nce upon a time, a young couple bought their first home in central Sioux Falls, nestled in the blocks between the University of Sioux Falls and Augustana University (then College). The year was 2012, and Jon and Katy Oppold would take walks with their dog through the neighborhood, and one particular building always caught their eye. It sat on the corner of West 26th Street and Walts Avenue and, at the time, served as a coin-operated laundromat. The pair made a pact that if that building was ever on the market, they would do everything in their power to buy it and turn it into a pizzeria. Fast forward to 2020, and the couple is already celebrating their first full month in business as owners of Sunny’s Pizzeria. “When the building went up for lease last year, we knew it was time to act,” said Jon. “I’m a Sioux Falls native and love the feel of local, neighborhood spots. We knew we could make this a great place not just for the college crowd, but for the rest of Sioux Falls as well.” With his own experience in the restaurant and bar industries, plus marketing and communications, Jon knew they had to find their own “niche” to make Sunny’s unique. For starters, the inspiration for the name is certainly something all their own, because they named it after their French Bulldog, Sunny. “He has a lot to do with us being here today,” says Katy, “because we would take Sunny on walks when we were living in the neighborhood. And, that’s when we first saw this building.” Sunny’s likeness is everywhere – in their logo, on the website, social media features and interior décor, including his

own “wall of fame” with a collection of framed pictures. And their marketing is cheeky and riddled with dog puns, where they invite folks to “ditch the usual kibble” and stop in for some “jowl-dropping” pizza. The other area the Oppolds focused on to set their pizza apart from the crowd is their toppings. In addition to the perennial favorites like pepperoni, sausage and cheese, they have spent time perfecting a variety of specialty options from savory to spicy. They have also injected quite a bit of local flavor – using Stensland cheese, partnering with local breweries for craft beer offerings and in creating unique menu item names. For example, in a nod to their university neighbors, Sunny’s offers the Augie Blues – with alfredo sauce, mozzarella, bacon, mushrooms, bleu cheese and a ranch drizzle – as well as Cougar Meat featuring Sunny’s signature spicy marinara sauce, pepper jack and sharp cheddar cheeses, bacon, sausage, hamburger, jalapenos, red pepper flakes and a sriracha drizzle. The menu also includes pizzas named the BB-

Coo Chicken and Ole Moly! Other early crowd favorites are the Bacon Cheese Burglar and the Pepperoni Playboy that tops a pepperoni pie with pepperoni pizza rolls and a drizzle of sriracha. When you order at the counter, you can watch the crew make their pizza magic in the open kitchen. Once the pizza goes into the oven, it only takes a couple of minutes to bake. So, whether you are hanging out in their cozy dining area or taking your pizza to go, you won’t have to wait very long. Although Sunny’s does have a chalkboard listing of the available craft beers, the Oppolds are quick to point out they are a family- and dog-friendly restaurant that happens to have beer, as opposed to a bar that happens to serve pizza. “We want this to be a true neighborhood gathering place,” says Jon. “We have TVs for sports fans to watch games, and we have both board games as well as pinball and video games for the family.” Bring your furry friend, too, because they keep a canister of dog treats on the counter.

D

uring her long career with the U.S. Postal Service, Sam Severson never imagined she would one day be operating a home-away-from-home for travelers from around the world. But, she and her husband Doug came out of the gate as “Superhosts” with Airbnb two and a half years ago, and they have maintained that rating ever since. She has lived in her central Sioux Falls home since 1998, and her strong faith carried her through the loss of her husband. As Sam says, there definitely was the hand of a higher power that eventually brought Doug Severson into her life. The couple has been married for four years now, bringing Sam’s son, Doug’s three daughters and nine grandchildren together as a family. Sam loves the neighborhood they are in, nestled in between the McKennan Park and All Saints Historical Districts. “We actually call our area the ‘hysterical district’ because our

neighbors are so great,” says Sam. Then, one day, their next-door neighbor said she was putting her house on the market, and Sam asked, “How about selling it to us?” The original plan was to buy the house for Doug’s mother, but when she decided not to move to Sioux Falls, their middle daughter suggested checking into using it as an Airbnb. So, after a little research, applying and getting approved, The “Main” Attraction (names for its location) became an official Airbnb listing. While the house was in good shape when they bought it, the couple has done a little updating. Sam says Doug is “Mr. Fix-It,” and they have also had help from her son and their three sons-in-law. The Airbnb house was built in 1926, and along with the Severson’s house and another neighboring home, were part of a tiny farm. The décor of the guest house has many farmhouse

