O

nce upon a time, two young South Dakotans developed a passion for brewing beer. Derek Fernholz experienced an “ah-ha” moment eight years ago when touring the Dogfish Head Brewery in Delaware…a tour that just happened to be led by the brewery’s founder, Sam Calagione. Immediately after the tour, he jumped in with both feet. Fernholz bought Calagione’s book Extreme Brewing, started brewing and hasn’t stopped since. He became a nationally certified beer judge, and those who know Derek refer to him as the “Walking Encyclopedia of Brewing.” On the other side of the coin, the more analytical Blake Thompson researches all angles of an opportunity before he “jumps in.” Thompson first developed an interest in the fermentation process after spending time at Jessup Cellars winery in the Napa Valley. Noticing a lack of breweries in the Sioux Falls area, he became serious about beer and was accepted into the Brewing Program at University of California-Davis. When Thompson returned home to Sioux Falls, he began writing a business plan to open his own brewery. When Thompson mentioned to friend Rob Green that he was developing a brewery plan, Green told him, “Hey, you should talk to my brother-in-law, Derek. He’s working on a brewery business plan too.” (side note: Derek brewed all the beer for Rob’s wedding.) Once the two met, they knew they’d be better off working

together than trying to compete. They not only combined their brewery plans, but they also combined pieces of their last names to create their new business identity – Fernson. Fernson Brewing Company opened in a 12,000 foot warehouse in October 2015 and is already well on its way to becoming a regional brewery. According to Riccardo Tarabelsi, Fernson’s VP of Sales and Marketing, there are many “oohs and aahs” when people come in and see the brewing tanks through the large window in the Tap Room. “From the outside of the building, you can’t tell what’s happening

inside,” says Tarabelsi. “Fernson is a production brewery, which is different from a brew pub. While we do have the Tap Room here for people to come out and sample our beers, we really want them out supporting all of the local businesses who carry the Fernson line.” The Tap Room is certainly an inviting place to experience locally brewed beer, with the design crafted as carefully as their beer recipes. The owners combined the industrial look of metal stools and tables with the warmth of 120-year-old barn wood on the walls. Cool chandeliers of rope and metal hang from the ceiling, and all around the room is a collection of funky art.

The owners say they are building Fernson to not be just a business, but also a persona. “We see Fernson as this guy,” says Thompson, “who is kind of a hippy, sage traveler type. Almost like our own version of Gandalf.” The image of this Fernson persona is evident in the company’s logo and represents that Fernson as a company is bigger than the sum of its parts. They have developed a line of standard brews, from a Wheat Ale and IPA to their Farmhouse Ale, Porter and Lion’s Paw Lager, but other items on the tap list change regularly. While the brewery uses a 30-barrel system, which equals

between 1,000-2,000 gallons, they test everything on a smaller system where they can make between five and 30 gallons at a time. The smaller system also allows them to make some tap-room only and some seasonal varieties. Fernholz says they make it a priority to source as many local and regional resources as possible. “We are proud to use Sioux Falls water,” he explains. “It is

actually regarded as very high quality water for brewing. The only things we filter out are chlorine and chloramine. Our barley comes from a Malthouse in Minnesota and Wisconsin, and the mill in the brewery is from RMS, a company in Harrisburg.” The company’s current production capacity is 4500 barrels annually, and they also have a canning line, with two of their beers available in cans. and parts of Iowa, and the company and its beer were recently featured at the South Dakota Tourism Conference. While the Tap Room is only open limited hours on Thursdays, Fridays and Saturdays, the facility can be reserved for special events, and the team is ready to work with you to arrange catering and other details. The Tap Room is “family friendly,” as long as minors are accompanied by an adult age 21 and over.

Both Fernholz and Thompson are happy their paths crossed so they could bring a brewery to Sioux Falls. Being a local company is something they are proud of, and they want to make sure other people know about Fernson’s origins. “Whatever we do,” says Fernholz, “from our cans and tap room glasses to our marketing materials, we make sure we promote the fact that Fernson is ‘proudly brewed in South Dakota.’”

