hey may not have originated here, but the chicken wing has certainly been widely adopted by Midwesterners as a favorite for appetizers, party fare and anytime-good-eats. Sioux Falls residents and visitors now have a new spot to satisfy their craving with the arrival of Wingstop in Sioux Falls. This franchise started as a buffalo-style chicken wing restaurant in Garland, Texas,

in 1994, and now has more than 600 locations in 32 states. The Sioux Falls location is on Minnesota Avenue, near 26th Street. According to owner Claire Santos, who also opened Zoup! in Sioux Falls, what sets Wingstop apart is their cook-to-order approach and their commitment to excellent service. “Every order is made fresh,” says Santos. “Wings are cooked to

ove over October, November is diabetes awareness month; a month dedicated to educating the world on the chronic, autoimmune disease of type 1 diabetes, and the insulin resistant epidemic of type 2 diabetes-two different diseases by a very similar name. One passionate local mom, Bethany McKenzie, and a local health and fitness studio, FORM Fitness and Boutique, are teaming up to bring you the Second Annual SUPER SWEET Zumbathon. This year, there will be an additional fashion show featuring the most current studio-to-street fitness attire modeled by area athletes with type 1 diabetes. To end the evening, we will open up the dance floor for the whole family to enjoy classic wedding dances in their most comfortable attire. Scrumptious Holiday Sweets by Jo McClure Once again it’s time to think about cookies and candy for the holiday season. My grandson, Nick, has helped me select the recipes for this issue. I’m sure his parents aren’t thrilled with all the sugar and sweet treats that Nana and Papa give him...but what happens at our house stays at our house. Enjoy this very special time of year.
Chocolate Chip Cookie Dough Truffles
Candy Bar Fudge
1/2 cup butter, softened 3/4 cup brown sugar 1 tsp vanilla 2 cups flour 14 oz can sweetened condensed milk 1/2 cup mini semisweet chocolate chips 1/2 cup chopped walnuts 24 oz chocolate candy coating, chopped
1 tsp butter 14 oz can of sweetened condensed milk 1 cup milk chocolate chips 1 cup semisweet chocolate chips 3 Milky Way candy bars (2.05 oz each) chopped 1 tsp vanilla
Cream the butter and brown sugar in a large bowl until light and fluffy. Add vanilla. Gradually add the flour and milk, beating well after each addition. Add the chocolate chips and nuts. Form into 1 inch balls and chill on waxed paper lined baking sheets for 2 hours. Melt the candy coating and dip the chilled cookie balls. Place in refrigerator on waxed paper lined baking sheets for 30 minutes or until firm. Store in the refrigerator. Makes 5-6 dozen truffles. No raw eggs in this recipe to worry about.

Line a 9 inch square baking pan with foil and grease well with butter. In a double boiler, combine all ingredients except the vanilla and stir until smooth. Stir in the vanilla and pour into the foil lined pan. Refrigerate for 2 hours or until firm. Cut into squares and store in the refrigerator in an air tight container. Makes about 1 1/2 pounds.

orgive me if I wander from my normal rants about what to eat and how to cook it. You see, this November I’m crossing a major milestone; I’m turning 50. So it got me to thinking about the things I believe a person should experience or be able to do with confidence and without hesitation. I’ve been working on this list for quite a while, trying to whittle a few things off as I go along. Some are food related; others just stuff on my list. Most have been checked off my list; a few have been elusive. 1. Make a perfect fried egg over easy. I learned on the flattop in the HyVee deli 30 years ago, but I broke a yoke last week. Nobody’s perfect. 2. Have a go-to dish that you can always throw together on a moment’s notice with ingredients you have on hand. For me it’s, shrimp paella. 3. Create a recipe that is yours, not from a cookbook or passed down from Mom. 4. Cherish a recipe that’s been passed down from another generation. 5. Turn something simple into something special; an incredible grilled cheese or an awesome omelet. 6. Cook a 5-course meal just for the enjoyment of others; even if you don’t get to eat.
7. Enjoy a really expensive meal from a restaurant. 8. Eat at a restaurant run by your favorite celebrity chef. 9. Stop in to a really seedy joint that you probably shouldn’t be in. 10. Be a regular at an exclusive restaurant. 11. Try something that seems disgusting (like a raw oyster), you may find a new favorite (like raw oysters!)

