side of the bookmark, adding other elements such as photos or cut-out words if you wish. After the arrangement is complete, gently place the other transparent piece of paper on top of the arranged piece. Very carefully carry this to the ironing board. Place a towel over the bookmark and iron on the towel for a few minutes, explaining to the child why this is an adult job. Remove the towel and let the bookmark cool down for at least 15 minutes. Using the hole puncher, punch a hole on the top of the bookmark and string a piece of ribbon or yarn through, tying it at the top.
Pressed Flower Candle What you need: Thick wax candles of any color, tweezers, pressed flowers, glue, acrylic varnish, and small paint brushes. Make sure the candles are clean and free of any dust. Using the small paint brush, paint the back of the pressed flowers with glue and stick them on to the candle one by one with your tweezers. Let the glue dry, then seal your flower creation with the acrylic varnish. You now have a custom decorated candle. It is not recommended to burn this candle, as the glue and flowers are flammable.

eel like you haven’t had a decent night’s sleep since you became a parent? Whether you have a six-month old who’s still waking up for a bottle, or a toddler who won’t sleep in his own bed, sleep issues are a common complaint. “We hear from parents who want their children to sleep through the night, so they can sleep through the night,” said Dr. Christiane Maroun, pediatrician with Avera Medical Group McGreevy 7th Avenue. When babies reach the milestone of four months, and are healthy and gaining weight, they should be able to sleep through the night – although breast-fed babies may take a
little longer. “After that point, the baby just develops a habit of needing to nurse or have a bottle to go back to sleep,” Dr. Maroun said. A key is teaching the baby to soothe herself to sleep, starting at about three to four months. When first putting the baby to bed at night, place her in the crib when she’s sleepy, but still a little awake. Pat and reassure the baby, but then leave the room. Let the baby cry and fuss awhile, until she falls asleep on her own. “It won’t hurt the baby, and you can leave the door open a little and look in to see if the baby is all right,” Dr. Maroun said. The first time, the baby may cry for an extended time before

falling asleep, but eventually, sheâ&#x20AC;&#x2122;ll cry for shorter periods of time until she learns to soothe herself to sleep. Then, when the baby wakes up in the middle of the night, she can get back to sleep on her own, without crying to be rocked or fed. A familiar blanket or favorite toy thatâ&#x20AC;&#x2122;s comforting to the baby might help. To protect against SIDS (sudden infant death syndrome), always put babies to sleep on their back, even if they sleep better on their tummy. Another problem can arise when a baby has reached toddlerhood, and gets out of his own bed during the night and wants to sleep with his parents. â&#x20AC;&#x153;In this case, consistency is the key. If parents want the child to sleep in his own bed, they need to always take him back to his own bed,â&#x20AC;? Dr. Maroun said. If a child is already used to sleeping in his parentsâ&#x20AC;&#x2122; bed, it may take a couple weeks, but consistency is still important. â&#x20AC;&#x153;If he knows that heâ&#x20AC;&#x2122;s not going to get to stay in the parentsâ&#x20AC;&#x2122; bed, eventually, he will stop trying.â&#x20AC;? Some kids get in the habit of not being able to go to sleep unless their parents lie down with them. â&#x20AC;&#x153;If thatâ&#x20AC;&#x2122;s the case, slowly wean them away from it. Instead of lying down with the child, sit with her for a little while, and little by little decrease the amount of time until the child forms a new habit,â&#x20AC;? Dr. Maroun said. Bedtime routines can be important, such as a bath, reading a book or other quiet activities before bed. Dr. Maroun advises parents to keep the TV and video games off right before bed. She also advises against having a TV in the childâ&#x20AC;&#x2122;s bedroom â&#x20AC;&#x201C; at any age. â&#x20AC;&#x153;If children have a TV in their bedroom, you know youâ&#x20AC;&#x2122;re going to have sleep problems.â&#x20AC;? If older kids have a hard time falling asleep, the problem is usually an inconsistent sleep schedule. While itâ&#x20AC;&#x2122;s OK to let kids stay up a little later on the weekends or during school breaks, itâ&#x20AC;&#x2122;s important to stick with a consistent bedtime routine, whether school is in session or not. While babies require a lot more sleep, all kids, from toddlerhood to teenage years, need nine to 10 hours of sleep a night. If your child snores loudly, seems to pause during breathing while asleep, or seems tired during the day, contact your family physician or pediatrician. ngela Arshem-Gillespie’s love of art has been a life-long affair. Some of her favorite early memories include creating daily masterpieces from the childlike media of melted crayon, shale rock, and homemade coloring books. That passion for creation is still with her today, in her work as a mural artist and custom clock designer. When you see one of Arshem-Gillespie’s pieces, the playful, imaginative spirit of the artist shines through every brush stroke. We spent some time with Angela to discuss her work and her journey as an artist.
Please tell us how you got started. Angela Arshem-Gillespie: It all started when I was a kid. I spent a lot of time creating little works of art from whatever was available. My parents were always very supportive. They encouraged me to pursue art in my education and activities and that was a big help. I went to art