It has been an incredible experience, says Sam. “Initially we thought we’d have more medical guests since we’re located between Sanford and Avera,” she says. “But actually, our guests have come from all over, including locals, people from around the U.S. and even as far as Ecuador, South Africa and Australia. We have had many return guests, too.” It’s no surprise that guests would want to return to this charming space that the Seversons ensure has everything a guest could want. “When we were getting it ready,” Sam explains, “we just thought about things we like when we travel, like the décor, the amenities and most importantly, the affordability.” They leave a journal titled “Wander Often” at the guest house

so visitors can write about their stay and even leave tips for future visitors. The Seversons also have a notebook handy with all sorts of recommendations of where to go in Sioux Falls, what to see and what to do. The big pantry closet and refrigerator are always filled with snacks and other supplies, and the full kitchen allows guests the ability to cook at home when they don’t want to go out. Guests have even cooked an entire holiday turkey dinner at the house. The kitchen isn’t the only place where the Seversons have taken care of all the little details. The main floor bathroom is stocked with lots of little things Sam picks up from the dollar store – from aspirin or disposable razors to shampoo and shoelaces – and there’s no charge for those little extras. There is one bedroom on the main level and another on the lower level. However, to get to the staircase, you must pass through the main bedroom. So, guests typically just use the one

bedroom, or it may be a family so they are comfortable passing through one bedroom to get to the other. The lower level also has a bathroom and a full-size washer and dryer. While guests are free to do laundry as needed, Sam of course ensures that all the bedding and linens are cleaned between each stay. She says that they continue to make updates to the house, such as adding a new window or starting to work on new drapes. Sam also likes to add little “homey” touches here and there - like the friendly frog that sits on the bathroom shelf or wall hangings that are both artwork and sayings like “Not all who wander are lost. Some are just looking for coffee.” “I find things on Pinterest. I love Pinterest,” she laughs. There is a fenced-in yard out back with a table and umbrella so guests can enjoy the outdoors. And, Sam adds, having the fenced yard makes it safe for both kids and pets.


The Seversons like being right next door in case guests have any questions or needs. More often, though, they find they have the opportunity to get to know their guests. “Sometimes, we’ll even have guests bring their own beverage over and join us at our firepit,” Sam says. Although they have many guests who stay for just a night or two, they have had guests stay for a week or even a month. And for those longer stays, they offer a discount. Sam says she also

appreciates the fact that Airbnb has provisions that allow them to rent their house at no cost if someone has been displaced from their home due to a natural disaster like a fire or flooding. “This has been perfect for us,” Sam says. “We’re semi-retired and enjoy meeting new people. Having the Airbnb gives us the flexibility to help guests who need a place to stay and still have the flexibility of blocking off days to spend with each other and our family. We love Sioux Falls, so it’s exciting to share our city with others.”

Nick’s Valentine’s Day Brownies BY JO MCCLURE

2 cups flour 2 cups sugar 1 tsp soda 1/4 cup cocoa 2 eggs 1 cup margarine or butter, softened 1 cup brewed coffee, cooled 1/2 cup buttermilk 1 tsp vanilla In a large bowl combine the flour, sugar and soda. In a saucepan , combine the butter, coffee and cocoa and bring to a boil, stirring constantly. Add the boiled ingredients to the dry mixture and mix well. Add buttermilk, eggs and vanilla and mix with electric mixture. Pour into a greased jelly roll pan (17x11) and bake at 400˚ for 18-20 minutes. Cool before frosting.

