“T
here’s No Place Like the Neighborhood,” according to Applebee’s. And now, one of Sioux Falls’ two Applebee’s restaurants is in a new neighborhood – situated between the Younkers and Sears wings of the Empire Mall. The new location opened during the day on December 31, just in time to ring in 2012. With the move to the Empire Mall from its former Empire East location, this Applebee’s location is now the third largest in the United States – following only behind Times Square and another downtown location in New York City.

The restaurant’s seating for 314 gives it about 40% more capacity than at the former location. The updated look is contemporary – with warm colors, a blend of wood, brick and fabrics, seating areas at various heights and design elements that celebrate the Sioux Falls “neighborhood.” Owner Todd Porter says they had outgrown the former space, which was located between Target and Bed, Bath and Beyond at The Empire East, and moving to Empire Mall provided many great opportunities. “All of the stores across the country are updating their look, so this move gave us the chance to start fresh with the new
design in a bigger space.” The new location, with both exterior and interior mall entrances, has a very comfortable feeling that works for everything from a business lunch or leisurely dinner with the family to evenings watching ballgames with friends. And, for those sports lovers, a glimpse of the game is never far away, with 27 large screens placed strategically throughout the restaurant. The design was carefully thought out to give patrons a choice of seating experiences. You can choose from one of the 25 seats around the bar, for example. Get there early to claim the choice seats right in front
of the iced beer taps….beer taps that are literally iced over on the outside. This Applebee’s location is the only establishment in the state to use this system, which allows patrons to enjoy one of 10 beers on tap so cold that it’s on the verge of being a barley slushy. Or, perhaps you prefer a raised booth near the bar, a table near the windows where the sun shines in, or seating near windows that look out at the activity within the mall. In addition to the restaurant seating, diners can also sit at the “café tables” located outside the main restaurant in the spacious mall corridor. Accessibility is a key component, with aisles over a foot wider

than standards established in the Americans With Disabilities Act. It is welcomed not only by the servers, but also individuals using devices like walkers or wheelchairs and families with young children in strollers. The various seating areas also allow for accessibility, such as one section that has extra-long booths that are open on both ends. Although there are franchise standards for design, Porter says each location has some flexibility to include features that meet the needs of their customers and that give the place a local feel. As you look around the walls, you see various aspects of life in Sioux Falls. Real photographs are superimposed to create three-

dimensional wallpaper. You can be surrounded by images of JazzFest, high school and collegiate sports, hot air ballooning, the Sioux Empire Fair and more. One of the real iconic pieces to look for is on the soffit above the entrance that features a panoramic view of Falls Park with artsy letters spelling out Sioux Falls. Porter says that The Empire Mall often surveys shoppers to get feedback on mall offerings. “While shoppers mention specific stores they would like to see added to the mall, they also comment on food and beverage establishments,” he says. “And nearly 57% said they wanted to see a nice, sit-down

restaurant in the Mall. We’re pleased that Applebee’s could meet that need.” The move is an economic boost for the community as well, with 40 new jobs added at the Empire Mall location for a total of 140 jobs. The East 10th Street Applebee’s employs 90 workers, and that location has also been remodeled to reflect the more contemporary design. Once you are seated inside, you’ll notice other unique details of the restaurant, such as the apple-shaped cutouts in the backs of the wooden chairs or the way the carpet design complements the geometric patterns of the fabric on the booth backs.
And let’s not forget the menu, with Applebee’s favorites as well as special features that change as often as every eight weeks. One of the newest additions to the menu is the section with tasty items that are all 550 calories or less. These items, as well as those endorsed by Weight Watchers, are marked on the menu with a green apple. The menu features entrees endorsed by Weight Watchers further by marking them with the logo and the number of Weight Watcher points. There is something for everyone at Applebee’s, so load up the car and head on over to the new neighborhood.

id you know that kuchen is South Dakota’s official state dessert? Horst Jahn didn’t know that when he moved here…but he sure knows how to make it! Jahn is originally from Germany, and he and his wife Teresa recently opened Zum Kanzler in downtown Sioux Falls. They previously operated the Rail Haus Bakery in Canton. While the Canton bakery has closed as a retail location, it still serves as their kitchen for baking all the wonderful treats now available at the Sioux Falls location. Although they have been in Canton for a few years, Jahn is no stranger to Sioux Falls. He is a well-known vendor at the Sioux Falls Farmer’s Market and annual German Fest. “I feel very welcome here,” says Jahn, who says his

