A Taste of
Luverne
The Bluestem By Mary Michaels | Photos by Julie Prairie Photography

f you are traveling east on Interstate 90 and get feeling a little hungry, the town of Luverne has a growing number of dining options to meet all tastes. One of those places, just off the interstate, is The Bluestem, located in what many folks remember as the Magnolia Steakhouse. With an updated, casual and comfortable atmosphere, The Bluestem prides itself in delicious food and exceptional customer service. Skyler Hoiland is the Chef/Owner, and he doesn’t hesitate in admitting there is nothing else that he would rather be doing. “Food is a real passion of mine,” he says, “and I love creating food that will take people back to their roots. We all remember something our moms or grandmas used to make. That’s the feeling we want to create here.” Hoiland says that in developing the look and feel of The Bluestem, he wanted to create an environment where everyone feels welcome and that they feel they can just come as they are. “Our family has roots that run deep in the Luverne area,” he says. “We are locals, so when customers come to The Bluestem, they can know they are among friends.” The “local” aspect is important to Hoiland, as he tries to keep their business local whenever possible, finding local ingredients for food, and local art and services for the restaurant. In the same way, he encourages people in the area to “dine local” instead of heading out of town. The restaurant takes its name from a native prairie grass prominent at Blue Mound State Park, which is located just north of Luverne. Big Bluestem is called the “king” of prairie grasses because it sometimes grows to over six feet tall. Just as that grass

stands out among the rest, Hoiland’s goal is to make every diner’s experience one that stands out. The Bluestem staff takes food favorites and adds their own unique twist, like the Bluestem Nachos that pair wonton chips with Italian sausage and queso blanco or the Pretzel & Minnesota Beer Cheese appetizer that features Grainbelt beer and a Nordeast cheese sauce. Entrees range from hand cut, aged Angus beef, pan seared walleye and roasted chicken to house specialties like Grilled Sausage Fettuccine, Sun-Dried Tomato Pasta or Prairie Heights Bison Pot Pie made from locally raised bison stewed with vegetables and topped with puff pastry. The Bluestem also offers a wide variety of sandwiches, burgers, salads with homemade dressings and homemade soups. Diners over age 60 or under 10 have special menu selections designed with their appetites in mind. Be sure to save room for dessert, because The Bluestem has designed its own signature varieties of sweet favorites like bread pudding, carrot cake, chocolate torte and a mixed berry crumble that is made to order. Looking for a place for a special event? The Bluestem has several party rooms available. They also host their own special events like holiday dinners or “beer dinners” where they pair hand-crafted foods with hand-crafted beers like local varieties from Take 16 Brewery. A quote on the restaurant’s website seems to capture Hoiland’s passion and excitement for food. It originates from world-renown opera tenor, Luciano Pavarotti, who said, “One of the very nicest things about life is the way we must regularly stop whatever it is we are doing and devote our attention to eating.”

here is a unique charm to Main Street in Luverne, Minnesota, a community that celebrates its past while progressing into the future. Many buildings are more than a century old and constructed with the Sioux Quartzite found throughout Rock County. One of those buildings is home to the newly-opened Sterling’s Café and Grille. Owner Brian Sterling wasn’t really thinking about Luverne when he first pondered opening his own restaurant. He credits the idea to a couple he visited with at a Sioux Falls restaurant and bar where he was working at the time. Sterling told them he was thinking of opening a place on the east side of Sioux Falls. “They asked me if I had ever thought about Luverne,” recalls Sterling, “and they told me they had a beautiful building they thought would make a wonderful restaurant. So, I drove over to Luverne to look at it.” What Sterling found was a historic building with huge bay windows that had been restored, but an interior that had previously housed several different businesses…and needed a lot of work. It took substantial time, effort and resources, but eventually everything started falling into place. Now, Sterling says, he is proud that he’s been able to create such a unique dining atmosphere. The main level offers ample seating and a great view of Main Street through those bay windows. An upper level that seats 40 is available for daily dining, but is also the perfect space to reserve for special events. “Our restaurant concept was a farm-to-plate approach,” says
Sterling, “using ingredients you’d get from local farmers, to create good food that is also good for you.” The breakfast menu includes classic breakfast options, gourmet breakfast sandwiches, omelets, yogurt bar and jumbo cinnamon rolls. If you need a good cup of coffee to get going in the morning, a cup of the gourmet coffee at Sterling’s is only 25 cents during breakfast until 10 AM. Options for lunch and dinner range from burgers and sandwiches, including a bison burger and a Cubano Panini, to steaks and pastas, their special lemon glazed salmon, Cajun fried catfish and shrimp tacos. Sterling’s offers a Sunday brunch from 10 a.m. until 2 p.m. Every week you can find favorites like eggs and bacon and freshoff-the-grill French Toast. Then, they add in other specialties like salmon, broccoli penne alfredo and quiche. They also feature a wide variety of fresh fruits and vegetables at the salad bar. The lounge area at Sterling’s is a great place to unwind and relax with friends. There are plenty of large screen TV’s to keep up-to-date on your favorite sports, and the full-service bar includes several beers on tap, including local varieties from Take 16 Brewery. Sterling says he is grateful to everyone in Luverne and Rock County for the support. He is thrilled with the response to the restaurant, and the fact that he already has to recommend that diners make reservations for dinner, particularly for weekend dinners and Sunday brunch. “I couldn’t have asked for a better place to open a restaurant,” says Sterling. “I am so happy to be part of the Luverne community.”

