he Forget Me Not Gift Boutique at The Bridges at 57th is happy to announce the arrival of the Eddy Joy Baby Boutique. Jody Kusek, owner of both stores, says the idea for this shop was “born” over the summer, as she realized there is a growing demand for baby items, and there was not enough room at Forget Me Not to accommodate it all. When a storefront opened up just a couple of doors down at The Bridges, she decided the time was right. The name Eddy Joy comes from a combination of family first names and middle names, and it has been a family’s labor of love to get the new store open. If you are familiar with items for babies and toddlers, you will recognize many of the popular product lines in the store such as Mud Pie clothing, Noodle & Boo skin care items for baby (and mom) and Ju Ju Be diaper bags.

Kusek says they have many of their staple lines in the store, like the Little Giraffe and Buddy Blankets. They also carry SwaddleDesigns blankets that were featured on the television show The Doctors. Whether you need an outfit for baby to come home from the hospital in, a durable romper for playtime or something for a special occasion, you can find it – for boys and girls – at Eddy Joy. “For the first time, we are carrying newborn sizes,” says Kusek. “We just didn’t have room before at Forget Me Not to accommodate all of the different sizes and products that we would have liked to offer. It’s exciting now that parents-to-be can pick out a special new outfit for their new baby to come home in.” The store carries Angel Dear Knits that are soft, fashionable items and that have appeared in a number of national magazines as “cool mom picks” and in photos of celebrities with their children. As the temperatures start to get cooler, you can find plenty of fuzzy jackets – even bomber jackets for the boys – and a colorful variety of hats for girls and boys. Many of the hats are handmade, knitted by one of Kusek’s Forget Me Not employees. Wanting to ensure kids are outfitted from head to toe, Eddy Joy has a wide array of fun socks, Baby Legs legwarmers and WeeSqueak shoes that actually squeak as children walk. The squeakers can be removed, but many parents say they love to hear their little ones squeak as they jump and run and giggle. The pacifier is made of silicone and is BPA free. The attached soft plush toy, like a monkey, duck or frog, makes it easy for baby’s hands to grasp, which means fewer dropped pacifiers and less searching around in the diaper bag. If you are looking to decorate a child’s room, be sure to check out the colorful canvas prints on the walls or the selection of cute night lights and lamps. One of the hottest new items is the portable iPod doll for girls and boys that will be featured on Oprah’s “favorites” list this fall. With built-in speakers and an MP3 port safely tucked away inside, parents can download their favorite tunes “from Bach to Rock” for playtime or bedtime. While shopping in this colorful store with brightly painted walls and leopard-print carpet, Mom can find a few things for herself, too. They make a fashion statement while providing distraction and entertainment for little hands and mouths. “This has been so much fun for us,” says Kusek. “We’re excited to be able to offer a one-stop-shop where you can find gift items for newborns and young children and have them wrapped at no charge.” Kusek says Eddy Joy is also offering a baby registry. f you have a little princess in your life, make a date now to head to Pedicakes for a little shopping and spa time. Owner, Mandra Connelly, recently opened the shop in a quaint little space on 39th Street, just south of the HyVee on Minnesota Avenue. The exterior looks like you have arrived at someone’s home, but the colorful painted rails along the walkway are your first indication that you are about to step out of the ordinary into a world of frills and fun. Mandra says the idea of opening her own boutique has been

percolating for about 10 years, ever since they visited a little shop at Disneyworld with their first daughter, who is now 12. Her original plan was just to have a gift and clothing store, but as a licensed cosmetologist, Connelly later altered her plan to include a little spa area for manicures, pedicures and facials. “I come from a very artsy family,” she says. “When we were younger, my dad would travel all over to art shows, and we would go with him. I wanted to do something with my love of artsy and out-of-the-ordinary things.”

Mandra’s goal was to make sure that Pedicakes had an intimate, “boutique” feel while still being affordable. “I love to be pampered, but it can sometimes be spendy,” says Connelly. “And most spas don’t offer services for young children. I wanted to make sure what I offer is affordable so anyone can try it.” There is a whimsical cupcake theme throughout the store and in the spa services. Little girls will love the jeweled cupcake pendants to wear, and what child wouldn’t like a cupcake in their bath? These cupcakes, however, are actually “bath bombs,” and they come in two sizes. Simply drop one in the tub and watch it fizz and dissolve. The essential oils and salts help relax and moisturize…plus they fill the air with scents like mint chip, vanilla, chocolate-strawberry or bubblegum! The large cupcake and ice cream cone-shaped bath bombs can be broken up and used for multiple baths. Admittedly, she says, the store is geared toward “girly girls” at the moment, but she has plans to add more clothing and other things for boys and older children. You can find muslin blankets and Sophie Giraffe toys for infants, popular board books for girls and boys and, of course, all things princess – tiaras, wands, jewelry, hair accessories and flouncy pettiskirts. Pedicakes also carries the Gunapod wearable blankets for infants and toddlers, a stylish little sleeping bag that can be worn at naptime. – like a Mud Pie outfit with different designs on each pant leg – Mandra adds her own touches to sleepers, rompers and other children’s clothing. “I don’t really say that I sew…but what I do is to ‘embellish’ clothing with ruffles and ribbons to make them unique,” she explains. One thing Connelly will work with customers to do is create customized outfits. The customer can pick out an outfit, such as a solid color sleeper, and then choose from the wide array of ribbons and ruffles. Once they have picked out their favorite colors and textures, Mandra will then add those special touches to the outfit. One of her other favorites in the store is the My Friend Huggles doll. Each oversized doll represents a specific virtue, such as fair, generous, honesty, cheerful and grateful. This helps the child learn about the virtue while having that special friend to call their own. A space on the doll’s heart allows the child to write their own thoughts. While the dolls are all girls at this point, Connelly says a boy doll is coming. “I love these dolls. What they offer children and what they teach is so valuable. I want this to be that special doll that kids hang onto into their adulthood.” Sold separately are fuzzy Huggles blankets that correspond to each of the dolls. You can find fun things for your child’s room at Pedicakes as well, like a working pink cuckoo clock. Mandra’s sister is a talented artist who works with metal, and many of her pieces will be available at the store, such as wall hangings with words like “Peace” or “Diva” and magnetic boards to hold notes and flowers. The magnets themselves are metal cut-outs in shapes like flowers and hearts, and bejeweled (of course!) for the perfect princess room accessory. Along with her nail and facial services, which are offered by appointment only, Connelly plans to add belly molding for expectant moms. You can find Pedicakes at the expo for her at the Sioux Falls Convention Center October 19 & 20 with gift certificates for $20 towards spa services at a cost of just $10. magine a time not long after the turn of the 20th century in rural South Dakota…gravel roads, rolling hills covered in grasses and corn, and families spread across the countryside in small towns and farms. It was in such a place that Stefen and Hilda Paulson opened the Norway Center Store.