relocation to Sioux Falls came about because of the Farmer’s Market. He was approached about a downtown location, but he says like any good husband, he said he needed to talk to his wife first. After much discussion, they decided to move ahead with the Sioux Falls location and on December 14, opened Zum Kanzler, which Jahn says is a common name in Germany for places such as restaurants. He says the response has been good, surprising him with the amount of his famous German apple strudel he has already sold. While much of his customer base comes in to buy baked goods for home or office, there is a small seating area near the big windows facing Main Street where you can sit and enjoy a piece of kuchen or a bowl of soup at lunch. Jahn follows the seasons for selecting fruits for his kuchen. “You can get apples all year,” he explains, “but others need to be in season – peaches, plums, rhubarb.” In addition to the kuchen or strudel, there are many other baked delights to choose from – like fruit danish, sticky buns, danish twists, bear claws or strudel sticks. If you are there over the lunch hour, you can enjoy a different homemade soup each day, served with broetchen, which means “little bread” – delicious hard rolls. The one exception is Friday’s chili, which is served in a homemade bread bowl.

There are several varieties of sourdough breads available as well, such as the Rail Haus original or seeded, pumpernickel, multigrain and Bavarian pretzels. There are no preservatives in the breads, and they also offer varieties with no yeast. “We want to offer things that are unique and things that we know people are looking for,” says Jahn, adding that in addition to the baked goods, customers can get German meats like

salami, schinken, hosteiner, bratwurst and mettwurst. Customers can also place special orders for breads, hard rolls or other items like warm bacon bread, carrot cake or black forest torte. Zum Kanzler also caters. For the time being, the Rail Haus in Canton continues to be the host location for the popular German Night – a full-fledged German dinner held monthly – which typically sells out well

s you can see I have my favorite little helper in the kitchen with me. I love every minute I spend with Nick and I am saddened by the thought that someday he won’t want to be my little baking buddy. Nana will be replaced with baseball, basketball and girls. I will forever cherish the time he is willing to give me. Happy Valentine’s Day my little man!
Margo Bars 1 cup margarine 3/4 cup sugar 3/4 cup flour 2 Tablespoons cocoa 2 eggs Mix all ingredients and bake at 350˚ for 15 minutes in a 9x13 inch greased pan. Remove from the oven and cover with mini marshmallows and return to the oven and bake for another 3-4 minutes. Cool for an hour . Melt: 1 cup milk chocolate chips 1 cup peanut butter Add 2 cup rice crispies and spread this mixture over the bars. Cool for an hour before cutting.

A Chef’s Knife, a Frying Pan and a Remote Control By Jim Mathis
I
’ve written before about learning to cook from my mom. My grilling and barbeque apprenticeships were beside my dad and grandfather. While they have been great teachers, I’ve also learned from another source — the television set. Long before Emeril graced the Food Network, I watched Yan Can Cook and The Frugal Gourmet on public television. Martin Yan, for those who never watched him, infused his broken-English program with a little bit of humor in each cooking lesson; for some odd reason he appealed to me as a college student. After watching countless hours of the Chinese chef teaching Americanized oriental cooking, I gave in and bought a wok. My roommates Russell and Roger liked my experimental adventures enough to give me the courage to try my new found
skills on the unsuspecting coeds of Simpson College. That’s when I discovered that girls are much more impressed by a man making them a nice meal than by buying them a dinner out. Now my hobby had a new purpose and the prospect of wooing new dinner guests fueled my desire to keep learning. Yes, I used those same tricks to lure my bride (and a little time in the kitchen has helped keep her around for more than 17 years). Apparently there is some appeal to a guy who knows his way around a stir-fry. Next up was The Frugal Gourmet starring Jeff Smith, a Methodist minister from the Pacific Northwest turned television cook. With his background as a preacher, The Frug (as he was known to his fans) was a natural teacher, often telling stories

His recipes varied from simple to complex, from traditional to inventive, and more than just reciting a recipe, he gave you a little history lesson or taught you about the region where the dish originated. I started asking for the Frug’s books for birthdays and Christmas; and my mother, who was also a big fan, obliged. We frequently called each other to report on our latest creation. Twenty-five years later, I still have four of his books in my kitchen and refer to them often for advice and inspiration, and I can’t say that about very many cookbooks. Sadly, Jeff Smith was accused of horrible crimes towards seven young men. He settled out of court to avoid trial and never returned to television.
Consequently I never bought another of his books. He passed away several years ago and even as I write this it bothers me that I once revered a man who could do the despicable things of which he was accused. Much of my television viewing was while I was working my way through college as a bartender. The gig as a barkeep at the Indianola Country Club also involved some short-order cooking — hamburgers, hot dogs and steak or chicken sandwiches on a flat-top. I also spent one summer in a red apron behind the counter of the local HyVee deli. While certainly not glamorous, each of these jobs allowed me to learn a little more about food and beverages. In the early morning hours in the deli, I got the chance to spend a lot of time at the griddle making bacon and