12. Make an overly ambitious holiday meal for your family. 13. Learn to stir fry in a wok. 14. Make your own mayonnaise. Just eggs, oil and a little lemon juice. It’s easy but remarkably satisfying. 15. Bake a cake from scratch. No help from Betty Crocker — just you and the oven. 16. Make your own salad dressing. Sure it’s easier to open a bottle of Hidden Valley Ranch, but your own will be better. 17. Learn all of the lyrics to your favorite song, start to finish. Please, no Brittany Spears. 18. Memorize a poem, or at least a few stanzas. 19. Drive a stick shift. They didn’t teach you in Driver’s Ed, and if you’ve always had automatics you may think this is unnecessary. But many years ago I found myself in a bind and the only vehicle available was a stick shift. I’m glad I learned. 20. Jump start a car. It gets pretty cold around here; sooner or later you’ll need a jump. 21. Smoke ribs. You don’t have to run off and join the barbeque circuit, but you should be able to make this backyard staple. Get smoking. 22. Learn to use a Boston shaker. A Boston shaker is a made by combining a steel cup with a pint-sized glass, one inverted over the other. You’ve seen bartenders use these, and Tom Cruise spun them around in Cocktail. There is no better way to make a drink. 23. Order a cocktail. No hesitation, just ask for your usual. hat? Is it just me? When I see the word Thanksgiving, the word “vin” just pops out. You know, words like divine, convince, craving, provincial, and believing (there’s another 511 words like this, I Googled it.) Please tell me you see it! What better holiday to have the French word for wine in it, than Thanksgiving. This year, I’d like to give you my number one recommendation to pair with your bird: Gewürztraminer. Gewürztraminer’s origins are anything but simple. At first glance, this grape varietal’s home is Alsace, France. Digging a little deeper, the Traminer grape’s history is complicated. The story starts with the ancient Traminer variety, a green-skinned grape that takes its name from the village of Tramin, located in

South Tyrol, the German-speaking province in northern Italy. The famous ampelographer Pierre Galet thought that Traminer was identical to the green-skinned Savagnin Blanc (not Sauvignon Blanc) that makes vin jaune in the Jura. More recently it has been suggested that Savagnin blanc acquired slight differences in its leaf shape as it travelled to the other end of the Alps. Traminer is recorded in Tramin from 1000 until the 16th century. It was spread down the Rhine to Alsace, by way of the Palatinate, where Gewürz (spice) was added to its name — presumably this was when one of the mutations occurred. The longer name was first used in Alsace in 1870 — without the umlaut. In 1973, the name Traminer was discontinued in Alsace except for in the Heiligenstein area.

s Thanksgiving nears, turkey is a hot topic. Discussions of how to prepare, how to serve and what to do with leftovers from the traditional holiday feast take center stage in many families. But for Ruben Waldner, turkeys are a top priority all year long. Ruben is responsible for raising about 160,000 turkeys each year on the Riverside Colony, a Hutterite colony of about 125 people, located near Huron. Turkeys arrive at the farm as day old poults, or chicks, from a nursery in Minnesota. They are cared for in a special barn called a “brooder house” for the first 28 days. They are watched carefully and fed a ration of corn, soybean meal and vitamins. At 28 days, the birds are moved to another barn where they are raised until they are about 20 weeks old. The rations change slightly as the birds grow, but are still the same ingredients. Waldner combines 30 years of experience with state-of-theart technology to care for turkeys. Turkeys are raised in indoor barns to protect them from South Dakota weather, predators and disease. The climate control and ventilation systems in the barns are managed by computers