Located just south of Canton, it’s the store that Helen Bergren remembers going to as a child. They would go on Saturday nights if they had their Bible lessons learned for Sunday and if they had their “hair done up nicely and our shoes were shined.” She worked at the store for a summer when she was 15. And,

Bob and Helen met in Minneapolis and lived in New York, Colorado and other places around the country, but eventually decided to come back to the area where Helen grew up. “I remember my brother calling me to tell me that the Norway

Center Store was for sale,” Helen says, “and how he thought we should buy it and fix it up. My first reaction was ‘Are you crazy?’” After giving it some thought, though, Bob and Helen did purchase the building that had been a landmark for people in the area since 1926. Bob says the vision of transforming Norway Center was

Helen’s, and she credits Bob with all of the work to make it happen. “He can do or fix anything,” she says with a smile. They kept much of the original structure intact, such as the front windows and overhang, so from the outside it still looks very much as it did 86 years ago. Inside, however, they remodeled and rebuilt, creating a comfortable living space filled with history.

home sit atop built-in cabinets that he added, with glass-paned doors that he rescued from a fire at a resort near Brainerd, Minnesota, where Bob and Helen both worked for several years. The refinished side table belonged to Bobâ&#x20AC;&#x2122;s parents, and a revolving bookcase date stamped from the 1870s is used for special dishes and knick-knacks. That piece came from the

Augustana Lutheran Church in Minneapolis. It is fitting that the couple who brought new life back to Norway Center are, themselves, of Scandinavian descent. Bob is Swedish and Helen is Norwegian, and much of that heritage is evident in their home’s décor. Behind the living room and formal dining room, which used to

be one big space that housed the country store, is the original living space. One of Helen’s favorite parts of the remodeling project is the kitchen. Bob took wood that had been in the store around the opening to the basement and repurposed it for kitchen cupboards and the pantry built-ins. It is painted white and

provides a clean backdrop for all of the red Scandinavian accents. The old hand crank phone that was in Helen’s house growing up now hangs on the wall in the kitchen. While the upstairs is mainly what the Bergrens refer to as the “attic,” there is one bedroom they lived in during the renovation because it was the only room in the living space that actually had heat. Now, it serves as a cozy guest room where Helen has her sewing machine. “I love to come up here and sit and enjoy the afternoon sun,” she says. Over the years, their home has been a curiosity for former residents who remembered the old country store, a site for tourists (including people from Norway) and a beacon for lost travelers. The Bergrens recall stories of many travelers who have stopped to ask for directions, college kids who ran out of gas just down the road and Helen found them some gas that Bob kept around for the lawn mower, and even a family with three children that got caught in a blizzard right by their house. They were still in the remodeling stages but were able to take the family in and put them up in the upstairs bedroom overnight. “I’m sure we probably scared them,” says Helen, “because it was still such a mess here. But, they were all able to sleep up in the room and by the next morning the road had been cleared so they could continue on their way.” Off and on in recent months, the property has been for sale as the Bergrens prepare to downsize and move closer to family in Canton. It’s bittersweet for them, with so much of their life and history within these walls. Certainly, it is hard to imagine being anywhere else, after 22 years since they first purchased Norway Center. Looking around at pieces like the large ornate bookcase from an old retirement home in Minneapolis, the end table with intricate carvings of angels and a beveled marble top and the big brass bed that had belonged to Bob’s great-grandparents from Sweden, Helen knows it will be hard to let go of the things they will no longer have room for in a new home. “I hate to leave this place,” Helen admits. “We know it’s time to move on, but my heart will always be at Norway Center.”

Pumpkin Chip Bread

Pumpkin Spice Cake

2 1/4 cups flour 2 cups sugar 2 teaspoons cinnamon 1 teaspoon baking soda 1/2 teaspoon EACH, ginger, nutmeg and cloves 2 eggs 1 cup canned pumpkin 1/2 cup vegetable oil 1 cup chopped fresh or frozen cranberries 3/4 cup mini chocolate chips

1 (18-1/4 ounce) spice cake mix 3 eggs 1 cup canned pumpkin 1/2 cup water 1/2 cup vegetable oil 1 3.4 ounce package instant vanilla pudding mix 1 teaspoon cinnamon 1/2 cup chopped pecans 1 can cream cheese frosting

In a large bowl, combine the dry ingredients. Combine the eggs, pumpkin and oil and add to the dry ingredients. Stir just enough until moistened. Fold in the cranberries and chocolate chips. Pour into two greased 8x4 inch loaf pans. Bake at 350˚ for 50-55 minutes or until the bread passes the toothpick test. Cool for 10-15 minutes and then remove from pans to a wire rack to cool completely.

