A
new business in town wants to make healthy eating as easy as A-B-C….or rather, E-F-G…for Eat, Fit, Go. The Omaha-based franchise opened their Sioux Falls location earlier this year with its philosophy of creating meals to go that help people take control of their own health. The company recently celebrated its first anniversary with 14 stores already open, and plans are in the works for another 80 locations in the next year. “All of our meals are pre-cooked and made without preservatives or artificial ingredients,” says Sioux Falls general manager Jess Kroger. “We offer a wide range of meals that include both gluten-free and vegetarian options.” Kroger says she joined the company because the company’s mission matched her own desire to eat healthy after being diagnosed with cancer. “Eat, Fit, Go meals are part of my menu every day, and it’s exciting to introduce this to Sioux Falls,” she says. “All the ingredients are listed right on the label, so you know exactly what you’re eating. These are chef-driven meals that are made fresh daily.” The coolers in the store are color-coded so customers can easily find pre-made options for breakfast, lunch, dinner and snacks. Nearly all of the meal options are available in both small and large sizes. Prices range anywhere from just under $6 up to $11, depending on the portion size. Breakfast options include dishes like the Southwest Scramble, Classic Steak & Eggs and Breakfast Tacos. You can also grab a yogurt parfait from the snack cooler for a healthy breakfast on the go. For lunch and dinner, there are nearly two dozen options, and the menu changes up a bit each quarter. In March, for example, they added eight new items to the menu. Pasta lovers may want to try Vinny’s Fit Pasta, Get Yo Mac On, and meat-eaters can dig into dishes like the Fajita Steak Bowl or Steak & Potatoes. For chicken fans, options range from Smart Chicken Pesto and Smart Chicken Fried Rice to Smart Chicken Enchiladas and the Basic Meal Smart Chicken with broccoli and converted rice. salmon are well-touted, and Eat, Fit, Go also offers a few different options for meals with salmon as the star. Vegetarian options include meals like Veggie Breakfast Tacos, Veggie Mac and Spinach Enchiladas. There’s also a section in the cooler for kids’ meals like Chick Mac, the Smart Chicken Kidsadilla (quesadilla), and the Tip Top Turkey Roll-up. You can pay by the meal, or you can buy a week’s worth of food at a discount. With the “Perfect Week” plan, customers receive five breakfasts, five lunches, five dinners, five snacks and five protein bars for $149. And, Kroger says, you don’t have to take all the food home at once. You can pick your items for the first two or three days, and then come back to the store to get the rest. “The Perfect Week is a great way to eat clean for five days and still allow some flexibility for weekends or special occasions,” she says. “We believe in the 80/20 rule, which is to nourish your body correctly 80 percent of the time and then indulge just a little 20 percent of the time.” Eat, Fit, Go offers catering for groups, as well as the ability to set up a “house account.” That option lets you pre-pay at different levels, creating a sort of “line of credit” to make it easier to stop by to pick up your favorite foods. The house accounts have become popular with parents of college students who set them up to serve as a meal plan for the students. It could also work well for families with busy high school students, because you just stop in to pick out the meals, and then enjoy them in the store (there’s seating for about 20) or take them home for easy warm-up in the microwave. Eat, Fit, Go has a blog where they feature different health and nutrition topics (https:// eatfitgo.com/blog/), and the Sioux Falls store has a Facebook page to help customers keep up with new menu items and other features. “We know that people are busy,” Kroger says, “and we know that there are days when there just isn’t time to stop at the grocery store or cook a meal at home. Eat, Fit, Go is a great option for those busy days or for people who are looking for a little extra support to create a healthier lifestyle.”

e kind...everyone is fighting a battle you know nothing about.” It’s a sentiment often shared and one that couldn’t be truer for the children gracing the halls of the Boys & Girls Club. Each child is from a different background, battling different challenges and struggling through the muddy world of growing up. Fourteen year old Olyvia has a big, bright smile with kind eyes and a contagious laugh. Mature beyond her years, it’s often easy to forget she’s still in middle school.
Like others, Olyvia fights a battle that is unique to her and it’s through those struggles she found herself and her hope at the Boys & Girls Club. “My parents couldn’t trust me to stay home alone so I started coming to the Club,” said Olyvia. “It was hard at first. I struggle with depression and anxiety; being in social situations was something I felt uncomfortable with and I didn’t make friends easily.” Olyvia is acutely aware of how her depression makes her feel like cutting off
the rest of the world. At just five years old, Olyvia’s mother committed suicide and since that time coping with the overwhelming job of growing up has, at times, felt insurmountable. “I’ve always been fearful that I would go down the same path my mom did,” she said. It was attending the Boys & Girls Club that pushed her out of that box and gave her a positive environment to practice the social skills with kids she wasn’t exposed to at her alternative learning school. “I don’t have to