He is a member of the Medical Group Management Association.
school, and I’ve worked in antique repair, and custom framing. I also worked at Aerostar full time for three years and that was fun, because my job was painting the large inflatables they use for parades. Working on things of that scale made painting a mural or a clock seem a lot easier. All together, I’ve been designing clocks and doing the mural art for about 10 years now.
Is that difficult to arrange time-wise? Obviously you have to be in their house and families are busy.
When people hire you for a mural, do they come to you with the idea fully fleshed out or do they generally give you an idea and let you run with it?
The thing I like most about your work is that it is very professional but also childlike and fun. You seem to see things through the eyes of a child and translate that to the piece. How do you keep that perspective?
Sometimes people come with a pretty complete idea of what they’d like and sometimes they just have a general theme in mind. I spend a lot of time during the consultation working with them on the vision. For example, with a mural for a child’s room, we’ll look at things like what space we have to work with, what our theme is, where the furniture goes, and eventually we’ll come up with something that is special, unique, and a perfect fit for the situation.
How long does it take to complete say, a bedroom wall-size mural? That’s a good question because it can vary depending on the amount of detail involved with the painting. Some are more complicated than others, but on the whole I’d say it’s about 30 hours to complete a full bedroom wall mural.
No, generally it’s pretty seamless, I can work while they are at work, or on weekends, or whenever it fits their schedule best. Usually, I try to do about four or five hours a day, but that’s all flexible.
It’s my kids! My daughter Corrin is 8 and my son David is 2, and being around them and my husband Brian really helps keep that spirit alive. Plus, I’m still very much a kid at heart. I often wonder when I’ll officially be a ‘grown up.’ I also work part time at Child’s Play Toys downtown (where Arshem-Gillespie’s ‘Castle’ – one of her largest works - is prominently displayed) and being around that environment really keeps my imagination sparked.
I think it would be very gratifying to be there when a child gets their first look at their new room for the first time. Have you ever experienced that? Yes, and it is very heartwarming. Usually their eyes get real big and their jaws drop a little and they are kind of speechless for a

few seconds. After they get a chance to soak it all in, they get more animated, but for a few seconds, they are kind of wide-eyed.
Tell us more about your work with the clocks. That actually started before the murals. It began when I designed a few of them for friends and sold a couple at art shows and they always seemed to go over really well. So eventually I walked into Zandbroz downtown and showed them my clocks and asked if they would be interested in selling them there. They went with it and now my clocks are available in more than 50 stores across the country.
I think all of us would love to be able to say that we are working artists. That must be great fun to throw that out at a cocktail party. Well, I generally just tell people that I design a line of clocks that I sell to galleries and I also work as a mural artist. I try not to put it out there like it’s a big deal or anything. I do feel very fortunate to be able to do something I love for a living and I know
that not everybody gets that opportunity. So in that respect, yes, it’s a good thing!
You mentioned your children earlier. Is it difficult to tell them not to color on the walls when Mommy does it all the time? (smiles): You know, they are pretty good about that, so far. My husband and I definitely encourage them to pursue art. David’s only two, but he did some unlicensed crayon wall art from his crib when he was younger. Corrin is very artistic and we even have a little studio for her in our home. It will be great fun to see how they develop as they get older.
Your work is probably the last thing many children see before they close their eyes at night. That has to be kind of a warm-fuzzy feeling I would imagine. I guess I hadn’t thought about that, but I suppose you are right. The one thing I do know is that I remember very clearly what my room looked like when I was a little girl. When you’re a kid, your room is your comfort zone, your sanctuary and it does make me feel very special to think my work could be a part of someone’s childhood memories like that.