to ensure a consistent temperature, humidity and airflow regardless of the weather outside. The barns also have scales built into the floors that can provide an estimate of how turkeys are growing. Ruben can check the scales each day to track the birds’ health. “If their weight gain slows down or stops, it is a signal that something might be wrong. I can watch those birds even more closely to make sure they stay healthy,” he said. Another important part of maintaining health flocks is keeping barns clean and maintained. After each group of birds leave the brooder house, it is cleaned and disinfected before the next groups of chicks arrive. “We clear out all the old bedding, wash the floors with soap and water, then disinfectant. We spread a new layer of clean wood shaving bedding, and are ready for the next group of poults,” he said. The colony started with turkey production in the 1990s as they transitioned away from dairy farming. “Our dairy barn needed a lot of updates and dairy prices weren’t very good at the time. We were looking for a new
enterprise, and started small with turkey production,” said Ruben. They started with one barn that was split into two sections: one for the brooder house and the other for growing birds. Over the years, the colony has built four additional barns to reach the current capacity for raising 160,000 turkeys a year. Like all other turkey producers, Riverside Colony is regulated and permitted through the state of South Dakota. Turkey production is part of a diversified farming operation for the Riverside Colony. They grow corn and soybeans and raise about 30,000 hogs each year. All the corn produced is fed to the farm’s pigs or turkeys. Soybeans are taken to a processing plant in Volga where they are processed, and the colony purchases back the soybean meal for feed. “Feeding corn and soybeans to the animals is a great way to add value to the crops we raise,” he said. “Raising pigs, poultry and crops also helps manage the price cycles – if prices are down for one commodity, hopefully they are higher for another and they balance each other out.” All of the turkeys raised at Riverside Colony are processed just eight miles away at Dakota Provisions in Huron, said Ruben. Dakota Provisions was built by a cooperative of 44 turkey growers who recognized the need for a stable market for the turkeys they raised. Groundbreaking was held in September
2004 and the plant began processing turkeys in December 2005. The plant produces a full line of ready-to-eat turkey and other protein products, primarily for food service customers. The state of the art facility can process up to 20,000 turkeys a day and employs more than 700 people. Ruben and his wife Ruth have four grown children; three daughters and one son. Having responsibility for the colony’s turkey flocks is a good fit for him, according to Ruben. “I’ve always loved animals. My goal is to keep the birds as healthy as possible.”

“It was the only position that didn’t hurt,” says Ginny. “That is about all I could really do, lie in bed and hope for relief.”
Developing a Plan Ginny’s problem started after having surgery for pelvic organ prolapse. She began having fecal incontinence along with extreme pain. “I always had to know where the bathrooms were wherever we went,” says Ginny. “If you didn’t know where they were in a particular store, well then you didn’t go to that store.” Ginny’s discomfort would not subside despite several trips to the physical therapist. I would go in for massages and was on medication,” says Ginny. “Nothing worked. That was when I went in to see Dr. Benson and he came up with a plan.” Ginny and Sanford board-certified in female pelvic medicine and reconstructive surgery, urogynecologist Kevin Benson, MD, implemented a plan to get Ginny back to her normal routine. “It was a long road,” says Ginny. “We tried a lot of different things, but I had faith in him that he would help me, and he did.”
InterStim Together, Ginny and Dr. Benson decided the best course of action to end Ginny’s incontinence and pain was a device called InterStim. This implantable tool would send mild electrical impulses to modulate the nerves on Ginny’s pelvic floor. And
while the procedure would help change Ginny’s life, it was done as an outpatient surgery in just a few hours. “I just went in that morning, and was done and back home before I knew it,” says Ginny. Ginny remembers the first few days with her InterStim were filled with nervous excitement and hope. “I was feeling pretty good,” says Ginny. “I almost didn’t want to let myself believe that my problems were over. And the first time my incontinence returned I got scared that it hadn’t worked and we would have to go back to square one. But I learned that I just had to play with the remote to change the settings.” Ginny can now control the amount of stimulation she receives with a small portable device she calls her “garage door opener”. “It’s so easy,” says Ginny. “I just place the pad on my lower back and turn it up a little or down and I’m good to go.”

Getting the Message Out Ginny adjusts the settings on average only once a day, more if she is standing up for long periods of time. But making a few small adjustments a couple of times a day is a trade she will gladly make for the discomfort and pain she had to endure. “After I had the surgery, my friends would comment that I was walking straighter,” says Ginny. “I didn’t know what they meant, until they told me I used to walk hunched over. I hadn’t even realized what I had been doing, but I had been walking bent over to try and diminish the pain. I never want to feel that way again.” And Ginny won’t have to thanks to the InterStim system and Dr. Benson. “I cannot thank that man enough,” says Ginny. “He and everyone at the Sanford Female Pelvic Medicine and Reconstructive Surgery Clinic were simply amazing. I just want other women to know they don’t have to live with incontinence or pain. This device and the team at Sanford can help you.”

gorgeous natural gardens. A symbol of the city, the Borda Garden is a mixture of several styles of architecture, and is the location of the Morelos Culture Institute. Theatre productions take place on its own stage, called the “Foro del Lago”. Located in the heart of the city, Cuernavaca’s Cathedral is a few blocks from the Palace of Cortes, and is the oldest building in the entire monastery complex. Seventeenth century paintings of great artistic and historical value hang on nearly every wall in the Cathedral. The

