Now You Can Find Fernson…
Downtown

N
ot all that long ago, these pages featured Fernson Brewing Company, a creation of partners and friends Derek Fernholz and Blake Thompson, who opened a production brewery and tap room just north of Sioux Falls. A lot has changed over the past year – for the better – as more people discover the Fernson brand of ales and lagers. In fact, the company has already experienced such growth that they have installed additional 60-barrel fermenters to bring their fermentation capacity up to 300 barrels. To provide a little perspective, the new fermenters hold over 1800 gallons of beer (each). The goal, say the owners, is to continue bringing solid craft beer to South Dakota – and making more beer for more people to enjoy. On their website, the tab labeled “Find Fernson” takes you to an interactive map of all the area towns carrying their brew. But now, you can Find Fernson in downtown Sioux Falls, in the Flatiron Building at 8th & Weber that was formerly the home of Latitude 44. When Fernholz and Thompson realized there was an opportunity to open a downtown location, they started making the necessary plans. They loved the building’s character and its location among other food and drink venues on the East Bank. The owners brought Eddie Eisiminger to the team to help with the expansion and manage the downtown location, which features Fernson Beer on tap and a well curated wine list. All of the available selections appear on a menu

that’s wrapped around wine bottles on each table. The interior is warm and inviting, with windows on three sides and Tiffany-style lamps hanging from the ceiling. You can choose a table where you can see what’s happening outside, or perhaps a table closer to the stage area or right up at the bar. You’ll want to be sure to keep up with their Facebook page for weekly updates about Open Mic Nights (Wednesdays), Trivia Nights and live music offerings on the weekend. Oh, and don’t forget board games and beer on Sunday afternoons! Note: If you are a singer, comedian or any sort of performer interested in taking the stage, contact Eddie at bookings@ fernson.com. Because Fernholz and Thompson simply want people to be able to come in, relax, and enjoy good craft beer, they have an open policy so you can pick up take out from nearby Jacky’s or grab a pizza from their neighbors at Breadico and bring it in. Heck, you can even bring your dog with you to Fernson on 8th. A recent Facebook post stated the bar is open “for civilized canines with craft beer tendencies.” Oh, but humans must be 21 to enter. Hanging on the wall is a metal version of the Fernson face logo…the Gandolflike character Fernholz and Thompson (hence Fern-Son) created so they had a personality through which they could tell their story. This distinctive image certainly makes their beer cans stand out on a shelf, and it’s a fitting metaphor for the way these beer crafters stand out in their industry. Whether you visit the Taproom at their brewery or come downtown to Fernson on 8th, you’ll be in for a one-of-a-kind experience from two people who wake up every morning excited to perfect the science – and art – of making great craft beer.

W
hen you step into Luca’s Boutique at 8th & Railroad Center, you almost feel as if you’ve been transported to Italy. Store owner Luca Papini was born in southern Tuscany. His great-grandfather was an Italian ambassador to Japan; his grandmother worked for Christian Dior in Italy during the 1960s and ‘70s, and his uncle was a partner of one of the biggest Italian cashmere companies and now has his own cashmere production company. “I have been exposed to incredible people, places and situations,” says Papini. Papini came to the United States nine years ago, but remains closely connected with his home country, and he draws inspiration from Italian scenery, art, food and culture. Opening his own business had been a dream for quite some time, and it was his friendship with designer Fabrizio Giusti that brought it to life. “We have a great friendship,” says Papini, “and we both believe that beautiful things happen when ideas meet reality and when people meet people. There is a spark of magic that happens when things like life, family and beauty are at the core of who you are and what you do.” Luca’s Boutique features leather handbags, belts and other accessories, as well as cashmere for women and men. While Papini manages the business in Sioux Falls, Giusti lives in Rome, Italy, where he has access to the finest materials and latest design trends. The pair created their own line of bags called Nobile Roma. When you see the shelves lined with these one-of-a-kind bags, it is like being in an art gallery. You find yourself stopping at each

one, attracted by the color combinations, taking in each shape and noticing the fine intricacies that make each bag different. Papini has a self-proclaimed love for those little details. “Each handbag reflects a perfect balance of timeless chic and runway ready design
infused with the quality craftsmanship of Italy,” he says. “Producing these pieces is really a spiritual journey that goes beyond the sale.” Papini is understandably proud of his line of handbags, the quality and value of which he feels matches or exceeds other
designer brands. The Nobile Roma line uses Vacchetta leather for the handles to ensure durability, so if it fades or cracks, they will replace the bag. “Our commitment to quality is to build things well, with the person in mind so that things stay nice and beautiful for a very
long time,” says Papini. “We put a lifetime warranty on all our leather products.” And, they are conscious about the environment, using leftover remnants of leather to create small coin purses, key chains, pencil bags and other gift items. The whimsical key chains come in every
shape from a dog or cat to a penguin and platypus. There are even key chains made with mini handbags…that you can actually open and tuck something inside. For the leather jackets they carry at the boutique, Papini works with a small company in Italy that gets commissioned by Christian