lancy was my â&#x20AC;&#x153;firstâ&#x20AC;? pet of adulthood. He was a noble and handsome Scottish Terrier that was more of a â&#x20AC;&#x153;peopleâ&#x20AC;? than a lowly canine. He was happy to go to work everyday and often supervised everyone. He had his own wardrobe, always called for â&#x20AC;&#x153;shotgunâ&#x20AC;? on car rides and preferred adults to children. His biggest fault was that he loved to wander. Pets that have the lust to wander are truly frustrating to live with. An open door, small hole in the fence or a loose collar was a great way to start an adventure. You can easily find their human partners in your neighborhood. They walk tirelessly up and down streets, look into your backyard and everyone within 3 blocks of their house, knows the petâ&#x20AC;&#x2122;s name. Imagine how exciting it is for the pets to be out on these unsupervised trips. They have new smells, prey to chase and of course some may even find a gourmet meal in a garbage can. getting hit by a car. Seventy five to eighty percent of dogs hit by cars are intact males. They tend to roam more often and pay less attention to their neutered counterparts. They also can get into a fight, consume poisons or toxic compounds such as antifreeze. I also see many of these pets in the clinic with vomiting and diarrhea from the garbage or rotten things they seem to enjoy eating. Always keep a mental note of where they might have been to help us if they get sick when they get home. There are some very important things to remember if you live with a wandering pet. The first thing you should do is maximize your ability to keep them home. It can be as simple as changing the latch, patching holes and making the fence higher. Some of the great escape artists require more serious attention. Kennel runs with tops are needed for some and tie outs are enough for some. I recommend never leaving a wanderer outside if you are at work or gone. The next thing that is needed is identification. A name tag,
rabies tag and city license on their collar is essential. Often the pet is not very far from home and they can be easily returned if there is enough information. I also like to have a microchip in the pet in case they lose their collar. Animal control and the shelters are supposed to scan each pet they find for microchip identification. If your wanderer does not come home from his latest trip, the third thing we need to do is start the recovery mission. It is important to contact Animal Control and the local shelters first. I also recommend contacting your veterinarian in case someone calls with the rabies tag number. Then it is time to put up posters and start asking everyone in your area if they have seen them. I am embarrassed to say that Clancy required all three steps in his life to be retrieved. He never seemed to be as shook up as I was, but then he liked being on his adventures. After he passed, my neighbors asked what they should do with all of his treats that he stopped by for each day. Yep, he loved his trips!

T
he Sioux Quartzite, deposited more than a billion years ago, is among the oldest rock exposed in South Dakota. The quartzite and associated pipestone deposits were known to white men as early as 1822, but the American Indian used pipestone centuries earlier to make ornaments and utensils. The Sioux Quartzite consists of thick beds of silicacemented quartz sandstone, the grains of which were deposited and rounded by wave action on the floor of an ancient continental sea. This fact is illustrated
by laminations and ripple marks preserved in the quartzite. The density of the rock resulting from cementation and compaction makes it very resistant to erosion as shown by the falls at this site; the Big Sioux River has been flowing in its present course here for about 10,000 years. In Pioneer Days this rock was the principal building and paving material in this area. At the present time its use as an aggregate in concrete construction makes the Sioux Quartzite an important natural resource of Eastern South Dakota.

The Falls of the Big Sioux River Many layers of sand were laid down on the sea floor when this area was covered by a shallow sea more than 1.75 billion B.P. (years Before Present). These layers of sand were slowly changed by heat and pressure into a massive rock formation. Known today as Sioux quartzite, the formation was later covered by a series of continental glaciers that deposited dirt, sand, rocks, and boulders. When the most recent glacier receded, a huge volume of melt water eroded the glacial deposits, exposed the underlying pink Sioux quartzite, and created the falls of the Big Sioux River. Largely located in South Dakota, much of the quartzite is located underground at depths that make quarrying impractical and unprofitable.