W

ith one child away at college and just one teenager left at home, Sheri Roelfsema was looking to downsize. At first, she thought perhaps a townhouse would be the right move. But, as she started to look around and do some comparing, she discovered that a newly constructed, smaller house, fit both her budget and lifestyle. She has now been in her house at the southern edge of the city for the past year and a half. “I look back now and realize this was absolutely the right decision,” says Sheri. “The size is just right for my daughter and I, and I don’t have to be concerned with ‘attached’ neighbors and noise like I would in a townhouse. So, when my daughter is downstairs cranking up Guitar Hero, I don’t have to worry about it bothering anyone!” Sheri says she actually sketched the whole design on a piece of paper – something she had never done before. But, drawing

on the inspiration of other homes she has seen, magazines and websites, she started putting together all the elements she knew she wanted. The color scheme throughout the house is dark, warm wood paired with lighter creams and grays. She loves the look and feel of a downtown loft, but with a few years before her teenage daughter

The upper level has an open wall, allowing you to look down


from the hallway over the living room, a room with a grand feel with its high ceiling, yet warm with the in-wall gas fireplace and cozy furniture setting. Long, dropped pendant lights form a gentle curve hanging over the living room. Another priority for Sheri was lots of natural light from as many windows as she could work into the design. For the living room,

that resulted in three rectangular windows that are nearly floor to ceiling in length. Each has a smaller square window above it, and the squares remain uncovered at all times. The rectangular windows are fitted with shades, which, says Sheri, were one of the most challenging accessories to find because of the length. And, she adds, they had to be electronic for easy raising and lowering.

To let in more of that natural light, Sheri added a sunroom to her design, setting it apart from the main living space with wood-


framed glass sliding pocket doors. While there are other houses in the development, she doesn’t have any neighbors directly behind her because of a ravine just beyond her yard. So, she can enjoy the view from the sun room or from the deck out back.

A main floor laundry room was another “must” in her design, and a stacked washer and dryer with built-in shelves is located in the main floor bathroom, which also features a large white basin sink on top of a dark wood vanity. “I actually spent quite a bit of time looking for things like sinks

Irish vs. Italian BY RICCARDO TARABELSI

I

remember getting picked on in second grade by Joe Flaherty, Jimmy Fitzpatrick, and Breen Mahoney; no lie. Luckily, I had kids like Frankie Valentino and Tony Scarfo on my side. It was all about pride: you see there’s always been this feud, this rivalry between the Irish and the Italians in Boston that dates back to ever since I can remember. If you’ve never been to Boston, here’s a quick geographic tip: if you want good wine, go north; if you want good beer, head south. The North End of Boston is lined with cobblestone streets, narrow alleys, and Italian family-owned businesses like restaurants, cafés, barbershops, and bakeries. South Boston, or “Southie” (refer to the movie Good Will Hunting for a better picture of this neighborhood) is heaven for pubseekers and bar-hoppers. Again, most are owned by Irish families

because these families in Boston have been around forever, and the rivalry is pervasive. So what do you do when you’re an Italian on St. Patrick’s Day? St. Patrick’s Day always reminds me of this old guy I used to work with in Boston — his name was Gino Porzio; no lie. Gino was rough around the edges and grew up in the old neighborhood: tough as nails, proud to be an Italian, and very outspoken. Without fail, every year on St. Patrick’s Day, he would never wear anything that even remotely resembled the color green. And again, without fail, an unsuspecting victim wearing a “Kiss me, I’m Irish” button on her green sweater would innocently ask, “Gino, why aren’t you wearing green today?” Gino would smile a little smile, tilt his head sweetly, and then unleash his rant about the Irish getting a