Dior and Fendi to make leather accessories. This allows them to make leather jackets in 33 different colors and, Papini says, they are “stunningly beautiful.” “Because of the quality, when you buy our leather jacket, it is an investment that will last a lifetime. It is something you will love to wear, and then maybe you’ll pass it on to your kids or grandkids, and they will make memories wearing it too.” Papini is just as proud and passionate about their cashmere products as he is about the leather. They are the only U.S. importers of the Sqel brand, and they offer beautiful items like shawls, sweaters and dresses. And what about men? Papini says they must come in to look at their belts. “I believe every man has a belt problem,” he says. “Guys buy belts every 4, 6 or 12 months, and they fall apart. And we think that it is ‘just the way it is.’ But, it doesn’t have to be. Our belts come in more than 100 styles and are meant to last 15 years or more.” Papini likes to call himself the “belt doctor,” as he can fix belts and custom size belts. If the belt needs to be replaced for craftsmanship defects before 15 years, they will replace the belt for free - no questions asked. For all of the products he carries in the store, Papini looks to experienced artisans from across Italy. He used a post on the store’s Facebook page to share his philosophy: “When I eat a pasta, I want to know

where the wheat was grown. I want to know where the eggs were laid. I wanna know from which well the water was drawn. If I don’t know this, I cannot trust the food,” he wrote. “The same is for leather. That is why when you read “Made in Italy” you don’t get cheated. At Luca’s Boutique we know the name and the address of the artisan in Italy that made the product.” From the art and décor in the store to his social media pages, Papini shares his love for Italy. He uses these spaces not just to promote this products, but also to share images from Italy, foods from Italy, and you can even learn a little bit of the Italian language from his posts. Luca’s Boutique occasionally offers social events and mini concerts where you can sip on Pellegrino water or enjoy a glass of wine, such as the Michele Satta Bogheri Rosso – an Italian wine that is only available at their 8th & Railroad neighbor, K Restaurant. As a side note to the wine, the son of the wine maker fashions bow ties from wood that came from the wine barrels. They come in variety of shapes, from the traditional bow to a mustache or pair of eyeglasses. Some are paired with fabric for a little extra flair. Starting a business is certainly a challenge, says Papini, and he’s committed to doing it right. “It seems so often that businesses are
putting out huge amounts of inventory to sell enough to stay in business,” he explains. “I feel like that creates a ‘disposable’ mentality where we use things for a very short time and then dispose of them. Sometimes I think people have lost hope to find quality things and then they are hesitant to spend money because of past experiences. Like, you see a beautiful picture of a dress in a catalog, you love the picture, you order the dress, the dress comes, but it is not what you expected.” Papini says that is why he can’t stress quality enough. “You can come to the boutique and see the product, feel it, talk with us about where it came from,” he says. “And, when you leave, you will have the perfect handbag or belt or jacket that fits you and your lifestyle. You will feel confident about your investment because you know it is going to stand the test of time.” Papini says he is already exploring ways to expand their brand to other parts of the country. “My dream is to build a brand that was originated in Sioux Falls.” For a taste of Italy’s finest leather, cashmere, and other accessories, be sure to visit Luca’s Boutique. Passport to Adventure: Disney on Ice Coming to Sioux Falls
J
oin Mickey Mouse, Minnie Mouse, Donald Duck, Goofy and Daisy Duck on a journey to the timeless worlds of Disney’s The Lion King, The Little Mermaid, Peter Pan, and the Academy Award®-winning, number-one-animated feature film of all time Frozen when Disney On Ice presents Passport to Adventure comes to Denny Sanford PREMIER Center for six shows November 17-20. “It’s an extraordinary show and a family vacation all rolled into one incredible night,” says Producer Kenneth Feld. “You really get a sense you are traveling right alongside Mickey, Minnie and their friends.” Passport to Adventure features an international team of awardwinning figure skaters, exciting choreography and a musical score filled with critically-acclaimed Disney hits the whole family will enjoy. Choreographer Cindy Stuart bridged the breathtaking athleticism and celebrated soundtracks through movement. Inspired by each character’s personality, Stuart incorporated original moves to convey each storyline, like the exhilarating festivities on coronation day in Arendelle during Anna’s solo to
“For the First Time in Forever” and Elsa’s dramatic and inspiring transformation during her powerhouse ballad “Let It Go.” Stuart has also included many adagio lifts and spins, like those featured in Prince Eric and Ariel’s tender pas de deux and the displays of agility and balance during Simba and Nala’s affectionate duet to “Can You Feel the Love Tonight.” Costume Designer Arthur Boccia assembled specific and appealing looks that reflect the tone and culture of all the Disney locales. Favorite characters along the way sport everything from nightgowns to winter gear, and lion’s paws give way to Triton’s fin-clad daughters. Additional attention to detail was not only paid to the main characters of each story but also to the supporting chorus pieces, such as the authentically disheveled looks of Captain Hook’s rambunctious pirates. The many settings of the show are enhanced by the partnership of Robert Smith’s scenic design and Patrick Dierson’s lighting design. On and above the ice, the two creative team members have assembled each fantastical world’s distinct charm with a combination of hues and scenic elements that immerse audiences