eggs for the coffee and pre-church crowd. While I wasn’t cooking the same dishes as Martin Yan or Jeff Smith, I was practicing some of the same techniques and honing my skills. Perhaps most importantly, the time I spent working in food service taught me to respect the hard work that goes on in a restaurant and that every dollar of every tip is earned. In the world of television cooks, Julia Child is the unequivocal matriarch. I’m a little too young (or maybe I should say not old enough) to remember much of Julia in her prime. The French Chef I recall is from her later series and specials. By that time her stately frame had given in to gravity and her voice had begun to weaken. Still the leader of the realm, she had handed the torch to her slightly younger contemporaries in Martin Yan, Jeff Smith and Graham Kerr (AKA The Galloping Gourmet.)

Now the Food Network and the Cooking Channel are frequent viewing around our house and I feel like Mario Batali and Alton Brown are old friends. But many of this second generation of celebrity chefs and television cooks do things differently. I’ve broken these new small-screen gourmands into three distinct groups; the Mentors, the Recipe-Readers and the Entertainers. Let’s start with the Recipe-Readers. These are names you know like Martha Stewart, Ina Garten, Sandra Lee and Melissa D’Arabian. These are the onscreen cooks who tell you precisely how much of each ingredient to use — right down to measuring a half a teaspoon of salt. They also tend to dwell on the cost of ingredients. I really don’t have time for this kind of cooking show. My biggest problem is they are only teaching their viewers how to follow a recipe. They fall short of teaching you

how to cook, much less inspiring you to create your own dish. If you enjoy these shows, more power to you, but they’re not my cup of tea. The Entertainers spend more time with distractions than cooking; the food is secondary. It seems like there are more and more of those that fall into this category: The Neeley’s who spend too much time canoodling, Gordon Ramsey who’d rather drop F-bombs than pick up a whisk and Top Chef, which is closer to American Idol than a cooking show. The king of the Entertainers is Guy Fiery. Put Guy on Diners, Drive-ins and Dives and I (like millions of Americans) will watch for hours, but his cooking show, Guy’s Big Bite is more about him than the food. His recipes are usually too complicated and not terribly appealing. I’ve also had the opportunity to eat at one of his Tex Wasabi restaurants in Sacramento. I should have gone to the Chili’s down the street. Great entertainer, not so much a great chef. The Mentors follow the route of those great television chefs who laid the ground work for 24-hour cooking channels by daring to try something different in a half hour on public television. Many, like Emeril, Rachel, Mario, Giada and Alton have risen to a level where they are known by a singular name. So what makes them different? They teach techniques while they present a recipe. They don’t just show you how to make a dish; they explain the what, the why and the how of making food taste good. As you watch one the Mentors, you will begin to learn when they say “add a little nutmeg” to help develop the flavor, how much you add is up to you. On the other hand, when you see one of them carefully measure a teaspoon of salt, there is a reason. When I watch these chefs, I learn and I grow as a cook, whether or not I will ever make the meal they are presenting. They inspire, they teach, they nurture, and I continue to watch. So as the winter doldrums set in while most guys get lost in reruns on ESPN, you’ll find me snuggled in watching Good Eats or Secrets of a Restaurant Chef. Not just watching, but discovering a few new ideas. Then I’ll head to the kitchen to experiment, play and create. As you cuddle up with your favorite small screen chef, take a few minutes to decide which category they fall into. Now ask yourself if you’re really learning to cook or to just follow directions. his time of year I usually put out some sort of Top Ten list delineating romantic gestures or wine gifts you can give your loved one for Valentine’s Day. This year I’m going old school: take your Valentine on a date! Go to a movie. Have your beloved’s favorite bottle of wine. Do both, although I’m pretty sure the movie theaters frown upon that kind of stuff… anyway, pick a movie, pick a bottle (for the post-movie portion of the date) and don’t forget to have fun. One of our (my Valentine’s and my) favorite movies is French Kiss. It’s funny, it’s romantic, and there are a ton of wine references! It’s the perfect movie for a wine writer. My wife’s favorite scene is when Meg Ryan’s character falls in love with the plethora of cheeses offered on a train ride to the south of France. She eats and eats and eats…until she realizes that she’s
lactose intolerant…comedy ensues. My favorite scene is at Kevin Kline’s character’s vineyard in the heart of France. He is describing how to smell aromas in wine and then makes a statement about how wine is like people. I love that line; I always think about how many times I say that a wine has great legs or lots of body or is complicated or lackluster. Every bottle of wine I encounter is like meeting someone new. Of course, just like people, there are some that you want to spend more time with than others… So pick someone you like to spend time with, pick a wine you like to spend time with, and make it a special Valentine’s Day. bout three months ago I walked into meeting with my manager, all the while, in my head, going over about 50 tasks I needed to complete before the day’s end. The discussion started off as most have in the past - conversing about the goings on at the store, reporting on sales, upcoming events, new products, etc. Everything was routine until the issue of stress came up. Apparently when I am stressed people around me know it - I ooze it - so much so that it begins to affect them. As we dove deeper into the cause of my stress, it became apparent to me that I could afford to handle stress better. I am a note-taker and find myself writing everything down, never organizing my notes or making