M

aybe it’s because I’m obsessed with food, but I think sharing a meal with your partner is probably the second most intimate thing you can do. (Please don’t make me elaborate on the first, this is a family publication!) And if ever there was a time for a romantic dinner, it’s Valentine’s Day. Ladies, if you make this for your man, I’m pretty sure we’ll have a lot of happy guys in Sioux Falls on February 15. But for best results, get in the kitchen and cook together. Trust me, if eating together is good, cooking together is even better. Now, if you want to go out for dinner, more power to you. Local restaurants will be rolling out the red carpets for Valentine diners. But here’s the rub, the best reservations will fill up fast. And as I check my “Decade at a GlanceTM”, this February 14 is on a Friday this year, so restaurants that are normally busy will fill up even faster. Many small independent restaurants will fill up with regulars making reservations weeks in advance. And the bigger places will be booked solid a week in advance. While I understand the appeal of dining out and encourage it on many nights, I think this Valentine’s Day if you want to really find the way to the heart

of that special someone, it’s time to head to the kitchen. So what do I recommend to set the mood and pave the way to each other’s hearts? Follow along my friends; I think this meal just might do the trick! My idea of the perfect Valentine’s meal is simple and sensual. Most importantly, you’ll be making it together. If one of you typically does the cooking, your partner may feel like the best thing they can do to help is stay out of the kitchen. I know that I am often guilty of answering Kara’s offers to help with “you can set the table.” If that’s you, or even worse, if you’re cooking and your husband is glued to ESPN, now is the chance to remind him of the times you followed him to stadiums and racetracks. It’s his turn to join you in the kitchen. With Valentine’s Day falling on a Friday, you may want to send the kids to Gramm’s or a friend’s house, but you should make those plans early too. Or maybe work with another couple and have them take the kids on Friday and you take them Saturday night so your friends can celebrate then. First, open a nice bottle of wine, a semi-dry white like Sauvignon

Blanc or Chenin Blanc will work. You need a little for the soup, but pour a couple of glasses to set the mood. I always seem to cook better with a little wine.

Sage Brush Shrimp Appetizer 4 large shrimp (10 to 15 per pound size) Fresh sage leaves 4 slices prosciutto (very thin) Olive oil Salt and pepper Peel and de-vein the shrimp then season lightly with salt and pepper. If your man isn’t comfortable in the kitchen, peeling shrimp could be a good way for him to start to get in the groove. Place a single sage leaf along the space where the shrimp’s vein was. Now wrap prosciutto around each shrimp. Heat the olive oil in a skillet on medium heat and sear them on each side. When the prosciutto gets crispy and the shrimp turn opaque, they are done. Don’t over cook or they will get tough. You’re cooking together, it’s just that easy.

Roasted Carrot Soup 1 pound carrots, peeled, sliced 1 small yellow onion, quartered 3 garlic cloves, peeled 2 cups chicken stock (the kind that comes in the box) ½ cup white wine 1 tablespoons olive oil 1 tablespoon dry sherry Salt and pepper Preheat oven to 400 degrees Even a kitchen novice can peel carrots, and if your guy is like most, he’ll enjoy the chance to play with sharp objects. Toss the carrots, garlic and onion in olive oil and spread out on a sheet pan, then season with salt and pepper. Roast in the oven for 15 to 20 minutes, until the carrots just start to brown on the edges. Bring chicken stock and wine to a boil in a sauce pan, then reduce to simmer. If the carrots aren’t cooked all the way through, add the veggies to broth and cook until the carrots are soft. Remove 5 or 6 small pieces of carrot and set aside. Puree the broth, wine and veggies in a blender until smooth. Return to the sauce pan to keep warm, stir in the sherry, salt and pepper to taste. When you’re ready to serve, garnish the bowls with the remaining carrot chunks.

2 8-ounce beef filet mignon 2 tablespoon olive oil Small wedge of good blue cheese (Maytag or Point Reyes are solid choices) Salt and pepper Turn the oven up to 450 degrees, and at the same time heat an oven safe skillet (not a non-stick) on the stove over medium high heat. Rub the steaks with the oil and season generously with salt and pepper. Cook steaks in skillet without moving steaks, until browned and a nice crust has formed. This will take about 3 minutes per side. Move the skillet and steaks to the oven. Roast 6 to 8 minutes for medium-rare (centers will appear pink and feel firm but juicy). The internal temp should be about 125 degrees. If you prefer medium, roast for 8 to 10 minutes. Put the steaks on a plate and top with about a tablespoon of the blue cheese. Tent loosely with foil to let rest about 10 minutes before serving. You may want to add some potatoes, veggies or couscous, but this will cover the big parts of the meal. And by the time the steaks are done, you should be ready for the second bottle of wine, maybe a nice Cabernet or Pinot Noir. Now if juicy shrimp, a sexy carrot soup, tender steaks and two bottles of wine doesn’t set the mood, then I don’t know what will.