I
n the days before they had kids, John and Kaylee Koch would go out for a run, and there was a house they would see each time they went out. There was something that intrigued them about this house and what looked like an upper room with an abundance of windows. As luck would have it, John’s brother, a realtor, had the house listed. “We were just so curious,” says Kaylee, “that we just had to see it.” It was love at first sight.

Although they hadn’t previously been planning a move, they were planning to have a family. So, the Kochs knew that buying this house was the right thing to do. They moved in four years ago. Two children later, they are happy as can be. The house was built in 2006, so it was already fairly contemporary in style, but the décor was more traditional. “I’m in construction,” says John, owner of John Koch Construction, “but I’m really more of a renovator. The house was in great shape, but we have just added some cosmetic changes to
give it more of a modern flair.” One of the biggest changes was taking an overall beige base and changing over to white. They chose Benjamin Moore’s Color of the Year for 2015 called Simply White. “There are so many windows and lots of natural light, so we just wanted to enhance that light by taking the wall color to white,” Kaylee explains. Speaking of windows, that room they were curious about when they would run past turned out to be the space 20 feet above the
living room floor. And the windows they saw from the outside are the windows way up in the northeast corner of the living room. The couple loves to be in the room in the morning with all of the warm rays coming in from the sunrise. Although there is ample space from floor to ceiling in this room, it still feels cozy with the comfortable furniture near the fireplace. When John saw the large wall above the seating area, he knew it was the perfect place for artwork created by their friend, Shaine Schroeder. Kaylee wasn’t as sure at first, since the piece was a

multi-panel, wildly colorful mural that had hung on the outside of their garage at their old house (inspired by the horse barn at Falls Park that had artwork hanging on the outside). But, once the piece was hung, they both agreed it was the perfect spot. The living room flows into a dining area that features a large farmhouse table and dark metal and glass chandelier. Feeling like their original dining room chairs overpowered the rustic look of the table, Kaylee decided to change up the look after seeing white chairs on one of the blogs she follows. They chose white Eames chairs with wood legs – chairs with arms for the ends, and chairs without arms for the sides. Windows provide a view from the dining room to the beautiful backyard, and a tall metal tree from Sticks & Steel, shaped to fit in the corner, brings the outdoors in. Kaylee says she loves to cook, so she was thrilled to discover a Viking range in the kitchen. A little paint and adding a new white subway tile backsplash were the only changes to the kitchen. They have ample storage in the kitchen, with a large center island and sliding doors that open to the reveal the spacious pantry shelves – another feature Kaylee was excited about when they first saw the house. A small dining area sits between the kitchen and the family room, which is where the family spends most of their time. “If I would have built this house,” says John, “I probably would have made most of the main level the kitchen and this family room, because it’s where everyone hangs out.” The family room walls also got an update when they moved in, changing from a brown faux finish to a light clay textured finish. More local art work from friends and local shops and events hangs in the family room and hall that connect to the front part of the house. French doors connect the kitchen and family room to the covered outdoor patio. It’s obvious why this is another of their favorite places to be. They face the south,

and there are no neighbors directly behind them, so the family enjoys both their nature view and the afternoon and evening sun. It’s also a great entertaining spot with old Corona Cervaza cooler in one corner and an outdoor fireplace that sits at an angle in another corner. A welded wood rack, when full of logs, acts as a sort of privacy wall. Two other rooms at the front of the main level feature wallpaper updates. The office just off the entry way is an angled room with
a large built-in cabinet along one wall. With a unique polished wood desk with tree stump supports and a chair made from sturdy branches, it was quite fitting the couple chose wallpaper featuring tall slender trees. The mudroom that connects to the garage has dark wood lockers for each family member and black diamond printed wallpaper – on the ceiling. The focal point on the wall opposite the lockers is another piece of art from Shaine Schroeder in the shape of South Dakota with a large buffalo in its center.