“When it’s St. Patrick’s Day, do as the Irish do. Have fun and be proud. Just don’t let your pride get you in trouble like it did for my Italian buddies and me in the second grade” holiday while the Italians never get any recognition for all of their accomplishments. And I’ll never forget this: he would always end it with, “I’ll wear green on St. Patrick’s Day, the day everybody wears green, white, and red on Columbus Day!” Luckily, everyone would laugh at these tirades because of how ridiculous he sounded, but he did teach me one thing: we should all be proud of where we come from. There’s this story about a proud Texan who was traveling through Italy and made a stop in Rome. He hired a private tour guide to drive him around Rome and point out some of the landmarks. Driving by the Vatican, the proud tour guide told the Texan, “The Sistine Chapel took 10 years to build.” The Texan responded, “That’s really nice, but it only took us 3 years to

build the Astrodome.” The guide, slightly annoyed, kept driving to the next famous destination, the Trevi Fountain. “La Fontana di Trevi: It took almost 30 years to build this masterpiece.” The Texan retorted, “That’s really big, but it only took us 4 years to erect a 71-story skyscraper.” At this point, the Italian tour guide was getting aggravated with the Texan’s lack of respect for Rome’s historic sites. But as the Italian drove by the Coliseum, the Texan piped up, “Look at that! That’s one of the most awesome structures I’ve ever seen! How long did it take y’all to build that?” The Italian casually replied, “What? That? It wasn’t there yesterday.” There is no one more proud than the Irish, on March 17th, who include the whole world in their celebration. This March, I will celebrate the pride I have of my Roman lineage through my

maternal grandfather, Umberto. Some of the greatest architecture, art, history, and, of course, wine and cuisine live on in Italy’s capital, Rome, which also is the capital of the region of Latium, south of Tuscany. Memorable meals in the region of Latium include antipasti like frittata (Italian omelette) with potatoes and onions, stuffed eggplants, and breads grilled and flavored with garlic and oil as bruschetta or sliced and topped with meats, vegetables, or cheeses as crostini. Roman menus feature spaghetti alla carbonara, a dish whose sauce is made with egg yolks and cream, and is topped with pancetta, a fancy word for “Italian bacon.” Another favorite is Penne All’arrabbiata: pasta tubes with a hot sauce of tomatoes, garlic, and chili pepper. Arrabbiata literally means “angry”, and they say that when the Italian farmers go home for dinner, the hotter the Arrabbiata sauce, the angrier the wives are with their husbands. Pecorino Romano prevails among cheeses, made from the milk of sheep or goats, and is known for its bite, similar to that of Parmigiano Reggiano. Rome is also noted for gelato, Italian ice cream, and cream-filled pastries called bignè, of which I could easily eat a couple dozen in one sitting. Meals often end with a glass of sweet sambuca liqueur, sipped with three coffee beans to munch on. White wines dominate Latium’s production, whose 23 D.O.C.’s are led by the versatile Frascati and Marino from the Castelli Romani and the mythical Est! Est!! Est!!! from Montefiascone to the north. The Est! Est!! Est!!! di Montefiascone is one of the few wines of ancient origin whose date of creation is known: the year 1000. Up until that time, the wine produced from grapes grown on the slopes rising from the shores of Lake Bolsena to the town of Montefiascone was appreciated only locally and praised by travelers. However, in the year 1000, the Holy Roman Emperor Henry V marched on

Rome at the head of a powerful army to settle some controversy with Pope Pascal II. Bishop Johan Defuk was one of the followers of the expedition, but he apparently was more interested in the sightseeing of the excursion than the politics. He instructed his cupbearer, Martin, to go ahead of him on the route, keeping always one day in advance, and to select the inns where good wine was to be had by marking the word “Est!” (meaning: it is) next to the door. When he reached Montefiascone, Martin found that the usual “Est!” chalked next to the door of this one particular inn would not do it justice because the wine in this town was truly excellent. Since he had not arranged any other signal with his master, he decided to communicate his appreciation of the wine by writing Est! Est!! Est!!! on the door. The reputation of the wine was made on the day Bishop Defuk tasted the Est! Est!! Est!!! di Montefiascone. Captivated by the wine’s smoothness, the Bishop stayed in the town for three days. After completing his imperial mission, he returned to Montefiascone and remained there until his death. Buried in the town’s church of San Flaviano, the Bishop has been honored for centuries by the pouring of a barrel of wine over his tombstone every year. The saying, “When in Rome, do as the Romans do,” is one that applies to St. Patrick’s Day as well. “When it’s St. Patrick’s Day, do as the Irish do” Have fun and be proud. Drop Acid BY JIM MATHIS