I

fell in love with my wife at a mile-long beach on the North Shore of Massachusetts. I proposed to her in Oak Bluffs, a quaint harbor on the north coast of Martha’s Vineyard. We honeymooned on the tranquil beaches of St. Martin. We have picnicked with baguettes and wine along the River Seine. And now, three children later, we live in Sioux Falls, home of the great waterfall. Needless to say, when I think about my wife, I have vivid memories of the ocean, the sea, the harbor, the river, and just about any form of water. As I look over at her right now, I laugh to myself about the fact that the only body of water that either of us has shared in recent years is the water splashed on us by our dogs as we attempt to give them a bath. At times, when we are being doused by the huge drops of water, I squeeze my wife’s hand, close my eyes, and dream of the ocean mist brushing against my face, and for just a brief moment I am transported to one of the most romantic places in the world: the Italian Riviera. The winding arc of coastline sweeping quietly from Ventimiglia to La Spezia is the defining mark of Italy’s Liguria region. This narrow strip of mountain-protected coastline can be divided into two quite distinct Rivieras. The western Riviera di Ponente (Riviera of the Setting Sun), which reaches from the French border to Genoa, has protected bays and wide sandy beaches and is generally more developed and commercialized than its counterpart to the east. The Ponente is home to the fanciful seaside resorts of San Remo and Bordighera. Much of the eastward stretch on the Ponente coastline has been developed for

the packs of sun worshipers who descend on it in the summer. I can see myself now, basking in the warm sunlight, listening to the gentle whisper of the waves; I can almost feel the warm ocean breeze… then I open my eyes to find that my wife is using her blow dryer and is pointing it at my face. As I gently redirect the dryer towards my wet dog, I continue dreaming… East of Genoa, spanning the coastline as far as Portovenere, is the Riviera di Levante (Riviera of the Rising Sun). Its miniscule bays and inlets are steeper, sculpted by nature into rocky cliffs. The most dazzling of these awesome occurrences is Portofino, which is one of the most photographed villages in the world. One look is enough to tell you why: if you pull up to it by boat, chances are you’ll max out your memory card before you disembark. Brightly painted houses frame the port in a burst of color that becomes sheer enchantment at sunset. Farther along the coast are the Cinque Terre (“Five Lands”), a collective community of five fishing villages situated on bluffs above the sea. Here are Liguria’s most uncrowded beaches, picturesque village squares, and best views. The only view from my bathroom window is bleak at best, especially this time of year when the snow still covers my grass and the trees have shrunk down to mere skinny branches. Just when reality starts to sink in, the sun pokes through the drab sky and rekindles my visions of tender sunshine and romantic seascapes. Set in the heart of the Riviera region is Genoa, Italy’s largest commercial port, where majestic Renaissance palaces attest to the

wealth of the city’s seafaring past. Every schoolchild knows Genoa as the birthplace of Christopher Columbus and despite the city’s considerable charm, most visitors to Liguria are more interested in the less-historic waters found along the coast. Another attraction in this area of Italy, like all other regions in the country is, of course, the food! Pesto sauce is made by pounding fresh basil in mortar with garlic and pine nuts (or walnuts), then blending in olive oil and grated Pecorino Sardo and Parmigiano Reggiano in equal parts. The region also has its own pizza dell’Andrea (after the heroic Admiral Andrea Doria) with onions, garlic, tomatoes, black olives, and anchovies, or with sardines. I can almost smell it now, the sweet aroma of onions and the strength of the garlic. Again, I open my eyes to see my wife in the kitchen, trying a new recipe. After helping her and, of course, cleaning up, I try yet again to drift away to that beautiful paradise. When it comes to wine, the region of Liguria isn’t very well known for its grape-growing areas — it is mostly known for its pastas and fresh seafood. However, when shopping around for a good Italian wine that will accompany, let’s say, a traditional Ligurian meal, then look no further than Venice (another seafaring