In a large bowl, combine the dry cake mix, eggs, pumpkin, water, oil, pudding mix and cinnamon. Beat for 4 minutes on medium speed. Stir in the pecans and pour into a greased and floured 10” fluted tube pan. Bake at 350˚ for 45-55 minutes or until the cake passes the toothpick test. Cool for 10-15 minutes and then remove from the pan and cool completely on a wire rack. Frost with the cream cheese frosting. Serves 12-16.

he late, great Julia Child frequently urged her television viewers “don’t be afraid.” But years after her passing, there are some foods that just strike fear into the hearts of even the most adventurous eaters. I don’t mean the kind of Halloween goodies made to look like brains or eyeballs. I’m talking about those bits with odd sounding names, the hidden pieces of the animal you assumed were discarded, and the little critters that you thought were just a joke. I’ll admit, I was hesitant to try some of these at first, but I took a leap of faith and found some tricks and treats that are among my favorites today. I’m not suggesting that we all dig up earthworms for supper or try to recreate the stomach-turning dishes from the latest episode of Andrew Zimmern’s “Bizarre Foods”...au contraire. I just want to dispel a few myths about some often maligned edibles that I think you should give a chance. Warning, this article may not be for the faint of heart or queasy vegans! Anchovies We might as well start with the letter A, and in my scary food dictionary, A is for Anchovy. The humble anchovy is often a joke;

it’s the thing you want left off the pizza with everything. You’re probably picturing a cartoon cat pulling a complete fish skeleton out of its mouth, right? Well the truth is, you’ve probably eaten anchovies and not even known it. If you’ve had a good Caesar salad dressing, it probably had anchovies. Ever had a really rich Italian tomato sauce, with a few flavors you just couldn’t figure out? Probably anchovy. When cooked with just a little olive oil, anchovies almost disappear into sauces, but they add a rich salty flavor to the background of the dish. I add them to the pot with most braises of short ribs, veal shanks or pot roast. My beloved doesn’t care for most whole anchovies, but if I make a Caesar salad dressing without the anchovies, she’ll know it’s not right. When we went to a restaurant in Chicago a few years ago, she had a “deconstructed Caesar salad” that had a beautiful white anchovy, a Spanish boquerone, on the top. Voila! We had found an anchovy she would eat whole. I’ve recreated that salad several times (basically anytime I can get those Spanish boquerones) and it is always a hit. And once I have the jar of anchovies open, I’ll usually put a couple on a pizza. Seriously, don’t knock it until you’ve tried it. Sweetbreads First of all, sweetbreads are not “sweet breads.” Most people think of caramel rolls and pastries when they hear sweetbreads. Yes, breads that are sweet can be called sweet breads, but they

should not be confused with sweetbreads, which are most often the thymus glands of the cow. Sometimes the pancreas and other “off cuts” of meat are included, but if you see them on a menu, more than likely the sweetbreads are the thymus glands. Last summer I was in Chicago with two of my employees, and I decided to treat them to dinner at the eponymous Michelinstarred restaurant of Graham Elliot who you may have seen on “Top Chef Masters”, “Iron Chef America” or “MasterChef ”. Somewhere in the middle of the ten-course tasting menu came the sweetbreads. While one of my guests who had grown up on a ranch was used to eating all different parts of the animal, the other liked the taste until she found out what it was. That just about spoiled the meal. Despite her psychological problem with the source of the meat, it was sweet and crispy and luscious. No need for concern. Sweetbreads are one of the things that if I see it on a menu, I will probably order it. Liver Since we’re on the subject of the internal organs, we might as well dive in to offal. Offal is the term for the off cuts of meat that today we may think of as inedible. But, not that long ago when people would butcher their own animals, nothing went to waste. So things like the glands, heart and liver wound up on the dinner table. My dear, sweet mother used to make liver and onions and I hated it. The beef liver always tasted metallic and the onions

overwhelmed me. But what I’ve found is that liver makes great pâtés, terrines and sausages where the strong flavor can be mellowed with fat and rounded out with garlic and seasonings. And if we move down the food chain to poultry, the livers are wonderful. Foie gras, the fattened liver of ducks, is so good they’ve outlawed it in California. If you ever get to Graham Elliot’s restaurant, ask for the fois gras lollipops. They will change your opinion about liver forever. Intestines Intestines are one of those things you just don’t talk about in polite company, right below religion and politics on the list of “Things Thou Shall Not Discuss”, especially in a discussion about food. I’m sure a whole bunch of people just turned the page pretending I never said the “I” word and skipped right on to Riccardo’s thoughtful story about wine. But for you hearty souls who stuck with me, I salute you! For you know that without intestines there would be no sausage, and in the words of Doug Sohn, owner of Hot Doug’s Sausage Superstore and Encased Meat Emporium, “There are no two finer words in the English language than ‘encased meats’ my friend.” Encased meats, like hot dogs, sausages and salami are often (and at their best) sheathed in natural casings. What are those casings? Intestines of cows, pigs and sheep. Of course they’ve been cleaned and the fat stripped away from the outside and linings removed from the inside. But, in the end, it’s still the business end of the animal’s digestive track. But don’t think about that, just enjoy the product and reward yourself for being an adventurous eater. Lutefisk My wife’s family is Scandinavian. The few branches on the family tree that aren’t Norwegian are Swedish – lots of blue eyes at the family reunion. At the holidays we always have some lefse and pickled herring and her dad always suggests we have lutefisk. Now, I am not a picky eater and I will try just about everything, but lutefisk is fish soaked in lye. And I remember enough high school chemistry to know that lye is caustic and it will burn you. The stuff you use to clean out your drain and eats through all of the crud in the pipes is made with lye. It should have the skull and cross bones on the label. This stuff is poison! So that’s where I draw the line. No lutefisk for me. Sorry, I can’t do it. So if you’ve been timid about trying something different, remember Julia’s words and “Don’t be afraid,” but when it comes to lutefisk, don’t be silly! Do yourself a favor, eat something good today. Although he’s been told he looks like Andrew Zimmern, Jim is really just an advertising guy who runs ADwërks, an ad agency in Uptown Sioux Falls.