The Amacuac river is acknowledged by many as one of the most important currents of central Mexico for exciting rough rapid riding. Morelos is the town of chinelo dancers, who dance to the sound of drums wearing characteristic costumes and masks during festivals. Cuernavaca joins in and celebrates an annual carnival during the month of March, known as the “Feria de
la Flor” (Flower Fair). These colorful celebrations are linked to the religious traditions and costumes of Morelos. The Dance of Chinelos is a traditional dance in which the dancers jump in a movement that makes them look as puppets as an eluding

Yet pertussis is making a comeback, and parents of young children should be aware of this potentially dangerous disease. Pertussis is an upper respiratory infection caused by bacteria known as bordetella pertussis. “It’s been called the whooping

Unvaccinated or incompletely vaccinated infants younger than 12 months of age have the highest risk for severe and lifethreatening complications due to pertussis. Recommended vaccines include the DTaP, which protects against diphtheria, tetanus and pertussis. Babies get this vaccine at 2, 4, 6, 15-18 months and then at 4-6 years. At age 11-12, a Tdap booster is recommended. Because pertussis is so dangerous to infants, it’s recommended that pregnant women get a Tdap booster with every pregnancy. Pertussis has three stages. The first is called “catarrhal,” characterized by a runny nose, cough and feeling generally ill. This stage lasts up to two weeks. “It’s a difficult disease, because it is contagious, but it’s not distinguishable from a typical cold during the first stage of the illness,” Dr. Torbert said. The “paroxysmal” stage is when the coughing fits happen, and that stage can last six weeks. “One of the ways we distinguish pertussis from other respiratory infections is the long duration of the cough,” Dr. Torbert said. Final stage is “convalescence,” or recovery, while patients are susceptible to other infections while their lungs are healing. “Young children, especially babies, are more susceptible to significant disease,” Dr. Torbert said. It can be difficult for babies to catch their breath and sometimes, they will stop breathing. If this is the case, they need to be hospitalized and placed on a breathing machine. A confirmed case of pertussis is treated with antibiotics.

“Antibiotics may not decrease the length of symptoms but it does often decrease how contagious the patient is,” Dr. Torbert said. It’s no myth that pertussis is making a comeback. “We do see it. It’s definitely something parents want to get their kids immunized for,” Dr. Torbert said. In recent years, some parents have feared having their children get recommended immunizations, because of a rumored link to autism. Yet the American Academy of Pediatrics, the CDC, the World Health Organization, and the Institute of Medicine all agree that there’s little or no possibility for a relationship between autism and vaccines. Just because a child has a cough does not mean it’s pertussis. “Yet if parents are concerned at all about their child’s symptoms, it’s worth getting peace of mind by talking to your medical provider,” Dr. Torbert said. Call your provider about any cough or cold that lasts longer than two weeks, or symptoms that don’t seem to be improving. Take your child in earlier if there’s fever, labored breathing, or vomiting or diarrhea that could lead to dehydration. Emergency symptoms include a very high fever, or respiratory distress, marked by trouble breathing or a bluish cast to lips or fingertips due to lack of oxygen. she would teach. I didn’t think much of the Pinterest recipe of mini sweet potato pies but when I brought her some on the night of thanksgiving you would have thought I’d given her gold. Pinecone Turkeys Materials Needed: Pine cones, craft feathers or pipe cleaners, orange felt, google eyes, glue, scissors, and brown pom poms for the head if you wish. Instructions: Glue craft feathers along the back of your pine cone for tail feathers. You can also use pipe cleaners by bending them in the shape of feathers. Cut a small orange triangle from the felt and glue it to the front of your pine cone for a beak. If you’d like to glue a brown pom pom onto the front first to use as the head, this is an option as well, then glue the orange felt to the pom pom. Glue your google eyes above the orange beak, finishing up your turkey’s face. If desired, add feet to the bottom using orange pipe cleaners or felt. Let completely dry, and you have your pinecone turkey.

Thankfulness Tree Materials Needed: Tall sticks with several little branches for hanging leaves, your choice of vase, artificial fall leaves from a craft store or cut from colored paper, hole punch, yarn or string. Instructions: Go on a stick hunt through the woods or in your backyard with your kids to find the perfect ones for this project. Be sure to find sticks that have several branches on them so you can hang all of your leaves. Find enough to fill your choice of vase to make a “tree�. Arrange your sticks so that they are not in the way in your home, and will not interfere with people as they walk by or sitting at a table if it will be a centerpiece. Either buy pre-cut artificial fall leaves from the craft store, or cut some leaf shapes out of colored or scrapbook paper. Taking a hole punch, make a little hole in each leaf so it is ready to hang. You may or may not want to add a piece of yarn, ribbon, or string to allow for easier hanging from the sticks. Place the leaves around the base of your vase, and let your family and friends write or draw pictures of what they are thankful for whenever they feel the desire. They can then choose a spot to hang their leaf on the Thankfulness Tree.