lists, just hoarding this stack of scratch paper with random thoughts, deadlines, and ‘“to do’s” scrawled in blue ink, black ink, pink sharpie and green colored pencil. Looking back at how I dealt with my list of things to do, it is no wonder I was stressed — I hadn’t any organized process to getting things done. so many more health problems are associated with stress, and often times, can be reversed if stress is reduced or eliminated. There are many roads to take to deal with stress naturally and healthily. For starters, do as I did, and get organized. The extra hour I spend each week sending un-needed emails to the trash bin and re-composing my random notes into an orderly list has worked wonders on my stress levels. Being methodical about my tasks has greatly decreased the overwhelmed feeling I used to experience every morning as I got ready for work and cringed at the idea of not being as productive as I needed to be. Once you get organized, you may find that you’re still stressed. Family stress cannot be organized into a tidy list, nor can most other personal relationships. Keep communication open. There is no need to hold onto a grudge, resentment, sadness or whatever else another person makes you feel just because you want to avoid confrontation. Confrontation, when conducted calmly, is a very effective form of communication and means of reducing stress. Keep family and friends close and be open with them as they will be great support during your quest to de-stress. Even after cleaning off your desk and making amends with those closest to you, you may still feel stress. Fight the urge to drown your stress out with a three pints of Häagen Daz and reach for something comforting and healthy. An experiment conducted by the Stress Research Institute at Stokholm University concluded that warm oatmeal is very effective in reversing overflow of negative, stress-filled brain chemicals like cortisol. The comfort aspect of oatmeal as well as the healthy, complex carbohydrates found in it, cause the brain to release

feel-good, calming chemicals called seratonin. In this particular study, other foods with seratonin-inducing results include whole grain cereals, breads and pastas, oranges, fatty fish like salmon, raw pistachios, almonds, avocados, spinach and other raw vegetables. Food to reduce stress? Yes! Another natural and effective method to reducing stress is using herbal remedies to calm the body and mind. Whether your stress causes you to lose sleep or makes you feel agitated, there is likely an herb to help. A study at the University of Portland in Oregon, concluded that the herb Passionflower, remedied anxiety and insomnia. The passionflower acted as a calming agent without leaving the participants drowsy, which is a common side effect to many medications prescribed to treat stress/anxiety. Other effective herbs for stress and anxiety — Kava and Valerian. (As with any herbal remedy, it is highly recommended that you seek guidance from a professional, as some herbs can have negative side effects or interactions with other herbal remedies or drugs.) Of course, there are many natural ways to reduce stress — massage therapy, yoga, walking, sleeping, aromatherapy — the list goes on. Find something that works for you and stick with it for the sake of your future health. Life is too short to spend worrying and feeling anxious — replace negativity with positive health goals and routines and push yourself to live stress-free! f exercise and weight loss are your goals in 2012, you won’t only improve your heart health, or look better in your favorite jeans. You will improve your odds against developing breast cancer and other types of cancer. “We’ve known for a long time that obesity lowers life expectancy by contributing to diabetes, high blood pressure, heart disease and stroke,” said Dr. Amy Krie, oncologist with Avera Medical Group Oncology & Hematology, who specializes in treating breast cancer. “More recently, ties between obesity and cancer have become evident.” Dr. Krie says there is solid research tying obesity with post-menopausal breast cancer, endometrial or uterine cancer, and other cancers, including those of the kidney, colon, esophagus, ovary and pancreas. Obesity is an epidemic across the United States that is only
getting worse. Over one-third of the adult population in the U.S. is considered to be obese – another one-third of adults are overweight, but not yet obese. Obesity is measured by body mass index. The tie between obesity and breast cancer is particularly striking, Dr. Krie says. Research shows: • Obese women are 30 to 50 percent more likely to develop breast cancer than women of a healthy weight. • Women who walk 30 minutes per day lower their rate of breast cancer by 20 percent. • Women who gain 20 to 30 pounds after age 18 are 40 percent