Italian city on the opposite coast) where Pinot Grigio is king and is ideal for seafood and wine pairing. But let’s not forget Tuscany, just south of Liguria, where the white grape Vernaccia di San Gimignano is the natural choice when preparing and serving seafood. When my wife and I are drinking white wine, it’s usually a crisp Pinot Grigio. If you close your eyes, you can almost here the gentle roar of the ocean as you swirl your glass… Would I love to be on the Italian Riviera right now, taking in all of the pleasures and romance that it offers? You bet I would, but for now, I’ll continue dreaming because the truth is, there’s no where else in the world I’d rather be than with my wife, three sons, and, yes, my dogs, on Valentine’s Day. alking hand-and-in-hand. That’s how I will always remember our neighbors Maggie and Lou Barnett. At least once a week, I’d see my 90-something neighbors walking handin-hand or arm-in-arm around the block, and it always made me think, “that’s how I want to be with Shon when we’re old…still in love.” The Barnetts lived in a beautiful home in the Cathedral Historic District on the corner of Prairie and 9th. Built by the owner of

Loonan Lumber Company in 1907, the historic mansion is lovely on the exterior. But the real treat is the interior woodwork. I was fortunate enough to receive a tour from Maggie and Lou a few years ago, when they invited us over one evening. The main floor woodwork is ornate and quite elaborate. The bedrooms all feature a different type of woodwork. One room is birds-eye-maple. The floors, door and all the trim in that room are birds-eye-maple. Another room is oak. Again, the floors, door and

trim are oak…and so on. After the tour was complete, they showed us their player piano. Sitting together on the bench, they began to sing along as it played Barney Google. They were a couple who you knew loved each other and loved being together. So, it’s not too surprising that when Maggie peacefully passed away fall 2017, Lou peacefully followed her a week later. A few months earlier they had celebrated 70 years together. I got to thinking about Maggie and Lou recently when I ran across a diary Maggie gave me about five years ago. She called me up one day and said that she’d found a diary in a bag of items she’d purchased at a rummage sale. And because I was a journalist, and I was probably about the same age as its author, she thought I’d be a good person to figure out who its author was so we could return the diary to its owner. I could tell because there was no last name. I quickly gave up, set the diary in the wire basket on my desk and forgot about it. A year or so later, when I was cleaning out the wire basket, I nearly tossed the diary. But I just couldn’t bring myself to throw it away. It was someone’s diary. A relic from their childhood. I’m sentimental. Plus, I know how good it feels to have something treasured returned. You see, a few years after college, I received a phone call from a Brookings police officer. She had found a bin of items that belonged to me. Living in a very small apartment, I told her that I hadn’t missed the bin, so feel free to throw it away. She said, “you don’t want me to throw these things away, they are photo albums and scrapbooks.” I hadn’t missed them. I’d left them in a closet in a house I rented with friends a few years before and completely forgot about them. But when I was reunited with my high school and college scrapbooks, I was so grateful someone took the time to track me down. So many precious memories were in that tub. Instead of tossing the diary, I put it in the bottom drawer of a dresser I keep craft and sewing supplies in and again forgot about. Then, this January, I ran across it. Again, I was

tempted to throw it away. But this time I couldn’t toss it because of Maggie. She had entrusted me with the task of finding its owner. So, I decided to give it one more try. This time I skimmed more than half of the entries looking for a mention of a school or friend’s last name. Jamie’s handwriting matured the further I got into the diary. She was growing up and her friend group had begun to expand – more names were included, but still no last names. I did see the name Patrick Henry, and realized it was the local Junior High School. I kept skimming until finally there were a few names of friends listed that did include last names. I did a quick Facebook search of two of the names, and discovered that one of Jamie’s friends, still lived in Sioux Falls and was Facebook friends with a friend of mine. Yes, we live in South Dakota! I reached out to my friend and sent her a short text listing what I knew about eighth-grade-Jamie. In 1992, she played softball. She was in Girl Scouts. I also shared the names of the three girls she spent a lot of time with. Within minutes my friend called me with Jamie’s last name. I reached out to a college acquaintance of mine who has the same last name and she reached out to her cousins. Two days later I had the address for Jamie’s mom. I mailed the diary a few days later. Mystery solved. I’m glad I stuck with it. And I’m glad Jamie and her diary are reunited. I reached out and shared this story with Maggie’s daughterin-law. She is a wonderful person, who also happens to be my neighbor. She and I both agree, Maggie would be pleased.