S
outh Dakota Soybean has announced a kitchen and grocery giveaway as part of the organization’s “Hungry for Truth” initiative. The kitchen has a tradition of being the place where family and friends gather to cook meals together and share in fellowship and conversation. It is the place where people gather to make connections to each other and to their food., which is why the kitchen and dinner table serve as the “Hungry for Truth” symbols of open dialogue about food and farming. To encourage these conversations, “Hungry for Truth” has partnered with Karl’s Appliances to give away a grand prize of $25,000 toward new cabinets, counters and premium KitchenAid appliances, including a bottom-freezer refrigerator, a convection range, an over-the-range microwave and a built-in dishwasher. In addition, South Dakota Soybean will give away $250 worth of groceries each month in 2015, courtesy of Hy-Vee and Family Thrift. South Dakota Soybean launched “Hungry for Truth” in early January to give people across the state opportunities to share their questions about food with farmers and to learn how farmers raise their food and work to keep it safe. The initiative includes the “Hungry for Truth” website, social media and special events throughout the year. To enter the giveaway sweepstakes, visit www.hungryfortruthsd. com. Watch a quick video about food and farming, and then enter
for your chance to win. While on the website, visitors are urged to explore the hottest topics in food and farming from food safety to biotechnology. Entries are limited to one per person, per day. “We want to thank our sponsors for their involvement in this initiative,” said Marc Reiner, farmer from Tripp and chairman of the South Dakota Soybean Research and Promotion Council. “Through their partnership, Karl’s Appliances and Hy-Vee have shown their commitment to open conversations about food production and safety.” NO PURCHASE NECESSARY. The Hungry for Truth Grocery and Kitchen Giveaway starts 1/1/15 at 12:00:00 a.m. CT and ends 12/13/15 at 11:59:59 p.m. CT. There will be 12 separate drawing periods during the Promotion. mentioned that it was bittersweet, because they first had to take down the original early-1900s house. “It was a wonderful old house,” says Brooke, “but when we started adding up what would need to be done to restore it,
building became the more practical option.” But, the Rollags were able to take many things from the old house to incorporate into the new one. Brooke describes the style as “urban country.”

“We wanted it to feel warm and welcoming,” she says. “There is a lot of wood. I think wood is really timeless.” While both Jeremy and Brooke love the look of a full log home, that wasn’t in the young couple’s price range. So, they were able to bring in wood from Baker Timber Products in Rapid City to create the atmosphere they wanted. Tall logs form columns on the front porch, and smaller logs were used to form the railing around the staircase to the lower level. The ceiling is covered in pine boards, and the effects of the Black Hills Pine Beetles on the trees can be seen in the color variances of the boards. Throughout the upper level, the Rollags used wood laminate for the flooring. “It looks just like wood and it’s easy to take care of, which is great with the boys,” says Brooke, referring to Knox and older brother Sutton, 8. “Plus, it was in our budget. When you are building, you really have to make a lot of choices about where you want to spend your money.” That’s one thing Brooke has a little experience with, as a mortgage originator with Home Federal Bank in Dell Rapids. She says making decisions about financing is equally as important as choosing your builder in a construction project. “The bank was such a help,” she says, “and it had nothing to do with being an employee. “They offer great products and service, including financing up to 90% on construction projects. We couldn’t have built our home without having such a great financial partner.” Lantern-style light sconces frame the large living room window which is big enough, and low enough, for 18-month-old Knox to look out and see the family’s dog playing in the yard. The furnishings are comfortable and inviting, and they include many pieces the couple refurbished or finds from auctions and

rummage sales. On one wall of the living room is a large portrait of the two boys right after Knox was born. It is the perfect picture of rural South Dakota country boys with Sutton in a cowboy hat sitting down holding his baby brother. The couple created a display piece out of old pallets on the opposite wall. They stained the wood and used a larger pallet as a frame for a family picture, set outdoors, and a second half-pallet has a series of phrases stenciled down the boards, including, Be Kind, Speak Truth, Love Others, Show Grace, Work Hard and Love Christ. Brooke says she saw that idea, and several others for the house, on Pinterest, and is thankful for her husband and other family members who helped to make all those ideas a reality. In the kitchen, tall red chairs stand at the angled island. They didn’t start out as tall red chairs, however. What the Rollags originally found at an auction were short, oak-finished chairs. Jeremy’s grandfather took them to his wood shop and extended the legs, and then Brooke painted them red. Above one of the kitchen cabinets sits a framed picture saved from the original house. It’s a print of the well-known picture Grace, showing an elderly man with head bowed in a mealtime prayer. A door in the corner opens to a spacious pantry, which is one of Brooke’s favorite parts of the kitchen. “This was our builder’s idea,” says Brooke, referring to Jim Clark Construction in Colman. “I am so glad he thought of this. It provides great storage and saves on cupboard space. Jim did an incredible job giving suggestions throughout the building process. You can tell he has years and years of experience in this trade. We couldn’t be more happy with our builder.”

A hallway leads from the kitchen to the family’s bedrooms. On the walls of the hallway hang four multi-paned window frames saved from the old house, now also painted red. The brothers share a room, with Sutton in a captain’s bed with storage drawers, and Knox’s crib on the opposite wall. The décor is all cowboy, with a western-print quilt on Sutton’s bed made by members of Jeremy’s family and colorful “cowboy art” on the walls.
“I am obsessed with quilts,” laughs Brooke, “they are all made with love by Jeremy’s aunts & grandma…they are simply amazing. We have several handmade quilts, and I just love them. It is a real gift they have. Maybe someday I’ll pick up on this family tradition.” Across the hall from the boys is a guest room where Brooke’s grandpa stays when he comes back after wintering in Arizona. Her

grandma passed away, so Brooke says they are glad that Grandpa can come home to the land where he lived and be with them. The boys’ bathroom doubles as the laundry room, and having a main floor laundry was another “must-have” on their design list while building. The turquoise walls and wood cabinets and wood-framed mirror match the home’s urban country style. In the master bedroom, the headboard of the bed takes center
stage. The Rollags took the old oak pocket doors from the dining room of the old house and paired them together to create the headboard. They haven’t changed a thing about them, leaving the beauty of the original finish and tarnished brass hardware. Another unique feature of the master bedroom is a door leading out to the front porch. “I really wanted access to the outside from here,” says

