well-known store at 8th & Railroad Center recently reopened with a new owner and a new look. Plum’s Cooking Company by Simply Perfect, owned by Penny Klinedinst, completed an extensive renovation to provide more open space, new lighting, an expanded mix of merchandise, and a state-of-the-art teaching kitchen. The original owner of Plum’s Cooking Co., Caroline Petersen,

retired earlier this year but has remained a part of the renovation process. “Caroline has been a mentor to me,” says Klinedinst, who also owns Simply Perfect and Threads at 8th & Railroad. “And she’s also a great friend. I didn’t want to see Plum’s close when she retired, because she devoted so much of herself to that business. Now, I have the chance to continue her vision.”

The modern teaching kitchen is the focal point of the store, where guests can sit at an L-shaped counter and be close to the action. You can also take classes to hone your knife skills or learn how to create an amuse-bouches, which is from the French “mouth-amusers,” and refers to a single, bite-sized hors d’oeuvres. “I am so excited for the cooking classes,” says Klinedinst. “Food brings people together, and we are fortunate to have many talented chefs in our community who want to share their love of food and cooking with others. We are designing classes for people of all ages and cooking abilities. So whether you are a beginner or wellversed in the kitchen, you have the chance to learn from these great chefs. We even have classes for kids!” Klinedinst adds that all of the classes at Plum’s are taught “demonstration-style” by the chefs, which means the participants are able to sample the food that is prepared. For those that have been a fan of Plum’s products in the past, don’t worry. The store still carries a wide array of gourmet housewares for your cooking and baking needs. For those who like to cook or bake, stepping inside will provide that “kid in a candy store” feeling, with the mesmerizing wall of kitchen tools and shelves of cookware in every color. You can even pick up spices, sauces, jams and more to help you recreate foods from the classes or to make your favorite recipes at home. A
new store in The Empire Mall in Sioux Falls is taking the advice from the Beatles when they sang, “Come Together.” Jack & Charlie’s is the newest retail addition to the mall and has racks and shelves with all things University of South Dakota red & white and South Dakota State University blue & gold. This is a unique partnership for the two universities, located about 116 miles apart with a long history of rivalry, especially when it comes to NCAA Division I athletics. However, both SDSU and
USD leaders saw the value of joining forces for the sake of alumni and supporters in the Sioux Falls area. Both schools have loyal fans, and they often coexist within families, couples and “BFFs,” where one person is on Team Charlie and the other on Team Jack. Creating a retail environment for them to get their team spirit on keeps traffic coming to the store and generates more excitement for both schools. Komen 3-Day walk for the past 9 years, and this September will mark her 10th year at the age of 74. And this year is special because the group she walks with, The Feisty Fighters, is bringing their walk to the streets of Sioux Falls and teaming
up with the local Susan G. Komen South Dakota Affiliate to start the last day of their 60 mile walk with the 5K Race for the Cure in Falls Park. Kathy’s journey started 10 years ago when her dear friend’s sister was diagnosed
with breast cancer. They wanted to do something to help and make an impact. So they signed up for the Susan G. Komen 3-Day, 60 mile walk in Minneapolis. While the walk is challenging and requires months of training, Kathy says
the walk not only inspires her to stay in shape, but also inspires her to help other women. As the Feisty Fighters have walked alongside survivors and supporters, they have heard countless stories along the way.
Stories from single moms in their twenties going through treatment. Husbands walking for wives they lost to the disease. Sisters walking for each other. And moms giving hope to daughters that one day, they will live in a world free of breast cancer. These stories have left their mark. Kathy knows, if all she has to do is walk to help end this disease, that is exactly what she will continue to do. And what impact has this walking and fundraising had? It’s enabled Kathy and her group to give hope to local patients, fund cancer organizations and invest in research. With Kathy’s help, Susan G. Komen has already invested over $889 million in breast cancer research in the past 35 years, making incredible improvements to targeted therapies and early diagnosis. But unfortunately, as Kathy and all of us know, too many women are still dying from this disease. And even one more woman diagnosed with breast cancer is one too many. And that is why Kathy is determined to walk again this year. Kathy has changed lives through her determination and she is helping us charter a bold new path forward. As Susan G. Komen SD, we celebrate the impact of action, because action defines our movement. We will harness the power of our great community to continue to break down barriers and eliminate breast cancer disparities in South Dakota. A
lthough the city of Brandon continues to grow, bringing more people, business and traffic to the community, there are places where you can get away from it all. Christy and Colin Steen found one of those places – the last lot available in a new neighborhood with a scenic backyard. They built their home there 11 months ago. Christy says she will always remember the date because they moved into the house on a Friday and had a baby on Monday. The couple enjoyed the experience of working with builder Justin Oakland because,
Christy says, he encouraged them to be part of the process. “When we first met with Justin,” she says, “I had some ideas that I found on Pinterest. He pulled out a piece of paper, and we literally started drawing everything out together.” The home is bright and inviting, with a crisp white and grey color scheme throughout. The benefit to starting with grey and white, says Christy, is that it provides flexibility to add lots of color accents and mix different styles of lighting, accessories and textures.