HEART SCREENINGS SAVE LIVES BY SANFORD HEALTH

D

orothy Vershure was having a busy day in May. She and her husband, Claude, had just moved, and she had gone downtown to be sure their water bill was correct before she headed out of town to visit grandkids. When she saw Sanford Health’s mobile heart and vascular screening unit parked nearby, she paused. Curious, she inquired what the heart screening all entailed. A heart screening, Dorothy learned, involves a brief CT scan, which measures the calcium that has built up on artery walls, posing a higher risk of heart attack or stroke; EKG to check the heart’s electrical activity; body mass index determination; and

measurements of blood pressure and nonfasting cholesterol. Dorothy had had all of the tests done elsewhere except a CT scan of her heart. So, despite her haste to get on the road, she decided to take the 15 or so minutes to go through the screening. Dorothy’s results turned out fine. Then she called her husband and suggested he come to get screened as well. Actually, she challenged him: “Why don’t you see if you could do better than me?” The Vershures believe that his response to that challenge ended up saving his life. Claude thought his health was fine, despite a hereditary high blood pressure condition. That day, though, he learned differently.


“I would tell them it’s the best thing that ever happened,” Claude said. “I could say it means that my life was saved.”

Claude’s heart screening revealed a concerning EKG, along with a cardiac calcium score more than 14 times the number that typically would trigger treatment. Claude’s test results were dire enough to suggest seeing a cardiologist as soon as possible. He chose to go to Sanford Heart Hospital. After he arrived, the doctor determined that his coronary arteries were too blocked for angioplasty or a stent. So Claude spent more than three hours in surgery, undergoing coronary artery bypass grafting. Bypass surgery involves taking blood vessels from elsewhere in the body — perhaps arm, chest or leg — and connecting them to blood vessels above and below the affected artery or arteries. Both Vershures have some experience with the medical field. Dorothy is a retired pharmacist, and Claude is a retired nurse. Despite the seriousness of Claude’s surgery, neither one felt anxious about it. “We knew it was going to go well, and we knew it needed to be happening,” Dorothy said. “And I think that was just because of (the) staff there. We felt so comfortable.”

Recovery that included cardiac rehab went well for Claude. He’s finding he has more energy than he used to. Sanford Health’s mobile heart screening, the only truck in the region, gives people early intervention and education across South Dakota and into Minnesota, Iowa and Nebraska. The semi is on the road every weekday, heading to small town streets, county fairs and the South Dakota State Fair, clinics, hospitals, Indian Health Service units, Hutterite colonies and even local businesses. Both Claude and Dorothy have become advocates of heart screenings, encouraging friends and family to have it done. “I would tell them it’s the best thing that ever happened,” Claude said. “I could say it means that my life was saved,” he added. Women make the majority of health care decisions in a family, according to the U.S. Department of Labor. “As women, we need to take seriously our roles as patient health advocates, whether for our spouse, relatives or friends. We can make a difference, even if we have to stand up to a stubborn person that is dear to us,” Dorothy said.

ood health in our digestive system – the gut – goes well beyond tummy troubles. Jessica Morrell, CNP, IFMCP, a women’s health nurse practitioner, and Annie Ailts, MS, RDN, LN, IFNCP, a registered dietitian of Avera Medical Group Functional Medicine offer these insights that can help you achieve better belly health.

Everything Counts “Whatever you eat or drink will either feed the good bacteria or the bad bacteria in your gut,” Ailts said. “The bad bacteria love sugar and processed foods so limit your intake of candy, sweets, sugarsweetened beverages, sugary breakfast foods, chips and other unhealthy snack foods and fast food. Instead, focus on whole foods such as vegetables, fruit, meat, fish, eggs, nuts and seeds. It’s also important to note that artificial sweeteners can disrupt the gut microbiome and cause an overabundance of harmful bacteria so avoid ‘diet’ and ‘sugar-free’ products, too.”

fermented foods, such as yogurt and sauerkraut. High-fiber vegetables also aid the good bacteria and nullify the bad. “Yogurt is maybe helpful for some people, but if it’s high in sugar, it is counterproductive,” said Morrell. “People who have an intolerance to dairy shouldn’t use yogurt to help with gut health. Some fermented foods don’t help every person – each digestive system is unique.”