Materials Needed: Construction paper in fall colors, glue, permanent marker, scissors, and a pencil.
Materials Needed: Canvas of choice for your handprints, acrylic paints, brushes, and markers.
Instructions: Have your child trace around their hand with a pencil, fingers apart, on several different colors of construction paper. Help them cut out a set of twelve hands, creating one for each month of the year. Arrange the paper hands into a wreath shape, tilting them in order to create a balanced edge of paper fingers around the whole thing. Glue them in place and let dry. Write one of the months of the year on each hand, starting with January at the bottom and ending with December, moving clockwise. Have your child write one thing they are thankful for in that month of the year below the month that is written. They may put a birthday, snow, a holiday, or a special yearly vacation. Hang the wreath for all to enjoy it during this Thanksgiving holiday.
Instructions: Paint the handprints of everyone who will be participating, using brown paint for the palm, then a different color of paint for each finger. You can get creative with the positioning of the hands on the canvas, making the parents kiss in the middle or starting with the biggest hand and going in order to the smallest. Once the paint is applied, carefully press the palm and fingers onto the canvas in the order that you’d like. Decorate around the handprints as you wish, such as adding a fall tree with finger print leaves or the names of your family members below each hand print. Find a frame or fun way to display your work of art for the holidays.

s Thanksgiving Day obsolete? It appears that getting to the mall is becoming more important than slowing down and giving perspective to the things we already have. It used to be a day to take a deep breath, share a big meal and visit with family and friends. Every day we are beamed advertising of the things we don’t have. It can be that we are not feeding our pets like the inner wolves that they really are. Our teeth are not white enough and our TV is just too small to enjoy viewing. The constant need to want more and better has caused us to lose our perspective of life. I am truly thankful for the family, friends and the people I work with every day. They have a choice of not putting up with me. They accept me for the person I am. I think that acceptance is very important, for none of us is perfect. There are days they have to overlook a lot of flaws. I have to remind myself often to not be stressed by what I do not have, but be grateful for the blessings I have already received. It is much too easy to see that someone else has a newer, bigger or better version of the blessings I have. It is difficult for many of us not to get caught up in the hype of the Christmas shopping frenzy. I think that is why pets are healthy for us. They tend to live

one day at a time. Piper does not care what color or style of clothes that I put on each day. She does know the difference between work clothes and play clothes, but she still loves me. She will ride in any car as long as the window goes down. Best of all, she is so excited to have the same treat that we have given her for four years. It is good enough and it brings her tummy great joy. Living in the present is difficult for people. Pets don’t appear to worry about tomorrow. They want to go on a walk, ride or play today. It is enough to be with their pack. We need to keep these things in mind this Thanksgiving holiday. Stressing about the perfect Christmas gift should not take away from a relaxed day with friends and family. My wish for you this Thanksgiving is a day of rest to share with people and pets that mean so much to you. Go for a walk, play a game or just sit and visit. Your pet will be so pleased that you will spend time with them too. It is a bonus day for them. Be thankful for the small things and don’t worry so much about what the rest of the world thinks you should spend your money and time on . Have a Happy Thanksgiving Day, keep the pets out of the left overs and leave the shopping until Friday!

The Great Bend By Bruce Blake

The Great Bend Sioux Falls, Yankton Trail Park
highland existed along the east side of South Dakota long before the Ice Age began two million years ago. Successive periods of glaciation deposited sediments across the highland and increased its elevation. The last glaciation began 35,000 years ago during the Late Wisconsin Stage. By then the highland had become a barrier that divided the ice sheet into two south-flowing lobes: the James Lobe to the west and the Des Moines Lobe to the east. In time the glacier began to recede. Meltwater flowing south down the Skunk Creek and Big Sioux River valleys was dammed by the James Love, causing it to flow east to Tuthill Park. There it was diverted several miles north before joining the Slip-Up and Split Rock Creeks and then resuming its southerly flow. In this manner the Great Bend of the Big Sioux River was created by the James lobe about 15,000 years ago. Glacial deposits overlay the flatiron-shaped highland that is now called Coteau des Prairies. DEDICATED IN 2004 BY THE MINNEHAHA COUNTY HISTORICAL SOCIETY AND THE CITY OF SIOUX FALLS