more likely to develop breast cancer than those women who stay within five pounds. Women who gain 70 pounds double their risk of breast cancer. Research also shows that breast cancer survivors who do not gain weight after their diagnosis and maintain a healthy weight are less likely to have a recurrence of breast cancer. “Certainly, the connection between obesity and cancer is one we’re still unraveling,” Dr. Krie said. The reasons why obesity is linked to breast cancer are complex. Simply put, being overweight means you have higher levels of hormones in your bloodstream, because fat cells produce estrogen. Also, being overweight can cause insulin resistance, leading to higher levels of insulin in the bloodstream. This causes inflammation and also prevents cancer cells from dying. “In order for a cancer cell to grow, it needs to have the right microenvironment. If your microenvironment is healthy, it is harder for cancer cells to set up shop,” Dr. Krie said. Exercise is one key to cancer prevention. “Exercise lowers estrogen and insulin levels, decreases inflammation, relieves

stress and improves your immune system,” Dr. Krie said. “Exercise helps you set up a very healthy environment so that tumors can’t grow.” “We also recommend a diet that’s lower in carbohydrates, and one that’s higher in fish and low-fat meats, vegetables and especially leafy green vegetables, and whole grains. An ideal diet would be more like an Asian or Mediterranean diet,” Dr. Krie said. A research study is underway at Avera to determine if a diet that is adequate in protein and lower in carbohydrate has a positive impact on breast cancer recurrence. Other current research is studying whether drugs commonly used to control diabetes and high blood pressure can also prevent cancer recurrence. “Statistics show that one in eight women will experience breast cancer within their lifetime. We all want to improve our odds, and there are lifestyle changes we can all make to reduce our risk of cancer,” Dr. Krie said. Paper Love Bug What you need: Scissors, glue, pipe cleaners, empty toilet paper tube, light colored paper, pens, markers, crayons, or other drawing utensils. Take the empty toilet paper tube and paint it or cover it with colored paper to create the bug’s body. Using a lighter color of construction paper, such as pink or light purple, cut two hearts out and attach them to both sides of the body with glue or tape. Have your child get creative and draw a face at the top of the tube in the middle of the body. Use some colorful pipe cleaners to create antennae, twirling the ends down to make a fun and realistic effect. Using a darker marker or pen, write a cute Valentine’s Day message on the wings, such as a lovable phrase or poem for the recipient.
Conversation Heart Pencil Toppers What you need: Valentine’s pencils, craft foam of white, pink, red, and purple colors, a thin marker, colored pipe cleaners, and a hot glue gun. Wind the pipe cleaner around the pencil, making sure to leave two coils above the eraser. Cut out small hearts from the craft foam, or use a heart punch if you have one. Using the hot glue gun, add a small drop to the back of the heart and attach it to the top of the pipe cleaner coil that is above the pencil eraser. Let dry, and when completely dry have your child write their Valentine’s Day messages on the hearts with a thin marker.

Mosaic Heart What you need: Scissors, glue stick, poster board, construction paper, old magazines. Cut the poster board to the size you would like your mosaic heart to be. A large square such as a 12” by 12” size works well. Draw a heart near the center of the poster board with a pencil. Divide the background into four sections by drawing four lines from the edge of the heart to the edge of the poster board. Taking the magazines, tear out pages that have a lot of color and barely any text on them. Tear these pages into small squares and keep the colors separated from each other. An easy way to get small squares is by tearing the pages into strips first, then tearing the squares out of the strips. Choose which colors you want to use for your background, and glue the squares next to one another in one of the four sections of the background using your glue stick. Do this for each section until the background is complete, with four separate colors or however you choose to use your creative skill. Your child may want to mix up the colors in the background and keep the heart a solid color as well. Fill your heart in with the same color squares. Frame your mosaic heart by cutting out four 1”-wide strips from the construction paper and glue them in place, overlapping at each corner.

Make a small hole or a tiny slit in the craft foam, and slip the wrapped lollipop through. Write a Valentine’s Day message on the white office label and fold it around the lollipop stick at the bottom. Make sure it doesn’t stick too much, as the recipient will want to take it off in order to fully enjoy the fun of the foam craft design. When the lollipop is eaten, it will look as though the person eating it has a mustache or a big pair of lips.