“I don’t admit this to many people, but when I’m about to go on stage in front hundreds of women at the annual expo for her to do my wine seminar, I start to hyperventilate. I begin to think I’m having a panic attack when all of the moisture dissipates from my mouth and somehow reappears as sweat on my palms.” and I can literally see my heart beating through my shirt. So, the natural question one would ask is, “Why am I doing this?” Of course the answer must be one of two things: I’m either a glutton for punishment or I’m insane (as defined by repeating the same behavior and expecting a different result.) Well, the real answer is none of the above; rather, I do what I do because I believe in two things: 1. Living with passion and 2. Continually expanding my comfort zone. Speaking at the expo for her (this will be my 7th year) accomplishes both... and I get to do it by partnering up with a wine company called ONE HOPE. ONE HOPE is not your average wine company; in fact, ONE HOPE does more than make wine, they help many causes through their wine sales by donating 50% of all profits to charity. Yes, you read that right, HALF of all of their profits go to charity. This is one of the most unique concepts I have come across in the wine industry, and I am excited about sharing these wines with all of you at show this year!

Like most game-changing ideas, the inspiration for ONE HOPE wine didn’t come from an Ivy-League MBA program. It rose from the aisle of a grocery store. It was the morning of October 15, 2005, while stocking shelves that young Jake Kloberdanz, a sales rep for a large wine distributor, had his “aha” moment. Jake noticed that specialty items used to raise awareness and proceeds for causes enjoyed preferential, more prominent placement on shelves, and consequently moved off those shelves much faster than other products. Some six months after Jake’s epiphany, a good friend of his was diagnosed with Hodgkin’s Lymphoma at the age of 23. It wasn’t long before HOPE wine was incorporated. a history of being a gangster hideaway, headquarters, and possibly the location of some very gruesome scenarios. Two towers with 850 guest rooms containing a lot of permanent residents, this hotel is rumored to have been one of Al Capone’s hangouts. There is an underground marble passageway that was constructed when the hotel was built in 1893, to connect it with the auditorium building next door. The security guards who work here talk of several incidents of seeing ghosts, which supposedly happens on a regular basis. A young boy is seen wandering around the rooms and hallways of the north tower every so often. A female ghost whispers in the ears of hotel staff when they walk into the Florentine Room, which is one of

the banquet rooms. And in room number 441, there is a very mysterious circumstance. Security is called to room 441 more than any other room in the hotel, and guests always report seeing the exact same shadowy outline of a woman.

Myrtles Plantation, St. Francisville, Louisiana Built in 1796, this house is said to be built on Tunica Indian burial grounds. The owners say this is the most haunted hotel in America, and guests might say the same thing. Settled amongst the murky swamps and lowlands of Louisiana’s West Feliciana Parish, Myrtles Plantation has 11 rooms and many stories. The ghost of a naked Indian girl has been seen by several guests. The most famous haunting at this location resulted from a multimurder tragedy that took place in 1817. Legend has it, that the owner of the plantation during that time had an affair with his house slave, and then found her eavesdropping on his private conversations, so he cut off her ear. His house slave, named Cleo, was so angry that she poisoned his eldest daughter’s birthday cake, killing his wife and two children. Shortly after, Cleo was murdered and found in the Mississippi river. Guests claim to see Cleo wandering around the plantation, as well as sitting next to their bed staring at them. Also at the hotel, a haunted piano will play a single chord and a mirror will appear clean in person, but in photos of the mirror you can see faces, handprints, and smudges.

Hotel Monteleone, New Orleans, Louisiana A 19th-century hotel in the French Quarter, Hotel Monteleone is filled with paranormal activity. Guests, staff, and the International Society of Paranormal Research (ISPR) all have stories to prove it. The front desk staff insist that their ghosts are friendly, stating that they have witnessed the doors of the hotel restaurant swing open around the same time every evening. The ISPR investigated this and captured what appears to be the spirits of a waiter and a maintenance man opening these doors. Several guests have had similar encounters with a ghost of a young boy in a striped shirt walking up to their bed. The

This Civil War-era hotel was established in 1797, and is nearby the infamous battlefield and the Wills House, where President Abraham Lincoln edited his Gettysburg Address. Guests here have reported seeing the ghostly figure of a woman named Rachel, who was a civil war nurse who lived at the hotel during the battle, roaming the halls and rooms. Trays have floated and carts have moved right in front of the hotel employee’s eyes, and people have even seen Rachel pacing back and forth on the street outside. Clothes will go missing and drawers will be left open in rooms, and the temperature will drop suddenly when passing by certain spots throughout the hotel. Another female ghost has also been sighted, wearing a fancy dress and dancing in the ballroom. Gettysburg, Pennsylvania, is said to be one of the top three most haunted cities in the United States by Haunted Tours America.

Manresa Castle, Port Townsend, Washington This beautifully preserved Prussian style castle was built in 1892, then was occupied by the Jesuit order in 1927 and used as a training college until it was converted into a hotel in 1968. Footsteps, a man crying, and the clanking of chains are reported to be heard above room 302, which is located right below where this incident supposedly took place. Another ghost that is said to still live in the castle is that of a woman named Kate, who jumped out of room 306 when she heard the news that her lover was lost at sea. Both Nancy and Bill wanted to be strong for the other. Nancy said fighting cancer together “helped both of us buck up. We had teamwork and it helped us get through it in a special way.” Together with the support from doctors, staff and volunteers at the Avera Cancer Institute and those in their family and church communities, the couple reached their goal. As they had hoped and prayed for, they both made it to their 50th wedding anniversary in good health. “It was a double celebration,” Nancy relates – one of reaching this milestone anniversary, and overcoming cancer together. As a breast cancer survivor, Nancy wanted to give back as an advocate once again. After completing her treatment, she became an Avera Think Pink Lady, while she and Bill also volunteer at the Avera Cancer Institute. As a Think Pink Lady, she promotes the importance of routine mammograms and screenings, as both her cancer and her husband’s were discovered because of them. As a member of this group, she also is part of the volunteer leadership for the Avera Race Against Breast Cancer, which is celebrating its 25th year with the next race, scheduled for May 11, 2013. As an effort that offers guidance and support as well as devotion to finding a cure, “Think Pink provides the same kind of thing as the March of Dimes.” Nancy is happy to once again be “part of an organized effort to help provide emotional and financial support” to those suffering from illness. Nancy was able to witness the dream of a cure for polio become reality when the polio vaccine was introduced in 1955. “I just hope I live long enough to see what happened with polio happen with breast cancer…I would love to see the Race go a whole different direction once a cure is found for breast cancer.” Think Pink strives to connect patients with survivors who are able to share their stories and encouragement. “As Think Pink ladies, we try to be an advocate for others who are facing breast cancer.” In that role, she encourages women to get their annual mammograms and urges everyone to help them achieve the Pink Ladies’ “ultimate hope – to see a victory against breast cancer.”