W

ant to make your food taste better in one simple step? Drop acid. It’s just that simple. Often the difference between the food you cook at home every day and the food made by the finest chefs comes down to a little bit of acid. If you’re eating fish, a squeeze of lemon or lime will liven up the dish. A couple of slices of pickle can help cut through the fat of a big, juicy burger. A little drop of acid can make a big difference. Before we get into all of the different ways to add acid to your food, let’s talk about why it matters. First, acid helps to stimulate the palate; it wakes up the saliva glands, literally making your body

ready to eat. Our taste buds respond to acidity as sour. So when we talk about acid, we’re really saying sour. Second is balance, we want a nice mix of flavors in the food we eat. And since we all get more than enough fat, sweets and salt, a little sour helps to balance it out. Why do we dip French fries in ketchup? Because the acid balances the fat and salt. How do you add acidity? The obvious answer would be vinegar. A quick tour down the vinegar aisle at the mega-mart shows more options than you can imagine. My cupboard usually has aged balsamic (which adds sweetness with the sour), red wine, white


wine, rice, cider, sherry and plain-old white vinegars on hand. Each brings a little different flavor along with a potent sour kick. Citrus is another obvious suggestion; lemons, limes, oranges or grapefruit all work well. The juices add depth but sometimes the zest of the citrus (the outer layer of the skin) is enough to bring an acidic brightness to the party. Others fruits including many berries and tomatoes (yes, they’re a fruit) also help to kick the acid level up a notch or two. My favorite way to bring acidity is to reach for the wine cabinet. Dry white wines bring a subtle acidity, hearty reds bring deep rich flavor while cranking up the pH. I often find myself reaching for a bottle of dry sherry wine to deglaze pans when making sauces or to add complexity to gravies and soups. Again the sherry brings sweet along with the sour, so it enhances other flavors without overpowering them. Many of us reach for condiments to kick up the acidity at the table. Ketchup adds a sweet and sour punch. Most mustards list vinegar at or near the top of the ingredient list. Tabasco or other hot sauces? Peppers and vinegar make a hot and sour kick in the taste buds. Barbecue and steak sauces might be mostly sweet, but there’s vinegar in there too. Even mayonnaise has a little acid. When I was a kid, special occasion meals always came with a relish tray on the table, filled with an assortment of tiny dill pickles, pickled beets, olives and even the occasional pickled herring. What I didn’t know was those items weren’t there just so grandma could show off the fancy dish; they added balance to the table. The tart cranberry relish on Thanksgiving has as much to do with adding acid to a rich meal as it does tradition. Not long ago, I was out of town on business and found myself faced with the typical breakfast fare in the hotel restaurant. They had a fried egg sandwich that sounded OK, so I ordered it. It was a mostly run-of-the-mill entrée; two hard fried eggs, some Swiss cheese and ham on grilled bread. But there was one other ingredient that caught my eye – Peppadew peppers, those mildly spicy pickled cherry peppers. When they were added to that basic fried egg sandwich, they brought heat, and yes, a little acid. It was so great that I recreated it at home that next weekend. My beloved, who’s not a big breakfast-eater, loved it. That simple ingredient changed the meal from mundane to memorable. If you watch any of the cooking competitions on TV, you frequently hear the judges commenting that “it needs a little acid” or “it’s perfectly balanced.” They are recognizing that the difference between good food and great food can be that one ingredient. So next time you’re in the kitchen and you taste your masterpiece, ask yourself “would a little kick of lime wake this thing up?” Maybe it’s time you drop a little acid on your family. Do yourself a favor, eat something good today.

Easy Key Lime Pie

Key Lime Breakfast Bread

.3 ounce package sugar free lime gelatin 1/4 cup boiling water 2 cartons ( 6 ounce each ) key lime yogurt 8 ounce carton frozen whipped topping, thawed 1 ready made graham cracker crust

2/3 cup butter, softened 2 cups sugar 4 eggs 2 tablespoons grated lime peel 2 tablespoons lime juice 1 tsp vanilla 3 cups flour 3 tsps baking powder 1 tsp salt 1 cup milk 1 cup chopped nuts

Dissolve the gelatin in the boiling water in a large bowl. Whisk in the yogurt and then fold in the whipped topping. Pour into the graham cracker crust and chill for 3-4 hours before serving. Garnish with whipped topping if desired. Serves 6-8.