The staircase is a combination of their white foundation color and dark wood, and it leads you up past a collage of colorful prints in all sizes of John, Kaylee, Ivy (3) and Leo (16 months). At the top of the stairs, double doors open into the roomy master suite with walk-in closets and a large master bath. Windows from their room overlook the backyard, making it really feel like a retreat space for these busy parents. “There have been many mornings where we see deer,” says
John. “There’s even been a fox, a pheasant, and we’ve heard owls.” The personalities of Ivy and Leo come through in their rooms. Both have comfy chairs for reading, and the two rooms are connected by a pass-through bathroom. Leo’s room, in grey and white, has a built-in desk, and a collage of fun animal pictures above his crib. Ivy is all pink with grey, with her name spelled out in yarn-covered wood letters, a mermaid bedspread, whimsical cuckoo clock and collage of white-framed

prints above her bed. Kaylee spends time writing a “mom, kid, fashion, lifestyle, and home décor” blog. She had blogged about Ivy’s room and posted pictures on Instagram. Little did she know those photos would be discovered by Country Living magazine, which ended up featuring Ivy’s room in a “50 Rooms in 50 States” feature article. about, check out Apple of My Ivy at www.appleofmyivy.com, and follow her on Instagram @kayleemaykoch) The lower level of the house provides Ivy and Leo with plenty of play space. But there’s another feature downstairs that is just for mom and dad (and their friends). While the couple didn’t have to do any structural work to the house when they moved in, they did embark on a big project last winter when they created a walk-in, temperature-controlled wine cellar.

“It was a lot of work,” John explains. “We did a lot of research about how to insulate the walls, provide a climate-controlled environment and how to build the wine racks. I’m really proud of how it turned out.” A large “K” (for Koch) made of corks, a decoration from their wedding, now hangs in the wine cellar. Each bottled is tagged with the specifics for that wine. An upcoming trip to Napa will allow them to learn even more about wines – and perhaps add to their collection.
They have come a long way since those casual runs past the house and their curious first peek inside, with two active kids and all of the busy-ness – and fun – that goes with it. Being part of a neighborhood with two connected cul-de-sacs has enabled them to get to know their neighbors and be outdoors together without worrying about a lot of busy traffic. “We loved the house right away,” says Kaylee, “but even more, we love our friendly neighborhood.”

A
s a guy who likes to cook, I’m used to people asking me for favorite recipes and tips on how to cook this or what to do with that. It goes with the territory and it usually leads to a lively conversation. I can’t help myself, it’s what happens when you ask a guy about a hobby; you’re likely to learn more than you really want to know. Don’t believe me, ask a golfer what he thinks you can do to improve your handicap or a fisherman what kind of bait he’s been using for walleye. You’ll likely get more information than you wanted to know! With all of the cooking questions, the one thing I’m asked about most often is my pheasant recipe. Seriously, my unscientific guess is that half of the questions I get about cooking are about pheasant, and most of those are about THE pheasant recipe; my now-famous Pheasant with Olives. More questions about roosters than pasta sauces, vegetables and all manner desserts combined… people call, text and email asking about that one dish. A little back story; I’ve hunted pheasants since I was old enough to carry a shotgun, but growing up in Iowa we’d be lucky to bag one or two a day. When I moved to South Dakota about 30 years ago, I suddenly started filling the freezer with pheasants. So I started looking for recipes and almost every one I found tried to hide the bird in a pool of cream of mushroom soup. As I dug deep, I found more options; I tested, tasted and tweaked recipes. I discovered that when it was treated right, pheasant could be good without any cream of mushroom soup. Then I started looking at other game recipes for quail, duck and goose. This one is an amalgamation of a several recipes for game birds rolled into one.

“This one is an amalgamation of a several recipes for game birds rolled into one.” I started sharing this recipe back in the early ‘90s and in 1994, the local daily paper published it. In October of 2009, I ran the recipe in one of the first columns I’d written for this publication. This year I got my first request for a copy of the recipe before hunting season started. So I’ve decided that it’s time to run it again. The olives bring a big, bold, salty kick and the wine and tomatoes make a nice sweet broth with just enough acidity to stand up to the pheasant. I serve it over rice so you get every drop of the sauce. Our state bird is a proud animal with beautiful plumage. Your husband and the family pooch worked hard to bring them home. They deserve better than a slow simmer in a crockpot full of cream of mushroom soup. So get those roosters out of the freezer and do yourself a favor, eat something good today. When he’s not chasing the wily ringneck with his faithful companion Tonic, Jim runs ADwërks, an ad agency in downtown Sioux Falls.