Knowing the Signs You can tell if your gut microbiome is not doing well – you’ll feel bloated, have irregular bathroom habits, increased gas and plenty of heartburn or acid reflux, too. “Oftentimes our body is trying to communicate to us, but it can be easy to ignore it until things get really bad,” Ailts said. “Even though many people deal with gastrointestinal symptoms such as heartburn, gas, bloating, constipation, and loose stools, it’s not something that you have to accept as ‘just life.’ These are signs that your gut microbiome is

unbalanced, and making diet and lifestyle changes can significantly improve the balance you need.”

Mindful Moderation Once you “flip the switch” and begin a better gut-focused diet, you’ll see improvement quickly, but it’s fragile. “When people return to bad habits, such as having sugary drinks, they will see the signs of poor gut health come back. That’s why steady change, using sciencebased approaches, is best,” Morrell said. “There’s never really an ‘overnight’ change. Remember, it likely took time for your microbiome and symptoms to become what they are, so it’ll take time for improvement.” The cleaner the diet, the better – but being human means realizing 100% clean diets will not happen. “Don’t abandon it – stay mindful and work on it,” she said.

Stress Stops Success Ailts said you can have the perfect diet,

but if your stress levels are really high, they can disrupt everything. “Unfortunately, stress affects our bodies in a number of ways, and it’s especially harmful for gut health. While we can’t eliminate all the stressors in our lives, we can learn to respond to them differently,” she said. “Consider deep breathing from your belly throughout the day, doing 10-minute meditation or mindfulness sessions, keeping a gratitude journal, practicing yoga, or going for a walk.”

Doing it Right Working with a professional can help, especially if you’re considering a probiotic supplement or if you’ve recently used antibiotics. Start with your primary care provider. “There are a lot of supplements and approaches like fermented foods that can backfire for some people,” Morrell said. “Having an evaluation with a health care or nutrition professional can help you avoid false starts on your journey to better gut health.”

Owl Doily Handprints Materials: Yellow and orange paper, scissors, blue colored paper, glue, eye stickers or googly eyes, paper doily, brown paint, and an orange marker. Cut a small half-circle shape from the top of your paper doily, then glue the bottom portion of the doily onto the middle of some blue paper. Cut two yellow paper circles for the eyes, and a small orange triangle for the beak. Glue these in place on top of the doily. Add some pupils to the middle of your yellow circles using stickers or googly eyes and glue. Draw some orange feet on the bottom of your doily. Next, cover your child’s hands with brown paint, and place them with fingers facing down on either side of the doily. Write your message on the paper for “hoo” ever you want to give this adorable owl valentine to!

Cut the card-stock paper to your preferred size for each tower that will go on either side of your box. Roll the top edge to the bottom edge, then staple in place to create a tube shape. Glue each paper tube to either side of the box, letting it dry until they stay in place. Place some glue onto the top edge of each tube, then add an upside-down cone-shaped cup to the tops of them. Once dry, let your child decorate the box with valentine-themed stickers, and write their name on it for people to know where to place their cards. Take it to school or daycare, or just leave it sitting out at the house so your child can keep a collection of Valentine’s Day goodies!

Walrus Valentine Materials: One full-sized uncoated paper plate, two small uncoated paper plates, white and red colored paper, scissors, glue, white, brown, and black paint, paintbrush, and a black marker. Paint the front of your paper plates brown and let them dry. Next, cut one of the small plates in half. Place them on either bottom side of the large paper plate so that the straight edges are pointed out. Staple them in place on the top, so that they are slightly angled outwards on the bottom. Take your second small plate and staple that to the top of the large plate, creating a head for your walrus. Use white paint to create the eyes, and let dry. Add black paint on top of the dry white paint, for the pupils of the eyes. Add a black circle under the eyes for the nose, then draw the mouth with a black marker. Cut some tusks and whiskers from white or ivory paper, and glue them in place along side the nose and from the mouth. Cut out a red paper heart, and glue it onto the center of the large paper plate. Write your Valentine’s Day message with black marker onto the red heart, and you have yourself a walrus valentine for someone you love!

Coat your child’s hand with red paint, then carefully press it down above the branch with fingers facing towards the right side of the paper, and leaving room for some feet underneath. Once dry, add an eye by gluing a black gem or googly eye just under the thumb towards the left side of the palm. Use an orange marker to add the beak on the left side of the hand, and add some feet under the handprint with brown marker. Write a little love message and you have a beautiful valentine!