Glaze: 2/3 cups powdered sugar 2 tablespoons lime juice Cream the butter and sugar until light and fluffy and then beat in the eggs. Add the lime peel, lime juice and vanilla and stir well. Combine the flour, baking powder and salt and gradually add to the creamed mixture. Add milk and mix well. Fold in the nuts. Pour into two greased 9x5 inch loaf pans. Bake at 350Ëš for 50-55 minutes or until it passes the toothpick test. Cool 15 minutes and remove from pans. Combine the glaze ingredients and drizzle over the warm bread.

The demands of family and work often overshadow preventive health care for women. But if you don’t take care of yourself, it’s hard to meet those demands. Your health and well-being is far too important to ignore. Make certain you take the time to see your provider and think about your health.

A simple first step is to have your well-woman exam every year. This exam can help you avoid serious health problems and allow you and your provider to work as a team to manage your overall health. During your visit, your provider will determine which tests or screens are right for you based on your age, past medical history and current health.

Some of the most common tests and screens include: • Weight: Your body mass index (BMI) can be calculated to screen for obesity. • Cholesterol: Your cholesterol should be checked annually starting at age 45. Start earlier if you have diabetes, high blood pressure, heart disease runs in your family or you smoke.

• Blood pressure: Have your blood pressure checked by a health professional at least every two years. • Mammogram: Recent guideline changes suggest screening mammograms start between age 40-45 for baseline for average risk patients, but it is important to discuss your personal risk level with your provider before deciding when to start having mammograms and how often to have them.

• BRCA 1 and 2 genetic testing: If you have a strong family history of certain cancers, you may benefit from genetic counseling and BRCA genetic testing. • Pap smear: This tests for cervical cancer. From age 21 until age 65, you should have a pap smear every one to three years, depending on risk factors and whether you have a history of any abnormal paps. Women age 30 and older can switch to a combination Pap smear and human papillomavirus (HPV) test every five years until age 65. • Colorectal cancer screening: Between the ages of 50 and 75, a colonoscopy is recommended every 10 years. You may need to be screened earlier based on your history. • Diabetes: Get screened if you have high blood pressure or cholesterol or if your provider identifies other risk factors that make screening necessary, such as a family history of the disease, sedentary lifestyle or a past diagnosis of gestational diabetes while pregnant. • Sexually transmitted infections: Get screened if you are 25 or younger and sexually active. If you’re older, talk to your provider about being tested. • HIV: If you are 65 or younger, get screened at least once in your lifetime. • Bone density screening: At age 65, women should begin testing for bone density to screen for osteoporosis (thinning of the bones). If you are between 60 and 64 and weigh 155 pounds or less, talk to your provider first about this test. • Skin/Mole exam: Once a year, have your provider inspect your skin and any moles for evidence of skin cancer. • Depression: Your emotional health is as important as your physical health. If you feel “down,” sad, or hopeless for more than two weeks or lose interest or pleasure in doing things, you may be depressed. Talk to your provider about being screened for depression. In addition, your doctor may offer you vaccines to protect your health and your ability to keep up with your hectic family schedule. These can include the influenza vaccine, tetanus-diptheria booster vaccine, HPV vaccine and meningococcal vaccine. By taking the time for your well-woman exam, you are taking steps to protect or improve your health and increase your quality of life. ith St. Patrick’s Day coming up, there is one city that stands out a little bit more this month. Scranton, Pennsylvania, happens to host one of the largest St. Patrick’s Day parades in the country, with more than 12,000 participants including bagpipers, Irish step dancers, local musicians, and high school bands. It’s been an annual celebration since 1962 and is surrounded by nearly 150,000 spectators. The parade is just one of the reasons to visit Scranton, where there are several other entertaining attractions for visitors to discover.