Brooke. “When the boys are outside, I have quick access to them from here.” Another suggestion from their builder was designing the bedroom windows to be tall, which lets in plenty of South Dakota sunshine and gives them that unhampered view out into the yard. Above the dual-sink vanity in the master bath hangs a light fixture made of several hanging mason jars. Brooke admits she saw the idea on Pinterest and made a first attempt at making it herself, but decided it was probably better to just go ahead and purchase it from Pottery Barn. The lower level of the house is unfinished for the moment, so a farm-style swinging gate that Jeremy built keeps young Knox orcan Yobusy ur Fhimself from venturing downward. Instead, fhe amily, at his e c t A i v r e h u o L Y i f mini-kitchen that stands next to the island. esytle T and The Rollags’ vision was to create a comfortable home that would be for a lifetime. “In coming home to this land, we wanted to create a forever place,” says Brooke. “We put a lot of thought into a design that would be big enough as we had a family, but not too big that we can’t grow old here.” Talking about the door from their bedroom to the porch, Brooke was thinking about their future here, as their boys grow up. “Maybe someday, we’ll put a porch swing out there, and spend many mornings watching the sun come up curled into a blanket enjoying God’s Grace.”

e all know about St. Patrick’s Day, celebrated every year with a parade downtown, meals of corned beef and cabbage, and way too much green beer. Legend says Ol’ Patty drove the snakes out of Ireland and we honor that noble (if historically inaccurate) task each year on March 17 or a Saturday around that date to allow for more people to drink more beer. This year the city will rally and become “Irish for a day” on Saturday, March 14. That’s about all we need to say about Saint Patty. But there is another Saint whose day is celebrated in March; St. Joseph. His day of feast falls on March 19 and is celebrated by the Italians instead of the Irish. The legend of Joseph (or San
Giuseppe, as he’s known in Italian) begins as the spouse of the Virgin Mary. But it was in the Middle Ages that the people of Sicily prayed to him to end a severe drought. Their prayers were answered and they thanked St. Joe with a huge feast. Hundreds of years later, Sicilians still build elaborate alters and wear red clothing to celebrate his day. Not being Catholic or Italian American, I really didn’t know about St. Joseph until a few years ago. My beloved and I were in New Orleans for a visit one March and in addition to the Irish-American parade for St. Patrick’s Day, we found ourselves in the middle of an even bigger, more elaborate parade for St. Joseph. Then they have a parade through the French Quarter and the real parties begin. Beads are tossed and much wine is consumed. And since it’s New Orleans, plenty of beer and hurricanes are served up and down Bourbon Street. Unfortunately, the St. Joseph’s Day celebration has yet to take off in Sioux Falls. But seriously, wouldn’t you rather celebrate with pasta and wine instead of green beer and cabbage? I sure would. So this year, when the St. Patty’s Day celebrations wind down and you’ve had enough beer, change your green shirt for a red one, start a big pot of Maccu di San Giuseppe (a soup of dried fava beans) and open a bottle of red wine in honor of St. Joseph. Or maybe we could start our own parade, but instead of going down Phillips Avenue we’ll go up Louise Avenue from Spezia to Carino’s. Let’s start a new tradition right here in South Dakota! Who’s with me? Do yourself a favor, eat something good today. When he’s not looking for a reason to celebrate, Jim runs ADwërks, an advertising agency in downtown Sioux Falls. For a great introduction to the New Orleans tradition of St. Joseph’s day celebrations, I recommend reading Sara Roahen’s Gumbo Tales: Finding My Place at the New Orleans Table, a sweet series of stories about the Wisconsin native’s years living, cooking and eating in New Orleans. .

Irish vs. Italian
by Riccardo Tarabelsi
I
remember getting picked on in second grade by Joe Flaherty, Jimmy Fitzpatrick, and Breen Mahoney, no lie. Luckily, I had kids like Frankie Valentino and Tony Scarfo on my side. It was all about pride: you see there’s always been this feud, this rivalry between the Irish and the Italians in Boston that dates back to ever since I can remember. If you’ve never been to Boston, here’s a quick geographic tip: If you want good wine, go north; if you want good beer, head south. The North End of Boston is lined with cobblestone streets, narrow alleys, and Italian family-owned businesses like restaurants, cafés, barbershops, and bakeries. South Boston, or “Southie” (refer to the movie Good Will Hunting for a better picture of this neighborhood) is heaven for pub-seekers and bar-hoppers. Again, most are owned by Irish families because these families in Boston have been around forever, and the rivalry is pervasive. So what do you do when you’re an Italian on St. Patrick’s Day? St. Patrick’s Day always reminds me of this old guy I used to work with in Boston — his name was Gino Porzio, no lie. Gino was rough around the edges and grew up in the old neighborhood:

tough as nails, proud to be an Italian, and very outspoken. Without fail, every year on St. Patrick’s Day, he would never wear anything that even remotely resembled the color green. And again, without fail, an unsuspecting victim wearing a “Kiss me, I’m Irish” button on her green sweater would innocently ask, “Gino, why aren’t you wearing green today?” Gino would smile a little smile, tilt his head sweetly, and then unleash his rant about the Irish getting a holiday while the Italians never get any recognition for all of their accomplishments. And I’ll never forget this: he would always end it with, “I’ll wear green on St. Patrick’s Day, the day everybody wears green, white, and red on Columbus Day!” Luckily, everyone would laugh at these tirades because of how ridiculous he sounded, but he did teach me one thing: we should all be proud of where we come from. There’s this story about a proud Texan who was traveling through Italy and made a stop in Rome. He hired a private tour guide to drive him around Rome and point out some of the landmarks. Driving by the Vatican, the proud tour guide told the Texan, “The Sistine Chapel took 10 years to build.” The Texan responded, “That’s really
nice, but it only took us 3 years to build the Astrodome.” The guide, slightly annoyed, kept driving to the next famous destination, the Trevi Fountain. “La Fontana di Trevi: It took almost 30 years to build this masterpiece.” The Texan retorted, “That’s really big, but it only took us 4 years to erect a 71-story skyscraper.” At this point, the Italian tour guide was getting aggravated with the Texan’s lack of respect for Rome’s historic sites. But as the Italian drove by the Coliseum, the Texan piped up, “Look at that! That’s one of the most awesome structures I’ve ever seen! How long did it take y’all to build that?” The Italian casually replied, “What? That? It wasn’t there yesterday.” There is no one more proud than the Irish, on March 17th, who include the whole world in their celebration. This March, I
will celebrate the pride I have of my Roman lineage through my maternal grandfather, Umberto. Some of the greatest architecture, art, history, and, of course, wine and cuisine live on in Italy’s capital, Rome, which also is the capital of the region of Latium, south of Tuscany. Memorable meals in the region of Latium include antipasti like frittata (Italian omelette) with potatoes and onions or pasta like spaghetti alla carbonara, a dish whose sauce is made with egg yolks and cream, and is topped with pancetta, a fancy word for “Italian bacon.” Another favorite is Penne All’arrabbiata: pasta tubes with a hot sauce of tomatoes, garlic, and chili pepper. Arrabbiata literally means “angry”, and they say that when the Italian farmers go home for dinner, the hotter the Arrabbiata sauce, the angrier the wives are with their husbands.

“I’ll wear green on St. Patrick’s Day, the day everybody wears green, white, and red on Columbus Day!” White wines dominate Latium’s production, whose 23 D.O.C.’s are led by the versatile Frascati and Marino from the Castelli Romani and the mythical Est! Est!! Est!!! from Montefiascone to the north. The Est! Est!! Est!!! di Montefiascone is one of the few wines of ancient origin whose date of creation is known: the year 1000. Up until that time, the wine produced from grapes grown on the slopes rising from the shores of Lake Bolsena to the town of Montefiascone was appreciated only locally and praised by travelers. However, in the year 1000, the Holy Roman Emperor Henry V marched on Rome at the head of a powerful army to settle some controversy with Pope Pascal II. Bishop Johan Defuk was one of the followers of the expedition, but he apparently was more interested in the sightseeing of the excursion than the politics. He instructed his cupbearer, Martin, to go ahead of him on the route, keeping always one day in advance, and to select the inns where good wine was to be had by marking the word “Est!” (meaning: it is) next to the door. When he reached Montefiascone, Martin found that the usual “Est!” chalked next to the door of this one particular inn would not do it justice because the wine in this town was truly excellent. Since he had not arranged any other signal with his master, he decided to communicate his appreciation of the wine by writing Est! Est!! Est!!! on the door. The reputation of the wine was made on the day Bishop Defuk tasted the Est! Est!! Est!!! di Montefiascone. Captivated by the wine’s smoothness, the Bishop stayed in the town for three days. After completing his imperial mission, he returned to Montefiascone and remained there until his death. Buried in the town’s church of San Flaviano, the Bishop has been honored for centuries by the pouring of a barrel of wine over his tombstone every year. The saying, “When in Rome, do as the Romans do,” is one that applies to St. Patrick’s Day as well. “When it’s St. Patrick’s Day, do as the Irish do” and celebrate! Have fun and be proud. Just don’t let your pride get you in trouble like it did for my Italian buddies and me in the second grade. But I guess my pride hasn’t learned its lesson yet; just the other day, someone asked me, “When is the brewery in Sioux Falls going to be done?” With a sly smile, my response was simple and subtle, “Rome wasn’t built in a day.” Riccardo, and his pride, can be seen at Fernson Brewing Company as the VP of Sales and Marketing. When he’s not storytelling, Riccardo collects and creates stories with his wife Marybeth and three sons, Dante, Berent, and Jaxon. Get in touch with Riccardo at Riccardo@fernson.com.

Heart Problems During Pregnancy:
What One Expectant Mother Never Expected By: Sanford Health

tacy Hoitsma expected her body to change during her pregnancy. Weight gain, water retention, an achy back – she anticipated all of these changes. But what the 28-year-old Sioux Falls resident didn’t expect
was to discover a common heart rhythm disorder known as atrial fibrillation, or Afib. The first signs began in October 2014. “I started having heart palpitations when I was around six or seven months pregnant,” Stacy recalls. “I had no previous

complications with my heart, so I was concerned about what was happening – both for my health and my baby’s.” After seeking medical attention, Stacy continuously wore a heart monitor for a few weeks. And by the middle of November, she was given the news. “Up until this point, my pregnancy had been uneventful,” Stacy says. “I knew the health risks that came with an Afib diagnosis and was worried about what that would mean for the remainder of my pregnancy.” Atrial fibrillation causes the heart to beat irregularly – either too fast or too slow. As a result, it’s difficult for the heart’s upper and lower chambers to work together, leading to an increased likelihood that blood will pool and dangerous clots will form.