For example, a more traditional, crystal light fixture and goldframed mirror hang just inside the entryway. Just to the left, though, is a geometric light fixture with bare bulbs hanging over the open staircase to the lower level, with a large modern art print on the wall and, for an added twist, a barn-style gate at the top of the stairs. That gate actually came from one of the barns on her parents’ acreage. An art major and former art teacher, Christy now uses their home as her canvas. “I love organic shapes and textures,” she explains, “so I do a lot with animals, flowers and feathers.” Throughout the home are Christy’s creations on canvas, and her eye for how colors, textures and patterns can work together is evident in every room. The open floor plan brings together a tan leather sofa and yellow accent chair in the living room and a wood-topped table with a mix of blue fabric and clear acrylic chairs in the dining room. The kitchen was designed for family functionality and for entertaining. A white granite-on-grey wood island has its own prep sink and four upholstered stools where you can sit and look out the large window at the beautiful South Dakota landscape behind

the house. Gold pendant lights hang over the island for a modern feel. The rest of the kitchen is like a stylish farmhouse, with white cabinets on top and grey on bottom, a white tile back splash and butcher block countertops. The same butcher block was used to create an open shelf cabinet. A sliding barn door leads to a mudroom just off the kitchen,
which has a long wood bench and oversized hooks on the wall to provide a spot for shoes, bags and more. The barn door is another find from her parents’ acreage. “We found the planks in one of the barns, and gave them to our building crew to create the door,” says Christy. “It is so special to have the gate and this door in our home, because it’s a piece of

A full chalkboard wall has Christy’s drawings of a windmill and a jeep and offers plenty
of space for future creations. The other room brings brown colors into the mix, with a brown base on the white crib, dark wood drawer fronts on the white changing table – which has cute mismatched knobs – and a wooden “hello” tucked into a framed cut-out in the wall.

In the guest room, letters above the unique rectangular window in the extra bedroom spell out “Be Our Guest,” and any guest would feel welcome in this room painted a rich navy blue with bright white bedding and curtains. The lower level provides ample space for family time, with a large L-shaped sectional for movie viewing, and a play area tucked into a corner with a tee-pee and baskets of stuffed animals and toys for indoor camp outs. A large piece of barn wood on the family room wall serves as a measuring board the boys will have fun with as they grow. The family’s workout room is also on the lower level with

energizing orange and white diagonal stripes on the wall and mats on the floor. A favorite spot for the family is the covered deck on the back, perfect for taking in the breathtaking view of trees and water behind the house. It’s a place where they can keep creating. “We found out we were pregnant right when we started meeting with Justin,” Christy remembers. “So, we focused on the house first. Eventually, we may do a little more with the yard, perhaps adding a patio and fire pit.” For now, they are enjoying life with two growing boys out in their own little corner of the world.