Scranton is home to the beautiful Montage Mountain, a fullservice ski resort and lodge. Guests can ski, snow tube, snowboard, and more here during the winter. It is also the only resort in Pennsylvania and one of seven in the country to offer airboarding, which is an inflatable sled with knee pads and a helmet included. Experience long, fast tubing trails and numerous trails of downhill fun. During the summer, Montage Mountain offers Sno Cove, which consists of plenty of waterpark fun. Another museum worth visiting in Scranton is the Pennsylvania Anthracite Heritage Museum. The city became known as “The Electric City” because of its innovative nature.

IMMUNIZATIONS? CHECK. HEARING? CHECK. REFLEXES? CHECK, CHECK. PEDIATRIC CHOLESTEROL? WAIT — WHAT?

I

t’s not something just adults need to watch for anymore. The next time you bring your child to the doctor’s office for a checkup, you may have the option to screen for high cholesterol. If you’re wondering if screening for childhood cholesterol is new, the answer is yes, fairly new. The push came from the American Heart Association within the last few years; the American Academy of Pediatrics supported this endeavor.

One reason may be due to the growing concern about childhood obesity. Another reason may include the importance of catching high cholesterol early, and then reintroducing healthy behaviors before bad habits take root. Cholesterol and the Body Cholesterol, which flows through the bloodstream on lipoproteins, comes from two sources. Your body manufactures all of the cholesterol it needs to aid in such processes as digestion and making hormones. However, cholesterol is also present in the food you put into your body — particularly egg yolks, dairy, poultry and meat products. When low-density lipoproteins (bad cholesterol) bind with fatty substances and other materials, plaque can build up against artery walls. High-density lipoproteins (good cholesterol) remove bad cholesterol from the arteries. Though accompanied by virtually no symptoms, excess cholesterol in the bloodstream may lead to problems down the road.

The Dangers “No, kids aren’t going to have heart attacks at the age of 10,” said Schimelpfenig. “Still, left undetected and untreated, the progression of high cholesterol will cause a number of issues within the cardiovascular system during adulthood.” Plaque deposits can cause a total blockage in an artery, causing instant and deadly situations like heart attack or stroke. High cholesterol is also known in playing a part in other chronic conditions, including coronary heart disease, atherosclerosis (hardened arteries), diabetes and high blood pressure.

Screening Just like adults, screening for children involves a simple blood test for elevated levels of cholesterol and triglycerides.

For best results, children should be screened after a night of fasting. Understandably, it’s difficult to expect a child to not eat for a length of time. Try scheduling the appointment as early as possible in the day. “Physicians will still screen children if they haven’t fasted,” said Schimelpfenig. “Inform your doctor if your child has eaten as to explain any elevated levels from the blood test. From there, he or she will determine if your child needs any further testing.”

Treatment Fortunately, most children who are diagnosed with high cholesterol can lower it through diet and exercise. But remember, children are too young to understand what cholesterol is and the danger it can pose, so this responsibility largely rests on the parents. In more extreme cases, however, children may be put on cholesterol-reducing medicine, such as Lipitor®. “In the home, it’s important for parents to not single out the child who is struggling with cholesterol,” advised Schimelpfenig. “Get the whole family involved by eating cholesterol-friendly meals and going for walks after dinner rather than eating dessert. Think about this: If one person has high cholesterol, there is a good chance the whole family could benefit from a healthier lifestyle. ST. PATRICK’S DAY CRAFTS FOR KIDS: BY JESSICA WEISCHEDEL

Blarney Stone Materials: Smooth rock, green paint, paint brush, glue, yarn, googly eyes, markers, and sequins or glitter (optional) Instructions: Be sure to wash your rock thoroughly and pat it dry. Paint the entire rock with green paint and let it dry completely. Once dry, attach googly eyes using glue, then draw the rest of a face with markers. Add on yarn to create hair. Use any other embellishments such as sequins or glitter to decorate the blarney stone as you wish. To add to the fun of this craft, tell your child the following story of the Blarney Stone as they create it: “The Blarney Stone is built into the Blarney Castle in the Irish Village of Blarney. Legend has it that if you kiss the Blarney Stone, it will give you the gift of persuasive eloquence, or being skillful with your words. Nobody knows exactly how the stone got its magical powers, but one legend says that an old woman cast a spell on it to reward the king who saved her from drowning”