Paper Pumpkin Ornaments Materials needed: String, scissors, stapler or paper clips, 8.5 x 11” construction paper in brown, orange, and green. Directions: Take one piece of orange construction paper and turn horizontally. Cut into 1” wide strips, creating 1” x 11” strips. Next, measure some of the strips and create some shorter pieces, resulting in (1) 6” long strip, (2) 7” long strips, (2) 9” long strips, and (2) 11” long strips of orange paper. Placing the smallest strip in the middle, gather all of the strips together with the ends flush, and put them in order so that the longest strip is on the outside. Use a paper clip or a staple to secure, depending on if you want the ability to add more elements if you use a paper clip. Now line the opposite ends up so they are all together, mirroring the other end, and secure. Next, take one piece of brown construction paper and cut one 1/4” x 3” long strip for the stem of the pumpkin. Wrap this strip around a pencil and hold it in place for about 30 seconds, creating a curly effect. From the green paper, cut out two leafs in any style you’d like. Add the stem and leaves to the pumpkin, then add a piece of string to the same end, using a paper clip or staple, and it is ready to hang up in your home for some seasonal fun!

Pumpkin Seed Mosaic Materials needed: Poster board, painters or masking tape, white glue, black marker, paint brush, green, brown, orange, and any other desired color of paint, something such as newspaper to cover a painting surface, and several dried pumpkin seeds. Directions: If you are using pumpkin seeds that are not store-bought, be sure to roast and dry them first to ensure the paint will stick. Prepare your painting and crafting area by covering with newspaper or another form of protection. Taking the tape, create several large circles, taping the ends together with the sticky side out, and lay them down to the craft surface. Taking the pumpkin seeds, lay them out in a row on the tape so they stick to it. Paint the seeds according to what your design will be. For example, if you draw a pumpkin design on the poster board, paint enough seeds green for the leaf, brown for the stem, and orange for the pumpkin portion. For a tree, paint enough seeds various fall colors for the leaves, brown for the trunk and stems, and any other desired elements in the design such as grass or sunshine. Let the paint dry and draw an outline of your chosen fall design on the poster board. Spread white glue onto the design and spread an even layer out to cover the entire inside of your drawing. Once the seeds are dry, place them onto the glue painted side up and step back to admire your pumpkin seed mosaic.

Real and/or faux very small squash, any other fall elements to add in to the pumpkins and squash, and a glass bowl to use as a centerpiece. Directions: Use the larger miniature pumpkins to create a base for the filling of other smaller pumpkins and squash and decorations in the glass bowl of your choice for this simple, yet beautiful pumpkin centerpiece for your home. Use other accessories such as leaves, pine cones, or whatever you come up with as fillers for the decoration and place on your table or in your entryway for a festive way to decorate your home.

Directions: These can be made into whatever design you would like, whether you want to play around with an upside-down pot or a right-side-up pot, the opportunities are endless with what you could come up with for porch or table decorations, fun treat holders, and more! Here are just two variations you can do with a simple terra-cotta pot for the month of October. The first step is to paint the pot orange inside and out with a paintbrush and orange craft paint. If the pots are naturally orange in color to your liking, you can skip this first step completely. To create a jack-oâ&#x20AC;&#x2122;-lantern, add a face with yellow paint. When dry, use a black marker to outline the yellow facial features. Fill with candy, or if upside-down, add accessories to the top such as a stem and leaves and some fall-like foliage. For a pumpkin, use a brown marker to draw lines all the way around the pot from top to bottom, resembling a pumpkinâ&#x20AC;&#x2122;s ridges. With the bottom of the pot facing up, use various decorations such as green felt and chenille stems to create a faux stem and leaves, or use other finds from the craft store such as fall foliage for a more pumpkin patch type look.

n a quiet street near Marion Road sits a home that belongs to the Brewer family – Rachelle, her husband, Josh, and their two daughters, Kyera and Taylie. The family has transformed their house over the past four years by giving every room its own distinct personality. The couple also opted to knock down several walls as well as build several new ones to carve out new rooms and spaces for their ever-expanding brood. “Our daughter Taylie’s room is completely new,” says Rachelle. “We added a wall in the living room because we wanted her to have her own room. The living room was huge and we never used all of the space, so my husband and dad worked together to put up a couple walls and make a nursery. I actually like it better now because the hallway makes the bedrooms and bathrooms more private.” When it came time to decorate their youngest daughter’s room, Rachelle relied heavily upon the internet for ideas. “I didn’t go to any one website ” she says. “I just Googled nursery ideas and themes, and I came across a room that had a gray and yellow color palate. Funky and contemporary lamps from IKEA and Lowe’s provide warm light to the space as well as a sense of comfort. “We went up to IKEA while I was pregnant to purchase a majority of the items for Taylie’s room,” she says. “I kind of already knew what I wanted because I had looked online.” The unique and ornate details and décor items in the nursery were either made by family members or purchased at local stores. The espresso-colored crib was bought at Target, and the bedding and bumper pad were handmade by Taylie’s greatgrandmother. A gray rug that adorns the floor with a unique floral pattern sits adjacent from the crib, and flower decals on the wall provide a subtle contrast to the walls as well as design cohesiveness with the gray rug. Due to the nursery’s small size, there was no room for a closet. Therefore, Rachelle needed to be resourceful and maximize the space by purchasing two sizeable white dressers to hold all of Taylie’s clothes and toys. “The dresser was Kyera’s, but we bought her another one before Taylie was born,” she says. “It was a different color, so we spray-painted it white to match the color scheme. We also purchased new knobs for it. We always

wanted a changing table, but knew we didn’t have room for one, so we just bought a changing mat and placed it on top of the dresser. I really liked how that worked out. We also bought the white closet and it works out perfectly for a nursery because she doesn’t need a whole lot of closet space.” The most cherished piece of furniture in the room is the rocking chair, which was purchased from South Dakota Furniture Mart. “My favorite thing to do in Taylie’s room is to cuddle with her and rock her to sleep,” says Rachelle. “She’s such a little snuggler. I really enjoy those quiet, peaceful moments alone with her.” Even though Taylie’s room is short on square footage, it is not short of the love that her family has put into it. The fun details and happy décor also make the space perfect for a child of any age. “The room really turned out better than I thought it would. I’m really happy with it.”