“Stacy’s risk of stroke greatly increased with her diagnosis of Afib,” says Marian Petrasko, MD, interventional cardiologist at Sanford Heart Hospital who treated Stacy. “Pregnancy is associated with an increased incidence of arrhythmias in women both with or without previous heart conditions.” Dr. Petrasko says that a woman’s blood volume increases during pregnancy, causing her heart to work much harder to pump the extra blood throughout her body. An increased heart rate can occur, but it’s important for women to pay attention to their bodies and seek help if something seems unusual. “Stacy did the right thing by getting help immediately,” says Dr. Petrasko. “We were able to get her started in medications to help prevent blood clots from forming, helping to protect her

10 Heart Signs You Shouldn’t Ignore Afib affects nearly 3 million people in the United States. If you are experiencing any of the following signs, whether or not you’re pregnant, seek help.
• General fatigue • Rapid and irregular heartbeat • Fluttering or “thumping” in the chest • Dizziness • Shortness of breath and anxiety • Weakness • Faintness or confusion • Fatigue when exercising • Sweating • *Chest pain or pressure *Chest pain or pressure is a medical emergency. You may be having a heart attack. Call 9-1-1 immediately.
and her unborn baby.” The typical treatment for Afib is blood-thinning medications – something off limits to Stacy because she was pregnant. But Dr. Petrasko developed an alternative therapy and monitored Stacy closely throughout the remainder of her pregnancy.
“I took aspirin every day and long-acting Cardizem twice a day,” Stacy stays. “Once I knew what was happening and I had Dr. Petrasko caring for me, it put my mind at ease. I was completely confident in the care I received from the heart team and I knew my heart and my baby were in good hands.” The remainder of Stacy’s pregnancy went smoothly. She always felt connected with Dr. Petrasko and the entire medical team. She frequently used My Sanford Chart to communicate with either her OB team or her heart team, and was pleased with its simplicity and convenience. “I was so impressed with how easy it was to communicate with Dr. Petrasko,” Stacy says. “He went above and beyond to communicate with me, which was so reassuring during those last few months before having my daughter.” This January, Stacy delivered a healthy baby girl, with no complications related to her Afib. She commends the entire team at Sanford for their teamwork to ensure the delivery uneventful. Dr. Petrasko continues to monitor Stacy’s heart for any sign of changes to her condition. “Everyone at Sanford was so accommodating during that time,” she says. “My heart team followed everything closely with the help of my OB team to ensure me and my daughter were happy and healthy. I’m so thankful”

hundreds of miles of trails available for hiking, snowmobiling, and more. Not only is the village named after the Grand Lake, the largest natural lake in the state, it also has two other beautiful lakes available for every water enthusiast to enjoy. The Grand Lake is headwaters to the mighty Colorado River, and has a historic boardwalk, marina, and yacht club. Each summer, the town of Grand Lake hosts the Grand Lake Rubber Ducky Races, the Grand Lake Regatta and Lipton Cup Races. Attracting sailboats and sailors from all over the world, these races date all the way back to 1905. Hosted by the Grand Lake Yacht Club, sailboats compete to win the prestigious Lipton Cup, and it is fun for the whole family. If you are looking for an exceptional place to stay, the Grand Lake Lodge is most likely your best bet. A registered national historic landmark established in 1920, this mountain lodge offers a variety of rustic cabins, a cozy lobby and fireplace, and a top-notch restaurant with a new all-day menu. The property is surrounded on three sides by fantastic views of the Rocky Mountain National Park. Guests can view the spectacular settings from the front porch hickory rockers and swings. They can also peruse the classic Colorado gift shop which offers local merchandise, as well as interesting items from around the world. Guests are also welcome to play some classic games in the arcade, or enjoy the heated outdoor pool and hot tub. The Lodge offers horse back riding, basketball, volleyball, horseshoes, and plenty of hiking trails right on the property. For those who are planning a special event, the Grand Lake Lodge banquet facility is an amazing venue with remarkable service, food, and views.

Also located in the Village of Grand Lake is Rocky Mountain Repertory Theatre, which showcases some of the nation’s most talented actors in world-class sensational musical hits and plays. The theatre was recently recognized by the Colorado Theatre Guild with the Outstanding Regional Theatre Award during the 2014 Henry Awards. Another fantastic attraction found in the Village of Grand Lake is the Kauffman House Museum, which was built in 1892. The Kauffman family operated it as a hotel until 1946, and it is the only remaining log hotel built in the Village of Grand Lake prior to the 1900s. Today, the Grand Lake Area Historical Society operates and maintains the historic building as a museum and nonprofit organization. Additional exhibits were added to a gallery in 1990, which change from time to time. The Kauffman House Museum is listed in the National Register of Historic Places because of its log architecture, as well as its westward movement history. The Village of Grand Lake is the western getaway town to Rocky Mountain National Park, and is located near the Kawuneeche Entrance. With abundant wildlife, adventurous hiking trails, majestic scenery, and ample meadows, Rocky Mountain National Park is a gem for anyone who has the opportunity to experience it. North Supply Access Trail is in the southwest corner of the park, and connects the Village of Grand Lake to a system of Arapaho National Forest trails, making up approximately 300 miles of groomed trails in the Grand Lake Area. Trail Ridge Road bisects the park and is the highest paved road in the United States. It goes “over the top” of the Continental Divide, providing stunning scenic views. Many

visitors who are staying in Grand Lake will drive Trail Ridge Road through the Rocky Mountain National Park and to the town of Estes Park on the other side. One of the most popular hikes in its region, Adam’s Falls is just a short climb uphill from the West Portal of Grand Lake, East Inlet Trailhead. It is a less strenuous trail with great rewards, with a beautiful rushing waterfall surrounded by small rocky cliffs through a steep forge feeding into the Grand Lake. Hike just a little bit further and you will come to a spectacular open meadow. If you are lucky, you may even spot a moose! There are several fabulous places to grab a bite to eat in Grand Lake Village. You will not want to miss the Grand Lake Lodge dining experience —chef-inspired dining where the views are as delicious as the cuisine! The historic Lodge dining room offers a lunch menus with fresh salads, sandwiches and homemade soups. Our chef-driven dinner menu features elegant cuisine, including hand-cut steaks, fresh fish, and a variety of other entrée options. O-a Bistro is very intimate, casual and affordable, and offers locally grown ingredients from a menu that changes seasonally in order to accommodate fresh fruits and vegetables. The O-a Bistro also offers an eclectic selection of foods from Europe, South America, Turkey, Asia, and the United States. The wine bar offers over fifty types of wine, and a casual and cozy atmosphere. Cy’s Deli is a popular spot for homemade dishes, with fresh baked bread and fantastic sandwiches. Located on the boardwalk of Grand Avenue, Grand Pizza offers a variety of pizza with over 30 toppings to choose from, as well as salads and panini sandwiches. As the state of Colorado’s oldest tourist destination, the Village of Grand Lake has something for everyone to enjoy. With year-round recreation, it is rich in natural history and culture, and is truly a mountain paradise.