ust a few years ago, Brian Shabino was living in Brandon, and Char Hansen was in Irene. Both made the decision to move to Sioux Falls, and as luck – or fate – would have it, they both moved into apartments in the Carpenter Building downtown. And, that’s where they met. Now, a year and a half later, they have combined two households into one loft in the Harvester Building. The building gets its name from the International Harvester Company, which occupied the space from the early 1900s until the company ceased operations in 1961. The exposed brick walls, visible beams and pipes still bear many of the markings from the business operations, and original hard wood shows the etchedin path of farm equipment that once moved across the flooring. When they first looked at the empty two-bedroom loft, with its open spaces and high ceilings, Brian says he could almost imagine being able to strike up an indoor game of basketball in the place. The sheer size made them both wonder how to begin to decorate it. He credits the decorating flair to Char, although he had a hand in filling the open living space with handmade furniture made from wood and pipe fittings, including a kitchen island, a bookshelf to act as a room divider, and wall-mounted shelves in the corner of the living space that serve as a handy office. The two-stall garage behind the building is a favorite spot of Brian’s, because it gives him a place to get outside and work. The garage was also handy for extra storage, as the couple had to get a little creative on their storage options indoors. They utilize

each nook and cranny, including the spaces between the top of the wall and the overhead beams and pipes, which remain exposed throughout the loft. Brian and Char say they learned a lot moving into this space, including each of them deciding what to keep, as well as how to maximize the storage. In the kitchen, the two-tiered island Brian built provides eating space, work space and a place to display keepsakes like an antique scale and old Better Homes and Gardens Cookbook, both which give a nod to Brian’s baking talent. A commercial-style metal rack provides a spot for pots, pans and cooking appliances. Other storage needs are met by items like an over-the-door shoe caddy, and oversized

Brian and Char agree that just being able to look out at Winter Wonderland when Falls Park is lit for the holidays was a selling point of the loft all on its own. They also agree that the social aspect was another attraction to downtown. Char says they both had made friends at the Carpenter, and now they have made new friends at the Harvester. They enjoy going out and enjoying all that downtown has to offer, but they enjoy having friends in just as much. “Downtown is just a cool community,” says Brian. A sign near the living room

Strawberry Angel Food Dessert Cake
Easy Strawberry Pie
1 box angel food cake mix 12 ounce carton frozen whipped topping, thawed 6 ounce carton strawberry yogurt 1/3 cup powdered sugar 1 cup fresh strawberries
8 ounce package cream cheese, softened 1 cup sugar 1 tsp vanilla 4 cups chopped fresh strawberries 12 ounce carton frozen whipped topping, thawed 3/4 cup chopped pecans 2 ready made chocolate crumb crusts
Bake the cake mix according to package directions. Invert cake pan and cool completely. In a large bowl, combine the whipped topping, yogurt and powdered sugar and stir until blended. Remove the cake from the pan and split the cake in thirds horizontally. Place the first layer of the cake on a serving plate and spread with 1 cup of the topping mixture and repeat with the second layer. Top with the remaining layer and spread the topping mixture on the top and sides of the cake. Garnish with sliced fresh strawberries. Chill for 2 hours and store in the refrigerator. Serves 12-14.

ack in the 1920s, T.S. Elliot started his epic poem The Waste Land with the bleak words “April is the cruelest month, breeding lilacs out of dead land, mixing memory and desire.” I’ve loved the poem for years, but always felt like that was a harsh sentiment for spring. With the exception of 2013, when an April ice storm devastated our fair city, I think April is an awesome month. We’re far enough into Daylight Savings Time to have adjusted to the change. The weather is getting warm, but still not hot. The evenings have the perfect chill, and friends and neighbors are emerging from their winter homes. While the flowers begin to bloom, we hose off the lawn furniture and fire up the grills for the year. The spring clean extends from the house to the patio. While Memorial Day may be the official start of summer, April is the official start of grilling season. With that in mind, here are a few tools you’ll need and a few opportunities to upgrade your grilling experience. If you’re a frequent reader of this column, you already know my thoughts on grills, so this year, I won’t judge your choice of fire box. If gas is your thing, fill up the propane tank; if you prefer charcoal, light it up; if you’re into pellets or electric, just get outside and cook! Regardless of your grill, you will need some tools. Let’s start with tongs. You may be tempted to get one of the fancy barbecue sets they sell; it’s usually a fancy package with a tong/spatula combo, a big long fork and some kind of oven mitt. My advice is to leave it on the shelf. The tools they give are really not very well designed, usually not very well made and they tend to go for form over function. I like plain old stainless steel tongs. They are simple, they lock closed and they give you good grip and control over the meat, veggies