Materials: Green buttons, green cardstock paper, pencil, scissors, scrapbook paper in pattern of your choice, glue, and a frame to fit the scrapbook paper size. Instructions: You will need to cut the green cardstock paper into the shape of a shamrock for this project, so draw one in pencil until you are happy with the shape, then cut it out. Glue the shamrock onto a piece of scrapbook paper. A rainbow pattern would fit in nicely with the holiday! You can purchase buttons of all one color at most craft stores, however it might be fun to go thrifting and try to find green buttons with your kids. Once you have all of your green buttons, use the shamrock as your guide and attach the buttons on top of it with glue. A hot glue gun works best for this, so please follow safety guidelines if you are handling this with your kids. Once completely dry, frame your new piece of St. Patrick’s Day art. As you create this shamrock button art, tell your kids the legend behind the shamrock: “Three is Ireland’s magic number, and the three petals on the shamrock are believed to bring good luck to those who carry it.” If you are religious, there is a great history behind the shamrock if you are interested in researching it!

Leprechaun

Materials: Green pipe cleaner, 1 12” strip of green craft foam, 2 googly eyes, 1 large green pom pom, glue dots.

Materials: White paper plate, orange paint or marker, black marker, scissors, glue, and green, black, and yellow construction paper.

Instructions: Bend the green craft foam strip into s-shaped curves, poking the pipe cleaner through the center of each curve as you go. Once the pipe cleaner is through the entire foam strip, arrange the curves so that they are even, and leave a little bit of pipe cleaner at both ends and bend each end flat to secure. If you want the snake to look a little bit cuter, trim off about 2 inches of extra pipe cleaner to use as antennae. (Even though snakes don’t have them, it makes it so much cuter!) Use glue dots to attach the pom pom on one end for the head, then add googly eyes and any other accessories you want. As you create this craft, you can tell your kids why a snake is significant to the holiday: “According to legend, St. Patrick took a drum and played it loudly so that all of the snakes in Ireland slid away. He drove all of them out of the country and into the sea.”

Instructions: Turn the paper plate upsidedown on a surface that is safe to get messy. Paint or color the outside of the plate with orange, leaving the middle circle white. Let that dry, then take some scissors and carefully cut slits all around the orange section of the plate, creating a beard effect. Using green, black, and yellow construction paper, cut out the shape of a hat with a black band and yellow buckle. Glue the hat to the top of the paper plate, then use a black marker to draw a face in the white portion that is left over. Tell your kids the legend of the leprechaun as you create this magical craft: “Leprechauns are believed to be tricky creatures who stand two feet tall and have a hidden pot of gold. They are shoemakers who keep their profits in the pot of gold. If you catch a leprechaun, they will grant you three wishes and share their pot of gold with you. He can’t escape as long as you look him in the eye, but the moment you look away he will disappear.”

St. Patrick’s Day

T

wenty years ago I celebrated St. Patrick’s Day with a large group of the coolest band nerds ( myself included) as we set our sights on extended airplane rides to Ireland. In the late ‘90s my high school marching band was invited to participate in the St. Patrick’s Day parade in Dublin, Ireland. Even by today’s standards, this was a dream trip come true. Through months and months of fundraising we were a-go. We piled into buses with our instruments and awesome uniforms. They were kilts, and we were the Overland marching Scots. We even wore spats — now I know you are jealous. The excitement was epic with a multitude of teens forming lines at DIA. We were the first large group to fly out of the newly-built monster of an airport ( I still get lost in there). It was insane. I recall being on the plane for like ever. Everyone else was asleep, but I was commiserating with the flight staff. Which I would later regret because that jet lag caught up with me. We landed in England and were quickly put on two small planes to