or 150 years, camp has been the natural extension of traditional education — an expanded learning environment that provides enrichment and a hands-on experiential education like no other. Experts agree that camp is essential to a child’s development — teaching life lessons such as leadership, teamwork, empathy, and problem-solving. The most successful camp experiences occur when families and children work together to find a camp that best matches everyone’s needs. What about families who feel a sleep-away camp is not the right fit, but still want their child to experience all that camp has to offer? The answer may be right around the corner at a day camp. The American Camp Association® (ACA) reminds families that the benefits of day camp are extensive: Camp close to home — Perhaps a child is too young for resident camp, or perhaps scheduling does not allow for extended time away from home. Regardless of the reason, day camp is an excellent alternative. So much to do — Day camps offer a wide range of programming and activities, from sports to arts to science and education. Like resident camps, day camps offer team-building activities, leadership training, and wilderness programs. Keep those neurons pumping — Research indicates that participation in intentional programs, like camp, helps reduce learning loss during summer months. Camp is the ultimate classroom, using experiences to teach problem-solving and

skill-development. Get those bodies moving — Camp provides children the opportunity to try new things and participate in humanpowered activities. According to surveys by both the Kaiser Family Foundation and the Center for Disease Control and Prevention, an American child is six times more likely to play a videogame on any given day than to ride a bike. According to research conducted by ACA, 63 percent of children who learn new activities at camp tend to continue engaging in these activities after they return home. This leads to continued physical exercise that lasts a lifetime. Budget-friendly options — In certain circumstances, day care expenses, including transportation by a care provider, may be considered dependent care services and paid with a dependent care flexible spending account or pre-tax dollars. In addition, day camps may qualify for special tax incentives like child and dependent care tax credits. It’s not too late to find the perfect day camp experience. Families can visit www.CampParents.org and use the Find a Camp database to research camps by location, cost, and activities offered. Day camp is life-changing, providing growth and development through teachable moments, experiences, friendships, and most importantly, fun.

erriam-Webster’s online dictionary defines character as one of the attributes or features that make up and distinguish an individual. Character development is tricky. It isn’t something that can be learned from a textbook or in a lecture — it is learned through teachable moments and experiences. So where can families turn to help provide the right environment for character development? Families can go to camp. “Skills such as character building are inherent in the camp environment. growth lasts well beyond the camp experience and becomes a lifelong attribute.” — Peg Smith, Chief Executive Officer for the American Camp Association For over a century, millions of families have been benefiting from the positive, supportive environment provided by the camp experience. Camp develops character when: • Children and youth feel safe and nurtured, allowing them to take healthy risks and develop character organically; • Supporting mentors model positive character traits and lead by example; and • Camp provides teachable moments — for example, a disagreement about the rules of a field game becomes a lesson on integrity, honesty, and fair play. In a study of youth development outcomes conducted by Philliber Research Associates and ACA, campers said the following: • Abigail, age nine, said, “I learned how to be honest about stuff.” • “I learned a lot about respect and my real values in life, what they really should be,” said Louise, age fourteen. • Sam, age twelve, said, “At camp I learned how to be part of a team . . . sometimes you have to rely on someone to do a task or goal. You have to trust each other.”
Planning to Pump? How to Experience Breastfeeding Success By Donna Farris, for Avera Health
A
s a new mom, you want to give your baby all the benefits of breastfeeding. Yet the calendar also reminds you that the day of your return to work will come quickly. Breastfeeding delivers many benefits that cannot be replaced by formula: A closer bond between mom and baby, a boost to the baby’s developing immune system and better digestion. For mom, breastfeeding can help you lose post-partum weight, may help prevent cancer, and saves around $1,000 a year in formula costs.

“Exclusive breastfeeding is recommended for babies up to six months of age, and then breastfeeding complemented with other foods for up to 1 year of age.”
A good plan will make the transition from home to work smoother, advises Lynn Josten, RN, IBCLC, Certified Lactation Consultant at Avera McKennan Hospital & University Health Center. “First, educate yourself as to what’s realistic,” Josten said. Unless you’re one of the lucky moms who has access to daycare on site or within a few blocks of your workplace, you’ll likely need a good breast pump. “An effective breast pump mimics how the baby removes milk
effectively,” Josten said. “Beware of breast pumps that are suction only. That’s just going to be frustrating and painful.” Because breast pumps don’t have standard labels or FDA approval, ask your provider or hospital lactation consultant to recommend a brand and/or model. Also, check with your insurance company because the breast pump might be covered as durable medical equipment. Plan ahead as to when you’ll feed your baby, and when you’ll