and other things on your grill. And they are cheap enough that you can keep several of them around. One for meat and one for sides dishes. And to avoid contamination, you can use one to put raw meat on and then a clean pair for the cooked meat. Safety first. Tongs work great for everything from a big steak to small shrimp. You can use them to flip, poke, prod and arrange on the grill. But there are times you just need a spatula. Nothing else will do. For flipping burgers or delicate fish, the tongs just aren’t the right tool. For those cases, I really like a fish spatula, even for burgers. Slotted and flexible it will slide under the most delicate piece of fish, or sneak under a cheese-stuffed burger patty without releasing the prize inside. The spatula/ tong combo really doesn’t do either task very well. Remember when your dad told you to use “the right tool for the job?” This is what he was talking about. Now, as you’re preforming these flipping and turning procedures, your hands will be perilously close to the flames. Protection is in order, and again the oversized oven mitt that came with the fancy barbecue set won’t give you any kind of dexterity. That’s when you need a glove, better yet a pair of gloves. My choice is a pair of Extra Long Barbecue Gloves by Steven Raichlen. He’s the strange guy you see grilling on PBS. I’ve tried dozens of different gloves and oven mitts and potholders and these are the ones I keep coming back to. I’m probably on my third pair, and they will last a couple of grilling seasons. As I look at the pair I’m

using now, I may want to order another. They give you control while protecting your arms halfway up to the elbow. The other tool I won’t go without is my Thermapen. It’s the king of instant-read thermometers. Expensive? Yes, the new Thermapen MK4 will set you back a cool hundred bucks, but before you say that’s too much, think about how much you spend on steaks throughout the year. Saving a few of them from being overcooked is worth it. If you’re still not sold, they also make a basic model that sells for under $20. That is cheap insurance that can save you from undercooked chicken and overcooked steaks. Seriously, you should order one now before you take the cover off the grill this year. Those are the four basics that I reach for all the time, but what about those upgrades? First, if you’re still using the same old charcoal briquettes that your dad used 40 years ago, try reaching beyond the Kingsford and upgrade to natural lump charcoal. Lump charcoal is made by burning wood in an oxygen-starved environment. It’s really just natural wood, without chemicals or additives. It lights quicker and easier, burns hotter and cleaner and doesn’t leave as much ash. Briquettes are cheaper, but they are made of wood byproducts compressed
with other chemicals added. Some of those chemicals are intended to make them light faster, but they come with a funky smell. Once I tried lump, I never looked back. It’s an easy upgrade that you’ll thank me for. Next, take a look at the grate on your grill. Is it made of scrawny little stainless steel bars? Most are. That’s what my grills came with and I made a hefty investment in hardware. The upgrade is cast iron grates. Many grill manufacturers offer them as an add-on and if they don’t, you may be able to find another brand that fits. Why cast iron? The simple answer is heat. Cast iron grates will hold the heat better that the smaller steel grates and that heat will give you beautiful grill marks and a nice hard sear. While you’re at it, see if you can get a cast iron griddle for your grill. A good hot piece of cast iron will give your burgers a crust like the best burger restaurants. If you’re stuck inside with a few April showers, not to worry, now is your chance to get your grilling gear ready. The rain will pass and you’ll soon see that April is the coolest month. And although it’s a French word, sommelier is actually in our American dictionaries; go ahead, look it up: “A waiter in a restaurant who has charge of wines and their service: a wine steward.” In fact, many top restaurants around the country employ Sommeliers as their Chief Wine Officer. So how do you become a Sommelier? A little studying and a lot of tasting.