Jeremy Carlson, a designer with Landscape Garden Centers, took the lead on this beautiful outdoor living space project. Jeremy’s degree in Landscape Design from SDSU and his 22 years of combined skills in construction management and landscape design are what sets him apart as a leader in the industry. Jeremy discovered his passion for design at the young age of ten while helping his family build their very first patio! When it comes to his designs today, they typically include water features – a pond, a pool, a fountain and pathways leading to points of interest that invite you into the space. With this particular project the client put their focus on a very family friendly environment. Jeremy was able to take a smaller yard and create a very usable space within it. As the architect, he took lead on the project and spearheaded all of the involved trades. This is beneficial for both the designer and the client; the client doesn’t have to work with several different vendors and the designer has a better handle over the project from beginning to end. Along with a pool in the design, Jeremy added an upper shade deck for additional living space with room underneath it for an enclosed hot tub. No outdoor living area is complete without its own kitchen space and bar area for entertaining. He used a natural stone on both the exterior of the porch and outdoor kitchen to compliment the home’s natural earth tones. But this home was not without its challenges. A large backyard slope created drainage issues that only an expert landscape designer would be capable of properly adjusting to meet the requirements of the project. One more reason why it is so valuable to work with the very best landscape designers in the field! There are several factors that set apart this highly successful landscape company. Give ’em the Bird! BY JIM MATHIS
A
s I write this, it’s a warm summer Sunday and I’m thinking not just about the dinner we’ll have tonight, but what we’ll eat later on the week. While the idea of leftovers may not sound that appealing, having some simple ingredients on hand to make a quick dinner sounds pretty good. So tonight I’m going to roast a couple of chickens. Simple yard birds cooked with a few ingredients. When I’m done, we’ll have dinner for tonight, pre-cooked chicken for later in the week, and I’ll take a chicken to my elderly in-laws who will feast for a couple of days. It won’t take very long and it won’t stretch the budget. For a long time, I would buy just chicken parts; I’d get breasts to grill, thighs for paella, tenders for stir-fry, just pieces and parts as needed. But I’ve since discovered that it’s best to buy the whole bird. It’s more than the two of us need for a meal, but the extra parts are better when they’re all cooked together.
Beer Can Chicken? As a guy who likes to grill, you know I’ve tried the beer-can chicken method. It’s a pretty simple idea really. You use a half full can of beer inserted into the cavity of the chicken to help it stay upright while it grills. The proponents of this method say the steam created as the beer boils helps to keep the chicken moist. But the reality is that the steam is released from the top of the can right near the opening at the neck of the bird, so it finds the path of least resistance and escapes without really adding much to the party. Kind of a waste of a good beer. But I’ve found there are devices you can buy that hold the chicken upright, release steam lower in the cavity and let the bird cook evenly and develop a nice crispy skin. The version I have is made by Weber from cast aluminum and steel. They have a nice built-in drip pan that catches the fat and juices, a shallow area to fill with beer, wine, or chicken stock, and it leaves room in the

cavity for herbs and aromatics. I found this works much better than the beer can and roasting the chicken upright produces a finished product that is much like the rotisserie chickens you buy at Costco, Look’s or the grocery store. And that’s not bad at all.
Brick Chicken Another legendary way to cook a bird is with a brick. Typically, for this method, you will ask your butcher to spatchcock the chicken for you. If the guy behind the counter doesn’t know what you’re talking about, leave Wal-Mart and go to a real butcher shop. Come to think of it, start at the butcher shop. As I’ve said before, it’s never a good idea to buy meat at the same place you buy motor oil and underpants. Back to the spatchcocked bird. What does spatchcock mean? Good question; it means that the fowl has been split open to grill. You can do it yourself by simply cutting out the backbone of the chicken with a pair of poultry shears and pressing it flat. Save those backbones in the freezer until you’ve got six or eight and use them to make chicken stock. If your butcher does it, they will likely remove the breast bone and ribs and you’ll have two halves of the chicken pretty much ready to cook. For the brick chicken, you’ll want to wrap a couple of bricks in aluminum foil and heat them in the oven or on the grill. Then you’ll put the spatchcocked bird skin-side down in a large, hot skillet, preferably cast iron. Then those hot bricks go on top of the chicken, so the pan cooks from the bottom while the brick
heats from the top. The result is a bird that cooks pretty quickly and gets a nice crispy skin. But personally, I think it’s more work than it’s worth.
Grilled Chicken After much experimentation and testing, I prefer to simply grill the spatchcocked chicken. It’s so simple and it produces juicy, flavorful chicken that’s as good as you’ll get in just about any restaurant. I let the boys at Look’s Market do the dirtywork and prepare the birds. Then I make a simple herb and garlic rub with parsley, sage, and thyme from the garden, a few cloves of pressed garlic, and generous amounts of salt and pepper. Spread the mixture on both sides, drizzle with olive oil and grill over medium coals. I start with the skin side down, flipping once and keeping an eye on it till it’s done. Depending on the temp of the grill, it will take somewhere between 25 to 40 minutes. I find that the slower it cooks, the juicier the bird, so don’t rush it.
“As I’ve said before, it’s never a good idea to buy meat at the same place you buy motor oil and underpants.” The Most Important Tool Whenever you’re dealing with raw poultry, you’ve got to be careful not to contaminate other foods. Safety first! Chickens are notoriously dirty. Use separate cutting boards, separate knives and tongs, and make sure you clean up after yourself. The four rules if food safety; clean, separate, cook and chill are really important with poultry. So what’s the most important tool? A really good instant-read thermometer! I use a ThermoPen. They are quick and accurate but they are expensive; they run about a hundred bucks. That’s still way cheaper than medical bills when the whole family gets food poisoning. Get a good thermometer and use it. Chicken needs to be cooked to 165 degrees, but cook it too long and it becomes rubber. An instant-read thermometer helps you walk the fine line between safe-to-eat and over-cooked. When served with some grilled vegetables and a bottle of white wine, a simple roasted chicken becomes an elegant dinner. And there’s the bonus of some really good leftovers for later in the week. Do yourself a favor, eat something good today.