pump. Moms who work 8 to 5 often feed their baby right before work, pump over the noon hour, and then feed immediately after getting home from work, or even at daycare before heading home. If you plan to pump at work, ask your employer about a comfortable place to express milk. In fact, under the Affordable Care Act, employers are required to provide breastfeeding moms with a reasonable break time and a private place – other than the ladies’ restroom. Right after your baby is born, just enjoy your baby and concentrate on learning how to breastfeed. “Don’t get frustrated at first. Things will quickly change within the first couple of weeks as you and your baby learn to breastfeed,” Josten said. Once you feel totally comfortable with breastfeeding, then it might be a good idea to try pumping once a day or so, both to get used to the pump, and for the baby to get used to taking a bottle. Pumping while you’re still home is up to you. But it might take some of the pressure off that first day back at work, Josten said. “You start to get a milk supply built up for your baby, and you don’t have to worry about whether baby will take a bottle while at daycare.” While it’s good to have a supply of milk in the freezer in case it’s needed, it’s also best to pump for the next day, so the baby has the freshest milk for the greatest immunity benefit. Courtney Ehlers of Sioux Falls has breastfed three of her children through at least nine months, and she’s now breastfeeding baby number four, Eden. A nurse, Courtney now has a daily Monday to Friday shift and can pump over the noon hour. When she worked a 12-hour shift earlier in her career, she had to pump every four hours. “One perk of being a breastfeeding mom is a bona-fide excuse to take a 15-minute break. I always try to make pumping a relaxing time, maybe read an article or chapter in a book – nothing too stressful.” After work, Courtney finds that Eden wants to feed right after getting home. “She wants that connection and bond with mom. It’s a good wind-down to the day, and a good start to the time when we’re back together,” Courtney said. Exclusive breastfeeding is recommended for babies up to six months of age, and then breastfeeding complemented with other foods for up to 1 year of age. Don’t get frustrated if your baby isn’t sleeping through the night, and don’t blame breastfeeding. Most babies need to wake up to feed at least once during the night, and this is important to their development. “When you’re low on sleep, just remember, ‘this too shall pass,’” Josten said. “Know that you’re doing what’s best for your baby – even if it’s at 3 o’clock in the morning.”

How To Catch A Leprechaun by Amity Shay Neff
I
t’s that time of year again…a time of green magic and leprechaun whimsy. St. Patrick’s day is almost here. So we must get ready and prepare to catch a leprechaun this year. Their history is rich as Irish folk lore does state. Yet, before we set out our golden bait, we will share the secrets of how you too can set out a trap and capture a clever little leprechaun. First you must know that they have been around for centuries and have pockets filled with magic. They will do anything and everything to keep their precious pot of gold safe. They are

known for being mischievous and vanishing before you get the chance to see them. If you do, you will see they have beards and golden buckles on their shoes. You see, these tricky little shoemakers love gold and will go to extreme lengths to seek it out. That is why you must build a trap. Since they originated from the Emerald Isle, they cannot help but love the color green. So start the day by making a delicious green smoothie with kiwis and other yummy green things. They not only love green, but they simply cannot say no
to the rainbow, because after all, at the end is where their gold is hidden. So it would be great to find a box or container and paint it all the colors that are in the rainbow. He will be sure to visit with a masterpiece such as that. While the paint dries, you could roll out some cookie dough and make clover cookies. No one can say no to these, not even a leprechaun! Now if you hear a small tapping, like the sound of a really small hammer, that is a sign that a silly little leprechaun might be close. At least that’s what they say in Ireland.
Now it’s time to devise a plan to capture that leprechaun. Did you know that it has been foretold that if you capture him, he must give you three wishes? Although, if you do he might make you feel so silly and nervous that you could forget to ask. Remember that these little magical fellows are very tricky and could be in and out in a flash. So that is why you must tempt him with gold for his secret stash. You could gather an old gold locket or perhaps a ring, but golden coins are the best, especially the ones filled with chocolate. Now I’m not sure

why it’s not so known, but leprechauns love golden wrapped chocolate coins. In fact, sometimes if you set a trap and they hear a noise and run away, you will find chocolate coins in your house, on your steps and even out the doorway. That is how you know a leprechaun visited and got away. It is not easy, this task at hand. To capture one of the most famous mysterious creatures of Ireland, but it’s worth it, or so I’ve been told. For all the gold he seeks and steals and then hides away, is in fact insurance if he were to ever be caught by a human. The promise is if you catch him, he will offer you his pot of gold for his release, but I’m not sure I believe in that blarney. I have a sneaky suspicion they may trick you out of that too. You never know with those silly little shoemakers. I almost forgot to tell you, you must wear green because leprechauns love to give playful little pinches if you don’t. Right before bed or school, hide your gold and prepare your trap. Start with a trail of glitter or maybe even flour to catch a glimpse of his tiny footsteps. Then put a green drink, and either a cookie or some fools gold under the container to tempt him to enter. You could also leave a few chocolate filled gold coins under it too. Then when you come home or when you wake up, you might find a lucky little surprise under the box, perhaps he will have even left golden coins if he got away. Whether you catch a leprechaun or not, this is a fun and magical tradition to enjoy with your children on St. Patrick’s Day. Sláinte!

Shamrock Hat Materials needed: All you need is a paper plate, some scissors, and a green marker. Instructions: You can make a party hat for just about any occasion with this craft. For St. Patrick’s Day, color a white paper plate green, or find some plates that are already green in color for your hat. The smaller the child’s head, the bigger the brim on your hat is going to be. Guess the hole size to be on the smaller side, because you can always make it bigger if it’s too small for the person’s head. Fold the plate in half, then cut the middle part of the plate for the head. Be sure to leave a part where the middle is still attached to the brim, so you have your design. For a shamrock design, keep the plate folded in half and cut the shamrock leaf so that it is symmetrical on both sides. Practice on a piece of paper first, to be sure you will get the design correct. Once you are finished, unfold the plate and further decorate it any way you would like.

