This mini cherry crisp can be microwaved in minutes, and it serves just one; you! You won’t have to wash a single pot or pan or even turn on the oven. Sweet.
1 cup fresh cherries, pitted and halved, or 1 cup frozen unsweetened pitted cherries, thawed and halved 2 tsp sugar 1 tsp fresh lemon juice ⅛ tsp almond extract
Pinch of salt 2 tbsp low-fat granola In a small microwavable bowl, toss the cherries, sugar, lemon juice, almond extract, and salt. Cover and microwave on High until the cherries are juicy, about 2 minutes. Sprinkle with the granola.