arah Caskey knew exactly what she wanted when she gave birth to her third child. The Minnesota mom had heard about waterbirth and was intrigued by the idea. She wanted a peaceful, natural way to bring her baby into the world. The experience was exactly that. “It was so relaxing and calming,” says Caskey cradling newborn Tenley in her arms as her 18-month-old son Adrian kicks a ball nearby. “She didn’t even cry for the first few minutes. It was the perfect birth for all of us.”

Since her infant daughter had spent the last nine months developing in the amniotic sac, being birthed into water probably felt quite normal, she says. ‘It was such a beautiful time...such a different experience,” said Caskey. “I would never do childbirth any other way if I could help it.’” A New Option Sanford Health Certified Nurse Midwife Terry Engelmann says waterbirth is a proven way to improve the entire childbirth experience. When Sanford Health began to offer the option earlier this year, expectant moms responded enthusiastically. “It’s a safe and natural way to deliver a baby,” says Engelmann. “Water seems to make it easier for the woman to relax during labor. This allows her listen to her own body and birth the baby easily.” During waterbirth, the mother uses an inflated pool made specially to allow her to be immersed in warm water up to

her shoulders during labor and delivery. Engelmann said that scientific studies have shown that women who give birth in water have: • Lower blood pressure. • M ore efficient uterine contractions and better blood circulation. • Increased production of endorphins, which is the body’s natural pain reliever. • A more relaxed and elastic perineum, reducing the incidence of severity of tearing in labor.

Caskey and her husband Kyle were interested in waterbirth when their second child was born, but it was not yet being offered in hospitals in the region. They were pleased to learn that it was available now with her third pregnancy.

Sarah’s Experience When Caskey went into labor, she was able to use a deep, fully- cushioned pool that allowed her to immerse herself up to her shoulders in relaxing warm water. Throughout her labor she could move around and change position without feeling uncomfortable, she said. The water helped ease the pain of her contractions and kept her calm and focused. Her husband, Kyle, was able to be there with her, standing near her head at the edge of the pool when it was time to give birth. After Tenley was born, a certified nurse midwife lifted her out of the water. Sarah said she was amazed at how happy and relaxed her daughter was from the start. A Better Birth Engelmann said she’s found the majority of patients who have experienced “landbirth” before they try waterbirth say the same thing. Waterbirth is not an option for every patient, Engelmann says. Women who need constant electronic monitoring of the baby throughout childbirth, such as needed for an epidural or induced labor, cannot have a waterbirth. Other conditions that would likely rule out waterbirth for a mother would be an infection, large amount of bleeding, high blood pressure, insulin dependent diabetes or birth prior to 38 weeks of gestation. Caskey said she was so glad to bring her new daughter into the world in an environment that was good for both her and the baby. “When you’re giving birth, you want to be comfortable with what you choose,” says Caskey, smiling at her baby girl. “We did a lot of research and I can’t imagine something that would be better.”

Never Say Never Returning to her roots gives others the opportunity to do the same.

or Hannah Walkes, returning to her agricultural roots has provided more than a career. It is giving her the opportunity to help the next generation of South Dakota farmers build their own futures on the farm. Hannah Walkes grew up on a traditional corn and soybean farm in southwest Minnesota. Her family also raised pigs, cattle and sheep. “Growing up on a fourth generation hog farm, I swore at a young age that I would never grow up to work with pigs … it was hard work,” said Hannah. However, as she earned her college degree at South Dakota State University and conducted animal health and vaccine research, she was impressed with the improvements in caring for and handling pigs that made it better for both animals and the farmers who cared for them. “As the industry developed safer practices and more farmer and animal-friendly facilities, I ventured back to my roots. I wouldn’t have it any other way,” she said. For the past five years, Hannah has combined her background in animal health with a passion for helping family farmers succeed. As a swine specialist with the Pipestone System, she uses her education experience in microbiology and infectious diseases to help farmers address their animals’ health challenges and to promote animal well-being and food safety. The Pipestone System is a group with a unique model that helps individual family farmers form groups to build hog barns and own the pigs housed in them. “The owners of Pipestone System barns are family farmers with a stake in the communities surrounding the barns,” said Hannah. “Our goals are to be able to keep family farms independent and sustainable to allow future generations to come home.” She said that adding a livestock component to a farm operation can be a good option for diversifying and bringing in new family members. Pigs provide an additional revenue stream, increase sustainability and allow for additional family members to be able to return to the farm and carry on the family legacy.