Shamrock Necklace Wine Cork Shamrock Stamp Materials needed: three wine corks, green paint, a small paintbrush, and tape. Instructions: If you like wine, you will need to eventually drink three bottles of your favorite kind. Once you have three wine corks saved up, align them so that they make a flat top, then tape them together using some strong tape that will hold. Pour a little bit of green paint onto a plate, and have your kids dip the flat part of the wine cork stamp into the paint. Then firmly press the cork stamp against a piece of paper to get the top of the shamrock shape. Using a little paintbrush, add some stems to the shamrocks. You can use this stamp to create several St. Patrick’s Day crafts with your kids, so get creative.
Materials Needed: Macaroni with large holes, twine or yarn, construction paper, green food coloring, wax paper, zipper baggie, scissors, hole punch, and a pencil. Instructions: Mix one teaspoon of water with about 6 drops of green food coloring in a zipper baggie. Add 1/2 cup of macaroni, then seal the baggie and mix it around until the macaroni is completely coated with green. Spread the macaroni out on a piece of wax paper and let dry. This will take about 30 to 60 minutes, so be sure to make this ahead of time. Cut out some small shamrocks from green construction paper. If you can find a shamrockshaped cookie cutter, use this as a template. Punch holes in the top of each shamrock, then string your macaroni and shamrocks onto your twine or yarn. Tip: kids have an easier time stringing things like this when the end of the twine or yarn is wrapped with a small piece of masking tape. When you are happy with how your necklace looks, tie the ends together and wear with pride!
Shamrock Hairpin Materials Needed: Scissors, a bobby pin, a green button, felt in both light and dark green shades, hot glue gun, white card stock, a needle and thread. Instructions: Cut out one small dark green shamrock, and one light green shamrock from the felt. Lay the small shamrock shape on top of the larger one. Place the button on top, then using a needle and thread, sew the button to both layers of felt. Carefully glue the shamrock decoration to a bobby pin using a hot glue gun. Let dry completely, and you have an adorable hairpin for your little ones.

Luck of the Irish by Dick Rogen, DVM Horizon Pet Care, 1100 East Holly Boulevard, Brandon, SD 57005 • (605) 582-8445

as Bob lucky or not? It is all in how you look at his story. Bob is a young Irish Wolfhound we take care of at Horizon Pet Care. He is a handsome guy that stands nearly 4 feet at the shoulders and weighs over 140 pounds. Irish Wolfhounds are very docile, gentle creatures, despite their size and threatening name. They were bred to keep watch over livestock and to protect their owners. Over time, they have been bred to be faithful companions that are better suited for a living hairy rug, rather than a menacing guard dog. Bob is true to his breed, except he is good at getting into mischief! He grew so fast as a puppy that his legs hurt. Bob had “growing pains” because he doubled in size every four weeks. We prescribed medications and rest. As a puppy, he did not understand rest, that was too boring. Over time he eventually felt better despite ignoring his owner’s attempts at slowing him down. In February, he pushed his luck when he ate a towel. I do not understand what is so interesting or flavorful about a towel, but they are often consumed by dogs. I get underwear or socks because they have odors, but a towel is big. He was tricky though; he ate the towel in secret. The most common sign of eating towels, underwear, or socks is nothing in the beginning. There are times when these soft items will pass through them and you may never know until you clean up the yard. Vomiting is the next sign of problems. Often they will vomit up their meal 30-60 minutes after eating. At the beginning, they still have a good appetite, but refusing to

eat is a bad sign. I do not worry if a pet vomits once, as they can experience an upset stomach just like us. Where we get very concerned is if they cannot keep water down. That is a signal that this is serious. So back to Bob...he has great people taking care of them. He came to see us when he did not want to eat. He trotted into the clinic and was still wagging his tail. Upon examination, he we was bright and active. He didn’t have a fever. He was just a little tender in his stomach and nothing showed up on his X-ray. We gave him an injection to calm his stomach and if he vomited overnight, we wanted him back. The next morning, here comes Bob. He couldn’t keep any water down. We gave him barium contrast to see if there was something blocking his GI tract. The barium did not stay down either, so it was time to surgically explore his abdomen. That is where we found the towel lodged in his intestines. Surgery went very well, but it took 2 1/2 hours and 4 incisions to remove the towel. He has recovered and is back to normal after a few days in the hospital and a lot of care by his family at home. This is where “luck”, can be viewed from many different perspectives. You might think he was unlucky to not pass the towel, but considering the size of it, I doubt that any dog could pass 3 foot of cloth. It may not seem lucky that he had to have surgery, but I see that Bob is lucky that surgery was done well and in time to prevent serious consequences. Bob has a great life, he’s Irish and therefore, I think he is very lucky!

Mammoth: Denizen of the Ice By Bruce Blake
M Mammoth: Denizen of the Ice Sioux Falls, Augustana College
ammoths entered the New World approximately 1.7 million years ago and ranged through this hemisphere until their final extinction occurred at the end of the Pleistocene (Ice Age) about 10,000 years ago. The mammoth was the largest land mammal that existed worldwide during the last Ice Age. This life-size sculptural representation is based on an actual specimen excavated in the White River Badlands of South Dakota at the LangeFerguson archeological site. In life this mammoth stood 14 feet at the front shoulders and weighed approximately nine tons (18,000 lb.) The sculpture has been left unpainted since mammoth fur recovered in the Soviet Union confirms that these animals had a reddish-brown coat very close to the color of rust. This sculpture is dedicated to the memory of Helen Bernice Hannas (1910-1991), an individual of wisdom and wit whose parting has left an untitled void. Created by Eugene A. Anderson and Adrien Hannus, Funded by Eugene and Miriam Anderson, Archeology Lab, Jerke Construction, and Jerry & Gail Simmons.
Mammoth Kill in South Dakota. PaleoIndians (oldest American Indians) were also called “Big game hunters” and “Clovis hunters.” Some of the very earliest humans to enter South Dakota are depicted in this scene as they close in for the kill of a Colombian mammoth in Western South Dakota. Thousands of years later the mammoth’s bones were excavated by an archeological