Paper Heart Garland What you need: Pink and red colored paper, scissors, double stick tape, pencil or pen, and a thread and needle. Using the scissors, cut the colored paper into strips about 3/4” in size. Fold the strips in half. Take the loose ends and curl them around a pen, pencil, or other similarly shaped item until just before reaching the fold. String the hearts into a garland from the bottom up. Push the needle and thread up through the bottom part of each heart, then connect the two curled tops of each heart with double sided tape, placing the thread in the middle to keep it all connected. A very cute and simple project for both you and your kids to enjoy.

n 2005, Kristen and Mitch Peterson were in the market for the perfect, two-story home in which to start their family. However, they were uncertain of one factor: area of town in which to live. After a tour on the Parade of Homes, they were predominantly drawn to HeatherRidge, as well as to Ralyn Kruetzfeldt’s design and construction of homes. “We loved how centrally located this neighborhood is, in addition to Kruetzfeldt’s designs, ” said Kristen. The couple scoured the neighborhood, looking for their dream home, but always came back empty-handed. Alas, no Kruetzfeld homes were available for purchase in the HeatherRidge neighborhood. However, after weeks of searching, they were able to find a Kruetzfeld home on the quiet street of High Cross Trail, but it was merely framed. Despite the home
having no walls, carpet or paint – just studs, the couple believed they had finally found exactly what they were looking for. “The bones of the house were done and the layout was completed, but we were able to design the entire interior of the home,” said Kristen. “We’re really happy here, and very happy with how our home turned out. We also really love this neighborhood.” After settling into the house for a few short years, Kristen and Mitch found out they were expecting a little girl in early March 2011. While the couple was anxiously awaiting the arrival of their daughter, Molly Kate, they began to decorate the nursery. Walking through the door of 10-month-old Mary Kate’s room, you can instantly see that family is very high on their priority list. The details of the room show how the Petersons wanted

to focus on the idea of family and the love they have for one another. In fact, it’s apparent in every unique detail. Hung above a small table near the entryway looks, from a distance, like it could be any poem. It’s only upon closer inspection that you see it holds much more significance to the couple than any poem written by any of the most famous poets in history ever could. “These poems hold a lot of meaning,” explains Kristen. “The middle poem was written for me by my grandmother. My name in utero was Sunshine, because my parents did not know my gender. The Christmas before I was born, my grandma (my mother’s mom) wrote a poem for me and titled it, “To Sunshine.”

It’s absolutely beautiful.” The four-piece canvas wall art, given to Molly Kate by her Aunt Kate in Washington D.C., hangs above a white changing table. “My sister, Kate, lives in Washington D.C., and she gave us this beautiful handmade artwork of the cherry blossoms,” said Kristen. “The colors in the artwork kind of became a focal point to the design of the room.” The bright color palate enlivens the interior, and the wall decals and paintings add a dose of whimsy as well as tell a unique story. “It’s a fun story how we picked the color scheme of this room. I took a Tiffany’s box to the Home Depot

paint department and color matched it,” said Kristen. “I was very close to my grandma and grandpa. My grandma’s favorite colors were the Tiffany’s blue and bright pink. My grandma always wore these sweatsuits, and they were either blue or hot pink. It kind of became an inspiration for the overall color scheme of the room.” Kristen and Mitch have worked diligently to make their daughter’s room feel comfortable, but also fun and personable. A piece of artwork that features birds sitting in a tree hangs above Molly Kate’s bed and also holds special significance to the Petersons. “My grandpa and I used to sit for hours and watch birds together in their screened-in patio,” said Kristen. “We would also buy bird houses
and clean out the bird bath together. We found this print of birds, and it had a lot of special meaning to us. It felt like a piece of my Grandpa Stan in this room — kind of like he is watching over Molly Kate.” Molly Kate’s grandparents are a big part of the theme in the nursery. A beautiful passage from the poem written to Molly Kate from her Grandma Suzie, states: “Love is your origin. Share it generously and happily.” The colorful artwork and hand-written poems given to Molly Kate are clearly indicative of the family’s love they have for her. If she is brought up to be anything like her mother and father, there will be no problem sharing that love generously and happily.