t’s that time of year again, when reality hits me right between the eyes, as my children begin another school year. My wife and I go through this every year, with a certain kind of bewilderment, we ask ourselves the same questions, “How did we get here? Didn’t they just graduate from Kindergarten?” Dante, our oldest, will begin his sophomore year in high school, while Berent finishes middle school as an 8th grader, and our youngest, Jaxon, is right behind him in 7th grade. Inevitably, we reminisce about our children’s younger years, as we peruse through boxes and bins filled with artwork, spelling tests, and projects from elementary school. It’s a great reminder that we all start with small steps, like learning the alphabet, to become proficient students both in and out of school. 5 tart apples, peeled and sliced 1 1/4 cups sugar, divided 1 3/4 tsp cinnamon, divided 1 cup flour 1 tsp baking powder 1/2 tsp salt 1/2 cup cold butter 1 cup water
1/2 cup margarine, softened 1 cup sugar 1 egg 1 cup flour 1/2 tsp baking powder 1/2 tsp baking soda 1/2 tsp cinnamon 1 tart apple, peeled and chopped 1/2 cup chopped nuts
Combine the apples, 1/4 cup sugar and 1 tsp cinnamon in a bowl and then transfer to a greased 8 inch square baking dish. Now combine the flour, baking powder, salt and remaining sugar...cut in the butter until this mixture becomes crumbly. Sprinkle this crumbly mixture over the apples and gently pat down to smooth the top. Slowly pour the water over the top and sprinkle with remaining cinnamon. Bake, uncovered at 400˚ for 40-45 minutes or until the apples are tender. Serve with ice cream or topping. Serves 8.

Cream the margarine and sugar in a mixing bowl and then add the egg. Combine the flour, baking soda, baking powder and cinnamon and add this to the creamed mixture. Stir in the apples and nuts and pour into a greased 8x8 inch pan. Bake at 350˚ for 35-40 minutes or until it passes the toothpick test. Serves 12 to 16.

t’s a small thing, just a bag with a fleece blanket, water bottle, and a few other odds and ends meant to bring comfort. But there is also a note. It talks about a woman named Phyllis, and how the bag and the things inside are in memory of her. “She loved music,” remembers her husband Jake Van Den Hul. “We were in a gospel music group, and even when she got sick, she would never miss a concert.” Phyllis had stage III ovarian cancer.

‘No One Fights Alone.’
While it might not get the attention of other cancers, ovarian cancer is nothing to take lightly. More than 22,000 women are diagnosed with it every year and of that number, more than 14,000 will pass away from it. Most of those diagnosed are 63 or older, but it can be a tricky cancer to detect. “It really is a silent killer,” says Jake. “The problem can be pretty advanced before it really brings on symptoms. Phyllis just
wasn’t really feeling like herself and was having some digestive issues when she went in to get checked. By that time it was at stage III C, which can be pretty hard to overcome.” The presence of ovarian cancer may cause several different signs and symptoms. These include bloating, pelvic or abdominal pain, trouble eating or feeling full quickly, always feeling like you have to use the bathroom or having
to go often. However, these symptoms can also be caused by a number of other non-cancerous issues. Other symptoms can include fatigue, upset stomach, back pain, pain during sex, constipation, menstrual changes, and abdominal swelling with weight loss. These are also common symptoms in a number of other conditions and occur just as often in women who don’t have ovarian cancer. The telltale sign of ovarian cancer is when