On top of all of the “academic” topics relating to wine, we blind-tasted over 20 wines. Wines were poured for us whenever we had a break and left the room. When we’d come back, there would be two white wines and two red wines for us to decipher. Learning how to taste the Master Sommelier way was by far the most memorable and educational thing I have experienced with wine. I used to think that all you had to do was keep good tasting notes as you taste wine,
but the methods they taught us were very detailed; it was like analyzing wine using all of your senses. Starting with the visual presentation of the wine, to the aroma analysis, and then the palate examination to confirm what we smelled; the deductive tasting methods I learned are ingrained in my brain for a lifetime. f you’re one of those lucky ducks who falls asleep fast, stays asleep all night and awakes chipper and revving with energy – count your blessings. Many American (approximately 20 to 40 million!) envy those who can just conk out and get the rest they need. There are some measures you can take to get better rest, though, and Sally Williams, DO, Avera Medical Group Integrative Medicine physician, reminds us all that sleep isn’t a luxury – it’s a necessary part of a healthy life. “Lack of good rest is becoming a public health problem, and there are steps you can take to fight back and get good rest,” she said. “Without the adequate rest, you’re more likely to lose concentration, your memory can fail and it can be a safety risk, too, as people who are tired and drive or operate machinery can face hazards.” Williams said a common reason people seek out acupuncture is for issues with their sleep habits. “Whether it is hard to fall asleep or you wake up and can’t get

back to sleep acupuncture’s fine hair-like needles can stimulate your body’s acupoints to improve your sleep,” she said. “Most people feel minimal discomfort with acupuncture, they feel relaxed, and may return to a more normal sleep pattern after as few as a half-dozen treatments.” Avera Integrative Medicine Health Coach Becky Hanzen said she’s among the population that “loses sleep” and that it hits her in many ways. “When life leaves me short on sleep – that’s when I truly appreciate that good sleep is such a blessing,” she said. “Some people rarely get good quality sleep. One night leaves me unsettled, unorganized, crabby and just plain off. When that’s multiplied over time, Hanzen said, there’s more than just the short-term impact. “Long-term consequences of limited rest include risk for metabolic syndrome, heart conditions and weakened immune systems,” she said. “Most experts agree that people generally need

seven to nine hours of sleep each day.” When Williams sees patients who are not enthused about acupuncture, she recommends they try aromatherapy. Many people find that plant essential oils lead to better sleep. “Lavender and chamomile are popular options, and we can create blends to help those who are unfamiliar with the wide range available,” she said. “Our sense of smell is hard-wired to our brain. Smelling the oil can trigger the release of chemicals that naturally sedate and relax you.” Williams said supplements such as melatonin or magnesium also help some people. Meditation is another approach, and in both cases, she recommends working with a doctor to make sure the approach works best. “Spending just 10 to 20 minutes a day meditating can help you sleep better,” said Williams. “Supplements are another tool to use when you cannot sleep, but you do want to talk to your doctor about their use before getting started with them.”

However, just because your child is beginning to develop the ability to manage impulses, doesn’t mean your child is there yet. The family and household rules you set provide your child a road map of behavior expectations. But setting rules and getting children to follow those rules are two different things. When setting limits, you also have to be prepared to follow through with consequences when rules are ignored.

It is easier to give in and not enforce a rule when you are too tired, but staying consistent will help decrease battles in your home.

Be reasonable. Sometimes we may put too many expectations on children to be perfect. Setting a rule for a three-year-old to sit quiet for one hour in church or at a restaurant is just not realistic or reasonable. Rules need to fit what your child is capable of doing. When children are successful in following rules, children come to believe they can be in control of their actions and self; this builds self-confidence, which helps children be more self-disciplined as they grow.

Just like learning a new skill, learning a new rule takes practice and time. Continue to remind your child of the rule and the consequence if the rule is not followed. And be prepared to follow through on the consequence you have set when your child repeatedly breaks the rule.
Think ahead. Anticipate what might entice your child to break a rule. As you see the temptation ahead, ask your child to repeat the rule. For example, when you are going to the store and you know your child will be tempted to ask for a toy or candy, what is your rule for expected behavior in this setting? When children put rules into their own words, it becomes easier for children to self-discipline. Your child will be more likely to honor the house rules and limits if they are fair and make sense to your child. Be prepared to explain “why” the rule is necessary. “Because I said so” is not an effective reason for a child who is learning to follow a rule. Children may accept this rationale when they are four, but when they are 14, “because I said so” will likely not be a good enough reason for your child. By starting in the early years, you have set the stage for communication regarding rules and expectations for the years to come.