Pheasant with Olives 4 pheasant breasts cut into half-inch pieces 3 tablespoons extra virgin olive oil 1 medium sweet yellow onion, diced 3 to 4 cloves of garlic, chopped fine 1 cup of good, dry red wine (Cabernet, Chianti or red zinfandel work well) One 28 ounce can of diced San Marzano tomatoes 1/4 cup fresh parsley chopped fine 1 tablespoon each fresh rosemary, basil and oregano, chopped fine One 12 ounce jar of large green olives, stuffed with pimentos, drained and rinsed Two tablespoons of capers, drained and rinsed Salt and pepper Two cups of white or brown rice, cooked Season the pheasant with salt and pepper and brown it in a large skillet with two tablespoons olive oil. Remove and set aside. Sauté the onion in remaining olive oil over medium heat until soft and transparent, then add the garlic and cook for a few more minutes. Return the pheasant and deglaze the pan with the red wine. Add the tomatoes, the rosemary, basil and oregano. Cover and simmer for about a half an hour, then add the olives and capers and cook for another half hour. The pheasant should be tender. Stir in the parsley and serve over rice.

s I sit in my office and stare blankly at the wall, my eyes are drawn to my Level I Sommelier certificate, and suddenly vivid memories flood my mind. It’s been 7 years since I tested for my certification, yet I can remember almost every wine I tasted through the two-day event. A memory that will never leave me is that of Randa Warren. I had the privilege of being taught by her. She is a Master Sommelier. In 2007, she became the 16th woman in the world to be a Master Sommelier and one of 96 men and women in the U.S. to be a Master Sommelier and 167 total men and women in the world. She is a master of wine. By definition, a Sommelier is a waiter who takes charge of the wines in his/her service or a wine steward. Today, a Sommelier is a respected expert of wine who has gone through rigorous testing and blind tastings. In 1998-1999, Randa Warren passed the Certified and Advanced WSET programs, as well as the Introductory Sommelier course at the Culinary Institute of America in Hyde Park through the Court of Master Sommeliers. In 2000, she went on to pass the grueling Advanced Sommelier Exam on her first attempt and in 2001 Randa passed the final, 2-year WSET Diploma program that is a prerequisite to the Master of Wine program. The same year, she became a Certified Wine Educator through the Society of Wine Educators. She led me and about thirty others in a blind tasting. We tasted 5 total wines, 2 whites and 3 reds. She taught us how the Masters taste wine and how to use something they call the Deductive Method. This process is how a Master Sommelier takes clues from the sight, smell, and taste of a wine to come to a conclusion as to what its identity might be. Now we’re not just talking about concluding that a heavy red wine is Cabernet. No, we were to ascertain not only the grape varietal in each wine, but also the

country it came from, the region it was grown in, the level of quality, and the vintage.
Here is the Master’s way of blind tasting a wine: Deductive Method Sight Assess the wine’s clarity, brightness, color, and viscosity. Look for clues that might tell you how much alcohol is in the wine. For example, if the legs or tears are slow to form and stream back into the bowl of the glass, this will indicate a high alcohol concentration.
Deductive Method Smell Look for obvious flaws, intensity of smell, and try to pick out fruit, earth, and wood aromas. Here’s a tip from Randa when smelling wine: after you’ve inhaled the aroma from the wine glass with your nose, open your mouth for a second and let in some air. This technique will heighten your senses and allow you to pick out more flavors.
Deductive Method Taste There are lots of things that are happing on our palates, but here are just a few things to look for: sweetness, body, fruit, earth, wood, alcohol, acidity, tannins, and finish. Deciphering what each of these are in your blind glass will give you lots of clues as to where the wine might be from. For example, a wine that literally makes your mouth water has high acidity. Wines that are high in acid make your mouth salivate, which is an indicator that the wine is from a cool climate like Italy. Typically, wines that have a low acidity are from warm climates like California.