“With three brothers who all had a desire to return to the farm, I have seen firsthand how difficult it can be to bring in additional family members into a farming operation,” said Hannah. “Rising land, machinery and input costs make it very difficult.” There are about 200 independent family farms involved in the Pipestone System producing about four million pigs each year. State-of-the art barns and management practices help keep pigs healthy and produce a nutritious food supply. The group investment also allows farmers to take advantage of economies of scale they couldn’t on their own, said Hannah. Farmers can receive volume discounts for feed, animal health, and other services, which can quickly make a difference in the bottom line. In addition, many farmers feed the corn they produce to their pigs; and manure from the hog barns is applied as fertilizer to cropland. Hannah works with independent pork producers in five states to help them monitor and maintain the health of their pig herd. She works to ensure that Pipestone’s commitment to ethical treatment of animals is carried out in all barns. She also brings another important perspective to her job: being a mom. Hannah, her husband Dominic, and their two children live in Brandon, South Dakota. Their son Caden is five, and daughter Logan is two. “Today’s South Dakota pork is the safest in the world. As a mother with young children, that is important to me and my family,” she said. Modern hog barns have helped eliminate food pathogens that once plagued the industry. Raising animals indoors provides a climate controlled environment even in the harshest of South Dakota weather conditions, while keeping the pigs safe from predators and providing them with a constant, well-balanced diet. or an organization to last more than 100 years, it has to be strong, yet flexible. It will no doubt be rooted in tradition, but it still must be innovative. Most importantly, it must provide immense value — value that transcends the societal changes that occur over the course of a century. 4-H is just that kind of organization. Since its humble beginnings in the late 1800s and early 1900s, 4-H has continued to evolve in order to provide youth opportunities to develop life skills such as leadership, citizenship, and character through handson learning. In living up to its motto “to make the best better,” the 4-H organization has successfully enhanced the “cows and cooking” agricultural programming it is traditionally known for by developing new programs such as engineering, rocketry, robotics, photography, and precision sports. These newer program areas not only interest today’s youth but also help to bridge the gap between rural and urban areas. In addition to being a former 4-Her, 4-H mom, and 4-H volunteer, Nancy Swanson serves as the executive director of the South Dakota 4-H Foundation, an entity that functions as the primary fundraising vehicle for 4-H in the state. With National 4-H Week being celebrated in October, we sat down with Nancy to find out how the 4-H of today equips youth with life skills that will prove valuable far into the next century.

For those who aren’t familiar with 4-H, what is it? 4-H is a youth development organization made up of groups of young people in communities that are working with an adult advisor and learning together about different kinds of skill sets in subject matter areas like science or agriculture or photography. And I think—most importantly—4-H is about citizenship and community service. When you’re in 4-H, you are doing community service.

So, what do the four “H”s stand for and how do those relate to youth development? That’s a really good question. The four “H”s stand for head, heart, hands, and health, and those four “H”s have really stood the test of time in youth development. Young people use their heads to develop confidence and skill sets in a particular area. They are developing their hearts when they do community service and projects reaching

out to others. The hands aspect comes into play because 4-H is a “learn by doing” organization. It’s not about lecturing to them. It’s about having them do something with their hands and then reflecting on what they’ve done. It’s how they learn best. And health has always been a component as far as how we take care of our health—not only for ourselves but for our families. 4-H helps youth think about things such as “What do we eat?” and “What activities do we do?” Even mentally and emotionally, they are learning how to stay really sharp in those areas as well. One health-related thing that we unexpectedly learned was how beneficial precision sports—especially archery—are for young people who have Attention Deficit Disorder (ADD). A sport like archery really helps them focus and figure out how to make their body more disciplined in that particular role. And I’ve had a number of parents tell me that their children with ADD are successful for the first time in their lives in doing something like archery, and therefore that success gives them confidence that they were not able to achieve in school. It helps them to feel really good about themselves. So, over the course of time, head, heart, hands, and health have remained the same although the activities we do have changed to be more contemporary in many ways.

Speaking of evolving, 4-H has been around for more than 100 years. How have those activities grown and changed over time?

I’ll start first with what hasn’t changed. The focus of 4-H has always been the development of the child. What has changed are the tools that we use for that development. It’s easy for people to think about our agricultural and family and consumer science heritage, because they think of the show ring and the canning and cooking and those kinds of things. It is true that those are the tools we first used to educate young people. What is different now are all of the new projects that we have which include things like photography, robotics, wind energy, renewable fuels, and all the precision sports projects such as archery. We know that young people are interested in those areas, and because of that, now we have curriculum and clubs that focus around those areas as well as our traditional projects. As the interests of young people have changed, so have the tools that we use to reach those young people.

So that common stereotype that 4-H is for farm kids isn’t necessarily true anymore? It is true that it is for farm kids, but it is also true that it is for kids that live anywhere. In fact, our 4-H enrollment in this state is 70% non-farm, so we have 70% of our kids that come from small towns and cities in South Dakota. And our largest project areas are the more contemporary project areas. So that indicates that we are relevant to young people in the more urban areas and yet we haven’t forgotten our heritage and what 4-H was started on in the traditional areas.

One of the modern projects you mentioned has to do with science and technology. What kinds of science experiments are 4-Hers doing? The science experiments range from wind energy to renewable fuels to robotics, which is our emphasis this year. When they do the experiments, those experiments are backed up by science research from a land grant university and the curriculum supports that research. But again, it gets back to the hands-on learning. For example, when we did the renewable fuels experiment, we really focused on how ethanol is made. There was an age-appropriate science experiment that used a pop bottle and some chemicals and a balloon, and it showed how ethanol is generated. And I think that’s the uniqueness of 4-H. It takes something that is a real life subject matter and makes it youth appropriate so that someone who is eight or someone who is 18 can understand the principles. It is engaging eight or nine-year-olds in a science area that they may not get to until later in school. We’re trying to pique that interest a little earlier. To help build that interest, one of the things that the national 4-H organization started a few years ago is something called National 4-H Science Day. On that day, every person in this country— whether you’re in 4-H or not—can do the same experiment that is featured on the national 4-H website. This year, that national experiment has to do with robotics and will be held on October 10th. So we as the 4-H Foundation have been in the process of

buying kits to send out to the 4-Hers, but also here in Sioux Falls, we’re going to celebrate the day with an early morning fundraiser which will feature the science experiment. We will have a wellknown mystery guest actually doing the experiment along with the youth at our breakfast. We’re very excited about that because the national experiment has been very successful across the country. There are thousands of kids participating in this experiment on one day, and so our goal in South Dakota is also to have thousands of kids participating in it that day.

In addition to celebrating National 4-H Week and National 4-H Science Day in October, this month also brings the annual celebration of Character Counts! week across the nation. Please tell us more about how 4-H and Character Counts! are related here in South Dakota. October is a big month for us. (laughs) I think because the 4-H name isn’t always put in front of Character Counts!, a lot of people don’t know about our connection, but in this state, 4-H is the umbrella organization for Character Counts!. That doesn’t mean we run the show in every community, but we try to provide the tools for every community to implement it in a way they feel comfortable with. Since 1996, the South Dakota 4-H Foundation has been providing character education through the Character Counts! program across the state, and that has been truly significant because it just transcends all ages. It is time-tested.