A Natural Option for Mother and Baby F
ew things are as a soothing as a soak in a warm tub of water. For years, hospital and birthing centers have encouraged women in labor to use whirlpools and tubs to ease pains and relax in the minutes and hours before their baby is born. Increasingly, women and their health care providers are seeing water as a way to improve the whole childbirth experience, including the birth, says Terry Engelmann, a Sanford Certified Nurse Midwife. “Water immersion has been used for laboring for years,” said Engelmann. “Women who have given birth in water say they would never go back to doing it the other way because it was so much easier for them and the baby.”

water, is a safe and natural way to deliver a baby for women who are having a healthy, normal pregnancy. Engelmann, who has assisted with waterbirths when she practiced in the Twin Cities area and now in Sioux Falls, said the practice has been popular nationwide for as many as 20 years. The process is simple, she says. A woman enters a tub or deep pool of warm water when her contractions become strong and regular. Engelmann said the woman determines what position is comfortable for her. Her physician or certified nurse midwife kneels by the pool to help assist with the birth of the baby, reaching into the water to help guide the newborn in the same way that she would in a regular birthing situation. The physician or certified nurse midwife can even monitor the baby’s heartbeat using an ultrasound device in the water.

Soothing for Moms “The water birth seems to make it easier for the woman to relax and listen to her body’s instinct regarding the birthing process,” Engelmann said.
“Babies don’t breathe until the air actually hits the face,” she says. “It seems like the babies born in the water are a little calmer or quieter, too.”
Less Stress for Baby In addition to the soothing comfort of the water, there are a number of advantages for the mother, including: • Ease in movement and positioning due to the buoyancy of the water. • M ore efficient uterine contractions and better blood circulation, which results in less pain for the mother and more oxygen for the baby. • Lower blood pressure. • Alleviation of stress-related hormones, allowing the mother’s body to produce endorphins, which are paininhibitors.
By being born into water, babies are experiencing a similar environment to what they experience in the amniotic sac, Engelmann said. They seem to have less stress and more security during the process, she said. Waterbirth is not recommended for women who need constant electronic monitoring of the baby throughout childbirth, making it inappropriate for a woman who has had an epidural or is having her labor induced. A provider would also likely rule out waterbirth for a mother with an infection, large amount of bleeding, high blood pressure, insulin dependent diabetes or one who is giving birth prior to 37 weeks of gestation.
After the baby is born, he or she is assisted to the surface of the water fairly quickly and placed on the mother’s chest.
Talk to your physician or certified nurse midwife about whether waterbirth would be a good option for you.

hen it comes to family histories, it’s impossible to know who you are without first knowing where you came from. The problem is most family histories are a product of the spoken word. Stories shared around a kitchen table are sometimes all we know. As years pass, the stories fade and sometimes all we are left with is a series of dates (born, married, retired, buried) that serve as pale remembrances of the three-dimensional people whose lives led to ours. easy and fun to capture forever the history and memories that make each person and family unique. We talked with Megan about how the idea came about and how it has helped her to better know and appreciate her own family.
It took a lot of research and fine-tuning before I felt ready to pursue it as a business but it’s been a couple of years now and so far the response has been great.
So how do the kits work? So how did 1st Person History get its start? I was taking an entrepreneurship class while getting my Masters degree a few years ago and one of my assignments was to come up with a viable business idea. At this same time, my grandfather had just had a stroke and could no longer speak. This was the man who, while all us kids would lay around the Christmas tree in our sleeping bags, would be out in the kitchen telling all these old stories that made everyone laugh and laugh. It felt like such a loss because while everybody knew the stories, no could tell them like my grandfather. So it occurred to me that there should be a way to capture all those great stories and memories so they aren’t lost. I began creating the kits for the assignment and after getting a lot of encouragement from my professor and friends, I decided there was some merit to it as a business.
So it went from classroom project to real life business?
The basic kit comes with two books and a timeline document. One of the books is titled “The Life of ” and the person doing the interviewing uses it and the second book is titled, “As I Remember It” and it is for the person being interviewed. Each comes with instructions on how to fill out the books and do the interviews. There are also topic ideas for reminiscing, a notes and fill-in-the-blanks section, and lots of tips to help collect the stories and memories. After doing the interviewing, you fill in the timeline folder with all the important dates and events in the person’s life. It also helps to identify gaps in the history. More advanced kits include a digital voice recorder and other helpful tools, but the books and timeline are the primary things used to capture histories.