Once you have completed these methods, you should have enough data to draw a conclusion as to where the wine is from. Is it a New World wine or an Old World wine? Old World refers to Europe while the New World encompasses North and South America, Africa, Australia, and New Zealand. As a rule, fruit-driven wine is from the New World, and earth-driven is from the Old World. For example, a light colored red wine with high acidity and a musty nose, prominent rustic flavors, and salient cheery flavors is almost just enough information to guess that the wine is Old World (not fruit-driven,) from a cool climate (high acidity,) and is probably a Sangiovese (cherry flavors.) In fact, this was the third wine we tried, and it was a 2006 Chianti. Blind tasting is one of the quickest ways to learn about flavor profiles and varietal tendencies. It also teaches you to be very descriptive. In fact, the more descriptive you are when taking the Master Sommelier exam, the better. They take points off for not describing the wine enough, and as Randa told us all: you learn more from the wines you identify wrong, than the ones you guess right. mily Andersen is combining the experience and love for animals she developed on her family’s farm with real world internship experiences and top notch education to prepare for a career in agriculture. Emily works with her parents, Craig and Gail Andersen, and older brothers Tyler and Jacob, to care for pigs and cattle and raise corn, soybeans, alfalfa and winter wheat on the Centerville farm that has been in their family for more than 130 years. “We all helped on the farm since we could walk, we always wanted to be with our dad in the tractor, or helping with the animals,” she said. Emily is currently a junior at South Dakota State University, in Brookings, with a major in Animal Science and minors in Agricultural Business and Agronomy. Beyond the classroom, she is using internships and work with state associations to get a broader perspective on the pork industry and agriculture in general. “At our farm, we raise pigs from about 50 pounds to market weight, so I’ve really looked for internship opportunities where I can learn about the entire chain of pork production,” she said.
“I’d eventually like to return to the farm and want to get as much experience as I can and bring that back to our operation.” In 2015, she interned with Kerber Milling Company Hawkeye Sow Unit at a farrowing barn where sows are housed, and piglets are born and raised to about ten to fifteen pounds. She gained experience in the special care needed for sows and for young piglets, from the farrowing (birth) process itself and making sure that baby pigs are healthy from the start, including vaccinations to build strong immune systems. “Being involved with the pigs from the very beginning – when they are born – was a great experience that helps me to provide better care at every stage of their lives,” Emily said. This summer, she completed an internship at with Smithfield in Sioux Falls as a hog procurement intern. She worked in a number of roles, from helping unload hogs at the processing plant to reviewing paperwork and approving payments to producers. She also attended producer meetings and the World Pork Expo in Des Moines. Emily is also gaining valuable experiences as one of two 2016

South Dakota Pork Producers Youth Ambassadors chosen by the South Dakota Pork Producers Association. In her ambassador role, she works with association staff and represents the state’s pork producing families at a number of events across the state, including the South Dakota State Fair, Taste of Elegance programs, and promotions at grocery stores. “I’ve enjoyed learning about the promotion and education side of pork industry and answering questions from people about how we care for our pigs,” said Emily. “The ambassador program is a great way for the next generation of farmers to get involved at a young age and understand the questions that today’s consumers have about what we do.” Emily is a member of the Swine Club at SDSU, and is excited about new facilities completed this fall at the university that will provide improved learning opportunities and research capabilities
for students and staff. A $6 million Swine Education and Research Facility was dedicated on October 1 and includes three new barns as well as on-site classroom, research, and lab spaces. There is also a raised observation area with glass windows that will allow students and visitors a firsthand view of breeding, gestation and farrowing rooms, all while maintaining the barn’s s. “The new barns and classrooms will be a good addition for school and students, and will give everyone more opportunities for research and advanced programming,” she said. Emily knows it is difficult to predict the future and what role she might be able to play in her family’s farming business, especially given uncertain nature of commodity and livestock markets. However, she is confident that the experiences she is gaining now will give her the tools she needs to prepare for a career in agriculture and food production, whatever form that might take.

Nick’s Favorite Pumpkin Fluff 15 ounce can solid pack pumpkin 1 small box instant vanilla pudding 8 ounce container of whipped topping , thawed 2 tsp pumpkin pie spice Blend pumpkin, dry pudding and the pumpkin pie spice. Fold in the thawed whipped topping and chill.
Soft Pumpkin Glazed Cookies 1/2 cup margarine 1/2 cup cooking oil 1/2 cup solid packed canned pumpkin 1 cup granulated sugar 1/2 cup powdered sugar 1/2 tsp vanilla 2 eggs 4 cups flour 1/4 tsp baking soda 1/4 tsp cream of tartar 1/2 tsp salt 3/4 tsp pumpkin pie spice glaze: 3 cups powdered sugar 4 tablespoons water 1/4 tsp pumpkin pie spice...or more if desired In a large bowl, stir the pumpkin, sugars, vanilla and eggs together until smooth. Slowly mix in all the dry ingredients until completely incorporated. Drop onto a lightly greased cookie sheet and gently flatten to 1/2 inch thick with the bottom of a glass dipped in sugar or a cookie stamp. Bake at 350 ˚ for 8-9 minutes. Mix the glaze while cookies are baking. Cool cookies for 3-4 minutes and spread glaze over the cookies. Allow the glaze to harden for a few hours before storing. Makes 3-4 dozen depending upon the size you make.