that Emerald Isle. We were served strange food that I now wish I would have tried. Days before the actual parade, we got the best tours. This was amazing. I have never seen a more beautiful country, even in my dreams. Believe it or not, everything was so green and lush. We saw Georgian Doors, glorious architecture, Trinity College and the never-ending hills of green. We attended choirs and even played a concert at “THE” St. Patrick’s Cathedral. I bought the most beautiful rosary I had ever seen that day and I still have it. Yet my trip to the Blarney Castle was the best. Aside from the beautiful gifts and the wool shop, there were the most amazing gardens that encircled that legendary castle. Now I know what you are thinking. Did I kiss the Blarney Stone? Yes, yes I did. Only after I climbed the most twisted, crumbling, scariest stairs I had ever seen. Oh and that stone isn’t a cute little rock you go and give a sweet little peck to. No. It’s a slab of rock on the outside of the wall that you have to lay down and hang out of a hole in the wall to kiss — upside down. Gravity plays silly tricks on you when your head is hanging out of a hole. I think I kissed the wrong rock at first. I recall as we were heading down, that those wicked stairs were way easier going up than tiptoeing down. No wonder you had to kiss the stone so you had enough luck to make it down alive. I’m joking — not joking. Then came St. Patrick’s Day. I know we woke up late and were running behind. So there no time to figure out which converter outlet would match my curling iron. We hustled to get our

uniforms on and got to the starting gate of our place in the parade. In the time we got there, until the parade actually started, I swear we witnessed three seasons. Sunny, whipping chilly and sideways ice rain. Never in my life. It was cold, amazing and without corned beef. Seriously, none of that. Instead we were invited to meet the Mayor after the parade. He congratulated us, handed us certificates and offered us pints in celebration. Too bad we were Americans in that moment, no Guinness for us — boo. We collected our gifts and baggage and jumped in the buses and said our farewells to Ireland. I left a shoe in my hotel room; I’m a real life Cinderella, tourist style. My St. Patrick’s Day in Ireland was indescribable, although I swear I saw Nessy when we stopped for our group photo. It was epic in the ‘90s before social media and smart phones ( imagine that ). We actually were fully vested in that experience every moment and it was fantastic! I carry these memories with me and I am thankful I’ve gotten to share. It’s funny how St. Patrick’s Day looks very different in the USA than it does in Ireland. No grown men are dressed like lucky charms characters, green sticky facial hair is not a thing and it’s more of a celebration instead of a wild party. While they serve beer, it’s not green, rather it’s dark and delicious! There was no better way to celebrate but in heart of Dublin, Limerick, Cork or Tralee. May the mystery and magic behind this day be with you as you celebrate. Be it with green beer or facial hair, have a wicked cool St. Patty’s Day! Sláinte

Dr. Josiah L. Phillips 8th Street & Phillips Avenue, Sioux Falls

osiah L. Phillips was born in Maine in 1835. He graduated from a Chicago medical school at the age of 21. After moving to Dubuque, Iowa, he joined the Western Town Company. In 1856 the company had laid claim to a town site at the falls of the Big Sioux River. Dr. Phillips and other company men arrived a year later to occupy and improve the new town site, Sioux Falls, Minnesota Territory. As a surgeon in the Union Army during the Civil War, Phillips was with General Sherman’s army on its march from Atlanta to the sea. In 1867 he married Hattie C. Daggett. After Fort Dakota closed in 1869, he returned to Sioux Falls. Hattie and two-year old daughter Annie joined him in 1870. The officers’ quarters of the abandoned fort became the family home. That winter Phillips surveyed streets and lots from 6th to 9th Streets between Minnesota and Phillips Avenues. His 1871 plat was the first for the village and was the beginning of a personal fortune. He died suddenly in 1882 at the age of 47. Phillips Avenue, a central city artery, was named in honor of Dr. Josiah and Hattie Phillips. DEDICATED IN 2005 BY THE MINNEHAHA COUNTY HISTORICAL SOCIETY AND THE MARY CHILTON DAR FOUNDATION IN HONOR OF HANNAH YOUNG.

Dr. Phillips and other men from the Western Town Company came to Sioux Falls in 1857. He was the first medical doctor in the village. He left to serve in the Union army during the Civil War, and after the war, he returned to Sioux Falls in 1870. Twelve years later after a two day illness, he died unexpectedly.