these symptoms are more persistent, for example, occurring more than 12 times a month. If that happens, a woman should she her doctor – preferably a gynecologist – as soon as possible. Diagnosed in 2010, Phyllis went through treatments and enjoyed a remission that was, sadly, too short. After nine months it returned, and Phyllis passed away in 2013. But her journey inspired her family to not only spread the word about ovarian cancer, but to also help others through their own battles.

“Chemotherapy was hard for her,” says Jake. “She was uncomfortable and cold and thirsty. The nurses were all amazing and that helped, but we never wanted her to be alone during that time. So either myself, one of the kids or grandkids was always with her. But some of the women there were all by themselves. After Phyllis passed, that’s when my granddaughters came up with the idea for the comfort bags.” ‘No One Fights Alone.’ That is the mantra of the bags handed out to a

selection of patients at the Sanford Cancer Center twice a year: Mother’s Day and Phyllis’s birthday. “The whole family gets together,” says Jake. “We bring them down and give them to one of the doctor’s staff. They then pick out a few patients to give them to who they think will benefit from them. So we don’t actually get to meet those who receive the bags, but I think those who get them really enjoy them, and it makes the person feel special and cared for, which I think Phyllis would have loved.”

ith the return to school, comes the return to playing school sports and all of the benefits that has for our children. Playing sports is an important learning environment for children, and is the most popular extracurricular activity for high school students. Everyone knows it is a great way for kids to develop physical skills, exercise, make new friends, have fun, and learn to be a team member, but there are other benefits you may not even be aware of. ver heard of the phrase “the weight of the world on one’s shoulders”? OK, so kids may not have the worries of the world on their shoulders, but a heavy backpack on a young child is something to worry about. “Heavy, ill-fitting backpacks not only cause back, neck and shoulder pain, but sometimes numbness and tingling in the arms and hands can occur when narrow straps dig into the shoulders,” said Brian Wienk, PT, ScD, COMT, Physical Therapist at Avera Therapy – Education Center. “A heavy backpack may affect a young child’s balance, increasing the risk of a fall.” Using only one strap puts unnecessary strain on the child’s
musculoskeletal alignment. Usually, he or she will compensate for the weight of the backpack by lowering one shoulder and raising one hip higher. “You’ll also see kids leaning forward at the waist, which may strain back or neck muscles and often results in a forward head posture,” said Wienk. One common concern among parents is the risk of scoliosis, or a curve in the spine. Wienk stressed that heavy backpacks DO NOT cause scoliosis. When caring about the health of your child’s back, knowing how much his or her body can safely carry is a good place to start. “According to the American Academy of Orthopedic Surgeons,

1. Invest in a backpack with wider, padded straps. Avoid rolling backpacks which are hard to maneuver on steps and can cause unaware kids to trip. 2. Make sure your child wears both straps over the shoulders instead of one. 3. Adjust the backpack so it sits center of your child’s back — not too high and not too low. 4. Teach your child to place textbooks and heavier objects in the bag so they sit closer to his or her back. This distributes the load evenly and supports his or her center of gravity. 5. Fasten the waist belt around the tummy. This ensures the backpack stays close to your child’s body. 6. Encourage your child to exercise regularly to build up abdominal, buttock and back strength. 7. Cardboard Apple Tree Materials: Corrugated cardboard, scissors, paint, paintbrush, styrofoam plates, glue and glue gun. Instructions: Starting with a piece of corrugated cardboard, such as the flaps of a box that comes in the mail, cut the piece to the right size. Begin to peel off the top layer of the cardboard to reveal the corrugated part inside. If all of the paper on the top layer doesn’t come off, don’t worry about it. This will create a nice texture to your artwork. Paint the peeled corrugated cardboard canvas with shades of blue paint. This will be the sky background. Cut out pieces of more corrugated cardboard to resemble the top, trunk, and bottom surface of the tree, as well as some small round apples. Paint them accordingly with green, brown, and red paint. Once all of the pieces are dry, glue them together using a hot glue gun. (Your kids can watch you do this job!). Frame your masterpiece and display in your home for a festive decoration.