I
t might be getting colder in the Midwest, but Diane Graham is dreaming about long walks on a warm beach in California. “I’m really looking forward to being able to do that again,” says Diane. “This procedure has given me my freedom back.” For the past few years Diane was struggling with a fairly common problem: an overactive bladder. The 64-year-old just chalked it up to growing older, but then
her symptoms began to be unbearable. “It started slowly at first,” remembers Diane. “I would sneeze or cough and would have a little leak. It got to the point that wherever we went, the first thing I would do is see where the bathroom was. Then about eight months ago, it really started to burn when I would use the bathroom. I felt like I couldn’t really go anywhere or do anything.” Diane and her husband took a trip to
visit her children in California, but her pain became so severe that she went to the emergency room. However the staff told her that the care she needed was beyond policy parameters. They gave her some pain medication and sent her on her way. “After that I knew that I couldn’t go on living like this,” explains Diane. “I had already been to see Dr. Benson and he had been giving me some medications, but I knew I needed to take the next step.”

A Better Way Kevin Benson, MD, a urogynecologist with Sanford Health treats many women who have similar problems as Diane and is dedicated to helping them find a solution that works. “We have a three-tiered approach for women with an overactive bladder,” explains Dr. Benson. “We try physical therapy along with limiting water intake at first, and generally that helps almost 50 percent of patients. After that, we move on to medications. That helps about another 50 percent of the patients left. But there is still a quarter of the women who have overactive bladder issues who need help.”

This is where the InterStim procedure comes into place. This small device is about as wide as a piece of spaghetti and is implanted in an outpatient procedure. The device sends mild electrical impulses to the sacral nerves, which control the bladder and bowel. It runs on a small battery, much like a pacemaker does for heart patients. Dr. Benson is one of only a few physicians in the region who offers InterStim. “We can even let out patients test drive the device for a few weeks to see if it helps,” says Dr. Benson. “We give them an external battery pack and tell them to chart how they are feeling. If it doesn’t work for them, then we can easily take it

out and find another solution. However, it is usually 85 percent effective for patients. And for women like Diane, it helps to improve their quality of life.” “This has been such a wonderful change for me,” says Diane. “I really started feeling the results almost immediately. The route ends on 34th Street in front of the Macy’s store in

The historic Plymouth Harbor and Waterfront brings history to life with participants dressed as pilgrims, Native Americans, soldiers, patriots, and Pioneers. One thing that helped lessen the fear was to leave the hospital with solid goals. “I know at first we felt horrible – how is this happening to such a young boy? But we were equipped for it. We knew what we had to do,” she said. “One thing about young children is they adapt. Cole is about as cooperative as any toddler can be.” Jill Bechen works as a registered nurse, so she understood the way their lives would change. She and her husband, along with Cole’s older brother, 6-year-old Jackson, came together for him.

“We knew what we needed to do: monitor his glucose, administer insulin and keep an eye on everything we eat,” she said. Cole now has a continuous glucose monitor that augments the glucose readings from finger sticks. Cole receives one injection before each meal and a fourth that provides 24-hour assistance. “He has been really good about it,” Bechen said. “But he is, after all, only 3, so sometimes he will want to run away.” Cole’s older brother, Jackson, asks a lot of questions, especially about carbs in foods. “Jackson has picked up so much and will ask questions for Cole – ‘Can Cole have this?’ – it’s really impressive, and he’s a great help to Adam and me,” she said. Mary Oyos is a Certified Diabetes Educator and Diabetes Program Manager with the Avera McKennan Diabetes Center in Sioux Falls. She worked with the Bechens when Cole was diagnosed. She said she’s proud of them. “Living with diabetes on a daily basis is challenging, and it’s especially difficult for young children and their parents,” Oyos said. “Fear, denial, anger and sadness are very normal reactions to the initial diabetes diagnosis.” Oyos explained that diabetes nurses and dietitians can help

families understand diabetes and glucose levels. “Most importantly, we teach self-management skills so that people have the knowledge to take care of diabetes, but not let it define them,” she said. “When the whole family makes lifestyle changes and is involved in diabetes care, it’s much easier for the child.” Technology continues to advance, and Oyos said today’s insulin pumps and continuous glucose monitors help. “But living with diabetes is a 24/7 situation, and everyone experiences ‘diabetes burnout’ to some degree,” said Oyos. “That’s when supportive family, friends and the health care team are crucial.” Bechen said she feels good knowing she has Oyos’ help whenever she needs it. hanksgiving has become a tradition in which many individuals get together with their family and friends, enjoy a break from their busy schedule, and eat turkey. Many of us, however, have forgotten the true meaning of Thanksgiving and do not realize the countless things around us to be thankful for. In this day of hustle and bustle, over scheduling appointments, work, running children to athletic events, and a variety of domestic activities; often times we fail to reflect on the blessings in our lives. Thanksgiving is a good time to be grateful. Gratitude helps us see our situation in a way that can lessen panic and open up our thinking to new solutions. But as a rule, people aren’t hardwired to be grateful. And, like any skill worth having, gratitude requires practice, and the benefits of practicing gratitude can be life altering. • Gratitude puts situations into perspective. When we can see the good as well as the bad, it becomes more difficult to complain and stay stuck. • Gratitude helps us realize what we have. The awareness of what we’re grateful for can lessen our tendency to want more all the time. • Gratitude makes us happier. Gratitude strengthens relationships, improves health, reduces stress and, in general, makes us happier.