We will never be done with our work in that area because there is a continual need to bring the program to new teachers, new kids, and new schools. The great thing about teaching character education is that it empowers the adults to do something positive with the youth audience, and it’s easier for them to do that than for the average community citizen to fight drugs or fight violence. They feel helpless in that because they are not trained to help kids in those areas. On the other hand, Character Counts! is something that almost every citizen can embrace in some way and work with a young person in some way. So that’s been the beauty of Character Counts! — the positive approach to negative problems.

We’ve talked quite a bit about how 4-H benefits youth, but how does it benefit families or communities as a whole? Making an investment in 4-H is like making in an investment in one’s community because community service is one of our fortes as an organization. There was a national independent survey done some years ago among all organizations, and one of the things that came out of that national survey was the discovery that youth in 4-H are three and a half times more likely to do community service than youth in any other organization. For those of us who have been through the program and see the program today, we know that. When you are an 8-year-old and you join a 4-H community club, you are doing community service with that club from the get go. I think what happens then is that because you are always doing

community service with that club, you continue that behavior as an adult. It is a learned habit. And that is one of the gems about a community club — that the club is always out there doing something for the community, whether the members are organizing a blood drive or picking up road ditches. My son’s 4-H club in Brookings helped build solar ovens for Haiti, and what happened was that the young people and the family got involved in the same project. I can tell you that is not something my son and I would’ve done on our own, but because it was part of the club, we went and he even invited some of his teenage friends, and we were all working on the same project together. I heard someone say at a national meeting one time, “I don’t know how you raise kids without being involved in 4-H because there is always something for the family to engage in.” 4-H becomes a support system for family activities that I think you find a hard time doing as a family on your own. And the 4-H families are all very different — kids being raised by grandparents, single parents — whatever the family looks like. The thing about 4-H is that it does bring them together in common activities they wouldn’t do on their own. 4-H is truly an investment in the future of our youth, our families, and our communities. How Did This Happen? by Dick Rogen, DVM

have been to a lot of weddings this summer. Besides cake and punch, the cornerstone of every ceremony involved the big question, “How did they meet?” Everyone had a different story of their introductions. Some involved chance, others were “set up” and at times, life just happened. People and their pets are quite the same. In the exam room of a new puppy or kitten talk, I almost always ask where the new pet came from. The stories can be quiet interesting, funny or just down right bizarre. Cats seem to acquire new humans much differently than dogs. They sometimes will just show up at your doorstep looking pitiful. But a good feline, just keeps showing up day after day, looking a little more ragged with each visit. I personally think that cats mark the houses of the true soft hearted people in the world. Emily, a retired lady from Pipestone, must have had a secret neon sign by her house. Cats just seem to pass the word of who will feed and care for them. Now some cats are more adventuresome than others. There are the car surfing cats that jump up under the hood. This is a very dangerous hobby, but the cats that survive this almost always find a good home. Who can resist a pound of fluff calling out for help from under the hood of your Mercury? Many farm cats have acquired the good life of the city this way. Uncle Tim’s farm seems to be the other great source of pampered felines. It never fails, that a trip to the country in the summer can result in a kitten in a box on the way home. Some of these kittens can look tough, with ear mites, worms and patchy hair. It is amazing how beautiful they can look after good care and a year of good food. My favorite story recently has been the drop and run method.

A soft hearted cat lover opened her door to find a full grown feline in a kennel with a note on it. Please take Tom. By the way, he prefers Friskies. This appears to be an abandonment or a pre-arranged marriage! Dogs tend to acquire their new people with more planning. Well, most of the time anyway. The adopting of a new dog can involve years of research, long distance phone calls or just impulse. Their relationships tend to require more time and energy. Piper’s acquisition required a persistent 14-year-old boy, the internet and a friend from the past. We filled out an application, provided references and put down a deposit. Momo the cat, just fell out of the hay mow at the right time! Now most dogs get adopted more easily. There are the puppies that magically show up at daycare, the elementary school or any other gathering place of young children. Who can say no to a child smiling and holding a puppy? Just take it home for the night and give it a try. There is little chance that puppy isn’t staying for the next 15 years! Now puppies also come home from Ducks Unlimited banquets, hunting buddies or the newspaper. They are cute, fun and full of energy. They put smiles on our face, which is priceless. I have witnessed many clients that look years younger after a new puppy enters their lives We need love and attention on a daily basis. Pets are more than willing to provide this and more. lmost 1.2 billion years ago, molten rock called magma from deep in the Earth flowed up between two adjoining tectonic plates then located under present-day eastern Minnesota. Through a process called rifting, some magma flowed underground into Minnehaha County where it intruded into fractures in the overlying quartzite. While still below the surface of the Earth, it slowly cooled and hardened to form a dark-colored, coarse-grained rock. Subsequent uplift of the Earth’s crust and erosion combined to expose and erode away most of the large body of solidified magma. Only scattered remnants remain today. Geologists named the hardened magma “Corson Diabase” because outcrops of he rock were first found north of Corson, SD, along Split Rock Creek. In the early 1900s a quarry was opened in Lien Park to obtain Corson Diabase. Some was used to build the black facade on the north side of the original Washington High School. The Earth’s Interior The relative size of the three main concentric layers of the Earth’s interior are: (1) the very thin outer crust (the line on the outer surface of the drawing), (2) a thick layer of dense rock that sometimes is semi-molten (light stippling), and (3) the metallic core divided into (a) the liquid outer core with a temperature nearly as hot as the sun’s surface (dark stippling), and a solid inner core, a mixture of iron and magnesium (black).

A Sense of Time Geologists and other scientists today generally agree that following the formation of the planet Earth, the point when the surface of Earth ceased to be molten, was about four billion, six hundred million years ago. The illustration helps us somewhat to grasp the fast expanses of time. For each day that humans have spent on Earth so far, the dinosaurs had eight years!