won’t know what to ask, but really it’s as simple as sitting down with a cup of coffee and chatting for 15 minutes. Most of the times I’ve interviewed my grandmother, it’s been over coffee or a lunch. I just set the recorder off to the side and start asking questions. The beauty of it is that you can start with some specific questions from the kit but usually the conversation just takes off on its own and you learn things you’d have never thought to ask.
I was reading through some of the questions in the kit and I thought, ‘I would’ve liked to know my Mom or Dad’s answer to that.’ Along with capturing histories it must be a great way to bond with your subject.
but I always tell them I’m asking because they are important to me and I want their memory preserved so that my kids and grandkids can know them too. Usually they come around. (Smiles)
Along with the kits for individuals, you also have kits for married couples to use in capturing their history. I think that would be fascinating. There have to be instances where a couple’s recollections of particular events…uh… conflict?
Absolutely, sometimes the questions can just be great conversation starters. In asking them, you learn so much about your subject that you wouldn’t have learned through the everyday chitchat we sometimes fall into with our families.
It happens a lot and it makes for great stories. My own parents’ version of buying a house is a great example. My mom tells it that she found this perfect wonderful house and had to beg the owners to sell it to them. But my dad’s version is that mom came home all excited about this house but when they went to see it, he was shocked because it was a broken down dump.
Have any of your subjects ever refused to be interviewed?
They moved the next week didn’t they?
Yes, it’s happened. Some people think that if they are being asked about their life, it must be because they are close to death and they aren’t signing on for that. It’s okay if that happens

death of the handwritten written letter, doesn’t that raise the importance of capturing family histories even more. After all, no one is going to find shoeboxes full of letters in our attics after we’re gone. I think that’s a good point. That type of personal correspondence – letters, diaries, etc, - is sort of a dying art. I think it’s unfortunate, but it’s true that future generations probably won’t have those types of remembrances to pass along.
What do you see as the value in capturing family histories? There is comfort in knowing that the people you love will always be with you — even after they’re gone. But what the histories do is give you a chance to enjoy and learn about your family members while they are alive. The conversations I’ve had in compiling my histories are things I’ll treasure all my life. I can’t think of a better way to honor someone you love. would like to tell you about a new friend I made on vacation. I am not sure what his real name is, but I preferred to call him Red. He came to visit us the first day of vacation and made daily visits. He was amiable, a bit of a clown and loved the kids. Red was a local that knew all of the tricks. He would dig up angry crabs on the beach, excavate large holes in the sand and he never complained about lunch. He belonged to the locals on the island and made daily visits up and down the beach. He loved the tourists and apparently, most of them liked him. This friendly red dog was fun to have around. He would go swimming in the ocean with us every day and appeared to enjoy bouncing in the waves. His daily routine was sun, sand and a few tasty handouts from the new batch of tourists for the week. He truly has a “dog’s life”! We had a great time, but the sand on the beach also appears to consume things on the beach. It swallows up jewelry, money, keys, toys and even shoes. We needed a daily walk just to retrieve the gear needed for a day on the beach. But by day 3, we could not find Annie’s new shoe. It was a small silver shoe that blended into the sand all too well. Everyone looked for it, but no shoe. It was brand new and her favorite. It always feels like we never lose the old things that are

worn out, but instead it is the latest and best. It was almost sad to see that lonely left shoe sitting on the deck every morning. Lucky she brought two pairs of shoes. I took a walk to the neighborhood grocery store to pick up a few things. On the way, I met Red. He came out from a bright green house with two of his friends. He greeted me like an old lost friend. After a few pets, I looked up to see a driveway scattered with shoes. Now Red appears to have a wide variety of tastes. There were tennis shoes, flip flops and designer high heels. He appeared to be a compassionate thief, because there was only one of each style. Yes, there was a silver shoe too! He freely gave it back, with few apologies. It was great to get the shoe back and it gave us all some laughs. We now knew not to trust our shoes with Red. Like all vacations, it had to come to an end. We packed our gear, checked the beach and went for the last walk in the sand before bed. Tomorrow we were leaving early in the morning. It was a rush to pack the car and get to the airport on time. As we left the house, Alex went to put on his shoes. That’s right, he left them on the doorstep and now there was only one. I guess Red needed a souvenir too.

ammoths entered the New World approximately 1.7 million years ago and ranged through this hemisphere until their final extinction occurred at the end of the Pleistocene (Ice Age) about 10,000 years ago. The mammoth was the largest land mammal that existed worldwide during the ice age. This life-size sculptural representation is based on an actual specimen excavated in the White River Badlands of South Dakota at the Lange/Ferguson archeological site. In life this mammoth stood 14 feet at the front shoulder and weighed approximately 9 tons (18,000 lb.). The sculpture has been left unpainted since mammoth fur recovered in the Soviet Union confirms that these animals had a reddishbrown coat close to the color of rust. This sculpture was is dedicated to the memory of Helen Bernice Hannus (1910~1991), an individual of wisdom and wit whose parting has left an unfilled void. Created by Eugene A. Anderson and L.