Personalized Footprint Turkey Materials: Brown, orange, and yellow paint, white, brown and green construction paper, black and red marker, scissors, glue, and a photo of your child’s face. Instructions: Paint your child’s foot with orange paint and carefully stamp it onto a white piece of paper. Repeat this step with yellow and brown paint, alternating colors and creating a fanned out shape for the turkey feathers. Once dry, cut out an oval piece of brown paper for the turkey’s body and add details with a marker. Glue this to the bottom of the feet. With a marker, draw little feet from the bottom of the oval shape, then cut the white paper so that there is a small border of white around the turkey feathers, body, and feet. Add a photo of your child’s face and glue it on top of the oval shape, in the middle of the painted foot feathers, to create the turkey’s head. To finish the look, glue the white paper onto a piece of green paper and cut out the green paper to match the shape of the white paper.

Feather Hair Clip Materials: Metal hair clips, craft feathers in orange, yellow, and red, orange and red felt, scissors, and glue. Instructions: Cue out a small rectangle shape from orange felt, and a circle shape from red felt. Wrap the orange rectangle around the ends of three craft feathers, one yellow, one red, and one orange. Glue the orange felt onto the metal clip, with the feathers sticking up from the inside. Glue the red felt circle onto the top of the orange felt. Let dry completely, and you have a festive feather hair clip for your children to wear!
Festive Corn Painting Materials: White card stock, scissors, unsharpened pencils with erasers, brown, yellow, and orange paint, raffia, and a hole punch. Instructions: Cut out corn shapes from white cardstock. Have your children use pencil erasers as their paint brush, and carefully dip them into brown, orange, and yellow paint. Stamp the erasers onto the corn shapes, alternating colors so that they look like corn kernels. Once the paint is completely dry, use a hole punch to make a hole at the top of the corn shape, then tie some raffia through the hole and around the top of the corn. Tie it in a bow, and you can hang the corn from your door or on the wall for a cute Thanksgiving decoration.
Thankful Tree Materials: Construction paper in the colors of fall leaves, marker, and tape. Instructions: Tape brown pieces of construction paper together to create the trunk of a tree. Next, tape the tree trunk to a wall in your house where you would like the tree to be. Have your family members trace and cut out the shapes of their hands from construction paper in the colors of fall leaves, such as red, orange, yellow, or green. Place these hand prints into a vase or a bucket next to the tree, with a marker and tape to use when they think of something they are thankful for. Have each family member write down what they are thankful for and tape the handprint somewhere on the tree throughout the month of November.
Name Practice Turkey Paper Plate Materials: Paper plate, circle stickers, construction paper, brown paint, paintbrush, glue, googly eyes, clothespins, black marker. Instructions: Paint the paper plate brown and let it dry completely. Cut out orange and red shapes from construction paper to make up your turkeyâ&#x20AC;&#x2122;s face, then glue them on to the middle of the plate. Add the googly eyes, and let dry completely. Write your childâ&#x20AC;&#x2122;s name using one letter at a time on circle stickers, then stick them onto the plate near the top. Make sure to spread the stickers out so enough room is left for clothespins to fit onto each one. Write the letters of your childâ&#x20AC;&#x2122;s name onto the end of each clothespin. Now your child can match the clothespin letters to the correct letters on the stickers, teaching your child about spelling their name. Use other words, shapes, numbers, and colors to encourage your child to learn!

e come together every year at this time to celebrate, congratulate, commiserate and conjure up memories. We dress up, we dress down, we stay in or we go out. We are purposeful in our actions and thoughts which usually surround loved ones or ones that need love. We gather with friends in tiny apartments, with parents and siblings in our childhood homes, in places of worship, at shelters and soup kitchens, in hospitals and in prayer. We gather. We bring vintage vino and crumble cakes. We bake for hours and stay up late. We take our time and focus on our place. We give back and always get more than we could have ever imagined. We