Stuffed Apples Materials: Brown paper bag, manila file folders, pencil, scissors, glue dots, sponges, paint, old newspaper or crinkled paper for stuffing, stapler or hole punch with yarn, and brown and green construction paper. Instructions: Use scissors to cut up a paper shopping bag so that it lays flat. Draw a large apple on a manila file folder, then cut it out. This will serve as your apple tracer. Trace two apples on the paper bag, then cut those out. On a surface ready for painting, lay out your cut-out apples, paint, and sponges. Next, dip your sponge into the color of your choice and paint the apples. Let them dry completely, then secure the front and back of your apple pieces, leaving a little space at the top. Secure them with a stapler or punch holes around the edge and have your child lace yarn through the holes, then stuff the apples with newspaper or crinkled paper pieces. Staple or lace the hole closed. From construction paper, cut out a brown stem and a green leaf, then glue them to your apple. You could attach some yarn and hang them around your house, or display your apples in baskets as fall centerpieces.
Apple Bookmark Materials: Metal hair clips, scissors, felt, and a hot glue gun.
Sticky Apple Tree Materials: Contact paper, tape, real leaves, red pom poms, and a basket.
Instructions: Cut out two apple shapes from green or red felt, two small brown felt stems, and two small dark green felt leaves. From the leftover scraps, measure two strips to cut that fit inside the metal hair clip. Carefully hot glue these strips to the inside of the metal prongs, holding the clip open as you place them. This will prevent the clip from getting stuck together during the craft. In the center of one of the apple shapes, glue the hair clip and let it dry. Cover the visible part of the hair clip with the second piece of apple, gluing it in place. Finish it off by gluing both sides of the stem and the leaf to the top of the apple shape.
Instructions: Tape a large sheet of contact paper on the wall, sticky side up. Next, draw the outline of an apple tree as best as you can. Fill a basket with red pom poms, leaves, and any other textile you think will work well for this craft. Young children will have a blast choosing items from the basket and sticking them to the paper, building their own apple tree with leaves and red pom poms. You can also have your child “pick� the apples from the tree or catch any falling apples!

“B
e present among the hundreds of glue sticks,� I whisper to myself. The beginning of a new school year boasts high expectations and sometimes great anticipation. For parents and their children, no matter their age, there is always a plethora of hopes as this new stage presents itself. There are dreams, best friends, backpacks and bruised knees. As my oldest stares at the doors of high school, I see so much more how important being present and being available is to her. There are books, dances, football games, French and lots of disappointments. Times when life is swirling and whirling, so much so that they can barely catch their breath. Other times they float with excitement, confidence and passion. Yet, life carries on and we can hope that they choose spontaneous acts of kindness rather than unkind comments projected at peers or themselves. They may be young, but they are mighty and they have an incredible voice and beg to be heard. They have immense power and productivity when they access their inner awesome. Even when they are heard, they still seek approval of hair styles, ring tones and status updates. Yet, they will never be as young as they are today and that should be celebrated. They are high schoolers. I recall my days wandering the halls of my high school and, my oh my, how things have changed and yet stayed exactly the same. We have more access to technology than ever before. Everyone is digital and social media is how we connect, get information and share our story. It is not that much different though. The dreams are still the same and so are many of the worries. They seek resolve in finding themselves and their voice. Finding their place, their purpose, their friends and their futures. They should be at peace whilst they discover their greatest discovery; who they really are. Being present for our oldest and most independent

children is a great gift. They may not act like they want us there, but they do. If they ask, then they really do. It is one of the most wonderfully challenging times in their lives, filled with great growth, fascinating changes and eyes filled with wonder. I am unsure who between us is more ready for high school, but I do know that love is that path of least resistance and I will be present and available. I can wait with wild anticipation to see how the world will become her oyster. I will wait up and wonder and I will never stop being grateful for this opportunity to be her mother and stand beside her as she discovers how amazing this world really can be. How she is powerful and mighty and how just sharing her positivity makes the world a better place. As our children set out for the first day on many new experiences, may we give love always and in all ways. Believing that being present is powerful and it proves to inspire our children to be the good, the kind and the amazing, that they truly are. Many wishes for a new year filled with confidence in kindness, acceptance of oneself and appreciation of being present. Cheers!
